Y

az aylarının sona erdiği şu günlerde, restoran sektörü de ülkenin içinde bulunduğu ekonomik zorluklara göğüs gererek geçirdiği bir sezonu daha geride bıraktı.

Her yeni sezona büyük umutlarla başlayan restorancılar, sezonda aradıklarını bulamamakla birlikte, iş kalitelerini artırmak için yaptıkları yatırımlar da yanlarına kalıyor.

Res-Bir olarak bizler, birliğimize üye olan restoranların, hizmet ve iş kalitelerini artırmada onlara yardımcı olabilecek her türlü desteği vermeyi hedeflemekteyiz. Maddi ve manevi olarak tüm imkanları değerlendirmeleri hususunda yol gösterip yardımcı olmak da bizim görevimiz.

Son iki yılda, iki büyük projeye imza atarak başarıyı yakaladık ve bu projeler sayesinde çağımızın en önemli pazarı olan interneti üyelerimize sunduk; Res-Bir Navigasyon Sistemlerine Entegrasyon Projesi Bu proje kapsamında birliğe üye restoranlar, dört ana bölgeye ayrılarak ziyaret edilmiş; alınan veri ve fotoğraflarla sosyal medya bağlantıları oluşturulmuştur. Üyeler için Facebook, Twitter ve Foursquare hesapları ile Google Maps kayıtları hazırlanmış; ayrıca üyeler, tüm bu konulara vakıf olabilmeleri için eğitim seminerleri ile bilgilendirildiler.

Web sitesi projesi Restoranların hizmet kaliteleri ile iş kapasitelerini artırmak maksatlı olarak hazırlanan bu projede ise birlik üyeleri arasından seçilen otuz restoran için, web siteleri hazırlanmış ve bu siteler bir portal altında toplanmıştır. Online rezervasyon ve reklam en büyük hedefi olan siteler, şuan aktif ve kullanılır durumda olup, üyelerimize en kısa teslim edilecektir.

Gerçekleştirilen bu projelerin yanı sıra, Res-Bir olarak, tüm üyelerin yasal hakları ve haksız rekabet ortamı sağlayan bir takım olumsuz koşulları da ortadan kaldırma çabasındayız. Sık sık basınla bir araya gelerek, ya da demeçler vererek, sıkıntı ve çözüm önerilerimizi kamuoyuna sunmakta ve takibini yapmaktayız.

Restoran sektörünü en çok baltalayan; otel restoranları, düşük fiyat politikası, marketlerde satılan sıcak yemekler, sigara yasağı, sektöre keyfi giriş, tedarikçiler ve resmi kurumlarda vuku bulan olumsuzluklar gibi sıkıntıları ortadan kaldırılmak en büyük hedefimiz.

Turizm cenneti olarak nitelenen ülkemizde, en büyük paya sahip restorancıların hak ettikleri değer ve şartlarda çalışıp; emeklerinin karşılığını aldıkları, yaptıkları işten dolayı büyük keyif ve mutluluk duydukları günler dilerken, bu yolda gereken emek ve çabayı sarf etmekten kaçınmayacağımızı bilmenizi isteriz...

hile we are at the end of the summer months, the restaurant sector has left the season in which it faced economic difficulties of the country behind.

During the last two years, by signing two major projects we have achieved success and by means of these projects we have presented internet, that is the most important market of our time, to our members; Res-Bir Integration Project for Navigation Systems Four hundred and six restaurants, that are members of the association, were visited in four main districts, and social media networks were formed with the collected data and photos within the scope of the project. For those members, Facebook, Twitter and Foursquare accounts and Google Maps registries were prepared; also they were informed with the education seminars in order to have a grasp of all these subjects.

What have we done for our members?

Üyelerimiz için Neler yaptık?

Restoranlar ve sosyal medya Res-Bir, TC Büyükelçiliği ve Çukurova Kalkınma Ajansı işbirliği ile geçtiğimiz yıl içerisinde gerçekleştirilen Navigasyon Sistemlerine Entegrasyon Projesi, hak ettiği başarıyı yakaladı.

Birliğe üye dört yüz altı restoran için oluşturulan sosyal medya bağlantıları etkin bir şekilde kullanılıyor.

Proje Res-Bir üyesi restoran ve cafeleri navigasyon sistem ve cihazlarına kaydetmek, akıllı telefonlar ve internet aracılığıyla bulunabilirliklerini kolaylaştırmak maksadı ile gerçekleştirilen Navigasyon Sistemlerine Entegrasyon Projesi, TC Büyükelçiliği, Çukurova Kalkınma Ajansı ve Res-Bir işbirliği ile hayata geçirildi. Üyeler ziyaret edildi…

Proje kapsamında birliğe üye dört yüz altı restoran ziyaret edilip fotoğrafları çekilmiş ve bilgileri toplandı. Elde edilen bu verilerle üyeler için, Facebook, Twitter ve Foursquare hesapları oluşturulurken Google Maps kayıtları da yapıldı.

Eğitim seminerleri…

Projeye dahil olan tüm restoranların yetkilileri, açılan sosyal medya bağlantıları ve bu bağlantıları kullanma konularında birlik tarafından düzenlenen eğitim seminerlerinde eğitim gördü ve eğitimler sonunda edindikleri kullanıcı adı ve şifreleri kendilerine teslim edildi.

Restaurants and Social Media Res-Bir with the cooperation of the Embassy of the Republic of Turkey and Çukurova Development Agency has achieved the success it deserves in the integration project, that was carried out last year, for Navigation Systems. Cyprus On Road Social media networks and registries, the restaurants that have been added into navigation and maps of smartphones can be followed via GPS Navigation applications on the website.

Cyprus On Road Sosyal medya bağlantı ve kayıtları, Navigasyon ve akıllı telefonların haritalarına eklenen restoranlar şuan; Cyprus On Road GPS Navigation uygulamaları ile internet sitesinden de takip edilebiliyor.

The Project The integration project for Navigation Systems, that was carried out with the cooperation of the Embassy of the Republic of Turkey, Çukurova Development Agency and ResBir, was made up with the aim of registering the restaurants and cafés, that were members of Res-Bir, in navigation systems and devices, and making their availability easier.

The members were visited...

Four hundred and six restaurants, that are members of the association, were visited, their photos were taken and data were collected within the scope of the project. Gathering these data, while making up Facebook, Twitter and Foursquare accounts their Google Maps registry were also done for those members.

ellim dünyada benzeri olmayan ve zevkle çiğ veya çeşitli şekillerde örneğin, kızartılarak, ızgara veya kaynatılarak tüketilebilir.

Kıbrıs hellimi, adadaki iki toplum olan Kıbrıslı Türk ve Kıbrıslı Rumların ortak ürünüdür.

Hellim asırlarca geleneksel yiyecek sisteminin bir parçası olmuştur. En önemlisi, Kıbrıs peyniri olarak bilinmesidir. Hellim, Kıbrıs yemek kültürünün tipik bir örneğidir. Genele baktığımız zaman, Türkiye ve Yunanistan’da yapılmadığı veya tüketilmediğine göre, esas hellimin anavatanın Kıbrıs olduğunu açık bir şekilde söyleyebiliriz.

Kendi kendine yeten geleneksel tarım topluluklarının en önemli hedefleri tüm ürünlerini, örneğin buğdayın son tanesine veya sütün son damlasına kadar kullanabilmekti. İnsanoğlu yiyeceklerini ve özellikle kolayca bozulan ve kesilen sütü koruyabilmek için çok sayıda ve çeşitte yöntemler geliştirdi. İhtiyaç fazlası olan sütü değerlendirip yıl boyunca kullanabilmek için hellim, nor ve yoğurt gibi geleneksel Kıbrıs yiyecekleri üretilirdi. .Kıbrıs’ın ürünü olan hellim, süte maya karıştırılarak sütün kesilmesi sağlanır ve böylece teleme elde edilir ve bilahare kaynama safhasına getirilir ve teleme kendi nor suyunda kaynatılır. yprus Hellim is a unique cheese which can be consumed both raw and cooked with different cooking methods, like by frying, grilling or boiling..

Cyprus Hellim is the most common traditional cheese in Cyprus which is known as the common product of both Turkish Cypriots and Greek Cypriots.

For centuries Hellim has been a part of traditional food system.in Cyprus.

The most significant point is, it has always been known locally and abroad as Cyprus Cheese. It is a typical example of Cyprus Food Culture. Above all, when we have a glance at history of hellim, we see that hellim is not made and generally speaking is not consumed neither in Turkey nor in Greece. So, it is obviously said that the mother-land of hellim is Cyprus.

The main scope of traditional agricultural communities who are efficient and qualified themselves, is to use every single seed of wheat and every single drop of milk. Man developed many different methods in order to protect their foods and especially to protect the milk which can easily be spoiled. In the old days, they had more milk than they need. That is the reason why, they made profitable use of excess milk, by making traditional hellim, cheese of

keçi veya koyun sütünden veya bunların karışımından yapılırdı.

Köylülere göre, inekler kutsaldı, çünkü inekler onlara çeşitli tarım alanlarında yardımcı olurdu.

Eskiden köy yerlerinde kadınlar küçük gruplar halinde biraraya gelirler ve sütlerini birleştirip hellim üretirlerdi.

Günümüzde ise çok az kadın köy hellimi üretmektedir. Çünkü hijyen ve buna bağlı tüzükler ev avlularında hayvanların bulundurulmasına izin vermiyor. Belediyeler bu konuda yetkilerini kullanarak yasaklıyor.

Günümüzde, genel olarak artık hellim geleneksel yöntemle değil, çağdaş yöntemlerle, fabrika ortamlarında ve hijyen ortamlarında üretilmektedir.

Bugün yeni teknolojik ekipmanlarla, örneğin yüksek teknolojik makineler ve paslanmaz çelik malzemeler kullanılmaktadır.

Hellim en önemli ihraç ürünüdür. Arap ülkelerinden Avrupa’ya, Avustralya’dan Amerika’ya kadar dünyanın birçok ülkesindeki süpermarketlerde bulunmaktadır.

Hellim which is a real Cyprus product, is made of pressed curd that is the result of the curdling of milk with rennet, for formation of coagulated casein. Then, the curd is cooked, salted and flavoured with mint and after folded in a traditional way. Helllim used to be made from goat milk or from a blend of goat and sheep milk.

According to the villagers, cows were considered to be sacred. The reason was, cows were used in the fields to help the villagers for their different kinds of the agricultural works.

In the old days, the women used to gather in small groups and collect their milk in one or more copper cauldrons and used to make hellim all together in one place.

Nowadays, there are only some women who are still making their own hellim. According to the hygiene rules and regulations it is not allowed to keep the animals in the residential areas.

Nowadays, hellim is not produced any more under the traditional methods. Just contrary, hellim is produced under the contemporary and hygienic conditions in fabrics. Today, new technological equipment, for example, high technological machines and stainless steel materials are used.

Hellim is the most significant export product. Hellim is exported to Arab countries, Europe, Australia, USA and many others where hellim is available in super-markets.

Kırmızı biber, baharat, salça gibi yemeğe tadım veren nesneler de zamanla kullanılmaya başlamışlardır.

Bir yemeğin yapımında kullanılan nesnenin niteliği kadar, yapan kimsenin ustalığının, titizliğinin de etkisi vardır. İnsan emeği ile oluşan her varlık gibi yemeklerde birtakım gelişme evreleri olup, bugünkü duruma geliş ve türleri çoğalmıştır.

Quality of food that is put into the meal, nutritional value, taste, appearance and sanitation determine the quality of the meal. Althought still a master prepares the food, if the ingrediets are not qualified, the desired quality food cannot be achieved. The second criterion that determines the quality of food, is its nutritional value. Nutritional value is related to the ingredients.

The important thing here is to prevent the ingredients to lose their nutritive value during the preparation and cooking stages. Over the years, people tried to improve the taste they get by mixing different food to make them more delicious and different, applying different preparation technics. With these processes food preparation styles and art peculiar to each country were born.

Üzülerek belirtmek gerekir ki, yerel ve tarihi yemekler bulunmuyor. Türk mutfağında zeytinyağlı yemeklerin yeri çoktur.

En çok tanınan ve beğenilen yemeğin tanınması ve beğenilmesi oranı yüzde 51 olan şiş ve diğer ızgara kebaplarıdır. Peynirli, etli böreklerin tanınma ve beğenilme oranı ise yüzde 13.

Turistler yerel tatlılarımızı tanımadan ülkemizden ayrılıyorlar.

Oysa bizim mutfağımız çok garnitürlü, sıcak, soğuk yemeklerimiz, etin, sebzenin tadı değişime uğramadan sunulan mutfaktır. Our country is a country of tourism and according to the research that was done among tourists, the guests who stay up to 15 days in our country see those qualified food only twice or three times. Regrettably, historical and local dishes cannot be found. Many dishes with olive oil take place in Turkish cuisine.

The most widely known and admired dishes are shish kebab and other grilled kebabs and their ratio of recognition and admiration is 51 percent. The ratio of recognition and admiration of cheese, meat pies is13 percent.

Dünyanın farklı bölgelerinde, butik anlayışla üretilen yüksek kaliteli şarapları, Türkiye’deki şarapseverlerle buluşturan Mania Gurme’nin ortaklarından Osman Tokat, bu konuda bize yardımcı oluyor ve şarap kokusu hakkında bilinmesi gereken temel bilgileri bizlerle paylaşıyor: “Şarap severlerin takip ettiği mail gruplarından birinde birgün şarap eğitimi konusu tartışılıyordu. Çok heyecanlı bir mesaj o gün bana çok ilginç gelmişti, ‘Evet evet. Ben de artık şarap içerken zencefil kokusu nasıl alınır öğrenmek istiyorum. Böyle kurslar varsa gitmek istiyorum.’ diyordu. Bu fani kulunuz henüz zencefil aromalı bir şarap ile karşılaşmadı, ama kalan ahir ömrümüzde elbet zencefil, peygamber böceği, köri vs. kokan daha pek çok değişik şarap tadacağıma olan inancım sonsuz. Şarapseverlere ilk tavsiyem, kendilerini çok da “Zencefil aromasını nasıl bulacağım?” diye harap etmemeleridir. Bardağınızı şöyle hafifçe sallayın. Önce burnunuza gelen güzel kokuyu düşünün, sonra çözümlemeye başlarsınız. Yani önce şarap içmekten zevk alın. Bununla birlikte şarap ve kokular hakkında bazı temel bilgiler de bu çözümlemede yardımcınız olacaktır. Örneğin, şarap ya da alkollü içeceklerde kokunun nasıl oluştuğunu biliyor muydunuz?”

Yani kısacası biraz sert bir kategorizasyon yapacak olursak, şarap yaparken herhangi bir aroma ilavesi olmamalıdır.

Eğer bir ilave söz konusu ise tüm dünyada bu şekilde imal edilen ürünlere ‘aromatize edilmiş şarap esanslı içecek’ gibi etiketler yapıştırılıyor. Bunların en yaygınlarından bir tanesi çilek esansı eklenmiş Moscato D’Asti şarabı. İtalya’da kadınların çok sevdiği bu içecek ‘Fragolina’ diye anılır ve dilimize ‘Çilekçik’ olarak tercüme edilebilir.

Aksi takdirde kötü bir portakallı gazozda hissedeceğiniz doğal olmayan tatlar burnunuzu ve damağınızı rahatsız eder.

Halbuki üzümden gelen kokular tamamen doğaldır ve şarabın yapısıyla bütünleşir. Kokular şarabın yapısındaki fenol denen maddelerde bulunuyor ve bu fenoller içtiğimiz şarapların kokusunu etkileyen en önemli faktörler.

Fransızlar, şaraptaki aromalar konusunda da boş durmamış, burun jimnastiği yapabilmeniz için koku setleri geliştirmişler. Bunların en meşhuru Jean Lenoır’in geliştirdiği ‘Le Nez du Vin’. Bu sette sadece herhangi bir şarapta bulabileceğimiz aromalar yok, aynı zamanda şarapta hata sayılacak kokular da mevcut. Tabii bir sürü şarap eleştirmeninin anlattığı ‘koyu Belçika çikolatası’ kokusunu belki bulmakta zorlanabilirsiniz, ama genelde şaraplarda karşılaşacağınız kokuları tespit edebilirsiniz.

How this Crystal Head, that took part in the film and was thought to take the shape between 5 and 35 thousand years and made up of hard quartz, was formed is still an archaeological mystery. A Canadian company, that was inspired by this mysterious Crystall Skull, produced “Crystal Head Vodka” and now it is on sale in North Cyprus.

The vodka, whose bottle and production has got unusual details, has got many awards from different parts of the world. The brand, that is shown as the most qualified vodka to be produced, is distributed by Starting Point, which is the company that brings the famous brands of the world to Cyprus market in a short time.

irinci sınıf ile bomesi yüksek üzümden, yüksek dereceli ve daha çok miktarda zivaniya çıkratılır. Zivaniya yapımında kaliteli üzüme gerek yoktur. Elimizde bulunan siyah üzüm, sultani ve çekirdekli beyaz üzümler ile malaha üzümleri zivaniya için en ideal üzümlerdir. Bağda erimiş ve kalitesiz üzümler de zivania yapımında kullanılabilir. Sucuk yapımında sıkılan üzümlerin posaları da zivaniya yapımında kullanılabilir. Önce zivaniya yapılacak üzümler iyice ezilir. Posası ile birlikte üzüm suyu da küplere doldurulur.

The grapes such as concorde, sultana, muscat and seeded white grape are suitable for zivania. Molten and poor quality grapes can also be used while making zivania. The pomase from the squeezed grapes to make churchkhela can be used to make zivania.

Bomesi sıfıra inen üzüm suyu kalitesiz bir şarap olmuş olur. Sıfıra inen üzüm suyu hemen zivaniya kazanına götürülüp zivaniya çıkartılır.

Zivaniya kazanı dört parçadan oluşur: İlk parçası büyük bakırdan yapılmış bir kazandır. İkinci parçası kazan kapağıdır.

Kazan kapağından buharın kaçmaması için etrafı hamur ile sıvanır. Üçüncü parça kapak ile havuzun içerisindeki bakır boruyu birleştiren parça olup dördüncü parça da havuzun içerisine gelen buharı soğutarak zivaniya olarak akmasını sağlayan 10 inçlik bakır borudur. Ayrıca kazanların yanması için de kazanların altında ocak bulunmaktadır. Kazanın altındaki ocak yanınca kazanın içerisindeki üzüm suyu ve poslarınadaki alkol, yani zivaniye 68 derecede buharlaşır.

Buharlaşan alkol boru vasıtası ile suyun içerisindeki borudan geçerken soğur ve zivaniya olarak akmaya başlar. İlk çıkan zivaniya en yüksek derecede olup metil alkol da içerdiğinden ilk zivaniyanın içilmemesi gerekir.Yani yaklaşık 5-6 litrenin içilmemesi önerilir. Bu ilk çıkan zivaniyanın vücuttaki ağrıların giderilmesi için ovulma ve ateş düşürücü gibi ağrılarda kullanıldığı bilinmektedir.

Zivaniyanın alkol derecesi takriben 60 derecede akmaya başlar. 40 dereceye düşene kadar içilebilir. 40 derece altındaki zivaniya içilmeyip cam silme amaçlı veya temizlik amaçlı kullanılmaktadır.

Measurement process is done everyday and the fall of baume down to zero is determined. The grape juice whose baume falls down to zero becomes a poor qualified wine. This grape juice is immediately brought to the zivania cauldron. Zivania cauldron consists of four parts. First part is a big cauldron made of copper. Second part is the cauldron lid.

In order to prevent the steam to run out, mud is plastered round the cauldron lid.

Third part is the part that connects the lid with the copper pipe in the pool and the fourth part is the 10-inch-copper pipe that cools the steam and makes it flow as zivania into the pool. However, in order to heat the cauldron, there is a cooker underneath. When the cooker heats the cauldron, the alcohol in the grape juice and pomase, that is zivania, evaporates at the degree of 68. Evaporated alcohol started to flow as zivania after going through the pipe in the water and becoming cold.

The first zivania obtained shouldn’t be drunk since it is at the highest degree and therefore contains methyl alcohol. That is, it is advised not to drink nearly 5-6 liters of the first product. It is known that this firstly produced zivania is used for the relief of pain in the body by massaging and as a fever reducer. The alcohol degree of zivania starts to flow at the degree of 60. When it is at the degree of 40, it can be drunk. Zivania that is below 40 degree is not drunk but is used as a cleaning material.

Beyarmudu’nda gerçekleşen yarışmanın konusu Kıbrıs patatesi ile yapılan yemekler oldu. Yarışmada birbirinden farklı tatlı, tuzlu ve ana yemekler sunuldu. Mustafa Şah’ın başkanlığını yaptığı jüri üyeleri, DAÜ Mutfaklar Şefi Ahmet Hocalar ve festival konuk sanatçısı Cem Kafkas’tan oluştu. Birbirinden lezzetli patatesli yemeklerde birinci Ispanaklı Patatesli Tuzlu Pasta, ikinci Fırında Tavuklu Sebzeli Patates Püresi, üçüncü ise Patatesli Cezeriye Tatlısı oldu.

cooking contest was held within the scope of 4th International Potato, Culture and Art Festival. The subject of the competition which took place in Beyarmudu was the dishes made with Cypriot potatoes.

In the competition sweet, salty and main dishes, that were different from each other, were presented.

The jury members, that were chaired by Mustafa Şah, were EMU Cuisines Chief, Ahmet Hocalar and the festival’s guest artist, Cem Kafkas.

Among the delicious potato-dishes, Salted Spinach and Potato Cake was the winner, Baked Potato Pureé with Chicken and Vegetables was the second and the third was Cezerye Dessert with Potato.

»MALZEMELER • 1 kg patates • 500 gr ıspanak • 1/2 bardak yağ • 3 yumurta • 1/2 bardak süt • Mor haşhaş • Hellim veya beyaz peynir • Un • Susam • Tereyağı

»INGREDIENTS 1 kg of potatoes 500 gr of spinach ½ glass of oil 3 egss ½ glass of milk Purple poppy Halloumi or feta cheese Flour Sessame Butter

» HAZIRLANIŞI Ispanaklar yağ ile blenderde püre haline getirilir. Yumurta ve süt ile beraber köpürene kadar çırpılır. İçine ıspanak püresi eklenir. Mor haşhaş hellim veya beyaz peynir rendesi ve aldığı kadar un eklenir. Yağlanmış susam serpilmiş tepside pişirilir. 1 kg patates haşlanır. Tereyağı ve süt ilave edilerek püre haline getirilir. Pişen kek ortadan kesilir. Arasına püre konur. Kek ile kapatılır. Kalan püre tamamının üzerine sıvanır. İsteğe göre süslenir.

» PREPARATION Spinach is pureéd in the blender with oil. Eggs with milk are whipped until bubbling. Spinach pureé is added into it.

Purple poppy, halloumi or feta cheese grater and required flour is added. Oiled sessame is sprinkled and cooked in a baking tray. 1 kg of potatoes are boiled. They are pureéd py adding butter and milk. The baked cake is cut in the middle.

Some pureé is placed between the two parts of the cake and the upper part is put back. All round the cake is plastered with the remaining pureé . It can be garnished at will.

» HAZIRLANIŞI Patatesler haşlanır. Tereyağı ve süt ile püre haline getirilir.

Soğan, küçük küçük doğranmış tavuk ve mantarla beraber kavrulur. Tuz ve en son domates eklenir. Tepsinin içine önce püre serilir. Üzerine kavurduğumuz sos en üzerine beşamel sos dökülür. Fırında pişirilir.
