The craft beer and specialty winemaker revolution is here to stay, and Holiday Valley invites you to its biggest party of the year. Beer, wine, cider, live music and food turns a typical blasé November weekend into a can’t-miss event. By Spencer Timkey Have you ever thought what it would look like if Holiday Valley transformed the Main Lodge into a 3-story party, with craft beer, wine, cider and live music? If you cooked up the perfect party scenario in a lab, it might look something like that. Fortunately for you, it exists. The Holiday Valley Beer & Wine Festival makes its libation-induced return on Friday, November 10th. Now in its 15th year, Beer & Wine brings your favorite breweries and wineries together under one roof. With over 30 vendors offering 100+ options, everyone (over 21 years of age, of course) can find a brew to enjoy - unless you’re looking for a Miller Lite. Then you can’t come. The three floors of boozey-bliss goes as follows: The ground floor transforms into a “Wine Cellar,” featuring music from Two Guys Drinking Beer. Wineries from the area offer you their seasonal best. The first floor features The Tim Britt Band, breweries and the Brew Festival food court (including German favorites like sausage and pretzels. Gary Liota from Santiago Cigars will be hand rolling cigars, and Dom’s Butcher Block will be there selling smoked meats. The top floor gets absolutely rocking. Hit n’ Run plays your favorite hits while more breweries serve you. We’ve covered Saturday’s raucousness. Let’s back it up a little, to Friday. In years past, Friday night of Beer & Wine has been a themed dinner, where festival goers dressed up (the Roaring 20s, for example). This year, the Valley is trying something entirely different. Trucks N’ Brews is the new Friday night addition. Here’s the rundown: You’ll show up at Tannenbaum Lodge at 7pm, where Southern Tier and Ellicottville Brewing Company will get the juices flowing. The Porcelain Busdrivers provide the jams, and a giant bonfire will keep you warm (hopefully by November 9th, we’ll be talking flurries with a target open date in the crosshairs.) That’s where the “Brews” come in. The “Trucks” go as follows: Lloyd’s, J&L BBQ, Polish Villa II, Fat Bob’s, Ellicottville’s Bike & Bean, Tim & Bonnie’s, Outback Kettle Korn and Holiday Valley. Food trucks will be on hand! If you’re coming for both Friday and Saturday night (you should be) then don’t even think about driving home afterwards. The Valley offers a multitude of lodging packages, like 1 and 2 night stays at The Inn with tickets to one or both events. Tamarack and Holiday Valley Lodging also have units available, which is great, because John Harvard’s Brew House will have Kegs N’ Eggs on Sunday morning … Hello Bloody Marys and Mimosas! Some of the names to expect at this year’s Beer & Wine Festival: Southern Tier Brewing, Ellicottville Brewing Company, Big Ditch, Boston Beer, Brewery Ommegang, Brickyard Brewing, Community Beer Works, Yuengling, Empire Brewing, Erie Brewing, Five & 20, Great Lakes, Hamburg Brewing, Ithaca Brewing, Long Trail, Mackjac Hard Cider, New York Beer Project, Otter Creek, Rohrbachs, Rusty Nickel, Steelbound Brewery, Thin Man, Victory, Voodoo and many more. Tickets to Friday’s Trucks N’ Brews are $25 each (does not include food from the food trucks), Saturday’s Beer & Wine is $50 and DDs pay just $10 (all tickets are available online). For more information on the 2018 Holiday Valley Beer & Wine Festival, hit up www.holidayvalley.com/brewfest.

BOB McCARTHY’S IRISH CHRISTMAS | Friday, November 30th @ 6:00pm | EBC If you knew Bob McCarthy aka “The Voice of Ellicottville”, then you knew the instrumental role he played in helping many youth programs here in Ellicottville, with his favorite being “Santa’s Workshop.” To support this endeavor, many years ago Bob created the event, Irish Christmas. Since his passing in 2016, many people have stepped forward to make sure that the event - since renamed “Bob McCarthy’s Irish Christmas” - continues. With the help of many members of the community and The Rotary Club of Ellicottville, each holiday season has become a great memorial to Bob. Bob McCarthy’s Irish Christmas is a great tribute to an amazing individual. It was McCarthy who said, “I love doing Irish Christmas … it is a night of Irish magic. I don’t know how the magic gets there, but it just does. That’s the beauty of it.” On Friday, November 30th at 6:00pm the magic will continue at the Ellicottville Brewing Company, which will again host the event. This will be the 13th anniversary of Bob McCarthy’s Irish Christmas fundraiser. It has become an event to remember, and one that locals and weekenders alike don’t miss. On Nov. 30th, McCarthy’s wagon will be parked outside of EBC starting around 7:00am, where the public can leave new toys and unwrapped gifts for Santa’s Workshop and the Sheriff’s Santa Program. These programs collect gifts to help make Christmas special for less fortunate families. Monetary donations are also welcomed and can be sent to Rotary at PO Box 101, Ellicottville, NY 14731. All donations are tax deductible; include your return address so a receipt can be sent. Again this year, a number of restaurants will serve a special Irish dish at a reasonable price, or you can order from the great EBC menu. Final details for this year’s Irish Christmas are being worked out, but you can bet the event will continue the way Bob intended, including the fabulous pie auction. Local craftsmen like Ed Frederickson will once again create unique pie boxes, a chest - and rumor has it - great birdhouses in the McCarthy tradition for the auction. There will even be some original Bob McCarthy pieces that have been donated for this event. The spirit of the season is unmatched in Ellicottville, and Bob McCarthy’s Irish Christmas is a perfect opportunity to share it with friends. Remember to mark your calendar for Friday, Nov. 30th to share the spirit with friends and to help give back to families in the community. For more information call Greg Cappelli at 716-474-7832.

Reinvesting to make your family’s winter getaway a memorable one!

@livingabeautifulife

@holidayvalley

@bperksey

@teacher_momoftwo

By Spencer Timkey When Holiday Valley’s founders opened their tiny, rural NY ski resort in 1958, would they have ever dreamt of what it would become? Three beautiful lodges, 60 trails, 13 lifts and a resort that hums all year long. Over the past 60 years, a combination of strong leadership, innovation, and a loyal, diehard ski/snowboard base has been the continual catalyst for Holiday Valley’s success. We’ve come a long way from one lodge and a T-Bar. Through good winters, great winters, so-so winters and one really bad (looking at you, 201516) winter, Holiday Valley has maintained its status as one of the premier resorts on the East Coast. While at its core it remains a ski resort, HV has expanded its amenities to include conference centers, a beautiful wedding venue, an aerial adventure park/mountain coaster and much more. It truly is a four-season destination. Always putting money back into itself, the Valley’s reinvestments this season include new snowmaking guns, a new Pisten Bully 100 snowcat, two Sunkid conveyor lifts, clearing tree runs and creating new kid-friendly “tree trails.”

GOODBYE ROPE TOW, HELLO TREE TRAILS

The Valley’s Mountain Ops crew are some of the best in the business because of how in-tune they are with the hill. (For example: this crew installs all of the chairlifts themselves.) This season, a Sunkid conveyor lift (think of a moving sidewalk) replaces the tow rope on Slippery Streets. If you’ve used a tow rope before, you know how difficult it can be, even for advanced skiers or snowboarders. The goal is to make it easier for the beginner. Crews have also spent the summer clearing out debris from the glades to make them easier, safer and more accessible. Ski School Director Allie Doro has also dedicated several “Tree Trails” for her instructors to take kids and beginners through.

APRÉS AT JOHN HARVARD’S BREW HOUSE

Strategically located less than three hours from big population centers (think Toronto, Buffalo, Cleveland and Pittsburgh), ski and snowboard lovers of all ages proudly - definitively - call HV their home resort. With $3.3 million going back in this year, the grand total of reinvestment over the past 25 years has hit a cool $135 million.

Half the fun of hitting a ski resort is the aprés! After a strong day on the slopes, a cold beverage is the perfect way to end it. John Harvard’s Brew House, home to over 20 beers on tap, has views of the slopes and a (very cool) concrete bar. Bartenders will ask you how your day on the slopes went, all the while keeping you satisfied with drinks and food.

MORE AUTOMATED SNOWMAKING

“The food and drinks are excellent, but nothing makes a good apres experience like an awesome bartender,” said Franco Brady, Holiday Valley’s Director of Food & Beverage. “The brick oven (for pizzas) is always hot, and the views of the slopes - especially when they’re lit up at night - complements the experience so well.”

While we are blessed with Nor’Easters and lake effect (shoutout to Lake Erie), through many of its 60 winters, the Valley has kept its proverbial head above water by constant reinvestment in its powerhouse snowmaking systems. $250,000 of capital improvement money went into adding more HKD KLIK Automated Guns. Superior in the snowmaking world, HKD’s automated system allows the Valley’s crew to monitor temperature, humidity and other weather factors and adjust the system accordingly. Now, instead of a crew having to haul guns and hoses on the hill when there might be a good weather window, they can turn the guns on and off from their home base in the snowmaking building. With the addition of the guns this summer, Holiday Valley now boasts the largest HKD-specific automated snowmaking system on the East Coast. Here’s an example of just how incredible the snowmaking capability is at HV: Last November, the boys had a window of great snowmaking weather. They ran at max capacity for close to 72 hours, and cranked out 80 acre feet of snow. (An acre foot is exactly what it sounds like: covering one acre in a foot of snow.) It helps when you’ve got a reservoir (Spruce Lake) which holds 60 million gallons of water. Additions for automated snowmaking trails this year include: 10 HKD autoguns and hydrants to be placed on upper Mardi Gras, 4 HKD autoguns and hydrants to be placed on Raven, and the purchase of the HKD Tracker Program so they can now record and track 642 hydrants to manage snow quantity. “We were able to use a New York State (NYSERDA) program that encourages more efficient snowmaking to purchase 107 HKD Impulse Tower guns which will be installed on Bear Cub, Snoozer, School Haus East, the whole Eagle area, Spruce area above Tannenbaum, Independence and Mistletoe,” said Jane Eshbaugh, Marketing Director at Holiday Valley. “These guns make snow at higher temperatures than the guns they are replacing, and at lower temperatures they use less air, making them more energy efficient.

John Harvard’s square-shaped bar allows you to communicate with other visitors and swap stories. Or, if you’ve got the family, there’s tons of additional seating. Your favorite beers are all on tap, including seasonals from Ellicottville Brewing Co. and Southern Tier.

MOUNTAIN COASTER AND TUBING PARK

Two must-experience activities at the resort are the Sky Flyer Mountain Coaster and the Tubing Park. The coaster, located at Tannenbaum, takes you up the hill in a two-person sled and then loops and twirls back down through the trees. Bonus? You control the speed with two hand brakes. “The coaster is a huge hit,” said Eshbaugh. “Parents can ride with their kids (as long as the combined weight is under the limit) and it’s a great time, especially at night.” The Tubing Park, located just a short drive down Route 242 east of the village, has 22 lanes with quality snowmaking to match. When it’s super cold, put those goggles on - because you’re going to go fast, Ricky Bobby. This year, the Tubing Park will receive a SUNKID Conveyor Belt, which will increase the number of tubers uphill per hour. The Tubing Park also used the NYSERDA program to purchase 3 HKD Diablo fan guns and 6 HKD R5 tower guns to replace older, less efficient tower guns. There’s a special vibe around Holiday Valley and Ellicottville that’s validated by the evergrowing number of people who come to visit. Plan your ski trip for the 2018-19 winter season. NEW YORK’S AMISH TRAILS

@emountains

THEATRE

The Amish Trail can be found along the Western border of Cattaraugus County. In late Autumn, plan a scenic drive through the rural countryside along the Trail. Amish roadside stands and shops overflow with the fruits of their labor: fresh homemade jams and jellies, colorful handcrafted rugs and quilts, woven baskets, handmade furniture, fun wooden toys and yummy goat’s milk fudge. Plan your route ahead of time or simply go where the autumn wind takes you. The Amish Trail brochure and map comes with a listing of the Amish shops. You can also tour Amish Country with one of Leon Historical Society’s tour guides! They offer a step-on Guide service in which they design a tour according to your interests or an overall glimpse of the culture and history of the Amish.

Theatre is alive and well in Cattaraugus County! Spend a delightful evening inside dreaming of other lives lived and hearing the great stories and musicals put on by our fantastic local talent. The Olean Theatre Workshop has provided family theater for over 35 years; upcoming performances of “Proof” debuts in November and “Little Women” will debut in February. Olean @Paul Crawford Community Theatre also offers fine live performances for those wishing to enjoy a little more of the indoors over the winter months; their upcoming shows include “West Side Story” (January) and “The Curious Incident of the Dog in the Night-Time” (April). The Ray Evans Seneca Theatre in Salamanca is host to the Cattaraugus County Living Arts Association. They start off the winter with their “Christmas Cabaret”, followed by additional performance during the year. Search each of these theatres on Facebook.

Need a new place to go for snowshoeing? Try the trails at Pfeiffer Nature Center in Portville, NY. Consisting of two properties - each with a unique set of traits - both offer hills, flatlands, wetlands and meadows and forests - perfect for watching the snow fall quietly as you experience the calmness and beauty of a Western New York winter. The Lillibridge Property has 6 miles of trails and is home to the old growth forest and a historic cabin that hosts special events throughout the year. The Eshelman Property has just over 3 miles of trails and is especially used by birdwatchers. Spend a day snowshoeing and then head to Sprague’s Maple Farms & Restaurant just minutes away to warm up with some delicious menu items, most containing fresh, local maple syrup.

Have a flurry of fun on the County’s 425+ miles of trails that weave paths throughout the county, into Allegany State Park and connect with adjacent counties. (You must stay on the trails - open land does not mean it’s open to riding.) Request a new map and brochure so you know where to ride. Cattaraugus County has numerous lodging facilities that offer direct or easy access to the trails and restaurants that are friendly to snowmobile groups. For a FREE map of the county trails, along with listings of lodgings, restaurants, rentals, parking spots for your trailer, service stops and gas stations, go to EnchantedMountains.com/snowmobiling or call the number above. Look for updates on the trail conditions throughout the county on the website as well.

ICE FISHING

Allegany State Park holds our most famous area of trails - the Art Roscoe Trails - dedicated to the forefather of Western New York skiing, Arthur Roscoe, who mapped out many of the logging trails now used in this area. Over 20 miles of groomed trails range from beginner to advanced, with varying mileage in different loops. (Snowshoeing is not allowed on the groomed trails but there are plenty of other trails for you.) Rental skis are available at two locations in the park: Red House Gift Shop at the Administration Building, and Summit Warming Hut. Winterized cabins are located within a short walking distance from the trail system as well, so plan an overnight winter getaway for the family to get in some great cross country skiing!

For all you fishing fanatics ... fishing can be enjoyed year round in Cattaraugus County! Our lakes, although man-made and shallower than neighboring lakes, still provide excellent habitat for many sports fish, including tiger musky in Lime Lake and Walleye along the reservoir. Drop a line in at New Albion, Case, Harwood, Quaker or Red House Lakes for even @Paul Crawford more fishing fun! For the hardier sportsperson, try ice fishing on our lakes during one of those sunny, brilliant wintry days. There will be room to spread out and set up your shanty! Onöhsagwë:dé CULTURAL CENTER - home to the Seneca-Iroquois National Museum

@emountains

82 W. Hetzel St., Salamanca, NY | 716-945-1760 | facebook.com/SenecaMuseum | OPEN 7 DAYS A WEEK The Onöhsagwë:de Cultural Center is officially open to the public and welcomes visitors to explore the “American History you Won’t Find In Textbooks”. Seneca History is rich, but little known and understood. Though faced with constant challenges, the culture and depth of the the Seneca tradition is still very much alive and celebrated. The new Cultural Center replaces the original Seneca-Iroquois National Museum, which opened in 1977 and was supposed to be a temporary museum. It ended up lasting 40 years, and the Museum’s exhibits, artifacts, and displays are now all housed in the Cultural Center, which measures 33,000 square feet. This new massive space allows the Seneca Nation to expand upon the 5% of inventory they previously had room to showcase. And they now have the proper storage and care-taking capabilities to recover precious artifacts that previously were on display elsewhere. Not only is the new Center inspired by Native lore, it is designed to guide and immerse visitors throughout, right down to the floors they walk on. Known as “The Keepers of the Western Door” for being the westernmost among the six nations of the Iroquois Confederacy, the Seneca are a matriarchal society that has participated in what is accepted as the first modern democracy in the Western hemisphere since 1100 A.D. Yet many sacred lands have been taken by the United States, even as recently as the 1960s to build the Kinzua Dam in northwestern Pennsylvania. Many Seneca people were forced from their homes and properties that bordered the Allegheny River during creation of the Dam and relocated from Steamburg into Salamanca. In fact, Johnny Cash even wrote a song about this on his album, “Bitter Tears” called “As Long As The Grass Shall Grow”. The new museum and cultural center are both a celebration of the past and a cornerstone for the future of the Seneca and all Americans.

American Hawkeye

Discover the ancient sport of falconry, a fun and unique way to get outdoors and enjoy nature

@american_hawkeye

The art of Falconry dates back at least 4,000 years, and birds of prey have been one of man’s fiercest and most efficient hunting weapons. Western New York native and Master Falconer Johnathan Clarkson - known as “American Hawkeye” - brings the ancient art to life with demonstrations and a passion matched only by his birds. By Spencer Timkey A sparrow flies solo through the air, unaware of what soars above it. Suddenly, at a whopping 200 miles per hour, a Peregrine Falcon snatches it out of the sky with its hunting stoop, or high-speed dive. With unmatched speed, eyesight and maneuverability, the raptor makes easy prey of the lower-on-the-food-chain bird. Such is the circle of life. Nothing is more mesmerizing than watching a raptor, or bird of prey, on the hunt. Falcons and other raptors (which include owls, eagles and ravens) are some of nature’s most gorgeous killing machines. Falconry, which dates back at least 4,000 years (some records suggest as early as 10,000 years ago) is one of the oldest forms of hunting. Fast forward to 2018, and Falconry is as prevalent as it was then.

HEART ELLICOTTVILLE

LOCATED IN THE OF

Johnathan Clarkson, a Colden, NY native who spent time in Utah before moving back to West Valley, is a Master Class Falconer. His company, American Hawkeye, demonstrates the beauty of these birds - but while that’s a major part of it, he also emphasizes responsibility, education and conservation. “I explain to the people that come to our demonstrations that these birds have to kill to survive,” he said. “That’s nature. But we really focus on the biology of the birds, what makes them tick, current and past preservation tactics and more. We want people to understand — and respect — these incredible animals.” The process of becoming a Master Falconer is not an easy one. First, the DEC (Department of Environmental Conservation) requires you take and pass a 100 question test. Once you do, you’ll need to find a Master Falconer who will sponsor you and take you on as an apprentice. After two years, you’ll become a General Class Falconer. Only after five years as a General Class do you graduate to Master Class. Clarkson has put the time in. It’s evident in his extensive knowledge. “I have different species of hawks, owls and falcons that I currently own and train,” he said. “Some I’ve caught out of the wild, some I’ve raised since birth. It’s a mixed bag. There aren’t a ton of resources on Falconry, so a lot of it is self-taught. I’m still learning, because there’s no way to completely understand every aspect of the birds. Each one is different.” Clarkson explained that training a bird (he used a Prairie Falcon as an example) usually takes about a month. Some take a shorter time, others much longer. Training revolves around a food-based reward system, and even then it’s not always guaranteed. But special state and federal permits allow him to breed birds and capture them from the wild.

Just steps from our well known shopping, dining, nightlife, outdoor activities and don’t forget all of our great festivals.

www.ellicottvillewingateinn.com

He brings his birds to Holiday Valley throughout the summer to offer free demonstrations to the public. There isn’t any live hunting going on, but his crew sets up dummies to give an idea as to how the raptors think, hunt and execute. “Holiday Valley has been great to us,” he said. “We’ve done demonstrations up there all summer and the crowds have been awesome. We’re here to teach people about the art of Falconry, because we love these birds. We want to hunt (with) them, protect them and breed them. Falconers were some of the original conservationists. So if we can share that passion and that knowledge, all the while getting people outside in nature seeing them in their natural habitat, it’s great. They’re unbelievable animals.” 716-699-6000

You, too, can learn how to handle and fly live birds. Clarkson offers several different experiences and presentations, catering to individuals, small groups and large corporate events. American Hawkeye can be found on Instagram at @american_hawkeye and online at www.americanhawkeye.com.

SNOWED-IN PRE-SEASON ~ 2018/19 SKI SHOW EDITION ... Page A-19

LIVE PERFORMANCES @ SENECA ALLEGANY STAND-UP COMEDY AND HOLIDAY CLASSICS ON THE BILL By Melanie Hulick Laughter and the sounds of the season will fill the Seneca Allegany Resort & Casino Event Center this October through December with three must-see shows. Whether you are ready to laugh until your sides hurt, or share in the holiday spirit with the choice of two different performances, you cannot go wrong with any of the three listed here. More information including ticket pricing can be found at www.senecacasinos.com.

HOWIE MANDEL SATURDAY, OCTOBER 20th @ 7:00PM One of the funniest comedians ever, Mandel returns to the Event Center with his uproarious stand-up act. Making people laugh for over 30 decades, the funny man still does 200 shows throughout Canada and the U.S. a year. Having done television and film, he has also added bestselling author to his credits with his book, “Here’s the Deal: Don’t Touch Me” where Mandel talks about his OCD and ADD in a humorous way, showing you can conquer your fears and overcome these issues in your life. His earlier television work showed he also had a more serious side when he played Dr. Wayne Fiscus on the hit drama, “St. Elsewhere” in the early 1980’s. Creating the ever-popular children’s animated series, “Bobby’s World”, which features his voice as Bobby, earned him multiple Emmy nominations. More recently the comedian just finished his 8th season on the summer hit, “America’s Got Talent” as one of the judges. Not one to take a break between gigs, Mandel will be the host of the reboot of his most popular game show, “Deal Or No Deal” from 2005 when it premiers on CNBC on December 5th. If you haven’t seen Mandel doing his live stand-up routine, make it a point to see him this time around. Those of us who have seen him can testify that you will leave all the better for it ... and in these days especially, we can all use more laughter.

DONNY & MARIE OSMOND’S HOLIDAY TOUR FRIDAY, NOVEMBER 30th @ 8:00PM The brother & sister team bring their holiday favorites to the Event Center with their close sibling performing style that started five decades ago and is still evident today. Having done their own successful TV Variety Show in the 1970’s, the two have gone on to record two pop music duets, “I’m Leaving It All Up To You” and “Morning Side Of The Mountain”. Huge solo careers followed them throughout the decades, garnering numerous chart topping singles and albums, which earned them some of the top music award nominations including Grammys. The pair have both been involved in starring roles on Broadway including Marie in “The King & I” and “The Sound of Music” and Donny in “Joseph & The Amazing Technicolor Dreamcoat” and “Beauty and the Beast”. The Osmond Family celebrated their 50th year in Entertainment in 2008 and the brother/sister duo started performing in Vegas at the Flamingo Hotel that same year, with the “Donny & Marie Show” that turned a six-week run into a mainstay show still going on today. Teaming up again, they put together a holiday musical called “Donny & Marie - A Broadway Christmas” originally scheduled for 10 shows in December of 2010, which was extended through January 2, 2011. The show was so popular that it is now a yearly event in several cities across the country. Lucky for us, we are one of the stops this year.

JEWEL’S HANDMADE HOLIDAY TOUR SATURDAY, DECEMBER 8th @ 7:00PM Singer/songwriter Jewel has come a long way from her humble beginnings growing up in Alaska. After leaving Alaska, she became a homeless teenager living in San Diego. Finding music has defined her life and has gotten her through anything that has been thrown her way. Her debut album, “Pieces of You” was one of the best selling debut albums of all times and spent 2 years on the Billboard 200 chart, with songs like “You Were Meant for Me”, “Foolish Games” and “Who Will Save Your Soul”. Earning multiple Grammy nominations and an American Music Award, as well as an MTV Video Music Award, the singer credits her mentors, Bob Dylan and Neil Young, who took the time to groom and encourage her, for who she is musically. Describing her music as pop, folk and country, Jewel has had 23 hit singles and is currently working on her next project … a new studio album slated for release in the summer of 2019, which will coincide with her silver anniversary as a recording artist and followed by a tour. For now, she is touring with family members and special guests Atz and Atz Lee from Discovery Channel’s Series, “Alaska: The Lost Frontier” and Nikos Kilcher, bringing a perfect family Christmas filled with holiday favorites, stories, traditions and love wherever the show makes a stop. TRAIL CENTRAL

One, if by Land, and Two, if by Sea Ideas for touring the Allegheny National Forest Region By Linda Devlin, ANF Visitors Bureau

Henry W. Longfellow coined the phrase “One, if by land, and two, if by sea,” in his epic poem, Paul Revere’s Ride. With over 513,000 acres to explore in Pennsylvania’s only national forest - the Allegheny National Forest - you may choose to travel by land (hiking/biking), by sea (kayaking/canoeing), or by air (in a vintage bi-plane). Located in northwestern Pennsylvania, this area offers four seasons of premier outdoor recreation and many other exciting attractions including the world famous Kinzua Sky Walk, known as “One of the top 10 most scenic skywalks in the world.”

The Kinzua Sky Walk stretches out 624 feet into the Kinzua Gorge and features a partial glass overlook. At the Kinzua Bridge Visitors Center, you can learn about General Kane and Octave Chanute who built the Kinzua Viaduct, a bridge higher and longer than anything in the world in 1882.

THE LANDS OF KINZUA This region is filled with attractions named Kinzua: the Kinzua Sky Walk, the Kinzua Bridge State Park, the Kinzua Gorge, Kinzua Creek, Kinzua Creek Trail, Kinzua Valley Trail and Kinzua Dam. The word Kinzua is a Native American word translated as “Fish on a Spear.” The sites named Kinzua stretch across most of McKean County and into parts of Warren County, Pennsylvania. The Kinzua name is used along the course of Kinzua Creek, as it flows from its headwaters north of the Kinzua Gorge, past the village of Westline, along the Kinzua Valley Trail, to the Kinzua Arm of the Allegheny Reservoir. Here the waters merge with the Allegheny River flowing south from New York. These waters become the Kinzua Dam, also known as the Allegheny Reservoir, one of the largest dams in the United States east of the Mississippi River. It is located within the Allegheny National Forest.

THE KINZUA SKYWALK The Kinzua Sky Walk is an amazing site to visit. This marvelous structure is a juxtaposition of nature’s beauty, engineering genius, and the power of the wind. When the Kinzua Viaduct was first built in 1882, it was the longest and highest railroad viaduct in the world. In 1900, it was rebuilt of steel to haul the rich resources of coal, timber, and oil to the Great Lakes. Operating as an active railroad from 1882 to 1957, this railroad was remarkable for solving the engineering challenges of building a viaduct 2,053 feet long to cross the Kinzua Gorge. Early on, the railroad was used as an excursion train for travelers wanting to experience the thrill of flight as they crossed 321 feet above Kinzua Creek. Travelers came from near and far to “Walk the Tracks Across the Sky.“ In 2003, in the midst of a $12 million restoration of this National Engineering Landmark, an F1 tornado blew into the gorge and toppled 11 of the original 20 towers of the Kinzua Viaduct. Following this destruction, it was decided to honor the historic nature of this site, by re-inventing a new engineering marvel, the Kinzua Sky Walk. Constructed using six of the original towers, the new skywalk features a partial glass floor overlook. The scenic views from the skywalk offer 360 degree views of the Kinzua Gorge. Spectacular year round, in the fall, the colors of the forest turn into a carpet of blazing orange, brilliant yellow and ruby red. The towers toppled by the tornado remain where they fell as a testament to the power of nature. A new trail, the Kinzua Creek Trail, allows visitors to hike down the side of the gorge to view the fallen remains. At the Kinzua Bridge Visitors Center travelers can discover both the power of man and the power of nature. Displays showcase the builders and engineers, including General Thomas L. Kane, and Octave Chanute, who built the first viaduct in 1882. Other displays showcase the natural habitat of the gorge and surrounding forest. On the first floor, the Pennsylvania Wilds Conservation Shop features locally handcrafted and artisan items. The Kinzua Sky Walk and the Kinzua Bridge Visitors Center are located within the Kinzua Bridge State Park, 296 Viaduct Road, Mt. Jewett, Pennsylvania. The park and the skywalk are open seven days a week from 8am to dusk. The visitors center is open from 8am-6pm daily. Admission is free to the skywalk, the park and the visitors center. For more information call 814-778-5467 or go to visitANF.com/kinzua-sky-walk.

BY AIR: TOUR IN A VINTAGE BI-PLANE Views from the sky offer amazing landscapes as you soar above the forestlands of the Kinzua Gorge and the upper Alleghenies in a 1943 open-cockpit Boeing Stearman with experienced pilot Bruce Klein. This bi-plane ride is a safe and enjoyable - as well as memorable - experience. Take advantage of a bird’s eye view to see the picturesque beauty of the fields, forest, rivers, and streams from above. One manmade architectural attraction best seen by air is the amazing Kinzua Sky Walk at the Kinzua Bridge State Park. As part of the Allegany Plateau, the views of the hillsides, valleys and vast forestlands are truly a remarkable site when seen from the air.

Smethport Mansion District

TRAIL CENTRAL: The ANF Region is your hub for walking tours, hiking and biking trails.

Get on the snow: ATV, UTV and snowmobile rentals are available at a number of local outfitters.

TWO BY LAND: WALKING TOURS AND RIDING TRAILS For those seeking amazing architecture, two walking tours - one in Smethport and one in Bradford - offer a time capsule view of America. The Smethport Mansion District Walking Tour highlights 32 mansions built during the late 1880’s. Many are prime examples of Victorian architecture, and two - the Mansion District Inn and the Blackberry Inn - are now operated as bed & breakfasts. The Bradford National Historic District Walking Tour uncovers the fascinating past of this early boom town built by the first Oil Barons. Prime examples of Art Deco architecture from the 1920s include the Hooker-Fulton Building, the Zippo Manufacturing Office with its famous Neon Zippo Sign, and Marilyn Horne Hall - the site of the Marilyn Horne Museum and Exhibit Center. The Main Street Movie House, still operating today as a movie theater, opened in 1935 with Miss America attending the Grand Opening.

MILES OF HIKING AND BIKING TRAILS

The Allegheny National Forest Region offers over 600 miles of multi-use, four-season trails. Promoted as Trail Central, this area offers a wide variety of trails. The Marilla Trail System features a wooden covered bridge at Marilla Bridges Trail, massive rock formations along the Marilla Rocks Trail, and an old-growth forest along the White Pine Trail. Difficulty levels range from easy to more-difficult. The Timberdoodle Flats Interpretive Trail is great for birders, and the North Country National Scenic Trail stretches 96.6 miles, offering backpackers a true deep forest experience. As you explore the area by land you will discover local wildlife, birding sites, and the natural attributes of this hardwood forest known for producing the finest Black Cherry timber in the world. The newest section of trail in the region is the Knox & Kane Rail Trail. This first section of completed trail connects the Kinzua Bridge State Park to the village of Mt. Jewett, Pennsylvania. This 3.8-mile trail is paved, with interpretive signage and benches along its length. An easy trail, it is family-friendly for both hiking and biking. It is a non-motorized trail. Future plans include developing the entire rail corridor of 73.8 miles for trail use. The Marilla Trail System is an interconnected trail system of six separate trails of different difficulty levels. A local favorite is the Marilla Bridges Trail, which loops around the Marilla Reservoir. This 1-mile loop offers forest and water vistas. Highlights include a covered wooden bridge, three rustic wooden trestle bridges, and a delightful gazebo located at the southwestern corner of the trail. Fishing and kayaking are allowed. Other trails in the Marilla Trail System include Marilla Springs Trail: a 3.6-mile pointto-point trail which is slightly more aggressive, and Bullis Hollow Trail: an 8.3-mile trail connecting Marilla Springs Trail to Tracy Ridge Campground in the Allegheny National

Forest via sections of the North Country Trail. The Cornelius Connection at Gilbert Reservoir is a 2.4-mile linear trail which spans from Marilla to Gilbert Reservoir. This is a dirt path trail through mixed hardwood forest and is great for snowshoeing. It is an ungroomed trail. Trailheads for the Marilla Trail System are located near both reservoirs. From Bradford, take PA Route 346 west for five miles to reach trailhead parking. Jakes Rocks Mountain Biking Tail is a 30 to 40-mile system of trails designed by Trail Solutions, a world class trail company affiliated with IMBA (International Mountain Biking Association). This stacked loop mountain biking trail system appeals to riders of all skill levels. Jakes Rocks is located west of the Allegheny Reservoir; the village of Kane can serve as a great hub for riding, as bikers can travel from their room via PA Route 321 north to the Longhouse National Scenic Byway, then north on Forest Road (FR 262) to the trailhead. Lodging sites in Kane include Spoonwood Inn, Kane Manor, and at the intersection of Rt. 219 and Rt. 6, Lantz Corners Getaway. The Kinzua Valley Trail is a 7-mile biking, hiking, snowshoeing and cross-country skiing trail. Trailheads are in Westline and at the Red Bridge Campground in the Allegheny National Forest. This 7-mile linear trail winds along picturesque Kinzua Creek. The surface of the trail is crushed limestone, and it is a family-friendly trail with easy access and slight grades, making it ideal for cross-country skiing in the winter. In the village of Westline, the Westline Inn offers delicious dining in a rustic atmosphere. It is perfectly acceptable to wear your outdoor gear in for a meal. Guest rooms offer charming old-fashioned brass beds and no electronics, making this an excellent getaway for those seeking an escape into nature.

ATV AND UTV RIDING Enchanted Mountains Endless Trails is the newest ATV trail system located in Derrick City, Pennsylvania. For information call 814-558-0459. Majestic Kamps & Lost Trails offers year-round riding opportunities. The trails are all one-way, beginning and ending at the trailhead, with colored arrows to guide you. Multiple trails are available for different riding abilities. The Main Loop, marked in green, is an easy trail for beginners to intermediate. A variety of activities are held throughout the year including drag races and holiday celebrations. Rustic camping and a limited number of on-site rental units are available. Enjoy riding from your room. Fees are by the day, or an annual pass may be purchased. Majestic Kamps and Lost Trails is located along Rt. 46 in Rew, Pennsylvania. For information call 814-465-9979 or click on majestictrails.com ATV, UTV and snowmobile rentals are available from Myers Motorsports located at 3176 Rt. 219, just north of the intersection of Rt. 219 and Rt. 6, in Lantz Corners, Pennsylvania. TREY CLAUSS Mr. Man

GREG DEKDEBRUN Apex Dealer

@mclauss24

Let us in on your top product picks for this season. I’d say the most exciting ski out there this year for us is the LINE Sakana. Japanese for fish, the Sakana has a very unique design. Skiing is believing ... the fish tail design allows the skier to float effortlessly in soft snow and really carve hard through the turn on packed conditions. Skiing this ski last season had me LOL’ing every turn. We will have a pair in demo for people to try! We also try really hard to seek out brands that you can’t find in every store. Our apparel line-up includes the industry’s top brands - FlyLow, Salomon, Mountain Hardwear, TOBE, Armada, Skhoop, Kuhl, and new this season Jack Wolfskin. You also carry XC skis, telemark skis, and snowshoes for sale. Do you have them available for rent as well? You bet we do! We are so lucky to have such an abundant amount of outdoor venues so close to Ellicottville. Allegany State Park is by far the best spot for cross country skiing groomed track and traditional touring trails measuring about 20 miles. Telemark skiing has been gaining more and more popularity. Looking for a new challenge on the same trails you’ve skied day in and day out? Tele rentals are available in the store for daily rental. We have the latest equipment and can also direct you to the area’s best instructors. Both Holiday Valley and HoliMont have full-time telemark lessons. Snowshoeing is a great way to slow things down and take a look around for the non-skier or for a great apres ski activity. Both resorts offer marked trails for snowshoe touring … feeling adventurous? Climb to the top of either resort and explore the few 100 acres of NYS land. Word has it your boot fitter has seen a lot of feet … You could call him the ski boot whisperer ... Tim has been with us for some time now; he has cultivated a long list of boot groupies over the years. Once he starts back up in October, the line starts forming up the stairs to get into his coveted “throne” in the boot room. Better to call the shop (716-699-2054) to set up an appointment rather than getting stuck in line! You’re hosting a movie premier event in November. Details ... By far our most enthusiastic event of the year! Matchstick Productions (MSP Films) has been producing action packed ski movies since 1992. This year “ALL IN” is the feature film, traveling around the world chasing the world’s best skiers. November 17th at The Ellicottville Depot / FREE show / prizes / FUN! Follow us on facebook.com/thecitygarage for all event updates! What other events are you guys looking forward to hosting / participating in this year? Once the chairlifts start turning we want to get people on skis! This year we will be participating in Holiday Valley’s consumer ski demo on Saturday December 15th. This has been a very popular event for skiers to try the latest and greatest. We have also signed on with HV for a Sunday Funday Demo Tour starting in January. We will have our alpine and telemark ski demo fleet under the CG tent located at the base of the Yodeler chairlift. 1/27, 2/10, 3/3, & 3/24 are the dates you can catch us! It’s always fun to try something different. TELESTOCK! A day of peace, love, and telemark skiing on Friday, February 22nd. Set up is on the Champagne Sundeck (upper Yodeler Lodge) starting at 9am. This is our day to bring everything telemark to the people. FREE ski & boot demos all day, FREE sausage cookout, FREE FUN! If you have been thinking about dropping a knee this is the day ... As always ... keep a lookout on our facebook page for more events once the season gets rolling! On the flip side, The City Garage is the only ski shop in town that’s open year round. Can you give us a glimpse of your summer offerings? The City Garage hasn’t missed a summer since 2000. We have evolved our summer business with the changing times of Ellicottville. Settling into a “summer fun” theme, we offer some of the best outdoor clothing, footwear, and accessories in the game. Being able to meet new people that are just checking out town for the first time or catching up with winter friends that need their “garage” fix, summer in Ellicottville is a relaxing pace compared the the hustle and bustle of winter.

You officially retired after last season and closed the doors to Dekdebruns for the last time ... or so we thought. You just can’t stay away, can you? Tell us about your new endeavor with Apex boots. Not being a person that can sit still and having been in the ski business all my life, I came up with the idea of an Apex concept store. When I told Apex about my idea they were all in. I was Apex’s first dealer 12 years ago and am currently one of their largest dealers. Not only do you specialize in Apex boots and bootfitting, but I understand Apex is now also offering a line of skis ... Along with the Apex boots, I will be selling the NEW Apex ski. The ski is built in America and consists of a wood core and carbon fiber wraps. It will be available in 4 models of which I will be stocking the 2 best Eastern models. The others can be special ordered in season. Will you have demos skis available? How about demo boots? Yes, I will have a limited number of demo skis and boots available. What other services can your customers expect at your location? Every good boot fit starts with a set of foot beds. Just like the foundation in your home, the foot bed is what stabilizes and controls all the joints above it. We will continue with custom foot beds from FOOTBALANCE and drop-ins from WALKABOUT. Do you plan to stock other products in your store this season? We will also carry some accessories including socks from FIT, boot bags from KULKEA, ski poles from LEKI, boot heaters from HOTRONICS, boot dryers from DRY GUY and ski bindings from MARKER and TYROLIA. It is our understanding that you are going to run Dekdebruns Apex Store mostly by appointment only, with some open hours. Does that mean we can expect to see you out on the slopes a little more often this year? Since my goal is to keep my hand in the ski business but have more free time, I will be working by appointments with limited “open hours”. I would suggest that customers schedule appointments in the fall when things are slow. To schedule an appointment go to our website dekdebruns.com or call me direct at 716-281-3300.

WHAT MAKES APEX BOOTS STAND OUT?

COMFORT: Snowboard boots have always featured a flexible exterior and comfort that no ski boot could offer. Snowboarders could walk comfortably to the lift, perform all day on the mountain, and never worry about having cold, cramped or painfully uncomfortable feet. Watching this scene play out over the last twenty five years inspired a boot that affords skiers the same combination of performance, comfort, and incredible warmth on the slopes, paired with easy walkability and solid traction off the slopes. The Walkable Support Boot incorporates a heat moldable, Custom Fit Liner that promotes a natural foot position. A Dual Zone Boa Closure System® is added for infinite on-the-fly adjustment that will not loosen during the day no matter how hard you ski. Apex provides all day warmth and comfort so you can focus on getting the most out of your skiing experience. PERFORMANCE: The Apex Ski Boot System was developed by industry experts who have extensive experience with ski boots and technical footwear. The heart of the system, the Open-Chassis™ allows for independent control of fit, flex, and closure. The adjustable cuff alignment provides critical edge control. The tunable A-flex suspension system allows for individual adjustment of the resistance to forward lean. The Open-Chassis™ gives the Apex Ski Boot System its exceptional edge control, precise feel, and unique versatility, fitting a wide range of foot shapes.

Big news for this year … online store! It’s going to be huge, Buffalo. The way society is trending, where people are buying almost everything online … this was a must for the shop. The only way we’re going to continue to survive in a competitive, digitally-driven market is by joining in on the fray, and that’s what we’ve done. Everything in store will be available online. We don’t want people to think that since we’re going Bezos, they won’t get the same level of service that they’ve come to expect out of the shop since 1984. If you’ve got a question on a board, or helmet, or even a facemask … call us. Message us. We’re going to give you the same amount of time as we would if you were in store. We want you to be able to buy it from us quickly and easily. Plus, free shipping on orders over $100!

You guys have been busy! A second location in East Aurora recently opened at the end of summer. How’s it going up there? In July, we took ownership of Aurora Action Sports/Ski Rack in East Aurora. After a complete and total renovation of the retail space, we opened at the end of August. And, so far, so good. East Aurora is a vibrant community with local color and the right demographic for our business model. By slightly adjusting the product range and services of the existing shop to reflect the demographic of the area, we see tons of potential for Mud, Sweat n’ Gears. The store is located on Main Street in East Aurora, which is a highly desirable, high traffic area. It’s also in close proximity to several East Aurora attractions … (Videler’s 5 & 10, the historic Aurora Theater and the Elm Street Bakery) … which is an added bonus.

Year one of the Burton Step On is in the books. How were they received? And are they back for year two? We knew Step On was going to be a catalyst, but we didn’t think it’d be that big. We sold almost every pair. It was insanity. We had people calling from California, Texas, Alaska (and more) trying to get their hands on a pair. We even had a guy call from Manhattan who was going to drive overnight to get them (he didn’t, but you get the gist). The best part is, the system isn’t a gimmick. It works really well. We’re so pumped on Year 2 and beyond. The only drawback is we’ve got two pages of a legal sheet full of names and phone numbers - we’re assuming almost all 60 pair we’ll get this year are already accounted for. It’s having that big of an impact.

Will the product offerings and services differ between the two stores? While the two stores will be similar in branding, product selection and service, the East Aurora store isn’t an exact replica of the Ellicottville store. We’re looking forward to seeing the personality of the new store evolve as it relates to our new customer base.

You carry quite the snowboard selection. What’s the rundown on brands and styles? We think we’ve done a really great job of curating a strong, steady lineup of boards from the industry’s best brands. We want to be able to service the Day 1 rider to the ones laying Euroturns down on Yodeler or young guns ripping the park to everyone in between. Our brands - Lib Tech, GNU, Salomon, Burton and (new!) Jones allow us to do that. We’re a little biased, but we think we carry the absolute best this industry has to offer - and that includes boots, bindings and everything else snowboard. We also strive to be the shop that carries product other shops can’t or won’t, like Burton’s Mystery Fish, Lib Tech’s T-Rice Orca, the Salomon Sick Stick or Jones’ legendary Hovercraft. Pick from a massive array of boots and bindings, and you’ve got yourself one sweet setup. Helmets and goggles ... and go. Think about it like this: would you drive an unsafe car with bad windshield wipers? Of course not. We put a lot into our helmet and goggle selection, because you need to 1) be able to see where you’re going, and 2) be safe doing it. Giro, Smith and Pret (helmets) are offering MIPS (Multi-Directional Impact Protection System) into their lids, and we’ve got a wide array of models and colors. And for goggles, Anon, Giro, Oakley and Smith are our go-tos. Anon’s Magna Tech (magnetic interchangeable lens system) makes changing lenses super easy, and Giro’s VIVID (a lens technology developed with Carl Zeiss) gives you unmatched clarity on the hill. Last year’s inaugural Boardroom Banked at Holiday Valley was a resounding success. Is it coming back this year? And what can riders expect? The last few years, it’s felt like the vibe around Western New York was a little lacking. The Boardroom Banked was developed to bring some vibe back and give riders a chance to celebrate the sport we all love. So we did a banked slalom (riders are timed by running gates, turning on massive banks of snow.) We had over 100 (!) in our first year. It was amazing. It didn’t hurt it was 35º and bluebird, and it was a total team effort between us, Holiday Valley and our awesome brand sponsors. We are 100% dialed in for The 2nd Annual, coming back to HV on Sunday, March 3rd. We learned a lot from the first year … some things went as planned, some we had to fly by the seat of our pants. But after one year down, we think we’ve got it dialed in. We’ll have a little different format this year separate times for each heat, a little different course layout - but riders can expect the same level of high stoke that they got last year.

What’s new in the Ellicottville store for this season? At Mud, Sweat n’ Gears we take service seriously and have specialty services tailored for every skier and rider from a novice to elite racer. The MSG “Speed Factory” is home to the most innovative tuning machinery from Montana of Switzerland. This summer we replaced two ski and snowboard tuning machines with an automated Montana Challenge “service robot”. The new Challenge Robot will minimize turn-around time, while maximizing quality. We will now be able to offer a wider variety of base patterns and edge angles for all of our customers’ needs, whether they are skiers or snowboarders. Tunes start at $37.99 for a complete tune, and on up to $99.99 for our highest end chevron/directional patterns along with customers’ desired edge angles. We are very excited about our new Montana Challenge Robot, while our customers will be even more excited about the tune they received once they hit the slopes. Bring us your tired, gouged, dinged, rusted, and slow running equipment and we will bring them back to full performance. We can always count on MSG to bring in a fresh selection of lifestyle wear each year. What’s hanging on the racks for this fall/winter? So much newness! We carry a fun and trendy selection of lifestyle wear …. pieces you’ll reach for on and off the slopes. Lots of sweaters, flannels, casual jackets, shirts and tops, dresses, skirts, tights, hats, scarves, sporty bags that keep pace with your active agenda. Some of our fall favorites include anything from Kari Traa, Ryan Micheal, Newland, Fjallraven, Krimson Klover and a bigger selection of statement making pieces from Alp n’ Rock. Be sure not to miss the Mountain Hardware Women’s Pack Down Vest … it’s insanely comfortable, anytime/anywhere parka length vest certified to the “Responsible Down Standard”. For those not familiar with the Ski Yard, can you provide a little insight? Skiyard.com is our e-commerce website. We can be selling 24/7 to a limitless geographical area. From the customer’s point of view, an “always open” store is more convenient for shopping. The website forces us to keep more inventory on hand, which is beneficial to everyone. It means more choices for not only our internet customer, but our customers that visit Mud, Sweat n’ Gears. Fast shipping is something we pride ourselves on. We work very hard to process all our orders within 24 hours. If an order comes in before our daily FedEx pick up, we do our best to get it boxed up and shipped out that day. When the snow melts and the doors to MSG close for the off-season, what do you guys do to keep busy until the snow flies again? We’re all active, outdoor oriented people so spending as much time outside is important to us. Even though Mud, Sweat n’ Gears is closed May, June and July, we’re still on the scene prepping for the upcoming season. There’s always something to be done. There’s really never a dull moment!

JOHN HARVARD’S BREW HOUSE

WINERY OF ELLICOTTVILLE

Nestled within the slopes of Holiday Valley sits John Harvard’s Brew House, which is located inside the Tamarack Club. This well-known gem hosts 24 brews on draught along with a fully stocked bar and impressive wine list. From their kitchen comes a wide variety of culinary artistry with something to please everyone. The Brew House has everything from Firestone Pizza to Steak Bruschetta to exquisite Lobster Mac-N-Cheese, yum! Sundays are always a lively time with 5 televisions throughout, each equipped to show multiple games at once! The restaurant also has a Private Dining Room to accommodate larger groups and parties. Whether you reside in the area or are on holiday, John Harvard’s is sure to please your palate! SNOWED-IN MENU PICKS: Perfect for sharing after a day on the slopes, the Loaded Nachos will not disappoint, with both its generous portion size and flavor. Wash it down with a Southern Tier IPA.

No ski vacation would be complete without a little wine! Dominic Spicola and his son-in-law Sam Sheehy have honed their winemaking skills for years. Never mind the pile of medals that their wines have won in competition. Let your tastebuds be the judge. All of the winemaking takes place on the premises. If you pick the right day to go for a tasting (wine tastings available daily), a sample right from a tank or barrel may be your special treat! You can book a Taste and Tour combo or ask for a peek behind the curtain during your visit if you’d like to have a look around. SNOWED-IN MENU PICKS: The Pinot Noir has notes of coffee and chocolate and is light in body. In the 2018 NY Wine Classic, it took 1st place, meaning it is the BEST Pinot Noir in New York State! That is a huge accomplishment and something the Winery of Ellicottville team is very proud of. We also recommend Snow Fox - an extra sweet, crisp white wine with a touch of fruitiness, made with Niagara grapes.

MONROE ST. BRICK & BREW

ASHFORD JUNCTION DINER

Their philosophy is simple: create the best pizza team to give you the best PIE experience! Each hand-tossed pizza is served with the freshest ingredients and cooked around 1,000 degrees, then delivered to your table for pure pleasure. SNOWED-IN MENU PICKS: One of their more popular pies is the Pesto Tomato Pizza with basil pesto sauce, shredded mozzarella blend, romano tomato and fresh spinach. Or try their brick oven baked wings with your choice of sauce drizzled overtop or served on the side. Nothing like warming up the cold season with some New York style brick oven goodness! Hot, medium, mild, butter garlic, honey garlic, dry cajun (SNOWED-IN’s favorite!), sriracha, and BBQ. Throw in an order of Monroe Street’s signature breadsticks and wash it all down with a pint of Four Mile Brewing’s Allegheny IPA - loaded with citrus-packed hops and a nice malt background, served on tap.

Take a short drive four miles east of the village and you’ll find yourself at the Ashford Junction Diner, where Peggy and Jay serve up breakfast and lunch Wednesday through Sunday from 7:00am-2:00pm. Let them introduce you to a fantastic menu and many great friendships! SNOWED-IN MENU PICKS: Breakfast is where it’s at! Try the Double Belgium Waffle with strawberries & bananas, or the (New!) Let’s Go Buffalo Chicken Wing Omelette, or our favorite, the Reuben Omelette - all the fixin’s of a traditional Reuben prepared with their homemade Corned Beef Hash, Kraut and Swiss, served with kicked up Thousand Island sauce and Rye Toast. Once you’ve finished up your meal, swing over next door and check the Ellicottville Country Store, featuring multiple dealer booths displaying quality antiques from the last 150 years.

CUPCAKED

SILVER FOX STEAKHOUSE

A must-visit for those with a sweet tooth. Pick a single item from the cases to enjoy right away or customize a 6-pack to go. Everything from cupcakes to cake pops, cookies, cookie bars, brownies, rice crispy treats, truffles ... homemade healthy treats for your doggy pal too! For those planning a special event, the Cupcaked team specializes in custom cakes and dessert tables for weddings, birthdays, anniversaries, graduations, retirement parties, baby showers ... you get the point! SNOWED-IN MENU PICKS: There are over 50 flavors on their regular menu to choose from, or you can create your own combo! We love the Tiramisu cupcakes - chocolate espresso soaked cake with coffee buttercream frosting topped with cocoa powder and a chocolate covered espresso bean. Or indulge in the Irish Car Bomb - Guinness chocolate cake with Jameson caramel injection, Bailey’s buttercream frosting topped with Jameson caramel drizzle.

Dubbed Ellicottville’s original steakhouse, the Silver Fox has held a long-standing reputation as one of the most comfortable and elegant restaurants in the village. Nightly chef specials, some of the best cuts of meat around, paired with an extensive wine list make this a top choice for those in search of a finer dining experience. The Silver Fox is also known for its famous Martini Club, which takes place every Friday evening at 5:00pm - traditional and signature martinis paired with complimentary appetizers for the bar crowd to enjoy. SNOWED-IN MENU PICKS: We’d be kidding ourselves if we left off sampling one of their martinis (if you’re of age, of course) - the perfect night cap to a day on the slopes. We’re also big fans of their steak specials; give the Love Me Tender Love Me Blue a try the next time you dine at The Fox - two 4 oz. filets with demi-glace and chef mashed Maytag bleu cheese ... mmmm!

SNOWED-IN PRE-SEASON ~ 2018/19 SKI SHOW EDITION ... Page B-11

KATY’S CAFE

ELLICOTTVILLE BREWING COMPANY

Undoubtedly one of the most popular gathering places of locals and visitors alike is Katy’s Cafe, a charming spot serving up specialty coffees, teas and delicious breakfast and lunch options. SNOWED-IN MENU PICKS: Start the day with a Good Morning Bagel - fresh cut cucumbers, bacon and cream cheese on a toasted everything bagel. Or go for Katy’s Angry Burrito - two fried eggs, homefries, sausage, onions, tomato, smoked jalapeno relish, cheddar, chipotle aioli in a grilled cheddar jalapeno wrap. (Trust us when we say, you’ll be extremely full ... and happy, not angry.) If lunch is more your speed, we suggest the Holy Cow! Panini sandwich - sliced roast beef, red onion, provolone, with buttermilk ranch. Head out to Great Valley - just down the road from EVL - and get a taste of Katy’s 2nd location, Katy’s Fly-In! Or if you prefer to travel by air, land your wings on the airstrip across the road. The Fly-In serves breakfast, lunch AND dinner. Beer and wine too!

Nothing beats a memorable day on the slopes with your best buds or family by your side. Once the 2018-19 ski season hits and you’ve enjoyed your fun at our local resorts, head downtown to EBC for a snack, a few brews, and some quality time to share your snow stories. With plenty of apps to pass around (such as Belgian style mussels and Truffle tots), and a full menu of signature and seasonal beers, your group will surely enjoy the après experience to its fullest. SNOWED-IN MENU PICKS: Perfect for ski season is EBC’s Ski Bum winter ale - smooth with a moderate bitterness, brewed with centennial hops. Or saddle up to the bar for EBC’s Hot Chocolate - a full bodied stout that starts with rich, chocolately coffee flavors that are quickly overcome by savory spice from a ghost pepper infusion. It’s not nearly as spicy as you may fear, but it will certainly leave you with a warm tingling sensation.

MYERS STEAKHOUSE & INN

DINA’S

Bring your tastebuds to the party with Myers’ fabulous steaks, fresh seafood, comfort food choices and fresh salads. Myers is a truly unique and historical location just minutes south of Ellicottville. The current owners are only the 4th to carry the tradition of good food in a cozy lodge atmosphere that has been a part of the Salamanca area for 120+ years. SNOWED-IN MENU PICKS: Their steaks are coated with the chef’s signature rub and fire-grilled to order … would you believe us if we told you that no steak sauce is required? It’s true! And if you’re trying to take the healthy route, there’s never been a better excuse to “have your steak (I mean salad) and eat it too” … Myers Famous Steakhouse Salad plates fresh romaine and iceberg with tomatoes, cucumbers and onion, then topped with a 6 oz. steak, shredded Parmesan and homemade buttermilk onion rings … Heaven!

Dina’s offers a unique dining experience with an innovative range of cuisines. Guests are greeted by a contemporary, western ambiance with a little dose of 1970’s après ski. Serving breakfast, lunch and dinner 7 days a week. SNOWED-IN MENU PICKS: Breakfast: Huevos Verdes - two eggs, refried beans, cheddar jack cheese and tomatillo salsa on corn tortillas with avocado & sour cream. Pair it with a Snicker Doodle Latte. Lunch: The Colorado Veggie Burger - a healthy blend of nuts, cheese, sunflower seeds, black beans and fresh herbs on a toasted wheat roll with lettuce, tomato and chipotle aioli. Dinner: Cowgirl Ribs (choose a half or full rack) - dry rubbed and slow roasted ribs glazed with honey chipotle barbeque sauce. Or if pasta is more your style, go for Dina’s Pasta - strozzapreti pasta, artichokes, oven-roasted tomatoes, cannellini beans, arugula and Parmesan cheese tossed in a light pesto, olive oil, lemon and garlic sauce.

BIKE & BEAN

THE TEE BAR

Ride on over to Bike & Bean, where not only can you get your two wheels tuned after tackling the local trails, you can also get down with a variety of freshly made organic burritos, smoothies, and other random creations of the moment. All of their ingredients are locally sourced, just another one of the cool things B&B is doing to make sure you’re getting the best burrito for your buck. SNOWED-IN MENU PICKS: It goes without saying, you need to try a burrito - simply choose your size tortilla (flour and gluten free tortillas available), chicken, steak or veggie options, and a variety of other fresh fixings - beans, rice, salsa, fresh cilantro, spinach, and B&B’s staple guacamole made in-house. Fish Taco Friday and yummy quesadillas too! Looking for some clean, thirst quenching energy? Let Dennis and crew whip up a fresh, delicious smoothie for you, chock full of flavor and hand-picked local fruit.

The Tee Bar brings a fresh and fun vibe to the downtown business district, dishing up ice cream, milkshakes, sundaes, homemade waffle cones (with all sorts of delicious dipping and sprinkle options), slushies, flurries, root beer floats, and loads of candy! When cold weather comes in, you can warm up with a gourmet hot chocolate. The shop also boasts a huge selection of Ellicottville branded apparel and accessories caps, t-shirts, long-sleeves, hoodies, magnets, keychains, stickers, coffee mugs and more. SNOWED-IN MENU PICKS: you can’t go wrong with soft serve - a delightful treat no matter what the temp is outside! We’re also head-over-heels for their coconut pineapple ice cream - YUM! Come winter, visitors can enjoy an authentic Belgian waffled drizzled in rich, creamy chocolate. Like what you’ve read? Follow The Tee Bar on FB and Instagram and see what else you didn’t know you were craving!

WATSON’S CHOCOLATES

MADIGAN’S

For over 30 years, Watson’s Chocolates has called Ellicottville home. Right in the heart of downtown, Watson’s is known for its famous Sponge Candy along with hundreds of other delicious confections, all made with Fair Trade Certified Cocoa. Stop by and try something sweet form the case, enjoy an ice cream cone, or grab a few gifts for the special people back home. SNOWED-IN MENU PICKS: Sponge Candy! It’s an art and a science - that’s how owner Jim Watson describes the process of making their famous Sponge Candy. Made by hand in small batches, each sponge is carefully cooked in Watson’s traditional copper kettles by their highly trained candy makers. These crispy, tender chunks of caramelized spun sugar are then drenched in Watson’s wonderfully creamy chocolate. Bonus: it’s gluten free! Sponge Candy is no doubt Watson’s best seller. In fact, they produce approximately 35 tons of it annually!

Madigan’s has long been a staple as one of the most popular hot spots in the village. Whether it’s late night drinks and dancing, or a mid-afternoon break on their back patio, this bar can crank the tunes and serve up some creative concoctions. Charismatic bartenders, a pool table on both levels, and daily specials from the kitchen await your visit. Serving lunch Tuesday-Saturday from 11:00am-2:00pm; dinner Friday and Saturday until 9:00pm. SNOWED-IN MENU PICKS: Get out the wet naps for Madigan’s famous wings smothered in Grace’s even more famous house sauce. Other great options: Madigan’s Guinness-infused mac and cheese, or Jay’s Steak for 2 - Taste of Ellicottville award-winning entree steak au poivre turned into a shareable appetizer. Sliced strip steak over a bed of shoestring bacon parm fries and smothered in Jack Daniels cream sauce (you may not want to share!)
