My goodness where has this year gone? Didn’t we just finish digging out of a freeze and now we’re on the doorstep of a Texas summer? Without question, it’s easier said than done, but the importance of slowing down and savoring the moment is so important. If you’re anything like me — always in a hurry to get somewhere, finish something up, or I find myself so buried in a phone with work and life that the world just drifts on by and I’m none the wiser to it’s passing.

We live in a region that’s so rich in beauty, history and recreational pursuits, many people plan their annual family vacations to our area. They come with the hope of unwinding, capturing time, and creating moments with family and friends that will last forever. With views for miles and virtually every activity unique to the Texas Hill Country available within the friendly confines of Cordillera Ranch, it’s probably what drew many of our residents to call this home and recreate the moments of days gone by with the ones they love.

Remember, it wasn’t that long ago, in a time before DVRs, if you missed a TV show, it was gone forever — or at least until the reruns aired! There’s no pause, rewind or record function in life. Slow down, enjoy it and don’t miss a moment because once it’s passed, there are no reruns.

In closing, I’d like to say thank you to our CR Living Editor, Trisha Doucette, for her tireless work behind the scenes in producing our magazine that we all enjoy so much. She not only handles CR Living, but another three or four publications (that I’m aware of) and always makes it feel as though we are her only clients. Thank you, Trish! WHAT PAST WORK HISTORY PREPARED YOU FOR THE CLUBS?

I began my hospitality journey at 16 years old as a hostess at TX Land & Cattle. Since then, I have been involved in many concepts, from fast casual and fine dining to luxury hotels. Prior to Cordillera Ranch, I was selected to assist in opening Landrace with six-time James Beard Finalist Chef Steve McHugh, and Carriqui, a 400-seat restaurant at the Pearl District in San Antonio. During a short time in Columbus, Georgia, I worked under Jamie Keating, a Certified Executive Chef and U.S. Culinary Olympian, who heightened my eye for both details and elevating guests’ experiences.

WHAT DO YOU LIKE MOST ABOUT WORKING HERE?

My favorite part of Cordillera Ranch is the energy of the property and people. There's no question that the property is beautiful, but working here at Cordillera for the past two months has exposed me to some of the most passionate and kind people — team and members. The team, who I have worked side by side with from front of house to back of house, were quick to make me feel welcome and have impressed me with their commitment to the operation. I look forward to continuing their development and supporting them, however I can. The members have been wonderful and have been a joy to get to know each time they visit. Shout out to Mr. and Mrs. Lynch as they were the very first members I met!

WHAT INSPIRED YOU TO PURSUE WORK IN THIS FIELD?

The warmth of hospitality inspired me to embark on this journey, and has given me the opportunity to connect with and hear people’s stories over delicious food and heart-led service.

HOW DOES THIS INSPIRATION CARRY OVER TO YOUR PERSONAL LIFE?

Having a heightened awareness instilled in me has allowed me to be in-tune with the people close to me, and has given me the ability to be more considerate to others and a better listener and giver.

WHAT’S THE FUNNIEST THING TO HAPPEN TO YOU IN THIS BUSINESS?

I was working in San Antonio in 2021 and a guest shared one of her most memorable dining experiences with me, which happened to take place at Epic Restaurant where I worked in Georgia in 2014-2017… She had no idea that I previously worked there so it caught me off guard as it was random, but it made me smile.

WHAT IS YOUR MOST MEANINGFUL PERSONAL EXPERIENCE?

Having my 1-year-old son, Ace. Parenthood has been the most intense, yet rewarding thing I have experienced thus far. Watching the world through his eyes reminds me to appreciate the simple things.

HOW DO YOU SPEND YOUR FREE TIME?

I teach and practice yoga and meditation, I love to travel, and I treasure every moment with my son.

WHAT IS YOUR SECRET TO HAPPINESS?

Movement in nature whether it be yoga, running or hiking, etc.

WHAT WAS YOUR MOST RECENT ADVENTURE?

I spent a month in Rishikesh, India to get my 300-hour Yoga Certification.

WHAT’S ON YOUR BUCKET LIST?

The top three that come to mind are:

1. Take Ace to see the Great Barrier Reef in Australia when he is a little older. Right now, he loves watching aquariums and animals.

2. Qualify for the Boston Marathon in the next three years or so. I have a lot of work to do as I need to run 26.2 miles in under 3:30.

3. To experience dinner at Eleven Madison Park in NYC since they have built an incredible reputation in the food and beverage industry.

WHAT IS YOUR FAVORITE SMELL, AND WHY?

Lavender, to relax.

ANYTHING THAT WOULD SURPRISE OTHERS ABOUT YOURSELF?

I went sky diving when I was 19 years old, and I have been to seven countries in the past decade.

COMPLIMENTS to the

EQUESTRIAN CENTER TEAM!

The team at the Equestrian Center, led by manager Jenn Guidt, has been getting rave reviews from members. We want to recognize their service, and thank the members who took the time to show their appreciation.

"Please consider this special recognition recommendation for the extraordinary efforts by the Outfitter and Equestrian staff to prepare for the recent C-Star event. In addition to their full-time care of the horses, buildings, trails, pastures and grounds, this team multiplied their efforts to trim trees, mow and re-mow areas, spread caliche, cordon off parking and prepare the arena for the bull riding event. These extra jobs were monumental!

First, Jenn Guidt communicated to the Equestrian Center members what was being done, areas to avoid and appropriate times for riding. Everyone knew what to expect for their horses, parking and access.

Weeks of preparation included grooming the pastures, felling dead trees, trimming limbs and removing debris. At least one horse required medical attention in the days immediately prior to the big event. Jenn and her team quickly identified the issue and began measures to heal and save this horse!

The staff you have working at the Equestrian Center are not only hard-working and horse savvy, but they are also pleasant and helpful! The atmosphere and attitude at the barn are welcoming and warm.

In summary, I would like to recognize Jenn Guidt, Jordan Adams, Meghan Moriarty, Hannah Wittig, Jesus Jiminez and Jake Panknin for their everyday great work as well as their extraordinary efforts to make the C-Star event a success, while allowing safe access to the equestrian members and caring for all the horses!"

"I just wanted to let y’all know how THANKFUL I am to have Jenn Guidt as our Equestrian Center manager. My reasons are too long for a C-Star note so this is being sent. Some of the reasons include:

• COMMUNICATION - Jenn has markedly improved the communication between management and the boarders. She sends out emails on a regular basis. She met with boarders to discuss any ideas, concerns etc., and was very open and receptive!

• FRIENDLY - Jenn always has a smile on her face for everyone! She maintains a positive attitude and it is infectious!

• HORSE CARE - Jenn is trained and very knowledgeable about caring for our horses. She goes way above and beyond when a boarder has a sick or injured horse — administering first aid, communicating with veterinarians, noticing when something “isn’t right” with a horse and calls the owner to discuss in a timely fashion.

• MAINTENANCE - Jenn has implemented a much-improved maintenance program around the Equestrian Center — keeping with up tree trimming, fly control, trail maintenance, mowing, repairs of years-long broken items and organized parking.

• EVENTS - Jenn has organized and participated in horse trips and activities with the other horse enthusiasts in Cordillera and we LOVE it!

• HORSE FEED - Jenn noticed a problem in the way the horses were looking on the current feed and brought in the Purina team to look at the horses, talk with interested boarders and changed over the feed program to best suit our particular horse.

• STAFF - We now have a great staff that Jenn seems to work really well with and they treat us and our beloved horses with care and concern. Jenn is at Equestrian Center most every day. Her broad equine experience coupled with her upbeat attitude, deep concern for the horses and hard work is a true blessing to those of us who board at Cordillera."

Although their contemporary home was completed in 2007, they didn’t move to Boerne permanently until 2014, when Jim finally retired.

Jim will tell you his is a life of luck. He had good parents and as a self-proclaimed military brat, he moved around a lot, which exposed him to variety that most of his contemporaries did not have the fortune of experiencing until later in life.

Following in the footsteps of his father, he signed up for ROTC in high school. “By my junior year, ROTC places were hard to come by. I asked for my first USAF assignment to be the same “command” as dad, without knowing the mission was limited to the U.S. and Greenland,” remembered Jim.

He then went on to study law at LSU. Law appealed to him personally and, to this day, he still likes to read about current cases and advise colleagues when requested. “When I got to law school and they gave me books to read, I realized someone was

going to pay me to read and to get my advice, which I thought was great because I like to read and think a lot,” he said.

After college, he landed a job as a tax/business lawyer in Houston at a prestigious international law firm, Baker Botts LLP, referred to as the second-oldest law firm west of the Mississippi. He enjoyed a long, successful career there for more than 40 years.

Enter Jonell. Both Jim and Jonell had been previously married, from which Jonell has two children and Jim has one.

Although Jonell was born in Tucson, she grew up in Corpus Christi. “My father and grandfather were both doctors; my father was a flight surgeon for the Army Air Corps. My family had a long history in South Texas. It was a wonderful place to grow up,” shared Jonell.

She graduated from the University of Houston with an English degree and started off her career as an executive secretary, something she was very good at, before becoming a mother. When her son was 5 years old, Jonell decided to go into retail and worked as a buyer for an upscale women’s clothing store. “I very much had a ‘passion for fashion,’” she joked. “I worked at Etui, which is a boutique in the River Oaks area in Houston where I was a personal shopper. Helping these ladies feel good about themselves… it was just a big payoff. I did it for 35 years.”

The couple first met in 1988 through a mutual friend who was one of Jonell’s clients and also a fellow church member. “We went out to dinner,” they both said simultaneously. “And just kept dating,” added Jim.

Jonell and Jim Raborn have been longtime residents of Cordillera Ranch, and remember when the Clubhouse was still in the process of being built. “When we bought the lot in Cordillera, there were about 90 homes and none for sale,” said Jim.

Jonell describes Jim as serious and thoughtful before he speaks — also tall, good looking, educated and successful. “He pretty much had it all,” she recalled thinking on that first date.

Jim was enchanted by Jonell’s cheerful demeanor. “She just seemed to be happy,” he said, a trait you’ll quickly notice as well upon meeting her.

The couple discovered Cordillera Ranch through a friend and ultimately moved here because of Jim’s love of golf and the serenity of the Texas Hill Country. “It’s nice out here at night — not many lights, not much traffic, so we like the space out here. There’s more elbow room,” noted Jim. “I would also go to the exercise facility and we would eat at the Cabana and loved it. The atmosphere was wonderful.”

Jonell picked up golf too, for a while, carrying clubs in her car so she could stop at a public course in Houston and play whenever she had the time. “When we were building our house, I enjoyed playing when it was perfect weather.

I liked having friends in the Women’s Golf Association,” she said, and laughed, adding, “It takes too long to play and then it became I wanted to play because it takes too long! It’s nice to get out on the course, away from all the things you need to take care of.”

Now, Jonell’s involved with a charity she’s thrilled to have started called One Hundred Women in Cordillera, which supports One Hundred Women of The Hill Country, an organization that identifies local charities which need help.

Additionally, she’s a member of the book club in Cordillera, which meets once a month (morning and night). She’s been reading “Lessons in Chemistry,” “Hamnet” and “Becoming Mrs. Lewis.”

As mentioned previously, Jim also likes to read, not only cases he’s following in the news, but also mystery or historical fiction, where he can glean some interesting knowledge. Currently, he’s reading Thomas Perry’s “Murder Book.”

“When I was working, younger and healthier, my favorite hobby was running and playing basketball. Age catches up, so I had to transition to golf. Now, I read constantly. If I’m not driving a car or playing golf, I’m reading a book,” he shared.

He’s likely enjoying a read while sipping on one of his rare bourbons from his extensive bourbon collection, which includes bottles from Horse Soldier, Garrison Brothers, Conecuh Ridge Distillery and a very unusual one called Texas Legation from Berry Bros. & Rudd, among many more. Jim also collects birds, which are hand-carved out of different kinds of wood.

This love and appreciation for exceptional artwork seems to be within the Raborn’s purview and is displayed graciously throughout their beautiful home. Discovering artists the couple

admires has been serendipitous. For instance, while wandering the countryside around Abiquiu, they stumbled upon the remote adobe studio of photographer David Michael Kennedy and thus began their collection of the artist’s Old World Palladium prints.

“Our artwork has been acquired over many years. Each piece was brought into our home simply because we liked it and not because it matched other decor. However, there is always a place for it because when something attracts you, it will complement other things that caught your eye. A couple of my favorites are a Paul Jenkins graphic, a Lamar Briggs abstract and a couple of Robert Richter paintings that are landscape abstracts,” shared Jonell.

Once avid world travelers, they’ve ventured across the globe to exotic locales like France, London, Berlin, Warsaw, Hawaii, Italy, Australia and New Zealand, but unfortunately the pandemic put the kibosh on that. “We loved going to the Cayman Islands,” said Jonell. “We would go every year, and we just loved snorkeling and diving.”

Although they claim they aren’t as active as they once were, they’re still on the go, but now mostly a little closer to home. “We go to Houston at least twice a month [via the Vonlane luxury motor coach service]. I had no idea we’d get so involved and be so crazy about our grandchildren,” said Jonell.

For summer, the grandchildren will be visiting Cordillera Ranch to enjoy some of the exceptional youth camps available, including horseback riding and swimming camps.

“The kids love coming to visit. They like the pool with the slide and seeing the animals. They spend time looking out the window sighting deer and fox, just watching what wanders through our yard. They get a kick out of that,” she added. “I love birding, so I spend a large amount of time walking around the house with binoculars. There are so many birds… woodpeckers, now painted buntings and yard birds.”

Jim and Jonell are proud of this house that they live in and share with their family and friends when they come for a visit. The Raborns were the first to have what they call “look-through” windows in their house, veering away from the Texas Tuscan style. “It was a contemporary feel, but now seems to be the rage,” said Jim. “Most builders didn’t know what to do with it, but Stadler was excellent and jumped right in, and did just what we wanted. This house has stood the test of time. It always amazes me when we’re gone for a while, how much I still like the interior and the views.”

After 16 years, it’s safe to say that the Raborns, their home and their family, have become part of the landscape that they so adore, together, with books and all.

2023 C-STAR MEN’S MEMBER/GUEST TOURNAMENT

The 2023 C-Star Member/Guest Tournament was contested on Thursday, April 27 through Saturday, April 29. This event consists of a practice round, an 18-hole putting competition (on the golf course), five 9-hole matches and a shootout. Like with most member/guest tournaments, we focus on providing an exceptional experience with golf, food and entertainment. Mother Nature tried to get in our way a little bit, but we were able to get all five matches played along with the shootout to crown our champions — more on that in a bit.

While the general structure of C-Star has been consistent over the last few years, we are always seeking new ideas to keep the event fresh. This year, we partnered with the Lester Meier Rodeo Company for our Thursday night entertainment — they put on a bull riding exhibition at the Equestrian Center. While putting results and flights were revealed that night, the real excitement was a front row seat on the porch of Hawkeye Bar to watch the cowboys attempt 8-second rides.

Another one of the enhancements came from our agronomy team and culinary team led by Stu Rowland and Executive Chef Isaac Cantu — they expanded the on-course bars to include food stations. The Tree Bar (at #4/#7) featured Chef Greg’s smoked concoctions while The Cave (at #12/#16) featured hot bangers prepared by Chef Chase on the Evo. Moving the food on the golf course was a huge hit as it decreased turn times and made the flow of the day a little smoother.

The 60-team field was broken into 10 flights and each team played a match against the other teams in their flight — this is often referred to as a round robin format. After the fifth match on Saturday afternoon, flight winners were determined and parimutuel wagering opened for the shootout.

The shootout was contested over a five-hole stretch (#10, #11, #16, #17 and #18) in an alternate shot format where two teams are eliminated at each hole. On #10, the father/son duo of Smith/ Smith were eliminated after they hit two tee shots OB right and then chipped it into a bunker near the green. The team of Jason West and Mike Norwood were also eliminated after a costly 3-putt from three feet (below the hole). On #11, most of the field played it conservative hitting their second shot out to the right. We ended up having a chip-off from behind the green where the team of Pratt/Cook and Dempsey/Dempsey were eliminated. Historically, #16 has produced some nasty golf shots — that trend shifted a little this year as only three teams weren't able to find dry land (yes, 50% is an improvement!). This hole would also end in a chip-off leaving us with the teams of

Webb/Burke, Emery/Desrochers, Coleman/Crumley, Harpole/Altomare.

Here's where the team of Harpole/ Altomare started to shine — based on the shots they hit on #17 and #18, it's hard to believe these guys were in the Rodeo Flight! They slid right over to #18 with ease along with Emery/Desrochers, while the other two teams had a chip-off to determine third place. Tony Coleman and Paul Crumley would win that chip-off — one of the great truths in golf is “every shot makes somebody happy.” Everyone who wagered on the Nicklaus Flight in the parimutuel were happy — those who wagered on the Murdock Flight, not so much.

On the 18th tee, the only thing separating Emery/Desrochers and Harpole/ Altomare was one stroke — the Rodeo Flight team was popping. While they didn't hit their best tee shot, they executed a nice second and third to leave their ball below the hole, just off the green, putting for net birdie. The team of Emery/Desrochers hit a great tee shot followed by a tugged second, which left them an interesting third. With the hole location tucked right just above the slope, they had to play their third over the left bunker across the center

valley, and up the hill. Emery hit a pretty good chip, but he was still waiting for it to move right off the slope — this left his partner with about 12 feet for par. Nick Altomare was able to use his putter from just off the front of the green and snuggled it up to that uncomfortable range where you'd normally be begging for a gimmie from your buddies. Mark Desrochers would go on to miss the par putt but they safely secured bogey. This left Jay Harpole with a fairly straight putt from about three feet for the victory ... he buried it to claim his first C-Star Member/Guest victory. Not only will Jay and Nick have their names engraved in the Champions Gallery for all eternity, Jay will have an exemption into the 2024 C-Star, his flight will be named after him, and they get to take home handcrafted belt buckles and money clips from legendary silversmith Clint Orms.

BENTGRASS THRIVES WHY OUR

Summertime in the Hill Country is upon us with the warm Southern breeze and the rain spigot seemingly turned off from the welcomed spring rains. The course has benefitted from those rains as course conditions have been excellent to start the summer. One area that we focus on during the summer is our bentgrass greens. Cordillera’s Pure Distinction bentgrass is a highlight of the Club’s golf experience and during the summer, it takes many tools and talents to keep them rolling nicely.

Bentgrass has historically been a grass that finds its home in regions where the climate is cooler than the Southern states. It is a C3 plant, meaning that it has adapted to cooler environments where it thrives in either wet or dry environments. Although we can see some wild swings in temperatures, our Pure Distinction bentgrass grows nearly all 52 weeks of the year, unlike Bermuda surfaces that have a period of dormancy in the winter. Bentgrass is also chosen for its fine-bladed texture and density. With a dense canopy of fine blades of turf, putting across the surface will be smoother and more consistent than C4 (warm season) turf grasses.

When summer arrives, bentgrass is more susceptible to both environmental and mechanical stresses. To address those stresses, we employ a few tools and strategies. First, mowing the greens every day and each green receiving 100 golfers or more walking all over creates a tremendous amount of stress. To alleviate that stress, we employ consistent topdressing and aeration of some kind each Monday to reduce compaction and allow the greens to breathe and recover. Summer aerification consists of smaller pencil-sized holes that have minimal impact on golf as well as the topdressing of a very light coat of sand. Unlike the spring and fall aerifications in which we disrupt the surfaces much more, our summer practices are lighter in an effort to achieve recovery and lower impact to play.

Secondly, and most importantly, is our irrigation and water management. As we like to say, “Water kills!” The task of monitoring moisture and deciding how much water is part science and part feel. Before the advent of monitoring devices (pictured), watering would happen more on dry days, less on humid days, and we’d poke a sample probe in the ground to see how wet or dry the soil was. Today, we use a device that measures the volumetric water content percentage of the soil under the turf. Depending on the forecasted temperature and humidity, we can be much more specific with our water amounts and locations of applied water as we typically measure 20-30 spots over each green. Still, this requires a skilled person with a water hose to apply the correct amount of water. Too much water on a hot humid day can essentially boil the grass, whereas the perfect amount keeps the grass with enough moisture to maintain temperature throughout the day.

Finally, our last tool is essential to keep air flowing over the surface to cool the plant. When you sweat, beads of water form on your skin and when you feel a breeze, your skin feels suddenly cool. The same is true with the fans we place around our greens (pictured). The fans keep constant airflow over the surface of the green and promote the evaporative cooling effect to the turf. Additionally, the fans keep the surfaces dry, reducing the potential for disease and surface algae from the increased watering during the summer. As an added benefit, the fans promote oxygen exchange with the soil as air constantly flows across the surface especially when we do our light venting aerifications.

Cordillera Ranch’s greens are the Southernmost in the USA that are bentgrass. The time, tools and team talents keep them thriving, even in the most stressful months of the year.

FOR CORDILLERA RANCH RESIDENTS

Four Cordillera Ranch teens have excelled on their high school tennis teams, leading to district and state titles, and well-deserved bragging rights.

JESS AND SAM GONZALES

For 2023 Boerne High School graduates, Jess and Sam Gonzales, they both agree that their greatest personal victory was winning the Tennis Doubles State Title with each other, as it was the last competitive match they will ever play together. But the twins’ accomplishments extend father back and to a much bigger degree. In fact, they ended their high school years as the most decorated athletes in Boerne High history. And they are the only athletes to win gold in two separate sports. Jess and Sam each list 2020 Team Tennis State Finalist; 2022 Soccer State Champion; 2022 Team Tennis State Finalist; and 2023 Tennis Doubles State Champion on their resumes, with Jess also adding 2021 Soccer State Championship. Jess and Sam credit the support they received from their parents, coaches, players and the community for enabling them to succeed and accomplish their goals. While they have both decided to not play college tennis, they will spend their summer prepping for their next adventure — Jess at A&M and Sam at UTSA — and they shared with us some life lessons they learned from their high school sports careers.

What is your biggest takeway from participating in team sports?

Jess: My biggest takeaway from team sports was how important family is. On both my tennis team and soccer team, we have built our own family that has helped us push each other to accomplish many things.

Sam: My biggest take away from team sports is to be nice to people.

Now that high school has ended, what was your greatest challenge?

Jess: My greatest challenge was realizing that my career as a student athlete has ended.

Sam: My biggest challenge was myself. It was just me trying to find motivation.

Incoming Champion High School senior Cameron Sudyka recently won the Girls Junior Varsity District Title in Tennis Doubles with her partner Sydni Sage. However, Cameron’s goal is to make it to State with her doubles partner in her senior year! She treasures the sense of unity and encouragement she receives from playing on a team, and even though the tennis season for the school

year might be over, Cameron will have many opportunities to play and have fun on the court. She’s planning to stay busy on the tournament circuit, plus at camp and team tryouts. As for college, if the right opportunity presents itself, it’s possible she will continue to play tennis. But Cameron said that whether she plays competitively or not, tennis will still be a part of her life in college as a way to stay active and meet new friends.

INGRID BRADEN

Ingrid Braden might be the youngest of the group, entering her sophomore year at Champion High School in 2023/24, but that just means she has three more years of accolades to add to her resume. She was undefeated in Tennis Singles for the entire school year, and she also won Girls Junior Varsity District in Tennis Singles. Ingrid has been working regularly with Cordillera instructors Joe De Luna and Alejandro Chong at the Tennis Club since her family moved to the Ranch a year ago, and said her skills have improved tremendously since then. She credits tennis for helping to improve

her confidence and persistence, and even calm her nerves. Ingrid also competes in local USTA tournaments, especially in the summer. She wants to play college tennis, and plans to continue her lessons with Joe and Alejandro to achieve that goal.

Self-Defense Classes at The Clubs of Cordillera Ranch

Ladies and Gents ... yes, both of you. Do you have a clear picture of what you would do or how quickly you would react if you were attacked in the parking lot at the grocery store? What about if you were surprised by someone wanting to do you harm as you're walking out of the theatre or a restaurant? What if you saw someone hanging out around your car as you walked out from work? Were you aware that your kitchen is one of the greatest weapons caches on the planet?

Hi, my name is Kevin Durio. I'm a trainer here at The Clubs of Cordillera Ranch. I've been practicing martial arts for 50 years and have been teaching self-defense classes almost as long. I have many years teaching Law Enforcement and Military personnel a lot of these very same skills.

We offer three self-defense classes a year, with the classes structured in tiers, Levels 1-3, starting with basics and moving to more advanced skills. It's helpful to do them in order, but certainly not necessary. There's something for everyone at every level in every class.

In Level 1, the main subject covered is the greatest concealed weapon you could possibly carry ... YOUR BRAIN! This means learning to notice danger before it happens. We'll cover situational awareness skills for everyday use, self-defense thinking as well as the good and bad of carrying self-defense "tools." Also covered in Level 1 will be the best targets to hit and how, along with defense/offense drills to make it all come together smoothly. I know, it sounds like a lot, but honestly, you already know much of the course content, you just haven't thought about it or practiced it in a while, if ever.

In Level 2, we'll quickly review Level 1 and then go over the main focus of Level 2, which is learning a few of the best "ground fighting" skills that are easy to learn and remember just in case you get knocked down. This will NOT be "sport" throws or "tap-out" moves. These are real word skills that only won't work if you don't use them.

In Level 3, once again we'll quickly review Levels 1 and 2, and then we step it up a notch by introducing you to improvised weapons of opportunity for you to hurt the attacker with. These will be everyday items that you may not realize are just as good as any "specialized" self-defense weapon. We'll also cover reliable ways to defend yourself from traditional weapons that might be used on you — knife, bottle and handgun. We'll also cover how to do a "threat assessment" on yourself and on your home so you have a better-than-average chance of avoiding a personal attack or an attack on your home.

GOOD self-defense consists of very few, very high-quality skills.

BETTER self-defense consists of daily awareness.

BEST self-defense consists of avoidance.

I offer three courses a year, quarterly. Generally speaking, they are done in order, but each level goes over the previous one, so join in anytime! Look for them on the Group Exercise Calendar, usually in January, May, and August.

STRONGER FEET, BETTER CORE & MORE

We all want better balance and a stronger core, right? Having a strong core helps us in everything from sports to simply walking. It helps us balance and keeps our back safe. We all know the basics to getting to those goals, or do we? Probably. I venture to say that you may not know that your feet are the key to gaining deep core strength and connection to brain pathways.

We have had great success in our Stronger Feet, Better Core & More! workshop. This workshop educates our members on the importance of barefoot training. Many have minimally strengthened feet within maximally supportive shoes. While there is nothing wrong with having good support in your shoes, it is imperative that your feet are flexible and strong. We strengthen our bodies from our calves to our shoulders, why not strengthen our feet? Your feet support you through all you do every day. This workshop has taught our members to love their feet by gaining strength, balance and deep core activation.

Kelly Vizzone and I were intrigued by Dr. Emily Splichal’s seminar: Barefoot Strong. She is a functional podiatrist from New York City and holds a master’s degree in human movement. She had an amazing presentation and educational experience about the neural connections between the feet and the deep core. We were so impressed that we exchanged a couple of our sessions to attend her other offerings. Dr. Splichal has a passion that lit ours to educate others about releasing their feet.

A few amazing facts about your feet:

• The plantar fascia has more nerve endings and receptors than the rest of the fascia in the entire body. Doing the work for your feet helps prevent plantar fasciitis.

• We have about 6,000 nerve endings in each foot (this is why it is so very painful when we stub a toe!).

• There is a distinct and powerful connection between the foot stabilizers and the deep core stabilizers (your pelvic floor, deep rotators of the hip and the deep core muscles).

• The Short Foot exercise strengthens the big toe tendon that connects to the calf and when you activate this, the muscles along the back of your leg contract.

• With bare foot strength, you can control the body’s balance more effectively. When the foot strikes the ground, the body can better know how to maneuver from there: what surface it feels, if muscles need to contract to balance the body, etc.

• A strong foot creates a strong ankle and that continues all the way up the body.

• Creating space between the toes allows for a wider platform and, in turn, better balance.

• The more “awakened” the nerves are in the feet, the more “awakened” our minds are. You will have better control and awareness of where you are walking, stepping, etc., with quicker reactions to resist falls.

You are probably thinking, “So, are you asking us to run around barefoot and wear all the ugly bare foot shoes?” Not at all! But you can if you want stronger feet and less fashion (wink). We teach this workshop to immediately activate the nerves in your feet, so your body is more aware of how to navigate the world around you. The more you awaken your feet, the more neurons light up in your brain, the more awareness and connection you have. That is encouraging! There is so much talk about what kills brain cells, right? Let’s light some up to feel focused and better balanced.

In the Stronger Feet, Better Core and More! workshop, you receive a Neuro Ball, which has little “knobs” that wake up the foot. We also have balance boards and mats that have these tactile knobs. We compare your balance before waking the nerves in your feet and after. It is amazing how connected the body is and how strength in your feet can help in how you swing your golf club with more balance and control.

ALBARIÑO

ALBARIÑO WINE (“alba-reen-yo”) is a delightfully refreshing coastal white that grows on the Iberian Peninsula. It’s loved for its rich stone fruit flavors, a hint of salinity and zippy acidity.

6 FUN FACTS ABOUT ALBARIÑO

1. On the Wine Day Calendar, August 1st is Albariño Day!

2. Some of the oldest living vines in the world are Albariño vines and are up to 300 years old. (For comparison, the oldest known grapevine in the world is over 400 years old.)

3. It’s common to see the word “Albariño” on Spanish labels, unlike other areas that label by region.

4. Spanish and Portuguese winemakers have always treasured freshness with Albariño and don’t age in oak. Today, however, you can find a few producers making rich oak-aged styles with brioche-like aromas.

5. The grapes are tiny with thick skins. Not only does this make Albariño harder to produce, it also results in a distinct raw almond or citrus pith-like bitterness from the skin’s phenol content.

6. Most Albariño vineyards have a very different look. Vines are trellised above your head on pergolas to help keep grapes dry and rot-free.

In the Val do Salnés region of Rias Baixas, vines are traditionally trained on a wire trellis supported by granite posts called a “parra,” which allow breezes to come through and dry the grapes after the region’s frequent showers.

TASTING ALBARIÑO

On the nose, expect aromas of nectarine, lime and grapefruit, with subtle hints of honeysuckle and occasionally beeswax.

On the palate, Albariño wines have a weighty mid-palate and mouth-watering acidity that finishes with salinity and sometimes a subtle bitter note (like green almond or citrus pith).

Most Albariño are drunk young and fresh but due to the high acidity and phenolic structure (from the grape’s thick skins) it has incredible potential for aging.

Through my many decades in the food and beverage arena, I have noticed that during the summer and very warm months, eating and drinking habits get lighter.

During the winter we eat a lot more braised offerings, stews and heavy soups.

In the hot months we tend to eat a lot more chilled items such as shrimp cocktail, oysters, crab and lobster. This wine is dynamite for that. It doesn’t only need to be chilled dishes — with grilled and sauteed fish, it is equally as fantastic. I don’t, however, want to pigeon-hole Albariño as only for seafood. It will be very delicious with chicken and pork as well as a cheeseboard with nuts and marmalades.

I have already mentioned the seafood indulgence, so let’s move on to a couple of Ranch Menu items to pair with:

“Sea of Cortez Jumbo Shrimp” consists of cherry tomatoes, wilted garlic and spinach sauté, roasted gold potatoes and Modena balsamic reduction. To change this up a little bit, try it with grilled salmon.

Lastly, if you haven’t tried the June feature, Summer Bay Scallop Ceviche, this appetizer, served in a Martini Glass, is a perfect harmonious blend of fruit juices, cilantro and sweet peppers. I can’t think of a better pairing for a nice, chilled glass of Albariño.

EXTRAORDINARY EQUESTRIAN EXPERIENCE

Equestrian ladies from Cordillera Ranch ventured to Harper, Texas, for two days of horse fun at Tres Molinos

Hill Country Ranch and Resort! I worked with Resort owner, Patrick Moellendorf, to craft events to suit all riders.

Tres Molinos is a wonderful venue about an hour north of Boerne. The several-hundred-acre ranch has been in the Moellendorf family for generations, and Patrick Moellendorf has turned it into a one-of-a-kind fun destination! The main area of the ranch boasts a ranch house, event center, cabins, RV hook-ups, hot tub, fire pit and fishing ponds. Activities at the ranch include ATV sports, shooting clays and targets, archery, fishing and hiking. Welcoming guests throughout the ranch are friends, horses, cows, donkeys, goats, dogs, cats and chickens. For the horse enthusiasts, Patrick has arenas and round pens for sorting and penning cows. You may bring your own steed or rent one of the ranch horses. The riding trails wind throughout the ranch with stellar views of nature and the hillsides. Adjacent to the main area is a 600-acre preserve, which includes exotic animals such as aoudad, black-tailed deer, swans and “tame” buffalo.

Some of the ladies hauled their horses, while others used some of Tres Molinos horses. First on the agenda, right after lunch, was a trail ride. Patrick led seven of the ladies through the preserve on a three-hour ride with rolling hills, creeks, ponds and wildlife. At one point the buffalo noticed the riders

and began following them! Of the eight or so buffalo, three are solid white. While they are large animals, they appear even larger when trailing a horseback rider!

Upon returning to the main ranch and freshening up, Head Trainer, Meghan Moriarty, and I had unpacked and readied the stalls for our horses. Next up was a sorting clinic! If you aren’t familiar with sorting cows, it goes like this: There are two round pens connected by one open “gate.” Cows are numbered 0 through 9, with numbers pasted on their backs. The cows start in one of the round pens. Two competitors sort at a time. As the two riders enter the pen with the cows, the judge gives them a random number between 0 and 9, say, number 4. One of the riders holds the gate while the other goes and sorts out number 4. The gate keeper must allow only number 4 in, and no others. He or she must also not let a cow back into the pen. Cows are then collected one at a time in order, such as 5 through 9, then 0 through 3. This is fast paced and a lot more challenging than it sounds!

Sorting commenced with the ladies gathering the cows and pasting numbers on their backs. Then came the clinic. Patrick introduced the lesson with a history of team penning and sorting. Next, Patrick and I ran a few drills showing everyone what was expected. The sorting ladies then began, two at a time, sorting the cows on foot. It was fun and funny and exhausting! Once fairly proficient on foot, ladies were able to mount their horses for sorting turns. What great fun!

Meanwhile, Jake Panknin gathered the spouses at Cordillera Ranch and shuttled them to Tres Molinos. Patrick organized shooting clays for the gentlemen and any of the ladies who wished to shoot. Afterwards, the ladies and gentlemen retired to the event center for cocktails and excellent appetizers.

Tres Molinos also boasts an incredible chef, Teto. Normally, brunch is served on Saturday and Sunday, and dinners are served Friday through Sunday. These meals alone are worth the trip!

Dinner was lively and delicious, and everyone was fully sated and ready to retire for the night. The ladies stayed in the ranch house and the cabins — very nice accommodations!

On the following day, brunch was enjoyed before mounting

up for the ladies’ choice of sorting or trail riding. The sorting was for real this time, being timed! Each sort lasts 60 seconds, and one should move all 10 cows in that period without any disqualifications, which include letting a cow in out of order or letting one of the sorted cows back into the pen.

Needless to say, everyone had a phenomenal time, not only enjoying fine dining and horseback fun, but also enriching friendships. Every one of the ladies is ready for the next adventure!

Mix & Mingle has been such a fun new addition to our Event Calendar this year! Each quarter we invite members for mixing cocktails, dressing up for the themed class and mingling with friends, all with a different liquor to try and accompanied food to taste. So far, we’ve done a Tequila class for the first quarter and a Caribbean rum class for the second quarter. What’s next you may ask? We will be diving headfirst into the wacky world of gin. Gin is packed with all sorts of botanicals and herbs that give it a unique and sometimes eccentric taste.

And here's the cherry on top: we'll be dressing up in outfits inspired by the roaring '20s, complete with feather boas, top hats and monocles. We'll be the most gin-soaked gang this side of Cordillera!

SERVING AS A VILLAGE OF SUPPORT FOR 40 YEARS

Four decades into serving older adults, The Center, formerly known as the Rainbow Senior Center at Kronkosky Place, is paving the way for how to age well. Rebranding as The Center in 2022 was a strategic effort to encompass a more comprehensive mindset around aging. With 25% of Kendall County’s population aged 60 and above, The Center is adapting to the changing needs and interests of this vibrant community by providing a variety of programs inclusive for all social, health and lifestyle needs.

As the sole provider of home-delivered meals, The Center’s Meals on Wheels of Kendall County (MOW) program provides unique daily opportunities to meet nutritional needs, combat social isolation, address safety hazards, and provide holistic care. Every Meals on Wheels program nationwide serves the same goal, however, each one operates and fundraises independently within their service area. The Center serves more than just a meal by collaborating with other local organizations to include emergency meals and supplemental food boxes, companion animal services, fan and heater distributions, library books and even flower deliveries. The Golden Age Center in Comfort, Texas provides critical assistance to The Center by coordinating additional volunteers to serve and deliver in the northern most part of the county. Together with the support of 150+ volunteers dedicated to preparing and delivering fresh meals,

The Center takes pride in staying ahead of trends shaping and influencing how their organization will achieve the greatest impact while empowering older adults to live independently and age with dignity. Kronkosky Place, a program of The Center, continues to be the central hub for activities, connection, dining and fitness opportunities. The Center also runs several robust programs serving as a support system for the aging community including Transportation, a Medical Equipment Loan Program and The Closet Thrift Shop. The Closet Thrift Shop serves as a purpose-driven effort building value for its team of volunteers who run 100% of the daily operations while contributing income to further support The Center.

Betty, a longtime member and volunteer, found purpose and connection at The Center. When her son, Walter, suffered a debilitating stroke, leaving him wheelchair-bound, Betty reached out to The Center for a friendly conversation. Little did she know that this simple act would lead to a life-changing experience. The Center’s staff, touched by her plight, connected Betty and Walter with organizations to help. Volunteers arrived at their doorstep and built a ramp, enabling Walter to experience the outdoors again after a year of confinement. Betty’s journey, from an active member and volunteer to receiving services, encapsulates The Center’s holistic approach to guiding seniors toward longer, healthier lives.

This summer, The Center celebrates 40 years since a group of like-minded volunteers planted a seed to create a simple nutrition program, which has blossomed to become the central resource agency in the area for older adults and caregivers. As a member and volunteer ambassador said, “The Center provides a much-needed service to the community. The little that I do is a very small token of appreciation for the value it provides me and recognition of the role it services for the welfare of so many people who have needs that are not provided anywhere else … it does touch the people I see in a

very profound way that must come from the staff who are living their faith.”

The Center is seeking more contributors and volunteers to continue serving this growing community. Many of Cordillera Ranch’s extensive community are already involved through serving as Meals on Wheels drivers, volunteers, donors, board members and through service projects. “Our friends have said they gain a deeper understanding and fall in love with all the smiling faces after joining us for a tour,” said Karen Love, Board Member at The Center and Cordillera Ranch resident.
