Last month, we asked you to share your favourite meals to cook while you’re travelling. Our lucky winner is Sarah Conway who says, “I love to cook up a batch of bacon and egg mu ns. Just chop up some bacon, onions, and a bit of tomato. Give them a quick fry in the pan. Then beat up about 6-8 eggs, mix everything together, and cook for about 20 minutes in mu n trays. They’re perfect for taking with you on walks, or for a nice little afternoon snack. Sometimes I’ll throw together a nice salad to go with them and call it lunch. Easy!” Here are some of the other tasty suggestions we received:

We have lots of stir-fries when we travel in our caravan. All you need is some frozen mixed veges and your favourite meat. Quick and easy, and you can add a nice sauce or some herbs for extra fl avour.

It’s all about the barbecue! Lots of steak and salads, bacon and eggs for breakfast, and maybe some prawns if we’re feeling like something really special.

If we’re going away for a few days, I’ll often cook up some casseroles at home before we leave. Then it’s just a matter of reheating and maybe cooking up some rice to go with it.

For a tasty breakfast, saute some onions in a hot pan with your favourite herbs. Next add in some tinned tomatoes and your favourite type of

tinned beans (we just use baked beans). Once it’s nice and hot, crack in some eggs and then cover until the eggs are cooked. One pot, easy and yummy!

Cook up a big pot of mince with onion and garlic. Chop up some lettuce and tomatoes, grate some cheese. Then put it all together in a tortilla. The kids love it and it’s cheap and easy.

Our travel treat is a nice piece of salmon cooked on the barbecue. Just add some herbs and lemon and a bit of oil, wrap in tin foil and then put on the hot grill for about 10 minutes. We have ours with a few steamed veges or salad – oh and a glass of wine of course!

Easy chicken curry! Chop up some boneless chicken thighs, throw into the pan with some onion and garlic. Then just add an instant curry sauce or a dash of curry paste and some coconut cream. I usually cook enough for lunch for the next day too.

Spring is coming, and so is NZMCA’s celebration of the outdoor life. The October show is set to be the biggest ever – see you there!

The NZMCA Motorhome, Caravan & Leisure Show takes over Mystery Creek next month – this time with even more on display. More motorhomes and caravans, more exhibitors now filling two pavilions and two marquees, and even more outside exhibitor sites … it’s bursting with improvements. Everything you love about the outdoor lifestyle will be at Mystery Creek in Hamilton on Friday 15, Saturday 16 and Sunday 17 October.

Pack your comfy shoes because this show has grown. TrailLite is now in its own building on the eastern side of the main pavilion, and is jam-packed with all things TrailLite, motorhomes, campervans and so much more. This is also the new home of the popular TrailLite Theatre, which is fully booked with experts in their field. They’ll inspire you with eight full presentations each day. You’ll also find exhibitors along the lane next to the TrailLite Pavilion, so make sure you visit those.

If you’re looking for accessories, a huge range is on offer in the pavilion, outside and in the Accessories Marquee. This is where you’ll find all of your favourite products, new gadgets, incredible innovations, and fresh ideas to make your life on the road even better.

Planning a road trip? Off the Beaten Track Travel NZ Marquee is your next stop. This marquee is filled with regional tour organisations and operators with amazing ideas for cool stuff to do while you’re roadtripping around our beautiful country.

Event Manager Michele Connell is proud to see this show grow, after a challenging 2020. “We are pleased to see domestic travel continue to be on the increase, and our industry continuing to see a surge in business. After we had to postpone, but still have a great show last year, we are thrilled to be able to offer an even bigger and better experience for our visitors this year, with all your favourite brands represented and huge variety and choice for everyone attending over the three days.”

Walk Down Memory Lane has had a revamp, with a new name and new location. The all new ‘Retro Lane’ is on the Village Green, outside the double doors of the main pavilion. Beautifully refurbished

vintage caravans, cars and vans will be proudly displayed over the weekend, and their owners are looking forward to telling you about their work.

The Great Journeys of NZ Seat & Eat also has a new space, on the grass area opposite Retro Lane, as you exit the pavilion on the left. There will be a great variety of foodies on site to settle any hunger pains, as well as lots of additional seating, and our show musician to keep you entertained over lunch. Inside the pavilion, visit our all-new Cherry Tree Cafe for some lunchtime treats, along with NZMCA’s beautifully refurbished 1928 REO Speed Wagon. Take the time to stop and admire the artistry and workmanship while you’re enjoying the show.
