Cooking with Love Transforms Food and Elevates the Experience at Urban Kitchen and Nina’s Tacos located in the heart of downtown Bozeman- two restaurants founded by husband and wife team, Chefs Joe and Megan Romano, in 2017 and 2019. More than just destinations, they are about nourishing and great tasting food, traditional and contemporary, that are always evolving in artistic and innovative presentations. From wine dinners to special events to street side and patio dining, they are focused on offering an atmosphere of warm
hospitality, individual attention and commitment to community involvement.
While Urban Kitchen is a collection of their favorite dishes from past experiences, travels and new creations, Nina’s Tacos is a more boisterous atmosphere serving delicious tacos and “too good” margaritas. They work with local farmers and purveyors, focusing on fresh local produce, Montana meat and high quality ingredients to please the palate and the eye.
The Beginning
In search of a lifestyle change, the Romanos moved to Bozeman with their three children in 2016 and to open Urban Kitchen in 2017. They brought with them a richness in experiences from world-renowned Michelin restaurants, at which honing their skills and developing a deep appreciation for meticulous, elaborate food preparation and cutting edge, innovative flavors was a continuing focus. Urban Kitchen thrived and soon after in 2019, the Romanos were convinced to open Nina’s Taco’s.
Who are the Romanos? Chef Joe’s extensive culinary career began working for Chef Antoine Bouterin before landing the position of sous chef at Aureole New York. Chef Joe worked alongside Chef Charlie Palmer for twelve years, culminating in the position of Executive Chef at Aureole Las Vegas, home of the original four story “wine tower”. While at Aureole, Chef Joe and Chef Megan led the team in achieving awards of excellence such as the AAA Five Diamond Award, Relais & Châteaux, Wine Spectator, and hosted collaborative dinners with international chefs such as Joel Robuchon, Alain Ducasse and Raymond Blanc. Joe expanded his repertoire of experience by joining Golden Entertainment as the Vice President of Food & Beverage for the next ten years, gaining invaluable experience operating fifty local taverns and four casinos in Las Vegas, Reno, and Black Hawk Colorado.
Megan grew up in a close-knit family in which a bountiful kitchen table was always the focal point of all important conversation and gatherings. It was not a surprise that freshly graduated from Northwestern University, Chef Megan began her culinary journey at Charlie Trotter’s in Chicago for the first glimpse of the intense, extreme demand of a world class kitchen. Chef Megan continued on this path working for Chef Gray Kunz at Lespinasse and Chef Charlie Palmer at Aureole, working all stations in the kitchen, each adding another layer of experience. Megan took on the position of Executive Pastry of Aureole Las Vegas for the next twelve years during which time they earned a Michelin star, was named “Best Pastry Chef” in Las Vegas, created a retail line of chocolate, published “It’s A Sweet Life” which all led to opening “Chocolate & Spice” Bakery in 2012.

Years spent in the world of Michelin restaurants, the Romanos sought a change in scenery and lifestyle. Bozeman was a community where they could showcase their skills and passion while fostering a warm, welcoming atmosphere.
The Romano’s experience in Michelin restaurants undoubtedly influenced their take on dishes at Urban Kitchen and Nina’s Tacos. Their time spent in highly demanding kitchens has given them a dedication to quality, precision, as well as continuous innovation. However their current restaurants in Bozeman are more personal projects, a place where their family can share their passion for food with the Bozeman community in a relaxed and friendly environment.
For Megan and Joe, food cooked with love is an elevated experience that allows them to share their talents and has become the very fabric of their lives, their community and their way of expressing love. Food is the centerpiece of countless celebrations, from the joyful chaos of holiday meals to weekly Sunday dinner with family and friends. Food is the most powerful form of communication, it speaks volumes and tells a story without breathing a single word. A bite of Grandma Romano’s banana cream pie, or a vibrant dish from a local restaurant isn’t just a meal, it’s a warm embrace. A tangible expression of love and creativity, a testament to the art of transforming simple ingredients into something that nourishes the body, soul, and mind. A satisfying meal might transport you back to the experience of sitting down to a home cooked meal, the aromas drifting through the entire house, the warmth, and the familiar flavors. Even these small moments, centered around a delicious meal, brings back cherished memories of laughter and family. Similarly, a hidden gem of a restaurant can delight, creating cherished memories and sparking endless conversation around the table.
Additionally, there were many valuable and tough lessons to be learned in the kitchen which Megan and Joe would attest were not easy but they would not trade for anything in the world and ultimately, inspired a sense of grit and perseverance. It takes a team in the kitchen to execute the dishes with care, precision and consistency and a “front of the house” team to engage with their guests for a memorable experience. And if all things align, the pleasure of making a lasting impression in someone’s life is what makes it all worth it. The chefs have instilled these at times not so glamorous lessons in their children, who all work at the restaurants having started out as dishwashers and worked their way up as team members cooking, hosting, serving and bartending.
Megan even brought her daughter Nina as her assistant to a James Beard dinner in New York when she was ten years old and she did an outstanding job. Frankie worked the hot line when they were overwhelmed during the summer of 2021 at the age of fourteen and gained the confidence that she was capable of the job. Will has taken on the role of lead cook, bartender or any other job needed as a Jack of all trades. The grit of their children is a source of immense pride as they are one more step toward being prepared for life having learned the value of hard work, communicating with people and problem solving on their own. And the sous chef, Kai, is the epitome of dedication, creativity and generosity. The entire team at Urban Kitchen and Nina’s Tacos puts their heart and hard work into their job every day to create a welcoming, delicious experience.
With limited free time, they involve themselves in charities that hit home with their family. The Romano’s have developed partnerships with Special Olympics, Human Resource Development Center, Fork & Spoon Kitchen, Gallatin Valley Food Bank, Toys for Tots and created charitable efforts together with Sean Ehlert of LowbrowBurger such as “Food for Families” and “Tequila for Turkeys”. Food is meant to be available to everyone and with their unique talent they have the ability to give back. At the culmination of her senior high school internship with Bozeman School Foundation, Nina hosted a fundraiser at Urban Kitchen with raffle packages that was a big hit. And recently together with Lucas, a standout cook in the kitchen completing his high school senior project, the chefs hosted a charity event with a tasting menu dinner with the Alzheimer’s Association. The idea of working with your own hands, leaving a mark in your community and offering a delicious meal creates a powerful message.
Today we live in an extremely fast-paced world where there are constant demands and distractions. Food offers a sense of comfort and grounding amongst all the chaos. While engaging with friends, family, regular or new guests, we have the opportunity to make someone’s day a bit better. It is one of the few industries that is at its best when we retain the value of interacting on a personal level using our sense of sight, hearing, smell and taste. The simple act of sharing a meal, familiar or new, allows us to take a moment and slow down. Allowing us the ability to connect and cherish the beauty and joy of human connections. he ironic part of Bozeman’s ski town culture is that the cross country skier population often balloons every summer. While these skiers do take advantage of snow up high, they’re mostly in Montana for “dry land” training: spending big days running in the mountains, strength training, bounding with poles, and putting many hours on an oddity known as roller skis. The old adage is that skiers are made in the summer, and for cross country (aka Nordic) skiers, that involves impressively high volumes of “easy distance” in order to increase oxygen carrying capacity and prepare the body with enough of a base to endure a long, grueling race schedule come winter.

The summer ski population is diverse, and many call Bozeman home. Bridger Ski Foundation’s (BSF) junior cross country skiers rank among the top four club teams in the country, and they cross train on roller skis and bikes during the summer months. BSF is home to the BSF Nordic Pro Team, a community-supported Olympic development program, made up of elite skiers competing on the national and international level. Pro Team Coach and four-time Olympian Andy Newell also runs a summer program that selects some of the top collegiate skiers in the country to train with BSF for the summer. As well, the club has a year-round post-graduate program for skiers doing a gap year or looking to ski with a club while enrolled at MSU. Not to mention, Bozeman is also home to Crosscut’s youth and elite biathlon teams and a top-ranked NCAA ski team: the MSU Bobcats.

ROLLER SKIING
Roller skis allow athletes to mimic both skate skiing and classic (striding) ski techniques during the off season, building both fitness and technique.”We are fortunate to have suitable roads and paved paths in Montana for roller skiing. It allows us to train at a high level and reduce our carbon footprint by not having to fly to summer skiing destinations,” says Coach Newell. “I’m very proud of the dedication these local athletes have in the summer and grateful for our supportive community.”
Roller skiers typically stick to quiet neighborhoods and back roads, with lots of high-vis clothing. Thankfully, locals are good at slowing down and sharing the road. But a new expansion of paved roller-ski trails at Crosscut Mountain Sports Center, up in Bridger Canyon, will provide a much-needed option for training without automobile traffic. Crosscut currently has a 700-meter-long paved rollerski trail, and they have a goal to add another 1.9 km of asphalt trail, with intermediate and advanced loops.
“The Crosscut Elite Team and Youth Biathlon Teams use the existing trail for training, and we are excited to host the Bridger Ski Foundation Jim Bridger Roll race on the existing trail this summer,” says Laurie Stahl, Crosscut’s chief marketing officer. Crosscut received partial funding from the Gallatin County commissioners’ Open Lands Program grant, and they are continuing to work to raise additional funds for the trail.

A skilled roller skier is impressive in action, and each summer BSF hosts roller ski races in conjunction with their annual Jim Bridger Trail Run fundraiser for the Pro Team. This summer you can witness roller skiers of all ages tackle a sprint course at Crosscut Mountain Sports Center on Friday, July 26. The entertaining nature of sprint ski races is that competitors will race on repeat through multiple elimination rounds, vying for a spot in the coveted finals. It’s fast paced and tactical.

Big Timber, Montana is home to a remarkable young man whose resilience and generosity have profoundly impacted our community. Barrett Artukovich, a spirited and courageous boy, faced one of life’s most daunting challenges at an age when most children are just beginning to explore the world. Barrett was only seven years old when his life took an unexpected turn when he was diagnosed with stage 4 Hodgkin’s Lymphoma on December 7th, 2018.
The diagnosis came as a shock to our family, and the subsequent weeks were a whirlwind of hospital visits, treatments, and uncertainty. Barrett spent the next three weeks in the Children’s Hospital in Denver, Colorado, receiving intensive care and beginning his chemotherapy regimen. His return home just three days before Christmas was bittersweet, knowing that the respite would be brief. We found ourselves back in Denver the day after the holiday, resuming the grueling schedule of treatments that would continue for the next six months.
Throughout this arduous journey, Barrett’s spirit remained unbroken. His determination and positivity shone through even on the toughest days. By the end of May 2019, Barrett was declared in remission, a milestone that brought immense relief and joy to our family. However, his battle with cancer left an indelible mark on him, fostering a deep desire to make a positive impact on his community.
During his chemotherapy treatments, one of the few things that consistently brought Barrett comfort and joy were the smoothies he enjoyed each morning. These smoothies not only nourished his body but also provided a small, yet significant, sense of normalcy amidst the chaos of his illness. Inspired by this, Barrett envisioned promoting healthier living within our community through nutritious smoothies.

Barrett’s experience with Make-AWish, a nonprofit organization dedicated to granting the wishes of children with life-threatening illnesses, played a pivotal role in transforming his vision into reality. Eligible for the program due to his condition, Barrett was given the opportunity to wish for anything his heart desired. While many children might choose to meet a celebrity, visit a theme park, or travel to distant lands, Barrett’s wish was uniquely selfless and forward-thinking.
With the unwavering support of Make-AWish Montana, Barrett’s dream was brought to life in the form of a smoothie trailer. This mobile operation allows him to share his passion for healthy eating at community events and public gatherings throughout
