& Welcome Back! As we say goodbye to October, it's time to embrace the peace of November before the hectic holidays begin--stunning sunsets, glorious falling leaves, crisp air, early morning frosts, and the awesome smell of chimney smoke spiraling in the sky. This month’s cover photo of our gorgeous WV hills, “how majestic and how grand,” was taken by local photographer Jill Moles Mullins. It’s the perfect backdrop for our November issue as we celebrate the fall events. Our feature, Fall Projects are in Full Swing, gave us a chance to introduce three of our local hardware stores. Roger’s Hardware and Rentals in Pinch, the new Green’s of Big Chimney, and Spencer’s Hardware in Clendenin. All are conveniently located throughout our Elk River community and each reflect their own version of a traditional hometown hardware store. All three go the extra mile to make sure they have the products you need, when you need them. Hunting season in WV is here and the American Heart Association is again stressing that the number one priority is making sure our hunters make it back home safely. Take some time to read through their information in this month’s issue so that you can recognize the signs of a heart attack or stroke. Make sure someone at home knows the area where you will be hunting and your expected time of return. Have a plan in place for a safe, healthy hunting season. Our Reader’s Submission this month is from Elk River native and 1986 HHHS alumnus Karl Tate. His photos captured the autumn beauty reflected in Sherando Lake in Sherando, VA and at Sandy Bottom Nature Park in Hampton, VA. If you haven’t seen his work lately, go to Karls Photos on Facebook and scroll through his amazing photos. Just in time for the holidays, Gabi Strickland Walker shared an amazing copycat recipe for the new Crumbl cookie bars that are the big rage now, with long lines formed outside their door at Southridge! With some creativity and your own cookie decorations, we think these could be great Christmas gifts for your friends. I mean, who doesn’t love a Crumbl cookie! I’m going to start practicing with my granddaughter, Remi, for Thanksgiving so that we can progress to more decorative cookies by Christmas! Take some time this month to give thanks for our homes on the Elk, our neighbors, our families, and for the unique camaraderie we share here in our community. So many people comment on the special bond they see and feel here. As we begin the holiday season, I think it’s important to let others know how much they mean to us. Sometimes just saying we care is the best gift of all. Happy Thanksgiving everyone. Thank you for the many blessings we share here on the River.

THE

ELK’S COOKBOOK DID SOMEONE SAY CRUMBL COOKIE?

E

veryone is loving the new Crumbl cookies that are the big rage now, with long lines formed outside their door at Southridge! Gabi Strickland Walker of Walker Mountain Eats said, “If you are a signature Pink Crumbl Cookie lover…STOP…what you're doing and try this recipe NOW! The original recipe said it was a copycat recipe for the Lofthouse sugar cookies that you find in most grocery stores. Gabi said, “Even though I can’t stand them, Gar and the girls love them. I was going to surprise them with the Lofthouse cookie bars and I tried a little bit of the dough, then a little icing, but no Lofthouse taste!!! I realized these aren’t even close to Lofthouse – they are a copycat of Crumbl!!!

"CRUMBL" COOKIE BARS

INGREDIENTS

DIRECTIONS

Cookie

Cookie STEP 1 In a large bowl combine butter, shortening, and sugar. Beat until

1 C salted butter - room temp

½ C shortening

1 ½ C sugar

1 large egg

1 ½ t vanilla extract

2 t almond extract

3 ½ C all purpose flour

½ C cornstarch

2 t baking powder

Frosting •

½ C salted butter - softened

3 C powdered sugar

1 t almond extract

4 T milk

food coloring (a few drops) - optional

Sprinkles - optional

Preheat oven to 350• | Bake 15-18 Min

fluffy. (I use my stand mixer, but an electric hand mixer works great too).

STEP 2 Add egg, vanilla and almond extract. Mix. STEP 3 In a separate bowl, combine dry ingredients. Slowly add dry

ingredients to wet ingredients until a soft dough forms. Dough will be soft, but slightly crumbly. (TIP: sprinkle dough with a small amount of flour as you are pressing into the pan to prevent it from sticking to your hands.)

STEP 4 Scrape dough out of the bowl with a rubber spatula and press

dough onto a lightly greased (with cooking spray) cookie sheet/ baking pan (13" x 18").

STEP 5 Bake at 350 for 15-18 minutes. NOTE: Don’t over bake, just the

edges should be slightly golden because they will continue to bake as they cool and you don’t want hard cookies.

Frosting NOTE

Gabi suggests making about a recipe and a half of the icing to equal the Crumbl thickness. She added, “I personally like the original thinner icing because it was crazy good and not too sweet, so you can decide which your family prefers!”

STEP 2 Mix frosting ingredients together until fluffy. Frost cooled cookie bars in an even layer and add sprinkles or other toppings.

Heart Healthy Hunting Hunting season in West Virginia is upon us and the most important priority is making sure you make it back home safely. Let’s make sure you are ready for a safe and successful year in the woods by learning the signs of a heart attack or stroke and that you have a plan in place for a safe, healthy hunting season.

Signs of Heart Attack & Stroke: Stroke Symptoms

FACE DROOPING Does one side of the face droop or is it numb? Ask the person to smile. ARM WEAKNESS Is one arm weak or numb? Ask the person to raise both arms. Does one arm drift downward? SPEECH DIFFICULTY Is speech slurred, are they unable to speak, or are they hard to understand? Ask the person to repeat a simple sentence, like "the sky is blue." Is the sentence repeated correctly? TIME TO CALL 911 If the person shows any of these symptoms, even if the symptoms go away, call 911 and get them to the hospital immediately.

Heart Attack Symptoms

CHEST DISCOMFORT Most heart attacks involve discomfort in the center of the chest that lasts more than a few minutes, or that goes away and comes back. It can feel like uncomfortable pressure, squeezing, fullness or pain. DISCOMFORT IN OTHER AREAS OF THE UPPER BODY Symptoms can include pain or discomfort in one or both arms, the back, neck, jaw or stomach. SHORTNESS OF BREATH With or without chest discomfort. OTHER SIGNS May include breaking out in a cold sweat, nausea or lightheadedness.

Heart Health Tips

Learn the heart attack, cardiac arrest, and stroke signs and listen to your body. Give yourself a break! Take frequent rests so you don’t overstress your heart and pay attention to how your body feels. Stay hydrated and choose healthy snack options. Consult a doctor if you have a medical concern or question or if you are experiencing symptoms of a medical condition (like heart disease or diabetes), prior to hunting – especially if this is a substantial increase over your usual level of activity. Learn CPR. Minutes matter! Fast action saves lives, so don’t want to call 911 if you feel like something is ‘off.

Make A Plan Make sure someone knows your approximate time of departure and when you should be back home. Also, make sure they have an estimated area of where you’ll be hunting. Know the closest hospital and most direct route in case of emergency. Charge your phone and have emergency contacts input into your device.

Smith’s TrueValue Hardware is closed but Green’s at Big Chimney is open for business!” What can customers expect to find at Green’s of Big Chimney? The new owners are looking to have online shopping soon. They are also able to carry more feed options at Big Chimney. Cameron explained, “Any product that Green’s Feed and Seed in Charleston has, we can offer to our customers as well. Another example is we will be carrying wood pellets here at this location.” Right now Green’s is fully stocked with corn, deer blocks, and other hunting products. Also, with cold weather approaching, Green’s has a good selection of all kinds of

heaters, including propane and kerosene. Cameron said, “We have everything you need, both for the inside and outside, to make sure you are ready for winter.” Another big draw at Green’s at Big Chimney is Benjamin Moore paint. “People come from far and near to purchase the excellent Benjamin Moore paint; it has a huge outreach.” Green’s of Big Chimney has plans to be very active in the community, and Cameron said, “Our grand re-opening was the first of our events, but the community will be seeing more at our location in the future. We are planning events with free food and retailers here on site to demo some of their products and answer questions. We want to be the store you choose with confidence.” They are offering a Military Discount as well.

We have a good inventory of products, but we can order parts for heating and air conditioning; pools and spas; appliances; lawn mowers; garden tools; and more. We have access to a humongous catalog.” For example, he added, “A customer came in and had a washing machine that required a special drain hose. I was able to look it up and have it shipped in quickly. If you don’t see it on the shelves, ask about it and we can order it!”

At Rogers Hardware and Rental, you can find Bill or Houston Shaffer, Bill’s right-arm and assistant who has been with him for 22 years, behind the counter greeting you when you walk in the door. They know you; they know your parents and your grandparents. There is nothing like walking into a store where you are treated as family. No stranger to owning local businesses, Bill’s mom and dad, Dennis and Othel owned and operated Rogers Grocery, starting in 1936. After Dennis passed in 1992, Bill and his wife, Maxine, carried on with the store until it closed in 2005. Bill said, “The opening of Walmart Grocery and Kroger at Elkview really hurt the small-town grocers.” Bill always had a hardware store combined with his grocery store. He said, “When the old fire department building (next door to his grocery store) was sold at cost, it was a good time

Bill recently listed his business for sale, acknowledging that at age 86, maybe he should think about retiring. Until he finds the perfect buyer who will carry on the same customer service and love for his community, however, Rogers Hardware is open and stocked for all of your needs.

Elk River Trail Foundation volunteers have now completed Phase 1–Braxton County of the River Sign Project by placing mileage markers each mile along the Elk River Water Trail from Sutton Dam to Duck. Water Trail Committee chair Barry Curry, Michael Shamblin, Lois Cole, and Tyler Long led the effort to install the signs that help people plan trips and aid first responders in quickly locating people if the need should arise. Barry and Michael also cataloged and photographed all public access sites along the river to include on maps and the Foundation’s website. Grants for the signs were awarded by the WV Department of Environmental Protection Agency - Stream Partners Program and TC Energy. Phase 2-Clay County and Phase 3-Kanawha County will involve completing the installation of signs each mile along the 102-mile Elk River Water Trail running from Sutton Dam to the Kanawha River in Charleston. SIT FOR A BIT & PONDER – OR JUST SIT Elk River Trail Foundation volunteers have also been hard at work installing five new benches along the trail from Clendenin to Queen Shoals. Jessica Gamponio Wright and the Elk River Walking Club of Clendenin helped choose the bench locations. A special thanks to Jessica, Rail Trail Committee chair Matt Lyons, Gary Vogelsong, Barry Curry, Dave Knight, John Casey, Romayne Casey, Brad Tilley, John Carpenter, Shawn Duncan, and Ken Tawney for installing the benches. Also, a big shout out goes to Orlando Craighead and the Kanawha Coalition for Community Health Improvement and an anonymous donor for helping fund the benches and the installation materials. Two of the benches bear memorials to Dave Fields, the legendary running coach in Clendenin, and Chris Martin, the husband of the Foundation’s immediate past treasurer Michelle Martin.

ELK’S JOURNAL MEET LOCAL AUTHOR VICKIE OSBORNE BROWN

This month ERL recognizes Clay County author Vickie Osborne Brown. Check out her lovely book, Mountain Midwife: The Life and Times of Isabella Brown Neal, published by West Virginia Book Company. Mountain Midwife is the story of Isabella Brown Neal, a hard-working, outspoken old mountain woman. Known as Belle, she traveled the hills of Clay County, West Virginia, delivering babies and nursing the area’s poorest families. The West Virginia Book Company summary said: “Belle walked or rode her old nag, often traveling alone with just a doctor’s bag of herbs, a lantern, and a shotgun. Her father, Dr. Anthony Brown and her uncle, Dr. Wash Brown, both practiced in Clay and throughout Clay County and Belle recognized the need for a midwife, and became a Certified Midwife of WV. Called into service no matter the weather, the distance, the time of day or night, Belle would respond to almost any need, and was happy to do it. When a wild-eyed, exhausted 10 year old would

appear to bring Belle for a birthing, she would fix him cornbread and buttermilk, and reassure him he had done his job. Next the two would jump on Belle’s horse and head out. It is estimated that Belle delivered over 3,000 babies in her 40-year career. A lost breed, Belle never expected formal payment, most often didn’t receive it, and would graciously accept a ham or chicken. As she worked, she questioned Homer about Marilda’s condition. “Are her pains close? Who’s with her now?” “Well, Pap was there and Forest went to get Grandma Annie. And Annie Exline was there too. Pap said for me to come through the woods since it was faster and tell you to come on; he’s no good with child birthing,” Homer said.

CHRISTMAS ON MAIN SAT., DEC. 2ND The Town of Clendenin is inviting everyone to join them for a special night of celebration and giving on Saturday, December 2. The festivities begin at 6 PM with a lighted Christmas parade starting at the Poca Valley Bank parking lot. The parade is open to all, so decorate your jeep, 4-wheeler, side by side, bicycle, stroller, wagon or your favorite vehicle and join in on the fun. Following the parade will be the annual Christmas tree lighting at 7 PM at the end of Main Street. There will be hot cocoa, Christmas caroling, and plenty of activities for the whole family. Everyone in the parade is asked to donate a new, unwrapped toy for the Town’s Toy Drive. Lee Hall, business owner in Clendenin said, “This holiday, take some time to involve your whole family in decorating your vehicle and picking out a toy to donate. This is a great chance to let your children experience the OTHER side of the parade.”

‘YOU KNOW YOU’RE FROM CLENDENIN WV WHEN’ is one of ERL’s favorite groups. This month our Elk Reflects is featuring a painting submitted by Tommy Humphreys, a member of the group. The time frame is probably around the late seventies. Kim Johnson, administrator of the group, said, “The construction of the Clendenin Advent Church was started in 1912-1913. The building was dedicated in 1914 and was built by men from the local area.” Member Donald Cantrell said, “I was always wondering who built that church and when!” Locals shared other comments:

FALL CANNING & UNIQUE USES FOR MASON JARS By Laura Boggess Shafer

I

t's hard to believe it’s November. Our garden vegetables and fruits have been harvested and preserved, and it is now time to admire those gorgeous colors in our cellars! What a feeling of accomplishment and confidence as we serve up delicious, home-grown dishes for our families. But wait--don’t put away your canning jars yet! November events are perfect for canning up some fall specials!

A CELLAR FULL OF DELICIOUSNESS I give extra thanks each Thanksgiving when I can just go to the cellar for most of our dinner menu items: potatoes, green beans, corn, pickles, pumpkin and so much more. Something you may not have thought about, however, is what to do with all of that left-over turkey after dinner – can it!! The recipe is simple and the taste is amazing.

Canned Leftover Turkey

STEP 1 Debone turkey as soon as possible STEP 2 To make turkey stock, cover the turkey carcass with water (about a gallon). I always include the drippings from the roasted turkey when cooking the carcass for additional flavor. Add salt, pepper, celery, carrots, herbs or other seasonings you like; Bring to boil and simmer for three hours; Remove bones and strain

STEP 3 Loosely pack turkey in your jars and cover with the stock; Put on the rings and lids

STEP 4 Process 3 hours in a water bath or pressure can your jars at 10 pounds pressure. For pints, process for 75 minutes; for quarts, process for 90 minutes. TIP: Can any of the remaining stock you have left for soups, gravy, etc. Follow the same canning times listed above.

Canned Deer Meat (Venison) If you are from West Virginia, there is a good chance you, your spouse, family and friends all hunt deer. Break away from the traditional frozen deer meat, and give this canned deer meat recipe a try. It’s tender, delicious, and most of all, it is ready to quickly add to any of your favorite recipes!

Delicious Canned Deer Meat (Venison) STEP 1 Deer meat, cut into cubes

STEP 2 Place cubed deer meat in completely DRY jars (we put ours in the oven on low to make sure they are dry) STEP 3 Add 1 tsp salt; Put on the lids and rings; Process 3 hours in a water bath or pressure can at 10 pounds pressure. For pints, process for 75 minutes; for quarts, process for 90 minutes. Some people prefer to cook the deer meat first, but this is how our family prefers to can it. If you cook your deer meat first, the processing time will be reduced, so check your canning recipes in your Kerr (or preferred) canning book for exact times. TIP: Deer meat also makes great BBQ’s. Our family likes it drained, rolled in flour and browned. Serve with your favorite BBQ sauce or see more canning recipes online or in your canning books.


NATIONAL MASON JAR DAY

Mason Jar Day was officially created in 2017 by Misty Campbell-Olbert to give recognition to and celebrate the mason jar. She wanted to promote the alternative uses of mason jars other than just for canning foods. Of course, home gardeners find jars invaluable for canning the fruits and vegetables of their labor, but it is true you can repurpose these amazing jars to create snow globes, pencil jars, flower vases, banks and numerous other storage- and home-decor items. Many of you have probably seen mason jars used as drinking glasses. Some retail companies even feature their jellies and jams in pint jars, complete with a handle, to use at home when the jar is empty! There are even mason jar drink lids available in stores now. A special tradition at our house is serving beverages to cousins and visitors in a pint jar during their visit. In your kitchen, mason jars are handy for hand soaps or dishwashing liquids. You can purchase pumps in a variety of sizes, add a calico ribbon

in your color of choice, and have an attractive and useful accessory or gift. Don’t forget storage. I use my blue jars as canisters to store pasta, rice, dry beans, etc. They are both beautiful and functional! Also, a wide mouth jar and a reusable lid is perfect to store cupcake liners. Another idea is that mason jars are great for storing salt. Simply trace and cut your salt box lid with the metal spout the size of your ring. Then you can just fill the jar with salt and add your lid and ring. Also, mason jars are great for storing your harvested spices, too. A similar method can be used for storing matches in mason jars to keep them dry. Trace and cut your matchbox top with the strike zone the size of your ring. Fill the jar with matches, add the lid and ring, and you can then easily strike matches on top! There are many unique lids available now to complement your mason jar crafts. There are wooden lids that are perfect for dry foods and decor; leak-proof lids perfect for storage and on-the-go; and dissolvable labels that wash away with water and are great to identify preserved goods. As you can see, there are endless uses for mason jars. It’s a good time to be thinking about gift ideas and decorations for Christmas as well! See you next month!

Turkey dinners, pumpkin pie and cooler weather come to mind for most of us when we think of November, but what about National Falls Prevention month? One-third of all Americans 65 years old and older will experience a fall this year. Some will quickly brush off the dirt and go about their day, but others won’t be so lucky. The physical therapy profession has long been involved in fallprevention efforts, guiding our seniors to ambulate safely, maintain mobility longer, and be more independent.

Falls rank among the top burdens on our healthcare system—with billions spent for fall-related injuries each year. Falls land a member of our nation’s elderly population in the emergency department every 13 seconds, and every 20 minutes an older adult dies from fall-related trauma. Moderate to severe injuries incurred during a fall can lead to further health declines and loss of independence among our seniors.

As part of a medical team, PTs are trained to identify each patient’s risk factors, provide education and preventive strategies, and address impairments. The biggest risk factors for a fall include balance/strength impairments, medication interactions, safety issues in the home and community, and visual impairments. Falls are preventable with risk assessment and exercises that incorporate elements of balance, gait, and strength training. Proper exercise programs can reduce the incidence of falls by up to 40%. A thorough program to prevent falls among the elderly includes core strengthening, lower extremity resistance exercises, and balance training. With November being National Fall Prevention month, it is the perfect time to assess your risk for falls and work on fall prevention strategies so you can keep enjoying all that fall has to offer!
