abi Strickland Walker (of Walker Mt. Eats on Facebook) said she forgot how easy and delicious these potatoes are! She served them recently and her husband, Gary, said “We haven’t had these in a while and they are really good!” Gabi says they are full of flavor, soft and buttery. It’s a perfect side dish to fix for almost any meal, from hot dogs and hamburgers to steak.
4-5 medium-sized potatoes, washed and thinly sliced

1 stick (½ cup) butter, melted
•
1 envelope Lipton Onion Soup Mix
•
Salt and Pepper to Taste

DIRECTIONS Step 1 •
Preheat Oven to 400 degrees. Spray an 8 x 8 baking dish with cooking spray. (NOTE from Gabi: You can easily double this recipe and use a 9 x 13 baking dish)
Step 2 •
Arrange thinly sliced potatoes in the baking dish. You will want to keep the slices looking like a sliced, whole potato and then just slightly fan them out (see photo).
Step 3 •
Generously salt and pepper the potatoes

Melt the stick of butter and add the envelope of dry soup mix. Stir to completely mix together. Spoon the melted butter/onion soup mixture over all of the potatoes. Use a rubber spatula and scrape all of the mixture over the potatoes.
Step 5 •
Cover the baking dish tightly with aluminum foil and bake at 400 degrees for 35-40 minutes or until the potatoes are soft.
