Welcome Welcome to Northern Restaurant & Bar 2014 which, fittingly, is the fourteenth incarnation of the show. We are proud to say that this is the biggest hospitality trade exhibition outside London, hosting over 250 suppliers, 6,000 visitors and more than 50 tastings and demos. This year we are delighted to welcome Michael Caines and James Martin for their first ever demonstrations in Chef Live, and to offer the chance to win a trip to St Lucia with Chairman’s Reserve in the cocktail competition. We are also launching the inaugural NRB Debate which will see three of hospitality’s leading Northern operators – Tim Bacon, Marcello Distefano and Beau Myers – talk about their businesses and their opinions on what the future holds (see the registration desk for ticket purchases on the day).

Thom was one of the founders of Restaurant magazine and, whilst their Marketing and Events Director, launched the 50 Best Restaurants in the World awards and the College Restaurant of the Year competition. Currently he is the MD of Holden Media, the company behind Northern Restaurant & Bar exhibition, the Northern Hospitality Awards and the NRB Top 50 Awards. Thom is a trustee of the British Food Trust and sits on the boards of Hospitality Action and the Hospitality Sector Group for Pro:Manchester, as well as advising various private and public organisations on their food and drink strategies. He has never been mad enough to actually run a restaurant or bar.
Those who know Beau well will not be surprised to hear he asked for his biog to simply, if cryptically, read “DTF”. Along with partner Marie Carter he is the radical and creative brain behind Manchester institutions Keko Moku, Home Sweet Home, Luck, Lust, Liquor and Burn and the ‘burgers and booze’ madness of Almost Famous. The latter operation has become a flagship brand, with a second site flourishing in Liverpool and the original Manchester restaurant transferring to an enomous new space in the Great Northern development. 2014 will see a further ramping up of operations. Beau is famous for being the brash, irreverent but impossible to ignore voice of the group’s hugely successful twitter feed. The NRB debate represents a rare opportunity to hear his thoughts and opinions direct from the man himself.

Serial entrepreneur and former actor Tim Bacon came over to England from Australia in 1987 looking to travel the world, make a fortune and return home to a heroic welcome from family and friends after a couple of years … they are still waiting. Tim currently entertains as the CEO of the Living Ventures Group, a company he founded in 1999 and has overseen the development and sale of a number of well loved brands including, JW Johnson’s, Via Vita, Life Café, Prohibition and The Living Room. The operations house that is the Living Ventures Group today employs 1300 like-minded individuals through 33 units and 7 different brands, Gusto, Blackhouse, The Alchemist, Australasia, The New World Trading Company, Artisan and most recently Manchester House. Tim cites the challenge of the un-done as his driving force and doesn’t intend to retire until his 93rd birthday.
Marcello Distefano is managing director of the fast growing, multi-awardwinning San Carlo restaurant group which was founded in 1992 as a family business by Marcello’s father and Chairman of the group, Carlo Distefano. The independently owned and operated restaurants are renowned for their ambience and great, original Italian food, attracting a wide range of diners from celebrities and sports stars to business leaders and high profile politicians. The group now has ten individually designed restaurants across the UK, known by the brands San Carlo, Signor Sassi, Cicchetti, Fiorentina, Bottega, Farmacia Del Dolce and Fumo. Further afield diners enjoy Signor Sassi and Cicchetti restaurants in Kuwait, Beirut and Bangkok with plans for further expansion both in the UK and overseas.

10.30 - Book Signing 11.00 - Demo Michael gained his passion for food from his mother who he used to enjoy helping in the kitchen. With his classical French training in some of the finest restaurants in the world, and utilising the best and freshest local produce and products from the West Country, Michael has created a style that is uniquely his own, at once classic yet also highly innovative, a fact recognised with the award of a second Michelin star in 1999. In 2001 he won Chef of the Year at the prestigious Cateys Awards. Michael founded Michael Caines Restaurants Ltd in 1999 and the next year opened his first signature restaurant Michael Caines at The Royal Clarence Hotel in Exeter. In 2003, a chance meeting with Andrew Brownsword resulted in a dynamic partnership and the purchase of the Royal Clarence in October of that year. Michael and Andrew’s shared vision for ABode and Michael Caines Restaurants is ambitious, exciting and far-reaching.
12:00 - Marc Wilkinson Restaurant Fraiche Winner of three AA rosettes and the first Michelin star on Merseyside, Fraiche (Marc Wilkinson’s restaurant near Birkenhead) has a footprint far larger than the diminutive 16-cover space that it occupies. It has a reputation for bold, adventurous flavours. Wilkinson opened Fraiche in 2004 and today - as the only chef in his kitchen - he is as hard-working as any restaurateur alive. He cherishes the freedom that flying solo allows him, though as he says, ‘Fraiche is my passion-driven machine.’ Wilkinson’s food has been described as modern French but - as you might expect from a chef who cites Ferran Adrià of El Bulli, fusion magician Pierre Gagnaire and flavour scientist Hervé as major influences - he is unafraid to experiment. Wilkinson says that when designing his dishes down to the bread served before the meal, he puts them through taste-test after taste-test, exhausting every possibility for improving each before moving ahead.
13.00 - Simon Rogan The French & L’Enclume Simon uses luxury ingredients, market produce and foodstuffs farmed on the premises of L’Enclume in Cartmel, with delicate flavours of flowers, herbs and other foraged items. This, coupled with a love for innovative and unusual technique, has informed his style – leading to dishes which look astonishing, play tricks on the senses and change constantly. L’Enclume’s Michelin star, TV and press coverage and growing reputation led Rogan to open Roganic in London. Now closed for business, the “two

Tues 18 March 2014 year pop-up” brought his recognisable cuisine to the south. He expanded his empire with a move into Manchester’s Midland Hotel where he now has two restaurants, The French and Mr Cooper’s House and Garden, and this year will open a restaurant in London’s Claridges.
14.00 - Paul Askew The Art School Paul Askew is the son of a merchant navy sea captain and his childhood travels to South East Asia and the Middle East, along with his early kitchen experiences in New York, are strong influences helping him to create modern international menus. In 2003 The London Carriage Works and Hope Street Hotel opened to critical acclaim and this year the business celebrates ten years of excellence with expansion plans on the horizon. The most satisfying thing for Paul is the development of his city in gastronomic terms and his ambition remains to win a Michelin star for Liverpool. He is now working towards this project as he plans to open “The Art School” in a Victorian building behind Philharmonic Hall which will be an ambitious 40-50 cover restaurant to raise the bar once more in Liverpool. He continues to be a director and co-owner of much loved Hope Street Hotel and The London Carriage Works but will become chef patron of the Art School upon it’s opening later this year to once again raise the bar of Liverpool’s dining scene.

Brian Mellor will be compering Chef Live Brian is best known for his many appearances at food festivals, hosting chefs’ theatres around the country and as the driving force behind the North West Young Chef Competition. His career has seen him in roles such as managing a team of 70 chefs, working at La Tante Claire or as a personal chef for Chief Executives in plush penthouses. He has competed in and contributed to many Salon Culinaires across the country and has always been passionate about passing on skills, devising craft training programmes for companies and clients. His enthusiasm was recognised with several awards from The Craft Guild of Chefs with whom he holds Master craftsman status as well as being a member of the Master Chefs of Great Britain.

He has produced a classic, a la carte menu of the highest quality which includes some tried and tested James Martin favourites and makes the most of UK produce from renowned butchers, fishmongers, game dealers, farmers and cheese makers. James Martin Manchester is the signature restaurant at Manchester235 Casino, a 170-seat restaurant which spotlights original features of the historic Great Northern warehouse, such as exposed brick work and industrial-chic steel girders. Together with natural daylight and James’ own selection of luxury vintage-style fabrics and artwork, make for an incredible dining space.
12.00 - Daniel Akrigg North West Young Chef of the Year Daniel Akrigg, 19 years old, has worked at Rogan & Co in Cumbria for over 3 years, and lives in Grange over Sands. He won the Cumbria heat, and went on to win the final of the North West Young Chef 2013. He was supported on the day of the final by Simon Rogan and his head chef Dani Barry.
13.00 - Harry Yeung Yang Sing Award winning Chef, Harry Yeung of Yang Sing, is one of the most celebrated Chinese chefs in the UK. He began his culinary apprenticeship in the kitchens of Hong Kong, aged 13. After gaining experience in London and other establishments, Harry joined the family business to become Executive Chef at Yang Sing.
14.00 - Steven Smith Freemasons at Wiswell Steven Smith is the Chef Patron of the much acclaimed Freemasons at Wiswell. Born and bred in Lancashire, Steven learned his trade in some of the North’s top establishments before going solo at The Freemasons, creating a true gastronomic experience in a stylish yet homely pub setting. Awards for both Steven and his team at The Freemasons have come thick and fast, with the most recent including The Sunday Times Top 100 Restaurants, The Waitrose Good Food Guide, The Budweiser Budvar Top 50 Gastropubs Awards 2013, the UK Top 50 Gastropubs, a Bib Gourmand in the prestigious Michelin Guide and three Rosettes in the AA Awards.
Andrew Pern Andrew Pern’s name is synonymous with that of his pub, The Star Inn at Harome, acquired in 1996 and consistently appearing on a host of awards lists for its hospitality and Andrew’s cooking ever since, including a Michelin star held from 2002 to 2010 inclusive. With two acclaimed books, ‘Black Pudding and Foie Gras’ and ‘Loose Birds and Game’, to his credit, Andrew is also a regular contributor to a number of publications as well as a popular ‘performer’ at local food festivals. In 2011 he took part in BBC2’s ‘Great British Menu’, progressing to the Finals and just narrowly missing out on getting his Celebration of Yorkshire Rhubarb onto the Banquet Menu. Autumn 2013 saw the opening of ‘The Star Inn The City’ in York, a Brasserie-style all-day dining concept set in the amazing surroundings of the Museum Gardens.
Matt Hunter Head Chef at The Star Inn The City is Matt Hunter, who came on board prior to the opening of York’s most talked-about 100+ capacity restaurant, to work with Andrew. Lancastrian, Matt, has stood up well to his baptism of Yorkshire fire and is working to establish The Star Inn The City as the natural focus for York foodies, building on his cookery demonstrations at the York Festival of Food and Drink and beginning with specialist supplier/ cookery demonstrations featuring seafood preparation and butchery, which underline the key role played by suppliers in this restaurant. His latest claim to fame is having cooked for Heston Blumenthal, who recently dropped in at the restaurant, whilst filming locally.
16.00 - Aiden Byrne Manchester House Aiden Byrne was head chef at The Grill at The London Dorchester from late 2006. He was previously Tom Aiken’s head chef at his Chelsea restaurant and has worked with several other high profile chefs such as Paul Rankin and David Adlard. Most impressively, at the age of 22, Aiden became the youngest chef ever to win a Michelin star, an accolade he is extremely proud of. Aiden has made numerous TV appearances, including Masterchef, and Great British Menu, where in 2013 he famously achieved 10/10 for one of his dishes. Last year Aiden joined forces with Living Ventures and opened fine dining restaurant, Manchester House, to great acclaim.
