Ingredients 225g Rachel’s Organic Unsalted Butter 185g Green & Black’s 85% Dark Chocolate 85g Doves Farm Organic Plain White Flour 50g Green & Black’s Organic White Chocolate 50g Green & Black’s Milk Chocolate Creamy Bar 3 Organic Eggs (Large) 275g Billingtons Unrefined Organic Granulated Sugar 1tsp Nielsen-Massey Organic Vanilla Extract
1 - Cut the butter and dark chocolate into cubes and tip into a medium bowl. Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them. Then remove the bowl and leave to cool to room temperature. 2. While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180c/gas 4. Using a shallow 20cm square tin, cut out a square, line with baking parchment. 3. Chop the white and milk chocolate into chunks. Break the eggs into a different bowl and add the sugar, beak the
eggs and sugar together until they look thick and creamy and has doubled in volume. 4. Add the cooled chocolate to the creamy mixture and fold it in. Sieve the cocoa powder and flour into the bowl, then fold into the mixture gently and carefully. Once done add the chocolate chunks and stir in until dotted throughout the mixture. 5. Pour the mixture into the prepared tin, use a spatula to level and get the mixture into the corners. 6. Pop into the oven for 25 minutes or until the top has the shiny papery crust and the sides are just beginning to come away from the tin. 7. Leave until cool before tipping out and cutting up. Yum yum
