Destemmed within 2 hours of picking, light maceration on their skins, soft pressing. Fermentation in concrete vats with indigenous yeasts and without temperature control. No fining or filtration. “This pale yellow wine is a little cloudy if not decanted in a jug to remove the yeast remainders. The scent is pleasantly floral, fragrant, fruity, combined with hints of bread crust and Williams pear. In the mouth it allows a simple and pleasant flavor, which will surprise you with the excellent balance between crisp acidity and structure not at all trivial, and the lingering bitterness characteristic of Prosecco "on the lees". The classic Prosecco is the "old" irreplaceable host on all tables of this land. For this reason it has a new old-fashioned design, with its crown cap badge and distinctive mark. I foresee an evolution of this wine in 2-3 years, it is an ideal aperitif, goes well with fish, both raw and cooked, and all raw meats and cheeses, recommended serving temperature is 1011 °C."
