EXFOLIATING MASKS When it comes to at-home skin treatment routines, nothing beats an exfoliating and nourishing mask to keep your skin fresh and glowing. Incorporate one into your skin care routine a few times a week. Choose one that contains natural fruit extracts like papaya, pumpkin, pineapple, or pomegranate for enzymatic exfoliation. Masks also effectively remove excess oil and dead skin and clean out pores. CHEMICAL PEELS Chemical peels are also effective ways to combat a variety of skin-aging signs, including fine lines and wrinkles, sun damage, acne scars, hyper-pigmentation, scars, melasma, uneven skin tone, and redness. The chemical solution applied during the treatment will cause the skin to exfoliate and eventually peel off, revealing new skin that looks brighter, smoother, has fewer wrinkles, smaller pores, and a healthy glow. There are three types of chemical peels: A light peel removes the outer layer of skin, improving fine lines and wrinkles, acne, and uneven skin tone. With a medium peel, skin cells are removed from the outer layer of skin and portions of the upper part of the middle layer of the skin, improving wrinkles, acne scars, and uneven skin tone. A deep peel treats deep wrinkles and scarring, and should be done by a dermatologist or doctor because of the depth, kind of solution, and strength used.

Light chemical peels don’t require much downtime, though some slight redness and flaking might occur. Medium and deep chemical peels, on the other hand, can require two to three weeks of recovery time. If your skin is not accustomed to acid peels, start with a light-strength peel, depending on the active ingredient and how sensitive your skin is. First spot test a small part of your face to see how your skin reacts. Start with 30 to 60 seconds, and slowly increase the time as your skin allows. Please note that sunscreen should be used daily after a chemical peel or the use of products containing AHAs or AHBs, regardless of weather and season.

hinese New Year is the most important festival for all ethnic Chinese. A reunion dinner is held on Chinese New Year’s eve, and fish is an indispensable dish at this dinner. People follow a shared tradition of leaving some parts of the fish uneaten. What are the cultural meanings behind this tradition? The pronunciation of f ish in Chinese is “yu,” which signifies abundance and prosperity. Eating fish on New Year’s eve shows appreciation for the blessings of the past year and aspirations for the next year’s fortunes. For thousands of years, fish have held unique connotations for Chinese people. They are commonly depicted in paintings and crafts

中國新年對華人來說是一年之中最重要的節日,闔家團圓 的大好日子。每到除夕夜,全家人齊聚一堂吃團圓飯時, 桌上必有一道跟魚有關的佳餚,而且大家都會有不把它吃 完的默契,意味著年年有「 餘 」,也藉此表達今年全家生 活豐裕的感謝,並蘊含著來年日子也能過得豐衣足食、不 虞匱乏的期望。

as a symbol of abundance. In Chinese paintings, a combination of fish and lotus flowers represents prosperity year after year, while two fish playing together signifies affluence. FISH AS A TOTEM In ancient times, people who lived near rivers feasted on fish. Catching a great number of fish represented an abundant harvest. Fish were thus associated with totem worship and harvest rituals. Seven thousand years ago, the ancient Banpo people painted fish patterns on colored pottery basins, thus highlighting fish as a totem of their ancestors. Ancient tales depicted fish as mysterious creatures. The Classics of Mountains and Seas (Shanghaijing) tells the story of Zhuanxu, one of the five mythological emperors of ancient China. Zhuanxu reincarnated as a fish with the head of a human. Amid the Great Flood, Gun, one of Zhuanxu’s descendents, failed to alleviate the flood waters and turned into a giant black fish as he jumped into the abyss. Gun’s son Yu continued the struggle to contain the flood. Various myths specify that Yu received help from HeJin, the spirit of the Yellow River. HeJin provided Yu with a map of the river and its surroundings, thus enabling Yu to successfully control the flood. Yu later became the sole, respected emperor and founded the first dynasty in China—the Xia. Fish have become an important totem and representation of the Zhuanxu family. The offspring of Zhuanxu also lived near the water and held annual rituals for fish, which were an essential offering in their ritual animal sacrifice. CARP LEAPING OVER THE DRAGON GATE It is said that in order to control the flood, the legendary Yu built the high and steep Dragon Gate in a cleft in the mountains where the Yellow River flowed through. The forceful water brought many carp down the waterfall, and they could not swim back. Following God’s will, Yu and his wife promised that if those carp could leap over the Dragon Gate, they would become mighty dragons. Henceforth, at the end of spring each year, schools of golden carp gathered under the gate in an attempt to leap over. Once a fish succeeded, it would transform into a dragon and soar into the sky. The tale about carp leaping over the Dragon Gate motivates students to study diligently for a 30│

life-changing moment, as the toughest challenges bring the greatest rewards. The Ao, a dragon-headed, fish-tailed creature, exemplifies the tale. In ancient times, patterns of Ao were carved on the jade staircase leading to the emperor’s palace. When the results of the Chinese imperial examinations were released, the student who ranked first would wait on the staircase. Therefore, the idiom “taking the place of the Ao” means taking first place in an examination. The mythology of carp also traveled to Japan. On Children’s Day, May 5 each year, people across the country fly “koinobori” (carp-shaped windsocks) to wish the children success and good fortune.

FISH IN EVERYDAY LIFE The carp is of great signif icance in Chinese culture. It was regarded as the king of fish in ancient times and was the only fish believed to be capable of transforming into a dragon. During the Tang Dynasty, the pronunciation of carp (“li”) was the same as an emperor’s last name. Thus, the story of carp leaping over the Dragon Gate was taken to reaffirm the status of the emperor as the son of Heaven. Carp became a symbol of power and social status in general. Government officials were given carp-shaped official seals, and there were laws that forbade people from eating carp. Carp-shaped envelopes were also popular in ancient China. Letters were sandwiched between two carp-shaped wooden boards that served as envelopes. In the Tang Dynasty, paper envelopes replaced the wooden ones, but they were still in the shape of carp.

It was believed that carp swam so fast that they could fly across rivers, so letters in carp-shaped envelopes could arrive in the hands of beloved family members faster. A famous Han Dynasty poem depicts a wife’s longing for her husband’s return:

繭紙取代,但仍會做成鯉魚的形狀,信封的兩面會畫上 魚鱗,遂稱作鯉魚函。著名古詩〈飲馬長城窟行〉:「 客 從遠方來,遺我雙鯉魚。呼兒烹鯉魚,中有尺素書。長 跪讀素書,書中竟何如。上言加餐食,下言長相憶。」文 人在這首樂府詩中,描述著人們藉鯉書遙寄思念之情。 魚離開水就不能生存,因此「魚水」象徵夫婦情深,

Over the centuries, fish evolved from ancient totems to tales of dragons and the philosophical views of literati. The culture of fish enriched traditional Chinese culture as can be seen in artefacts from everyday life. In particular, goldfish and carp were popular for symbolizing prosperity and affluence, and such patterns were often found on vessels for storing liquid, such as vases. Even in the bustling modern world, the cultural symbolism of fish still resonates with Chinese people, who appreciate the ancient wisdom of fish and the prosperity they represent. │33

The two Taiwanese-Americans struggled as school-age immigrants, quit their careers in finance and engineering to begin their channel, and are inspiring hundreds of thousands of Chinese-speakers every day with fun “challenge” videos that explore deep questions. In two years, they've amassed more than half a million subscribers and almost 40 million views. They share their philosophy of stepping outside one’s comfort zone by setting an example in each video: They've thrown a dart at a map and traveled to wherever it landed, including Alaska in the winter. They’ve worked as farmers, sanitation workers, and babysitters—one day in each job.

Some of their challenges tug at the heartstrings. They opened up on camera about sensitive topics during a conversation with their mothers. Pushing their personal boundaries in healthy ways is what they do, which is why their channel's name contains the word “do”—twice, once for each of them. They're The DoDo Men. “When you push the barriers of your comfort zone, you constantly try new things and challenge yourself,” Chen says. Their videos have encouraged many people to make positive changes in their lives and overcome the fear that so often stands in the way.

Now, an amazing upward spiral has begun: Lee and Chen's viewers have started to invite The DoDo Men to try out amazing and thought-provoking things that the viewers themselves are involved in. The YouTube creators made good on an invitation to try farming. Another invitation brought them to a center for the elderly to learn how to care for them. Lee and Chen's popup events in Taiwan and the United States have been very well-attended—a testament to how much their videos have touched people's lives. Their Facebook group has almost 10,000 highly engaged followers. Leaps of faith are built into the DNA of the channel itself. The two men left behind prestigious careers to start down an uncertain path.

慮,在做任何事前都會考量風險和現實面;Ian則樂天、 隨性,他說自己想法比較天馬行空。 兩人生長的家庭風格也有著鮮明的區別。Eric 在 美國出生,但 4 歲後回到臺灣臺北,直至 14 歲再次回 美。在都會區歷經求學階段的 Eric,感受過亞洲填鴨式 的教育,放學後直奔補習班的日常。他說家庭帶給他最 大的影響就是「 要努力」,他繼承這種傳統美德,始終 努力耕耘。誠如他後來花費 7 年時間,犧牲下班時光, 只為取得一張執照,如此意志力,並非人人具備。 來自臺灣屏東的 Ian,11 歲時隨家人移民至美國。 初中前,他在台灣度過的就學時光,並未感受到太多課 業壓力。他說父母給予他很大程度的自由,他如今回想 格外感謝,因為家人給予的空間,讓他從小培養出「 自 己想要,自己爭取 」的人生態度。 談 起辭職前的家庭 風 波,兩人也各自講述 其 不同 的境遇。「 為什麼要辭職做這個沒有前途的事情?」這是 Eric 家人最初對其辭職提出的質疑,但他亦理解長輩不 願孩子走上一條充滿未知的道路,「 我覺得他們是喜歡 我們在做的事情,但是現實層面讓他們無法支持我。」 相形之下,Ian 的家人雖也驚訝,但後來的對話僅持續 了 15 分鐘,「 我們的默契就是,他知道我做的決定,我 自己會負責。」 然而,熱血能燃燒多久?倘若情況未能好轉,何以 為繼?辭職之際,兩人經營的頻道尚未有起色,只是無 償投入,甚至自掏腰包創作。當初支撐他們的無非是信 念與熱情,Eric 表示,「 主要是我們做出的內容我們自

“During that period of time, I didn’t work at all. I lay at home. It was totally the opposite of the life I had lived before,” Lee said. “It made me think—I have so much time now, yet I give all of my time to my company. Is it worth it? How many years would I spend this way?” He realized that the life he had was not the one he wished for. During the same year, in June 2019, Chen realized a dream seven years in the making: He earned his actuarial credentials, something that fewer than 80,000 people in the world had achieved. He was proud of himself and was about to get a promotion, but he felt lost somehow: “What’s my next goal?” He loved traveling and hoped that someday he could travel around as a video content creator. He sat at his desk dreaming that the day would come. The two young men had been friends since college. A conversation one day led them to the question if they should seriously reevaluate their lives to make sure they wouldn’t have any regrets. They went back to their corporate jobs that day, but never forgot their talk. “I was always wondering what to do with my life, since mine was taken back from death,” Lee said.


He says his wish is to do something good for society, and that their channel is one of the best ways he can think of to do that. INTO THE UNKNOWN Fast-forward to December 2019 when they set up the framework of an empty and unknown YouTube channel. The two submitted their resignations in 2020 and haven't looked back. “We’ve done something that regular people just won’t do," Lee said. "So when we emphasize the concept of stepping out of your comfort zone, it’s something more powerful and persuasive.” In one of their videos, they discuss how they started their new journey after leaving Silicon Valley, and that’s how a lot of viewers first connected with them. At first, with no income coming in, they spent their savings to create content. When their videos began going viral, lots of companies approached them with offers of monetary sponsorship in exchange for promoting their products. But the duo declined 99 percent of the offers because they didn't want to capitalize on their viewer's trust if they didn't truly believe in the products. The pressure was intense, and the pandemic raged on all the while. Chen experienced a panic attack for the first time in his life. But the pair stuck to their plan and came out the other side with their integrity (and sanity) intact. Chen recalled, “What we made was all out of love.” Their faith and passion were all they had at the time. They believed that if they kept creating good content, people would discover them someday. And now, they not only support themselves, but they employ staff members on their team, too. “It’s okay to fail,” Lee said. “If you don't try, how do you know if it will work or not?"

A

centuries-old violin crafted by Antonio Stradivari and a teenager from Taiwan met in New York City, and a dream was born. Next came eight years of uncertainty, spanning three continents. Held in the balance were living pieces of a profound historical legacy: the world's finest antique violins, whose magic could be stripped away by one wrong move from a restorer. In 2004, Ronald Ji was a teenage violin student under the tutelage of Chao-Hsiu Lee, former president of Tainan National University of the Arts. During a visit to the United States with his teacher, Ji stepped into the studio of master luthier Horacio Pineiro in Queens and saw pieces of exquisite violins in Pineiro’s hands. “The instrument on his table was made by Stradivari,” Ji recalled. Antonio Stradivari is regarded as the greatest Italian violin-maker of all time and was active in the late 17th and early 18th centuries in Cremona, Italy. The sight of such a valuable violin, in pieces, being worked on, made a deep impression on Ji's young mind. At that moment, a wish formed in his heart: One day, he would do the same work. At a dinner attended by his teacher and the luthier, Ji blurted out to Pineiro, “I want to learn from you!” Ji’s violin teacher nudged his leg under the table, signalling for him to be quiet. Ji didn’t realize that the man he was addressing was a master, the top restorer in the whole industry, worldwide. Pineiro began his career under the tutelage of the well-known Argentinian luthier Franco Ponzo, and then with French violin-maker Henry Viret. After operating his own workshop in Buenos Aires for 14 years, he immigrated to New York where he was the chief restorer for the world-renowned Jacques Francais. Pineiro didn’t directly turn down young Ji’s inquiry about an apprenticeship. He just gave Ji a smile and told him that if he was really interested in becoming a luthier, he should start studying woodworking.

CARVING OUT HIS BEGINNING Ji knew that restoring violins was his dream occupation, so he called his father after speaking with Pineiro. He told his father that he would like to learn woodworking when he returned to Taiwan. Everything came together like destiny: Ji’s father found a wood sculptor near their home almost immediately. “When I got back to Taiwan, after the flight landed, we went straight to visit the sculpture teacher,” Ji said. Master wood-sculptor Yuan-Chang Zhang had seen a lot of potential apprentices, but none of them could endure the rigors of his training for more than a couple of days. Ji said that when you are making a violin, you need a few dozen knives, but woodwork is far more complicated and requires up to 400 knives. At the beginning, Zhang told Ji, “After you’re able to sharpen all of these knives, I’ll let you touch the wood.” For the first half year, Ji didn’t get a chance to carve wood. He poured all of his time into learning knife-sharpening skills. He dealt with loneliness, the

At the age of 17, when Ji’s peers were spending their spare time hanging out, Ji dedicated most of his free time to wood sculpting. He did this for the next four years. He sent samples of his woodwork to Pineiro every several months. He naively thought that after he nailed the fundamentals of woodworking, he could go to New York to learn from Pineiro.

A DIFFICULT JOURNEY After Ji graduated from high school and finished Taiwan's mandatory military service, he f lew to New York to visit Pineiro again. But he received an answer similar to the one four years earlier. Pineiro told Ji that he didn’t have time to teach a beginner, and the skills Ji had obtained from woodworking were different from the skills needed for making violins. Ji remained unfazed, mulled over the master's words, and decided to enroll in a school for violin-making in Utah.

THE FINAL ATTEMPT On their next meeting, Pineiro told Ji that he was improving, but not very much. After hearing this, Ji decided to drop out of school. He started to doubt himself and pondered giving up on his dream.

離開美國後,他曾遠赴意大利製琴發源地克雷莫納 (Cremona)去參訪 Pineiro 大師曾提及的製琴坊。轉 了一圈後,他發現所有的提琴修復工作中,還是在大師 工作室裡見識過的作品更讓他著迷。結束意大利之行, 彼時雖有所迷惘,卻也更加底定心中的目標未曾改變。 「 我回臺灣沉靜了快一年,最後我記得我重新再做 一把琴,我對自己說: 『 最後一趟了。』」2012 年,他帶 著作品,收拾行李,飛往紐約。那一次,Pineiro 先生見 到他的作品後,一如繼往地給予指點。他回想當天和大 師小酌半刻的情景,當時他語帶悵然地對大師說: 「如 果您真的不教我,這應該會是我最後一次來找你了。」 Pineiro 先生 聽後笑了笑,仍未答應他的請求。在數日 的造訪後,Pineiro 先生幾經思考,最終改變了心意。這 位年輕人數年不畏艱苦的意志,終於打動了大師難以撼 動的心門。耗費 8 逾年,他終於如願進入夢寐以求的工 作室,成為 Pineiro 先生第一且唯一的學徒。 傳承大師意志 在Pineiro大師手下學習,是另一段試 煉。Pineiro先生 的脾性一般人無法參透,若觸犯了他的禁忌,被轟出門 都不足為奇。他笑著回憶,「 我前三個月被轟出去至少 20次 」,大多是因為一些細瑣的生活規矩,例如:刷完

There Ji found his woodworking skills far superior to the other students. Encouraged, he started making violins in his spare time. Ji chose to study in America so he could visit Pineiro every two or three months. Pineiro would spend several hours instructing Ji, but always refused to take Ji as his apprentice. Each time Pineiro turned Ji down, Ji would feel too depressed to stay in New York for one more day. “I had not been to the Brooklyn Bridge, Times Square, or the Statue of Liberty,” he said. Ji was totally focused on achieving his goal during those 18 months. Ji encouraged himself by saying: “Alright, never mind! I’ll keep going.” When he got back to school after visiting New York, he poured himself into the work again.


When restoring or crafting string instruments, Ji works diligently in the studio for 12 to 14 hours per day.

That's when Ji traveled to Cremona, Italy, the birthplace of violin making, and saw master luthiers at work. But he felt that the restoration work he had seen in New York City was more fascinating, so his goal remained unchanged. “I stayed in Taiwan for almost a year to calm my mind. I made a new violin after that and told myself, ‘This is the last try.’” In 2012, Ji took this violin to New York, but Pineiro treated him the same as always. Ji felt discouraged and spoke from his heart, telling Pineiro that he would stop coming to him if Pineiro did not want to take him as an apprentice. Pineiro smiled, but didn’t give Ji the reply he had hoped for. Ji stayed in New York for a few more days, spending time with Pineiro. At the end of the trip, the master craftsman, who had turned Ji down for eight years, told Ji something he thought he might never hear: Ji could come and learn from him after all. That's when Ji became the first and only apprentice of Horacio Pineiro.

THE MASTER’S WILL Ji stepped into a whole new set of hardships as Pineiro’s apprentice. Pineiro insisted on strict rules during daily life in the studio. If someone broke a rule, he would kick him out. Ji laughed as he recalled this period of time: “For the first three months, I was shouted at to get out at least 20 times.” This happened because Ji broke protocols like putting dishes away in the kitchen without following the order of size and color. At first, Ji tried hard to understand the rules. In the end, he accepted them wholeheartedly. Ji cultivated discipline from these daily tasks, and in turn became more meticulous in his work. “Making, fixing, and restoring” are the three main categories in luthier craftsmanship. Restoring is the most difficult. “He built my foundation from scratch. It took about two years, and then I started some basic fixing tasks,” Ji said. When Ji’s work did not reach Pineiro’s standards, Ji had to start over again from scratch. The process for fixing and restoring violins is extremely rigorous. Ji draws an analogy between restoration and surgery. “We’ve got to prepare all of the scalpels we will need and arrange them all ahead of time, make sure the table is clean, and then the instrument comes onto it.” 46│

Pineiro’s studio restored many prestigious pieces from the 16th through 20th centuries. This was an incomparable experience for Ji that other luthiers might never have the chance to experience. This opportunity allowed Ji to improve quickly. In 2017, Ji assisted Pineiro in a restoration project for a Guarneri del Gesù violin made in 1732 by the most famous Italian luthier. The piece was in the permanent collection of the Isaac Fernández Blanco Museum of Spanish-American Art in Argentina. The details of this restoration project were recorded as meticulously as academic reports, and were published in The Strad, the most prestigious magazine for string instruments. Although just 35 years old, Ji’s ability is widely recognized in the industry. Ji was recently hired by Reed Yeboah Fine Violins to restore antique violins. In his studio, he has instruments to restore that were made by the well-known French luthier

Jean-Baptiste Vuillaume, the Italian Amati family, Stradivari, and the Guarneri family. Ji feels that he has fulfilled the dream he had at 17. He's deeply grateful for the support he’s received, especially from his teachers and family, during his challenging journey. These priceless string instruments are akin to painted masterpieces, with the most valuable ones ranging from $30 million to $50 million. Ji said that Pineiro constantly reminded him that if you break something, misplace something, or position something incorrectly, it not only causes the price to drop, it ruins a historical treasure. A restorer must have a sense of responsibility, and Ji sees this responsibility as an honor: “It’s a wonderful thing to touch these precious pieces of human history, being able to restore them and pass them down to the next generation.” │47

recious exotic items from China such as fine porcelain, silks, and lacquer panels, started to trickle into Europe starting in the early 16th century, and these decorative items quickly gained popularity with Europe’s aristocracy. By the late 18th century, almost all of Europe’s great houses had at least one room with Chinese wallpaper, normally women’s bedrooms, and so did many of Europe’s more modest homes. English and French manufacturers sought to capitalize on this demand for Chinese wallpaper and started producing imitations. The word Chinoiserie

derives from “chinois,” French for Chinese, and is used today for the style of decorative art that was inspired by these Chinese designs and the exotic notions Europeans held about China. Despite the name Chinoiserie, European artists did not differentiate between different designs and often mixed motifs from China, Japan, and other East Asian cultures to create whimsical motifs and vignettes in damasks, toiles, and other materials. CONTEMPORARY CHINOISERIE Today, a select few artists in the Western world are continuing the tradition of this decorative art form. Peter Gorman of Gorman Studios in Vancouver is one such artist who creates beautiful hand-painted Chinoiserie wallcoverings that bring exceptional elements to contemporary homes. “It is a theme and a subject within the decorative arts and people’s homes that is cross-cultural and cross-century, which is what makes Chinoiserie such an example of continuity and constant rebirth, like a phoenix. A phoenix comes into its full blossom and then disappears and then comes back again,” he said.

The opulence and delicacy of Chinoiserie, with its fine detail and fine line work, historically featured gold, gold powders, and semi-precious metals. Today, it still springs from a mainly artisan-based industry. A lot of the interest comes from the novelty of the challenge and from artists wanting to learn Chinoiserie because it is the gold standard, Gorman said. ARTISAN OPULENCE Hand-painted Chinoiserie wallcovering are laborintensive to create, from design to execution. For example, after obtaining client approval for a particular design, a series of four wall panels, each 3 feet by 3 feet, could require two artists painting full time for up to three and a half weeks. Training an artist in Chinoiserie is also a time-intensive process, which can take anywhere from two to four years in Gorman Studios. “Artists come in with their own innate talent; the studio enhances those natural talents they bring in,” Gorman said. Historically, Chinoiserie wallcoverings were favored in women’s bedrooms, but it has become popular to incorporate the style in dining rooms, sitting rooms, living rooms, and even kitchens. Luxurious powder rooms bedecked with Chinoiserie are also trending. HAND-PAINTED LUXURY Gracie Studio, which is headquartered in the United States, has been producing hand-painted wallpapers since 1898. The studio uses mainly water-based paints, which is the historical medium, with various finishes such as hand-painted metal leaf, silk, and other textured backgrounds. Most of Gracie Studio’s orders are produced to the architectural specifications of a room, and they first produce a design sketch for approval. For custom designs, Gracie Studio will sometimes produce a hand-painted design sample for a client. Upon approval, production begins with sketching the entire panel’s design, before the hand-painting begins. Gracie Studio wallpaper has been in the White House for three presidencies and is a go-to brand for sought-after interior designers and their high-end clients. (Continued on p. 55)

Many Chinese people believe that a New Year’s celebration isn’t complete without chicken dishes, partly because the word for chicken and the word for luck sound very similar in many Chinese dialects. In the Hokkien language, there’s a saying that eating chicken will bring blessings and prosperity to the family. Having a lucky name isn’t all there is to it, though. Chicken is nutritious. Chicken soup replenishes vitality and when boiled with certain ingredients, it can provide additional therapeutic effects. Here are recipes for three types of chicken soup, to warm you and your family during cold winter days. Please note: The ingredients mentioned in the dishes must be used proportionately. Some ingredients might have different effects on people with various physical conditions; please consult a medical or TCM professional.

People considered deficient in Qi often find that their hands and feet are cold; they catch the f lu easily and also experience fatigue. This recipe provides a remedy for these unpleasant conditions by restoring Qi. People who avoid meat can replace the chicken with lion’s mane mushrooms, king trumpet mushrooms, tofu, or other ingredients, or use the vegetarian soup recipe described below. INGREDIENTS ・ 22 grams Astragalus

membranaceus ・ 22 grams black or red jujubes ・ 22 grams goji berries ・ 11 grams Angelica sinensis ・ 11 grams Chuanxiong rhizoma ・ 4 grams Ramulus cinnamomi ・ Half a chicken (about 1 1/3 pounds) ‘LET’S TALK WITH DR. HU,’ TRANSLATED AND EDITED FOR CLARITY WITH PERMISSION OF NTD TELEVISION.

DIRECTIONS Chop the chicken into pieces, rinse well, add the ginger strips, and blanch the chicken in boiling water until impurities surface. Discard the cooking water. Remove the chicken and rinse it off. Rinse all the other ingredients, put them in a pot with the chicken, add 5 cups of cold water, and bring to a boil. When the water starts to boil, turn down the heat, and simmer for 1 hour. Before serving, season with a little rice wine. CHICKEN SOUP WITH THE FOUR NOBLE MEN The four main ingredients, or the Four Noble Men—ginseng, Atractylodes macrocephala, Poria cocos, and licorice—aid symptoms involving Qi deficiency of the spleen and stomach, paleness, as well as weakness in the voice, limbs, and pulse. The Four Noble Men are characteristically gentle and warm, hence their name, and are effective for replenishing Qi, nourishing the stomach and spleen, and improving one’s immunity against common diseases like the flu. INGREDIENTS ・11 grams ginseng ・11 grams Atractylodes macrocephala ・11 grams Poria cocos ・6 grams licorice ・8 to 12 red jujubes ・Half a chicken (about 1 1/3 pounds)

DIRECTIONS Chop the chicken into pieces, rinse well, add ginger slices, and blanch in boiling water until impurities surface. Put the washed herbs and chicken into a pot, and add about 5 cups of water, making sure the herbal ingredients are completely immersed. Boil on high heat until the soup reaches a rolling boil. Simmer on low heat for another 30 to 45 minutes.

BLACK-BONE CHICKEN SOUP WITH POLYGONUM MULTIFLORUM Black-bone chicken is a breed of chicken, also known as Silkie or Chinese silk chicken, and can usually be purchased at Chinese markets. The breed has unusual characterisitcs, including black skin and bones. This soup nourishes the kidneys and hair. According to traditional oriental medicine books, black-bone chicken can treat chronic fatigue, as well as related symptoms, such as night sweats, asthma, palpitations, indigestion, and drowsiness. Polygonum multiflorum tonifies, or benefits, the kidneys and provides one’s hair with extra shine. Blackbone chicken soup increases vitality, nourishes the blood, and enriches one’s yin. It is suitable for all members of the family. Do not use metal containers or metal spoons to cook Polygonum multif lorum. Use wooden spoons, casserole pots, glass pots, or other similar containers. INGREDIENTS ・1 1/3 pounds black-bone chicken ・11 grams Polygonum multiflorum ・3 to 5 red jujubes ・Rice wine and salt to taste

DIRECTIONS Chop the chicken into pieces and rinse well. Blanch the pieces in boiling water until impurities surface. Discard the cooking water. Place the chicken pieces and all the other ingredients in another pot, add water and rice wine, and boil on high heat until the soup reaches a rolling boil. Simmer on low heat for 20 to 30 minutes. 何首烏烏骨雞湯:補腎黑髮 古書記載,烏骨雞可治虛損積勞。所謂虛損積勞,是指長期的身體虛損,或大病過後出現盜汗、氣喘、心悸、胃弱、嗜 睡的情況,有這些症狀的人,多吃烏骨雞有益。 何首烏則可以補腎,讓頭髮變黑。何首烏烏骨雞湯可以養元氣、滋陰補血,全家吃都適合。需注意的是,不要使 用金屬容器、金屬鏟勺熬煮何首烏,建議使用木勺,砂鍋、玻璃鍋等容器熬煮。 食材:

A MILDER TONIC RECIPE: CONCOCTION OF THE FOUR GODS It’s important to avoid excessive replenishing. The warming characteristics of these tonic recipes can raise your internal heat too much, causing acne, canker sores, or hemorrhoids, among other symptoms. If you've experienced these symptoms before, choose the Concoction of the Four Gods, a milder tonic that is also effective for eliminating edema. Most people like to add some pork belly or pork small intestines to the concoction for better flavor and texture. Below is a vegetarian version of the Four Gods Concoction. Vegetarians may also want to add cashew nuts. INGREDIENTS ・A few ginger strips ・A few mushrooms ・1 tablespoon cold-pressed sesame oil ・25 grams poria ・25 grams cashew nuts ・50 grams lotus seeds ・50 grams Chinese yam ・75 grams prickly water lily or coix seed

DIRECTIONS Wash the lotus seeds, Chinese yam, poria, and prickly water lily (or coix seed), and soak them in water for 20 minutes. Put all of the ingredients in a pot, add about 1 1/3 cups water, bring to a boil over high heat, and simmer on low heat for 20 minutes. Add salt and spices as desired. When the concoction is done, transfer it to an electric pot and let it stew on low for 1 hour, or until the ingredients are all wellcooked with a pleasant, even taste. You can season it with angelica wine (Dang Gui Jiu) or goji wine for an elevated taste. For pregnant women or weakened individuals, reduce or eliminate the coix seed, or check with a TCM professional.
