Chapinero

Chapinero is a historic Bogotá district founded in the 19th century. It was named after chapines, traditional sandals that inspired the area's name, symbolizing craftsmanship. Chapinero has faced much change throughout the years, the most impactful one has been the architecture in La Cabrera which has changed over time, with new and tall luxury residential buildings as this neighborhood is one of the most expensive places in Bogotá. However, places like the Club Medico have maintained the same traditional architecture as La Guerra Civil de Mil Dias, keeping tradition and history safe.

Experience

The service is amazing, they will quickly take your order and they are very well-mannered. While your food arrives, you can explore all over the place! The workers do not have any problem with this as long as you do not disturb any meetings. The atmosphere is peaceful, they play classical music, and the candles keep the place warm and comfortable from Bogotá’s chilly weather. The smell of freshly baked bread mixed with tomato sauce that has a touch of sweetness and the melted cheese is mouthwatering.

About the Building

This style of architecture has been part of Colombia’s culture since La Guerra de Mil Dias and the medics that are part of this club are very important to Colombia, they have been working hard since 1902 to help our community. All around this building, you can see modern apartments, not a single one has a style like El Club Medico. They have all been through gentrification but this one still stands out.

It is also known for being the nicest neighborhood for its nightlife, for its restaurants, and for its street food, which is really cheap. Additionally, it is known for its security, which is really good. To add to that, it is known for its businesses, and finally, it is known for its universities and its students because it is packed with good universities and universitystudents.

History

Chapinero started off in 1812, created by workers. It was called Chapinero because of a shoemaker who made chapines for people with bow legs or pigeon toes. In the 1900s, wealthy people from Bogotá got there and they started to make giant mansions in European style. In the 1960s, the diversityspread;manyartists,students, and young professionals started to get there. Throughout the years, this place gotmorepopular,thesafetyincreased, andnowitisoneofthemostimportant neighborhoodsinColombia.

How has the area changed

Throughtheyears,Chapinerohashad an enormous change. It started off as a normal neighborhood more than 200 years ago. Many people arrived there, and it started to become an important place. Many different people came, making it different from other places. The economy grew with new buildings, new banks, and many businesses; it has become more important.Andthelandisworthmuch morethanbefore.

A place that sells coffee for competitions has many awards and they are focused on quality, not quantity.

As soon as I entered Lohas beans and the scent of delicious coffee filled my nose. I could hear the sound of the machines making coffee and the customers talking about the coffee. I could see the giant coffee boxes and bags, as well as the little ones. I could see the rating from professional tasters. Furthermore, I also saw portraits of coffee competition winners, and then the magic happened: they opened a big white door, and it was like entering a coffee palace. I entered a room full of different coffee machines where they made it and much more. I felt I was in a dream; there were many workers making coffee and there was a lot of coffee. It was a place where anyone who likes coffee would enjoy it. While he talked to me, I could see the dedication in his eyes. He told me that every bean was picked by hard workers who pick only the perfect bean, ensuring the perfection in the product. This follows Colombian culture because they get coffee from around Colombia and turn it into the best coffee in the world. They have many Colombian processes, and they are sure that every coffee bean is perfect and in good condition. When I was there, the person who helped me was the owner, and I learned a lot about coffee. He showed me how they make it, how it ferments, how they package it, and where they send it.

Cactus, a restaurant where they treat everyone the same even though if they are presidents, or they are form a parking space I love the food its very good quality and I love the witer they are very kind. In that restaurant they make you fill like family and prepare everything with love they have the best type of meat and always think of there costumers as old friends.

“ my goal in here for 20 years is for all my workers to have a house and to take all of there kids to college” for me this quote from the owner reflects a lot of people in that business because it sows how not only the food is ameizing but the people that work there two.

Emilia Grace is a really cool restaurant in Bogotá, created by Chef Daniel Castaño. He’s been cooking for over 25 years and wanted to make Italian food with his own twist. Instead of just sticking to regular recipes, he adds something special to make the food even better. The restaurant got super popular because the food is amazing and the vibe is super chill. Chef Castaño really puts his heart into everything, making Emilia Grace a great place to eat.

How has the area changed?

Chapinero was first a villa for country houses before becoming a modern urban center. Its growth was aided by the first tramway(1884) and later by TransMilenio(2000). Historic mansions fell to high-rises and business districts, establishing it as a significant finance and culture cast in Bogotá.

In the 19th century, Chapinero transformed from a rural pathway into a wealthy residential area. It became a commercial center and, after the Bogotazo (1948), a business, nightlife and diversity center. Today, it is a major district in Bogotá, an area with financial institutions and an LGBTQ+ neighborhood.

Emilia Grace is a super cool Italian restaurant in Bogotá, Colombia, created by the Chef Daniel Castaño. The place has awesome food and a fun vibe. Castaño, who’s been cooking for over 25 years, mixes classic Italian flavors with his own twist to make the food extra special.

I had the best time at Emilia Grace in Bogotá for my thirteenth birthday. The place had such a cool and cozy vibe, and the staff was super nice, making me feel extra special. I tried some amazing food everything tasted so fresh, and the Italian dishes had fun little twists that made them even better.

It was the perfect place to celebrate, and you could tell they really cared about making everything awesome. Defenetly an unfugetable expirience

THE SUN WAS SETTING AS WE ARRIVED AT NAQUA, A GLAMPING SITE IN COLOMBIA. THE ROAD TOOK US THROUGH GREEN HILLS AND COFFEE FARMS UNTIL WE REACHED A PEACEFUL PLACE SURROUNDED BY NATURE.

THE AIR WAS FRESH, AND WE COULD SMELL COFFEE AND DAMP EARTH. NAQUA HAD COZY CABINS DECORATED WITH COLORFUL FABRICS AND BAMBOO. THERE WAS ALSO A JACUZZI, PERFECT FOR RELAXING AFTER A LONG DAY. WE WERE WELCOMED WITH A COLD LULO AND PASSION FRUIT DRINK. AS WE WALKED AROUND, WE NOTICED SOLAR PANELS FOR ELECTRICITY AND A SYSTEM THAT COLLECTED RAINWATER FOR THE PLANTS. AT NIGHT, WE SAT AROUND A BONFIRE AND ATE CORN AREPAS, FRIED FISH WITH PLANTAINS, AND A HOT CUP OF CHOCOLATE WITH FRIES. THE FOOD WAS SIMPLE BUT DELICIOUS. BEFORE LEAVING, WE ENJOYED THE JACUZZI WHILE LOOKING UP AT THE STARRY SKY. IN THE DISTANCE, I HARD BEUTIFUL MUSIC. NAQUA WAS A GREAT PLACE TO ENJOY NATURE AND RELAX.

LOS ROSALES IS A REALLY NICE NEIGHBORHOOD IN CHAPINERO, BOGOTA. IT’S NEXT TO THE CERROS ORIENTALES AND CLOSE TO CARRERA SEPTIMA. FROM THERE, YOU CAN SEE ALMOST ALL OF THE CITY. IT LOOKS REALLY BEAUTIFUL.

LOS ROSALES IS A NICE NEIGHBORHOOD IN CHAPINERO, BOGOTÁ. IT HAS BEEN THERE FOR A LONG TIME, SINCE THE 1900S. BEFORE IN THAT TIME, THE RICH FAMILIES MOVED THERE BECAUSE IT WAS A NICE SPACE WITH MANY GREEN SPACES. WHEN THE CITY GREW, MORE BUILDINGS WERE BUILD, AND THERE WAS A MIX OF OLD PLACES WITH MODERN PLACES.

OVER THE YEARS, LOS ROSALES HAS CHANGED A LOT. IT BECAME MORE POPULAR FOR BUSINESSES AND OTHER NEGOTIATIONS, ESPECIALLY WITH PLACES LIKE THE ZONA G.

NOW, THE AREA IS A VARIETY OF NEW THINGS AND OTHER THINGS FROM THE PAST. THERE IS SOME PROGRESS BUT IT STILL LOOKS LIKE THE PAST WITH OLDER BUILDINGS MADE OF BRICKS.

TODAY LOS ROSALES IS KNOWN FOR ITS ART, COFFEE SHOPS, AND A COOL VIBES, AND ALL REMINDING TO THE HISTORY OF THIS NEIGHBORHOOD. IT’S A REALLY GOOD COMBINATION AND IT’S REALLY NICE. VISIT IT!

My experience going to this amazing place:

When we got to the location, I got really surprised because there was no sound of the streets and of the cars because we were in Bogota. Then I saw the entrance and it was a really beautiful entrance with a sign and some information. There were some stairs and when I got up, there was the owner of this place and he was called Samuel Serna.

Near him there was a vegetable garden and it looked really good. Then we got to the mountain and we did a 30 minute hike and we discovered new plants, we also saw the view of almost all Bogota, and we saw that there were other activities to do like reforesting and helping the cerros orientales.

Overall this was a really good and calm experience and I give this place 5 stars.

Chuculat is a local cafe in Quinta Camacho, Chapinero. It is a cafe where they sell great snacks and coffee all traditional Colombian. It is a great place to pass by and have a good time.

MY EXPERIENCE

The other day, I was visiting Quinta Camacho and I found Chuculat. This was a great place to be in since it was really cozy and eye catching. As soon as I walked in I felt a very welcoming atmosphere, a pretty place and a variety of things one could buy. I entered and all the workers were very nice to me and I met with the owner of the cafe. I asked him if I could interview him and when I said that I noticed that he was very interested in what I said. When we started talking he started telling me his point of view of the all changes in Quinta Camacho within time, and also telling me the backstory of this business which I really liked. Something that really caught my eye was how this neighborhood was a mix of new and old architecture. In just one neighborhood you could see street art, new buildings, modern cafes, shops, and keeping the traditional shops and buildings.

My experience

As you go into the mini market you can smell the food, the people greeting you all kind and helping you with what you need. They have an excellent service so kind like friends and the food all very good mostly the buñuelos (chrunchy on the outside and soft and fluffy in the inside and the Colombiana food the avocado so soft and perfect just with the perfect amount of salt (if thats what you want) all of the people around they helped us with everything we needed and they also explained to us that mostly all the food was planted by them and they had many varied things in a small space with a lot of fruit, vegetables and food such as zucchini, passion fruit, pitahaya, guava, lulo, avocado, tree tomato, melon, etc, also lechera cocadas, arepa with cheese//meat, chicken, etc., rice pudding, wafer with arequipe, Bon Bon Bum, Buñuelo, and more.It also has a mini pharmacode which has many benefits in such a small place and space

Nogal Chapinero

Tropicalia is located in El Nogal neighborhood in the area of Chapinero. Chapinero was built in the year of 1812. The name of the area, Chapinero comes from shoemakers of bespoke. Then it developed, and it connected to central Bogotá with northern Colombia.

The area has changed as time has passed because there is an increasing number of restaurants and local businesses. The neighborhood is known for the shopping malls, for the big houses, parks, and offices of mayor businesses.

Tropicalias’ specialty is a brunch

They have three types of coffee. Yellow, green, and pink. Each color has a different taste, and some of them might be darker than others. (privilegio, tropico and esencia)

My experience in Tropicalia

I got to Tropicalia coffee shop on a Sunday afternoon, and I was surprised since I've never been there, and it was very pretty! We sat with my mom at a table inside because it was cold. We asked for the menu and I ordered a pie of bocadillo and queso and my mom ordered a cappuccino just like me. It tasted different because I've never tried a pie with bocadillo and queso, and it got very fast even though there were a lot of people. The service was excellent, and then we asked the manager if we could ask him some questions about the business and neighborhood. He mentioned that Tropicalia brings a lot to the neighborhood, since people can communicate better and have more social life. Also in December 2024 a lot of people left the country. But a lot of people came for vacation and it was still full.

Additionally, he talked about the menu. Their specialty is brunch and the dish that they most serve is a toast with egg and avocado. After I asked him all the questions and stopped the recording, he asked us if we wanted to see how they processed the coffee and made it. We went upstairs and saw it. It was really amazing how the process went. We really thank him because we didn't expect that we could go upstairs and see the process of how to make coffee. I learned that they bring coffee almost every day, and they take it upstairs where the machine is, and they grind it. It was surprising how the machine grind the coffee because it was very fast. Lastly I took some pictures upstairs and went with mi mom hearing the interview.

El Chico Chapinero

Cinemanía is located in El Chico, in the area of chapinero. 14 #93A-85 bogota. It is a neighborhood that has everything restaurants, stores, and much more it has a lot of little stores that are around Cinemania like Pepe Ganga, and little stores that are in the streets.

Also, it has a park where when you are done watching a movie it is the best to go and play so you get your energy out and after that go and have lunch at a delicious place like Renata. A cool fact is that Chapinero is called Chapinero because the street where full of mud and puddles and when the people made Chapines they were called Chapineros.

Cinemania has different times when they open during the week it is 1 pm to 9 pm and on the weekends it is 11 am to 8 pm.

It is in Chapinero in the Parque de la 93 and there are a lot of places there like fantastic restaurants and a little park that is really fun.

My experience.

My experience of when I went there was really good I went on Friday, and it was a bit empty because most people go on weak ends this is a really hidden treasure because it is a movie theater that my grandfather billed and now it is my dads and we go every Sunday if possible. Also, it is a movie theater that most people don't know about because my grandfather wanted to be a good movie theater but not like Cinecolombia and more. Colombia is part of my hidden treasure because it is the only one in the world and it was billed by my grandfather. One important piece of information that I learned was that my grandfather billed it, and the movies my dad buys are put on the projectors, and if a lot of people come and see the movie my dad's team puts it again every week. And every weak everyday movie changes, for example, one day, there is paw patrol the other day it is a new movie. the naborhoods have impacted the business well because right next to the movie theater are restaurants so people go to eat and then go to see a movie or people see the movie and then go to eat.

For this project, I decided to choose a street that has gone through a lat of gentrification, Calle de los Anticuarios, Cl. 79b #7- 61 Local 1. For example, this street got its name because of having 35 antique shops. The area has changed a lot, now there isn’t one antique shop know of days. Like I said before, this neighborhood was known for the antique shops, but know it is well known for its little shops, which sell all types of things. That are located in the area. This area celebrates culture with all the different shops that represent.

Literary page

As I walked into this amazing garden, I could get a whiff of the pink and yellow flowers. Walking through the road, I found my way to the store and walked up the stone stairs. When I walked into the store, the clothes immediately caught my attention with their soft, silky texture. I asked where they were fabricated and to my surprise I learned that all the fabrics were made in this beautiful place we call Colombia. I had so much to see and feel, and I was still in the first room. My eyes captured the center of the room where there stood a raincoat with what looked like a painting of a design. I proceeded to the next room and a current of freezing air, I turned to look at what was making me so cold and saw a white sweater filled with fabric roses. They reminded me of the ones I see when I go out of my apartment building. In the third room, I saw more of these beautiful raincoats and without a doubt I asked what were they based on, Claudia one of the workers there told me they were from different parts from Colombia. When I got this information, figured to get more information about this product. Claudia explained to me that this was a product was not from their store but from another business, diluvio, which is a small business they invited to the store. From what I learned in this experience, every article of clothing was made by a Colombian woman, and Colombian fabric. When I thought I saw every thing, I walked out the store with a worm feeling wanting to come back again.

La Parla caffe is located in the neighborhood of Los Rosales, in the area of Chapinero. Chapinero was settled in 1812, its name “chapinero” comes from Shoemarkers of bespoke shoes from chapines.That is the expression for people suffering from pigeon toe syndrome. When I first got there I was surprised because the surrounding was very cozy and natural. When I entered there was a person that helped me and took me to my table. I really liked the service and the environment because the server was very kind and gave us recommendations of what to eat. Also the food did not take long to arrive and the food was very enjoyable. I recommend the sandwiches because they specialize in making their own bread from scratch. I ordered her recommendation, a sour dough bread sandwich with pesto, gouda cheese, and tomato. It was incredibly tasty, so I would order it again.

Something that caught my attention was the architecture because the walls are made of stone so it makes you feel like you are really inside a castle. The restaurant has many plants as part of their decoration and it looks like they take very good care of the castle. The environment was very cozy because they also had couches where you can sit and have a coffee while reading a book. I loved that there is a little lake, which is a very nice detail because if you have kids you can tell the workers to bring food and your kid can feed the ducks that live in the lake and get distracted while you do whatever you want.

According to the owner, La Perla has a very interesting history because this castle was part of el Mono Osorio in the 20th century and they built it because it is a replica of a medieval Belgium castle. El Mono Osorio used to live here and he built it for his family. Now he turned it into a coffee shop called la Parla cafe. They called it la Parla cafe because it's a place where people are happy and comfortable.La Parla cafe is perfect if you want to go and work you can take your computer and enjoy. La Parla cafe has a lot of Colombian Culture because they have one of the best coffee.The coffee they make there is Colombian and also there are a lot of traditional plates like ajiaco. I think that the neighborhood has impacted the business positively because the area thanks to social media has turn more popular and when people go to the area they see the castle and they try La Parla cafe and that helps the business.

Usaquen Chapter 2

The Usaquen center used to be a small, rural village known for farms and haciendas. Over time, Bogota expanded, and Usaquen was incorporated into the city. The Santa Barbara church was built in 1665, and the Church and the plaza serve as a cultural and social center. It maintains colonial homes and cobblestone streets and attracts locals and tourists with its charm.

If you are a coffee lover, Catacion Publica’s coffee does not disappoint! Catacion Publica prides itself on coffee and it cannot get any better, it’s a ‘must try’. Catación Pública is a coffee ‘experience’ that not only offers coffee but also tastings, experiences, and education. The baristas will bring you numerous different coffees with different flavors and will explain the history behind that specific coffee including the variety of flavors from different regions and environments. After, if you want to buy a couple of bags of your favorites, you may. There are also little pastries, like different types of cakes. I didn't get to try the cakes, but there is an arequipe cake and chocolate cake that looked delicious. There are different experiences you can choose from, like if you want to try one type of coffee you can. Also, there is an experience for kids offering hot chocolate, if you have little ones. Usually, the tastings are 1-2 hours. You should try the different types and flavors of coffee from all over Colombia and learn how they’re grown and produced.

Catacion Publica embraces Colombian culture with its coffee. Catacion has coffee from many places in Colombia, embracing all of the unique flavors that are developed in the various regions and environments. When I walked into Catacion Publica, Miguel, the barista who I interviewed, was very polite, and he was quick to help us. Everyone in Catacion is very inclusive. There is always a barista who speaks English for you, and right as you walk in, they welcome you and do their best to give you an authentic experience. Also, there is a list of all the experiences you can do. Miguel explained a lot about how Catacion has coffee from Huila, Quindio, Caldas, and Cauca. They sell coffee from different regions because there are different flavors of coffee that develop from the different environments in those regions.

The shop isn't huge, but what they did with the space is amazing. In the back of the store they have an area where they make the coffee and teach how to become a coffee master and barista. You can go into the lab and see how they make the coffee. There are a couple of tables to sit and behind the counter is narrow. They have cups that say Catacion Publica that you can buy and bags of coffee behind the counter on a shelf. There is a map on the walls with information about coffee. Overall, Catacion Publica is a stunning spot to learn about coffee and its history. my parents bought a bag of their delicious coffee.  We took some photos and thanked Miguel.

La Castellana 104

the History of Usaquen.Usaquen used to be an indigenous-populated town that during a lot of time it was independent. Many travelers go through there to get to the north-western part of Bogotá. The name Usaquen comes from the origin from the tribe Chibchan. Usaquen was named after their Cacique (Leader). Then it was colonized by Gonzalo Jimenez de Quesada, after colonizing the place he changed completely according to his religions and ways of living in Spain.

When walking in the Castellan 104 you can instantly feel traditionally of place and the scent of fresh baked pandebonos filling also the air of traditional Colombian coffee. “ You should try the almojabanas or the tortilla Española there are one of our most sell products” Luz the manager recommended it to me also adding that this were one of her favorites dishes, She also shared with me how in the Castellana everything is made with love and patient and the instant I tried the almojaban I could feel that love that the workers put in it, it tasted amazing the cheese pull was amazing, and the flavor melted in my mouth. Luz the manager shared with me how the neighborhood has changes in the years have turned into a blessing but sometimes into challenges the new businesses have helped us gain a younger audience toward the place, but this also has caused a problem because at the same time it takes away our costumers. But because of how traditionally the Castellana is and has gained the love of many people since 1992 also this place becoming their go to for nice brunches or just a little snack on the go.

As soon as I walked in the store they greeted me and gave me a table, the restaurant was about to close so I ordered some food to go. I ordered deditos de queso, arepa de huevo, carimañola and a bollo de mazorca. The people in the restaurant were really nice with me and I asked if I could interview the manager for my project of HHG. We sat down and the lady was really nice and allowed us to interview her, I asked her the questions and she was really kind and responded all of the questions about the restaurant and about the neighborhood the place was located.

Narcobollo is related to colombian culture because its a restaurant that sells most of all traditional food of the colombian coast such as Arepa de Huevo, Bollo, Carimañola, Dedito de queso, Corozo and Nispero juice. Also, the workers prepare a food called Patacon which is made from Guineo, a plant from the family of the bananas. This patacon is first soaked in garlic water and next its fried in oil.

In 1989 Luis Carlos Galan one of the candidates to the president was killed and the first people that were taken everything away legally was the family of Liliana de Molina wich was the owner of Narcobollo. Inside their fridfge, they found bollo, suero, cerdo and other food that was selling at the moment. Fortunately, they decided to retract their decision and they returned everything to the house they had taken everything from. For this reason, the clients of Liliana named the place Narcobollo and some time later the owners decided to legalize the name and that is the name of the restaurant until today.

PARQUE LA COLINA SUBA

The Place Reborn is a food stand that offers healthy and delicious food. It’s located in the La Colina neighborhood, in the Suba area of Bogotá. Over the years, Suba has changed a lot. This area was first created 35 years ago, but its history goes way back. Suba is now one of the most popular neighborhoods in Bogotá. It used to be a place where Spanish settlers lived when it was founded in 1550 by Antonio Díaz Cardoso and Hernán Camilo Monsilva, who brought Spanish institutions to the area. Later on, Suba grew, and by 1884, there were 1,584 people with indigenous ancestry living there. Today, Suba is a growing area. The neighborhood has a mix of modern and traditional buildings, with beautiful residential homes and large parks. These parks are full of families and children enjoying their time together. It’s a peaceful place where people can relax, walk around, and enjoy the outdoors. The area’s history is still important to the people who live there, but it’s also becoming a, modern part of Bogotá.

The area has changed a lot over time, mainly due to the growth and new stores. Suba, Colina Campestre stands out as one of the most attractive residential neighborhoods in the north of Bogotá. It’s a popular place for families because of its easy access to roads, high-quality housing, and its close proximity to some of the best schools in the city. This neighborhood is a perfect mix of urban life and nature. It is active and full of people, but it also has many open spaces and fields.. The name “Colina Campestre” comes from the hill that the area is built on, and it reflects the neighborhood’s connection to nature.

One of the key spots in the area is Calle 138, where you can find the Military Forces Non-Commissioned Officers Club and Cristo Rey School. Even though these buildings are a part of the neighborhood’s history, the area has slowly transformed from a quiet hill into a more developed residential and commercial zone. This change has made Colina Campestre a special place where families can live, shop, and enjoy the best of both city and nature.

In Reborn, At Reborn, you can enjoy delicious and healthy food that's free from sugar, gluten, and a lot of flour. Though the place is small, it offers a wide variety of tasty options. MY EXPERIENCE

When I went to the bakery in Parque La Colina called Reborn, I thought it was really nice and fit in well with the mall. It’s not just a place to buy bread, it feels cozy, like somewhere you want to stay for a while. Even though it’s not big, the space is well organized, so it doesn’t feel too crowded. The bread and pastries are displayed in a way that makes you want to stop by and try something.

One thing that makes this bakery special is where it’s located. Since Parque La Colina is a busy mall with lots of people, it’s easy to stop by if you are shopping or just want a quick snack. The area around the mall keeps growing with new stores, and this bakery feels like an important part of it. If you buy something there, you can eat it in the park right outside the mall. It’s a big and nice park with lots of families enjoying the area. It’s a great place to take a break and enjoy something delicious.

I also like that the bakery has a Colombian feel. They serve traditional bread, but in a healthy way with no gluten, which reminds me of classic Colombian afternoons. It feels like when you visit your grandma to have hot chocolate and bread. That makes it even more special!

into El Centro, and after that the breathtaking Pasaje Rivas it was already a magical journey to the restaurant. When we got to where the restaurant was, we were a bit confused on where to go in, it was truly a hidden gem already.

Upon entering the hidden stairs to the restaurant, the awesome sent of freshly made food made us exited for what we were about to experience. As we got seated, we got asked what we wanted to drink, I knew exactly what I wanted because I got recommended the uchuva soda. Now it came to the food, we got chorizo, papa chorriada, chicharon, sancocho, and the meat and chicken skewers, all Colombian food. The soda was spectacular, the acidic uchuva with the bubbling soda was a perfect combination, it even had small chunks of the fruit! When our first plate came, it had me curious on what was going to happen, it was la papa chorriada… But the waiter used a blowtorch on the food! As they flamed the big potatoes, the delicious sauce boiled. And when I tasted the amazing potatoes, I was left with NO WORDS. The taste made the dish one of my new favorite foods! And after that came the chicharrón, juicy chicharrón in a bowl of flavorful guacamole, a truly good dish. When all the main dishes arrived we were ready to eat based on what we already tried, Everything looked incredible, the chorizo, sancocho, and meat sticks. The sancohco was special it had chicken, cow, and pork, my parents (who ordered it) said it was astounding Colombian food and the touch of firewood made it even better. All the food including the chorizo and meat skewers made us happy, the taste of the food in Testigo was truly unique. In the end, we can all say we were left satisfied and ready to come back any day. Testigo exceeded our expectations.

In the interview went very well, but what I got overall is that they really look forward to attending the customer and their needs. For example, if the costumers aren't comfortable with the food they were served, the waiters always look forward to fixing it immediately in the best what possible. Their neighborhood is unique and without it could not be and hidden gem, and in popular areas of Bogotá it would probably always be full at all times. So what makes it so special is the place where it's in that makes it unique, Pasaje Rivas is part of the experience of going. It's still very popular and in my opinion if it were to be in a popular place it wouldn't be as appreciated for it's culture.

La Pantelleria Florida is a hidden treasure La Pastelería La Florida, started in 1936, is a wellknown bakery in Bogotá. It is famous for its chocolate santafereño and other desserts.

I entered the giant place Pastelleria La Florida , it smelled like chocolate and tamales and bread it looked like I was in the 1900 it was old time and in every corner there was history. It was filled with people and was gigantic, 3 floors, and everything smelled spectacular I sat down and ordered bread it was delicious and the person who I was to interview sat with me he was the organizer of the restaurant , and we started talking. In the interview he told me that since the Cold War in Europe 2 Spanish cousins who brought wonders and with the colonization brought Spain and Colombia to new traditions. I asked him how the evolution of the neighborhood has changed the restaurant, and if so in which way, and he told me. the evolution of the neighborhood has changed the business, both positive and not that negative but a bit because some people are evolving and kind of leaving the place behind, but that is what makes it special, the old architecture the foods make it a special place to be known. In the interview it was mentioned that they're trying to teach the younger kids, the ones that grow up during the evolution of the world, about the past and about them and the restaurant. Which makes them want to shape the future with the past.

There was a beautiful view of the National Museum of Colombia. They also told us their best menu items, which include their coffee, pizza, and cheese sticks. Colombian culture is shown here by their hot chocolate with cheese. During the interview, they gave us a great quote: 'Why is your food so good? Because we are from another planet.' Then we asked them how the neighborhood's evolution has helped or negatively affected them. They said it hasn't helped them because they are always short on staff.

LA CANDELARIA

Pasaje Rivas is the oldest mall in Colombian history, nearing 135 years of age, it has seen every bit of change in culture, and in the neighborhood. Pasajes Rivas is located in the neighborhood of La Candelaria, Downtown, Bogota. Pasaje Rivas survived the Colombian class riot, “el Bogotazo”, as it was next to the main plaza of the city. After the Bogotazo, the tram stoped running, cutting through the capital streets, and the political outrage. Even the pandemic lead to great technological advancement, forcing them to stay up to date. This gentrification has kept pushing La Candelaria as is mostly known for its tourists attractions and historical background.

La candelaria has changed a lot since it was first deemed a neighborhood back in 1948, It has come from a glorious area with hispanic buildings to a beautiful history-teller that looks like it was frozen in time, you can never go wrong in la candelaria, and you would have been correct to go to pasaje rivas. Here, The entire inside of the neighborhood has changed; “Despite attempts at modernization that threatened its colonial architecture, the town has managed to preserve its essence thanks to the promotion of its conservation as a historical cultural center.”

La Candelaria is considered the "Old City" of Bogota and it is believed to be the location where the city began in 1538, founded by the Spaniard Gonzalo Jiménez de Quesada.

The pasaje is filled with handmade Colombian crafts, delicious treats, and cool experiences. As soon as l entered I could see that Pasaje Rivas had a lot to offer.

I experienced Colombian culture everywhere my eyes veered at; from bright, woven bags called mochilas( Coastal region) to wooden decorations ( Center region), hamacas( San jacinto and Guajira region), ruanas ( warm ponchos)( Cundinamarca Region) and , art, and jewelry, from across Colombia. Every item is made by local artists from around Colombia. Each piece has its own story, and the people who sell them are happy to share it with you.

The history of Chía and how it has changed

During the past few years, country houses, shopping malls, and new restaurants have been constructed around the area, According to Nicole, the owner the places around bukë used to be very ugly and cheap.

Chía is known for its ancient Muisca roots, cultural heritage, and local cuisine. It also has interesting attractions like; “castillo de marroquín”, “puente comun”, “capilla valvanera”, “centro chía shopping mall”, “fontanar shopping mall”,and “ parque la montaña del oso”. Chía celebrates the Muisca cultural heritage, with dance and local cuisine.

The welcoming workers, warm surroundings, and quality food made my experience in Bukë great. The service that the workers provided was very welcoming and they responded to any doubts that I had, they also gave me recommendations on what to order and their personal favorites like “caldo de costilla”, puff pastries, and multigrain bread. I could feel the warmth and love in the walls of bukë, this was also reflected in the delicious breakfast and coffee that I had.

According to the owner, Colombian culture is included in the business with the products that they put in their food like jams, antipasto, and hot sauces, that originate from the Colombian land and entrepreneurs. Bukë also serves typical foods like changua, tamales, caldo de costilla, envuelto, alojabana, and one of my favorites; pan de yuca.

The neighborhood’s evolution has brought bukë more customers and nicer surroundings, it has also allowed the expansion of bukë, giving the place more space and workers, making a parking lot has also made bukë and its neighbors some more demanded places to have their businesses.

La Calera

La Calera has an interesting history, it was founded in December 16th, 1772 by Pedro de Tovar y Buendia. The name “La Calera” comes from the production of lime, which was given from processed limestone that was extracted from the south of the city.” Wikipedia. La Calera, it’s name means lime mine, La Calera was already been visited by Chileans and Peruvians. Even though La Calera has evolved it still keeps its same architecture so it reamins as an attraction for tourists who wants to visit authentic towns in Colombia. The neighborhood its known for its delicious gastronomic festivals and also because there are fun activities to do such as paragliding. Finally, La Calera has a celebration called Fiesta del Campesino where many farmers from the area join to celebrate how proud they feel about their traditions and landscapes.

if you drive on the weekend 45 minutes away from Bogotá you are going to find the best obleas of La Calera. In Cl.7 #2b-79 a 2b-75, next to the Principal Church, you can find the Dioselina’s family business.

This business opens on weekends, Saturdays and Sundays from 11am to 5:30pm.

Obleas Dioselina has unique flavors because most of them are artisanal ingredients, which means these are natural and cannot be bought in a supermarket. When you taste the obleas, it is like going to heaven! Dioselina stated that her favorite part of the business is the quality and quantity of clients. Dioselina said that she has been working in the dessert business for 26 years. It is a simple and humble business, yet it is popular in the municipio. This means that it has no logo or advertisement like other businesses, but many people have heard about it.

La Calera is known for its popular attractions, such as watching hummingbirds waterfalls, riding bikes, and going hiking. In Mundo Nuevo, people say they have the most beautiful waterfall in the area. Mundo Nuevo is close to La Calera. Those are the most popular things people do in La Calera. Mundo Nuevo is close to La Calera and is located in Guavio Province Cundinamarca. La Calera doesn't have a festival but is recognized for protecting the water that travels to Bogota.

Montevivo is located close to Mundo Nuevo in La Calera. Mundo Nuevo was established around 1927, and it's known for its agriculture. La Calera was founded on December 16, 1772, by Pedro Tovar and as time passed,La Calera started to become bigger and bigger. For example, when I was 4 years old, La Calera was small compared to now. It seems like another place if you compare it with how it was 10 years ago and now. Also, over 150 years ago, Mundo Nuevo was a farm, and that person donated it so people could live there with their families.

Experience Montevivo

When I arrived at Mundo Nuevo, I could see the giant, perfect, delicious vegetables, and I was hungry to eat them all. I could see the hard work every employee and the owners did to get to the point they had reached. You could hear the machine of vegetables that made perfect the vegetables so people eat. Every moment, trucks transport the vegetables to people who appreciate and like how they manage the vegetables in a perfect way so everyone loves it. It has everything to do with Colombian agriculture because they grow vegetables and they get to the plants in tubes that transmit water to the plants. So it has everything to do with it.The neighborhood impacted possibly the business because without the people that live the business wouldn't have a lot of employees that help, so the vegetables, are in perfect condition.
