NEW Look, NEW Location! By Dash Hegeman No matter the circumstances, growing up isn’t easy. You spend the initial years of your life wishing you were bigger, then transition to being an awkward teenager, and follow that up by getting thrust into a fast-paced world that you may or may not be ready for. And that’s if you’re lucky. Sonny Jordan Muscato, now age 30, was not quite as lucky. At an early stage in his life he was diagnosed with autism, a condition that creates challenges with social skills, repetitive behaviors, speech and non-verbal communication. On the flip side, it can also cause unique strengths and wherewithal. But due to the social discomforts that autism can cause, people with autism have historically been left on the outside looking in, eager to find a place of comfort but often lacking the resources and community-wide support to be able to navigate the already choppy waters of adolescence. Sadly, that is exactly where Sonny Muscato found himself, and as a result, a period in his life developed that was crime, drugs, incarceration and rehab. Needless to say, Sonny’s one constant support system - his family - was devastated and yearned for a way to help Sonny cope with his frustrations and grow as a person. Before the period of crime and strife, however, there was a time in Sonny’s life where he was very focused in an area where he showed tremendous potential ... Music was Sonny’s safe place. Sonny was diagnosed with autism at a very early age, at a time where there was still very little known about the condition and how to properly treat it. By the age of two, Sonny was gravitating towards playing the drums and soon showed an aptitude for rhythm and beat. As you can probably imagine, the lack of resources and information was very frustrating to Sonny’s family. His brother, Max, was eager to help Sonny, but how to accomplish that was another story altogether. Because music had always been a constant staple in Sonny’s life, Max and his father Marc came up with the idea for Rock Autism - a nonprofit organization focused on raising autism awareness and funding for music and art therapy programs. On September 1, 2018 the Village Park in Ellicottville, NY will be hosting the inaugural Rock Autism Music Festival. The festival starts at 12pm. Pre-sale tickets are $15, children ages 12 and under are free, and VIP packages are $40. (A VIP Pass gives you private parking, entrance, full bar, selective food, and access to the band hangout section.) “Ellicottville has always been a second home to Sonny and I,” Max stated. “We grew up on the slopes at Holiday Valley and it always felt like our own oasis. I personally had been contemplating Ellicottville since we began scouting locations. The small ski town was perfect for what we were trying to accomplish. It’s already known as a destination getaway - but one thing we wish to accomplish is to have it be an even bigger music destination spot as well.” Through an already established residency at Villaggio in Ellicottville, where Max’s high school friend Spencer Murray is the manager, Max was able to quickly start fostering relationships in the community that proved to be invaluable in the creation of the festival. Spencer is also a Village of Ellicottville Trustee and was instrumental in helping Rock

A Weekend of Outdoor Theatre and Food By Spencer Timkey

SHAKE ON THE LAKE: SHAKESPEARE’S RICHARD THE III Friday, August 10 @ 8pm • Free Admission

A TASTE OF ELLICOTTVILLE Saturday and Sunday, August 11-12 @ noon-4pm

Fun, fast and physical. That’s the way Shake on the Lake co-founder and managing director Pilar McKay describes their group’s Shakespearean performance style. As an art form, theatre is subjective to the taste of the particular members in the audience. And to a purist, performing one of Shakespeare’s works in its truest form may seem like the only correct way to do it - but Shake on the Lake, of Perry, NY takes a different route.

Food lovers rejoice! It’s one of the best weekends of the year. The Taste of Ellicottville returns on Saturday and Sunday, August 11-12. You’re going to want to skip breakfast, because Ellicottville’s restaurants and bars will be serving a myriad of entrees, appetizers, sweets and kid friendly mini-meals for your dining pleasure.

“We work with the structure Shakespeare gave us,” McKay said. “When he was writing his works, he would incorporate pop culture and ‘sick burns’ to the period’s elite. He gave us the texts - we’re just inserting them in the areas that would make sense. Shakespeare style, but applicable to today.” When Shake on the Lake comes to the Ellicottville Gazebo on Friday, August 10 for a performance of the classic Richard the III, don’t expect to be bored to death. One of the theatre group’s specialities is keeping the audience engaged. McKay, Josh Rice, and Richard the III director Chad Bradford try to keep the shows around the 80-minute mark. That way, they’re doing Shakespeare’s work justice while not drawing it out too long. “Nobody wants to sit through a boring, drawn out play,” McKay said. “People want to be entertained. So we’ll incorporate music - for this show, expect some late 1980s/early 90s punk. The audience is just as part of the show as the actors are, and they’ll feel involved without actually getting up on stage.” McKay, of Perry, attended high school with fellow co-founder Josh Rice. After an advertising stint for her and professional acting career for him, they connected on Facebook (“when Facebook was still fun,” she added) and Shake on the Lake was born. “We were so successful in Year 1, we knew we were on to something,” she said, before adding that even though she herself isn’t a performer, that doesn’t mitigate her passion. They recruit actors from all over the country. First, they’ll look locally. Then the gaze turns to Little Rock, Arkansas (where Rice worked for a time) before drawing actors in nationwide. “This is a professional theatre company, and that solidifies our reputation,” McKay said. “We have someone who came in from Denver for our performance round of Richard the III. So that’s pretty cool. Actors who come in have to be flexible - for this show, we only have six performers. So they’ll be switching roles, but that adds to the fun of it.” While Ellicottville’s Gazebo may be the most prolific public place they’ve performed, Shake on the Lake has done shows in historical houses, parks, and the beach in Silver Creek where they first started. They strive to be adaptable to any of the venues they’re performing in. “Space isn’t a constraint for us,” she said. “Creative placemaking - which means we’re here to bring theatre to a place that isn’t a theatrical place. People can experience theatre anywhere, but we started at a public beach. The community really embraced it, and before we knew it, had started renovating the area of the beachhead. So it’s cool that what we’re doing is having an impact.” Shake on the Lake aims to bring high-end theatrical performances to rural areas that people can consume, see and experience. So far, they’re nailing it. “First and foremost, we want people to have a good time. Bring a chair, hang out and enjoy the show. Our actors do this as their day jobs, so they’re passionate. We want to create a really awesome product that leaves people wanting more.” For more information on Shake on the Lake, head to www.shakeonthelake.org. They’ll be performing Shakespeare’s Richard the III on Friday, August 10 at the Ellicottville Gazebo. This is the only time they’ll perform later at night, so don’t miss it! Admission is free!

Here’s the rundown: restaurants will set up tents and tables along the sidewalks of Washington and a closed-off Monroe Street. Buy tickets from one of two tents, then feast on the different array of goodies. 23 restaurants will have food available, and most will offer 5 to 6 items to choose from (including gluten-free options). While you’ll have your staples returning, there will be a couple of newcomers to the event. Steelbound Brewery & Distillery will have food and *potentially (at the time of this going to print, there wasn’t a solid answer) beer sampling. Annie Coe of Cupcaked will undoubtedly have some delicious sweets, and Bear Paw will serve up some of its homemade fudge. Other new participants include the Public House of EVL, and Tops grocery store. Last year, the Taste introduced a new event, Ellicottville Chopped - just like the show, chefs will have a limited amount of time to whip up dishes of the judges’ choosing for a chance at bragging rights for the next year. Other competitions in the works include a corn on the cob eating contest, and a race where servers have a tray of champagne or martini glasses filled to the top. “This is a great event for a few reasons,” said Barb Pump, Communications, Events & Membership Manager for the Ellicottville Chamber of Commerce. “The first, visitors can sample the best of what each restaurant has to offer. Secondly, it allows each chef to flex some muscle and prepare dishes that are unique to their particular restaurant/style.” Tickets for The Taste are $1 each, and items will range from 1 to 5 tickets. The value is unbelievable - you’re going to get prime choices for a small amount of money. And if you can’t fit everything you’d like on the first day, you’ll just have to come back for the next. The Chamber of Commerce produces a handy booklet that includes the location of each restaurant and the dishes they’ll be serving. Shade and seating will be available, and every tent will have beverages on-hand for you to purchase as well. This year’s participating restaurants include: Finnerty’s Tap Room, Holiday Valley, Dina’s, Dina’s at The Mont, Villaggio, Bike & Bean, Madigan’s, Seneca Allegany Casino, Ellicottville Brewing Company, Public House, Winery of Ellicottville, The Gin Mill, Katy’s Cafe & Katy’s Fly-In, Watson’s, Tim & Bonnies, Monroe St. Brick & Brew, Silver Fox, The Tee Bar, Bear Paw, Cupcaked, Steelbound Brewery & Distillery, and Tops Markets here in Ellicottville. Each restaurant will have the opportunity to submit one of their choices in to the official judging. This year’s judges include Jickster from 97 Rock, Chicken Wing King Drew Cerza, Cerza’s wife, and Buffalo Sabres Alumni Danny Gare. The winners will receive a plaque (and bragging rights). “This event is one of my favorites,” said Barb. It showcases all of the hard work that these restaurants are doing all year round to make each visitor’s experience one that will make them want to keep coming back. Something not many know, is that the Taste of Buffalo, which includes all of Erie County, has 59 restaurants involved and is one of the largest Tastes. To think that with 1,800 residents and only local eateries involved that we have 23 … truly fantastic! So, come get something to eat, walk around the village and stop by the eclectic shops, as they have something for everyone. We can’t wait to see you!” The Taste of Ellicottville is produced by the Ellicottville Chamber of Commerce and its presenting sponsor, Sysco Foods. The event runs from noon-4pm on Saturday and Sunday, although vendors will have the option to stay longer if they choose. There will also be live music and so much more! Head to www.ellicottvilleny.com for a complete schedule.

THE SUMMER LOCAL ~ AUGUST 2018 ... Page 07

HOLIDAY VALLEY RESORT

By Louisa Benatovich

What Is Tuscan Moon?

MANGIA!

Nine short years ago, members of Ellicottville’s Rotary Club sat down to brainstorm. With philanthropic and community enrichment programs their goal, they envisioned a fundraiser that would not only involve all aspects of our beloved village, but also keep these programs running for years to come. What began as “Another Day in Paradise” and transitioned to “Voodoo Moon” grew to be Ellicottville’s favorite upscale end-of-the-summer party. Today, the event, now called “Tuscan Moon” provides funds for Rotary outreach, including the Rotary Club of Ellicottville Foundation for Youth, Family Support for Ellicottville, and so much more.

The Ellicottville Rotary will transport you to the glowing hills of Tuscany. As the sun sets around the slopes surrounding the Holiday Valley Pool Complex and Cabana Bar, guests will delight in Italian treats masterfully prepared by local eateries. Upon arrival, you will be greeted with trays of delicious hors d’oeuvres artfully created by Katy’s Café and John Harvard’s. Served buffet style, the entrées beautifully embrace the Italian theme. From the Antipasto Table to the expertly cured meats from The Silver Fox Steakhouse, Tuscan Moon’s array of delicacies will never cease to astound the taste buds. With John Harvard’s heavily anticipated “Mescolanza di Frutti di Mare” - or Seafood Medley - Tuscan Moon promises to be Ellicottville’s culinary event of the season.

Just Desserts

All Hands On Deck

If savory isn’t your speed, Tuscan Moon’s irresistible Dessert Table will be sure to satisfy your sweet tooth. Adorned in delicious cakes piled with rich frosting, homemade cookie classics, and flaky, fruity tarts created by acclaimed Chef Tom Kneeland, we dare you to escape this table’s tantalizing allure. If you thought the pastries couldn’t tempt you, Tuscan Moon will also feature a Western New York favorite, Watson’s Chocolates. Whether you choose one treat or all, these glorious creations will not fail to leave you satisfied.

In true Rotary style, Tuscan Moon is an event that gives back to the community with the help of an army of capable volunteers. Ellicottville athletes, ranging from soccer goalies to quarterbacks, choose to lend their hands to the worthy cause. On the night of the event, you might see familiar young faces offering you appetizers, divvying out delicious pulled pork, and clearing plates. Additionally, the University of Pittsburgh at Bradford’s Hospitality Program will use the opportunity to volunteer and gain work experience.

The Tunes

Going, Going, GONE!

Tuscan Moon is proud to announce this year’s musical treat! Buffalo Music Hall of Fame’s “Party Squad Unplugged” will play your favorite tunes upon request before, during, and after dinner. This mobile trio, comprised of Dave Elder and Joe RoStrictly Acoustic zler on acoustic guitar and accordion, and vocalist Mark Dixon on the Cajon drum, will be sure to get you singing along. Unplugged and on-the-move, this trifecta of talent will cater to any song request. Whether you choose Michael Bublé or Frank Sinatra, “Party Squad Unplugged” will not fail to get you dancing off your dinner.

The absolute highlight of Tuscan Moon is not the scrumptious food or wonderful music, but the opportunity for a great bargain. Through live and silent auctions, guests will have the chance to win all sorts of wonderfully unique items while supporting the Rotary. The silent auction will feature sixty baskets put together by local businesses and friends of the Rotary Club, while the live auction boasts a great selection of Bills and Sabres tickets, Cutco knife sets, and a delectable Bourbon basket. As you enjoy your dinner, browse the tables to see what unexpected items grab your fancy.

What Are You Supporting?

Ticket Purchase and Other Info

In attending Tuscan Moon, you are changing lives. Through the Rotary’s Foundation for Youth, you are supporting the Ellicottville Memorial Library’s Summer Internship, the Ellicottville Young Writers’ and Illustrators’ Club, the Park Program, library workshops, the ECS Reading Fluency Program, summer camp experiences at Allegany State Park, scholarships for ECS graduates, and the Rotary “Slapshot - Leadership Program”. The Rotary Club also supports the Fire Department’s “Explorer Program”, the Alley Katz, Ellicottville Food Bank, and Santa’s Workshop. At the holidays, the Rotary funds Christmas and Thanksgiving dinners. And through “Family Support for Ellicottville”, the Rotary is a “quiet helping hand” for unexpected medical expenses and transportation to treatment locations.

“Remember that this is Ellicottville so the dress is always casual,” says Greg Cappelli, past president of the Rotary. If you’re in the mood to spice things up, however, feel free to come in theme. Tickets for Tuscan Moon are a donation of $65 per person. They will be available online at www.ellicottvillerotary.com, in local outlets (E-Ville Spirits and Katy’s Café), or you can order by phone (credit cards accepted) at 716-699-8758. As well as helping countless families in our beloved Ellicottville, your ticket donation is eligible for a tax write-off. Bellissimo! With all the fun to be had, waste no time in penciling in August 25 to your calendar. Tuscan Moon 2018 is an event you won’t want to miss.

Artist Robin Zefers Clark understands this better than anyone, as she is not only a dog lover, herself, but has captured the eyes - and perhaps the soul - of many a beloved pet in her artwork.

Now called the Tri-County Arts Council, the Cattaraugus County Arts Council has undergone a makeover this year, and this transformation means exciting changes for both artists and art lovers in the area! The Arts Council is also looking forward to moving into a new building to bring even more classes and programming to the region.

Ameri-Can, located in downtown Ellicottville, has been carrying Clark’s works since the store opened in 2015. There, Clark’s pet portraits have captured the hearts of many who see their own dog in one of her pieces. Clark explained that all pet breeds tend to appeal to the store’s visitors. “It doesn’t seem to matter what dog I do a painting or drawing of - it looks like their dog!”

According to executive director Tina Hastings, the name change has been several years in the making, and was made official in April. “For several years, the Arts Council staff and board of directors have engaged in discussions about the name and the desire to have a name that better represents the communities that we serve,” explained Hastings.

In addition to dogs, Clark also does cats and horses with watercolor and hyperrealistic colored pencil techniques. An artist for over 30 years, Clark’s impressive work belies the fact that pet portraits are a relatively new venture for her. Clark remembered, “I did some pet portraits, and of course human portraits for many years. Maybe about three percent of what I did was animals. Last year, around August, we had a really hot stretch. On Facebook, I told people ‘Let’s have a little fun. If you submit a photo of your dog, I’ll do Dog Days of Summer. For a couple of weeks, I’ll paint dogs.’ I ended up with 35 dogs!” Clark draws from her own experience as a dog lover. Her golden retriever, Babe, was her original inspiration for pet portraits. “I lost Babe about 2 years ago,” Clark said, thoughtfully. “I referred to her as my studio assistant because she was always with me, even when I worked. After she died, I did a painting of her. I realized how nice it was to see that. It’s a different kind of link, the link you have with your dog.” Clark’s mediums are just as fascinating as the subjects of her work, which include area landscapes, in addition to animals. Hyperrealistic colored pencil painting has been a new endeavor for her since last winter. However, these aren’t the colored pencils you remember from grade school … Clark explained that the colored pencils she uses are light-fast and very stable. Artists can choose from wax-based and oil-based pencils, which allow for smoother work and lots of layering. “As strange as it seems with that much detail, it is the most relaxing medium I’ve ever worked with. Most pieces have 20 to 30 layers of color—that’s what gives it depth. I’m used to working with water color, which is so fluid and you’re always thinking two steps ahead. With pencils, you can just keep going, and you could do 90 to 100 layers if you wanted to!” Clark’s process involves starting with the eyes before moving on. Many of her hyperrealistic pencil paintings take about three weeks to complete, or more, depending on the quality of the reference photo. “I always start with the eyes because if I get the eyes wrong, the portrait is wrong,” she said. “People will see two very realistic eyes when coming into my studio. Animal eyes are striking.” Clark received her Master’s degree in art from RIT in 1982, and taught art at CattaraugusLittle Valley Central School for 33 years. She is very happy to call this area home. “I love it here,” Clark said. “Whenever people complain about it, I think ‘What don’t you love about it?’ We have everything! Incredible scenery, four seasons - it’s beautiful.” Clark’s Brookside Studio is located nearby at 8363 Maples Road in Little Valley, where her work is also available for sale. For more information about her work, including commissions, visit www.brooksidestudio.com or email rzc@mac.com. Fans can also follow Clark on Facebook at Brookside Studio Watercolors or on Instagram at robin_zefers_clark.

Due to the fact that many of the Arts Council’s programs serve libraries, art organizations and artists in Cattaraugus, Chautauqua and Allegany counties, a name that was more reflective of this greater region was in order. Hastings said, “We used a community survey, as well as direct requests from individuals in the final decision to change the name. We had many suggestions, but finally selected ‘Tri-County Arts Council’.” Although an official move-in date has not been set, the Arts Council is looking forward to occupying a new space after spending eight years in their current location on Main Street in Allegany. According to Hastings, “We have the good problem of having outgrown our space. Our planned new home will be at the corner of W. State Street and Union Street in Olean, and we will be able to have a separate space for the art gallery and retail store.” Despite the changes in progress, the Arts Council will continue to be busy the rest of this summer and into the fall with their regular programming. Hastings said that there are about 20 different classes being offered in the next few months, as well as continued grant funding. Kara Frisina, grant and development coordinator, is currently promoting the Regrant Program for 2019. The Arts Council administers New York State Council on the Arts (NYSCA) funding in Cattaraugus, Allegany and Chautauqua counties. This past year, they regranted over $70,000 to regional artists and arts organizations! Those interested in applying for grant funds can choose from three categories: Community Arts, Arts Education, or Individual Artist. Interested applicants can attend one of several arts grants information sessions throughout the region. For a list of dates and locations, visit www.myartscouncil.net/grants. All grants must be submitted by Oct. 5, 2018 at 4pm. Hastings is looking forward to hosting Gabriella Calandro from the New York Foundation for the Arts on August 20 at Olean Business Development Center from 7-8:30pm. She will provide information about applying for the NYSCA/NYFA Artist Fellowship, which awards a cash grant of $7,000 for artists to use as they need to continue their work. On Friday, Sept. 21 from 6-8pm, the Arts Council is pleased to host the opening of the Southern Tier Biennial Solo Exhibition by Schuyler Dawson at the Center Gallery at JCC’s Cattaraugus County campus. Dawson was the recipient of the Best of Show award at last year’s Biennial, and is looking forward to displaying his work this fall. The Arts Council will continue to raise awareness for their activities and services throughout the year, especially with their membership drive this fall. Over the summer, the Arts Council raised money by allowing individuals to purchase flocks of flamingos to be planted in friends’ and neighbors’ yards to brighten their day! Hastings is enthusiastic about the Arts Council’s new chapter. “We are excited to have been supporting the arts in the region for 18 years,” she said, “and we hope that our expansion, name change and relocation will help to increase the visibility of not only the Arts Council, but the impact that the arts have on our lives by providing economic development as well as opportunities for individuals to appreciate art in their daily lives.

SUPERFOOD SPOTLIGHT: MACA ROOT By Kristina Barlow, N.D., C.S.T.

MACA, Lepidium meyenii or Peruvian ginseng, grows in the high Andes mountains of Peru and Bolivia. The root of this edible herbaceous plant is used as a cruciferous vegetable and a medicine in traditional herbology. As a root vegetable, MACA is similar to parsnips and turnips. As an herb growing in high altitudes with harsh weather conditions, it is a hearty plant used medicinally in powder form for energy, stamina, libido, fertility, sports endurance and optimal wellness. Archaeological evidence of the use of MACA ROOT as a food dates back to 1700 BC. As with most plants and herbs in botanical medicine, historical claims and clinical observations for MACA are being supported by biochemical researchers in animal and human studies. Various published studies have concluded that MACA ROOT has positive effects on energy, stamina, libido, testosterone levels, erectile dysfunction, semen count, sperm motility, FSH effectiveness in both men and women and ovarian egg maturation. MACA ROOT does not contain hormones, but the theory being tested is that the plant’s alkaloids may be responsible for balancing the hypothalamus and pituitary glands in the brain, responsible for proper functioning of the thyroid, adrenals, ovaries and testes. Repeated studies show improved ovarian egg follicle maturation and higher sperm production and motility. CLINICAL OBSERVATIONS AND HEALTH BENEFITS: • Increased Energy and Stamina • Increased Libido in Men and Women • Improved Adrenal Function/Regulation • Adaptogenic = Improves the Body’s Response to Stress • Post-Menopausal Support, Increased Libido and Dryness • Used as a natural Hormone Replacement Therapy • Fertility Support • Female Hormone Balancing • Increased Male Sperm Count and Erectile Dysfunction • Athletic Performance Enhancement • Increased Brain Function • Balanced Immune Function • Decreased Depression, Improved Mood • Increased DHEA levels for improved testosterone and estrogen levels • Balanced Iron levels MACA ROOT’s NUTRITIONAL COMPOSITION: • 60-75% carbohydrates • 10-14% protein • 8.5% dietary fiber • 2.2% fats • Mineral Salts: calcium, potassium, magnesium and sodium • Essential Trace Elements: iron, phosphorus, iodine, copper, manganese and zinc • Vitamins: B1, B2, B12, C, E • Fatty Acids: linolenic acid, palmitic acid and oleic acids • 19 amino acids • Over 60 different phytochemicals

HOW TO USE MACA ROOT MACA ROOT is made into a powder and is often found as an ingredient in delicious vegan protein powders as well as in capsule, tablet, bulk and tea forms. Dried MACA ROOT can be stored for up to seven years. The powder can be boiled in water or various milks to make porridge. It can be dissolved under the tongue for immediate absorption into the tongue blood vessels. It can be used in making jams, broths, puddings, juices, salads, salad dressings, soups, yogurts, smoothies, liqueurs and baked goods. The taste has a butterscotch-like character and is mild to moderate in its flavoring. Use anywhere from 2-10 grams of the powdered root daily, until the desired effect is achieved. Results will be seen in as little as three days. Here at Nature’s Remedy, we sell bulk, powdered MACA by StarWest and MACA capsules by Nature’s Sunshine. For increasing energy and stamina, I recommend 2 capsules of MACA two times per day. Or 3-4 capsules as needed for a quick energy boost. Combine this with Solstic Energy. For increasing libido, add Men’s X-Action Reloaded or Women’s X-Action and Solstic Cardio. Men’s X-Action Reloaded contains l-arginine, damiana leaf, oat straw extract, saw palmetto fruit, epimedium leaf extract, MACA ROOT extract, pomegranate fruit extract, yohimbe root bark extract and DHEA. Women’s X-Action contains MACA ROOT extract, l-arginine, eleuthero root, oat straw extract, red raspberry leaves, damiana leaves licorice root and sarsaparilla root. *We have seen consistent and effective results using the above plants for increased energy and libido as clients are also working at changing lifestyle and dietary habits in addition to detoxifying the body. Please contact me anytime for a FREE 10-minute consultation in our center at 26 Monroe Street in Ellicottville.

The Enchanted Mountains Enjoy the Waters of Cattaraugus County ... Where do you want to play?

Make a splash this summer in the Enchanted Mountains of WNY! Cattaraugus County, aka The Enchanted Mountains, has been having glorious weather! It’s time to hit the water ... Ok, but where and how do you do that? Kayaking allows you to explore and admire the beautiful scenery in the Enchanted Mountains in a completely new way. There’s nothing quite like being on the water. Exploring the coastlines of our lakes and rivers provides an opportunity to view animals, plants and varying landscapes. Our lakes are big enough for a full day of enjoyment, but not so big you’ll lose sight of the coast line view. One of our best locations is the Allegheny River. With new launches (some handicap accessible) being added and projects popping up along the shoreline, it truly is a new way to enjoy the Enchanted Mountains. The Allegheny River enters New York near Portville, then continues through Allegany State Park, where it eventually joins the Reservoir. Kayakers can paddle to their hearts’ content on over 50 miles of water, devoid of dams, when the water is at sufficient heights. New launches are found in Portville, Olean, and Allegany, which makes for a nice two to three hour trip down the river between these launches. The river is also accessible in Salamanca and down in the Quaker side of Allegany State Park, at Friends Boat Launch. Here you are very likely to see a bald eagle soaring overhead as you drift slowly down the calm river. Allegany State Park is another great place to go, especially if you’re a beginner. Red House Lake is a 110-acre lake and is easily accessible from several points around the lake. Whether you prefer launching from a dock or wading into the water, you will find it here. Quaker lake is only slightly more challenging, being 268 acres, and approximately 2 miles end to end. The waters are generally calm and inviting. There are spots to park and a bath house for convenience by the beach area. Visit EMFun.us/Launches for a list of all the area’s places to hit the water in Cattaraugus County, including all the launch spots in our rivers and lakes.

TRAIL CENTRAL

FINE FOOD, FAIRS AND FESTIVALS By Linda Devlin, ANF Visitors Bureau

Time to plan your August getaway! Nature’s playground - the Allegheny National Forest - is lush, green and beautiful. Visit old outdoor friends like hiking and fishing, or explore something new, by discovering the joys of kayaking and mountain biking. Or maybe, it’s food, wine, and a soft sunset for you! TABLE 105 TAKES ROOT IN KANE, PENNSYLVANIA Table 105, a new steak and seafood restaurant, offers fresh and delicious dining options created from sustainably resourced, quality ingredients. Their décor features huge slices of native Black Cherry Timber playing tribute to their location in Kane, Pennsylvania, the Black Cherry Timber Capital of the World. Owner Rikiya Tanaka has a passion for food and the gift of hospitality. His vision for Table 105 is to bring a new style of restaurant into the area. A place where those who delight in great food can enjoy a fine meal with a glass of wine, while relaxing with family or friends. Young professionals, couples and families now have a local restaurant which understands the style of cooking where the emphasis is on “fresh”. Walk into the restaurant and you immediately are submersed in a relaxing atmosphere of fine food prepared with care, with a goal of delighting one’s palate. Riki has left nothing to chance. He pays attention to the minutest detail. “Our goal is to have the freshest seafood, the most flavorful steaks, and a specialty bacon which will sear its flavor into your food memory.” His starting point for all his entrees is fresh ingredients. “In my professional kitchen, the walk-in cooler is much bigger than the freezer, because the focus is on fresh,” explains Riki. “I have the freshest seafood in the county. If you enjoy fresh fish, this is the restaurant for you.” Riki expands on his seafood, “I know where the seafood served in my restaurant is caught, the name of the fishing boat, and the captain’s name. Our seafood is air-shipped from the coast, and our salmon is scaled, sliced, and prepared to individual order in-house.” Talking about his choice of bacon selected for the restaurant brings a smile to his face. This is a man who knows his bacon. He has sourced a delicious cold smoked applewood bacon. This is a specialty bacon with very little fat but big, big flavor.

CHEF COBY BUTLER Of course, one of the most important ingredients in a successful restaurant is the chef. Chef Coby Butler has multi-layered culinary skills, developed over many years of experience. This includes time spent studying culinary arts at Drexel University and Johnson & Wales University-Charlotte. He describes himself as a chef/farmer/adventurer with a journey of learning about cooking and growing food, from charcuterie to juice cleanses and lettuce to trees. As a child, his mother and the other female relatives would chase him out of the kitchen. It is his Uncle Joe Brunelli, a chef in New York, who first inspired Cody’s passion for the culinary field. It all started with a plate of Uncle Joe Brunelli’s spaghetti and meatballs. Intrigued by food preparation at a young age, Cody started watching cooking shows. While watching Iron Chef, he would write down hints and watch the techniques. From this interest, he pursued his passion to become a chef. When you review his experience, it is like uncovering the many subtle layers of melded flavors necessary to produce a fine gumbo. As an intern at Blue Hill at Stone Barns, Cody learned about sauces, foams and gelles. Then as an Entremettier at The Lacroix at the Rittenhouse Hotel in Philadelphia, he worked with a range of different molecular gastronomy ingredients, helping to create dishes for chefs’ table menus. Moving to Chicago, he worked on the grill and as a butcher at Taxim, where he developed new dishes and specials, fabricating with chicken, lamb, rabbit and octopus. At Aldino’s and Aldino’s Market, he perfected pizza dough, bread doughs, and making fresh pasta. Also in Chicago, Cody was the chef at the Boiler Room Logan Square, and later the AM sous chef at Table Donkey and Stick where he fabricated with cow, hog, lamb, duck, quail and rabbit.

Table 105 is a new steak and seafood restaurant, worth the drive to Kane.

Off to Hawaii to learn about juices and nut milks, flavored and brewed kombucha, elixirs and wellness shots. Next stop was working at Tai Shan Farms, North Country Farms Kauai, and Anuene Farms Hawai’i to learn about beekeeping and organic farming. Then on to the position of line cook at The Watergate Hotel in Washington, D.C. Metro Area, at King Bird Restaurant.

HEAD TO CROOK FARM AUG. 24-26 FOR A GOOD OLD TIME.

The McKean County Fair will take place August 11-18 in East Smethport.

TABLE 105’S MENU

Easy, concise headings - From the Start, From the Garden, From the Farmer, From the Fisherman, From the Saucier, South of the Border Tacos and Pizzas make it easy to focus your eyes where your appetite leads. I was intrigued with the menu listing - Peanut Butter Burger with Applewood Smoked Bacon, Cheddar, Fried onions, Peanut butter honey spread; a ½-pound burger with fries, house chips on a butter brioche roll. How could I not order something with the restaurant’s specialty bacon? So, I ordered, and I’m still trying to describe the unique savory flavor you get with each bite of burger. The burger is served up with a heavy-duty knife pinning the burger to the plate. Taste served with style - simply delightful, all at the extremely reasonable price of $13. Other entries we enjoyed at our exploration dining at Table 105 include the Hummus (cut vegetables with fire roasted red pepper hummus with caramelized onion), French onion soup and the Baja or fish taco. Let’s start with the hummus - delicious, fresh and tasty. French onion soup had exceptional depth of flavor with mounds of provolone cheese. The Baja taco was blackened Mahi Mahi, avocado, black bean corn pico and Tequila Lime Creama - memorably delicious.

RESTAURANT FACTS The restaurant opened June 23, 2018. The casually upscale bar seats 28, with the full restaurant able to seat 118. In the center of the dining area a custom table, handcrafted of eastern pine, is rooted to the floor, as a tree trunk reaches upward to the ceiling. The table was crafted locally in Eldred, PA. As a center focal point, behind the bar, an artisan crafted a wooden tile application. They are similar in appearance to subway tile, but at Table 105, this display is crafted from a variety of Pennsylvania hardwoods. As the chef trains the staff, expanded dishes will be added to the menu … but not before they reach perfection.

23 and 30. The musical performance begins at 6pm, admission is free, and there is plenty of close-by free parking. Bring a chair or blanket and spread out on the grass-covered lawn to enjoy the beauty of a musical evening outdoors. Refreshments will be available for purchase. The list of performers can be found at townsquareconcerts.com. The 113th McKean County Fair will be held August 11-18 at the McKean County Fairgrounds. This is a true old-fashioned country fair with blue ribbons for the best vegetables, farm stock, and home-baked apple pie. Sunday is Agriculture Day with free admission. Carnival rides open on Monday. Monday also includes the pet show, 4-H livestock weigh-in, dog obedience, and at 8pm a live performance by Nobody to Blame. Tuesday, August 14 is Energy Day. This will include some fascinating displays on the local oil history by the Penn Brad Oil Museum. Wednesday, August 15 is Veterans Day; Thursday, August 16 is Senior Citizens Day; Friday, August 17 is Farm Safety and Family Day; and Saturday, August 18 is when the Beautiful Baby Contest, Demolition Derby, and the McKean County Fair Queen Coronation will take place. The fair grounds are located at 7172 Route 46, East Smethport, PA. Find a full schedule at mckeancountyfair.net. Mount Jewett Swedish Festival will take place August 10-12 along West Main Street in the village of Mount Jewett. This is a town-wide celebration of their founding fathers’ Swedish heritage. Enjoy music, dancing, ethic foods, and craft vendors. You might even see a Viking or two. Bradford, located at the northern edge of the Allegheny National Forest, has a variety of events scheduled during August including the 2018 Summer Tuesday Tribute Series, Festa Italiana August 9-11, the Bradford Wine Walk August 11, and the Crook Farm Country Fair & Old Time Country Music Festival August 24-26. For additional information, check out the Fair & Festival Map on page 20 or go to visitANF.com/events.

Autism go from a concept to a reality. His efforts and dedication influenced Max and the rest of the board of directors to invite Spencer to be the fifth board member of Rock Autism, Inc. The festival has a fun-filled and entertaining lineup. The Strictly Hip, Big Eyed Phish (a Dave Matthews Tribute Band), Tiny Music, Max Muscato Ft. Sonny Muscato, The Tins, EDALO, Deadwolf, Ponder, FEVERBOX, XOXO will be rocking the Village Park from noon until 11pm. “We put a lot of thought into the line-up for our first year,” said Max. “With Sensu Music onboard, we’re able to get virtually anyone in the world to perform, but we wanted to be strategic with our first one and not get in over our heads. When it comes to music festivals, you really have to understand the region and demographics - and of course budget. After much consideration, we decided to go the tribute band route and well known local original act to see how the first year played out.” As an up-and-coming nonprofit, Rock Autism has already been able to put together an impressive lineup of partners. “Our team scoured Western New York for people and organizations that had a deep connection with autism and had the same vision we did,” Max stated. When it was all said and done, the list of partners include: People Inc., Hodgson & Russ Attorneys, Labatt Blue, 103.3 The Edge and Holiday Valley Resort. The Edge’s James Kurdziel will MC the event. Holiday Valley is offering discounted rates on lodging to all Rock Autism Music Festival participants. The festival will feature local vendors and interactive art and musical activities throughout the day. Rock Autism Music Festival is the first major music event to benefit music and art therapy programs at People Inc., Autism Services of Western New York & The Summit Center.

“People Inc. has developed an incredible reputation over the years,” Max stated. “Our Vice President Alea Conte had an existing relationship with the CEO of People, and after some research and a meeting, we decided that People Inc. would be one of the initial organizations we’d be involved with.” When asked what about the Ellicottville show he is most looking forward to, Max did not hesitate on his answer. “I’m looking forward to performing Sonnyboi on stage with my brother Sonny. Performing music for people is what I love to do. If I can perform a song I wrote about my brother (Sonnyboi), while my brother plays right behind me on the kit and raise money to help others - I hit the trifecta. I’ve been fortunate with my music career to play in front of some big crowds, but the one thing I’m really excited for is to see my brother’s face when he first walks out on the stage; I’ll definitely have our photographer on Sonny that entire time.” Sonny definitely has a dedicated focus on the event. According to Max, Sonny has a renewed focus and enthusiasm. “I’ll tell him we have a photoshoot in a few hours and he shows me 10 different shirts, does a clean shave and practices his head shots in the mirror - it’s both funny and cool to see him laugh again. I can definitely say that this is having a positive impact, not only for his life but his music and creative.” Ambitious, yet obtainable, goals have been set for Rock Autism. Max hopes to grow the festival into an annual tour that culminates in Ellicottville. If all goes according to plan, Max hopes to take Rock Autism to a place where they can create exposure to the cause of increasing awareness about autism and providing a portion of the tour’s proceeds to go towards autism awareness wherever the tour plays. In the next few years, Rock Autism hopes to be playing in Nashville and Los Angeles. But the festival always plans to culminate in Ellicottville. As far as Max is concerned, this will help both Rock Autism achieve its goals as well as help Ellicottville continue to grow its summertime offerings.
