Cut potatoes with skins on in sticks about ½-inch thick. Toss in just enough oil to coat each stick, sprinkle with salt and place on a large piece of parchment paper in a single layer. Preheat oven and baking sheet to 450 F. When hot, place the parchment paper on the baking sheet and bake for 10 to 13 minutes until lightly browned and crisp.
