Chef profile: Sergio A. Verduzco Chef Sergio A. Verduzco began his culinary career in 1979 as Commis des Cuisine at Paul Anka’s Jubilation in Las Vegas, NV. He graduated from the prestigious Culinary Institute of America in 1983 and returned to Las Vegas to attend UNLV receiving a Bachelor’s Degree in Hotel and Restaurant Administration.

Chef Sergio complemented his experience working at several Las Vegas resorts. He was instrumental in the openings of The Rio and the Excalibur hotels. After graduating from UNLV, Chef Sergio left the country to open The Four Seasons Hotel in Mexico City in the capacity of Assistant Executive Chef. He followed with the opening of the “Boutique” Bel Air Resort and Spa in Costa Careyes, Mexico as Executive Chef in charge of all food and beverage operations. In 1995, Chef Sergio arrived in Telluride, Colorado as the Chef des Cuisine for The Peaks Resort and SPA. A long time love of Japanese cuisine and sushi motivated Chef Sergio to enroll at the California Sushi Academy. He opened his first Sushi bar, “Euphoria,” in 1999, receiving accolades for his innovative fusion of Japanese and Latino cuisines. In 2002, Chef Sergio opened East by Southwest in Durango, raising the bar and rising to the top of the restaurant scene. Not one to sit still, Chef Sergio continues to travel throughout Southeast Asia and Japan discovering new flavors and techniques and applying them to the repertoire at East by Southwest and the Golden Triangle.

Our Durango brewpub has more to offer than just cold, world-class craft beer and juicy burgers. Executive chef, Sean Clark, has crafted a menu as eclectic as any gastro pub in a big city. Known to be a town meeting place, it’s a bustling, fun environment. Just watch out for youngsters doodling on the concrete and the occasional mountain bike racer or horseman seen trotting through for a cold one.

House made quinoa patty, mushrooms, spinach, feta cheese, ale braised onions, tzatziki sauce.

Cajun Boil

(For 1 or 2 people: $25–$50)

Served nightly starting at 4:30 p.m. One-half pound of crab, ¼ pound of shrimp, ¼ pound of sausage, three new potatoes and two cobs of corn per person. All boiled in our hot Cajun spices. Oh yeah, it’s hot! Crawfish can be added.

Portobello mushrooms, fresh spinach, tomatoes, artichoke hearts and feta cheese on a semolina-herb crust.

Orange Pablano BBQ Pork Chop

Two Sunnyside Farms pork loin medallions, orange poblano BBQ sauce, jalapeño-cheddar mashers, seasonal vegetables.

Fish Tacos

Cajun fried cape capensis, jack cheese, cuban aioli, napa cabbage, green chile rice, southwest black beans.

Bleu cheese crusted 8 oz. flatiron steak, red eine shallot sauce, jalapeño-cheddar mashers, seasonal vegetables.

Kushiyaki Short Ribs

3 grilled, skewered short ribs marinated with miso, garlic, sesame oil, and spicy kochijun. Served with salad.

Noodles Soups Udon or Soba Noodles

Choice of chicken teriyaki, shrimp and assorted vegetable tempura, tempura Alaskan cod or kushiyaki short ribs on the side.

Lunch Sushitarian Lunch

Salmon Scallop Timbale Chopped large scallops, salmon belly, avocado, mixed with orange tobiko and chopped shiso leaves. Surrounded by creamy wasabi timbale sauce.
