Welcome to the November/December issue of Chiltern View magazine.

We always enjoy putting this issue together and this year is no exception. We had so many events and businesses to promote this issue and we really hope you enjoy our Christmas theme throughout the magazine. There are musical concerts, theatre Pantos and competitions; Craft Fairs, Fireworks, and a Christmas Market (p19). All the way through the magazine you can read about exciting places to visit, walks, clubs to join, and much more. And, don’t forget the annual lights switching on in Risborough (p28) and Thame (p34).

I think we can all agree, one of the best things about Christmas is the food; so, we hope you can get inspired with our festive, foodie, front cover, and get baking! We have a delicious Yule Log recipe from Nigella (p52), that could be fun, if not a bit messy, for all the family to enjoy making together. You also may have spotted a rather worried looking Santa on the front cover; can you help him find Rudolph hiding in the magazine?

It might not seem entirely intuitive to consider the use of modern technology when working with traditional and ancient buildings. However, building conservation should make use of all the knowledge, skills and disciplines at its disposal and it would be a big mistake to dismiss thermography, especially now, with energy costs predicted to be £3,800 a year for the average home by Spring 2023.

Thermography is the use of thermal infrared imaging to identify heat loss contributing to building defects such as dampness and its sources. It is a non-destructive technique that is ideal when working with older, complex buildings that have so many elements to them. Indeed, it is impossible to make a full and accurate assessment of their state of repair without recourse to thermography in the hands of a seasoned building professional. A condition survey incorporating an analysis

of all heat loss areas, building defects and draughts in relation to the current or proposed use of any building is a prerequisite for the correct identification and specification of any insulation (retrofit) works needed, well before their approval and commencement.

Identifying the exact type of structure and its fabric enables us to determine its thermal envelope, how good or bad it is at retaining the warm air that is so expensive to heat, and therefore form a strategy on how best to reduce heat loss

The thermal images shown here reveal the interplay of moisture, heat and ventilation continuously taking place in any building. More than any other technology, this allows us to see and understand what is going on, explain it and make better-informed decisions when prioritising the allocation of ever-limited resources. Which means we should be thinking of thermography as a sixth sense that we are very lucky to have.

1. From the rear of the car park, walk straight down to Bullocks Farm Lane. Cross, turn left along the pavement to a path on left just beyond ‘Briar House’.

2. Cross the road and follow the path downhill through a kissing gate. Keep straight ahead, then left to walk alongside the motorway and left away from it. The path then circles the edge of four fields finally leading to

the B482 road. Stop awhile at the ‘Don Gresswell’ bench for views over Finings Wood.

3. At the road, turn left along the pavement and crossover to the concrete track just before the entrance to Bolter End Farm. Follow the track past ‘Bracken Cottage’ and turn left, through gate just beyond. Follow the track through 2 further gates before descending into Finings Wood. Walk straight on until sign-posted fork is reached.

4. Fork left twice, ascend the hill, and follow obvious path bordering field on your right. There are views

towards Little Frieth from here often with spirals of red kites if the fields are being worked. Drop down and cross bridge, then ascend a short flight of steps - with handrail - and pass through a gate out onto Ditchfield Common.

5. Turn left past the front of ‘Meakes’, and take narrow gravel track ahead through the copse. Pass through a gate, the graveyard extension and the next gate and past Holy Trinity church on the right. Follow the unmade lane round to the right, then left along Church Path and straight on to the road and the car park beyond.

Christmas treesare you going green this year?

For some it might seem too early to even start thinking about Christmas, but for others they are already diving headfirst into the festive season.

Whether you love it or hate it, Christmas is coming!

Many of us will have climate change in mind when thinking about our seasonal choices, particularly when it comes to choosing our Christmas tree.

But the question is, is it more sustainable to buy a real tree or an artificial one?

Growing them in the UK reduces the carbon footprint from importation plus you get a much fresher tree! Look out for trees locally grown or produced with a FSC certification.

The most popular size of Christmas Tree is 6-7ft and takes around 10-12 years to grow. During a trees growing stage it not only captures and stores carbon, but is also provides a habitat for wildlife.

Natural trees are biodegradable and can be used for compost. According to The Carbon Trust, when a two-metre tree decomposes it generates a carbon footprint of around 16kg of CO2. If the same sized tree was burned, planted or chipped, its carbon footprint would be over four times less - around 3.5kg of CO2.

Artificial trees are usually produced in factories overseas and shipped to the UK, which increases their carbon footprint.

The majority are made with chemicals, metal and PVC, which are dangerous to the environment and impossible to recycle. The Carbon Trust have said that a two-metre artificial Christmas tree has a carbon footprint of around 40kg of CO2, over 10 times greater than its natural counterpart.

On average, artificial trees are used just four times before they’re thrown on the rubbish heap. Due to the amount of CO2 they give out, they need to be used over 12 times to start making a difference.

Now, Christmas wouldn’t be Christmas without a tree, and it really is all down to personal preference and budget.

Real Christmas Trees

According to the British Christmas Tree Growers Association (BCTGA) around seven million trees are bought each year in the UK. Around 80% are Nordmann Fir and approximately 1015% are Norway Spruce. The majority of trees bought in the UK are home grown in purpose-built Christmas tree farms and nurseries.

Thame at Christmas

The festive period is kicked off in style at the Christmas Light switch on outside Thame Town Hall on Friday 2nd December.

The lead up starts from 5.30pm, with the actual switch on at 6pm. Come along and soak up the atmosphere.

There are several food stalls selling a variety of options, mulled wine, a couple of stilt walkers, the local concert band keeping the crowd entertained with seasonal tunes, and a stage for the all-important switch on (and Santa will be there too!).

Santa is back in his Grotto at Thame Town Hall, with a great support act in a Gift Fair upstairs in the Upper Chamber from 10am. Here you will find local stalls of arts, crafts and much more.

Appreciating Health For All

Almost every aspect of our lives has an impact on our health. Whether it’s our jobs, our homes, our access to education, or our financial situation. It all has an impact on our ability to be healthy. Unfortunately, we tend to concentrate on health care and individual choices. This is an issue. It creates a disconnect between what is said and what is done to create a healthy community.

Developing a healthy environment requires greater action on the wider will for health. However, in any public debate about how to

improve health in the community, health inequalities and the wider factors are often left out or misunderstood.

Nevertheless, what is advocated is the opportunity to act locally. It is suggested: ‘Never doubt that a small group of thoughtful, committed citizens can change the world; indeed, it is the only thing that ever has.’

In other words, the first step to our health together is an act of human compassion. Evidently, this becomes the foundation to all the great achievements of humankind.

So far, one of the knock-on

effects of the pandemic is that it really demonstrated the impact of inequalities on health and helped build a bit more public awareness, that health differences aren’t just down to individual choices.

However, as history shows time and again, waiting for government action is never the best recipe for change. Progressively, we need to appreciate the opportunities that present themselves daily to do things differently; both ourselves and collectively.

Nigella Lawson’s Yule Log

Introduction

No one does Christmas like Nigella, which is why this glorious yule log is the ideal centrepiece for your festive lunch.

Method

Ingredients (serves twelve)

For the cake

• 6 large eggs (separated)

• 150 grams caster sugar

• 50 grams cocoa powder

• 1 teaspoon vanilla extract

• 5 teaspoons icing sugar (to decorate)

For the icing

• 175 grams dark chocolate (chopped)

• 250 grams icing sugar

• 225 grams soft butter

• 1 tablespoon vanilla extract

Top Tip

Don’t expect perfection. Remember that trees are naturally wonky and flawed. Be sure not to over stir the cake mix; you want it light and airy.

1. Preheat the oven to 180°C/160°C Fan/gas mark 4/350ºF. In a large, clean bowl whisk the egg whites until thick and peaking, then, still whisking, sprinkle in 50g / ¼ cup of the caster sugar and continue whisking until the whites are holding their peaks but not dry. In another bowl, whisk the egg yolks and the remaining caster sugar until the mixture is moussy, pale and thick. Add the vanilla extract, sieve the cocoa powder over, then fold both in. Finally, gently fold in the egg whites.

2. Line a Swiss roll tin with baking parchment, leaving a generous overhang at the ends and sides, and folding the parchment into the corners to help the paper stay anchored.

Pour in the cake mixture and bake in the oven for 20 minutes.

Let the cake cool a little before turning it out onto another piece of baking parchment. If you dust this piece of parchment with a little icing sugar it may help with preventing sticking, but don’t worry too much as any

tears or dents will be covered by icing later. Cover loosely with a clean tea towel.

3. To make the icing, melt the chocolate in a heatproof bowl suspended over a pan of simmering water, then let it cool. Put the icing sugar into a processor and blitz to remove lumps, add the butter and process until smooth. Add the cooled, melted chocolate and the tablespoon of vanilla extract and pulse again to make a smooth icing.

4. Sit the flat chocolate cake on a large piece of baking parchment. Trim the edges of the Swiss roll. Spread some of the icing thinly over the sponge, going right out to the edges. Start rolling from the long side facing you, taking care to get a tight roll from the beginning, and roll up to the other side. Pressing against the parchment, rather than the tender cake, makes this easier.

5. Spread the yule log with the remaining icing, covering the cut-off ends. Create a wood-like texture by marking along the length of the log with a skewer or sharp knife and finish with a dusting of icing sugar.

Florence Nightingale Hospice Charity is bringing its popular Santa Dash event back to Aylesbury this December. The event will see hundreds of participants dust off their best Christmas jumpers, don their Santa hats and take to the streets for Aylesbury’s jolliest fun run on Sunday 11th December.
