Lauki Kofta In Spicy Gravy
Lauki Kofta In Spicy Gravy is a very popular Indian main course recipe. Kofta balls either made from single vegetables or a mix of many vegetables and at last dipped in spicy gravy. My lauki kofta recipe is very easy kofta recipe. The only thing it needs is patience. As its name says, this kofta is made from lauki and dipped in spicy gravy. Generally, people hate lauki but they never say no to lauki kofta. If you are eating it for the first time, then you can’t recognize that this recipe is made from lauki. MIX A PINCH SALT AND GRATED LAUKI At first, mix a pinch of salt into grated lauki and transfer this mixture to a sieve.
PLACE A BOWL Place a bowl under the sieve so that the released water from the grated lauki can be saved. Leave it for 30 minutes.

MEANWHILE, MAKE ONION PASTE Meanwhile, you prepare two types of paste to make lauki kofta in spicy gravy. At first, make a fine paste of onion and keep it aside.
MAKE TOMATO PASTE WITH OTHER SPICES We will make second paste using tomato, ginger garlic paste, salt, turmeric powder, red chili powder, kashmiri lala mirch powder, coriander powder and green chilies.
AQUEEZW GRATED LAUKI AND ADD DRY INGREDIENTS After 30 minutes, with the help of your hand squeeze out the water from grated lauki and transfer it to a dry bowl. Now add all the other ingredients of lauki kofta
MAKE SOFT KOFTA DOUGH Mix it and make soft and firm dough from it.
DIVIDE THE DOUGH AND MAKE BALLS Divide the dough from six equal parts and make ball from each part.
DEEP FRY Deep fry all kofta balls till become golden brown.
HEAT OIL AND ADD CUMIN TO MAKE GARVY At first pour oil in a pan and heat it. Add cumin and red chili sticks to it and make both golden brown.
FRY ONION PASTE Now, add the onion paste to it and fry it on the high flame till starts becoming brown.
ADD PASTE TO IT Reduce the flame to low and add second paste (which you have made using tomato and other spices) and kashuri methi to it.
FRY TIL STARTS RELEASING OIL Fry it on the low flame till starts releasing oil Do not forget to cover it with the lid. Always mash kashuri methi between your thumb and finger before adding to any recipe.
ADD WATER Now, add water to it and mix it.

ADD GARAM MASALA Cover it and turn the flame to high. When you start listing the sound of boiling gravy, add garma masala to it and mix it
ADD LAUKI KOFTA Now add all kofta to it, mix it and cover it . Let it be on the low flame for 2-3 minutes and then switch off the flame.
READY TO SERVE Yours Lauki Kofta In Spicy Gravy is ready to serve. Before serving garnish it with grated cheese.
TIPS • You can replace roasted besan with chana sattu. • You can add dry fruits to its gravy.
