meet We moved from Melbourne to Cairns in 2007. I have always worked in fashion/retail and managed for many years. Becoming visual merchandiser and Manager of the year for a well known, highly regarded fashion chain. I went on to learn all facets of the business, deciding that figures and buying was not what I enjoyed. I missed the one on one with the client and helping them with how to dress, what suited there shape, how to look good on a budget and feeling confident. Modernstyle was born and 7 years later still loving it. It is a very rewarding job and I’m so lucky to do something I love. My husband of 12 years and 3 children, 11, 8 and 2 are my priority and my job is icing on the cake.

What do you love most about being a mum? I love being the most important person in there life (besides my husband.) They keep you grounded and give you so much joy. To watch them grow into independent individuals is very special. Tell us a little about what it’s like being a working mum? I enjoy being “me” and feeling like I have achieved something other then just being a Mum. Even though I find it the toughest and most rewarding job I have ever done being a Mother, I missed my love and passion of what I do in my working life. As much as it is a joy it also can be a juggle. How do you juggle work life and home life? As any working Mum would know you have to be organised, prepare for the unexpected, and let things go when

they don’t go to plan (something I’m still working on) . Oh and have wine in the fridge! What do you love most about your job? I love how every person I meet as much as they want the same outcome they are individual. They are entrusting you to help make them look and feel their best. It is such a personal experience for someone to share a lot of personal information with you and I really love the outcome in how they feel about themselves afterwards. I also love the editorial side of my job where I get to be apart of fashion shoots, coordinating everything from picking stock, dressing models, and choosing locations and themes. If you could give our readers one piece of fashion advice, what would it be? One? Be well groomed. Clean hair, filed and painted nails and toes (for women) and no holes or stains on

clothing. You do not need money for this. Look for classic pieces that you can change into different looks and don’t worry if you feel overdressed it’s better to feel that then under! Oh and 1 more...make sure you have a full length mirror in your room...you need to see yourself before leaving the house! Who inspires you? I love Olivia Palermo’s fashion style, she has an amazing wardrobe!!! Kate Middleton for her classic femininity, Pink for her confidence and women power and of course my Mum who inspires me to be the best Mum I can be. Whats the most challenging thing about being a mum? Keeping calm when you are tired or feeling impatient... discipline is always a tricky one too, you want your children to be the best they can be and sometimes you are the bad cop.

Running an indigenous law firm isn’t your typical desk job.

O

n any given day Leah Cameron can be found working in remote Aboriginal communities, mining sites or even out at sea. As the principal solicitor and co-owner of Marrawah Law, Leah practices in the fields of native title, cultural heritage, mining, property and corporations law. She also assists indigenous organisations with funding applications and project implementation. Leah is a Palawa (Tasmanian Aboriginal) woman, and employs all indigenous staff, making Marrawah Law the only Supply Nationcertified indigenous law firm in Queensland, and the third in Australia. “We are quite unique in that regard. It places us well in our field of expertise and differentiates us from other law firms, which gives us an edge,” she said. “That means we are usually leading the way rather than following it. It’s exciting to be forging new ground and finding new ways of doing things.” This month Marrawah Law celebrates its first year of business in Cairns, and has already been nominated for the 2014 Telstra Australian Business Awards. It follows a long list of achievements in Leah’s law career to date, including six native title consent determinations, being awarded Tasmanian Young Achiever of the Year for Trade and Career Achievement, the Centenary Medal of Australia and Robert Riley Law Scholarship. But Leah says the highest honour of all was repatriating her ancestors’ remains from the British Museum in London. She is continuing to work to retrieve remains which were unceremoniously exhumed and inappropriately handled and stored at various institutions in the United Kingdom. “Tasmanian Aboriginal people were considered the missing link between man and ape and these institutions took their remains for study,” she said. “Returning these remains to their rightful resting place is a passion of mine.” Leah credits her family and close family friends for the inspiration and motivation behind her career and earlier educational success. Among them was her grandfather, who was born at the Aboriginal mission on Cape Barren Island and moved to Hobart with his extended family in 1924. Leah’s Grandfather left school after year three and received no further education. “Growing up my grandfather told me stories of the racism he and his brothers faced as young Aboriginal men coming back to the mainland, and that continued until his last breath,” she said. “The key difference for me was that from primary school on I had wonderful people in my life who became mentors. It was a tremendous help and showed me I could do the things I’m doing today. “Even now I actively seek out others in a position to mentor me. Education is the key. Cosmech Ink

C

osmech Ink is the creation of husband and wife duo Jason and Jodine Majewski – and their shared passion for art and people. Both are artists, musicians and tattooists – Jason performing custom body art and Jodine specialising in cosmetic tattoo. Jason’s style is eclectic, exploring black and grey, and colour realism, portraits and biomechanical genres. He has been honing his craft for the past seven years, completing his apprenticeship at the same location that Cosmech Ink trades from today. The Oceana Walk studio will soon double as a gallery displaying the couples’ art. Jason, also an accomplished drummer, produces pencil portraits of people and pets and enjoys painting and airbrushing, with commissions available on request. Jodine also does pencil portraits, has been a lead vocalist in many bands, writes poetry and prose and paints with acrylics. Her services at Cosmech Ink include semi-permanent eyebrows, eye liner, eye shadow, blush, lip liner, full lip colour, beauty spots, correction and areolas.

It might be Cairns’ newest tattoo studio, but it’s been a lifetime in the making.

Jodine has worked in the beauty industry for 13 years, training in semi-permanent cosmetic makeup in Sydney under an internationally renowned cosmetic tattoo artist. “I love seeing people transformed by tasteful semi-permanent cosmetic makeup, especially creating new areolas for breast cancer survivors who have had a mastectomy,” she said. “I began drawing, painting and sculpting with the help of my grandfather when I was young. I went on to study art at high school and Creative Writing at Auckland University.” For Jason, it began when he was just seven years old, sketching portraits of athletes he found in a book about the Commonwealth Games. A year later he discovered body art – thanks to Angry Anderson of Rose Tattoo – and began designing tattoos and aspiring to get his first. “I tried from the age of 12 to get someone to tattoo me but was constantly told to get lost by the only tattoo artist we had in Cairns at the time,” he said. “I got lucky at 15 and got my first tattoo.” Cosmech Ink has been operating for six months now, and the couple enjoy

working together. They say it has also provided security for their family - with six children and one grandchild between them. “We were inspired to open our own shop because we enjoy each other’s company and it makes sense to build off our passion for art by blending our skills to offer customers a wide range of services,” Jodine said. “Working together works for us,” Jason added. “What makes it work, is a deep love and respect for each other, our individual talents and our willingness to learn from each other.” The couple’s vision for Cosmech Ink is to be known as the best tattoo studio in Cairns, producing world-class designs, developing their art and passing on their knowledge to their children. “We are family orientated and although we might be covered in tattoos, we are friendly, approachable, non-judgmental and our business is open to all walks of life.” You can visit Jason and Jodine at the studio and view their gallery at Shop 27, Oceana Walk, Cairns.

rom the cool, comfy and versatile Cotton article (Material Girl, Cairns Life April 2014,) I bring you the ‘Queen of Fabric’ – Silk! This luxurious, golden thread is created by a little caterpillar that lives only on mulberry leaves and the fabric was worn by the wealthy as far back as 5000 years ago. When I was 8, my Dad came home with a container that had 3 tiny grubs inside. I remember being fascinated by these funny little creatures as they chewed away at the fresh leaves I fed them from our mulberry tree. They grew quickly, became chubby and wrinkled and then unexpectedly, created golden cocoons in which they hid. They later hatched as moths and I was grateful for my own personal viewing of silk production.

A highly versatile fabric, silk has many uses including Ladies wear, parachutes, rugs, medical sutures and prosthetic arteries. The shimmering appearance is due to the prism-like structure of the silk fibres as they allow the cloth to refract incoming light at various angles, thus producing different colours when looked at from different perspectives. Singapore has experimented with feeding fluorescent dyed mulberry


leaves to silkworms, which makes them spin their silk cocoon in colour. This remarkable find could mean dyeing could be eliminated from the production process. Despite the development of synthetic fibres to replace silk, it is increasing in demand around the world as its natural lustre and drape makes it the most attractive and highest priced natural fibre. China currently produces almost 80% of the world’s raw silk followed by India and Korea. In 2001 Australia imported $40 million of silkbased production and over the last 10 years, over $500 million worth of silk products have been imported by us. A study in 2005 by the University of Qld (Gatton) on ‘Silk Production in Australia’ supported the development of an Australian silk industry but alas, I don’t believe these studies were taken much further. I was speaking to the passionate Sarita Kulkarni, who completed her masters in Sericulture (silk farming) and she believes Australia can lead the world in silk production but it seems she may be fighting an uphill battle. Sarita wears silk all year round and runs ‘Soil to Silk,’ – a program that works with schools, so if you are interested she is happy for you to contact her. One word of advice – “Be aware of silk imposters!” These fabrics imitate silk and are either not pure silk or simply not silk at all. Real silk is natural, breathes, keeps you cool in summer, warm in winter and just like cotton, is ideal for sensitive skin. It was with much excitement that we boarded Rovos Rail. Described as the most luxurious train in the world, the journey would take 48 hours travelling from Cape Town to Pretoria.

After the introduction to our elegant, spacious cabin by the friendly steward we set out to explore the rest of the carriages. The train, maximum capacity 72 passengers, is authentically refurbished and captures the romance and atmosphere of a bygone era. Oak, mahogany, leather chairs, antique fixtures along with elegantly dressed staff all add to the buzz of this adventure back in time. Mr Rohan Vos (creator of this magical venture) has done an amazing job sourcing carriages dating as far back as the 1920’s. The 3 sleeper cabins range from the Pullman Suite to the Royal Suite – with your own bath, I may add). Sitting in our carriage with a glass of bubbles watching beautiful Table Mountain fade in the distance, I was overcome with a sense of truly relaxed euphoria. Tearing ourselves away from our luxurious cabin we headed for lunch in the strikingly beautiful Victorian style dining car. The presentation and quality of the food we were served on our journey was amazing and begged the question “how on earth did they prepare this in such a small kitchen?” Accompanied by some of the nicest wines I have ever had, South African, of course, meal times were lengthy and, oh, so enjoyable. After lunch we moved to the observation car for postprandial relaxation on the supremely comfortable chesterfield lounges. Passengers contently nodding was a common site. Just when I thought I would join them, out came afternoon tea...I do recall thinking I was going to roll off the train! The scenery was mesmerising. From lush mountains to the desolate Great Karoo. We

stopped twice on the journey. Matjiesfontein, a historical village set in what seems to be the middle of nowhere and Kimberley. Home to one of De Beers largest diamond mines and the “Big Hole”, the largest hand dug hole by in the world, it was an interesting tour and one where my hubby was delighted that I had left my credit card safely stored onboard in my inroom safe. Kamfers Dam is another spectacular sight. Hosting one of only six breeding sites in the world for flamingo, the thousands of birds only metres from the train were a vision. Dinner was my favourite time of the day. Casually dressed passengers during the day arrived transformed and looking fabulous wearing evening gowns and tuxedos (jacket and tie, is the bare minimum requested by Mr Vos). The sommelier was never far away with his recommendations of wine to accompany our four course meal and the whole affair was just exquisite. So many things about this journey impressed me. The mini bar in my room (filled with whatever you like 24 hours a day - Rovos is all inclusive), the little tags you hang outside your cabin door when laundry is needed (or anything else for that matter), the banning of all things technological in public areas (no radio or tv on board), friendliness of the staff, impressive dining, and a very comfortable bed. Being more of an adventure traveller I was surprised at how much I didn’t want the journey to end. So...another trip has been added to my bucket list, Pretoria to Victoria Falls onboard the Pride of Africa.

Australia’s Skill Select program is for people who are not sponsored by an employer but have skills in particular occupations required in Australia. Under this program applicants can migrate individually on their own merits or through sponsorship by a state or territory government or eligible relative sponsor.

U

nder the SkillSelect program visa applicants interested in the independent skilled, family sponsored skilled, state or territory sponsored skilled or the business skills program are required to submit an Expression of Interest (EOI) first. They will then need to receive an invitation in order to lodge a visa application. An EOI contains an applicant’s personal details, their nominated occupation, work experience, study and education, level of English skills and details of a skills assessment. Applicants must submit their EOI online and once submitted the applicant will receive a points score and results based on their imputed information. The result and points score along with the time of

submission becomes the applicant’s ranking. For independent and family sponsored visa invitations are issued automatically to the highest ranking EOI’s subject to occupation ceilings. For state and territory sponsored visas the state or territory governments will locate and select skilled workers from the EOI pool that they want to nominate. If an applicant is selected then they will receive an invitation from SkillSelect. Applicants then have 60 days in which to make a valid visa application. For applicants who are not selected their EOI’s will remain in the system for two years before being removed. After each invitation round for the independent and family sponsored visas, the Department of Immigration and Border Protection publish on their website the lowest scoring points test mark that allowed an EOI to be invited for each occupation group. This gives applicants an indication of their potential for receiving an invitation in future rounds. For applicants who do not meet the requirements of an EOI or applicants who are unsuccessful in obtaining an invitation from SkillSelect, the Employer Sponsored visa programs are available and eligible applicants could look at finding an employer to sponsor them to migrate to Australia. Radiology plays an important role in being breast aware. When you need a mammogram, breast ultrasound and or breast biopsy, a radiology practice is where these procedures are generally done. Be aware, not all radiology practices are the same. Some specialise in women’s health including breast work. When choosing where to go for your mammogram, breast ultrasound and or breast biopsy consider the following ‘seven significants’: 1. Experience of the Doctor – does the radiologist have a dedicated proven track record of specialising in breast work? The question you need to ask is: do I see the doctor who reports 500010,000 mammograms a year or 200 a year?

Fees – are the fees reasonable and if necessary, is bulk billing available?

The important thing is that you can work with the person for an extended period if necessary, you feel heard, and comfortable enough to disclose your personal information, however sensitive, without fear of judgment. You must feel empowered to question and raise concerns. Liking your lawyer is a bonus, but not as essential as having confidence in their advice. There’s no aphrodisiac like …objectivity. Okay so objectivity may not actually be an aphrodisiac, but what absolutely kills the love i.e. the potential success of your case - is a lawyer that gets emotionally entangled with you or your case. This undermines the value of their advice, may delay resolution, and probably costs you more. You may feel morally supported by a lawyer who launches a vendetta for you, but the family law system delivers only legal outcomes –

not moral retribution. Your lawyer should not be your relative, partner, or close friend - making objectivity almost impossible. Be cool. Objectivity doesn’t rule out empathy, emotional intelligence, and some fire in the belly. But these important qualities need also a cool, composed head to steer safely and strategically through the legal minefield of relationship breakdown. By analogy, a surgeon’s role is to clinically and calmly cut out the cancer, and not be emotionally distracted by patient’s personal tragedy. Hired guns? Beware the lawyer who shoots early from the hip with over-confident advice, or says exactly what you want to hear. Working out your entitlements is a process, heavily dependent on gathering facts over time, then applying the law to those facts. A lawyer’s preliminary advice may change during the case as more information surfaces. This is not incompetence, but good, objecting lawyering. Lawyers have primary obligations to the Court and the administration of justice, and should not run futile cases. A good family lawyer will challenge your assumptions, say when you’re wrong, where your case is weak, and when your behaviour negatively impacts your case – things you never want to hear for the

first time from a judge! They may recommend you do a parenting course or see a counsellor. They should end the retainer if you ask them to be dishonest or you refuse advice. Many firms offer an initial, no-obligation appointment at a reduced fee, so consider meeting with more than one lawyer before you decide which to invest in. In family law a good reputation is very valuable, so seek recommendations from other professionals, colleagues and family members whose opinions you trust.

WHAT TO DO & HOW TO AVOID IT Let’s start with the bad news....

Let’s take a quick look a few simple avoidance techniques:

Can there be a more demoralising or frustrating experience on arrival at your final destination than to find that all you suddenly own are the clothes you’ve been wearing for the last 24 hours or so, a small bag of well read magazines from your flight and, if you are lucky, some duty free alcohol?

BEFORE DEPARTURE 1. Remove any old baggage labels to avoid any possible confusion. 2. Try and ensure your luggage ‘stands out’ and is easy to identify, with stickers, tape or ribbons. 3. Write the forwarding address on your labels rather than your home address. 4. Take out adequate travel insurance.

You’ve been sitting patiently waiting for your luggage to appear and now you’re starting to worry; everyone else on your flight has found their bags already, and now they’re off scoring all the best rental cars and hotel rooms. Even if you’re returning home from a trip, it’s still a major frustration when your luggage appears to be “missing in action”.

AFTER ARRIVAL 1. Make sure that the luggage you are removing is yours and that you are actually at the right luggage carousel

2. If there’s still no sign of your bag, report it first to the baggage services office. A tracking file can then be immediately raised. If this is not possible, go straight to the airline’s ticket counter & fill out the form(s). 3. Make sure to tell the airline where you’ll be staying and for how long. If you move on before your luggage is found, contact the baggage centre or airline again to advise them of this. If your bags appear to be gone for good, airlines will compensate you for your loss, up to a point. For most international services, compensation for lost baggage is based on a legal liability of US$20 per kg. Another reason to take out travel insurance! Make sure to read the airlines’ baggage policy fine print on liability and compensation for lost items before making a claim.

Now for the good news! Most delayed luggage is identified within 24 hours and returned to you by the airline, via a courier service with the minimum of fuss. These days very few bags remain unaccounted for due to an extensive worldwide electronic tracking system, except of course if they’ve actually been stolen directly from the carousel! Happy Travels

for Prostate Localised prostate cancer management presents a challenge to the patient and Urologist with radical prostatectomy and radiation therapy being the most common form of management. However, the desire for minimally invasive treatment with a low risk of side effects with disease control remains. Focal Cryotherapy may be able to fulfil these criteria. Focal Cryotherapy uses advanced techniques to destroy only the portion of the prostate affected by cancer. This is done by passing fine needles into the prostate with the patient under a general anaesthetic to the area of cancer and freezing only that area to kill the cancer cells. With increased use of prostate specific antigen (PSA) testing, many younger men diagnosed with early-stage prostate cancer feel they are not ready for aggressive treatment options. However, they also find “watchful waiting” (monitoring of the disease with no immediate treatment) unacceptable. Focal Cryotherapy for prostate cancer is a compromise chosen by an increasing number of men. Many older men in whom there are increased risks of side-effects may also prefer this treatment to the more aggressive forms of treatment to obtain control of the disease. Focusing on the affected area allows doctors to preserve other regions of the prostate – in particular the nerves associated with potency which allows the man to obtain and maintain an erection suitable for sexual intercourse. Also, control of urine is maintained because that area is outside the area of treatment.

Cancer

Focal Cryotherapy is carried out in day surgery so that the patient goes home at the end of the day with a catheter in place for a few days. The patient will likely enjoy an uninterrupted quality of life from when he is first treated. Because Focal Cryotherapy only freezes a portion of the prostate as opposed to the entire gland the patient will require follow up monitoring in case there is any development of prostate cancer in the untreated part of the gland. If that occurs then the patient may require additional treatment.

Focal cryotherapy does not exclude any treatment options for the future – including a repeat focal cryotherapy or whole-gland prostate cryotherapy.

H OME So you’ve made the decision that you need to upgrade your home for a home that suits your family and lifestyle now, in 2014.

We do it with cars and technology, and so we should do it with our homes. Our circumstances change over the years and new homes are better suited to today’s modern living. The most important deciding factor will be your overall budget. Sometimes there may be a bargain on land but the cost to build on it will then put you over budget. Do a little homework initially and look at the total $ budget available for your completed home project. Discuss it with your financier and try not to over extend your household finances. Many banks are loosening up their lending criteria so you may end up with a beautiful new home but not be able to afford the repayments. If you decide to build a new home you will need to allow an amount for land; a reasonable amount to build the home you want with the inclusions of your choice and then allow for those additional features like curtains, swimming pool, fencing or landscaping. Too often I see clients come to see me after they have purchased the most amazing block of land and then not have enough left in the budget to build their dream home.

When talking to builders make sure your quotes are for completed items. Some builders do not include things like site works, water meters, termite treatment, driveways, necessary retaining walls and many other requirements that are essential to your new home build. You may find that the initial quote is then increased to include some of these things, whereas other builders will include them. Check with the builder and their specification and make sure all the inclusions are in writing, not just agreed to verbally. It’s up to you to make sure you know what is included and this may be an area for you to make some small compromises. Most builders can allow for you to perform some of the works yourself to help save some dollars but there are some works that are best kept with your builder as they may affect the structural integrity of your home or your overall home construction warranty . Examples of some of these are tiling to wet areas, external wall painting and sealing, structural retaining walls and site works. I’d suggest talking to a few good builders before you commit to buying that fantastic block of

Queensland Country Credit Union The Cairns property market has experienced steady recovery over the past 12 months, with building approvals increasing and a steady growth in lending issues. The market has experienced a growth of 2 percent in building approvals in 2013/2014, with median house prices dropping slightly. The latest CSIRO research reports that green housing is cheaper to build and run.

T

he Australian Institute of Architects has released research that reveals that ‘green’ design has turned into a substantial money-making investment for renovators as Australian home owners face rapidly rising energy and water prices. We are using smart sustainable housing design to cut costs and add capital value to our houses. Recently one of Australia’s largest real estate agents (LJ Hooker) has set about to break the paradox of ‘sustainabilityaware real estate agents’. With research underpinned by Bond Universities Institute of Sustainable Development and Architecture, they have launched a new initiative called ‘Liveability: Live the life you want sustainably’ that offers many resources. They promote sustainability changes that represent an opportunity to future-proof your property investment, increase your property’s value and enhance liveability. The Australian Bureau of Statistics research in 2007 also claims that the real estate investment mantra is changing to ‘location, location, EE (energy efficiency)’ with a correlation of about a 10 per cent increase in value over normal housing stock. One of the US’s largest mortgage brokers, Genworth Mortgage Insurance (GMI), claims the green housing market is set to increase five-fold by 2016, a statement underpinned by research from the National Association of Home Builders.

GMI is gearing up the property valuation profession (appraisers) as the US introduces education, standardisation, measurement and verification guidelines. Cairns is on the brink of an exciting era in property development and economic growth. That is the prediction of licensed builder Mark Vukobratich, who will be at the helm of the change with his business MV Designer Homes.

M

ark anticipates major investment in landmark buildings and a shift in trend toward more unique and inspiring designs. “We are about to get some really nice builds, designs that will put Cairns on the map,” he said. “It’s been a long time coming and Cairns really needs it. Economically, things are about to go up and onward.” MV Designer Homes will respond to the change with further diversification and a greater focus on property development. It is change and growth such as this that has inspired Mark’s work in the industry for almost 30 years. Mark started out as a plasterer after arriving in Cairns as a penniless 18-yearold. But he soon fell in love with the Far North’s tropical charm and went on to own the successful Cairns Coastal Plasterers before establishing MV Designer Homes 11 years ago. “I love a challenge, it gives me drive and inspiration,” he said. “Without it, I would get bored. There’s a new international flavour in the kitchen at Donnini’s Simply Italian, their names are Mimmo and Herik. They are the head chefs at Tiberio Donnini’s newest restaurant, situated at the Hilton Hotel on the Cairns Esplanade. Mimmo Bianco, 30, hails from Italy where he worked as an apprentice at a two-star Michelin restaurant near Naples – Torre Del Saracino. He also completed a cooking academy course by Gualtiero Marchesi, who Tiberio describes as one of the founding fathers of modern Italian cuisine. Then there’s Herik Wilson Gozales Gomez, 34, who moved to Australia with his wife and studied cookery at Tafe in Cairns before joining the team at Ciao Italia, working his way up to sous chef. Tiberio admits having two head chefs may seem ‘left field’, but believes the practice is the way of the future. And he should know. Tiberio has been in the restaurant industry for more than four decades, continuing a family tradition that began on Melbourne’s Lygon Street, Carlton in 1952. “I think we will see more than one head chef more often, it allows them to share the roles and responsibilities,” he said. “Both of our chefs are young in years, but their skill and commitment is of the highest quality. “They enjoy getting to the market and sourcing the

freshest local ingredients possible, which is evident in the weekly specials menu.” Tiberio still retains strong Italian values – including the belief a meal should be enjoyed with good friends, good wine and good conversation. As a result, Simply Italian is only open for dinner, to ensure every diner has the best possible experience. But Tiberio is also planning to open an alfresco area during the dry season for long, weekend lunches. He said Mimmo and Herik would be instrumental in establishing the new lunch menu and he looks forward to working with them to secure a strong future for Simply Italian. “I think one of the best things about them both is they both chose Cairns to live and work,” Tiberio said. “They could have worked in Melbourne, Sydney, anywhere, but they chose here and they love the city they’re working in. “They make a fabulous team and work well together. But given the World Cup is in Brazil this year, I’m not sure how things will be come June-July.” To meet Mimmo, Herik and the team make a booking at Simply Italian for tonight on 4050 2020.

Craig Squire is hoping to put Australia on the map as global leader in food and wine tourism. The owner of Cairns’ iconic Ochre Restaurant – renowned for its unique, modern Australian cuisine – is one of three Queensland chefs selected to lead a new campaign to boost Australia’s profile as a food and wine destination. Restaurant Australia is an initiative of Tourism Australia, and hopes to challenge current misconceptions about Australia’s food industry. Recent research across Australia’s 15 key tourism markets revealed a large discrepancy between the perceived and actual quality of food and wine experiences on offer in Australia. Of those who hadn’t visited, only 26 per cent associated Australia with high quality food and wine. That number rose to 60 per cent after visiting, placing Australia second in the culinary world, behind France, and ahead of Italy. The ambassador selection recognises Craig’s commitment to the industry and tireless promotion of Australian cuisine internationally over the past 30 years. This includes his countless awards, overseas guest chef appearances and involvement in establishing the regional food industry group Australian Tropical Foods. He has also recently been in Dubai consulting on a new

Australian-themed restaurant. “It is exciting to be once again on board as an official ambassador for Australia and to see where it takes us,” Craig said. “Hopefully this pitch gives the world something to think about, and then it’s up to the industry to live up to the expectations.” Craig has been rediscovering the trends of Australian cuisine of the past two decades with Ochre’s current ‘favourites’ menu – a selection of his all-time favourite dishes to celebrate the restaurant’s 20th anniversary. He and his team of 30 are also preparing for a busy year of major bookings with his catering business, Tropic Spirit, including catering for thousands of guests at the welcome event for the Australian Tourism Exchange. Together, they make Ochre one of the top restaurants, and Craig - one of the top chefs, in the region. But he isn’t one to boast. “The region will always have its ups and downs, so it’s good to have our finger in a few pies,” he said. “But I certainly couldn’t do it without our great team, and of course my wife. Without those key people running the show day to day, you’re nothing.”

Jukka says audiences will hear lots of emotions and expressive interpretations of the traditional Nordic hymns, as well the as the trio’s original compositions. “Our way of arranging and playing is influenced by the Nordic, sparse and condensed way to express and deal with different feelings and emotions,” he says. “The name of the band ‘Avara’ means something spacious and wide open.” Having toured the world throughout his career, Jukka has fond memories of sharing his music with Aussie audiences. “I feel (like I’m) playing for friends when playing for Australian audiences,” he says. “The audiences are so open and emotional. They appear also to be pretty much involved, so it is easy to read how the audience feels when you play.” Jukka Perko has had an enviable career. He first attracted attention

of music lovers and critics in the mid-1980s when he made his debut at Finland’s biggest jazz event, The Pori Jazz Festival. He was only a teenager but his talent was quickly recognised. It was only a year later that he was touring the world as part of the iconic Dizzy Gillespie’s Big Band. It was here he found his feet, and he hasn’t looked back. “(It) provided me with a chance of playing and learning about jazz with such a musical giant as Dizzy,” he says. “They gave me the best possible starting point to build up to my own thing. Dizzy told me not to be worried about finding your own style too early. He encouraged me to just go for my own sound, following your instinct, and that the style will find you sooner or later.” More than 25 years later, Jukka has performed with too many people to mention. He says he has taken away something from each of those experiences. Now, with his current project – the Avara Trio – Jukka, Teemu and Jarmo throw themselves into their music, resulting in a show that is reputed as unforgettable.

WHAT IS RUST? Rust is a form of corrosion, and it can occur on the battery as well as the car body. Rust can be caused by the accumulation of road salt, dirt, moisture or chemicals in those places not normally reach by cleaning. Or by chips, scratches and any damage treated or painted metal surfaces resulting from minor accidents or abrasion by stone and gravel. Dust control chemicals, sea air or industrial pollution will also accelerate rusting, as will high humidity. Moisture that stays in certain areas of the vehicle for extended periods may also promote rust even when the rest of the vehicle is dry. And high temperatures will also cause corrosion to other parts of the vehicle that aren’t ventilated well enough for quick drying.

HOW TO PREVENT IT 1. Keep your vehicle clean with frequent and thorough washing. 2. Keep the underside as clean and dry as possible. 3. If you drive on salted roads, the car should be washed at least once a month during winter. 4. If you live near the ocean, wash your car at least once a month during the year. 5. Remove any foreign material, such as chemicals, salt, bird droppings, tar and so on, from the painted surface of your car. Use a proper cleaning fluid (see section on cleaning) 6. Regularly inspect your vehicle for scratches, dents and chips and repair as soon as possible with touch up paint. If these marks have gone through to the metal, have them repaired properly at a body shop. 7. Keep the passenger and luggage compartments of your car clean. Moisture, dirt or mud may accumulate under floor mats, so check these often. More checks are needed if the vehicle is used frequently during wet weather. 8. Transport items such as salt, fertilisers and chemicals in sealed containers. 9. Do not park your vehicle in a damp, poorly ventilated area. If you often wash your vehicle in the garage, or drive it in the wet, the garage may be damp and the high humidity will accelerate corrosion.

My day involves servicing bikes including suspension servicing, building bikes for customers, contacting suppliers and clients, keeping the workshop clean and making dreams come true. Where do you think is the best place to ride around Cairns is? Really enjoy riding the Smithfield trails. Atherton is a great and Davies is good if you want to get out and ride some natural unworked trails. On the weekends I enjoy going out and riding Kuranda downhill

What is the most rewarding aspect of your job? Being able to solve and correct issues with customer’s bikes. What did you do before you started in the bike industry? I was in high school and worked part time at McDonalds

What is the best piece of advice you would give to a new rider? Go ride with your mates and on the occasion it is good to ride with people that have a higher skill level than you. The more you ride the better you will get. Have fun! Because in the end that’s what riding is all really about.

How many bikes do you own and which is your favourite? I own five bikes. Two steel frame road bikes, one of them is a single speed and the other one is a two speed. I have a sweet 29” cross country race bike, an Epic Marathon. I recently got my hands on a downhill bike and a road bike. The downhill bike is a demo 8 and the road bike is an Allez. I would have to say my favourite bike is my Epic Marathon.

Why do you like playing for the heat? I enjoy playing for the FNQFC Heat because it provides me with an opportunity to test my footballing ability against some of the best players in the state week in week out in Australia’s second tier of football.

Outside of work I tend to find myself at mates houses or with family, family is very important in the well being of me as a person and as a footballer! How do you think your club differs from others around the state? The FNQFC Heat differs from other clubs around the state because of it’s Community Engagement program. Cairns being a small city compared to Brisbane it is important us as players get out into the community as much as we can to show that we care and appreciate the support of fans.

Where do you see your soccer career going? Every boys dream is to become a professional footballer and play in front of massive crowds scoring the winning goal. But I would love to be able to play football in a European country and experience a professional footballers life, but at the moment I’m concentrating on playing well for the heat. In my later years I wouldn’t mind completing all of my coaching badges and managing a football team.

What advice would you give to aspiring young soccer players? A piece of advice I would give to an aspiring footballer would be to “Never give up as your attitude determines your altitude”.

Apart from playing soccer, what else do you get up to in your spare time? I currently work as a skills development officer coaching primary school children the basics of football. My goal is to create an

nimal welfare is a worldwide problem that continues to be the source of endless frustration and emotional debate. Our lifestyle has changed in so many ways and sadly our respect for the lives of our most precious creatures has also diminished. Have you ever wondered what happens to all of the unwanted pets in Cairns? We are a relatively small community which faces a continual deluge of discarded puppies, kittens, cats and dogs. There are many factors which contribute to this ongoing problem. Unnecessary breeding, owner surrender, impulse buying and irresponsible ownership are just some of the reasons why our rescue organisations are inundated with abandoned animals. I work very closely with several rescue organisations in Cairns and am in awe of the commitment and dedication of these people. They are passionate and devoted to their cause, freely giving their time and resources to improve the lives of our faithful friends. YAPS and RSPCA have for many years carried the burden of caring for and rehabilitating the animals that our society

has forgotten. The commitment of staff and volunteers has meant these organisations have been a lifeline for the unwanted animals of Cairns. Working in this environment is physically and emotionally demanding and very few people would have any understanding of the challenges faced by these dedicated people. NQAR( North Queensland Animal Rescue) is an organisation of volunteers that are committed to rescuing, fostering and adopting dogs and cats. The organisation was originally founded by a group of people who were passionate about providing a service that delivers selfless and immeasurable care for the hundreds of abandoned animals in our community. Jess Grinter is the president and one of the founding members of NQAR. She is a tireless contributor to their foster and adoption program and is at the forefront of the daily challenges the group face when working in this industry. She has recently been nominated for an award for her work and is a deserving recipient of any accolade bestowed upon her. Behind the scenes are

CHELLE I’m a dreamer of sorts, working 8 to 5 in the sign writing industry as a sales consultant but still dreaming of making a full time living from my art.

What’s your background? I’ve been involved in the art world all my life in one way or another. Starting as a sign writing apprentice in the 80s moving into airbrush and the artwork I’m producing today. What’s integral to the work of an artist? I would have to say to “PASSION” is the greatest requirement for an artist. What has been a seminal experience? Airbrush! It needs discipline and amazing patience which ultimately has played a huge part in my artistic development. What’s your scariest experience? Finally realising that I had a talent in art and making the move to developing and promoting it. I have had so much trouble over the years accepting the fact that I do have an ability to create beautiful artworks. What’s your favourite art work? Definitely have to say “The lady of Shalott” 1888 by John William Waterhouse. The way he has captured the emotion and light gives me chills, it has always inspired me, such a passionate work of art.

What jobs have you done other than being an artist? Sign writing and graphic art have been my main source of income over the years. I’m so lucky to have been able to keep art in my working life in some way. What song inspires you? I can’t really say that music inspires me, although I do love to play yoga music when painting. I would say I’m more inspired by the beauty that surrounds us here in Cairns. The amazing colours are all the inspiration I need. What is your dream project? To have my first major exhibition in Cairns, the city that has inspired me to follow my dreams. What is your most memorable moment with your grandfather, the man who inspired your love for art? As a child my grandfather was a very important part of my artistic development. We would spend many hours in his studio, I would just sit and watch him paint the beautiful landscapes of Victoria on any background he could find, be it plaster board plywood to canvas. He taught me how to mix colours and the application of oils. I do miss him dearly, and I think he would be proud of my achievements.
