Bring Craftsmanship into Your Home By Spencer Timkey Snowmaking is a tough business. It’s cold, it’s labor-intensive and oft-times can be dangerous. But every winter, Holiday Valley’s crew is out on the front lines, giving us the best snow they can. Dan Aldrich has made snow for over 20 years. The Ellicottville native’s roots are firmly entrenched in the resort’s snowmaking operations, and he’s seen the evolution of manmade and its impact on the overall vibe of the resort. “I’ve been around these guns a long time,” Aldrich told me. “But every year, we adapt and get better. The technology the resort has adopted over the past couple of seasons - namely, the HKD Automated systems - make our jobs easier and the quality of the snow superior.” A typical day for Aldrich starts around 11:15pm, when he arrives at the resort and sits down with the previous shift’s supervisor. They talk for 20-30 minutes, going over where they’re at with water levels, the moves for the night and what needs to be priority.

“Every night is different,” he said. “One night we might want to focus our efforts on a particular section of the resort. My guys and I have a brief on staying safe and what we’re going to do, then we get suited up and head out. Once we’re out, we’re hustling.” Each gun needs checked at shift change, so the crew will disperse on sleds to their assigned sections. While they’re doing that, Aldrich is cruising around adding guns and checking water flow. The primary goal? To make sure all the water is online for maximum efficiency. Over the past couple of seasons, the resort has bought and replaced its current Ratnik snowmaking guns with HKD Automated towers and guns. HKD, the Massachusetts-based manufacturer and supplier of energy-efficient snowmaking technology, allow the crew to make the best possible snow at the best possible times.

“Man, what a game changer these HKD guns are,” Aldrich said. “The overall efficiency in getting the water out on the hill is better 10-fold. It’s more visual, less hands-on and gets over the hill more quickly. Back in the day, we’d have to worry about dragging a gun to a specific spot, dragging a hose out and dealing with it that way. Now, we can turn the guns on with the tap of the smartphone and use our manpower much more efficiently.” The addition of more automated HKD guns every year - 237 out of 611 total guns at HV are HKD automated - makes the overall experience for the skier and rider much more enjoyable. The technology is geared towards keeping the snowmaking away from the guest, so they’re not encountering those pesky wet piles or snow sticking to their goggles. Aldrich told me that in years past, the limited snowmaking capability would be focused on the Yodeler-Mardi Gras-Candy Cane loop, which is perennially the first run(s) open at the resort. However, automated snowmaking allows the crew to distribute the snow much more evenly across the entire resort. “Before, when we had marginal temperatures, we could maybe run 20 guns,” he said. “Now, we can run 100-120 and focus on east, west, and the variety that the resort is so famous for. It’s the same amount of water, but the guns are strategically placed to get key runs open. When that happens, we’ve got a happy crew. But most importantly, we’ve got happy guests.” I asked Aldrich about the camaraderie of the snowmakers. He told me it’s not like working with other people - it’s like working with family. “We all have each other’s backs,” Aldrich said. “Pretty much everyone comes back, year after year. We all love making snow and putting the product out that everybody loves, and that’s our common bond. Everyone knows what to expect out of each other, and I can’t say enough about that family feeling. We’re here to do a job, but it doesn’t feel like we’re working. We just want to provide the best possible snow for people to ride and ski on. And don’t worry - we test out our own product plenty.”

“Good times, good friends, good health to you and the luck of the Irish in all that you do.” Although this Irish Christmas proverb could (and should) be applied to every party and gathering you attend this holiday season, none fit the bill better than Ellicottville’s annual Irish Christmas.

Through the seasons, Ellicottville has evolved into a snowsport enthusiast’s dream. Between the two awesome ski resorts, shops, bars, restaurants, businesses and people, it has become a destination for creative curation. On Saturday, Dec. 12 from 12:30pm-2:30pm, you’ll have a prime opportunity to celebrate the winter lifestyle right here in our amazing town.

You can walk into a big box store or a small business and buy the same item. The same brand, the same label, maybe even from the same distribution truck. The tangible difference doesn’t stem from the product - it stems from the experience in buying it. The ‘grab-and-go’ mentality is what big box stores feast on. Walk into E-Ville Spirits, and you can throw that mentality out the window.

Slated for Friday, Dec. 4 from 6-10pm at the Ellicottville Brewing Company, Irish Christmas is a celebration of hope, health and holiday. It couples benevolence with laughter; its impact is philanthropic and dynamic. It even goes as far as a tractor and trailer doctored up with Christmas decorations parked in front of EBC, where you can leave your gifts that will be donated. Before it became the iconic event it is today, Irish Christmas was an idea stemming from one man’s attitude that no child should wake up on Christmas morning with no presents to open. Ellicottville’s Bob McCarthy, the mastermind and driving force, said that above all else, this event fosters hope. “Everyone deserves something,” he said. “If a child wakes up on Christmas morning and doesn’t have a gift, then that’s tough going. The idea behind Irish Christmas is to get the community involved and to feel the spirit of the holidays.” Irish Christmas, which has been hosted at the Gin Mill since its genesis, moves to EBC this year for one sole reason: more room. “As such an iconic event, it simply outgrew our regular spot,” McCarthy said. “So many thanks to Ed and Maribeth Rick at the Gin Mill, whom have been our generous hosts for so many years. Now, with a larger location, we’ll be able to accommodate the hundreds of people that come out for it.” One of the most exciting additions to this year’s Irish Christmas will be a ‘Taste of Ireland.’ Much like Ellicottville’s Taste, local restaurants will create and serve some delicious samplings native to the Emerald Isle. Madigan’s, Tip’s Up, Villaggio, The Silver Fox, Katy’s Cafe, EBC and Hamburg’s Ilio DiPaolos will all be on location. Music will be provided courtesy of Ellicottville resident and County Clare native Jerry Dixon. And a dear friend of McCarthy and local legend Hughie Dunne, Andy Guthrie, will be making the trek from Ireland on Dec. 1 to serenade the lasses with his Irish ballads. A fan favorite at Irish Christmas is the ‘Pie Auction,’ where 10 pies are donated by locals to be auctioned off with a handmade wooden piece from McCarthy. Last year, he made pie boxes. This year, he’s thinking outside the proverbial box. “The pie boxes were great, but they’re pretty specific to what you can use them for,” he said. “So this year, I built chests. They’re all made with wood from an older local barn, and I think as a utility piece, they’ll be much more versatile. It would make for a great Christmas gift or something for your child’s bedroom. They have a lot of character.” McCarthy continued, “The money stays here, as do the gifts. Everything that’s left over goes to the Cattaraugus County Sheriff’s Department. There’s no charge to the event, unless you’d like to sample some fine food or a nice beer from Dan (Minner, EBC’s Brewmaster). It’s an unbelievable event, and we can’t wait for it.”

Winter Wildlands Alliance, an Idaho-based nonprofit, actively works to promote ways to help preserve the outdoors - the biggest being its Backcountry Film Festival. With showings across the North American continent (as well as Asia and Europe), WWA collaborates with filmmakers to showcase everything that’s best about being outside. The festival is sponsored by two of Ellicottville’s newcomers, as well as one that’s been around for over 30 years. Nick Pitillo’s Villaggio Restaurant plays host, while John Rounds of Adventure Bound spearheaded the development and execution. The Boardroom Snowboard Shop and its new location - The Boardroom on Main - are also sponsors. Rounds’ father Chris owned Ellicottville’s original outdoor authority that shares the same name. An avid outdoorsman himself, John’s appreciation for spending time outside is evident in the product mix he carries in his store. Not to mention, the crew he’s assembled are as well - Steve and Deb Wilkinson, who have opened multiple outdoors stores; and Don Boehmer, whose kayak and boating store recently moved into the former Nouriche. “We’re excited for the opportunity to further immerse ourselves into the Ellicottville community,” Rounds said. “There’s an obvious and palpable love for the outdoors in this town. We’re going to get together and get excited for winter with good food and good people. It’s going to be a fun event.” The trailer for the film features fat powder skis spraying fresh snow at the camera, spins off natural terrain on a snowboard, and rock climbing amongst frozen waterfalls. For those with a love of snow, the footage makes you feel some major feels. Villaggio, occupying the space of the former Barn Restaurant, will provide the food, drinks and atmosphere. If you didn’t know any better, you’d think the newest restaurant in town had been there forever. Pitillo’s crew instantly makes you feel like you’re part of the family, and the two-tiered layout of the restaurant allows for great viewing wherever you’re at. “When John (Rounds) approached us about hosting the event, we couldn’t say yes fast enough,” said Spencer Murray, Villaggio’s General Manager. “Most of the crew and I are pretty new to town, but we’ve been welcomed with open arms. Nick’s roots here definitely play into that. From what I’ve seen (of the trailer) this is going to be an awesome film and will get everyone super excited for winter.” There are two tickets available: VIP and General Admission. VIP, at $50 per guest, grants you access to Villaggio’s upstairs, with food and two beer tickets. General Admission, at $30, gives you seating downstairs with food options as well as two beer tickets. Celebrating its 13th anniversary on Dec. 18, Ellicottville’s prominent wine and liquor store sells by coupling stories and experience with an unheralded love and enthusiasm for the product on its shelves. Owner Shannon Carscallen has a family history rooted deep in the industry, and her passion is immediately evident. “My entire family has been in the liquor industry for over 75 years,” she told me. “I was working in a different industry, and my father called and asked me to come into the business so he could retire. The idea for the store in Ellicottville came shortly after that. My sister and I grew up in Buffalo, but our parents had a house here, so we’ve got an understanding and appreciation for what the village is about.” After forming the name E-Ville Spirits, Carscallen spent her time acclimating herself to the liquor industry, learning its ins-and-outs from her father and sister. With that came her attendance at multiple wine and business classes. The main goal of the store was, and is, to educate people about wine. “I wanted to show people that at any price point, you can get a great bottle of wine,” she said. “As the store grew through the years, we were eventually able to add an upstairs education room so we could host classes about the differences of wine. Eventually, Bob (Duke, who has been with her since the beginning) and I saw the industry trending towards single malt scotch and bourbon, so now we offer classes on those as well.” Carscallen’s experiences in traveling the world and visiting different wineries is what sets her apart from any other liquor store owner. Instead of speaking to people on the science of the wine - people tend to get bored with the jargon of such - she assimilates stories of her travels, animating the conversation with the sites and sounds of Italy, Germany or South Africa. “People love to hear stories,” she said. “When I’m at a food pairing, I want to be able to explain to people why the grapes used in a particular wine match so well with the dish in front of them. They can then take the information and pass it along in conversation at a dinner party or gathering they go to. I like to give the wine a personality.” She’s quick to point out that the store wouldn’t be what it is today without the help of Duke and Lindsey Bishop, another wine expert. A comfortable experience for the customer - as in, dealing with someone who knows everything and then some about the product they’re selling - is going to give them ample reason to come back. Head into E-Ville Spirits on Dec. 18 to help them celebrate their 13th anniversary. They’ll be offering 15% off all fullpriced wines. Head-to-Head with HEAD Reps from all over the territory will be making their way to Ellicottville for Holiday Valley’s Demo Day. This month, SNOWED-IN sat down with Mike Reilly, sales rep for HEAD (available locally at The City Garage and Mud, Sweat n’ Gears).

DEMO DAY | SATURDAY, DEC. 19 By Mark Flanagan Buyer’s remorse has got to be in my top ten list of worst feelings of all time. I’m stingy at the best of times, so ruefully staring at my latest mistake, asking “Why did I buy this?” will put me in a funk for at least a day or two. The mourning period lasts longer in direct proportion to two things: how much money I spent on it, and how often I use it. This is no doubt true for most of you out there. Remorse over a pack of gum could last a minute, but a bad purchase of let’s say, a car, will likely haunt you to your grave. Ski and snowboard equipment is no exception. For the avid skier, the wrong pair of planks will nag you every time you put them on snow. It can become a nightmare. Luckily for all of us, there is a surefire way to mitigate this potential disaster, and its name is: Demo Day. On Saturday, Dec. 19 at Holiday Valley, Demo Day will kick off in full swing. From 9am-3pm, tents will be erected in the Clocktower Plaza in front of the main lodge. The atmosphere it creates is unique – a small commune of like-minded skiers and boarders all feeding off each other’s positive energy and stoke. Over twenty ski and snowboard reps from major brands will be present this year, including Elan, Volkl, Atomic, Rossignol, Salomon, Head, K2, Mervin Manufacturing (Lib Tech, GNU and Roxy), and Burton - to name a few. “Demo Day is a fantastic way for people who want to ‘try before they buy.’ Consumers have the ability to test product from the industry’s best brands,” said Spencer Timkey of The Boardroom Snowboard Shop in Ellicottville. “From a retail perspective, Demo Day is dynamic. It allows our customers to try stuff that we might not necessarily have in our own demo fleet, but have on our showroom floor for sale. And don’t forget, the reps deserve a ton of credit. We’re on the very western edge of the territory, and most of them are coming from New York or New Jersey.” One of the best parts about this event is that all demos are FREE to try. So long as you show up with a valid ID and a credit card (to make sure you don’t run off with the pair of K2 Press Skis that you just fell in love with), you can product test all day long on as many different set-ups as your little heart desires. Of course it goes without saying that you will need a lift ticket to enjoy the slopes. Demo Day is also a great way for us as consumers to communicate with our local shops. The City Garage, The Boardroom, Dekdebrun’s and Mud Sweat N’ Gears will all have people out there on the snow. Trey Clauss of The City Garage had a lot of positive remarks about Demo Day: “Hands down, this is the best day of the year to try out new skis. Trying out so many different pairs in a day means that you’re going to come across something you like. And it’s great for us, too, because we basically get to run our shop out there on the snow. Having that immediate customer feedback lets both the shop and the brand reps make sure you walk away with something you love.”

FLANAGAN: How long have you been repping for HEAD? What did you do before that? REILLY: I’ve been with HEAD for 8 years now, between covering the Southern New England and now the Mid-Atlantic region. I’ve been an independent sales rep for 15 years FLANAGAN: What does being a company rep entail? REILLY: Being an independent sales rep is probably not as glamorous as many think. We travel throughout the territory in the fall, meeting with all of our accounts to educate the staff on our latest product line. We attend fit days to ensure young athletes are getting the proper size/flex, so they can have a successful race season. In the winter, we spend most weekends doing on-snow events for consumers, followed by the order season for the next year’s products. The biggest challenge is covering the territory such that we’re profiting. We buy all our products, samples, and demos ourselves, and we cover all our own travel expenses. Depending on our clients’ needs, optimizing our time on the road can be tough, but it’s crucial to our ability to make a decent income. It’s a demanding role. I have had some awesome opportunities to travel to Austria and see the factory, and we usually hold our annual sales meeting at one of the big resorts out west where we test all the new skis, however I sometimes think people believe that’s a big part of the job, and really it’s not. FLANAGAN: How crucial are product demos in the ski industry? REILLY: Demo days are a great way to get people on the latest and greatest gear. Demo skis are always available either at the resorts or your local ski shop throughout the ski season. FLANAGAN: What’s your favorite new ski for the 2015-16 season? REILLY: HEAD just launched a new line of Monster skis with Graphene and our WorldCup sandwich construction and waist widths of 83, 88, 98 and 108. On piste stability with off piste versatility. Our SuperShape category is still the leader in performance carving and our women’s Joy collection continues to impress with its lightness, balance and control. FLANAGAN: What set-up are you riding on this year? REILLY: I’ve dialed up a pair of Monster 88’s with an Attack binding for this season. FLANAGAN: Favorite Pro in the game? REILLY: I think I’d go with Ted Ligety, Mr. GS. He has truly changed the technique of GS skiing.

There is a chill in the air of Ellicottville, which is always a welcome feeling this time of year. By the time this publication goes to print, the HoliMont Mountain Crew will most likely have fired up the guns and started to make snow. IT’S ALMOST TIME TO THE LET 2015-16 SKI SEASON BEGIN! A lot has happened since we closed for the season last April. Some of the changes are pretty noticeable (nicely refurbished Greer lift and an overhaul to Dina’s at the Mont). Some are a little less obvious but just as important (more snowmaking capacity on Exhibition). But all were made to make the 2015-16 season one to remember!

NEW EQUIPMENT

In an effort to make summer upkeep easier and as a way to continue to enhance the winter grooming, HoliMont added to its PistenBully fleet by purchasing a Greentech PistenBully with a flail mower attachment, which made mowing the slopes over the summer a much faster endeavor.

BEGINNER AREA

While it won’t be open for the 2015-16 season, over the summer the Mountain Crew started preparation work to start the relocation of the Chipmunk lift for the following ski season. Starting in the 2016-17 season the beginner area at HoliMont will be located near the Sunset area and will allow the Snowsports School to work with beginner skiers and snowboarders in a more efficient and effective manner.

WESTMONT RIDGE

This past summer saw the construction of the first single-family house at WestMont Ridge. It was great to see the project from its initial ground breaking stages all the way through watching siding go up on the house. There is no doubt that the owner will be very pleased with their new ski-in/ski-out property and we are looking forward to seeing the other 18 landowners begin construction on their properties.

GREER LIFT UPDATE

The Lift Department and the Buildings & Grounds crew spent a portion of the summer refurbishing the Greer lift. And it looks pretty darn good if we do say so ourselves. Each year we focus on one lift to overhaul and this year Greer got the special attention. It now joins Exhibition Express, Cascade, and Meadow in the list of newly updated HoliMont lifts. Greer is a favorite of so many Members and guests; if you’ve never been on it, take a ride this season. You’ll be glad you did.

Speaking of views ... the one from the top of what will eventually be the new terrain park at HoliMont is phenomenal. If you like the view from the top of Greer, you’re going to LOVE this view. It’ll give you an entirely new perspective on Ellicottville. So while the slope won’t be open this coming winter, it is ready to have a chairlift installed when the time is correct. This season be sure you make your way over to Sunset to take a look at what the future of HoliMont has in store for you!

SNOW MUCH FUN!

in the Enchanted Mountains of WNY

Do you tire of winter before it even begins? Or how about just after the holidays? Think that there is nothing to do when it’s cold outside besides sit under a blanket and try to keep warm? That’s not what we think here in Cattaraugus County, the Enchanted Mountains of Western New York. We have many reasons to love winter and the other three seasons of the year. We are at the top of the list for counties who receive the maximum snowfall in NY State. It’s no wonder we know how to have fun in the snow! How does cascading over the snow on a trail-dominating snowmobile sound? Or exploring the back woods, breaking your own trails on your snowshoes? You can do all that right here, and we’re sure you’ll soon warm up to winter with all the fun activities available right in our backyard. With December upon us, that means snow can happen at any time! The trails open up right after hunting season ends - the week before Christmas vacation. Plan ahead to enjoy the upcoming season of fun by calling for a free snowmobile map. Our trails will take you through deep woods freshly covered with snow, around small towns with businesses that welcome snowmobilers, and sometimes even over a frozen lake! The map will guide you throughout the miles and miles of trails (almost 400!) in Cattaraugus County and its neighboring counties as well. You won’t have to worry about getting lost, and if you don’t feel like travelling far, the trails here offer more than enough dashing through the snow. The number to call for the map is 1-800-331-0543. If you don’t have a snowmobile, we’ll be happy to recommend where you can rent one - even ones that will be delivered right to where you are staying. We can also recommend places for you to stay right off the snowmobile trails. Allegany State Park has winterized cabins that range from rustic to high-end cottages that include all the amenities of home, besides food. You can spend the day out riding in the snow, then come back to a comfy, warm cabin. If you have a large family or your snowmobiling club wants to vacation together, try one of the newly restored Group Camps in Allegany State Park. The cabins are all located together, there’s plenty of bathroom space (handicap accessible also) and a large kitchen/dining area so you can all have meals together. Prefer the slower paced enjoyment of the wintry outdoors instead of riding snowmobiles? You can take up snowshoeing or crosscountry skiing. We have plenty of places for that as well! Allegany State Park has a large trail system for cross-country skiing, better known as the Art Roscoe Trail System. This network of trails offers almost 25 miles worth of loops, giving you opportunities ranging from a casual walk to an all-out workout. You can rent skis right across from the trail system in the Summit Warming Hut. Snowshoes are not permitted on this trail system, but are allowed anywhere else in the park. Find your favorite summer hiking trail and attempt it in the winter. Compare the differences of the seasons and add even more memories to your favorite hikes. You can also cross-country ski at Holiday Valley in Ellicottville, known for its downhill skiing. Cruise the ridgelines at the top of the mountain or circle around the golf course down below. Both offer spectacular views. They also rent out cross-country skis if you are in need. Pfeiffer Nature Center boasts miles of trails just waiting to be explored. The trails are well-groomed and kept clean all winter long. They have rentals, but the number is limited, so call ahead. There are two properties of Pfeiffer Nature Center: the Lillibridge Property and the Eshelman Property. The Lillibridge Property will take you through an old growth forest with red and white oaks estimated to be around 150 years old. Thorton Thruway leads you to the Southern border of the property where you can see one of the oldest Black Gum trees in the East - more than 500 years old! The Eshelman Property offers hikes of shorter distances but goes along a creek then up a hill for a great view of the valley, before meandering by the meadow. A great place to see animals! We also have ice skating, ice fishing, and plenty of indoor options for you as well, which can be discovered at the website below, including upcoming events! No matter what you decide to do during winter, you will find yourself shouting ‘Let it Snow!’

Singer Gary Puckett to kick off another year of great music at Seneca Casinos

A Conversation with Gary HULICK: There are some really interesting “did you know” facts about you. Do you mind if I get your comments on a couple? PUCKETT: Not at all! HULICK: Of course you are formerly of Gary Puckett and The Union Gap. You had six consecutive gold records and sold more records in 1968 than any other act, including the Beatles. PUCKETT: It’s really true. It’s kind of a neat little badge of honor to wear all these years later. But I always tell people the Beatles were just having a bad year. (laughs) HULICK: (laughs) Your first five releases went gold. Not even Elvis accomplished this. PUCKETT: Well that’s what I’m told and it seems the history books say so. You know, what can I say … (laughs) … it’s just one of those neat little achievements. HULICK: It’s an amazing little achievement! You played a command performance at the White House for Prince Charles and Princess Anne by special invitation of President Nixon? PUCKETT: Yes, I actually did! And what a day that was. It was a lot of fun and we got to meet the Prince and Princess and all the political figures of the day. They had a fireworks display that went on for an hour right over the White House.

By Melanie Hulick The unmistakable voice of Gary Puckett, formerly of Gary Puckett and The Union Gap, will fill the air at The Bears Den at the Seneca Niagara Casino on Friday, Jan. 8 at 8pm. Puckett became the front man of The Union Gap and during the late 60’s had a series of huge ballads that topped the charts, including “Young Girl”, “Woman Woman”, “Lady Willpower” and “This Girl Is A Woman Now”. The group disbanded in 1970 and Puckett went his own way and started a solo career. Talking with him recently about his career, it led him to recall some of the memories that stand out vividly in his mind. Puckett, who considers himself a political junkie, went on to tell me about the day he spoke to President Nixon one-on-one on the White House lawn. “We were there to perform for Prince Charles and Princess Anne and I remember how the President looked gray and ashen, not well at all. I came to realize later that he was embroiled in the Watergate scandal and maybe the Vietnam War was weighing heavily on him. I don’t know exactly, but it is a memory in my mind that will always be imprinted as clear as can be,” said Puckett. “I can’t imagine having that job and having to deal with the pressure they are under, regardless of which President it is.” We went on to talk about how huge his hits became and how they are still a big part of music history. “You know, I’m just a lucky guy who has a voice that goes out and sings some songs that were made very famous by the public. The public is the one that elevated them to the status that they are,” stated Puckett. Asking the singer if he had a particular show that he considered to be his best he replied, “The best show is one where the venue is terrific and there’s great communication between me, the band and the audience. It doesn’t matter what venue, inside or out … if you can laugh together or maybe cry a little bit together, then that is the best show.”

HULICK: You have a song on your “Live 2002” album called “Home” dedicated to the men and women defending our country. Do you perform that in your show? PUCKETT: I do. It’s gotten to the point where I can’t do the show without doing that song because people have come to know the song well and it’s really a tribute to the veterans and the active service people. It’s always a special moment in the show. HULICK: What was the best advice someone gave you along the way that you took? PUCKETT: Gosh. That’s a pretty tough question. Sometimes practical applications of something is your best teacher, as well as the mistakes you make along the way. It’s hard to say what that advice was for me … but if I was ever going to give advice to somebody it would be to have great faith in a higher power and to have faith in yourself, have a positive attitude and work hard and learn as much as you can about the field you are in. HULICK: What was the best advice someone gave you that you didn’t take … and wish you had? PUCKETT: (laughs) Stay away from that woman over there! (laughs) HULICK: (laughs) But did it work? (laughs) PUCKETT: (laughs) There you go! (laughs) There are some things you can’t resist. (laughs) Like chocolate … women … HULICK: Funny how you say chocolate and women together. (laughs) Are you saying that they go hand in hand? PUCKETT: (laughs) Yes, they sure do! HULICK: If you had it to do all over again, would you do anything differently? PUCKETT: That’s just a tough question. I like the place I came to be. Fortunately I like the person that I’ve come to be. Now had I made some other decisions at that point in my life … yes, maybe I’d be more successful … musically maybe I’d be a bigger star … maybe I would have sold more records over the entire career. You can conjuncture forever. And if I were to go back, knowing what I know now, obviously I would do some other things differently. I would make some different decisions. But the decisions I made are the decisions that brought me where I am and for the most part I think God has been good to me. HULICK: Describe for me your perfect day. PUCKETT: Wow! My perfect day … wow! That’s a very good question. The perfect day for me would be knowing that the world is more right with itself than it is.

We’ll be serving up all our favorite seasonal plates, along with a few new offerings such as Creole Tuna over Tomato Stewed Rice served with Fried Okra and Baby Corn. For those extra chilly days when you just don’t have the ambition to head outdoors, you can make this delightful meal in the comfort of your own home. Let’s get started …

2-½ parts paprika 2 parts salt 2 parts garlic powder 1 part pepper 1 part onion powder 1 part cayenne pepper 1 part oregano 1 part thyme

Now let’s move on to the baby corn and fried okra. At certain times you may be able to find fresh baby corn and okra at your local supermarket, but for this application the canned versions will be just fine. (A little lesson in baby corn: There are two methods for producing baby corn - either a special seed variety developed to produce more ears per plant, or early harvest of everyday corn. For the latter, farmers will usually harvest the immature 2nd ear from the top, and leave the top ear to fully develop … bet you didn’t know that!) Prepare the baby corn as you would any other corn dish. For my application, we will season with oil, salt and pepper and grill it. (Ready for another harvesting lesson? Okra is cultivated in tropical regions around the world and first appeared in the 12th and 13th centuries in Egypt. It became commonplace throughout the Southern United States by the 1800’s. It is harvested when immature, eaten as a vegetable, and is the key ingredient in the hearty stew known as “gumbo”.) To prepare the okra, dip it in buttermilk and dredge in a cornmeal and flour mixture. Be sure the oil in your pan is hot - test it by putting a few drops of water in the oil; if it crackles and pops, it’s ready. Fry the okra to a crispy and golden brown color and set aside.

Next let’s make the rice … follow the directions on your rice package; any type of rice will do. Here at John Harvard’s we use jasmine rice. To tomato stew the rice, we will combine Creole seasoning, diced tomatoes and a bit of tomato paste. Be sure to drain your diced tomatoes of all the liquid; this will avoid flawing your liquid-to-rice ratio. Add the tomatoes and tomato paste when your rice is 90% done cooking and stir the mixture to create flavorful and colorful rice. Set rice aside.

Here we go with the tuna … Blacken the tuna steak with your Creole seasoning we made during step one. The tuna steak will cook fairly quickly, about 2-3 minutes per side and is best served medium-rare. Let the steak rest for 3-4 minutes to preserve juices and flavor. Cut the steak on a bias about ¼-inch wide. Plate your tomato stewed rice first, followed by the tuna steak and garnish with fried okra, baby corn, and sriracha if you prefer a bit of “spicy” on your tastebuds.

First up is the Creole seasoning for blackening the tuna steak. We’ll use this seasoning to spice up your tomato stewed rice too. A very easy recipe for the seasoning is as follows…

Can you recall funny scenarios in your life resulting from INSOMNIA? “Many years ago I had to do a presentation. When I got to the meeting and opened my briefcase, I realized I had been carrying a backgammon board all morning.” … “One morning I caught myself putting both contacts in one eye then almost mistaking nail glue for contact solution.” … “Going to sleep and forgetting the dogs were outside in the cold.” … “Putting the dustpan in the refrigerator and the milk on the floor near the broom.” … “Constantly looking for my glasses and wearing not one, but two pairs on my head.” … “Going through the drive-thru for coffee and ordering from the garbage can.” … Finally, from a new mom: ”My husband loves hockey and he really wanted to take me to a hockey game. All I wanted to do was sleep but I knew how important it was, so we went. I also should tell you I am not a hockey fan. It was the end of the game, I was fading fast and they scored! Yay! I was thinking, ‘Oh thank you, God, there isn’t an overtime!’ The screen lit up and slowly G-O-A-L came across. I read it and looked to my husband and said, ‘Who’s Al?’ With utter disgust, he said, ‘It says goal, not Go Al!’” Recalling the crazy things we do can be funny now, but not so funny for the current insomnia sufferer. Causes of Sleeplessness: stress, toxicity, poor diet, loneliness, lying, withholding the truth or burying secrets, racing thoughts, anxiety, depression/grief, angry/irritability, lack of exercise, lack of sex, alcohol overconsumption, medications – prescriptive and over the counter, travel, shift work … Many solutions to insomnia causes are obvious. Here are the three most common forms of sleeplessness that I have observed in my practice along with their respective naturopathic protocols. They always have hormonal and biochemical components associated with the dysfunctions.

MOST COMMON FORMS OF SLEEPLESSNESS

WHAT YOU CAN DO

The Toxic Body: Ability to fall asleep and stay asleep BUT chronically groggy and tired in the morning … This usually occurs from not getting enough R.E.M. sleep and from poor nutrition and accumulated toxicity. To help the body promote R.E.M. sleep, it is important to support serotonin production. This can be done with 5-HTP, B vitamins and magnesium. The focus is then on detoxification, first from the colon, then the liver and finally, yeast overgrowth. Lastly, dietary and lifestyle changes have to be made which can be offered to you in chart form at Nature’s Remedy or through my weekly In.Form classes.

Regardless of the cause(s) of your sleeplessness, I have observed 5 universal therapies that can help any type of insomnia.
