Welcome to Northern Restaurant & Bar 2015 Welcome to what is now the fifteenth edition of Northern Restaurant & Bar. It’s a significant milestone to have reached, and what better birthday present could we wish for than the industry we serve, the Northern hospitality industry, to be in its finest ever fettle.

The whole region seems to have gone into overdrive, with new start-ups, expansion of leading local operators and the best of the London big names finally taking our region very seriously indeed. The show has expanded to reflect that – it is the largest outside the capital - with over 270 exhibitors, international chefs and cocktail experts as well as the NRB Debate with Nick Lander, the NRB Top 50 awards and the Too Many Critics dinner at Hawksmoor to name but a few of our satellite events.

Beyond the exhibition itself, which forms the central hub of Northern Hospitality Week, 2015 is shaping up to be a productive year for NRB. As well as already starting to plan next year’s show, debate and awards et al we are working on plans for a series of industry talks and dinners throughout the year, as well as consultancy, an industry discount card, and a revamp of the NRB website to make it a repository for the most compelling insight and opinion on the Northern hospitality industry that you will read anywhere.

We know that you as operators would never rest on your laurels (though you might use them to flavour a stew) and nor would we at team NRB. Enjoy the show, and we hope the ideas, contacts and innovation it contains drives your businesses on to ever greater heights.

The NRB Debate, sponsored by MMU, offers a unique opportunity to hear headline speaker Nick Lander, the esteemed restaurateur, critic and author of industry bible ‘The Art of the Restaurateur’, discuss his universal rules of running restaurants, and how they apply in the North. Providing a local viewpoint will be Craig Bancroft, the legendary co-owner of Northcote.

Tuesday 17 March 11.00 D anny Young NW Young Chef of the Year anny Young, 20 from D Accrington, Lancashire, was crowned Essential Cuisine’s 2014 North West Young Chef. chef at Nigel Haworth’s reputed Northcote Manor, A Danny described himself as “overwhelmed” to hold off strong competition from five other regional finalists in a tense, two and a half hour cook off. Tasked with a brief of keeping it local and seasonal, the young charge’s winning three-course menu consisted of Asparagus with Hollandaise to start; Goosnargh Guinea fowl as a main and Hesketh Bank Strawberries, with Northcote’s Garden Mint for dessert.

12.00 K enny Atkinson House of Tides Kenny Atkinson is chef proprietor at House Of Tides in Newcastle and previously won Michelin stars at St. Martin’s On The Isle and Kenny Atkinson At The White Room. enny opened House Of Tides in February 2014, K located on the historic Newcastle quayside and just a stone’s throw away from the iconic Tyne Bridge. His classically British food with a modern twist champions locally sourced, sustainable fare. Kenny is a regular on Saturday Kitchen and has appeared twice on Great British Menu with his dishes selected for the banquets.

13.00 M ichael O’Hare The Man Behind The Curtain Michael, Head Chef and

including Noma. He opened The Man Behind The Curtain on the top floor of Flannels in Leeds in June 2014 T he food is modern and signature of the restaurant is the 12 serving tasting menu available on an evening.

14.00 D aniel Clifford Midsummer House Daniel Clifford took over Midsummer House in 1998 with one dream, to turn it into Cambridgeshire’s best restaurant.

The restaurant was awarded its first Michelin Star in 2002 followed by the second in 2005. ver the years the style of food has developed but the O techniques and passion to provide our guests with a unique experience have remained the same. Daniel’s menu and style of food focuses on the most seasonal produce and his dishes are developed to make the taste as natural as possible. Daniel spent the first 12 years of his career training in some of the best restaurants in the UK and France. His time with Jean Bardet in France, whom Daniel cites as his biggest influence, Simon Gueller at Rascasse and Marco Pierre White at The Box Tree, have all contributed to Daniel’s development into one of the country’s most respected chefs.

Nigel is regarded as one of the greatest British chefs practising in the UK. He has led Northcote’s cuisine since 1984 and held a Michelin star since 1996.

Simon Shaw opened El Gato Negro

Northcote has become one of the most respected British kitchens with its true heart in regional artisan production, executed with outstanding gastronomic flair. In 2014 they opened the cookery school and fifteen years ago launched Obsession, Northcote’s annual homage to the finest food and wine with this year’s line up of 27 chefs over 15 nights.

Nigel has appeared regularly on television, including a winning appearance on Great British Menu in 2009 and acting as a mentor to the chefs of the North East region on Great British Menu 2012.

Favourite Dish on the Menu: Hare with it’s own black pudding.

Simon’s love of Spanish produce and tradition has inspired a decade of both authentic and surprising tapas creations, delighting customers and impressing industry alike. He thrived in London as executive head chef to the prestigious Harvey Nichols Knightsbridge and will bring this breadth of professional experience as well as his personal passion for great Spanish food and wine to the North West with the launch of El Gato Negro Manchester in 2015.

12.00 M ichael Wignall Hotel Football & The Latymer Michael is one of the top six most decorated cooks in the world, with two Michelin stars and five AA rosettes. ichael’s ethos is firmly rooted in the traditional, so you M can always expect a straightforward, no-nonsense approach. However, he also has a truly innovative touch that makes his dishes unique. He creates dining experiences for GG Hospitality that you won’t find anywhere else. Café Football captures the essence of football in the restaurant and menu with a fun, relaxed dining experience influenced by the spirit of the game.

13.00 N acho Manzano

& Cesar Garcia Iberica Michelin Star chef Nacho 3 Manzano is renowned for his speciality fish dishes and his modern interpretations of traditional Spanish cooking Nacho is joined by Ibérica’s Group Head Chef César García.

César relentlessly pursues his belief in Spanish provenance to ensure only the finest Spanish produce is used in creating Ibérica’s menu. They both believe that quality ingredients are of the utmost importance to allow the flavours and the textures of the produce to take centre stage.

15.00 D avid Mooney New Moon Co David is one half of the New Moon Co team with Paul Newman and together they are transforming venues and creating concepts which are proving highly successful, across the North West!

David Mooney has a glittering CV including an apprenticeship with Raymond Blanc and a stint as Commis Chef to Marco Pierre White! Previously Chef Patron of the Belle Epoque in Knutsford, David is recognisable as a media star, with many appearances on television and on radio under his belt.

Favourite Dish On The Menu: The Pudding - Baked suet pudding, filled with prime British beef, onion & stockpot gravy - mash & black peas.

16.00 G areth Jones Mr Cooper’s House & Garden Gareth heads up the team at Mr Cooper’s House & Garden with a focus on good food cooked with flair & imagination, technically perfect with minimum of fuss.

Gareth’s culinary career began at the Crabwall Manor in Chester, followed by a position at The Chester Grosvenor Hotel, in La Brassiere and Michelin-starred The Arkle Restaurant, now the Simon Radley at The Chester Grosvenor. Gareth accepted his first Head Chef position at Bodysgallen Hall Hotel and Spa in North Wales. In 2012, Gareth joined Simon Rogan’s team as Head Chef at Mr Cooper’s House & Garden at The Midland Hotel in May 2013. Gareth has represented Wales in BBC’s ‘Great British Menu’ TV series, and was voted ‘Chef of the Year’

by Pride of Britain Hotels consortium.

GABRIEL BOUDIER COCKTAIL COMPETITION Wednesday 15:15 in the Drinks Live theatre This year’s national cocktail competition focuses on the French liqueur brand Gabriel Boudier, giving bartenders across the country a chance to create two signature cocktails and win themselves a trip to Dijon!

4 finalists will compete in the Manchester final, one from the Scotland heat, one from the London heat, and two from the North. Finalists must create one signature serve containing at least 10ml of any expression from the Gabriel Boudier Iconic range and one signature serve containing at least 15ml of any expression from the Gabriel Boudier Bartender range.
