FROM THE GREENS

DIRECTOR OF GOLF DUSTIN SIMONS

We hope everyone is having a great winter. Whether your making turns down the hill, using our amazing Nordic Trail System or hopefully getting in some swings in the Golf Simulator.

The early snow that we had really helped protect our greens and all grasses from some of the rain events that we have experienced so far this winter. Everything is looking really good for the course to come out of winter in great shape as we prepare for a Memorial Day Opening. Sean and his crew have been busy with snow removal and parking, as well as getting all the equipment prepared and ready for spring and starting work on getting back our Audubon International Certifications which would make us only the 4th golf course in Idaho to have this certification. To learn more visit https:// www.auduboninternational.org/acsp-for-golf

Are you aware that we have a Golf Simulator? Not only is this an awesome amenity that you can play a round of golf on over 200 course from around the world, but there are great games that you can play with your friends and family. From Closest to the Pin competitions to even a Putt Putt course, it makes it fun for all ages and ability levels.

The best part about the Golf Simulator is that Trackman is the leading launch monitor in golf. Trackman provides more than 30 data parameters for every swing and video can be added. Book a lesson with Alex or myself so you can learn more not only about your swing but what your club head and body are doing during your swing. Winter is a great time to work on your game before we are out playing Osprey Meadows in the Spring.

GREG PAQUETTE

Greg’s journey into the world of skiing began when he learned to ski at Buck Hill, a popular ski area nestled in the suburbs of Minneapolis, Minnesota. It was there that he truly fell in love with the sport, reveling in the crisp winter air and the exhilarating rush of gliding down the slopes. Buck Hill holds a special place in skiing history, as it was the training ground for renowned skier Lindsey Vonn, which adds a touch of prestige to Greg’s early experiences on the mountain.

In 1988, seeking new opportunities and a change of scenery, Greg made the significant move to San Diego, California. The sunny beaches and warm climate of Southern California were a stark contrast to the snowy slopes of Minnesota, and as a result, Greg put skiing on the back burner for many years. Life in San Diego was filled with different adventures, but the call of the mountains remained in the back of his mind.

It wasn’t until 2006 that Greg stumbled upon Tamarack, and this discovery reignited his passion for skiing. For the first time, he experienced true mountain skiing, surrounded by breathtaking views and the thrill of tackling more challenging terrain. This was a pivotal moment for him, as he reconnected with the joy and excitement that skiing had once brought into his life.

Since making the move to Tamarack full-time in 2020, skiing has transformed into a deep passion for Greg. He eagerly embraces every opportunity to hit the slopes, often joking that he is making up for all the years he didn’t ski. With a determination to seize every moment, Greg is committed to not missing a single day on the mountain. His enthusiasm is infectious, as he immerses himself in the sport, enjoying the camaraderie of fellow skiers and the thrill of each run. Every day spent skiing is a celebration of the passion he has rediscovered, and it’s clear that the mountains have once again become an integral part of his life.

Q&A WITH ASHLEY MARTIN

Q: Can you tell us a hidden gem in Valley County that only locals know about?

Ashley: The Donnelly farmer’s Market in the Summer is no secret, but every single time I’ve gone, I’ve met new incredible people, heard great stories, bought some really cool art and walked away with a great cup off coffee.

Q: Donnelly is known as the crossroads to recreation, what would you say is your favorite way to recreate?

Ashley: Skiing, hiking and cycling.

Q: Where would we find your favorite viewpoint in Tamarack?

Ashley: Every time I ride up to summit, I MUST stop at the top of Tango, to try and take it all in. Pictures just don’t do it. Can’t get enough of it.

Q: Winter is here, so what are some of your favorites (and least favorite) winter traditions?

Ashley: My favorite tradition in the winter is bonding with my friends and family over skiing. When I was learning to ski in College, my Dad and I made a weekly tradition to go skiing together. It became my favorite day of the week. This sport has brought me closer to the people I love, and introduced me to incredible individuals, and I couldn’t be more grateful. My least favorite tradition in the winter is the morning tradition of digging my car out of the snow and being told the mail man couldn’t make it up my driveway.

Q: What do you like best about Tamarack Resort?

Ashley: You don’t have to look far to find people who love the same things you do.

Q: If you could learn to do anything, what would it be?

Ashley: Speak every language fluently or backflip.

Q: What would you name the autobiography of your life?

Ashley: “I Came for the Scenery, Stayed for the Sanity” – Best decision I ever made.

Q: If you won the lottery, what is the first thing you would do?

Ashley: The very first thing I would do is fill up my gas tank all the way and not look at the price – then take my loved ones on a stress-free vacation.

BEEF & SAUSAGE ZITI PASTA

Indulging in the comforting embrace of Beef and Sausage Ziti Pasta is like wrapping yourself in a warm, flavorful blanket. This hearty dish marries the rich, savory notes of ground beef and zesty sausage with al dente ziti, all enveloped in a luscious tomato sauce. Topped with a melty layer of cheese, it’s a feast that brings together family and friends around the dinner table. Whether you’re looking for a weeknight meal or a crowd-pleaser for your next gathering, this pasta dish promises to satisfy both the appetite and the soul. Dive in as we explore the delightful layers of flavors and textures that make this recipe a must-try!

Ingredients

2 tablespoons olive oil

3 cloves garlic, minced

1 large onion, diced

1-pound ground beef (93-7 fat ratio)

1-pound Mild Italian sausage

Two 14.5-ounce jar of marinara sauce

One 28-ounce can dice tomatoes

2 teaspoons Italian seasoning

1/2 teaspoon red pepper flake

Salt and freshly ground black pepper

1-pound dry ziti pasta

1 1/2 pounds mozzarella, grated

One 15-ounce tub whole-milk ricotta

1/2 cup grated Parmesan

2 tablespoons chopped fresh parsley

Directions:

Heat the olive oil in a pot over medium heat. Add the garlic and onions and sauté until starting to soften, 3 to 4 minutes. Add the ground beef and sausage and cook until browned. Drain off almost all the fat, leaving a bit behind for flavor and moisture. Add the marinara sauce, dice tomatoes, Italian seasoning, red pepper flakes and some salt and pepper. Stir, bring to a simmer and simmer for 25-to-30-minute Remove 3 to 4 cups of the cooked sauce to a bowl to cool down. Bring a large pot of water to a boil and add some salt. Cook the ziti until not quite al dente. Preheat the oven to 375 degrees F. In a bowl, mix 2 cups of the grated mozzarella, the ricotta, Parmesan, parsley and some salt and pepper. Stir together just a couple of times (do not mix completely). Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour it into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled reserved meat sauce and toss to combine. Add half the coated pasta to a large casserole dish or lasagna dish. Spoon half of the remaining sauce over the top, then top with half the remaining mozzarella. Repeat with another layer of the coated pasta and the remaining sauce and mozzarella. Bake until bubbling, about 20 minutes. Let stand 5 minutes before sprinkling with chopped parsley to serve.
