Ingredients 4 large Yukon Gold potatoes or sweet potatoes or a mixture, washed thoroughly 4 to 5 tablespoons avocado oil Sea salt to taste Small drizzle of black truffle oil (optional) ¼-cup finely and freshly grated Parmesan cheese (optional) 2 tablespoons chopped parsley (optional) Avocado mayonnaise and/or tomato ketchup for dipping

Toss in just enough oil to coat each stick, sprinkle with salt and place on a large piece of parchment paper in a single layer. Preheat oven and baking sheet to 450 F. When hot, place the parchment paper on the baking sheet and bake for 10 to 13 minutes until lightly browned and crisp. Sprinkle with truffle oil, Parmesan and parsley if using.
