COOKING PROCESS

1. Combine the figs, sugar, water, balsamic vinegar, lemon juice and rosemary in a large saucepan over medium-high heat. Bring to a boil, stirring frequently. Reduce heat to low. Simmer, uncovered, for 10-12 minutes or until liquid is reduced by half, stirring occasionally. Remove from the heat. Cool to room temperature.

2. Process fig mixture in a food processor until smooth. Transfer jam to a bowl. Stir in blue cheese. Cover and refrigerate until serving.

3. Serve with charcuterie, crostini and additional blue cheese.

1 Add 1 cup vegetable broth and dried cranberries; cook and stir until liquid is nearly absorbed. Continue adding vegetable broth, 1/2 cup at a time, until creamy and rice is just tender.

1. Reduce heat to low. Stir in pumpkin; heat through. Gradually stir in cheese until melted. Remove from the heat. Season with salt and pepper to taste.

1 Sprinkle with green onions and additional cheese. Garnish with sage.

COOKING PROCESS

1. Cook macaroni in salted water until just al dente. Drain and set aside.

2. In a saucepan, melt butter over medium heat. Whisk in flour and cook 1–2 minutes. Gradually whisk in milk and cream until smooth and thickened.

ESPRESSO WHITE CHOCOLATE CHUNK COOKIES

INGREDIENTS

1 cup (2 sticks) butter, softened

1 cup packed brown sugar

1/2 cup sugar

1 large egg

1 large egg yolk

1 1/2 tablespoons espresso powder

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 1/2 cups macadamia nuts, toasted and chopped

8 ounces white chocolate, chopped

2 ounces Sartori Espresso BellaVitano® cheese, grated (2/3 cup)

COOKING PROCESS

1. Cream the butter, brown sugar and sugar in a large bowl until light and fluffy. Add the egg, egg yolk, espresso powder and vanilla; beat until mixture is blended. Combine the flour, baking soda, cinnamon and salt in another bowl; gradually add to butter mixture just until combined

2. Stir in the macadamia nuts, white chocolate and Espresso BellaVitano®. Cover and refrigerate for at least 30 minutes.

3. Heat oven to 350°F

4. Shape dough into 1-inch balls. Place balls 2 inches apart on parchment-lined baking sheets.

5. Bake for 8-10 minutes or until edges are light golden brown. Cool for 5 minutes before removing to wire racks to cool completely.

Kanaal is a crunchy, butterscotchy, salty-sweet cheese candy, fresh from the Netherlands. The older Kanaal gets, the more deliciously dense and fudgy it becomes. At a glance or with a blind bite, one may guess Kanaal is any number of cheese types. In a way, this is true, as it is a lesserknown style called Proosdij. Proosdij is a semi-firm to firm style of washed-curd cheese made very similarly to Goudas, using specific combinations of mixed-strain starter cultures.
