GLUTEN FREE PANCAKES Dry ingredients:
8oz brown rice flour 1oz buckwheat flour 1oz almond flour 1oz tapioca flour 1 1/2 tsp baking powder 3/4 tsp salt 3/4 xanthan gum
Wet ingredients:
1/2 pint soy milk 1/2 pint water 2 eggs, beaten 4 tbsp coconut oil 1 tbsp honey/ raw agave
1 tsp vanilla extract 1 tsp almond extract

Instructions 1. Mix all the dry ingredients in a large mixing bowl. Make a hole in the centre and add the wet ingredients. Beat well until mixture is a smooth consistency. 2. Add a small amount of oil to a frying pan and place over medium heat. Check the oil is hot by adding a drop of batter, if it spits then it is ready. 3. Pour a scoop of batter into the pan. Brown on both sides and serve hot with maple syrup.
