This summer has been one of the hottest and driest on record, so it’s hard to imagine Autumn, with its changing colours, cooler days, and the nights drawing in. For many people, the change of season this year will be a particular relief, due to the heat of the last few months, which most definitely means our gardens, local countryside and wildlife will be needing some rain!

Both Aylesbury Waterside Theatre (p.54) and Thame Players (p18) have been busy over the summer, but they now have many new and brilliant shows coming up. 2. Put the floured chicken pieces into the hot olive oil, skin side down, and fry without moving the pieces until goldenbrown underneath. This should take around 8-10 minutes. Next, turn the chicken and fry until browned on the other side. Now finely chop the shallot and add to the frying pan, placing the shallot under the chicken so that the shallot cooks.

4. While the chicken is simmering, take a separate frying pan and heat the remaining olive oil. Slice the mushrooms and add to the second pan, then fry them for 3-5 minutes.

5. Next, add in the parsley and diced tomato, shaking the pan to mix everything in well. Spoon the mushrooms, parsley and tomato over the chicken and garnish with sprigs of parsley, then serve.

Ingredients (serves four) 2 tbsp olive oil 1 tbsp plain flour, for 1 small chicken, cut into 8 pieces, or 8 chicken thighs, or 8 chicken breast fillets (skin on or off as preferred) 2 shallots, very finely chopped (100g or 3.5 oz) 50ml (3 ½ tbsp) brandy, tbsp) white wine 1 chicken stock pot 600ml (2 1/2 cups) tomato juice (with an optional touch of gravy browning added in for extra colour if desired) 250g (9oz) button mushrooms, finely sliced 3 tbsp de-seeded and finely sprigs of fresh parsley to garnish

3. If you are using brandy, pour it in around the edge of the pan so that it runs underneath the chicken. Cook for 2-3 minutes to allow the alcohol to evaporate. Add the wine in the same way, pouring it in around the sides of the pan, and cook for a further 2-3 minutes to allow the alcohol to evaporate and reduce the acidity. Next, add the chicken stock pot and the tomato juice (with gravy browning if using). Shake the pan to gently work it in and turn the chicken pieces until fully coated in the liquid. Bring slowly to the boil to allow the chicken stock pot to dissolve, then add the tarragon and simmer for 5 minutes.

Next, spread a layer of flour on a plate or a tray, and coat the chicken pieces evenly and thoroughly, shaking off any excess flour. This will add a golden-brown colour to the cooked chicken and help to thicken the sauce.

Identifying the exact type of structure and its fabric enables us to determine its thermal envelope, how good or bad it is at retaining the warm air that is so expensive to heat, and therefore form a strategy on how best to reduce it.

Thermography is the use of thermal infrared imaging to identify heat loss contributing building defects such as dampness and its sources. It is a non-destructive technique that is ideal when working with older, complex buildings that have so many elements to them. Indeed, it is impossible to make a full and accurate assessment of their state of repair without recourse thermography in the hands of a seasoned building professional.

More than any other technology, the thermal images shown here shows the interplay of moisture, heat and ventilation continuously unfolding in any building. It allows us to better understand/see what is going on, explain it and make better informed decisions when prioritising the allocation of everlimited resources. Which means we should be thinking of thermography as a sixth sense that we are very lucky to have. Because of the highly visual, immediate nature of the thermal survey, it offers a relatively inexpensive and non-invasive way of helping clients and other stakeholders understand the significance of heat loss and potential problems REDUCING HEAT

A condition survey incorporating an analysis of all heat loss areas, building defects and drafts in relation to the current or proposed use of any building is a prerequisite for the correct identification and specification of any insulation (retrofit) works needed, well before their approval and commencement.

WALK

1 - Follow this byway (called Dog Lane), a wide and well surfaced track. It is one of A scenic walk which starts in Peppard Common and follows Dog Lane, a wide treelined track, towards Rotherfield Greys. The route follows a short stretch of the Chiltern Way and then loops back through Crowsley Park Wood.

Start & finish: Peppard Common, RG9 5LB Access Information: A gentle stile-free walk on wide tracks with one gate

2 – Continue straight on for a further 800m ignoring side paths, until you reach a tarmac lane and cross-road of paths. 3 – Turn right along the Chiltern Way bridleway for 120m until you see the sign for Cross Lanes Farm on your left and White Cottage on your right. 4 – Turn right on the footpath just before White Cottage. Follow the path through the wood.

5 – Ignore side paths and continue ahead, passing through a wooden kissing gate. Follow this path down the hill and then back up, ignoring the many side paths (with coloured arrows and permissive paths) which are connected to the golf course. Towards the top of the hill, you will reach a crossing track and a metal kissing gate ahead. 6 – Do not go through the kissing gate, but turn right along the track and follow it back to Waypoint 2 on Dog Lane. (Please note: this is a well-used path but is not the official right of way, which is shown in purple on the map). Turn left on to Dog Lane and retrace your steps to the start.

Food & drink: Red Lion pub, Colliers Lane, Peppard Common Route If you’ve parked by the Red Lion pub, walk down to the B481 Peppard Road and turn left along it. Cross over past the old pub to the entrance to Greys Green golf club, with a ‘Restricted Byway’ immediately to the right.

Peppard Common is well worth exploring, it is a mixture of open grassland and woodlands, rich in wildlife. The common lies in Rotherfield Peppard parish - ‘Rotherfield’ originated from the AngloSaxon for ‘open land for cattle’. The Chiltern Way was set up as a millennium project by Chiltern Society volunteers. It’s a circular walking route of 134 miles with two optional extensions and an additional loop taking the total route to a maximum of 220 miles.

Did you want to celebrate Spike because you were Goon Show fans?

NN: I was brought up on it. My father was in the RAF and we were stationed in places where there was no television. All we had to listen to was recordings of The Goon Show. Ian Hislop [IH]: I’m a lot younger than Nick, so I didn’t hear them first time around. I went back and listened to it and was gobsmacked. The people in charge at the BBC couldn’t bear it. They had no idea what this group were doing, and they wanted to shut them down, basically. They thought they were noisy and anarchic and up to no good. So for me the challenge with the play was: can we bring all that to life onstage? Is it part of your ambition with the play to introduce Spike’s work to new IH:audiences?

Your play ‘Spike’ tells the story of the young Spike Milligan. How did the play come about?

An absurdly funny new play by Ian Hislop and Nick Newman, SPIKE, is coming to Aylesbury Waterside Theatre from Tue 25 – Sat 29 Oct and we have some insider info from the writers!

Nick Newman [NN]: There are too many biopics of comedians that tell the ‘tears of a clown’ story. And while you can’t escape Spike’s mental health issues, for us that was something that we saw as powering his comedy.
