The Daily Lunch Specials!

By Spencer Timkey Taking over the former Bemus Surf Club, EBC fans can expect the taps to start pouring around mid-June. Their expansion into the heavy Southern Tier now gives EBC three locations, each one offering beer lovers a totally different vibe and experience. If you were to take a lake town equivalent to Ellicottville’s ski town vibe, Bemus Point would be the match. Nestled right on Chautauqua Lake, it’s a favorite spot for boating, fishing and nightlife. The former Surf Club, which is dead center of town, closed a couple years ago - and such a cool building deserves to be alive. EBC owner Peter Kreinheder knows his new spot will bring the vibe.

Tues.-Sat. 11:30am-2:00pm

LIVE MUSIC Saturday, March 5th 6pm-9pm MICHAEL DISANTO

Dan Minner, EBC’s head brewer, said expanding is always exciting for himself and his crew. “We’ll have some guys that used to work here coming back, and it’ll be cool for some of the guys to experience something different,” he said. “There’s going to be two 16 tower draft systems, with a bunch of our beer and some other New York regional stuff. What we’re really excited about is being able to experiment with different brews with the nano system.” Minner also hopes to be able to offer some educational beer brewing programs at the new location. With the operation in Ellicottville as big as it is, it’s fun for people to see how the process is done, but difficult for them to be hands-on. With a micro system, EBC will be able to keep it a little more contained and easier for people to get involved with the process. “We’re so excited about the new spot,” Kreinheder said. “We think Bemus is the perfect place for us to expand to, because it’s so similar to the vibes in Ellicottville and Fredonia. It’s a big, open space, and it’s always fun to be on the water on beautiful summer nights.”

“We’re going to have a nano brewery system there, which I know a lot of the crew is excited about,” Kreinheder said. “We’re bringing some more guys on, and they’ll be on a rotation of who goes over there. It will also let us do some experimenting with different brews, and we’ll definitely be making some beers that play on the area. We’ve talked to the Chautauqua Institution about doing one.”

The menu will be smaller than the ones at the two other locations, but Kreinheder said there’s always room to grow. Seating capacity will hover around 170, while total bar capacity will hit closer to 300.

CORNED BEEF & CABBAGE ALL DAY LONG!

23 Jefferson St., Route 219, Ellicottville, NY 14731

EBC’s different locations play to the local theme, and are décor’d accordingly. The flagship in Ellicottville has high ceilings and beautiful rustic timber (playing on the ski lodge idea). The Chautauqua location will be more of a lake and water feel, with firepits and brass chandeliers.

“It’s a triangle of entertainment sort of experiment,” Kreinheder said. “It’s a college town thing (referencing EBC’s Fredonia location), a lake town thing, and a ski town thing. We’ve got all of our bases covered. We know that it will be a similar type of clientele that we get in Ellicottville and Fredonia.”

St. Patty’s Day!

Reserve Our Upstairs for Your Private Party

“Structurally, the building is awesome,” he said. “But aesthetically, we knew it could use some work. We’ve got Michael Nickolson (of Ellicottville) doing the renovations. There are these big, glass garage doors that will open to a pergola overlooking the water. And (hopefully) by next summer, we’ll have rooftop seating. It’s going to be really cool.”

A building sitting empty in any town is never a good thing, especially one like Bemus. EBC wanted to broaden its own horizons by expanding into the lake town - as well as helping the town itself.

By Spencer Timkey Holiday Valley prides itself on giving its visitors the complete experience - extensive terrain, great snowmaking, fresh groomers every night, lift capacity - and these are such reasons why Ski Magazine ranked HV 3rd Overall for Eastern resorts in 2015. But one facet of the Valley that spans all four seasons is what we do every day - eat and drink. Since 2009, Center Plate (the international food service organization) has complimented Holiday Valley to create a dynamic dining experience for every visitor. (And guess what? Because of that dynamic dining experience, HV’s food service was voted #2 in the East by Ski Magazine.) Throughout the early stages, the Valley’s food operation was a four-month swing that started in December and ended in March; a go-go-go concession mentality that catered to strictly skiers and snowboarders. But as the resort became more of a summer destination, that way of thinking changed. In 2013, Center Plate brought in Franco Brady, who boasts an expansive background in the food and beverage industry. “I’ve been working for Center Plate for close to 25 years,” Brady said. “Before Holiday Valley, I spent time running food operations in stadiums and various ski resorts around the country. This place - Holiday Valley and Ellicottville - is unique in such a way where it draws a large crowd but still maintains that ski town, small town vibe.” Under Brady’s leadership, Holiday Valley has continued its food service transformation from four-month to four-season. That requires a dedicated team of management, kitchen staff, waiters and bartenders to work in one of the toughest industries in the world. Keeping people fed is one thing - but making it into an experience is something totally different. “What’s really neat about this place is the longevity of some of our employees,” Brady said. “Shirley (Roblee) has been here close to 35 years, Mark (Stark) close to 15, Dave Seitz, our chef over 12 and so on. We’re constantly evolving to make sure that our guests are getting the absolute best experience they can.” Attention to every minute detail is what the staff at Center Plate prides themselves on. Brady stresses to his staff that the experience should make people want to come back again and again. “When you go to a place and after two or three times, the smiling face behind the bar calls you by name, then you feel welcome,” he said. “That really appeals to people. We’ve got some really great people working here that make our guests feel right at home, and that’s important.” Of all the places he’s worked, Brady said that Holiday Valley could be one of the best ones for an overall wedding venue experience. Between the three different lodges, the scenery, accommodations and ability to have the ceremony just a short chairlift ride to the top of the hill, it’s not just a wedding - it’s an event. “We’ve grown our wedding business substantially in the last couple of years,” Brady said. “Recently, Katelyn Mueller was promoted to director of catering sales, which she is most deserving of. Much of our increased business has been her putting in the day-to-day leg work, and putting together different wedding packages and reaching out to people. We’re featured in the popular wedding site The Wedding Wire, which gives us a very favorable ranking and the Couples’ Choice Award. From where Holiday Valley’s food service was 10 or 15 years ago to where it’s at now is pretty impressive. There are two segments of the year - the high volume output of the winter and the (just as busy) catering/banquet output of the spring, summer and fall. Brady manages the madness with a calm demeanor found in any successful GM. “We’ve evolved as an organization (Center Plate) and a resort to give our guests the best time possible,” he said. “Anymore, it’s about so much more than just the winter. We’ve got Sky High Adventure Park, golfing, the pool complex and weddings. I think weddings have been the most impressive - we’re now able to host close to 60 weddings a summer. When you do the math, logistically, that’s a true testament to the people in every department we have working here.” In a winter such as this one, we must tip our hat to Brady and staff - they’re 1st in sales across the rest of Center Plates’ Ski Area locations. That’s dedication from a team that loves what they do.

SNOWED-IN ~ MARCH 2016 ... Page 13

FROM POWDER TURNS TO PATIO SESSIONS ... THE CITY GARAGE CATERS TO A YEAR-ROUND LIFESTYLE By Pat Morgan Winter has without a doubt established a firm hold on Ellicottville and the region, with the slopes of HoliMont and Holiday Valley full of visitors who have all but forgotten the tumultuous start to the season. Sooner than later, however, the sun and warm temps will return to the area, with thoughts beginning to shift from powder turns to patio sessions. A few of the local specialty shops in town will be locking their doors for the spring and summer months, however, one location in particular that will NOT be closing up shop is The City Garage. For the past 16 years, The City Garage has remained committed to being a year-round lifestyle and outdoor equipment retailer. SNOWED-IN sat down with the gang at the C.G., who were excited to reveal what products will be awaiting those visiting in the warmer months. Located in the heart of downtown, The City Garage is popularly known for their incredible selection of ski equipment, goggles, winter apparel and accessories. Brands like Salomon, K2, The North Face, Lange and Scarpa are just a few of the premium lines they carry for winter enthusiasts. What helps to set the C.G. apart, is the time and effort they spend scouring shows - like Outdoor Retailer - to find brands that while are extremely functional and useful, the casual buyer would be interested in buying as well. And while many may consider the months outside of ski season as the “off season,” there is truly no such thing for owners/operators Elizabeth and Sean ‘Boss Wrench’ Lowes, and their dedicated, specialized staff. We caught up with Sean, fresh off of a day on the slopes - as he, just like the rest of his staff, live to use the products they sell. One of the most exciting new brands to Sean is YETI coolers. Known as the number one premium cooler brand in the world, they’re often referred to as the cooler “built for going toe to toe with hungry grizzlies.” In all seriousness, these coolers and their array of products are a must-have for hunters, fishermen, outdoorsmen, and even the “high tech redneck,” Sean affectionately revealed. His passion behind the brand was evident as he went through a few of the items they carry. Among them, the ‘Hopper’ - a soft sided, leak and tear proof cooler which retails for $299.99. Despite the seemingly high price, the cooler delivers amazing results, as it has the ability to keep ice frozen for days on end. (This cooler will NOT let you down during your three-day camping trip.) If a cooler of this magnitude isn’t quite up your alley, not to worry, the Garage also has some smaller everyday items from YETI. One of Sean’s favorites is the YETI ‘Colster’ - a can koozie with a metal exterior. Proudly labeling this item as “AWESOME!”, Sean elaborated that through meticulous testing, the Garage crew discovered the last sip from the ‘Colster’ was just as cold as the very first! Now that you know the product was tested and approved, you can pick up your very own for $29.99. Lastly, Lowes was excited to talk about a product he likened to an “old friend always there for him”, the YETI ‘Rambler’ - a ten ounce lowball, good for keeping your morning coffee hot, or your evening high ball cold. Starting at $24.99, the ‘Rambler’ comes in 20 and 30oz sizes, depending on your intake level. Ok, enough about coolers. I think you get the point that they’re pretty rad. Here’s a quick snapshot of some of the other stellar products on the C.G. floor – browse a variety of shoes, clothing and accessories unique to The City Garage, and perfect for all seasons. Men’s and women’s fashions from Kuhl clothing, The North Face, and Hippy Tree can be found adorning the racks. If you’re looking for footwear, Salomon, Birkenstock, and Keen have been their mainstays for years. New this year, they’re also spotlighting X-0, which produces minimalist sandals. In the market for a stand-up paddleboard? The City Garage has been a proud dealer of BIC Stand-up products for the previous six years, and can outfit you with the perfect board size, shape, and paddle combination for your needs. When it comes time to take a load off from all the adventuring you’ve done, The City Garage also has a variety of ‘glamping’ supplies from Stanley and Eno hammocks to make sure you end the day in style and comfort. We talk often in SNOWED-IN about the importance of shopping local. The City Garage is quite a unique, specialty shop one will only find right here in the village of Ellicottville. From their custom apparel and hats bearing the zip code 14731, to their exuberant staff eager to talk about the town and happenings at the local resorts, you won’t regret stepping foot inside their Monroe Street location to explore what they’re all about. Whether you’re looking to schedule a boot fitting, inquire about the latest ski technology, or simply want to find out where the powder stashes are at, you can give them a buzz at 716-699-2054 to pick their brains. You can also follow them on Instagram and Facebook, where you’ll get behind-the-scenes looks of the back shop, as well as stunning imagery of their crew out living the brand. Whatever you do, stop in, introduce yourself, and see why many make The City Garage a must stop each and every time they visit Ellicottville!

Buffalo Artist brings his Passion for Paint to Ellicottville; on display through March

One-on-One with Peter HEGEMAN: You were born in Colorado and spent a decade painting in Spain. What brought you to Buffalo and what is it about the area that keeps you in Buffalo? FOWLER: After a decade in Spain I suddenly found myself longing to reconnect with friends and family in the USA. I decided to make my way back but did not want to resettle in Denver, my hometown. Part of me felt I should try a stint in NYC but my heart just wasn’t up for such an adventure. A friend from Buffalo gave me a call and suggested I give Buffalo a try as it is cheaper to live in than NYC, close to NYC relatively, and has a strong cultural environment. There are many universities and two great art museums for example. I took his advice and seventeen years later I’m still here, with a wife and family, all started here in the snowy north. HEGEMAN: Do you only work with oils or do you practice other forms of painting as well? FOWLER: I work almost exclusively in oils although recently I’ve been experimenting with acrylic as an under painting. HEGEMAN: You have a degree in economics. Could you please explain how you went from a potential career path in economics to an artist? FOWLER: After leaving school with a degree in economics, I travelled to Boston with a vague interest in doing something in the ad business or graphic design. I had little qualifications for either but did land a job producing a monthly publication for a computer consulting firm. This job had me frequenting art stores for supplies to do paste up and one day the idea to buy paint grabbed my imagination.

.............................. PETER FOWLER | ORIGINAL OILS By Dash Hegeman There is no doubt that Western New York is an inspirational region. From its majestic four seasons to its proximity to landmark Great Lakes and Niagara Falls to its rich Native American cultural heritage and vibrant music scene, there is beauty that nearly everyone can appreciate found within the 716 area code. While there are plenty of artistic individuals in Ellicottville, one thing the town lacked was an actual art gallery. Or at least that was the case until the recent opening of Gallery 14731 - an exhibition space and artisan gift shop with the focus of showcasing an array of local talent. Currently being featured at Gallery 14731 are works by Buffalo’s own Peter Fowler (www.peterfowlerstudio.com), a seventeen year resident of Buffalo, NY who epitomizes the idea that with enough hard work and dedication, achieving a dream is always within your reach. You see, Fowler came to Buffalo by way of Spain where he spent a decade pursuing his goal of becoming, in his words, “the Hemingway of paint.” How does one end up in Buffalo after that long of a stay in Spain, you ask? The same way a recent college graduate from Denver, CO with a degree in economics ends up living in Boston and producing a monthly publication for a computer consulting firm, which is exactly what Fowler ended up doing after college. Fowler’s keys to success have always been a sense of adventure, a little bit of being in the right place at the right time and a lot of self-actualization. So the next time you find yourself walking through the village of Ellicottville, stop by Gallery 14731 at 5 East Washington Street and check out some of the pieces that Fowler has on display. See the ways that his time in Spain influenced his use of oils and how majestically he’s been able to take that style and meld it with his own unique Western New York flair. “All the work at the show is new and created for the event,” Fowler stated. “There is a whimsical piece in the show with birds and skiers tumbling down a run. I think it’s my favorite.” Fowler’s work is scheduled to be on display at Gallery 14731 through late March. Find information about Gallery 14731 on Facebook at facebook.com/ gallery14731/ or call 716-541-7485.

HEGEMAN: Building off of that, when you first started painting, did it come natural to you? Was it an immediate groundbreaking moment where you knew that you wanted to paint for a living? FOWLER: From the day I bought paint, I have been captivated by painting. I took some Saturday classes at the museum school in Boston and began my adventure with painting. I eventually left that first job in Boston and began a freelance graphics business with the then very new desktop publishing technology. This business eventually took me to San Francisco where I had my first painting show, and ultimately decided to travel to Spain and be the next Hemingway of paint. Spain is a long story but I maintained my painting lifestyle in Seville for ten years, drawing portraits and caricatures in the bars and beaches, plus scrambling at odd house painting jobs and more. I had some shows and modest success in contests both in Seville and Cadiz. HEGEMAN: Who are your major influences in the art world? Do you draw from any certain styles and try to incorporate that into your own? FOWLER: I have in recent years taken a long look at (J.M.W.) Turner’s work. I would say his landscapes have influenced me greatly. HEGEMAN: Would you say that Western New York influences your work greatly? Did Spain? FOWLER: I believe Spain had a big influence on my work. I spent many trips marveling at the work of Goya, Velazquez, Ribera and more. I love Goya’s work with the figure and it influences much of my work when I paint interior scenes with people in them. HEGEMAN: How familiar are you with Ellicottville? Do you go there often? What did you think when you were contacted about having your work in a gallery there? FOWLER: I have only been to Ellicottville a few times so this is a treat to be able to visit again. I have friends who spend lots of time there and they often tell me to get my work down there. Finally I have done it thanks to the wonderful invitation from Emily (Hettrick, owner of Gallery 14731). I am very excited to see how people react to my work. HEGEMAN: You have your own gallery in Buffalo. How long has that been open? How has owning your own space allowed you to grow as an artist? FOWLER: I’m really just focusing on showing my own work now and not trying to be a gallerist. I’ve found that artists are not great gallery owners, at least I wasn’t, but I’m using the space and name to feature my work. So far so good. It’s always a struggle. HEGEMAN: What new projects do you have in the works that people should keep an eye open for? FOWLER: I’m working on some commissions and starting some new work that I hope I can free myself up with and find some new direction.

menu pick of the month with Chef Thomas Kneeland

According to recent studies, about 60% of restaurants will fail in the first 3 years of business. You will need more than Grandma’s recipes to survive. New restauranteurs don’t realize how demanding owning a restaurant can be, and that bringing on experience will not always save a sinking ship. You will need to motivate, oversee and balance the staff, all the while managing food and labor costs, balancing checkbooks, planning menus, following health and safety codes and greeting customers, with the hopes that they will want to come back. Balance is important and can become frustrating for families, though sometimes dreams do come true with the help of loyal employees, hard work and perseverance. Tip Up Café celebrated its 36th anniversary on Feb. 16. Let’s take you back to the beginning: Judy and Ken Roush (pictured), who were married for just one year, had high hopes of one day opening a restaurant. Ken was a graduate of the Culinary Institute of America in Hyde Park, NY. Judy Morabito grew up in Buffalo. Her father was a “green grocer” owning “The Main and Transit Market” which supplied many restaurants with produce from the early 1950’s. Both Judy and Ken had a lot in common and were searching for the perfect location for their dream restaurant. They debated two locations: The “Lucky Dollar” (now the Nickel Inn) and “Herbie’s Derby” - a shot and beer joint in Ellicottville. Ken grew up just over the hill from Ellicottville, in Cattaraugus, NY, which influenced the introduction of Tips Up and Ellicottville as the winning location. The first year and the years to follow were deemed a success. (However, the hours were long; luckily they lived upstairs.) They started out with a chalkboard menu and began making delicious things to eat which people loved. Many of the restaurant’s signature dishes today are those from the early menu. Some of the menu items were served in a basket … that is until one day when local businessman John Northrup suggested that the food was too good to sell in baskets. Other popular dishes that have carried well through the years: Orange Whiskey Chicken, Manicotti, Veal Scaloppini, Chicken Parmesan – all undoubtedly customer favorites. Even the cheesecake today is that of yesteryears, and a very popular choice following the main course. Tips Up’s commitment to serving quality meals and making people happy is what it is all about. They are a success! Judy and Ken loved their new restaurant. What ensued? A family of course! Meryl and Anton were born. Both would work in the restaurant. Anton especially enjoyed working in the kitchen washing dishes, folding pizza boxes, and learning how to cook with his dad at his side. One time Anton told local Junior Lafferty, “My dad will pay you 5 cents to fold a pizza box and a dollar to foil wrap a case of potatoes.” What Anton liked best about working was getting paid so he could buy candy bars and take them on fishing trips with his dad. The family was committed and it shows today, as Anton and his mother Judy are now running the restaurant while building upon the past and creating new memories for the future.

This month’s recipe celebrates the traditions of their Italian heritage. The Florentines are said to have taught the French how to cook. Viva Italia! Catherine de Medici brought her cooks to France in the 16th century. She married Henry II of France who would become King. Her many Florentine cooks were schooled in preparing the most elegant dishes. She introduced these foods to the French table and the first ladies were welcomed to the dining table, decorated in the finest of silver, Venetian crystal, and culinary wonders. In the early 1800’s Italian immigrants from the coasts of the Mediterranean would move to America. Many of them settled in the San Francisco area. They brought with them the traditions of their homeland. The fishermen of these Italian port cities would make seafood stew on their ships with the catch of the day; they named it Cioppino meaning “chip in” or “little soup.” Cioppino became a staple in many Italian restaurants throughout the San Francisco area. Cioppino is made from what was on hand - clams, shrimp, scallops, Dungeness crabs - and combining it with fresh tomatoes, herbs, fish stock, white wine garlic and onion. Alioto’s #8 is the restaurant that is said to have brought Cioppino to the fisherman’s Wharf in San Fran. In 1925 Nunzio Alioto began to sell lunches to the many Italian laborers. After he passed away, his wife Rose would become the first woman to work on the Wharf. She opened Alioto’s Restaurant. It’s the oldest restaurant in the city and little has changed. Cioppino is featured at Tips Up Café. It is classic, simple to make and will have your guests talking about your culinary skills. Most importantly, you will need fresh seafood. Wegmans will have all the supplies you need. Buon appetito! INGREDIENTS: 2-3 T. olive oil 2 T. chopped shallots 2 T. chopped garlic Pinch of red pepper flakes Salt and pepper to taste ½ cup tomato herb sauce 1 cup white wine 1 cup fish stock (or clam juice) Fresh basil Lump crab 1 doz. uncooked shrimp 1 doz. little neck clams 1 live lobster (cut in half and cleaned) 8 large fresh dry scallops 1-2 6oz. fish fillet (such as salmon, tuna, halibut)

METHOD: Heat the olive oil in a large sauté pan. Add the clams, shrimp, lobster and scallops. Deglaze the pan with white wine when the clams begin to open. Add the tomato herb sauce, fish stock and pinch of red pepper flakes. Add salt and pepper to taste. Cover and simmer 5 minutes. Add the fish fillet. Simmer for another 5 minutes. Add the fresh basil and ladle into bowls. Serve with garlic herb bread, focaccia or sourdough bread. Enjoy.

ABOUT THE CHEF: Local area chef and long-time family friend Thomas Kneeland currently works as Executive Chef at Tips Up Café. He is the creator and franchise developer of the famous Tom’s Mom’s Cookies and is known for his award-winning chocolate chunk cookies supplied to the Ronald Reagan White House. In 1984 People Magazine awarded him with a first place for the best “fancy” chocolate chip cookie in America for his Pistachio Chocolate Chunk cookie. Tips Up Café is located at 32 Washington Street, downtown Ellicottville, NY, phone 716-699-2136.

Nature’s Remedy

natural foods market & holistic wellness center Naturopathic Modalities to Improve Your Emotional Intelligence By Kristina Barlow, N.D., C.S.T. Good, Bad and Ugly … emotions make us feel alive. Music, Movies, Art, Sports, Nature, Animals, Relationships, Work and Life Experiences all have greater meaning when our emotions can be felt and expressed freely. The goal in balancing our emotions is to neither kill them nor let them run wild. You know which imbalance you lean towards and whether or not you are open to the gentle work needed for greater emotional intelligence. “Emotional Intelligence or Emotional Quotient (EQ) is the capacity of individuals to recognize their own (and other people’s) emotions, to discriminate between these different feelings, to label them appropriately and to use emotional information to guide thinking and behavior.” Mindfulness requires stopping ourselves briefly throughout the day to recognize which emotions are on center stage. Although there are many different emotions to recognize, focus on these five at first: Anxiety, Fear, Anger, Sadness and Pretense (or Falsehood).

THE THREE-MINUTE “TIME OUT” ... MINUTE #1: THE POWER OF ESSENTIAL OILS Apply the chosen Authentic Essential Oil (or Oils) to the back of your neck then the palms of your hands. (See “Choose Your Mate” for which oil(s) to use.) With cupped hands, breathe in the oil(s) for one whole minute while meditating on or speaking aloud the associated affirmation. (See “Affirmations”.)

CHOOSE YOUR MATE ANXIETY Bergamot: Driven yet cross, critical and exacting. Nerves can become raw and edgy. Begin to suffer from digestive and skin problems. Relaxes the nerves and uplifts the spirit. Chamomile: Nervous and sensitive yet defensive, irritable and over-reactive. Feel and are misunderstood. Calming and relaxing. Helps with grief also. Lavender: Sensitive. Easily embarrassed. Inhibited. Vulnerable to other people. Relaxing and reduces heart rate. Ylang Ylang: Take on too much. Loss of control over stress. Forgotten how to let go and enjoy life. Tense, irritable and panicked. Releases tension, calms the heartbeat and the breathing patterns. Sandalwood: Induces a calm and meditative state. Helpful to sedate the nervous system and relax the brain waves. Others: Pink Grapefruit, Helichrysum, Lemongrass, Marjoram, Patchouli, Pine Needle, Rosemary, Sandalwood, Ylang Ylang, Breathe Deep, Refuge FEAR Clary Sage: Fear with nervousness. Become

run down and debilitated. May even lack the will to carry on. Pessimistic. Geranium: Have become stuck and fearful to continue to the next stage of life. Lost confidence in the natural flow of life. Irritable. Defensive. Peppermint: For times of transition yet do no know which direction to take. Pine Needle: Fearful of enjoyment and inner feelings that could cause conflict. Rigid, selfpunishment, tension and tight chest. Others: Lavender, Recover, Ylang Ylang ANGER Roman Chamomile: Irritable, tantrums, restlessness and hyperactivity. Marjoram: PMS. With anxiety. Weariness. Irritability. Rose: When the reality of romantic love doesn’t live up to your expectations that leads to bitterness and resentfulness. Frustration. Disappointment. Closed heart. Others: Changes, Purity SADNESS Cinnamon: Disappointment with Life. Feeling like an outsider. Cynical. Clary Sage: Will also have a family history of depression. Pink Grapefruit: Unhappy about your appearance. Easy weight gain. Selfconscious. Skin problems. Easily embarrassed. Feeling ashamed and unworthy. Jasmine: Trauma and grief. Trapped by lingering feelings of sadness. Lemon: Lack of self-respect. Loss of confidence. Unclean appearance. Rosemary: Cold, debilitated, weak and

AFFIRMATIONS Emotion Anxiety

Affirmation Every breath I inhale calms me and every breath I exhale takes away tension.

Fear

I am facing my fears with strength and courage.

Anger

I am able to diffuse my anger and channel it in a more productive way.

Sadness

Sadness is related to the opening of my heart. If I allow myself to feel sad, especially if I can cry, I will find that my heart opens wider and I can feel more love and more joy.

Pretense

I can be myself today, freely, authentically and without pretense.

nervous due to unresolved prolonged grief or emotional shock. Unable to express love freely. Others: Bergamot, Frankincense, Helichrysum, Oregano, Patchouli, Sandalwood, Inspire PRETENSE (Falsehood, Acting, Dishonesty, Façade) Eucalyptus: When it is time for a change in your life but fear change. Lack direction. Confusion. Feeling bogged down. Restless. Frankincense: Become overwhelmed by the responsibilities and material aspects of life. Does not make time to establish a harmonious lifestyle. Become cluttered in their atmosphere and wish they had time for creative and spiritual pursuits. Myrrh: Feeling “in the dark”. Struggling with part of your own personality. Loss of purpose and expression. Neroli: Appear to be in control but underneath anxiety, worry and stress. Inability to express true emotions. MINUTE #3 Jin Shin Jyutsu is a Japanese self-healing art. (See chart below.) With the weight of a quarter, gently hold the finger of the opposite hand that is associated with that emotion. Switch hands and do the same thing on the other side. The hand that is holding the one finger is like a jumper cable, energizing the finger that regulates many functions of the body. Continue breathing. Feel the subtle energetic shift. Which finger likes to be held?

str es s,

Once the emotion is identified, apply The Three-Minute “Time Out” in order to connect with the emotion, let it move through your body and then release it. This process, in conjunction with clean eating, detoxification, exercise and counseling, will prevent feelings from getting stuck in the body, resulting in disease. Releasing trapped emotions is freeing and will allow you to enjoy all that is present in your life.

… Ahem … Hold up. For those of you not necessarily into the whole running thing (but can handle a little bit of distance), how does a beer break with some running in between sound? Anyone who loves beer can find solace in the Beer Mile race, where participants chug a beer every quarter mile. Four times the fun, 4 times the suffering with a beer buzz bonus!

And who can we thank for the Happy Half, 5K and Beer Mile race? Gwen and Doug Bush have been organizing fun and competitive events for a number of years now. Gwen says they got their start because of Doug’s passion for Ironman events. “Once he started competing, there was no turning back,” she said. They realized they liked the whole atmosphere of the races and the people who it attracted. “We just clicked with everyone from the promoters and racers, to the volunteers.” The Bushes are well-known Ellicottville locals and big supporters of EVL commerce and off-season business development. The idea of combining their love for competitive events and the town they live in just made sense. One thing lead to another and before they knew it, they were sketching out plans for the Happy Half’s predecessor, the EVL Half Marathon (which debuted in October 2014). “We chose to run half marathons rather than full marathons because we felt they reach a broader range of runners and abilities,” Gwen explained. The Bushes decided that first local event needed to have a theme. “Ellicottville is so pretty in the fall; we decided to have the race around Halloween,” said Gwen. “Between the fall foliage and the racers, volunteers and spectators all dressed in costumes, it’s a pretty colorful event with some spooky surprises along the course.” Following two successful EVL Half Marathons, Holiday Valley approached Doug and Gwen to see if they were interested in running a race at Holiday Valley in the spring of 2016. After some planning and collaborating, the Happy Half Marathon was born. This race is designed to be just a little bit easier than the EVL Half. (Think of it as the EVL Half’s friendly twin.) Gwen mentioned a few times that they really wanted to appeal to younger athletes, and that they couldn’t host these events without the help of many local volunteers.

“We have a wonderful network of local support,” she said. “Without our volunteer groups, it would be difficult to give our competitors the support they need out there on the course. Volunteers are a big part of what makes an event work well and we have the best.”

The Happy Half is one example of an “off-season” event that can ultimately result in bringing visitors to town during the slower months. Ellicottville has a lot to offer even when it’s not snowing. Hopefully events like this can grow to be weekend-long attractions that generate some additional tourism dollars. Speaking of attractions, the Happy Half’s after-party itself is enough to attract a crowd! Southern Tier Brewing will be on site with plenty of their delicious craft brews. Awards, games, music and food will also be waiting for those who cross the finish line. As for the Beer Mile, it’s an international competition that is tracked online at www.Beermile.com (so it’s totally legit!) Gwen guarantees there will be plenty of fun surprises for everyone at this year’s Happy Half. You can register online now at www.happyhalfrun.com. Packet pick-up will take place Friday, May 6 between 4:30pm and 7pm and on Race Day from 7am-9:30am at Holiday Valley. Water stations and restrooms will be provided on course. If you decide to make a weekend of it, Holiday Valley is offering racers discounted room rates. For more information, including course maps, race tips and more, go to www.happyhalfrun.com.

FRANK CALIENDO

Comedian to take the Stage at Seneca Alleagny Resort & Casino

A Conversation with Frank HULICK: This year is certainly going to give you plenty of comedic material with the Presidential candidates. CALIENDO: Well the Trump stuff is pretty much constant (laughs) … whether it’s something he actually says or something people take out of context, they’re both equally as funny. It’s been a field day of stories. The bit I’ve been doing is … you can’t do him in a debate because he argues like a five-year-old. (laughs)

HULICK: (laughs) CALIENDO: I try not to take political sides to any of this because there are people

that love him and people that hate him, and I try not to alienate the audience so much; I just want to make them laugh and forget about their problems. Like with Trump, if someone says, “Hey Donald … you can’t do that” and he says, (Frank goes into his Trump impression) “Oh yeah? Well you’re a doodie head … you’re the stupidest, stupidest thing I’ve ever seen!” (laughs) ... It works so well. I saw something the other morning where Mitt Romney was talking about Donald putting his taxes out there and Mitt Romney didn’t put his taxes out there, and I love the way Trump just ends his point by saying … “Dope”. (laughs)

HULICK: (laughs) Yes, he does do that. With Trump you either love him or hate

.............................. SATURDAY | APRIL 2 @ 7pm By Melanie Hulick “Life’s a Sketch… And then you die.” The phrase above is what you see as the title of comedian, impressionist and actor Frank Caliendo’s “funny” bio. Still, as you start to read it, you’re thinking you’re going to learn about what he’s all about, what makes him tick, his accomplishments in chronologic order, and then you read the first line … Born at the age of three in northern Illinois … and even though you may not be familiar with the comedian, he has drawn you right in. That’s how Caliendo works, and on Saturday, April 2 he will work his comedic magic for us when he makes a stop at Seneca Allegany Resort & Casino to share what he calls his “silly take” on people and events. With a career resume that includes stand-up, dead-on impressions of entertainers, Presidents and sports figures, as well as his work on television on MADtv and Fox NFL Sunday, his idea of success is two-fold; make people laugh while being a dedicated husband and father. I had the pleasure to talk to the very down to earth and very funny guy recently and he told me about how he got started and how his “goal” switched with the births of his daughter and son. Caliendo shared a couple of his impressions on the phone with me during our conversation and I have to say, I have never heard anyone do Donald Trump as dead-on as he does. I told him that and he told me how funny that was that I said that because a month or two ago he was emailing back and forth with comedian Dana Carvey and he said, “Dana gave me the greatest compliment of all time, for me at least … he told me he thought I do the best Trump of anybody.” We went on to talk about what we can expect from his show and why he considers himself a weirdo when it comes to his career. I think when it was all said and done, Caliendo summed it up best … “I’m sure there are plenty of people out there that do better, specific impressions than me … I’m just trying to make people laugh … and that’s all it really is.”

..............................

Tickets to Frank Caliendo’s performance at Seneca Allegany Resort & Casino in Salamanca start at $25 and can be purchased through www.senecacasinos.com (click on Seneca Allegany). For more information on Frank Caliendo, visit www.frankcaliendo.com.

him like you said, there’s really no middle ground or in-between. CALIENDO: It certainly seems that way. I don’t try to talk about the policies or get political about it. It’s the same way when I do George W. Bush or Clinton or Obama; I basically talk about them as a person or the character they are, the way they talk or something that’s silly about them based on something they’ve done. I’m not gonna talk about what he says about the Muslim faith or anything like that. If I’m gonna talk about Trump building a wall I’m gonna say something like, (speaking as Trump) “I’m gonna build a wall between these mashed potatoes and this gravy, and I’m gonna make the mashed potatoes pay for it.”

HULICK: (laughs) That’s really funny! CALIENDO: I’d rather just go silly instead of political. People like Jon Stewart

or Bill Maher do political and take sides, and that is what people watch them for, but I don’t enjoy that.

HULICK: What or who got you started in comedy? CALIENDO: I went to school for broadcast journalism and graduated with a

degree from the University of Wisconsin-Milwaukee and I thought … hey I wasn’t good at asking the questions, but I loved watching Jonathan Winters, Robin Williams and people like that answer questions on a Tonight Show, and that was what I wanted … to be on television and be a talk show guest. I got on stage once or twice before I graduated and it was terrible, but then I graduated and started trying it for real … I went on a comedy club stage and they asked if I could do 15 minutes and I said no, and they said well try to. So they hired me and basically I started working right away. It was crazy. Then I got onto a college circuit within a year and started making money to make a living on and I bought a Honda Accord and started driving around the country doing these college shows. Then from there, probably another year later, I got on TV and got a development deal for a show with Warner Bros., then came MADtv and then the NFL on Fox. It was always kind of little steps, so I’m kind of a weirdo.

HULICK: (laughs) What a thing to say. CALIENDO: (laughs) Well the thing is, my whole life is … all I want to do is go

watch my kids play, my daughter and son. I coach my son’s flag football team. I just want to be with them. My agent wants me to do this and that and I’m like why? You want me to go audition for a part in a movie that I probably won’t get that’s gonna shoot on the other side of the world for two months for the money I could make in one night doing my comedy show? You want me to leave my family for that? You’re crazy. I have no interest. My kids and my wife are more important to me. So, that’s why I say I’m a weirdo.

HULICK: That’s actually refreshing to hear, because there are many entertainers

that look at it the opposite way of how long can I be away from home. CALIENDO: Right. And they lie about it too, saying things like … I can’t wait to get back to my kids and my wife … after I shoot this movie for eight months. It’s like, where are your kids now? Oh, they’re with the nanny. What is that?

HULICK: What can we expect from your show? A little stand-up and impressions? CALIENDO: Well my stuff always kind of intertwines with each other, so people

don’t even know I’m telling jokes in between. I’m not going to say … OK now I’m going to do Donald Trump. I’ll just talk about him and that will lead into him arguing like a five year old. So I’m kind of acting the joke out. It’s a very clean show and the guy that opens for me is very clean as well. I do that on purpose so that anyone can come and see my show. I don’t swear … I’m probably cleaner than most prime time TV shows. So if you get offended, then you’re probably from the 1930’s or something.

CELEBRATE YOUR IRISH - GET YOUR GREEN ON! Saint Patrick’s Day is Thursday, March 17, and the saying goes that everyone is a little Irish on Saint Patrick’s Day. It is truly a day of celebrating Irish history, ancestry, traditions and customs - like wearing green.

Spring brings a sense of awaking, with an elusive color of “spring-time” green, the sounds of song birds, and new birth throughout the Forest.

No one does the wearing of green better than the Allegheny National Forest as it awakens from its winter slumber. As the trees start to bud, an elusive color of bright yellowish green (we’ll call it “spring-time green”) starts to color the branches of thousands of trees within the forest. Springtime green can only be experienced for a short time. As the leaves mature they take on a richer, darker green, a green that will last until the first frosts of fall. But let’s not talk fall - we just changed over the calendar to spring! One of the best ways to enjoy the re-birth of the forest is to plan a road trip along the Longhouse National Scenic Byway. Selected by U.S. Today as the number one scenic drive in Pennsylvania, you can easily access this 27-mile looped byway from Route 219. Follow Route 219 to the intersection of Route 770, just south of Bradford. Turn onto Route 770 and head west; it will become Route 59. As you pass the Bradford Ranger Station, you are now entering the Longhouse National Scenic Byway. Plan to stop at the Ranger Station; you will find all types of information here about the Allegheny National Forest, including topo maps for trail enthusiasts. Continue on Route 59 west toward the Allegheny Reservoir. Along this stretch of the loop, you pass the trailhead for Morrison Trail. This trail has two loops: the 5.3-mile Morrison Trail Loop which passes boulder fields and a forgotten homestead, and the 8.3mile Rimrock Trail Loop, which drops to the shore of the Allegheny (Kinzua) Reservoir. About a mile past the Morrison Trailhead is the entrance to Rimrock, a magnificent rock outcrop and overlook above the Kinzua Creek Arm of the Allegany Reservoir. This area offers picnic areas and hiking trails.

As you drive the Longhouse National Scenic Byway, you will cross the

Allegheny (Kinzua) Reservoir

on Morrison Bridge before turning onto Longhouse Road

As you continue on Route 59, you will see the sign for the Kinzua/Wolf Run Marina on the right, just before crossing the Allegheny Reservoir on the Morrison Bridge. Immediately past the bridge, turn left onto Longhouse Drive. The access road to Jakes Rocks is about a mile up Longhouse Drive. This impressive rock outcrop offers a spectacular vista over the Allegheny Reservoir. Longhouse Drive continues a winding course passing the Dewdrop Recreation Area before merging with Route 321. At the intersection of Route 321, take a left to visit the small village of Kane, Pennsylvania. In Kane, you will find a variety of family-owned restaurants, interesting shops to explore, Flickerwood Wine Cellars, and CJ Spirits Craft Distillery for touring and tasting. If you are into crafting (and if you aren’t, well, you should be as March is national crafting month), visit the shop named Zanadu located at 105 North Fraley Street. Zanadu offers a wide selection of fabrics, including quilting fabrics and supplies, along with everything for the home sewer or crafter. They also offer a wide variety of children’s craft kits for different ages and interests.

Return back to Route 321 and head north. This road re-enters the Allegheny National Forest just outside of Kane. You’ll be returning to the Byway about eight miles from Kane where it intersects with Longhouse Drive. Continue on Route 321 north past Red Bridge. This is the head of the Kinzua Creek Arm of the Allegheny Reservoir. You will pass Red Bridge Campground and Elijah Run, which has a fishing pier, courtesy dock, and shoreline trial. Continue north on Route 321; the byway follows the reservoir for a short distance and then begins to rise into the highlands through a beautiful forest of hardwoods and hemlocks. Nearing the top of the plateau, you will pass the Old Powerhouse Museum, an original timepiece from the glory days of oil in this region. Route 321 then connects to Route 59 at the Bradford Ranger Station. Here you will turn right (heading east) to return to Route 219.

CATCH A BIG ONE - TRY YOUR LUCK FISHING Elijah Run and Red Bridge Campground are places you’ll want to return to during fishing season. The Allegheny Reservoir in the Allegheny National Forest offers the angler a variety of fishing opportunities from small native brook trout to trophy fishing for muskie, pike and walleye. The Allegheny Reservoir is a 12,000-acre impoundment on

If you would like to learn how to fly-fish, the Kinzua Fly Fishing School is an affordable fishing “camp” option for both beginning and intermediate fly-fishers, male and female, ages 12 to adult. MAPLE WEEKEND 2016:

THE SWEET TRADITION CONTINUES An iconic symbol of Western New York’s autumn, the majestic Sugar Maple tree produces some of the most brilliant reds, golds, and oranges as autumn fades to winter. Then in spring, that same tree yields some of the best maple syrup around. In WNY and throughout the state, there are more tappable maples trees than in any other state in the America, according to U.S. Forest Service Forest Inventory and Analysis data. With all those sugar maples, it’s nearly impossible to resist Maple Weekend! The annual, free event takes place March 19-20 and April 2-3, 2016 from 10am-4pm each day at maple producers across the state. The sugar maple holds starches in storage during the winter, which change to sugars as spring approaches. These sugars are released into the tree sap. When a tree is tapped, a clear liquid runs out. When that liquid is boiled down, approximately 40 gallons of the sap produces one gallon of maple syrup. New York Maple Producers manufactured 601,000 gallons of maple syrup in 2015, one of the highest production rates ever, up from 546,000 gallons in 2014. “During Maple Weekend, Western New York families can learn all about the production of maple syrup and other related products. A list of participating sugarhouses and maps can be found online at www.mapleweeekend.com. You can learn about tree tapping and boiling, see displays, and of course, have a chance to taste some syrup,” says Bridget Smith of Smith’s Maple Farm in Hamburg. Smith is the Western New York Coordinator of Maple Weekend. Techniques vary from producer to producer - some use state-of-the art methods while others are traditionalists. Many maple producers also offer additional activities. One popular route in WNY stretches from Niagara County down through Cattaraugus County. Visitors can head from Wolf Maple of Middleport to Sweet Dream Maple Farm of Corfu to Merle Maple Farm of Attica to Arcade Center Farm Pancake House to Wright Farms of Farmersville, and top things off with pancakes and more at Sprague’s Maple Farms of Portville. Across WNY, all-you-can-eat pancake breakfasts will take place over the two weekends. A list of participating sites is available at www.mapleweekend.com. And consider this: there’s something more to the taste of sweet, delicious maple syrup - it might just keep you healthy. Recent research has uncovered some significant health benefits. University of Rhode Island researchers found 20 compounds in maple syrup that possess anti-oxidant and anti-inflammatory properties, which have been shown to fight cancer, diabetes, and bacterial illnesses. Other established health benefits of pure maple syrup include the calcium and potassium content - a quarter cup of maple syrup has more calcium than the same amount of milk and more potassium than a banana. This winter, while many were enjoying Mother Nature’s unusually warm temperatures, WNY’s maple producers were hoping for more of a chill. The unseasonably warm December and January’s warmer-than-usual temperatures may lead to a lower yield than 2015. But the colder temps this February have helped. “Sugar house activities continue no matter what the weather, and this year, 2016, we will produce some very tasty syrup,” noted Smith.

SNOWBOARDERS RACE TOWARDS USASA NATIONALS AT COPPER

Members of the Holiday Valley Snowboard Team request your assistance in making the trip to Colorado

Holiday Valley’s Snowboard Team has been training hard all season under the direction of James Wangelin. And all their hard work has paid off. Three members of the team will be traveling to Copper Mountain, Colorado this April to compete at the United States of America Snowboard Association (USASA) Nationals. Pictured above from left to right: Danielle Landey age 12, Harley Maloy age 12, and Ariella Landey age 7 have been competing in the Western NY series as well as Ohio for a bid to the National competition. On Feb. 21, the athletes received four gold medals each, which clinched their spot at Nationals. These young athletes have had all their competitive training on the slopes of Holiday Valley. Ariella and Danielle began skiing at two years of age and at 4 years old joined the Rangers program at Holiday Valley. While in the Rangers program, both girls switched to snowboarding. The girls have just joined the competitive program this year. Harley also began skiing at the age of two, then switched to boarding at 3. He has been training at Holiday Valley for the past three years. All three athletes enjoy riding and have caught the competition bug. James Wangelin, their coach, has set up a “gofundme” page to help the young local athletes in their endeavors to travel to USASA Nationals. James explained, “We need $6,000 for flights and accommodations to attend the National event this April. Any donations will be publicized as a thank you for contributing to our young athletes.” For a direct link, go to www.gofundme.com/5bqzbxjw or go to www.gofundme.com’s homepage and search “Holiday Valley Snowboard Team Fund.”
