WORKING METHOD

1. Chocolate Crème Cake Batter

• Mix water, vegetable oil and

• Mix 3 minutes with a flat beater on medium speed.

• Fill into ring forms and bake.

• Baking temperature: Deck oven 190ºC / Fan oven 160°C.

• Baking time: 40-45 minutes.

2. Avocado Frosting

• Mix avocado and lemon juice and margarine and mix up with a whisk until the frosting is smooth.

ASSEMBLY

• Sandwich chocolate layers with avocado frosting.

• Decorate with fresh, sliced avocado and vegan chocolate decoration.

5 MIXES TO BOOST PROTEIN LEVELS AND SALES

REDUCED SUGAR FONDS

Consumers are looking for indulgent bakery products without feeling the associated guilt. Thus, we are seeing a growing number of products promoting their sugar reduced attributes. The bakery industry is taking notice of this growing consumer demand by providing sugar reduced cake and pastry favourites.

SUGAR INTAKE IS BEING LOWERED BY CONSUMERS

That is why we have developed an alternative solution to create mousses and bavarois preparations with natural colours and flavours, with the same application recipe as our regular range, but with 30% less sugar.

You can now stabilise, gelatinise, flavour and sweeten creams with limited sugar impact thanks to our new range of reduced sugar fonds. These flavoured bavarois powders can be used with dairy or non-dairy creams.

FRUIT FILLINGS WITH 80% FRUIT

We have taken fruit fillings to a new level, by bumping up the fruit content and replacing all the refined sugars with natural sweeteners.

The result is a high quality range of fruit fillings, with the natural flavour of fruit and just the right amount of sweetness. This Dawn Balance® Delifruit Xtra range is bang on trend.

BASIC RECIPE

1. Reduced Fat & Sugar Plain Muffin

1000 g Dawn Balance® Reduced Fat & Sugar Plain Cake Mix

450 g Water

160 g Vegetable oil

50 g Glycerin

1660 g Total

60 g Almond / pistachio mix

2. Reduced Fat & Sugar Chocolate Muffin

1000 g Dawn Balance® Reduced Fat & Sugar Chocolate Cake Mix

465 g Water

160 g Vegetable oil

50 g Glycerin

1695 g Total

60 g Dawn Crumble Mix

WORKING METHOD

• Add all ingredients to a mixing bowl fitted with a beater.

• Mix for 1 minute at slow speed - Scrape Down - Mix for another 2 minutes at slow speed.

• Deposit 70g of muffin batter into a muffin tray with paper cups.

• Top with a sprinkle of almond/pistachio mix or crumble.

• Bake in a deck oven at 180ºC for 35 minutes.

ASSEMBLY

• Allow to cool, cut the top of the muffin.

• Place the Delifruit Xtra Mango & Passion 80% or one of the other Delifruit fruit fillings Xtra into a piping bag and fill 20 g into each muffin.

• Put the muffin lid on top.
