Ingredients (Serves 4-6)
» 2 lbs chicken breast, cut into cubes
» ¼ cup Roquito Hot Honey
» 2 tbsp soy sauce
» 2 garlic cloves
Instructions
» 2 tbsp olive oil
» 1 tsp smoked paprika
» ½ tsp salt
» ½ tsp black pepper
» 1 tsp lemon juice
1. Soak the skewers in water for 30 minutes
2. In a mixing bowl, combine hot honey, soy sauce, garlic, olive oil, smoked paprika, salt, pepper, and lemon juice.
3. Coat the chicken cubes in the marinade, cover, and refrigerate for at least 30 minutes (or up to 2 hours for deeper flavour).
4. Thread the marinated chicken onto skewers. Preheat the grill to medium- high and cook for 8-10 minutes, turning occasionally until the chicken is fully cooked.

DONNIE’S DISHES
BBQ spicy chicken wings
INGREDIENTS
• 8–12 Chicken wings
• 2 x bunches spring onions, chopped
• Bramik sesame seeds, to garnish (optional)-Toasted
For the brine (optional)
• 1 tbsp Maldon’s sea salt
• 1 large onion, roughly chopped
• 1–2 rosemary sprigs
• 2 CRG -bay leaves
• Small amount of CRG black peppercorns
For the Rub
• La Mexicana Fajita Seasoning
• Salt & Pepper
Marinade /Glaze
• 1 x Tablespoon of Santa Maria Chipotle paste
• 4 x Tablespoons CRG Barbeque Sauce
METHOD
1. Optional: If you want to brine the wings, put the salt, onion, rosemary, bay leaves and peppercorns in a big pot, add about 1 litre/1¾ pints cold water and stir to dissolve the salt. Add the chicken wings, adding a little more water if necessary to ensure they are completely submerged. Leave in the fridge for at least 4 hours or overnight
2. Prepare your barbecue: Allow the flames to die down until the coals are just glowing
3. Drain the wings and pat dry, discarding the brine if used & place the wings in a bowl
4. Dust the Chicken with La Mexicana Fajita Seasoning, pinch of Salt & Pepper
5. To make the glaze — place the BBQ Sauce in a bowl and Mix in the Chipotle Paste
6. Brush the Wings with the Glaze and place on a tray
7. When the barbecue is ready, put the wings on the barbecue and grill for 30–45 minutes. turning every 10–15 minutes, brushing the glaze over both sides, until browned and cooked through
8. To serve: Sprinkle with the spring onions and the Toasted sesame seeds
Note: Always make sure the chicken is cooked througly before serving — A Simple test is to probe with a thermometer, the internal temperature of the chicken should be above 74C. Alternatively, test by piercing the thickest part with a skewer, the juices should run clear. The wings should be crispy and charred in places.

Montbru Garrotxa Cheese
Montbru Garrotxa is a goats cheese made in Mas Montbru in the Moianes region of Catalunya. Garrotxa is a re-invention of a traditional cheese of the region; it has a rind covered with a grey mould and a bone white paste. The aromas are intense and fresh, with a slight citric flavour, buttery texture and notes of citrus and mountain herbs.
Garrotxa cheese is ideal in salads, melted on toast or used in pasta fillings or in creamy cheese sauces.
Gorgonzola Dolce DOP is a soft, high-moisture blue cheese from the Piedmont and Lombardy regions of Italy. Made with pasteurized cow’s milk, this cheese is aged for 45 days in warm rooms. It has delicate blue and green veining and is milder than Gorgonzola Piccante DOP. The cheese boasts a luxurious, creamy, and spreadable texture with a milky and mildly piquant flavour. Its oozing paste and blooming blue veins give a sweet, nutty taste.
