Instructions:

Step 1: In a large skillet, cook the bacon over medium heat until crispy (about 8 minutes). Drain on paper towels. Pour off half the fat.

Ingredients:

8 slices of bacon (turkey bacon or tofu)

1 (16-oz.) pkg. frozen hash browns

2 large eggs

1/3 cup milk

4 Tbsp. unsalted butter

Kosher salt

Freshly ground black pepper

4 large flour tortillas

1/2 cup shredded cheddar

1 ripe avocado

Step 2: Cook the hash browns in the bacon fat as the package directs, then transfer to a plate.

Step 3: In a bowl, whisk eggs with milk. Wipe out the skillet, melt butter over medium heat, then reduce to medium-low. Add eggs and cook, stirring, until soft curds form. Season with salt and pepper.

Step 4: On each tortilla, layer hash browns, eggs, cheese, 2 slices of bacon, and avocado. Fold in the sides and roll up tightly. Serve with hot sauce. delish.com
