Nourishing your body with healthy, healing foods can also be a party in your mouth. This dinner recipe is just that! In bowl style, I’ve created a recipe (inspired my a dish at my favorite restaurant) that is both cause for celebration and packed with the vitamins and nutrients your body needs.

MAKE TH E BOWL

1. Cook rice according to directions. 2. Grill or Sauté steak (sprinkling with garlic powder, salt and pepper); cut into bite size pieces; set aside. 3. Chop onions and peppers. 4. In large skillet, add 2 tbsp. of EVOO and sauté onions, peppers & mushrooms; set aside. 5. Chop red apple. 6. In 2-3 large bowls, layer bottoms with Arugula lettuce. Next, add rice to each bowl. Divide up and add the fresh sautéed veggies and cooked steak. Finish off with the chopped red apples, fresh pesto dressing & Parmesan cheese (optional).

1/2 cup packed fresh basil1 clove of garlic, roughly chopped 3 tbsp. raw pine nuts 1/2 cup Extra Virgin Olive Oil 2 tbsp. lemon juice 1/4 tsp salt & a dash of pepper

STEAK BOWL • 2 cups of fresh Arugula • 4 cups of button mushrooms • 1 red, 1 yellow & 1 orange pepper • 1 red onion • 2 tbsp. Extra Virgin Olive Oil • 1 cup brown rice • 1-1.5lb Steak (I love to use New York strip) • 1 large red apple • Shaved Parmesan (optional • Garlic powder • Salt & Pepper

MAKE TH E DRESSING In a blender,(we love the Ninja, combine all dressing ingredients. Blend all on high until the desired consistency is achieved.
