GM MESSAGE Krista Cressman General Manager / directeur général, Jersey Canada Jersey Canada welcomes Krista Cressman to the team! Krista excels at helping grass roots membership organizations build on their strengths. Her recent experience includes time as the Executive Director at Steckle Heritage Farm, but it was working as Oxford County Dairy Educator and Regional Specialist with 4-H that ignited her interest in agriculture. Learning is a passion for Krista, and she is working on becoming fluent in French to better support our bilingual membership. She is outgoing and equally enjoys collaborating with industry partners and learning from producers. Krista encourages you to reach out via email or phone to say hello! It has been a year of many difficult changes, but I am a firm believer that opportunities exist within challenges if we are open to seeing them. I am excited to be joining the team here at Jersey Canada and I am eager to work alongside the membership, staff and board at Jersey Canada to develop a new strategic plan that continues to support the growth and integrity of the herdbook, and build on the continuous advancement of profitability for producers. The experience I bring to the General Manager’s role is varied, with the last decade working in the non-profit sector promoting agricultural awareness and education. It is my hope that a strong background in operational planning, program development and organizational positioning for growth will blend with the skilled people on staff to continue the success of Jersey Canada. I am looking forward to 2021 and the opportunities it will bring. Je suis excitée de me joindre à l’équipe Jersey Canada et j’ai hâte de travailler aux côtés des membres, du personnel et du conseil d’administration de Jersey Canada pour développer un nouveau plan stratégique qui continuera de soutenir la croissance et l’intégrité du livre généalogique et de miser sur l’avancement continu de la rentabilité pour les producteurs. L’expérience que j’apporte à mon rôle de Directrice générale est variée. Au cours des dix dernières années, j’ai travaillé dans le secteur sans but lucratif, faisant la promotion de l’agriculture et de l’éducation agricole. Bake at 350F until very slightly browned but soft. 7. Sandwich with warmed jam. 8. Glaze with icing sugar, hot water, ½ teaspoon oil and almond flavouring or orange juice. 9. Top with coloured sugar or candied cherry pieces. Biscuit dough freezes well.

Les ajouter graduellement au mélange sucré, en alternant avec le liquide. 5. Abaisser et tailler des cercles. 6. Cuire au four à 350F jusqu’à légèrement colorés, mais encore moelleux. 7. Faire des sandwiches avec de la confiture tiédie. 8. Glacer avec un mélange de sucre à glacer, d’eau chaude, ½ c. à thé d’huile et de l’essence d’amande ou du jus d’orange. 9. Garnir de sucre coloré ou de morceaux de cerises confites. La pâte à biscuit se congèle bien.

Ces souvenirs me ramènent à de bons moments avec la famille et au partage avec notre communauté. Des voisins venaient toujours faire une petite visite ou nous allions en visite pour savoir ce qui s’était passé depuis l’été. Au cours des hivers, il y avait des soirées communautaires de parties de cartes, habituellement les samedis. Noël signifiait que les tâches du matin étaient faites le plus tôt possible, suivies du déjeuner et de l’ouverture des cadeaux pour que nous puissions finir les préparatifs pour la visite de la famille et des amis pour le lunch, habituellement 30 à 40 personnes. Le menu était composé de dinde, de jambon, de pérogies, de nalesniki, de patates, de légumes en conserve du jardin et de marinades maison. Pour le dessert, il y avait du gâteau au fromage maison, des barres nanaimo et une variété de biscuits comme des doigts de Père Noël, des biscuits aux épices, aux pépites de chocolat et du fudge. Ce que j’aimais le plus était le rassemblement de la famille et de la communauté. Partager notre maison, jouer à des jeux à l’intérieur ou à l’extérieur, se parler en face à face. Nous souhaitons la bienvenue à notre nouvelle directrice générale, Krista Cressman et nous commencerons à l’intégrer à notre famille Jersey. De ma part, Rachel, Jacob, Krista et Jean Marc, nous vous souhaitons le meilleur et espérons une année 2021 très prospère.

PRESIDENT’S MESSAGE DU PRESIDENT John Vander Wielen President / Président, Jersey Canada This issue of the Canadian Jersey Breeder marks the 75th Anniversary of the magazine. The magazine continues to be a great way to stay informed on many things related to Jersey Canada and the breed. It is also an excellent opportunity to market your genetics to the general dairy industry. The magazine would not have had such a long standing history without support from its many breeders over the years marketing their genetics and sharing their achievements with the Jersey breed. So thank you and no doubt the support will continue for many more years! The Board of Directors of Jersey Canada is very pleased to welcome Krista Cressman as the new General Manager. Krista has an extensive background in member driven organizations. She is looking forward to the opportunity to meet with you the membership, when it is safe to do so. At this time a huge thank you goes out to Phyllis Harrington for stepping up to take on the role of interim general manager until we could hire a permanent one. In true Phyllis fashion she did an amazing job and it was truly appreciated! Of course these past few months has seen many challenges worldwide due to Covid-19. I would like to sincerely thank all of our staff at Jersey Canada for their continued diligence and commitment to the organization in moving forward.

On behalf of myself and my family I would like to wish everyone the best of this holiday season and encourage everyone to take time to reflect on the things we can be thankful for, one of them being living in this great country. La revue n’aurait pas eu une si longue histoire sans l’appui des nombreux éleveurs qui, au fil des ans, ont fait la promotion de leur génétique et ont partagé leurs succès avec la race Jersey. Donc, merci et sans doute que cet appui se prolongera pendant plusieurs années encore! Le Conseil d’administration de Jersey Canada est fier de souhaiter la bienvenue à Krista Cressman en tant que nouvelle Directrice générale. Krista a une expérience substantielle auprès des organismes gérés par ses membres. Elle a hâte de rencontrer les membres lorsque ce sera sécuritaire de le faire. Je profite de l’oc-

by/par: Rachel Quesnel Shilletto, Jersey Canada There is no doubt that this year has been a different, yet Canadian Jersey breeders keep achieving milestones and I’m so happy to be part of the celebrations. Without dedicated breeders who see the value in registering their animals and feel pride in being part of the Jersey breed culture; the breed would not be where it is today. Their diligence in registering animals ensures that we capture their dreams and potentially provide the story to someone else’s dream. The story is shown on the animal’s pedigree and clearly revealed in their classifications, awards and ancestry. I am lucky to have the chance to connect with breeders, providing different tools such as reminders to help farms register their animals at the lowest cost available. I also follow up with breeders that may have had challenges with

their registrations, need a gentle reminder or some that have moved onto other dreams. The one thing that is clear in my many conversations is that breeders are passionate in sharing their dreams. There’s the breeder that farmed for 40 years, but his body then deciding that it was time for another dream. He remembers very fondly his show days, the passion that he has and continues to have for the breed and how much now he misses his cows. There’s another breeder who had a herd dispersal in 2016 but kept the one calf. Now 4 years later, they are still working to preserve this herd prefix. These two breeders have knowingly or unknowingly provided someone else with a chance to start their own dream. I heard about the first Jersey bought at a herd dispersal, how they fell in love with the breed

and now that has a farm full of Jerseys. I heard about the animals bought for a 4-H project at another dispersal and how it led to their love of showmanship and working with Jerseys. They also bring inspiration to other young farmers just starting out on finding the “perfect” prefix to mark their breeding achievement and legacy. I heard about a farm working on opening their on-farm processing, or how they have a cheese processing facility and their biggest dream is to be able to provide 100% of the Jersey milk making their cheese. All these dreams shared over a phone conversation makes me wonder what else are our Jersey breeders are dreaming up. Remember the office is open Monday to Friday from 8:30 am to 4:30 pm. Sans éleveurs dévoués qui voient la valeur d’enregistrer leurs animaux et qui sont fiers de faire partie de la culture de la race Jersey ; la race Jersey ne serait pas là où elle est aujourd’hui. La seule chose qui a été claire dans mes nombreuses conversations est que les éleveurs sont passionnés dans le partage de leurs rêves. Il y a l’éleveur qui a cultivé pendant 40 ans, mais son corps a décidé qu’il était temps pour un autre rêve, mais il se souvient très affectueusement de ses jours d’expositions, de la passion qu’il a et continue d’avoir pour la race et à quel point ses vaches lui manquent maintenant. Il y a un autre éleveur qui a eu une vente de son troupeau en 2016, mais qui a gardé une seule génisse. Aujourd’hui, 4 ans plus tard, ils travaillent toujours à la conservation de son préfixe de troupeau. Ce que ces deux éleveurs ont fait consciemment ou non, c’est donner à quelqu’un d’autre une chance de commencer leur propre rêve. J’ai entendu parler de la première génisse Jersey achetée à l’une de ces ventes de troupeaux, leur amour pour les caractéristiques de la race Jersey était clair dans notre conversation et maintenant ce rêve est de-

venu une ferme pleine de Jerseys. J’ai entendu parler des animaux achetés pour un projet 4-H dans une autre vente de troupeau et comment cela a conduit à leur amour des expositions et de travailler avec des Jerseys. Ils inspirent également d’autres jeunes agriculteurs qui commencent tout juste à trouver le préfixe « parfait » pour marquer leur réussite et leur héritage d’élevage Jersey. J’ai entendu parler de la ferme qui travaille à l’ouverture de leur magasin de produits laitiers directement à la ferme, ou de la façon dont ils ont une fromagerie et leur plus grand rêve est de pouvoir fournir suffisamment de son lait jersey pour que ce soit leur lait qui fabrique tout le fromage. Tous ces rêves, partagés lors d’une conversation téléphonique, veulent qu’on se demande ce dont rêvent nos éleveurs de Jersey. The Message in the Medium: Agricultural Journalism Since 1945 Brandon Mendonca Agricultural journalism in the postwar period is best defined by a long series of ebbs and flows. Members of the profession have witnessed sweeping changes in advertising, readership, editorial trends, and technological innovations. While such changes have produced high peaks and low valleys, one theme has remained consistent: agricultural journalists have shown remarkable adaptability and a desire for farmers to succeed dating back to the 1940s. Immediately following the Second World War, commercial farm publishing entered the so-called “bonanza years,” a fifteen-year period marked by a rise in advertising revenue, circulation, and readership. The postwar boom of the Canadian economy helped generate a wide range of farm publications, and the farm press became critically important as farmers sought new ways to improve production. The editorial content of the bonanza years reflected the fast paced changes of increased mechanical power, new commercial fertilizers, and bigger farm operations. It also reflected the technical knowledge and interests of its readers. Between 1945 and 1960, as the number of farms decreased and the scope of operations narrowed, specialized content became increasingly popular. It was during this era where periodicals targeting dairy farmers, cattlemen, fruit growers, and horticulturalists enjoyed their greatest commercial success. The prosperity of the bonanza years, however, was short-lived. If the 1940s and 50s represented commercial opportunity, the 1960s and 70s were mired in uncertainty. The advertising dollars that once buoyed general farm periodicals quickly dried up as advertisers turned to commercial television and its mass audience. Farm publishers simply could not compete with television, which consequently affected agricultural writers. In addition to budgetary cuts and the looming threat of dissolution, editors of national farm periodicals were forced to change their content. To appeal to advertisers, farm machinery began to replace farm people in cover photos, and the women’s section—a once staple of general periodicals—was slowly abandoned. Few farm magazines survived this period unscathed, and those that did fare best were typically niche in scope and fully aware of their target audience. Although the uncertainties of the farm press have lingered since the 1960s, agricultural journalists continue to find ways to make their presence felt. Today, the editors of specialized farm magazines are quick to report the new management tools, market trends, and the latest experimental results, while journalists who work the agricultural beat are finding ways to bridge the interests of rural and urban audiences. A concerted effort is being made towards knowledge mobilization, particularly regarding issues of food supply and sustainability. Now more than ever, farm journalists have assumed a greater responsibility in ensuring that farmers make prudent business decisions and, conversely, that the urban public understands the agricultural issues that directly affect their lives.

Le message dans le médium : Journalisme agricole depuis 1945 Brandon Mendonca Le journalisme agricole d’après-guerre se définit surtout par de longues séries de hauts et de bas. Les membres de la profession ont été témoins de changements drastiques dans la publicité, dans les lecteurs, les tendances éditoriales et les innovations technologiques. Même si ces changements ont produit de hauts sommets et de basses vallées, un seul thème demeure : les journalistes agricoles ont démontré une capacité d’adaptation remarquable et un désir d’aider les agriculteurs à réussir et ce, depuis les années 1940. Immédiatement après la Deuxième Guerre mondiale, les publications agricoles commerciales sont entrées dans les « années d’abondance », une période de quinze ans marquée par une augmentation des revenus de publicité, de la circulation et du nombre de lecteurs. L’essor d’après-guerre pour l’économie canadienne a aidé à générer un large éventail de publications agricoles et la presse agricole est rapidement devenue importante car les agriculteurs recherchaient de nouvelles façons d’augmenter la production. Le contenu éditorial de ces années d’abondance est le reflet des changements rapides dus à l’augmentation du pouvoir mécanique, des nouveaux fertilisants commerciaux et de plus grosses entreprises agricoles. C’est aussi le reflet des connaissances techniques et des intérêts de ses lecteurs. Entre 1945 et 1960, comme le nombre de ferme décroît et que le champ d’opération se définit, le contenu spécialisé est de plus en plus populaire. C’est au cours de cette période que les périodiques visant spécifiquement les producteurs laitiers, d’animaux de boucherie, de fruits ou les producteurs horticoles ont connu leur plus grand succès commercial. Par contre, la prospérité de ces années d’abondance a été de courte durée. Si les années 1940 et 1950 représentaient l’opportunité commerciale, les années 1960 et 1970 étaient pleines d’incertitude. Les dollars de publicité qui jadis supportent les périodiques d’agriculture générale se sont envolés car les annonceurs se sont tournés vers la télévision commerciale et son plus grand public. Les publications agricoles ne pouvaient simplement compétitionner avec la télévision et les journalistes agricoles ont été affectés. En plus de coupures de budget et la menace de dissolution, les éditeurs de périodiques agricoles nationaux se sont vus obligés de modifier leur contenu. Pour attirer les annonceurs, la machinerie agricole a commencé à remplacer les gens sur les pages couvertures et la section des femmes – à l’époque une nécessité des périodiques généraux – a lentement été abandonnée. Peu de magazines agricoles ont survécu indemnes à cette période et ceux qui s’en sont le mieux tirés sont typiquement des publications de niche qui étaient très ouvertes à leur clientèle cible. Même si les incertitudes dans le monde des publications agricoles perdurent depuis les années 1960, les journalistes agricoles continuent de trouver le moyen de se faire remarquer. Aujourd’hui, les éditeurs de magazines agricoles spécialisés font connaître rapidement les nouveaux outils de régie, les tendances du marché et les derniers résultats expérimentaux tandis que les journalistes sur le terrain trouvent des moyens de faire le pont entre les intérêts de leur audiences urbaine et rurale. Un effort concerté est fait vers la mobilisation du savoir, surtout au sujet de l’offre alimentaire et de l’agriculture durable. Maintenant plus que jamais, les journalistes agricoles assument une plus grande responsabilité en s’assurant que les agriculteurs prennent des décisions d’affaires avisées et, inversement, que le public urbain comprennent les enjeux agricoles qui affectent directement leur vie.

75 Years of the Canadian Jersey Breeder The story of the Canadian Jersey Breeder is the story of Jerseys in Canada. Starting in December 1945, the Breeder was originally published by A.S. Christie in Montreal QC.. However, Mr. Christie passed in the spring of 1946 and Jersey Canada, or the Canadian Jersey Cattle Club as it was known, took over publishing the magazine. This began a venture that has seen up to a dozen people at once working at Jersey Canada and on the magazine. The current lunchroom at the Guelph office saw the magazine assembled by hand, with photos and text cut out carefully and pasted on a board to be photographed. Where financial records are now stored once acted as a dark room, and Jersey Canada employees developed the magazine page by page to be sent to the printer. With the advent of the digital age, staff were given a place to heat up leftovers as magazine production moved to a screen. Before the internet the Breeder was a primary source for farmers to advertise. 12 issues per year ensured a timely flow of information and coverage of issues important to members. The tumultuous 60s saw major changes to the dairy landscape across Canada and the Breeder tells this story through the lens of Jersey owners, both outright and between the lines. In depth articles track technological advancements in nutrition, cow comfort and genetics. An attentive reader can watch the progression of the Canadian Jersey cow through the years to where the herdbook is now. For 75 years the Breeder has been a source of information for farmers across the country. It was and is a place to celebrate achievements in the ring and in the barn. It both documents our past and guides us into the future as Jersey Canada continues “To grow the Jersey breed in Canada by maintaining the integrity of the herdbook and providing tools to increase profitability.” As stated in the February 1946 issue: “We have started a magazine for our breed of a quality that will be appreciated, let us try and maintain that splendid standard.” Looking back in preparing this issue it can be stated Jersey Canada has done so remarkably, and is something all members can be proud of. There is not nearly enough room here to cover everything, but we hope you enjoy these highlights from the past 700+ issues of the Canadian Jersey Breeder.

75 années de l’Éleveur de Jersey canadien L’histoire de l’Éleveur de Jersey canadien est l’histoire des Jerseys au Canada. À partir de décembre 1945, l’Éleveur fut publié à l’origine par A.S. Christie de Montréal QC. Cependant, M. Christie est décédé au printemps 1946 et Jersey Canada, ou le Canadian Jersey Cattle Club comme il était connu à l’époque, a repris la publication de la revue. Ce fut le début d’une entreprise qui a vu jusqu’à douze personnes à la fois travailler chez Jersey Canada et à la revue. L’actuelle salle à manger du bureau de Guelph a vu cette revue être assemblée à la main, les photos et les textes soigneusement découpés et collés sur un carton pour être photographié. La pièce où sont maintenant entreposés les dossiers financiers servait jadis de chambre noire et les employés de Jersey Canada développèrent la revue une page à la fois, pages qui étaient ensuite envoyées à l’imprimeur. Avec la venue de l’ère numérique, le personnel a gagné un endroit pour manger et faire réchauffer leurs repas et la production de la revue s’est déplacée vers un écran. Avant Internet, l’Éleveur était la source principale de publicité pour les éleveurs. Douze éditions par année assurent une distribution périodique de l’information et la couverture des sujets importants pour les membres. Les tumultueuses années 60 ont vu des changements majeurs dans le paysage laitier partout au Canada et l’Éleveur raconte cette histoire à travers la vision des propriétaires de Jerseys, directement ou entre les lignes. Des articles de fond retracent les avancements technologiques en alimentation, confort des vaches et génétique. Un lecteur attentif peut suivre la progression de la vache Jersey canadienne au fil des ans jusqu’au livre généalogique actuel. Pendant 75 ans, l’Éleveur a été une source d’information pour les agriculteurs de partout au pays. Il était et est un véhicule pour célébrer les succès dans l’arène et dans l’étable. Il documente notre passé et nous guide vers l’avenir alors que Jersey Canada continue « à faire grandir la race Jersey au Canada en maintenant l’intégrité du livre généalogique et en fournissant les outils pour augmenter la rentabilité. » Tel que mentionné dans l’édition de février 1946 : « Nous avons mis en place une revue pour notre race d’une qualité qui sera appréciée ; essayons de maintenir ces normes splendides. » En regardant en arrière en préparation cette édition, on peut affirmer que Jersey Canada a bien réussi et tous les membres peuvent en être fiers. Il est loin d’avoir assez de place ici pour tout couvrir, mais nous espérons que vous apprécierez ces faits saillants provenant des 700 + éditions de l’Éleveur de Jersey canadien.

Major changes to the dairy industry in the 1960s affect Jersey breeders The early 1960s saw a sharp decrease in new registrations. A low-fat diet was promoted as correlations were made between a low-fat diet and heart health. Where Jersey farmers were formerly producing high BF products such as cheese, butter and whole milk, consumer demand shifted away from these products and to part skim milk (2%). This freed 17 million lbs. of BF in 1964 alone, resulting in a massive surplus that continued to increase. Consumption of skim milk doubled from 1954 to 1964. Channel Island producers specifically felt the effects. With the Milk Act, passed in Ontario in 1965, they saw a reduction to their price paid in order to equalize payments to the rest of the industry. Throughout the 1960s the Canadian dairy industry underwent major changes and in 1967 the Canadian Dairy Commission was created. The CDC establishes “support prices for butter and skim milk powder (SMP) and operates surplus removals at the support prices, removing butterfat and SMP from the market for export or later sale. It also facilitates the process for the setting of Market Sharing Quota (MSQ) for industrial milk nationally.” Supply management was thus introduced in Canada, facilitating market stabilization as Jersey Canada registrations, memberships and transfers resumed an upward trend.

Des changements majeurs à l’industrie laitière dans les années 60 affectent les éleveurs de Jerseys Le début des années 60 a vu une grande baisse dans les nouveaux enregistrements. Une alimentation faible en gras était suggérée car des corrélations avaient été faites entre une alimentation faible en gras et la santé du cœur. Comme les éleveurs de Jerseys étaient précédemment des producteurs de produits haut en gras comme le fromage, le beurre et le lait entier, la demande des consommateurs s’éloignait de ces produits et vers le lait partiellement écrémé (2 %). Les producteurs de Channel Island en ont spécialement ressenti les effets. Avec le Milk Act (loi sur le lait), adopté en Ontario en 1965, ils ont vu une réduction dans le prix payé pour égaliser les paiements au reste de l’industrie. New milk prices and differentials looked to benefit Jersey producers. The June 1975 Breeder editorial stated: “Ontario now has a differential of 13¢; Quebec has 11¢. This means that 5.2% Jersey milk fetches a premium over 3.5% ”standard” milk amounting to $2.21 in Ontario and $1.87 in Quebec.”

Preaching To the Choir: The benefits & special considerations to breeding Jerseys Many years ago, I asked one of my clients why he chose to milk Jersey cows instead of Holsteins like most of my other clients. His answer has stuck with me. “They are much more efficient”. Since then I read some articles to support the efficiency argument. Although the paper from Journal of Dairy Science was talking about cheese production it stated that compared to Holsteins, Jerseys could produce the same amount of cheese with “74% of the body mass and produce 81% of the milk volume, 80% of the Green House Gases and would only require 68% of the water and 89% of the land requirements.” With feed costs representing a significant proportion of the inputs on a dairy farm it makes sense to use cows that can convert feed most efficiently to milk fat. Upcoming changes in DFO payments for components also seem to favour higher component milk from Jersey cows. We may see an increase in number of farms with Jerseys soon. With these noticeable differences between breeds, there are other considerations to keep in mind when it comes to breeding Jerseys. It was a joke among vets that when someone bought their first Jersey cow, it should come with instructions on how to hit a vein. At calving Jerseys are much more likely to get milk fever than other breeds. One reason for this is that Jersey cattle have fewer vitamin D receptors than Holstein cattle. Vitamin D is necessary for the absorption of calcium into the blood stream. With this predilection for milk fever many owners find it beneficial to be able to give IV calcium to their own cows. This often saves the expense of a vet visit and may save a cow. With the trend of bigger farms farther

apart, it only makes sense that veterinary clinics would follow suit. Because large animal veterinarians are now fewer in number and farther apart, the ability to hit a vein and treat one’s own milk fevers may save a cow in late stages of milk fever. Although these calls have been drastically reduced over the course of my 25 years as a large animal vet, they are still one of the most common reasons my phone rings in the early hours of the morning. Cows with milk fever must be treated ASAP since they can die within hours of onset. Jersey calves too have some special demands. Their smaller size means they have more surface area compared to their weight than their larger Holstein counterparts. This means Jersey calves have more skin in contact with their environment than bigger calves. In the summer this allows them to disperse heat better. But in the winter they also lose heat much more quickly. To make matters even worse they also have higher metabolic demands; meaning they need to take in more calories than the same size Holstein. Winter is hard on Jersey calves and they need extra care to keep them warm, clean and fed. Although it is very generic advice, I would suggest it is even more important to make sure Jersey calves are kept warm. Switching from shavings to straw is a good way to try to retain more heat in a calf pen at this time of the year. Long straw holds much more air between its fibers which acts as insulation. The ability of calves to “nest” into straw and have their feet and legs covered allows them to retain much more of the body heat they produce. Calf coats are a great addition for small Jersey calves starting this time of year as well. They

Allowing a pack of straw to build up under calves will insulate them from the floor surface and may even generate a bit of heat if there is any composting of bedding material taking place in that pack. All of these aid in reducing the amount of energy expended for heat production by the calf which then allows more energy to be directed to the immune system to fight any disease producing bacteria, viruses or parasites they may come in contact with. Although these recommendations are made with the intention of improving calf’s lives there can be problems associated with them too. Long straw can be difficult to clean out. Coats can get dirty or wet thereby increasing susceptibility to disease. Deep bedded packs can allow a buildup of pathogens (especially with multiple calves on the same pack) and increase exposure of young calves to high levels of E. coli, coccidiosis and cryptosporidium. In summary keeping young Jersey calves on a clean dry pack of long straw with clean dry coats on helps reduce the increased energy demands they have compared to larger Holstein calves. And finally, we can’t talk about Jerseys without mentioning their personalities. I have some firsthand experience on the unique personalities of Jersey calves since I have a son that decided to show Jersey calves for 4H. Although this may make me biased, I feel there is also a difference in temperament to Jersey calves. “Naturally curious” seems like an understatement of their instinct to explore, discover, and lick everything in sight. In summary, Jerseys have many features that make them unique and with good management they are very profitable cows.

Les changements prévus aux paiements du DFO sur les composantes semblent aussi favoriser le lait à hautes composantes des vaches Jerseys. Nous pourrions bientôt voir une augmentation du nombre de fermes ayant des vaches Jerseys. Compte tenu de ces différences notables entre les races, il y a d’autres considérations à garder à l’esprit lorsqu’il s’agit d’élever des Jerseys. Quand quelqu’un achetait leur première Jersey, les vétérinaires disaient à la blague qu’elles devraient venir avec des instructions sur la façon de trouver une veine. Au vêlage, les Jerseys sont plus sujettes aux fièvres vitulaires que les autres races. Une des raisons est que les animaux Jerseys ont moins de récepteurs de vitamine D que les Holsteins. Avec la tendance aux plus grandes fermes plus éloignées les unes des autres, il semble évident que c’est la même chose pour les cliniques vétérinaires. Parce que les vétérinaires pour les grands animaux sont maintenant moins

nombreux et plus éloignés, pouvoir trouver une veine et soigner ses propres fièvres vitulaires peut sauver une vache dans un stade avancé de fièvre vitulaire. Même si ce genre d’appel a drastiquement baissé au cours de mes 25 années comme vétérinaire pour grands animaux, c’est encore une des raisons les plus communes qui fait sonner mon téléphone tôt le matin. Les vaches avec une fièvre vitulaire doivent être traitées les plus tôt possible, car elles peuvent mourir quelques heures. Seulement après l’apparition des premiers symptômes. Les veaux Jerseys ont aussi des considérations spéciales. La plus petite taille des veaux Jerseys signifie qu’ils ont une plus grande superficie comparativement à leur poids que leurs congénères Holsteins. Cela signifie que les veaux Jerseys ont plus de peau en contact avec leur environnement que les veaux plus gros. L’été, ceci leur permet de mieux disperser la chaleur. Mais, en hiver, ils perdent de la chaleur beaucoup plus rapidement. En plus, ils ont une plus grande demande métabolique ce qui signifie qu’ils ont besoin de plus de calories qu’une Holstein de la même taille. L’hiver est rude pour les veaux Jerseys et ils ont besoin de soins spéciaux pour les garder au chaud, propres et bien nourris. Même si c’est un Conseil général, je pense qu’il est encore plus important que les veaux Jerseys soient gardés au chaud. Changer les copeaux pour de la paille est une bonne façon de conserver plus de chaleur dans les parcs à ce temps de l’année. La paille longue retient plus d’air entre ses fibres et agit comme isolant. Les veaux peuvent se faire un ‘nid’ dans la paille et couvrir leurs pieds et membres ce qui leur permet de conserver leur chaleur corporelle. Des manteaux pour veaux sont aussi une bonne idée pour les petits veaux Jerseys naissant à cette période de l’année. Ils permettent aux veaux de garder plus de leur chaleur corporelle. Permettre à la paille de s’accumuler en dessous des veaux peut les isoler de la surface de plancher et peut même générer un peu de chaleur lorsque le matériau se composte. Tout ceci aide à réduire l’effort

Il y a plusieurs années, j’ai demandé à un de mes clients pourquoi il avait choisi d’avoir des vaches Jerseys plutôt que des Holsteins comme la plupart de mes autres clients. Je me suis toujours souvenu de sa réponse. « Elles sont beaucoup plus efficaces. » Depuis, j’ai lu beaucoup d’articles qui supportent cet argument. Même si l’article du Journal of Dairy Science parlait de production de fromage, il mentionne que, comparativement aux Holsteins, les Jerseys pouvaient produire le même montant de fromage avec « 74 % de la masse corporelle et produire 81 % du volume de lait, 80 % des gaz à effet de serre et ne demandent que 68 % de l’eau et 89 % du terrain nécessaire.

Les manteaux peuvent se salir ou se mouiller et augmenter la susceptibilité à la maladie. Les litières accumulées peuvent permettre une accumulation de pathogènes (surtout, s’il y a plusieurs veaux sur une même litière) et augmenter l’exposition des jeunes veaux à de hauts taux d’E.coli, de coccidiose et de cryptosporidium. En résumé, garder les jeunes veaux sur une litière de paille longue propre et sèche avec des manteaux secs aide à réduire la demande accrue d’énergie qu’ils ont comparativement aux veaux Holsteins plus gros. Et enfin, on ne peut pas parler de Jerseys sans évoquer leur personnalité. J’ai vu de mes yeux les personnalités uniques des veaux. Jerseys depuis qu’un de mes fils a décidé d’exposer des Jerseys pour le 4-H. Même si ça peut paraître partial, je crois qu’il y a une différence dans le tempérament des veaux Jerseys. « Curieux de nature » ne semble pas être suffisant pour leur instinct d’explorer, de découvrir et de tout lécher. En résumé, les Jersey Possèdent plusieurs qualités qui font qu’elles sont uniques. Avec une bonne gestion, ce sont des vaches très rentables pour toute ferme laitière.

THE DECADES Cell phones and camera shutters are clicking like crazy. Applause and cheers rise and fade.

RAWF Champions have been named since 1922. In this offering we’d like to focus on some of the cows who have worn the Champion’s crown in the latest 30 years. Can the females who reach the pinnacle of the Royal show have a decidedly significant impact on the genetics of future generations? Have you ever heard of a cow named Duncan Belle who won back to back Championships in 1992 and 1993, almost three decades ago? The transmitting ability of champions has been nothing short of astounding, a truth which can only be proven by the passage of time. In the thirty years since 1990 six cows have either completed multiple year championships or scored them in these decades..

Huronia Centurion Veronica, a world renowned brood cow, has worn the ultimate rosettes at other major North American shows. Veronica did make two appearances at the Royal in milking form, as a milking senior yearling and a senior two year old. In that second appearance she won her class, was named Intermediate Champion and stood in the center of the ring as Reserve Grand Champion to JIF Little Minnie in 2002. But then, in May 2003 restrictions due to BSE, halted movement of cattle of her age, across the Canada/ US border. Veronica herself never had the chance to improve upon her Reserve Grand Championship. She did, however; represent a bridge between her three time Champion maternal great grandmother, Rosel and her two daughters the aforementioned Comet and Veronica and their three Championships.

Huronia Centurion Veronica, une vache souche de renommée mondiale, a revêtu la rosette ultime à d’autres expositions majeures en Amérique du nord. Veronica a été présente deux fois à la Royale en lactation, en tant que génisse d’un an sénior en lactation et comme senior de 2 ans. Elle a, par contre, représenté un pont entre son arrière-grand-mère maternelle, Rosel, trois fois Championne et ses deux filles, Comet citée précédemment et Veronica et leur trois Championnats.

A Colourful Collection of the Canadian Kind We would like to acknowledge and congratulate everyone involved past, present and future for such successful Royal shows.

We’ve presented a lot of names and dates related to Royal Champions in the latest three decades in this offering. There was a key point to be made in laying out this information. The cattle named in this article have had an outsized impact on certain breeding programs and segments of the breed. This impact has been felt beyond our national borders. There are other cows who have been in competition at the Royal, without winning the ultimate championship, who have deeply impacted the direction and fortunes of the breed. And, yes, there are many cows who have never entered any show ring who have been mighty influencers. Because the names of these Royal champions are known to many current students and supporters of the breed we’re taking this opportunity to celebrate their current and growing influence.

In a year without naming of national champion Jersey it is perfect timing to reflect on these names and the cows who wore them. They basked in glory and acclaim on mid-November days in the city of Toronto.

Once we’ve thought about the champions of years past let’s wonder and imagine which of them will appear in the pedigrees of future national champions. And for the real keeners, how and where they will appear in those pedigrees.

There are many routes to excitement in working with Jerseys! One of them is national show level competition. All these champions came from effort and planning and work that extended over generations of cows and humans. And that is why we still remember them today and can discuss their merits and impact.

Nous avons présenté beaucoup de noms et de dates relatives aux Championnes Royales dans les trois dernières décennies dans cet article. Il y avait une raison à toute cette information. Les animaux nommés dans cet article ont eu une influence importante sur certains programmes d’élevage et de segments de la race. Cet impact a été ressenti au delà des frontières du pays. Il y a d’autres vaches qui ont participé à la Royale, sans gagner le championnat ultime et qui ont grandement influencé la direction et les succès de la race. Et, oui, il y a plusieurs vaches qui n’ont jamais fait d’exposition et qui ont été de grands influenceurs. Élever du bétail demande que l’éleveur fasse une recherche des traits et des gènes qui ont une place dans l’avenir de chacune des fermes.

En cette année où nous n’avons élu aucune championne nationale Jersey, c’est le temps idéal pour se remémorer ces noms et les vaches qui les ont porté. Elles brillent dans la gloire et l’acclamation de ces jours de la mi-novembre dans la ville de Toronto. En pensant aux championnes des années passées, imaginons lesquelles apparaîtront dans les généalogies des futures championnes nationales. Et pour les vrais passionnés, comment et où apparaîtront-elles dans ces généalogies.

Russell Gammon was born and raised in Pictou County Nova Scotia. He worked on the Jersey Canada staff team from the early 1980s until mid-2011. After that he served as Manager of Semex’s Global Jersey program for almost six years. Gammon has been heavily involved with work of the World Jersey Cattle Bureau and various dairy industry organizations in Canada.

Russell Gammon est né et a grandi à Pictou, en Nouvelle-Écosse. Il a travaillé au sein de l’équipe du personnel de Jersey Canada à partir du début des années 1980 à la mi-2011. Après cela, il a occupé le poste de directeur du programme Global Jersey de Semex pendant près de six ans. Water Quality: A Historical Concern that is More Important than Ever Written by Bill Ireland In the Ontario Agricultural Commission 1881 report, in regards to the milking and handling of dairy cattle, it is noted that “an abundance of good, clean water should be the rule to producing a generous quantity of quality milk, and good animal health.” Two years ago, I attended a nutrition meeting in Eastern Ontario where Professor James Drakely spoke. In his opening comments, Drakely told dairy professionals that when working on a ration always look at the water first. Water is 80% of a dairy cow’s ration and it is vitally important to get it right in quality and quantity. Water quality has, and always will be, a major concern for milk producers. Over the last number of years, I have worked in the livestock industry going from farm to farm looking at water quality, and the problems that occur within the water systems on farms. What I hear when I arrive at most dairy farms, is that farmers don’t know why they are having difficulties, as the well and the milk room water test results show zero E. coli and Coliform. Most producers, however, do not test the water coming out of the float at the tip trough, or at the end of the line in a tie stall barn. This test shows the level of bacterial build up in the water line, and is an indicator of the presence of bio-film. In my experience, many farmers have had to fix a line, and when it was taken apart there was a milky slime or rust color slime. That’s biofilm, a bacterial build up that affects the quality, taste and odors in the water, and it can affect the quantity of water a cow will drink. There are a num-

ber of methods that can be used to get rid of bio-film, rust bacteria, and Sulphur odors; however, some of these methods are very costly and only have a partial effect on cleaning up the water quality. In Ontario many dairy farmers have tried regular peroxide with limited results. A common assertion is that unless they have 100 ppm it will not reach the end of the barn, and this is true since peroxide is designed as a quick, one-time contact kill. As it travels down the water line it kills bacteria, but the active concentration is used up very quickly before the water reaches the length of the barn. A few years ago, I stopped at a dairy farm near Mildmay. The farm manager disclosed to me that he had just started using regular peroxide through his dairy supply company, and that his cows would only drink from the last 2 trip troughs in the barn. We started doing peroxide testing throughout the barn. The front trough where the cows came out of the milking parlor was at 130 ppm, the second trough was at 80 ppm, the third trough was at 30 ppm, and the remaining troughs were at 0 ppm. When I asked how they set up their system, the farm manager advised that the delivery driver said they should set the system up with 30 ppm near the end of the barn. Although the driver was correct, when a peroxide level is over 70 ppm cows will feel a tingle in their mouths and refuse to drink.

Stabilized peroxide, such as Huwa-San (HSP), has changed the game for peroxides with its ability to keep the concentration level consistent throughout the water line at a low inclusion rate. The HSP is stabilized with silver at an extremely low rate, and a charge is added to make it compatible with good gut bacteria while cleaning up E. coli, Coliform, and other harmful bacteria, fungi, molds and viruses. HSP is applied with an injection pump and water meter typically at 30-35 ppm and maintains 15 to 20 ppm all the way to end of the barn. Rates can vary depending on the amount of bio-film, iron bacteria and other elements such as sulfur, nitrates and manganese.

Qualité de l’eau: un enjeu historique qui est plus important que jamais Écrit par Bill Ireland Dans le rapport de 1881 de l’Ontario Agricultural Commission, au sujet de la traite et de la gestion des animaux laitiers il est indiqué qu’une « abondance de bonne eau propre devrait être de rigueur pour produire une généreuse quantité de lait de qualité et pour la bonne santé des animaux. » Il y a deux ans, j’ai assisté à une réunion d’alimentation dans l’est de l’Ontario où parlait le Professeur James Drakely. Dans ses commentaires d’ouverture, M. Drakely a dit aux professionnels laitiers que lorsqu’on travaille sur une ration, il faut toujours regarder l’eau en premier. L’eau constitue 80 % de la ration d’une vache laitière et il est d’importance vitale qu’elle soit de bonne qualité et en quantité suffisante. La qualité de l’eau est, et sera toujours, un enjeu important pour les producteurs laitiers. Au cours des dernières années, j’ai travaillé dans l’industrie du bétail, allant de ferme en ferme pour vérifier la qualité de l’eau et les problèmes qui surviennent au sein des réseaux d’alimentation en eau sur les fermes. Ce que j’entends lorsque j’arrive sur la plupart des fermes laitières est que le producteur ne sait pas pourquoi il a des problèmes, car le puits et le test d’eau de la laiterie ne démontrent aucun E. coli ni coliforme. La plupart des pro-

ducteurs, par contre, ne testent pas l’eau qui sort de la flotte dans l’abreuvoir ou à la fin de la ligne d’eau dans une étable attachée. Ce test démontre le niveau d’accumulation de bactéries dans le réseau d’alimentation en eau et est un indicateur de la présence de biofilm. Selon mon expérience, plusieurs producteurs ont eu à réparer une conduite et, lorsqu’ils l’ont défait, il y avait un film gluant laiteux ou de couleur rouille. C’est du biofilm. Une accumulation de bactéries qui affecte la qualité, le goût et l’odeur de l’eau et peut affecter la quantité d’eau qu’une vache boira. Plusieurs méthodes peuvent être utilisées pour se débarrasser du biofilm, de la couche de rouille ou de l’odeur de soufre; par contre, certaines de ces méthodes sont très dispendieuses et n’ont qu’un effet partiel pour améliorer la qualité de l’eau. En Ontario, plusieurs producteurs laitiers ont essayé le peroxyde régulier avec des résultats limités. Une affirmation commune est que, sauf si on utilise du 100 ppm, ça ne se rendra pas au bout de l’étable et ceci est vrai car le peroxyde est conçu pour un nettoyage rapide de contact. Comme il voyage dans le réseau d’alimentation en eau il tue les bactéries, mais la concentration active est vite utilisée, bien avant que l’eau n’atteigne le bout de l’étable. Il y a quelques années, je me suis arrêté sur une ferme laitière près de Mildmay. Le gérant de ferme me dit qu’il ne faisait que de commencer à utiliser régulièrement le peroxyde à travers sa compagnie de four-

nitures de laiterie et que ses vaches ne buvaient que dans les 2 derniers abreuvoirs dans l’étable. Nous avons donc testé le peroxyde partout dans l’étable. L’abreuvoir situé là où les vaches sortaient du salon de traite était à 130 ppm, le second à 80 ppm, le troisième à 30 ppm et les autres à 0 ppm. Lorsque j’ai demandé comment était configuré leur système, le gérant de ferme m’a indiqué que leur livreur leur avait suggéré de calibrer leur système pour qu’il soit à 30 ppm vers le bout de l’étable. Même si le livreur avait raison, lorsque le niveau de peroxyde est à plus de 70 ppm, les vaches ressentent un picotement dans leur gueule et refusent de boire. Le peroxyde stabilisé, comme le Huwa-San (HSP) a changé la donne pour les peroxydes, avec sa capacité de garder constants ses niveaux de concentration jusqu’au bout du réseau d’alimentation en eau lorsqu’inclus à un faible taux. Le HSP est stabilisé avec de l’argent à un taux extrêmement bas et une charge est ajoutée pour qu’il soit compatible avec les bonnes bactéries du rumen tout en nettoyant les E.coli, les coliformes et les autres bactéries nuisibles, les champignons, les moisissures et les virus. Le HSP est appliqué avec une pompe à injection et un compteur d’eau à généralement 30-35 ppm et se maintient de 15 à 20 ppm jusqu’au bout du réseau. Les taux peuvent varier selon le montant de biofilm, de bactérie ferreuse et des autres éléments comme le soufre, les nitrates et le manganèse.

• In the elimination of bio-film, rust bacteria, sulfur odors and the musty smell from bacteria in water. • In controlling the slimy film in water troughs and bowls, saving the labor of cleaning troughs and bowls weekly. • In increasing livestock water consumption due to better water taste and smell. • As a surface disinfectant for calf hutches and pens in the control of cryptosporidium, and • As a surface disinfectant effective in lowering somatic cell counts when sprayed in stalls. • Stabilized hydrogen peroxide like HSP should be considered an essential tool in a good management strategy that will help achieve better animal health, and increase milk production, resulting in greater profits in dairy operations.

3) What type of barn/milking system do you use? Delichte Farm’s operates out of a 64 stall free-stall barn, with the cows having access to 2 A4 (Astronaut) Lely robots. During the summer months, the animals have 24 hr uncontrolled access to outdoor paddocks. We do not utilize graze way gates.

The biggest challenge in that experiment was late lactation animals, whose visits per robot dropped off because their energy requirements were being satisfied by the grain in the cobs. Strict portion control can manage this challenge. We find the use of grazing also aids in issues surrounding the costs associated with manure storage and removal costs.

1) How many cows do you milk and what percentage is Jersey? 68 Milking and 20 Dry cows. 50% Jersey and 50% Holstein (5 are Holstein X Jersey). Classification: EX-3, VG-2yr -2, VG 16, GP-35, G-5.

4) What is your current herd production numbers? The blend herd averages 32.8 L/cow/day @ 4.6% BF and 3.6% P (Robot Data), with a Current Herd BCA of 246-240-260. We average 3.4 visits per day to the robots in Winter, and 3.1 visits during the summer months. (When herd has 24 hr outdoor access)

7) What do you think is going to be the biggest challenge for the dairy industry moving forward? The increased access to the Canadian market place, given by our government in recent trade deals, will result in increased competition and lower milk prices going forward. Also, increased competition from the alternative “milk/dairy” products, will put pressure on our market share. This coupled with steadily escalating production costs, and stricter environmental regulations will reduce farm profitability. While it is hard to argue with the lofty goals of animal welfare, environmental sustainability and stewardship, and affordable food for the country’s population, the hard reality is the technology and regulatory framework to attain these ideals come with a cost. Farms are businesses and must be decently profitable not only to survive but have the resources to re-invest and thrive. In other countries, farms have tried to increase production to offset tightening margins, only to find overproduction makes the situation worse and drives milk prices lower. As that overproduction now begins to find a home here, we may be headed down a much more challenging road as an industry.

2) How long have you been breeding Jerseys and what do you find the most valuable about the Jersey Breed? Delichte Farms Ltd.’s first major purchase of Jersey animals was in 2003. That year, we purchased 9 breeding age Jersey heifers from Wayne and Ann Arthur (GENTRICE), who were located at Brandon, Manitoba. Clanman Bellevue Vaughnie purchased from Clanman Jerseys at Minnedosa, Manitoba, around the same time frame, are the two maternal foundation lines for today’s herd. As a robotic herd, the Jersey udder’s well-defined teat placement (especially rear teats) is a definite bonus, as it aids in quick, accurate attachment by the milking units. The breed’s excellent reproductive attributes, such as ease of calving, and high fertility are also very desirable features. The high milk components definitely enhance the herd’s blend price for milk, above the provincial average here in Manitoba of $84/hl.

5) What are one or two goals your farm hopes to achieve in the future? One of the goals the farm has been continuously striving for is to have a completely polled herd of dairy cattle. Today 36 of the 68 milking cows are either heterozygous or homozygous for the polled gene. Production-wise our goal is to reclaim a herd average of 10,000 kg of milk per lactation, and 400 kgs of butterfat per lactation, where we had been before our expansion 3 yrs ago. 6) What is something unique that you think your farm is doing that sets you apart from other farms? Our use of unrestricted paddock grazing, coupled with robotic milking, may be one unique feature of our operation. Last year, we even experimented with grazing standing corn in late August, early September, as a way to prolong the grazing season in Manitoba.
