HELLO
& Welcome Back! I hope everyone rested during January and February because March arrives with a full calendar of events. The grass is turning greener, gardens need prepped, basketball wraps up, baseball/softball teams are ready to take the field, the trail is full of bikers and walkers, graduation and Memorial Day weekend are just around the corner, and Easter/spring break will wrap up the month. Depending on the day, you either need a light jacket or your winter coat and gloves. Always predictably unpredictable…welcome to March! This month ERL wraps up winter and spotlights the community celebrating our first snowfall event with over eight inches! From sledding to snowball fighting, kids and adults-reverting-to-be-kids, all enjoyed the fun. Even the snow didn’t deter locals, however, from attending the Pendleton Whisky Velocity Tour in Charleston on January 12-13 at the Charleston Coliseum and Civic Center. Our local award-winning photographer, Jill Moles Mullins, captured the excitement and shared it with us in this month’s issue! If you are tired of ham and turkey, check out Gabi Strickland Walker’s impressive Monterey Chicken Braid. This easy, delicious entree would be perfect to serve guests during the Easter holiday. I’m thinking it will be on the menu at our house soon. It looks amazing! Check out all of her amazing recipes on Facebook/Walker Mtn Eats. As we approach another trip around the sun, it’s time to shake off the winter chill and usher in the spring warmth. Walk a little slower to your mailbox and inhale the fresh air, stop and visit with your neighbors, get your muscles and joints moving again, and get ready to kickstart a new season! ho says Easter dinner has to be ham. This easy, delicious, and very impressive entree will make any occasion special! Gabi Strickland Walker of Walker Mt. Eats/Facebook group, said, “My gang gobbled this up and there were no leftovers; in fact, they could’ve probably eaten another half of one. The creamy chicken mixture with hints of the smoky bacon and the french fried onions were delicious. Pae didn’t even realize she was chowing down on spinach until Gar mentioned it as she took the last bite…she looked around at everyone like, wait, what? All the ingredients just complemented each other so well in one delicious bite! If you are a sour cream hater, I urge you to take a leap of faith and try this. My sour cream-loving bunch could not figure out what made it creamy. You cannot taste the sour cream.” This recipe is very versatile, makes a decadent entree for a special occasion or a great weeknight family meal. It would be so impressive for a girlfriend’s night-out dinner alongside a charcuterie board, or cooled and sliced into small pieces for a game-night appetizer. This recipe will be a hit with your family and friends!
NOTES * Make sure to get as much of the water out of the frozen
spinach as possible. I drain it in a colander and then squeeze it with a towel or paper towels until it is almost dry.
• Quicker and Easier: Some grocery stores sell their rotisserie chicken in a 16 oz (2 C) container already pulled for you. • Making Ahead: You can assemble the braid and refrigerate it, even up to overnight before baking. • Freeze: Bake the braid and let it cool completely. Wrap the braid in plastic wrap and aluminum foil and freeze. When ready to eat, thaw and reheat in the microwave or covered in the oven.

DIRECTIONS
• 2 C cooked chicken - chopped (I used pulled Rotisserie chicken from Sam’s)
STEP 1 Preheat the oven to 400. Roll out pizza dough vertically
• 2 C shredded Monterey Jack cheese divided • 10-oz pkg frozen chopped spinach* thawed/drained ••ONLY USE about 1/2 of pkg•• • ⅔ C sour cream • ½ t garlic powder

on a baking sheet lined with parchment paper.
STEP 2 Mix chicken, sour cream, 1 ¾ C Monterey Jack cheese,
spinach, bacon bits, garlic powder, and ½ C french fried onions. Spread chicken mixture down center of pizza dough.
STEP 3 Cut 12 strips on each side of the dough with the chicken
mixture (see photo). To braid, lift strips of dough across the mixture to meet in the center. Continue alternating strips to form a braid.
• Salt/Pepper to taste
STEP 4 Bake for 18-20 minutes or until lightly browned.
• ¾ C french fried onions
STEP 5 Remove braid from the oven. Top with remaining ¼ C
• 1 (13.8-oz) can Pillsbury refrigerated thin pizza dough
of cheese and fried onions. Bake an additional 5-8 min until the cheese has melted. Enjoy!

emember when you were young and there was nothing more exciting than when a carnival or rodeo came to town! The 2024 PBR Pendleton Whisky Velocity Tour arrived in Charleston with the same enthusiasm and provided an exciting, action-packed, adrenaline-

Elk River photographer Jill Moles Mullins captured some great photos for ERL at the PBR: Pendleton Whisky Velocity Tour in Charleston on January 1314 at the Charleston Coliseum and Civic Center. Jill said, “It was so much fun and very exciting being inside the media beatbox cage where we could see the action up close!” ERL has also included a few candid shots of Elk River folks enjoying the event.
The PBR gives the opportunity for riders to become legends and spectators to witness triumphs and the birth of stars. That is exactly what happened in Charleston that weekend. The Charleston Coliseum was filled with attendees who witnessed a humble and talented young man, Marco Rizzo, rise to his first-ever victory with an impressive 2-for-3 ride. Marco, who was born and raised in Quitman, GA, made his dream come true with his first ever win! Marco responded with tears when asked about his win and said it meant the world to him. He grew up dreaming of this moment, and he gave his parents much of the credit for doing all they could to get him there. He said, “They are always supportive and come to watch my rides and that means everything to me.”

The PBR 2024 Pendleton Whisky Velocity Tour rolled into Charleston for an exhilarating two nights of some of the best bull riders in the world engaged with the sport’s toughest bovines. It was the ultimate battle of man vs. beast in one of the most electrifying live sporting events to witness.
The yearly five-month event tours 30 cities to fetch the finest of athletes and provide a pathway to the World Finals. The finals is the richest bull riding event on the planet, with the champion receiving the golden World Championship buckle and $1 million bonus. PBR offers the largest payouts in all of the western sports. Over the last five years, sanctioned events have paid out just shy of $50 million in prize money, with $13.5 million in 2022 alone. The PBR broadcasts reach more than 405 million households in more than 91 territories. On social media, PBR had more than 3.1 billion followings and 1.1 billion video views. This raw sport showcases incredible athleticism, and is great family entertainment.

This was his first victory in three entries. The entire coliseum was cheering him on; it was great seeing and hearing such enthusiasm for this young man. He continued his winning streak the following weekend in Grand Rapids, Michigan. The 18 year-old Rizzo grew up with hopes of a shining future in bull riding. He got on his first calf when he was 6 years old and, at age 15, Rizzo placed second overall in his age bracket at the 2020 Junior National Finals Rodeo in Fort Worth, Texas. Education and being a good student is important to Rizzo and he plans to earn a college degree with the hopes to rodeo while in college and transition to the sport fulltime after graduation. When he is traveling on the rodeo circuit, he studies through the week during down times. Look for this young man to rise to the top of his profession and make his mark on the world! They organized to provide a wider arena for aspiring bull riding athletes to make their way up the ladder. One of the last homes they visit features a lush commemorative shade garden where a Civil War soldier’s bones were buried. We walked under a wooden arbor covered in deep pink climbing roses just starting to bud. I sucked in a breath at the sheer expanse of emerald green lawn that stretched out to a copse of tall evergreens. Along the sides of the yard, handmade wooden borders lined raised flowerbeds, and lush green leaves and ferns spilled over the edging. Delicate flowering trees were centerpieces in some of the beds, while fountains trickled away in others. A circle of chairs sat off toward one side, inviting visitors to "sit and stay a spell," as Auntie A would've said. A woman a little way ahead of us was carrying a tiny dog in her arms, and it started barking furiously. While its grating yips were hardly terrifying, she shushed her pet, saying, "Quiet, Walter, you might scare people." I had to grin. Her diminutive, fluffy canine could hardly compare to my hundred and sixty-five pound Great Dane, Coal, which was partly why I didn't bring him along on tours like this. I'd seen the fearful looks in people's eyes as I walked him along the streets, even with his soft muzzle on. For people with a dog phobia, nothing I said could convince them that a dog so big—and so tall, because his head nearly came up to my chest—was just a loveable, bumbling baby who wouldn't hurt anyone unless they tried to harm me. Walter continued his restless barking, which seemed vaguely aimed at the ground beneath him. The woman finally gave up and set him down, commanding him to "go potty."

But directly behind the plaque, several of the hosta plants had been strangely mashed down. Visually following the path of their mangled leaves, I saw something brown protruding from under a sprawling blue hosta. I leaned in for a closer look. Walter gave a sharp bark, then started sniffing at my leg. Hopefully, he wouldn't decide he'd found the perfect place to relieve himself. It didn't take long for me to realize that the brown leather object I was staring at was the tip of a shoe—to be more specific, an expensive loafer with a thin white sole. In a shadow to the right of that shoe, I could just make out another one. A sick feeling roiled through my stomach—a sinking certainty of what I was looking at. Before I could call Bo over, Walter jumped onto my extended shin, propelling himself toward the wooden border wall.
But instead of taking a bathroom break on the lawn (which would hardly be a delight to tour-goers), Walter darted toward the memorial bed that was chock-full of dinner-plate sized hosta leaves. Blue hostas, yellow-streaked hostas—you name the hosta, and that bed had it.
The dog's daredevil move brought my brother running. He managed to catch the wriggling Walter in both arms before he hit the shade bed. As the tiny dog growled, Bo ignored him and stalked over to his preoccupied owner. He deposited the pet next to her feet and said, "Ma'am, there is a leash law in Lewisburg. Dogs are required to be on a leash when they're not on their own property. I figure you brought one along with you on this tour?"
Walter placed his front paws against the wooden barrier and stretched upward, like he was limbering up to vault into the leafy bed. Since his owner had started a conversation with another woman, I hurried closer, placing myself between the dog and the hostas. Walter eyed me suspiciously, as if I were thwarting his noble aspirations.
Bo was using his "resistance is futile" tone, which, combined with his powerful stare, could not be disobeyed. The woman reluctantly dug a leash from her quilted tote and clipped it onto Walter's collar. She shot me a glare, as if I were the instigator of all her dog's unhappiness, then turned back to her conversation.
Bo ambled my way, giving me a raised-eyebrow look as if to ask, "What's next, sis?"
My brother headed over to me, concern in his eyes. "You okay? Did he scratch your leg? His claws could definitely use a trim."
I glanced behind me. Maybe the wooden border would hold my weight if I settled onto it, effectively blocking the dog's upward path. My gaze traveled from the border to the memorial plaque to the hostas spilling over it.
I shook my head. "I'm fine. But Bo, there's something here." I pointed a shaky finger toward the loafers, which were most assuredly attached to a body. -copyright 2023 Heather Day Gilbert

season, tomatoes and peppers are all we try to raise indoors. Everything else does better for us planted directly in the ground. You can experiment to see what works best with your seeds. Marigolds are another plant you can start indoors to plant with your vegetables. Marigolds can help bring in ladybugs and other insects that eat aphids and other pests that can damage your crops. Guidelines for planting seeds indoors – Fill containers 2/3 full with pre-dampened seed-starting mix or potting soil – Plant 2-3 seeds in a jiffy pot (read seed pkg. for depth or special instructions) – Cover seeds with more soil – Mist some additional water on top so top layer won’t dry out
