40th anniversary for The Other Shop

The Wayne Memorial Hospital auxiliary’s Other Shop on Main Street in Honesdale has been in town “a lot longer than most businesses,” said Sandy Kline, Other Shop committee chairperson. “We haven’t changed our name for 40 years.”

evaluate each team on its problem-solving capabilities, oral presentation skills and recommendations to help solve the specific environmental challenge, which relates to the current environmental issue.

Teams participating represent the best and the brightest of the thousands of high school teens who have competed in county Envirothon competitions sponsored by conservation districts from across the state. At the state level, the Envirothon is sponsored

by Pennsylvania’s 66 county conservation districts, the state conservation commission, and the Pennsylvania Association of

Conservation Districts.

The 2017 Pennsylvania Envirothon champions, scoring 531 points of a possible 600, are from Penncrest High School located in Delaware County. The Pleasant Valley High School Envirothon team placed fifth, with a score of 478.33.

The Pennsylvania Envirothon awarded scholarships to the first through fifth place teams.

The team included advisor Maricatherine Garr, Ryan Rimple (captain), Gina Bongiovanni, Sophia Hochfield Gabe Schaefer and Justin Wagner.

The 34th Pennsylvania Envirothon state competition was held at the University of Pittsburgh Johnstown recently. High school students from 64 Pennsylvania counties participated in this year’s event.

At the Envirothon, five-member teams participate in a series of field station tests that focus on five topic areas – soils and land use, aquatic ecology, forestry, wildlife, and environmental issues. The 2017 current environmental issue focused on agricultural soil & water conservation stewardship. The teams also prepare and deliver oral presentations to panels of judges who

Builders Assn. Scholarship

Recently, the Pocono Builders Association (PBA) awarded a Monroe County High School senior with a scholarship to use towards her college education.

Kimberly Masullo of Effort received a $1,500 scholarship from the PBA. Masullo, a senior the Monroe County Technical Institute, plans to attend the Pennsylvania College of Technology’s Residential Construction Management Program.

Frailey Insurance and Financial Services team members recently collected a more than two-year supply of teddy bears for the Pocono Township Police Department.

“We use these teddy bears when responding to emergency situations where a child is a victim, or affected by a loved one being a victim,” explained Sgt. Shawn Goucher.

“The bears help to comfort the children and help to gain their trust and confidence.”

7 exercises for a total-body water workout This summer, turn your family pool into a backyard gym and challenge yourself to a strength-training workout that’s both refreshing and easy on the joints.

Here are seven excellent exercises that make use of water resistance for more-than-satisfying results.

The jumping jack: Jump out by spreading your legs apart and lifting your arms above your head, then jump back in by bringing your feet together and lowering your arms to your sides.

The karate kick: lift one knee to form a 90-degree angle with your body, then extend your leg while simultaneously punching with the opposite arm.

The march: Simply walk around your pool, changing direction after every turn to increase the water resistance.

The “V”: Assume the same position as the previous exercise, then lift and lower your legs so that your core moves in the shape of a V. Keep your legs outstretched and stuck together at all times.

Season and let marinate Balsamic vinegar, lemon juice, plain yogurt, olive oil, maple syrup, beer, honey, soy sauce, barbecue sauce, butter and other flavorful seasonings (Cajun spice, fresh herbs, salt and pepper, etc.) can all give your chicken a mouth-watering kick. Generously coat your poultry in the mix of your choosing and let it marinate for several hours in an airtight plastic bag in the fridge.

Avoid thermal shock Did you know that direct contact between very cold meat and a sizzling hot grill is a foolproof way to char your poultry? It’s true. Instead, let your marinated chicken sit at room temperature for about 30 minutes before it hits the barbecue for a much more appetizing outcome. Also, keep in mind that for beautiful crispy skin, the barbecue needs to be sufficiently hot (around 575 ºF).

Aim for the right temperature Unlike juicy, medium-rare steaks, bloody chicken is dangerous for your health. At the same time, over-cooked chicken is a culinary disaster. If you don’t already have one, buy a meat thermometer that you’ll insert into the meatiest part of the chicken (after the recommended cooking time) to make sure it’s roasted to perfection. In general, a whole three-pound chicken should be kept on the grill for 75 minutes at 575 ºF. Once the meat thermometer reads 185 ºF, you can confidently consider your mission accomplished.

Drizzle the leftover marinade over the entire chicken once it’s almost fully cooked; the sauce will caramelize and form into a delicious golden crust.

Here are some quick and easy summertime recipes that won’t hold you up in the kitchen very long. Now that it’s officially summer, family and friends should be out enjoying the beautiful weather. Enjoy.

TWO-CHEESE MEAT ROLLS 2 pounds ground beef 1/2 cup soft bread crumbs 1 small onion, chopped 1 teaspoon salt 1/4 teaspoon black pepper 1 cup thin noodles, cooked and drained 1 cup mozzarella cheese, shredded 1/4 cup plus 2 tablespoons grated Parmesan cheese 1 tablespoon parsley, chopped 1 (16-ounce) jar of your favorite spaghetti sauce Combine first five ingredients; mix lightly.

Divide meat mixture into six portions. On waxed paper, shape each portion into a 6-inch patty. Combine noodles, mozzarella cheese, 1/4 cup Parmesan cheese and parsley; mix lightly. Place about 1/3 cup noodle mixture in center of each patty. Shape meat mixture around noodle mixture, sealing edges. Place, seam side down, in a 11-by-7-inch baking dish. Bake at 350º for 40 minutes; drain. Reduce oven temperature to 325º.

Pour spaghetti sauce over meat; sprinkle with 2 tablespoons of Parmesan cheese and bake for 25 to 30 minutes. Garnish with parsley, if desired. Yield: 6 servings.

BROWN SUGAR GLAZED COUNTRY RIBS 2 pounds country-style pork ribs 1-1/2 teaspoons salt, divided 1/2 teaspoon black pepper 3/4 cup orange juice 2 tablespoons lemon juice 1/2 cup firmly packed brown sugar 1 bay leaf 1-1/2 teaspoons garlic powder 1 teaspoon lemon peel 3/4 teaspoon ginger 3/4 teaspoon cloves Preheat oven to 400º. Cut ribs into single rib portions. Sprinkle both sides with 3/4 teaspoon salt and pepper. Place ribs on rack in aluminum foil-lined shallow openroasting pan and bake 30 minutes. Lower

heat to 350º. Turn ribs and bake 25 minutes longer; pour off fat. Prepare sauce: In medium saucepan, combine orange and lemon juices, brown sugar, bay leaf, garlic powder, lemon peel, ginger, cloves, remaining salt and pepper; bring to boil. Lower heat and simmer uncovered until mixture is reduced to 1/2 cup, about 15 minutes. Brush on pork ribs. Return to oven for 10 minutes; brush with sauce and bake until glazed, 10 minutes longer. Yield: 4 servings.

POTATO CASSEROLE 3 pounds cooked potatoes 1 (8-ounce) package cream cheese 1/2 stick butter or margarine 1/2 cup sour cream 1/2 cup milk 2 eggs, slightly beaten 1/4 cup chopped onion 1/2 teaspoon salt Dash of black pepper Mash potatoes; add cream cheese and butter or margarine in small pieces and beat until melted. Mix in sour cream. Add eggs and onion to milk; mix well; add to potato mixture. Beat until light and fluffy. Place potato mixture into 9-inch lightly greased casserole dish and refrigerate for 3 hours or overnight. Bake, uncovered, at 350º for 45 minutes until lightly browned.

FRUIT-FILLED COLESLAW 3 firm pears, peeled, cored and diced 1 tart apple, peeled, cored and diced 3 tablespoons lemon juice 3 cups shredded cabbage 1/3 cup raisins 1 cup plain low-fat yogurt 1 teaspoon grated lemon peel 1 tablespoon honey Toss diced pears and apple with 2 tablespoons lemon juice. Add cabbage and raisins, mixing well. In a small bowl, combine all remaining ingredients, including the one tablespoon lemon juice; mix well. Add to cabbage mixture. Toss well; chill for at least 2 hours before serving. Yield: 6 servings.

Freeze 45 minutes to 1 hour or until mixture is frozen around edges and almost solid in center. Stir, breaking up ice crystals. Return mixture to freezer until solid, about 3 hours. Just before serving, whirl mixture in food processor, working in batches, if necessary, for 10 to 15 seconds.

Do not overprocess. Yield: 8 servings.

APPLE-RICE PUDDING 1/2 cup long-grain white rice 2 cups skim milk 1/2 teaspoon vanilla 1/3 cup light or dark raisins 3 tablespoons sugar 1 teaspoon grated orange rind BAKED BANANAS 2 golden delicious apples 4 firm, ripe bananas, with skins Pinch ground nutmeg (about 7 ounces each) 3 egg whites 3 tablespoons unsalted butter 1/4 cup confectioners’ sugar 1/3 cup sugar Combine rice and milk in saucepan; bring 3 tablespoons lime juice to boiling. Lower heat; simmer, covered, 20 1/2 cup orange juice from Chocolate minutes.

Many varieties of wine offer ‘internal air conditioning’ for warmer days ahead Balmy weather my have seemed elusive with the cool, comfortable days of May, but pool-worthy temperatures are just around the corner.

That gives us some time to stock up on wine to cool down with. Terms such as “poolside” or “porch” wine usually suggest off-dry, quaffable wine. I don’t think that’s entirely fair. There’s a summertime wine style for every taste. Dry wine drinkers can reach for sauvignon blanc, Chablis or dry riesling by itself.

I tried some wines that offer some internal air conditioning for very hot days. Given how quickly a glass of wine could warm up in 90-degree weather, stowing a bottle in the freezer to get a super-chill is not a bad idea. If you set bottles out, keep them on ice or in a bottle cozy.

Trivento White Orchid Torrontes, a juicy wine with hints of tangerine, boasts an off-dry finish that complements a tart and crisp ending to this low-alcohol quencher. This version is not widely available in Pennsylvania but Trivento’s other pleasant torrontes are. $12. HHH1/2.

With citrus character and zingy acidity, sauvignon blanc of all kinds are tailor-made for warm days. For dry wine lovers, it’s a great poolside wine as it is a food wine. Robert Mondavi was a pioneer in extending sauvignon blanc with a new style in the 1970s, dubbing the category fumé blanc. Robert Mondavi 2015 Napa Valley Fumé Blanc smells of white grapefruit and acacia flower. Mid-weight in the palate, the wine is smoother with more moderate acidity than conventional sauvignon blanc. $16. HHHH1/2.

Kung Fu Girl 2015 Washington State Riesling is just peachy, loaded with white peach, apricot and lime character. The wine has a tight close for an offdry wine with a mineral finish that makes it great for sipping and Asian food. $14. HHHH. Mionetto il Spriz, a fun brand extension from the famous Prosecco producer, is marketed as a beforedinner drink. Sold in a bowling pin-like bottle and topped with a crown cap, the bubbly wine shows character of orange zest with citrus sweetness. $9.

Those who want to keep things cool and dry may want to check out white Bordeaux. Those who want to be on the sweet side can reach for a moscato.
