The charm of Port Chalmers A drive out to Aramoana or the North Coast of Dunedin is never complete without a stop off at Port Chalmers. Whether it’s for a coffee or fish and chips, or a simple stroll around the curious secondhand shops or the slick art and design stores, there is something about Port Chalmers that oozes charm. It’s like no other place in New Zealand – it has a character all its own and is full of artisans and musicians and people who prefer a little authenticity in their lives. It’s not a town to be whizzed through on your way to your next beach adventure – it’s a settlement to be breathed in – a place to stop and just be. www.dunedinlight.com

Living the dream In 2009, Colleen Pugh quit her secure design job, packed a single bag, and left her home in Bristol, England, to go travelling. Sometime later, Colleen ended up in New Zealand where she has been ever since. A graphic designer by trade and an ideas person by nature, Colleen Pugh quit her secure design job in 2009, packed a single bag (yes, just the one), and left her home in Bristol, England, to go travelling. Sometime later, Colleen ended up in New Zealand where she has been ever since. After graduating with a Masters Degree from Edinburgh College of Art (ECA) in 2003, she worked there as a lecturer. Under the guidance of Zoe Patterson, the head of Visual Communication, she taught the principles of creative thinking, research-based idea generation and clear communication, which

the course is known for. In 2007, Colleen left ECA to gain experience in the design industry and worked freelance, as well as in agencies. Fast forward a few years to Colleen arriving in New Zealand with her single bag, and deciding to settle in Dunedin. Her blog, Dear Colleen, was started with no real plans of it becoming a business but more as a creative outlet for ideas and designs. Colleen’s hand lettering, illustration and quirky word play posters caught the attention of bloggers alike, and her work started popping up everywhere. To date, Dear Colleen has been featured in Anthropologie, House and Garden AU, House

and Garden NZ, Frankie, Urbis, and also had a line of ‘Loser’ rosettes designed and sold in World, one of New Zealand’s leading fashion houses. Dear Colleen is idea-centric and not limited to any one kind of product or outlet. Colleen is equally at home creating one of a kind prints and art pieces, as she is designing off-beat home-ware, such as tea towels, cushions and even iPhone cases. Her brand is easily recognized for its imperfect yet designer feel but mostly for its clever word play. Nothing makes Colleen happier than a clever concept. “I have the sort of brain that never switches off

\\ Dear Colleen

so I carry notebooks everywhere and can often be found in cafés scribbling on napkins”. For the last year, Colleen has had a gorgeous little retro studio in town, filled with pops of bright colours and vintage furniture, and space galore for her prints and sketches. You won’t find any unnecessary clutter in Colleen’s work space. Almost every item has been salvaged from a garage sale or the Salvation Army and refreshed, or is a sentimental gift from a friend or her partner, Scott. Colleen and Scott, who is also a designer, have just moved into their new house, which has space enough for them to have a large shared office and a room each for their own personal work Colleen for her drawing and packaging, and Scott for his graphics and toy making - so Colleen is letting the studio go in favour of working from home. With her blog, shop, and social media streams gaining more fans by the day, Colleen’s main goals for 2013 are to ‘try to mostly create cool stuff’ to keep everyone interested and entertained, to sell more wholesale stock in shops, and to design and paint a wall mural somewhere… Colleen would like to be let loose on somebody’s café or shop wall, please and thank you. You can find Colleen’s work on her website at www.dearcolleen.co, and her partner Scott’s work at www.ajollygoodshow.com.

\\ Kimberley Cheyne Photography

Precious moments Kimberley Cheyne was given her first camera when she was 10 years old - a colourful plastic film camera with a big purple spider on the front. Since then, Kimberley’s hobby has turned into a full-time, award-winning career that she shares with her husband, Liam. Kimberley and Liam, from Kimberley Cheyne Photography, specialise in romantic, fresh, elegant and fun photographs. They run a busy and contemporary wedding and portrait photography business in Dunedin, creating beautiful images that burst with emotion and love! Kimberley is a qualified professional wedding photographer with the NZ Institute of Professional Photography (NZIPP), and has won awards for her work at both the NZIPP Iris Awards and the Kodak Gold Awards. Kimberley has also completed a Diploma in Professional Photography. She has passed her love of photography on to her husband, Liam, and they set up their business together in 2010. Kimberley is the primary photographer and face of Kimberley Cheyne Photography, while Liam photographs a second-perspective at weddings, and does a great deal of behind-the-scenes work for the business. A key aspect of their photography is inviting people to feel beautiful and relaxed in front of the camera. They aim to show people how stunning they really are, and love to see families, children and couples having fun in their shoots! They enjoy the challenge of

capturing stories, relationships, emotion and one-off moments in fresh ways, each time they photograph. This means shooting both with a documentary approach for natural, casual shots, and giving helpful direction for dramatic and compelling images. Photographing weddings and all types of portraiture (including families, children, maternity, newborns, graduations and engagements), has taken Kimberley Cheyne Photography all around New Zealand and to Samoa. It also sees them meeting a wide range of people - including a couple who recently eloped from Canada, and seized a very rare opportunity to get married at Dunedin’s Cargill’s Castle. Kimberley and Liam find satisfaction in getting to know their clients personally, creating stunning images for them, and presenting those photographs in impeccable-quality albums and other products. They adore their job, and feel incredibly blessed to share in some of the most important occasions in peoples’ lives. Check out Kimberley and Liam’s stunning blog and portfolio, and get in touch with them, so that they can help you to capture your story.

\\ Robyn Buis Interior Design In 2011, Robyn Buis established her fabric store on the corner of Stafford Street, following a buying trip to New York. Originally going to source furnishing fabrics, Robyn dreamed up a concept for a store that would fill a gap in the Dunedin textile market, and enable customers to purchase exclusive, imported fabrics at affordable prices. The fabric store now stocks an exclusive range of linens, cottons, silks, velvet, cashmere and lamb wool available from the roll, as well as a range of European Wallpapers in glorious textures, patterns and colours. Robyn Buis is a trained Interior Designer with many years of experience, offering a complete interior design service for your commercial or residential space creating a unique and fresh design for each client. Robyn completed an interior design diploma in Christchurch in the mid-1980s. Upon returning to Dunedin, she worked for Kitchen Studio, designing kitchens. While raising her four sons, Robyn did some freelance work with Resene and then was a designer at McKenzie and Willis. After branching out on her own, Robyn opened up her Interior Design studio and later, the fabric shop, both on Stafford Street. Robyn’s services include colour consulting for interior and exterior surfaces, an upholstery service and expert advice on furnishings, art work and lighting as well as the supply of fabrics, furniture, European wallpapers, curtains, cushions, lamps and lampshades. Robyn’s intuitive, practical and friendly approach to creating colour and interior design solutions ensures many delighted clients. With her attention to detail, Robyn treats your home or space as an integrated whole, matching her design ideas to your personality and the way you live and work. Whether it is an entire house or a single chair, Robyn will look after the project as if it were her own, and you will be stunned with the results. One of Robyn’s main passions is lighting; lampshades in particular. After sourcing materials for lampshades and developing them into a kit form, Robyn has used her exquisite wallpapers and fabrics to create works of art. Robyn has also joined forces with Dunedin photographer and landscape architect Stefan Mutch. Using Stefan’s photographs of birdlife, Robyn creates beautiful bespoke lampshades featuring the gorgeous images. Robyn also offers lampshade creation classes at her Interior Design studio several times a month, 2-4pm on Saturdays or arranged evenings, and they always prove very popular. People gather a group of friends or join with others to enjoy an afternoon of creation, thrilled with their result as they walk away with a stunning lampshade they have made themselves. The classes cost $100 per person, and include the frame kit (your choice of fabric or wallpaper from the shop) and lesson. Six people per class.

Confit Hoisin Pork Belly

with Seared Vanilla Scallops by Stuart St Mac’s Brew Bar

In the heart of Dunedin’s Octagon lies the Stuart St Mac’s Brew Bar – a celebration of great craft beer, great food and great kiwi hospitality. After undergoing extensive site renovations, Stuart St Mac’s Brew Bar opened in September 2012, setting the benchmark for great hospitality in Dunedin’s hub of restaurants, bars and nightlife. Stuart St’s renowned menus are complemented by ten perfectly chilled Mac’s beers and ciders on tap. With its quintessentially kiwi interior and a large sunny outdoor area, Stuart St Mac’s Brew Bar is the perfect place to meet friends for a few drinks after work, have lunch or dinner, or kick on through the night with local acoustic acts and DJ’s Wednesday – Sunday.

Ingredients 500g pork belly 6 fresh scallops 2 tsp fresh grated ginger 1 tsp chinese 5 spice 5 Star Anise 3 tablespoon hoisin sauce 1 vanilla pod Canola oil Salt and pepper to season

Preheat oven to 160°C. Rub pork belly with 5 spice, ginger, and a pinch of salt and pepper in a small baking dish or pot. Place pork belly and star anise in enough canola oil to submerge. Place 1 sheet of baking paper over the top, then cover again with tin foil. Place in pre-heated oven and cook for 3 hours checking once or twice, until skin is soft. Once cooked, drain oil and remove star anise. With a hard flat object, evenly press the pork belly to flatten the top and bottom. Cover and leave to cool in a fridge for 5 hours. Preheat oven to 180°C. Trim pork belly into small squares as pictured, or a larger rectangle if serving as a main course. Rub pork belly with Hoisin sauce. Place on a baking tray and cook until golden brown. Check regularly as Hoisin burns easily. Once cooked, rest, and prepare scallops. Mix scallops in a tbsp of oil and scrape vanilla seeds from pod into bowl. Combine. On a high heat, pan fry scallops until golden on both sides. Plate dish to your liking or as photographed. www.edinburghrealty.co.nz 9

\\ Cabaret on Ruby

The most historic party this Summer Tickets are sold out, the dancefloor has been cleared and prepared, the boats are ready to go... It’s true. The legendary Cabaret is returning to Ruby Island on Sunday February 3rd, after 80 years. Lake Wanaka SouNZ Inc. which runs the successful Rippon Festivals and Sounz Forza Workshops is honoured to have the opportunity to recreate the 1920s parties which have now reached folklore status within the Otago region. Between 1928 and 1932, the infamous Ruby Island cabaret ran through the summertime, on Saturday nights. Numerous legends swirl around the event, so we thought it was about time to create a whole new bunch of memories in the 21st century. Performing traditional and funked-up ragtime, dixieland and jazz will be the 8-piece Roseneath Centennial Ragtime Band (Wellington) featuring the astounding vocals of Bella Kalolo (also of Wellington). The 2013 Cabaret will take place on the original dance floor at the top of the Island, where two hundred people will get to experience the magic of a bygone era in the most unbelievable setting. 6 Exclusive

The amazing RCRB band and Bella will entertain the first guests at a public event on the Island since 1932. Lakeland Adventures will be ferrying Islanders over from the main lakefront jetty 5.00pm at 15 minute intervals. Boats will leave the Island and return to the shore from 10pm - 11.10pm. The Matakitaki Diner will provide rustic food from the past with a decidedly 21st century twist! Small and not-so-small options with freshly baked breads and salads provided along with sweet treats. Beer and wine are available along with water and non-alcoholic drinks. The organisers’ priority is the protection and preservation of Ruby Island. Recycling bins provided by Wastebusters will be clearly marked around the area. There is a No Smoking policy in place for the duration of the Cabaret on Ruby event. See www.cabaretonruby.co.nz for more information.

600g ‘00’ Flour 6 free range eggs 1½ tsp salt

Ingredients: Filling 5 medium beets 3 cloves of garlic (peeled and crushed to a puree) 50gms goat’s cheese 100gm Reggiano, finely grated 5gm salt, 2gm cracked black pepper 8gm sugar 20 large, fresh basil leaves, chopped Ingredients: Nut Brown Sage Butter 1 cup of fresh picked sage leaves 250g salted butter 1 tbsp poppy seeds

First make your fresh pasta dough. On a bench make a well with the flour. In a bowl whisk the eggs with the salt and the olive oil and then add to the flour well. Use a fork to work the eggs into the flour until it forms a dough. Knead the dough for 15-20 mins. Cover with cling film and refrigerate for 1hr minimum or overnight if you want to make it the next day. Then make the filling. Roast the beetroot in foil at 180°C for 45mins. Allow to cool then peel. Add the cooled beets to a blender together with all of the other ingredients and blend until very smooth, 30secs - 1min. Cook the butter and sage in a sauce pan stirring all the time over a low to medium heat until the butter is nut brown in colour and smells nutty and the sage is crispy. Set aside until needed. Using a pasta machine, roll the pasta dough to the thinnest setting so that you have a long, thin strip of pasta. Put the beetroot mix into a piping bag. Pipe the beetroot mix all the way down the length of the pasta strip. Brush one length of the pasta with a little water so it will stick together and then roll it over onto itself so that it resembles a ‘sausage roll’ shape. Use a small piece of dowling to make indentations along the filled strip to divide it into small pieces. Run a knife to cut along the divides and make a little agnolotti shape. Cook for 3mins in boiling salted water. While the pasta is cooking warm the sage butter through and finish with the poppy seeds just before you remove the pan from the heat. Place the agnolotti on a serving dish and spoon over the sage butter. Drizzle a small amount of vincotta over the top and a light shaving of parmesan cheese and serve immediately. www.edinburghrealty.co.nz 7

Welcome Welcome to the February issue of Exclusive. 2013 is away to a very great start in Wanaka and surrounding areas. More people have been enjoying the wonderful amenities the area has to offer. All those travelling through have had the same message; “Wanaka is one of the most beautiful place in the world”. In this month’s issue the Department of Conservation provide information about some of the spectacular walking tracks around Wanaka, see what Cabaret on Ruby has in store for lucky party-goers, and Francesca’s Italian Kitchen serve up a delicious dish for us. Enquiries have lead to sales and an enlarged database of buyers wanting to invest in the area. Edinburgh Realty offices were open right throughout the holiday period, with a lot of genuine enquiry from people wanting information and discussing their requirements. The market is strong, so if you are thinking of selling, purchasing or renting, come and see us. Kind regards, David McKenzie AREINZ Branch Manager, Wanaka
