Gabi is the creator and editor of Walker Mtn. Eats Facebook group, where she shares her delicious recipes which are tried-and-true tested on her husband, Gar, her girls, and her family, church family, and friends.
There’s nothing better than a little prep and poof-dinner time is a breeze. This Valentine’s Day consider a delicious London broil in a crock pot that will melt in your mouth, cooked in a savory balsamic gravy. Serve with mashed potatoes so that you can enjoy every bit of that amazing gravy! I used the leftovers as a sandwich and this would make some great tacos too!
BALSAMIC LONDON BROIL
INGREDIENTS
• 3 lbs London Broil Roast
• Salt/pepper to taste
• 4 T Butter - divided
• 1 T Oil
• 1 Small onion - diced
• 2 Garlic cloves - minced
• ½ C Beef broth
• 2 T Tomato paste
• 2 T Balsamic vinegar
• 2 T Brown sugar
• 2 T Worcestershire Sauce
DIRECTIONS
CROCKPOT | 4-8 HRS
STEP 1 Season both sides of the London broil generously with salt and pepper. Using a large skillet over medium-high heat, add in the butter and oil. Sear the London broil for a few minutes on each side, until each side is browned.
STEP 2 Once each side is nicely browned, place the roast in a crock pot. Add in the onion and the garlic.
STEP 3 In a small bowl, mix together the beef broth, tomato paste, balsamic vinegar, brown sugar and Worcestershire sauce. Pour the mixture over the roast. Place 2 T butter on top of the roast.
STEP 4 Cook in the crockpot on low for 8 hrs, or high for 4 hrs. When finished, remove London broil from the crock pot and put on a platter or cutting board and shred with two forks. Add back to the juice in the crock pot or make gravy.
GRAVY
STEP 1 Use the remaining liquid left in the crockpot to make a gravy. Bring the liquid to a boil and make a mixture with 1 T of corn starch and ¼ C of water whisked together.
STEP 2 Pour the mixture into the boiling liquid and continue to stir and boil until thicken. Taste for seasonings and adjust.

What a moment! The Kanawha County Commission recognized HHHS Coach Joey Fields as Coach of the Year and quarterback Dane Hatfield as the recipient of the 2024 JR House Award. Coach Joey led this year’s team to an undefeated season and they finished first runner up in the AAA championship. Dane has been amazing to watch during his career at Herbert Hoover where he had over 6,000 rushing yards, over 6,000 rushing yards, and over 170 touchdowns. Photo provided by Town of Clendenin

Off to a great season! The Herbert Hoover Archery Team placed third at their first tournament which was held at Elkview Middle School on January 4. Head Coach is Larry Salisbury and Lori Monk and Matt Wiseman are assistant coaches. This basketball season is the perfect time to take a trip down memory lane with an early Elk River basketball team. The Facebook group You Know You’re From Clendenin WV When recently shared a fascinating photo of Clendenin High School’s first basketball team from 1914. What a great glimpse into the history of Elk River athletics!
The New Year kicked off in style with a fantastic firstday hike and bike event at the Gassaway and Clendenin Trail Heads! The trail was buzzing with energy and excitement—just in time, too, as it got blanketed in a foot of snow four days later!

There’s no better time to share some fun snow facts than when you’ve been snowed in all week! Did you know that no two snowflakes are alike? Researchers say there are only five basic patterns of snowflakes, and they all stem from a hexagon shape. Fascinating, right?
Here’s another snowy tidbit: Have you ever heard people claim they can predict snow or rain because their joints ache? Well, there’s some truth to it. Changes in barometric pressure can cause swelling in joints, especially for those with arthritis. I bet anyone with arthritis can tell you—we’ve had plenty of snow already this year! By mid-January, our gardens were buried under a solid foot of the white stuff.
Farmers say this snow is a blessing, especially after the dry summer we had. Snow helps replenish the soil and might even reduce the number of bugs and bees come summer.
Speaking of gardens, did you know snow acts like a cozy
blanket for the soil? It insulates it from bitter cold and strong winds. As the snow melts, it releases moisture and nutrients—like nitrogen—into the ground. This slow, nutrient-rich melt is why some farmers call snow “Poor Man’s Fertilizer.” In fact, some even plow snow into their fields to boost its benefits.
Snow’s also handy for livestock. They can munch on it for extra water while grazing in winter pastures. Of course, don’t forget to keep fresh water available for them—and for your pets!
On the flip side, heavy snow can be rough on plants and trees. Too much of it can break branches or damage delicate vines like grapes and berries. If you can, gently brush heavy snow off plants, especially after a wet snowfall. And watch out for falling trees—they’re often the culprit behind power outages.
Winter is a good time to stay prepared. Keep an eye on the weather and stock up on essentials whenever you see sales. If you’re running to the store before a storm (like when we needed milk), check with your neighbors to see if they need anything, too.
If the power goes out, don’t panic. Here are a few tips that help us:
• Stay calm.
• Keep flashlights where you can find them.
• Unplug electronics to avoid power surge damage.
• Keep the fridge and freezer closed.
• Have a fully charged phone battery pack handy.
• Stock up on bottled water.
• Keep board and card games in one place.
When the lights go out, my kids and grandkids love playing games by lantern light. These moments make for the kind of family memories you’ll treasure forever.
Oh, and here’s a classic: “Don’t eat snow—it’ll make you sick!” My mom used to say we couldn’t eat the first snow because it “cleaned the air.” Turns out she wasn’t completely off. Some snowflakes do form around bacteria, but researchers found it’s no different from kids playing in dirt. Still, if you’re going to snack on snow, stick to the clean stuff!
Speaking of snow treats, Mom had the best winter recipe: Snow Cream. She’d scoop up a big bowl of clean snow (never the first snowfall), mix in 1-2 cans of sweetened condensed milk, add a splash of vanilla, and stir until creamy. It was always a hit!
Stay warm and enjoy the snow while it lasts! “If February brings drifts of snow, there will be crops to hoe.” Another old wives tale-- we will have to watch to see if it rings true.
Don't fall off the treadmill (or bike... or rower... or....)

New Year’s resolutions around fitness and exercise are incredibly popular. The excitement and hope generated by the start of the year makes starting an exercise program easy.
Now that it’s February, staying with it gets hard. Life gets busy, motivation drops, and suddenly you’re back on the couch, wondering how you’re 6 episodes into Yellowstone instead of at the gym. Knowing that you should exercise or why you should exercise isn’t the problem. Actually, getting up and doing it is. Here are our top tips for making sure you stick to your exercise plan:
SET REALISTIC GOALS. Don’t try to go from zero to hero overnight. Start with small, achievable goals and increase them gradually. Make it easy to win - that helps you build motivation and an exercise habit. For some people, that might mean starting with a daily 10-minute walk. For some people, that bar is too high. When we say make it easy to win, we mean easy. Your goal could be to scan your card at the gym 3 times a week. It might be putting on your walking shoes and going out the door. It might be one pushup. Start tiny.
DO ACTIVITIES YOU ENJOY. Exercise isn’t punishment. Choose activities that are fun. It could be running, walking the dog, dancing, swimming, kickboxing, or playing a sport.
SCHEDULE IT. Schedule your workouts like you would any other important appointment. When people ask you
to do something else during that time, say “Sorry, I’ve got an appointment.” The more you make exercise a routine, the less likely you are to skip it.
DON’T GO IT ALONE. Having someone waiting for you at the gym really motivates you to get there. Having support helps push you to work harder and motivates you when you’re feeling down. Your support could be a friend, the other people in a group fitness class, or a trainer.
MIX IT UP. Try a new class. If you usually run at the same pace, try intervals. Walk a different route. Doing the same thing over and over again gets boring and leads to burnout. Keep things interesting to stay interested.
TRACK YOUR PROGRESS. Bonus points if you find a way to make it visual. Our brains love to see tasks checked off, a chart or numbers going up, and rings closing. Seeing how far you’ve come is a great motivator. Keep track of your workouts in a journal, make a spreadsheet, use an app or fitness tracker.
BRIBES WORK. Celebrate your successes, no matter how small. Set a goal to work out 3 times this week and treat yourself to your favorite coffee when you do. Buy yourself a new workout outfit, get a massage, or anything else that will help you stay motivated when you reach milestones.
ADJUST. Don’t push yourself too hard, especially when you’re starting out. If you’re feeling tired and sore, take the intensity down. Plan rest days into your routine. Don’t make your goal and plan so rigid that it’s impossible to complete in the real world.
FORGIVE YOURSELF! Everyone has setbacks. You are going to get sick. You are going to miss a workout. That is ok. Pick yourself up and get back on track. With the right mindset and a little perseverance, you can reach your fitness goals.
