BUTTERMILK PANCAKES
Instructions Ingredients:

1. Mix the plain flour, salt and bicarb in a large bowl, add the buttermilk, butter and egg. Stir together, making sure it stays lumpy, your batter should look thick and spongy. 2. Add a small amount of oil to a frying pan and heat until the oil is hot. Pour a scoop of batter into the pan, you can decide how large or small you want the pancakes. Brown on both sides and serve hot with fruit or maple syrup.

Instructions 1. Mix the plain flour, wholemeal flour, salt, baking powder, and sugar in a large bowl, add the buttermilk. Whisk together then add the bananas. 2. Add a small amount of oil to a frying pan and heat until the oil is hot. Pour a scoop of batter into the pan, you can decide how large or small you want the pancakes. Brown on both sides and serve hot.

VEGAN PANCAKES
Instructions Ingredients:
5oz plain flour 2 tbsp sugar 2 tsp baking powder 1/2 tsp salt 300ml water 1 tbsp oil icing sugar for dusting selection of fresh fruit

1. Add the dry ingredients to a bowl, make a well in the centre and add the wet ingredients. Whisk until blended. 2. Add a small amount of oil to a frying pan and place over medium heat. Check the oil is hot by adding a drop of batter, if it spits then it is ready. 3. Pour a scoop of batter into the pan. Brown on both sides and serve hot with a sprinkling of icing sugar and fresh fruit.

GLUTEN FREE PANCAKES Dry ingredients:
8oz brown rice flour 1oz buckwheat flour 1oz almond flour 1oz tapioca flour 1 1/2 tsp baking powder 3/4 tsp salt 3/4 xanthan gum
Wet ingredients:
1/2 pint soy milk 1/2 pint water 2 eggs, beaten 4 tbsp coconut oil 1 tbsp honey/ raw agave
1 tsp vanilla extract 1 tsp almond extract
