A challenging part of operating your business: Our center is open 7 days a week, 365 days a year, and 18 hours a day. It’s a demanding schedule!

Tips for less experienced operators: Have fun and try to remember that what you do not get done today will be there tomorrow.

Try new things every day. Some may fail; learn from them and try new things tomorrow. Change what you tried before; it may work tomorrow.

Small things add up! If you can make one thing better each day in your facility, at the end of a year, you’ve made 365 things better. If you could get 10 of your team members to make one thing better daily for an entire year, your team would make 3,650 things better. It could be as simple as a hook on a bathroom door, painting a wall, or changing a light bulb.

How do you motivate staff to perform at a high level? We have gift cards for hundreds of retailers, restaurants, and other businesses in the area. Most of these are acquired via trade, and we use them to recognize team members. We also host four parties a year for our team: Memorial Day, 4th of July, Labor Day, and Christmas Eve. We

invite all our team members and their extended families to attend. We have food, guest bartenders, bowling, volleyball, an ice cream truck, gifts for employees (Labor Day and Christmas Eve), gifts for our employees' kids on Christmas Eve, and an awesome 4th of July fireworks show.

Special events unique to your center: We do all kinds of events every year for our community:

One fun event is our Jeep Takeover, where we have 300+ Jeeps in our grass area, and everyone hangs out, socializes, eats, and drinks.

We acquired three food trucks and a catering vehicle last year and took over catering at an Elks Club near us to expand our presence.

We host a major concert every summer. In the last two years, the major country act, Jason Michael Carroll, performed here, and the organizer raised more than $30,000 in a single day for Alzheimer’s! We contributed $5,000 to Alzheimer’s that day, and every year, in honor of my mom since she passed away from Alzheimer's.

We host smaller events, too, like tap takeovers, bourbon sampling, painting parties, mommy and child craft days, sewing and quilting groups, live music events, and many fundraisers. We even host club keno gambling parties with the state of Michigan lottery office!•

Where's The

quality of cattle matters

There are endless options when considering the best meats for your center, and being knowledgeable leads to better-informed purchasing decisions and a better idea of how to market these options on your menu. We've compiled the facts so that you can graze over it.

BEEFY NUMBERS

According to the United States Department of Agriculture (USDA), the average American consumes about 67 pounds of beef annually. In 2021, the U.S. consumed about 30 billion pounds of meat.

The U.S. alone has a whopping 654 million acres of dedicated cow pasture. An additional 127.4 million acres are dedicated to growing feed for that livestock. That means cattle dominate 41% of all land in the contiguous U.S.

With such a significant market share, beef can be one of the most valuable options on your menu.

No two steaks or burgers are the same, however, as aficionados will gladly remind you. There's wide variance in how farms treat and feed their cattle and which breed of cattle is being raised. These discrepancies affect taste, texture, and consistency.

So which beef should be handled like a prize possession, and which should be thrown in the meat grinder?

THE GRADE

The USDA is the ultimate authority on American beef. The USDA-grade shields are highly regarded as symbols of safe, high-quality American beef. These 'grades' provide a universal format for businesses and consumers to understand what beef they buy.

Beef is graded in two ways: quality grades for tenderness, juiciness, and flavor and yield grades for the amount of usable lean meat on the carcass. Highly skilled USDA meat graders use characteristic assessments and electronic instruments to measure the meat's grade.

Prime Beef: Produced from young, well-fed cattle. It has abundant marbling and is generally sold in restaurants and hotels. The additional fat content means it's very resistant to being dried out, so prime roasts and steaks are best served with dry-heat methods: broiled, roasted, or grilled.

Marbling is the amount of fat interspersed within a cut of lean meat. The more the marbling, the more juicy, rich flavor! While a flat, bright red steak at the supermarket might be eye-catching, those white lines of fat running throughout deliver the flavor.

Choice Beef: High quality but with less marbling than prime. Choice roasts and steaks from the loin and rib will still be juicy and flavorful, but you'll have to be more careful with less tender parts of the cow to ensure it's not overcooked and dried out. Those cuts of meat will often be braised, roasted, or simmered with a small amount of liquid in a tightly covered pan to hold the moisture.

Select Beef: Very uniform in quality and typically leaner than the higher grades. It's still reasonably tender but often lacks the juiciness and flavor of higher grades. Only the most tender cuts can be cooked in dry heat; otherwise, they should be marinated before cooking.

BEST BREEDS

Standard and Commercial Beef: frequently sold as ungraded or 'store brand' meat. Utility, Cutter, and Canner grades of beef are seldom sold at retail and are primarily used to make ground beef and processed products.

Appropriate descriptions are essential in guiding guests to the best options on your menu and ensuring you get the most bang for your buck when deciding on inventory.

As delicious as it sounds, grinding up USDA Prime ribeye probably isn't the best source for a profitable cheeseburger, and nobody is paying the premium for a USDA Select New York strip steak. Talking to your local butcher is a fantastic way to get you MOOving in the right direction!

Cattle have been selectively bred for centuries based on characteristics like marbling, flavor, milk production, or speed of maturity. These pedigrees and genetic qualities have a significant effect on the value of the beef. The average cost of an American Hereford is about $1,500, Black Angus is around $3,500, and a Japanese Wagyu can cost up to $30,000!

Best Meat Pairings:

RED WINE: The classic pairing for a steak due to its deep flavor profile. It balances out the meat's richness and won't take up too much room in your stomach when eating larger ribeyes.

WHITE WINE: Many will say steak should only go with red wine, but that's not always true. When facing bold, hearty flavors, white wine's crisp, fruity taste can stand out in a refreshing way.

WHISKEY: If you're not much of a wine connoisseur, the smokiness of whiskey pairs well with the smokey flavors of smoked meats, barbeque, and burgers.

BEER: Pairs fantastically with a juicy cheeseburger! IPAs are an excellent match with burgers' savory, umami profile. Amber ales offer something less sweet, and Pilsner's light, dry finish makes a great in-between-bites beer.

Improve Your Center’s Appeal Even on A Budget with Steve Cieslewicz

The question arises every spring after leagues are done for the season and the banquets are in the books: Now what? At our center, we take a step back and evaluate our past bowling season. We analyze our financials and see what the business can afford to do to upgrade the center. In my 20-plus years of service in the bowling industry and having visited hundreds of bowling centers, there was always a need for an upgrade somewhere.

Thirty years ago, a wise and highly regarded owner-operator said to me, ‘Steve, you always need to upgrade something in the off-season to show the customers that you care about them.’ He was not wrong! I firmly believe that this is an important part of keeping a thriving business moving forward. Nobody wants to see an owner reap the benefits year in and year out and not put anything back into the business. Change is good for our customers; it keeps them engaged and excited.

I think all proprietors have a wish list in their head they would like to make a reality. How can we turn our wish lists into reality?

A Well-Informed Reinvestment Strategy

You’ll need a strategic approach to analyze how to proceed with updating your business, and it isn’t all about money. As simple as it sounds, the process starts with a list. Walk around your facility, inside and out, and create a list of things that are needed, no matter the cost. Let's say your list is 10 items long. You’ll need to prioritize them, starting with the major needs of the center, followed by price. However, I caution you not to let price be the primary factor in your thinking.

Now, compare the money in the bank minus operating expenses for the next few months until the season rolls around again. That will give you some insight into how much

you can spend. You might only have an extra $15,000 to $20,000 to allow for the project, But the actual cost of the project may be $30,000 or more.

Then, the decision must be made: is this project worth the investment? A call to your banker might be the next step. What is the return on investment for this particular upgrade? This is a critical step! It might cost five times more than other upgrades, but the ROI is expected to be 10 times faster. It might make sense to give your banker a call to see what his thoughts are, especially if he/she is a customer of yours.

Assign each item a numerical value based on its estimated cost, allowing for a clear understanding of financial considerations.

Assess the necessity of each initiative, prioritizing them with another numerical ranking. Factor in the time required for completion, recognizing that time equates to expenses, and assign corresponding numerical values.

Evaluate the potential return on investment for each project, attributing another numerical score. Finally, analyze these numbers to make informed decisions about what the center can afford and what actions are most conducive to its success.

Through this systematic process, a well-informed strategy can be formulated to guide your center's growth and prosperity. The final step of the process is to keep your list top of mind, so you continue moving ahead. I keep mine in the office, so I’m reminded of it at least weekly.

Updating with Little or No Money

Updating your center doesn't always mean that it's going to cost a lot of money. I know you're thinking that’s not possible. I’ve run my center for over 20 years; there were a few years at the start when we didn't have money or the business was flat, but I still felt like we had to do something. This is where you need to get creative!

Here’s an idea: Pick a day or two in the offseason and have a cleaning party. Nobody likes to clean, but add the word party to it, and they might be a little more interested. Involve your staff (and maybe your regular customers?) in this. Call it a rebranding of your center. Get ideas from staff and your regulars on things that could be done to spice up the center that cost little or no money.

One thing I do every couple of years is to take everything off the walls. A crew deep cleans the walls while I decide what I want to keep and what I want to get rid of. I then try

It's crazy how many people come in and look around and think I remodeled! Again, involving customers and staff goes a long way. Your customers will get into a routine of asking you every spring what your plans are for the offseason.•

Making the right flooring choices for your center

As more operators reinvest in their facilities to meet guest expectations, we look to flooring and what to consider when updating your center. This month, we focus on PERFORMANCE

Simply put, performance is the execution of an action. The performance of a flooring surface can be determined by how well it responds to the users in its environment in a way that enhances their activities. Some key benefits of high-performance floors are functionality, durability, and cleanability.

In our previous article of the series, we covered functionality and choosing the proper flooring material for each environment within your center; this month, we’ll focus on performance, specifically durability, and cleanability.

The obvious measure of durability is how little you need to replace your floors. Choosing surfaces focusing on the functionality needed for every space will inherently contribute to its durability. Beyond that, though, different products within a category can represent a bigger benefit than others.

ALL CARPET IS NOT EQUAL!

For instance, when acoustics and softness lead you to decide on high-performance carpet materials, there are sustainable differences between a tufted carpet, which is constructed with about 16 stitches per inch, and a flocked product, which has 46,000 fibers per square inch. They both give you the benefits of acoustics and comfort, but the flocked product will be more resistant to wear and tear, stains, and soil, making it easier to maintain.

If surfaces are easier to maintain, they will look better for longer periods of time making them more durable.

LUXURY VINYL TILES

Luxury vinyl tiles (LVTs), particularly those mimicking natural materials like wood, have gained popularity in recent times. When considering vinyl flooring, it’s essential to scrutinize

the quality of raw materials used in their production. Many low-cost LVTs in the market meet industry specifications but compromise on raw material quality, leading to rapid deterioration despite their initial attractive appearance.

Online Tournaments Spark Excitement for Competitive Bowlers BOWL CANADA

Facing continuing challenges of rebounding post-Covid, Bowl Canada realized something new and fresh was needed to elevate excitement for competitive bowlers. The always proactive association decided to introduce two online adult team tournaments for the 2023-2024 season.

The first tournament, the Canada Cups Online Shootout, took place during the fall and early winter months, while the second, the National Classified Online Championships, was scheduled for late winter and spring. Both tournaments were structured around league scores during specific periods.

Transition to Online Format

“These events give league bowlers more to shoot for than just socializing each Tuesday night,” said Paul Oliveira, executive director of Bowl Canada. Moving to an online format allowed people to compete on their home conditions where they basically bowled against themselves. Oliveira noted, "We've historically organized such tournaments, having previously held face-to-face Canada Cup Championships. However, disruptions caused by the pandemic prompted us to explore alternative formats."

three-game qualifying score. Each week of the elimination bracket round, the field was reduced by half until the winning two teams competed in the championship final, when the winners were crowned.

Proprietors submitted all scores online. The 2023 Canada Cup Online Shootout had 234 entries, up from 204 face-to-face entries in 2022-2023.

The Canada Cups was open to all 5-pin and 10-pin league competitors who were at least 19 years old as of September 1st and who bowled at any of the 227 Bowl Canada-member centers. Multiple entries were allowed, with each bowler using his/her highest league average from the previous season (minimum of 21 games). Anyone without a previous league average utilized their 15-game average from the current season. Entry fees were $30 per adult 5-pin team (five players), $25 for 10-pin (four players), and $25 for seniors, with 80% allocated to the prize fund and 20% for administration.

Canada Cups online qualifying rounds were conducted from October 16 -November 5, with only the first three league scores counting. Leagues that bowled four games a night counted only the first three games. Scores were posted online weekly and compared with scores bowled by other teams entered from across Canada. The top 16 teams plus ties in 5-pin, and the best eight teams and ties in 10-pin each week advanced to the bracket round held November 6 -December 10, where they were joined by the wildcard teams (teams with the highest tournament score who had not already qualified) to create full brackets of 64 5-pin and 32 10-pin teams.

Oliveira reflected on the success, noting an increase in entries with minimal operational costs. Looking ahead, Bowl Canada aims to improve promotion and direct participant entry online, believing online events will become a regular part of the bowling calendar. “We learned that we need to promote it more to the bowlers themselves,” Oliveira said. “We’re probably going to connect with the leagues directly through emails and direct mail.

The Canada Cups Online Shootout and the National Classified Online Championships have provided league bowlers with a fresh avenue for competition and camaraderie. Kudos to Oliveira and the Bowl Canada team! In the face of ongoing challenges, Bowl Canada has embraced innovation and adaptability to reinvigorate excitement among competitive bowlers.•

WHERE THERE’S A WILL…

COMMUNITY RESILIENCE

Paradise, CA, has overcome a lot. The name tends to conjure all that is good. However, the community, which is nestled in the Sierra foothills above Sacramento, has had to overcome the devastating Camp fire in 2018, which took down a good portion of the town. Helping to nurture good things, PARADISE PLAYDIUM is opening. It will offer an arcade, axe throwing, party rooms, laser tag, virtual reality, bumper cars and more. Having something for kids to do is paramount, but adults will enjoy the activities along with a lounge with food and drinks.

Washington state’s Anacortes High School girl’s bowling team has seen its challenges. First and foremost, the only bowling center closed in 2020. With no lanes available, head coach Teresa Syms turned to creative measures to keep the team practicing and improving. Result—the team is sending two of its members to the state tournament. When the team is set to practice, the high school’s cafeteria is transformed from the school’s common area into a circuit of mats, rubber balls and pins. Syms lays two 20-foot rugs down to create a mock 40-foot bowling lane. She created a circuit of weights, rubber balls, and mats, each with a specific function to improve the bowler’s skills. One of the tools is an arm-swing trainer that assists bowling form and another helps with balance and stabilization. Syms shares that the setup is something like the 1988 Jamaican bobsled team depicted in the 1992 film “Cool Runnings.” Adversity can develop good things, such as friendships and improvement in skill and focus. Where there’s a will, there’s a way, and Anacortes’ girls’ bowling team is an outstanding example.

Feels Welcome EVERYONE Making Sure Is Good Business!

In the vibrant world of family entertainment, where laughter echoes and memories are made, ensuring everyone can partake in the fun is paramount. Yet, for individuals who rely on wheelchairs or other medical devices for mobility, the simple act of having fun with friends can often be fraught with challenges.

The following article is by Daniel Ellman, a contributor to IBI who shares his experiences navigating life from a wheelchair. Daniel's candid insights make you think about how inclusive your center really is and how you can make it even more welcoming for everyone.

Sometimes, having fun and hanging out with friends aren't as easy as they sound. In fact, for those who use a wheelchair for mobility, doing those two things can be downright challenging at times.

That became strikingly clear to me when I was growing up. So many things my friends were doing to have fun weren't accessible to me.

Laser tag? Try wheeling around with the vest on and a laser gun in your hand.

Miniature golf? I would do it, but jumping my chair over brick ledges or up and down steps throughout the course was always challenging.

Go-karts? Not happening.

Ropes courses or ninja warrior courses? No chance.

Even arcades have a limited number of games that someone seated can play.

On a bigger scale, rollercoasters are pretty much off-limits. You must be a certain height, use your legs, or have no back issues even to be allowed on.

Shooting hoops was fine, and I played wheelchair basketball as a kid (and now coach the sport as an adult). But it's still nearly impossible, let alone fun, to play one-on-one or three-on-three with able-bodied friends.

Inclusive Upgrades

But there is one activity that changes everything….Bowling!

Yes, bowling. It's one sport where I don't need special equipment. And since it's an individual activity, you can compete one-on-one, whether you use a wheelchair or not. There's no substitute for that feeling of belonging and inclusion.

I was reminded of that feeling recently when I went bowling with my wife and two of our friends. We all had fun together, supported, and heckled one another – and yes, we were competitive, too. (I may still be angry that I came in last place.)

But in the end, I didn't need to apologize for my chair. Or feel awkward when it was my turn to go. For an hour on the lanes, we were all equals. All I needed was the access to do it – and the center we visited had a bowling area that was fully wheelchair accessible. There were no steps from the main concourse down to the couches. And no step up from the seating area to the lanes themselves.

If that had not been the case, the apologies would've come out. We probably would've been placed on a lane near the end of the bowling area (nearest to a ramp), or I would have had to ask other bowlers to pause their games while I wheeled in front of them to get to my lane each time.

Instead, we could bowl on any lane at any time.

Inclusive design is so simple but so important. And it works not just for wheelchair users. It may benefit a parent with a stroller or somebody who walks but has an injured leg or a disability that doesn't allow them to navigate stairs easily.

You're also opening up your world – and your center – to those people. And they'll pay you back in return because my friends and I will be back bowling soon enough. And that center will reap the rewards of our business — and its inclusivity.•

Malls on steroids are becoming commonplace. With the relaxation of COVID rules, shopping malls are getting a facelift. "People crave new and engaging experiences. Providing an assortment of fashion, food, and entertainment in an upbeat environment keeps shoppers happy and coming back," said Nicole Ruotolo, marketing manager for Danbury Fair Mall. Recently, the mall has reopened and is rejuvenated with a ROUND1 BOWLING & ARCADE, a Target, and multiple new eateries.

MINNESOTA & MICHIGAN

Three duckpin bowling lanes have been chosen to fill out the entertainment options for TapHouse in Cloquet, MN. It is the ideal choice for a small bar that offers 29 self-pour beer taps, crafted cocktails, pizza, and items from a local restaurant. Duckpin bowling seems to be the pick of the moment for small venues. In Detroit, MI, CORKTOWN TAPHOUSE also has chosen to add duckpin bowling.

OHIO

Summer 2025 is not too far off for a smashing idea for residents of Columbus. With its business roots in Minnesota and Iowa, SMASH PARK is bringing its outdoor and indoor recreation concept to Ohio. It will boast 30,000+ square feet of indoor space for pickleball courts, a full-service restaurant with craft food and drinks, a 21-and-over axe throwing space, duckpin bowling, and two private karaoke "Sing Suites." Outside, there will be 15,000 square feet of pickleball courts, shuffleboard, bocce ball, and yard games, plus a dog-friendly outdoor patio and rooftop bar. With weekly leagues set up for just about every activity, there is ample fun for everybody. Patience. It will come sooner than you think!

MARYLAND

95-year-old PATTERSON BOWLING CENTER, the oldest operating duckpin alley, has been saved. The lovely relic in Baltimore has been down-sized to a bar and four to eight duckpin lanes instead of the original 12. The idea is a lounge-y speakeasy atmosphere that captures the old days in Baltimore.

NEW MEXICO

In 2018, Las Cruces lost its bowling when Pin Alley closed. However, a pair of developers saw potential in the city's Kmart building vacancy. There is a plan for a 92,000-square-foot family entertainment center. ELITE FAMILY ENTERTAINMENT CENTER will open this summer, paving the way for 30 bowling lanes with six lanes devoted to children. In addition, there will be indoor pickleball courts, a laser tag arena, 5D cinemas, bumper cars, virtual reality theme parks, and sports simulators. It promises to be the biggest center of its kind in the region. The design will also include a sports bar and restaurant.

WYOMING

THE DERBY CLUB GAMING PARLOUR in Cheyenne has added an FEC package. The new attractions include laser tag, escape rooms, bowling, pool, and more. The games offered are a motorcycle racing game and shooter games, while the laser tag options include an eight-player arena and a Westernthemed adventure that accommodates 16 players. Bowling will feature 18 traditional, eight duckpin, and four mini lanes. There will also be three escape rooms and a virtual sports room with 20 different sports, including soccer, football, and basketball—lots of fun from which to choose.

LEHIGH LANES BOASTS A FIRST

After 60 years of bowling fun, Lehigh Lanes, in Lehigh Acres, FL, is ready for a refresh.

Owners since 2019, Dennis Bush and Chris Keane are stepping up and installing on all 12 lanes the latest string pinsetter technology—USBC-approved QubicaAMF EDGE Pinspotters. New carpeting and furnishings will give the center a completely new look. The highlight and introduction of the renovation puts the center ready to host a PBA50 (seniors) regional event, making Lehigh the first center to host a PBA event on all string pinsetters.

“Our commitment to our bowlers and the residents of the area has never been stronger,” Bush said. “We want Lehigh Lanes to be the place for competitive as well as fun entertainment for decades to come.”

While string pinsetters are new and controversial, the technology is proving itself reliable. Keane admits there will be resistance from some bowlers, but he feels confident most will become believers of the new technology once they’ve bowled on the lanes. “These machines are so advanced that it’s virtually impossible to know there are strings attached to the pins.”

IN MEMORIAM

A former QubicaAMF Bowling World Cup legend, Sven-Erik Skoglund, passed away on March 9, 2024, at the age of 86. His bowling career spanned four decades. By the time he retired, he was the regional director of AMF’s business throughout the entire Nordic Region.
