Ingredients 1 block (8 ounces) Mozzarella cheese, diced into 1/4-inch cubes 1 cup diced roasted red peppers 2 green onions, cut diagonally into thin slices 3 tablespoons thinly sliced fresh basil 2 teaspoons extra-virgin olive oil Freshly ground pepper to taste 1 head Belgian endive, separated into leaves Preparation Combine Mozzarella cheese, red peppers, green onion, fresh basil and olive oil in medium bowl; mix well. Season with pepper. Cover and refrigerate 1 hour or overnight. Serve on endive leaves with whole grain crackers. Yield: 3 cups

Ingredients 1/2 lb. lean ground beef 1 1./2 cups (6 oz.) shredded Cheddar cheese, divided 1/2 cup salsa, divided 8 cups salad greens 1 cup chopped tomato 1 1/2 cup black beans Preparation Brown beef in large non-stick skillet; remove from heat. Stir in 1 cup shredded cheese and 1/4 cup salsa; mix until blended. Spoon onto serving platter. In a large bowl, toss together salad greens, tomatoes, black beans and remaining cheese and salsa. Oven Baked Chicken with Melted Mozzarella and Garlic Butter Pasta Created By: Ashley Saunders Servings: 6 Prep Time: 15 minutes Cook Time: 30 minutes Ingredients Chicken: 6 skinless chicken breasts (about 1½ pounds) 1/3 cup whole wheat our

Sea salt & pepper to taste 6 ounces fresh mozzarella, sliced Pasta: 1 (16 ounce) package of whole-wheat pasta 1/3 cup unsalted butter, melted 4 garlic cloves, minced 1 teaspoon dried parsley 1 teaspoon dried basil 1/4 teaspoon sea salt

Preparation Preheat oven to 350 degrees F. Sprinkle salt and pepper over chicken breasts. Dredge chicken in our. Place in a greased baking dish. Bake for 20 minutes and then top with sliced mozzarella. Bake an additional 10 minutes. While chicken is cooking, cook pasta according to package. While pasta is cooking, heat butter in large skillet over medium heat. Add garlic, parsley, basil and salt. Cook over medium low heat until pasta is done, stirring occasionally. Drain pasta, reserving some pasta water. Add pasta to butter sauce and toss well. Add a few tablespoons of pasta water as needed to extend the sauce. Serve with chicken. Open incision to create a 1-inch-wide pocket and pack 1/4 of the lling mixture into each breast. Season chicken with Italian seasoning blend and place in 13 x 9 x 2-inch baking dish.
