Cranberry Walnut Glazed Brie
Ingredients:
• 1 wheel Supreme Mini Brie (7oz)
• ¼ cup dried cranberries, chopped
• 3 tbsp walnuts, toasted & chopped
• 1½ tbsp maple syrup
• 1½ tsp fresh thyme leaves
• ½ tsp unsalted butter
• Pinch of sea salt & black pepper
• Optional: few drops apple cider vinegar or orange zest
Instructions:
1. Preheat oven to 375°F (190°C). Place Brie on parchment-lined ovenproof dish. Score the top lightly.
2. Melt butter in skillet over mediumlow. Add thyme (30 sec), then walnuts (1 min). Stir in cranberries, maple syrup, salt, and pepper; simmer 1 min until syrupy. Add vinegar or zest if using.
3. Spoon mixture over Brie. Bake 15–18 min until soft and slightly sagging.
4. Cool 3–4 min. Garnish with thyme sprigs and a drizzle of maple syrup. Serve warm with bread, crackers, or apple slices.
Smoked Bacon Brie
Ingredients:
• 8 oz Fiorella Triple Cream Brie
• 3 slices applewood bacon, diced
• 1 medium yellow onion, thinly sliced
• 2 tbsp dry hard cider (or dry white wine)
• ½ tsp apple cider vinegar
• ½ tsp honey (optional, if onions are sharp)
• 1 tsp fresh thyme leaves
• 1 tablespoon of butter
• Sea salt & cracked black pepper
• To serve: crusty baguette, sliced pear or apple, fresh thyme sprigs
Instructions:
1. Preheat oven to 375°F (190°C). Place Brie on parchment in a small ovenproof dish; score the top lightly.
2. Crisp bacon in skillet over medium heat. Remove, leaving 1 tsp fat.
3. Caramelize onions in fat and butter 12–15 min until golden. Deglaze with cider; reduce until syrupy. Stir in vinegar, thyme, and a touch of honey if desired. Season to taste.
4. Top Brie with onion mixture and bacon. Bake 10–12 min, until the Brie softens and just begins to ooze.
5. Serve on a warm wooden board, topped with thyme sprigs. Pair with crusty bread and pear slices.

Ingredients:
• 18 oz piece of Fromager d’Affinois Florette
• 1 zucchini
• 6 basil leaves
• 6 brick pastry
• Olive oil
• Salt/pepper
Directions:
1. Preheat oven to 450°F.

2. Cut zucchini into small cubes then sauté in a frying pan with a spoonful of olive oil for 3 to 4 minutes, stirring constantly.
3. Remove the rind of Fromager d’Affinois Florette & mix the creamy cheese with the zucchini and basil in a salad bowl.
4. Cut the sheets of brick pastry into three strips, then fold the strip from corner to corner to form a triangle.
5. Bake Samosas at 450°F for 6–8 minutes, or pan-fry in olive oil for 3–4 minutes per side until golden.
Horseradish Potato Bites
Ingredients:
• 4 oz of Pine River Horseradish Spread Cheese
• 1 dozen bite size potatoes
• 2 slices of bacon, cooked and crumbled
• 3 or 4 stems of fresh parsley, finely chopped
• Salt and pepper
Directions:
1. Boil potatoes until slightly undercooked, then cool until easy to handle.
2. Preheat oven to 350°F and cut off one end of each potato (leave about 2/3). Scoop out centers into a bowl.
3. Mix scooped potato with bacon crumbles, ½ container Pine River Horseradish Cheese spread, and parsley.
4. Refill potatoes with mixture, place stuffed side up on a baking sheet, and bake 15 min or until golden.
5. Sprinkle with salt and coarse pepper, then serve & enjoy!
Fig & Blue Cheese Pinwheels
Ingredients:
• 1/4 cup Dalmatia Original Fig Spread
• 1 sheet frozen puff pastry, thawed
• 1/2 cup chopped walnuts
• 1/2 cup crumbled blue cheese
Directions:
1. Preheat oven to 400°F. Sprinkle flour on work surface. Unfold pastry sheet on work surface. Roll out to 12 x 10 rectangle. Spread Fig Spread evenly over pastry then sprinkle with walnuts and blue cheese.
2. Starting at a long side, roll up like a jelly roll. Cut into about 20 (1/2-inch) slices. Place the slices, cut-sides down, on 2 baking sheets.
3. Bake 15 minutes or until golden brown. Remove from baking sheets and cool slightly.
