Last month, we asked you to share your favourite meals to cook while you’re travelling. Our lucky winner is Sarah Conway who says, “I love to cook up a batch of bacon and egg muffins. Just chop up some bacon, onions, and a bit of tomato. Give them a quick fry in the pan. Then beat up about 6-8 eggs, mix everything together, and cook for about 20 minutes in muffin trays. They’re perfect for taking with you on walks, or for a nice little afternoon snack. Sometimes I’ll throw together a nice salad to go with them and call it lunch. Easy!”
