As Springville lifers, the tight-knit, small-town vibe had been so good to them - and without it, they wouldn’t have had the success they’ve enjoyed in owning Concord Crest Golf Course. The most pressing question? How to give back to so many people. Small businesses are inundated with donation requests at every point of the year. While every cause is worthwhile, you can only give so much to so many before it starts to significantly eat into your bottom line. The Ploetz’s, assisted by the help of their daughter Anneliese, concocted the perfect solution: Mission Monday.

The concept is simple. At the beginning of every summer, an independent committee would review the donation requests and plan them for a particular Monday throughout the summer. On those days, Concord Crest would donate 10% of their sales to the charity or cause. Everyone is a winner. “We make sure that every charity or organization that we give to is local,” Anneliese Plyler said. “Throughout June, July and August, we’ve got these people that really touch you with their stories, their struggles. And it’s the sort of thing where you can’t wait to give back.” Every May, they use the power of word of mouth and social media to begin the nomination process. Instead of asking people to simply recommend a cause, they ask them to give the reason. “There was a local family, and the son was affected by hydrocephalus. The doctors told the father to abort the child, and he is now 2-years-old. So WNY Hydrocephalus has been a huge part of his life. It’s stories like that, where you feel the personal connection and see how big of a deal it is.”

The largest checks Concord Crest have donated are in the $300-$350 range, and while Mother Nature plays a huge role, the outpouring of support from the local community of golfers has been outstanding. This year’s chosen nominees include the SpringvilleChaffee Hospital Foundation, Love, Inc. of Springville, WNY Hydrocephalus, Miles for Smiles (out of the John. R. Oishei Children’s Hospital), the Springville/Concord Area Food Pantry, the Youth Organization of Springville, and the Comforting Hugs Foundation. Want something to really tug at your heartstrings? The Buffalo Underdogs Rescue, slated for July 30th. BUR takes dogs from shelters (and a kill shelter in Eastern Texas) and brings them to their new, adopted homes in Buffalo. “We encourage these organizations to come on their Monday and set up a table. It puts a face to a name for our golfers, and lets them know who they are supporting. Our mission is to help the community in supporting their (the organization’s) mission.”

Shared Retail Space: A Growing Trend

Temps are in the 80’s, flowers are in full-bloom, hiking trails are packed, and local businesses are bustling. This can only mean one thing summer has officially arrived in Ellicottville! What better way to celebrate the season than by welcoming two new businesses: Moriarty’s Mustard and Flowers off the Farm. These incredibly talented, entrepreneurial ladies are making their debut on the Ellicottville retail scene at their new shared-space location. Their creativity and drive will sweep you into the summer breeze before you know it! By Anjanette Nicolazzo

MORIARTY’S MUSTARD A 40-Year-Old Family Recipe Makes its Way Into Ellicottville

FLOWERS OFF THE FARM Farm Fresh Bouquets: Pleasing to the Eye, Stimulating to the Senses

If you’re interested in highlighting your next culinary masterpiece, whether it be with a delectable four-course meal or something as simple as a dip or dressing, the sweet and spicy taste of Moriarty’s Mustard might fit the bill, and may even clear your sinuses! This forty-year-old recipe has traveled through Kathleen Moriarty’s family, and has been graciously passed down to her.

When single mother Nicole Polino and her three young boys decided to remain on their local Ellicottville farm a few years back, they combined their strength, desire, and overall grit, and set a goal to become agriculturally zoned; they achieved this after two years of hard work! Nicole knew there was a need in the community for a passionate local florist and flower provider who was close by and family driven. With the help of her boys, she created “Flowers off the Farm.”

As mustard demand from her friends and family increased over the years, her new retail location at 10 Washington Street in Ellicottville just made sense. “I used to make it in high school and college, and friends loved it,” she continued, “… gold crack, they called it. I used to spend Easter at a friend’s house, but they wouldn’t let me in without the mustard!”

“We grow an abundance and variety of flowers for any occasion, ranging from personal home gardening, mixed pots and fresh-cut bouquets, to seasonal flowers, wreaths, annuals, and perennials,” Nicole said. However, her true specialty is in floral arrangements for events such as weddings, funerals, anniversaries, birthdays, graduations, and occasions of the like.

The history of Moriarty’s Mustard runs deep. “My mother adapted it from another recipe she had, and started selling it in Buffalo before my brothers and I were born. At one point, a local set of brother thieves broke into my parents’ house and stole her ‘mustard money,’ and a TV. They left the TV on the window sill because it wasn’t worth anything!” Kathleen said. Her father lovingly had t-shirts, baby onesies, and aprons made for her mother. In fact, Kathleen still has the apron and a t-shirt.

Nicole’s farm fresh bouquets are infused with not only spectacular blooms, but also fresh eucalyptus, rosemary, and a variety of fragrant herbs. Her arrangements are known for being pleasing to the eye and stimulating to the senses. “Each piece created is unique and prepared to please,” she said. Although her farm is about five minutes outside of the village, Nicole has a flower retail and pick-up location right in Ellicottville at 10 Washington Street, a shared space with Moriarty’s Mustard.

Kathleen’s retail location is a stunning work-in-progress. Beautiful hardwood floors coupled with black cabinetry, white countertops, and a relaxed vibe really make this a place she feels happy in. In fact, her space will also double as a retail/pick-up location for Flowers off the Farm, a local, family-owned farm and florist. The mustard shop/ floral pick-up can be visited by entering through Ava Grace Fashions and going straight through to the back.

As her business continues to grow, the latest addition to her flower services is the exciting launch of their Flower CSA (flower share). Nicole explained, “Similar to farm share, we provide fresh cut bouquets for 10 weeks, July 19 through September 20. Bouquets can conveniently be picked up at our new flower location at 10 Washington Street.” Ten weeks of fresh flowers is $200, and limited shares are still available. Call 716-258-8655 for details.

In addition to her new shop, Moriarty’s Mustard is now featured in a dish on the menu at The Ellicottville Brewing Company on Chautauqua. Kathleen said, “It’s a really nice open-faced sandwich on rosemary baguette with beef tenderloin, brie, and red wine cured onions. Stephen Brooks, chef at EBC Chautauqua, did a great job putting the dish together … that guy knows what he’s doing!”

“Also new this year, I’m adding a sunflower field for all to come and delight in the view of our beautiful and humble farm. This will provide a memorable experience for all to enjoy. It will also make a great opportunity for photographers to have a stunning background, for wedding photos, family photos, and so on,” Nicole said. By appointment only, their field will be free of charge.

Kathleen’s famous mustard can also be purchased at her brother’s butcher shop, Moriarty Meats, The Farm Shop in Buffalo (corner of Lexington and Ashland; their dairy farm is actually in East Otto), Nature’s Remedy, and the Winery of Ellicottville. Well-known for being a hardworking and outgoing mother, Nicole has had a love of horticulture from a young age. She and her sons aspire to be self-sufficient and provide a good, honest service to their community. Along with flowers, they harvest their own produce, meat, and eggs, and enjoy homesteading as much as flower growing. Much of this passion can be credited to Nicole’s history of working in greenhouses and on farms.

“As far as how I use it, I’m a purist. I enjoy thinly sliced ham with provolone, mayo, tomato, and Moriarty’s Mustard! Everybody else seems to put it on just about anything … using it as a marinade for grilling, salad dressing, mixing it with tuna, hard boiled eggs, beef stew, pancakes (yes!), or just by the spoonful,” Kathleen said.

“I love the charming and small village that is Ellicottville, with its big sense of community and spirit,” Nicole said. “When you patronize or refer our business, you are supporting a local, family-driven farm. I’m honored to be a part of this passionate group of small businesses, and I want to work fervently with and for my family and community so that we can continue to operate a reliable business with a strong reputation for many years to come.”

All mustard-making aside, Kathleen is a simple girl who operates on a simple principal: “love your family and a small circle of friends, open your eyes and ears, and pay your bills.” A true food lover at heart, Kathleen enjoys practicing law, starting and ending the day with her man, biking and walking, keeping an eye on her nephews and niece, and generally enjoying the simple things in life. LOCAL CONNECTION EMPIRE STATE RIDE FOR ROSWELL

A group of local road cyclists will journey across New York State in the fight against cancer By Spencer Timkey

500 miles. 7 days. And one of the most impressive fundraising rides in the country. Piggybacking on the enormous success of the annual Ride for Roswell, the Empire State Ride - which starts on Saturday, July 28 - takes road cyclists from New York City to Niagara Falls. So far in 2018, the ride has raised over $300,000 (!) and that number will continue to rise. The Empire State Ride for Roswell currently has 140 participants registered and is hoping to raise $600,000. The funds, which go to Roswell Park’s constant offensive against cancer, will help carry out cutting edge research. Roswell helps and treats over 36,000 patients a year. The route, which begins in NYC, takes participants through New York State’s expansive and impressive scenery. NYC itself is a sight to behold, but riders will then go through the Catskills before riding along the Erie Canal and finishing at Niagara Falls. And this isn’t a ride about winning - it’s about the cause, and for a lot of the riders, about finishing it. A group of local cyclists have been diligently training in preparation for the ride. Holiday Valley’s Dave Trathen, Bonnie Koschir, Dennis & Jane Eshbaugh and HoliMont’s Debbie Stein are all riding, and we asked them a few questions about it. ST: How long have you been riding? JE: If you count riding around the neighborhood as a kid, about a thousand years. But more recently on a roadbike, about 1517 years? ST: What’s the furthest you’ve ridden? JE: The Ride for Roswell is about 102 miles, but that’s all in one day and we get to rest the next day! This time we have to get up and ride the next day and the next and the next ... ST: What are you most excited about on the Empire State Ride? JE: Helping the cause is #1, but personally I’m excited about seeing our entire state from the seat of a bike and spending an entire week outside.

ST: How long have you been riding? BK: My whole life! But I did mountain biking and then switched to road about 10 years ago. ST: Who are you riding for? BK: I have family members and friends who fought or are fighting cancer. ST: What are you most excited about on the ride? BK: Most excited is what we are riding for ... raising awareness and raising money to find a cure. Also, actually completing the ride and the journey while doing it.

Owners Michael and Sally Nickolson have maintained the Fox’s standing as Ellicottville’s only steakhouse by providing a relaxed atmosphere with consistently good dishes and top notch service. Starting this summer and going into the fall, the Fox will offer three different wine pairings: Champagne (July 20th); Rosé (August 31st); and Cabernet Sauvignon (September 21st). For $60 per person per dinner, guests are treated to multiple dishes complemented with a glass that fits its personality. “The wine pairings are great because it’s an affordable night out to try something different,” Sally said. “It’s just a lot of fun. We’ve got people of all ages that come, so there’s a great mix of people. It seems like every time we do one of these, there’s a combination of familiar faces and people we don’t know - but by the end, everyone leaves as a friend.” Each pairing will offer a different, seasonal menu. For instance, the Rosé Pairing will feature Reverie Creamery and Artisan Market, a cheesemaking company out of Mayville, NY (close to Chautauqua Lake). Not only will a rep from Reverie be on-hand, but also a rep from the wine brand to walk you through each glass and why it pairs well with the dish in front of you.

As well as the wine pairings, the Fox offers Thursday Night Date Nights, where a couple can sit down for a salad, appetizer, entree and dessert with two glasses of wine for $46. And Friday night’s Martini Club, where appetizers are served around 6pm and you can sign the book for a chance to win a $50 Fox gift card. While the traditional menu is great, the Fox has added new items for the summer. Lobster Ravioli, Scallops Coquilles St. Jaques and fish tacos are all back by popular demand. “Starting July 7th, we’ll have the jazz trio LTM come every Saturday and play for a few hours,” Sally said. “They’re awesome. It just provides a little more ambience for our guests when they’re eating dinner.” The Silver Fox has been an Ellicottville staple. Evans, who owns the store with her business and beloved life partner, John Ditcher, has embraced her new role as owner of the well-known store, which has been serving the area for over 20 years! “People are becoming far more cognizant about what goes into their bodies, and I’m really committed to helping people feel good,” explained Evans, who brings valuable experience as a former employee of Ellicottville’s Nature’s Remedy. “The support has been overwhelming! From family to friends to brand new customers, we’ve really felt the love here. It’s humbling.”

Aurora Light and Bronze, LLC opened its doors at 23 Jefferson Street in January, and business has been growing ever since. “Word of mouth has been working great for us,” explained mother, Debi, whose own mother is from Alaska, a heritage that inspired the name (a take on “aurora borealis”) and several of the business’ products. “Tanning and sauna technology have come such a long way, and people are loving the immediate results they get here,” said Debi. A customer favorite is the Norvell spray-tan line, which is the same brand used by the pros on “Dancing with the Stars.” Customers can expect a natural-looking bronze (no orange-y color!) that lasts 7 to 10 days or even longer with products available in the salon. “This is a great service to take advantage of before weddings or big events,” explained Debi, who recommends that a spray-tan appointment be booked 2 days before the event for an even, transfer-less bronze. A Conversation with CHARLIE DANIELS HULICK: I talked with you in 2004 and I am thrilled to be talking with you again. DANIELS: Well thank you very much. That’s been a while hasn’t it? HULICK: It has … we’re both a little older. DANIELS: Well we’re both still above on the right side of the grass and kickin’! That’s the main thing. (laughs) HULICK: I can’t believe all you’ve done since we last spoke. DANIELS: Well my interests go in so many different ways and I have discovered over the past few years that I have a passion for writing and I can take it to places I never did before. So I’ve gotten pretty heavy into writing books. I just had one come out, “Never Look At The Empty Seats” and I got another one coming out in the fall. It’s amazing because my English teacher would not believe this … believe me … at all. (laughs) Then of course there’s the music. I am always doing music … all different kinds. When I was a kid radio stations were not formatted for one type of music. The stations had to follow the mandate of the Federal Communications System, so I got some of everything … gospel, pop - in the form of big bands, country and so on. I developed a taste for all of it. When we started out I didn’t classify what kind of music we played … we just played music. Whatever people wanted to call us was OK. I called it American music.

Wednesday, Aug. 1st | Little Valley, NY By Melanie Hulick When you think of Charlie Daniels, most of us automatically think of the song “The Devil Went Down to Georgia” and that down home fiddle playing by a true music legend. Daniels will be on stage at the Cattaraugus County Fair on Wednesday, August 1, kickin’ it up a couple notches and giving the fans what they want to hear. The singer has been a fan favorite since the 1950’s and at the age of 81 hasn’t even considered slowing down, still performing over 100 shows a year. I interviewed Daniels in 2004 and was graciously given the chance to talk with him again about his upcoming show at the fair. Like in 2004, Daniels could not have been more kind, and he has not changed a bit. We enjoyed our time talking about his career and another passion of his which he has discovered more recently. Inducted into the Grand Ole Opry in 2008 was a highlight of his career, and he returned center stage in April of this year to mark his 10th anniversary. It’s impossible to list everything Daniels has done … the list keeps growing, and he is taking it all in stride. “I love what I do,” says Daniels of his 50-plus years in the music business. “I look forward to entertaining people. When show time gets here, I’m ready to go, ready to go play for them. It’s a labor of love. I just thank God I make a living at what I enjoy doing.” His personal highlight of his life is being married to his wife Hazel for 54 years, this September. What is his secret for a long lasting marriage? “You have to marry someone you are going to enjoy waking up with every day and spend time with every day,” said Daniels. We agreed that it’s tough to find that commitment in marriages these days. Telling him I’ve been married for 34 years, he told me … hang in there kid … a few more and you’ll be where my wife and I are. HULICK: I’ve seen your show and the energy you put out on that stage is incredible. It’s a lot of fun! DANIELS: Well that’s what they pay us for. We’re there because people spent their hard earned money to come see us. HULICK: You talk about that in your book … about having a positive attitude when you walk on stage. I love the message you convey when you say … “Your troubles are your own and are not included in the ticket price. Some nights you have more to give than others, but put it all out there every show. You’re concerned with the people who showed up, not the ones who didn’t. So always give them a show, and never look at the empty seats.” DANIELS: Well that is true and it is a life lesson for any profession and especially for the young artists starting out on their musical journey. HULICK: You are famous for your Volunteer Jams that you started where artists from all genres come together and raise money for your non-profit organization, The Journey Home Project, which helps American veterans meet their education, healthcare and employment needs. DANIELS: Yes. We just had one and we celebrated the 42nd year of the jams. Do you believe that? We started in 1974. We used to do them every year but we don’t do that anymore, it’s just so much of an undertaking. But we’ve done them the past couple years. I’m not sure when the next one will be. HULICK: Do you think you could get into the record books with the number of times you’ve played your song, “The Devil Went Down To Georgia”? DANIELS: (laughs) Well I don’t know but there might be a couple of other artists that has songs they’ve played that many times, but we’ve played it every show since 1974. (laughs) HULICK: That song is played daily on a station here in Buffalo that plays all types of music. If I’m in the car and it comes on I crank it up! Hearing it on the radio station is one thing, but I have to say that seeing you do it live is crazy fun! DANIELS: When we play it live you get to expand on it, so that’s a lot of fun. Also I get the chance to do it better tonight than last night and tomorrow I’ll get the chance to do it better than the night before. I haven’t played it perfect yet. HULICK: Oh yes you have!! (laughs) Before I let you go … in 2004 I asked you what your perfect day would be and your answer was … “It would start with my wife and my grandson. Maybe play golf, have a good meal and really enjoy ourselves.” What would your answer be today? DANIELS: Well I don’t play much golf anymore and my grandson is now 21 and going to college so we don’t spend time together like we used to. Let’s put it like this … the practical side has changed, but the philosophical has not.

TEE TIME AT PINE ACRES GOLF COURSE Pine Acres is a scenic, tree-lined public golf course located at the edge of the Allegheny National Forest in northwestern Pennsylvania. An 18-hole, par 72 course, it is suitable for all ages. It was designed by James Harrison and opened in 1965. The ratings/slope are 72.6/136, 71.8/134, 68.6/125 and 69.5/120, with a total yardage of 6511. The course generally opens at sunrise, with cart rentals stopping before sunset. As Mother Nature is fickle regarding the weather, it is suggested golfers call the pro shop at 814-3622005 to check the weather, and to schedule your tee time. Golf pro, Kirk Stauffer is on staff at the course. Rates are $36 for 18 holes with cart Monday through Friday, and $40 Saturday and Sunday. Rates for 9-holes with a cart rental is $27 all week. This course is perfect for working in a game of golf with family or friends while visiting the area. Two specials are offered at the course. The Dew Sweeper Special runs Monday through Thursday, 7am-11am. The golf fee is $25, and the cart rental is only $18.
