MERRY CHRISTMAS EVERYONE PERRY’S WORDS There’s always an air of excitement about the place at this time of year, the holiday season is approaching and the start of the festivities and families coming together. It’s also time to take a break, it’s the end of the year and it’s been a positive one at that. Whilst we are enjoying a quieter time, we are also planning for a successful 2014. We achieved much in 2013. From raising money during Azure’s initiative of Malta’s first bike safe event ‘Think Once, Think Twice, Think Bike’, where we raised €1,600 for charities, to gaining all the latest trends and information from the annual World Travel Market in London. It’s been an extremely varied year. In February 2014, Azure will be attending the Leisure Real Estate Summit, where I will be speaking and Azure will be key sponsors at the event. It’s always good to keep up with European trends and services, as well as meeting up with some familiar faces in the industry. Every year we contribute and every year we come away with valuable ideas that help assist the company’s future strategies. Malta’s weather being as clement as it is, this time of year and the growing number of people realising that the weather is still good compared to most other European countries, results in an ever increasing number of arrivals. Malta has an array of festivals and big musical events (covered in more depth in the following pages) so there’s plenty going on too! Malta has seen a record number of visitors this year, 9.3% up on summer arrivals compared to 2012 and expecting to nudge the 1.5 million mark by the end of the year. We continue to collect a stream of great feedback from guests, owners and promotional visitors every year, proving that Malta is a firm favourite in choice of holiday destination. Azure will be working through Christmas this year because of increased arrivals so please pop in if you need anything or just want to say hello! SPOTLIGHT ON IGGY ZAMMIT

Iggy has been working for Azure for over 9 years as an Owner Sales Membership Consultant. His outgoing personality, strong communications skills and his ‘tomorrow never comes’ mentality make him a big favourite amongst guests and returning owners. Perhaps these are also a few of the reasons that have won him the accolade of Best Azure Consultant of the Year, for no less than 5 consecutive years in a row. On a daily basis, he meets with members to catch up with them, to give them an insight into what has been happening in Malta and at the Golden Sands resort, since their last visit and he suggests tips for them to make better use of their vacation ownership packages. He makes them feel very welcome, so much so that many owners consider him as a friend, here in Malta. What you don’t know about Iggy, father of 3 is that he loves training at the gym, 3 or 4 times a week and he owns a growing collection of over 300 football shirts signed from famous footballers, which he guards with his life!

Nevertheless, despite having travelled to so many countries to date, he still truly believes that Malta is a lovely place to live. “Nothing beats island life” he enthuses. It is warm all year, it is safe to raise children here and it is cultural too”.

Iggy is one of the strongest consultants on Team Azure so I thought I’d be a little sneaky and try to put him in the spotlight to see if he would crack under pressure. I decided to ask him a question that he would have to answer in two minutes flat, timed on my recorder. This question is asked by so many people who attend the promotional resort presentation. Q: What are the benefits of becoming an Azure member compared to my current option of booking holidays through a travel agent? The benefits of becoming a member are obvious. Rather than you booking with a travel agent, a member becomes the travel agent from the comfort of home, can organise and book the weeks whether it is to the home resort, that is Radisson Blu Golden Sands, or any other resort. The selection is in excess of 2,500 resorts in 80 countries. Saving money is another big plus and in a way it forces people to enjoy quality time overseas with their loved ones and family. MOVEMBER AT AZURE IN THE NAME OF MEN’S HEALTH. A successful Team Azure initiative By Grazielle Camilleri

Each year in November, companies across the business world, from the relatively small to some of the largest global corporations, join forces, united in their commitment to fine moustachery and changing the face of men’s health.

Teams around the globe are formed. They share the experience of growing a “Mo” during the month of November and raise funds for Movember’s selected charities. Azure Marketing’s Nigel Anastasi and Membership Consultants Tony Hallet and Ryan Kerr were amongst the most enthusiastic participants, discarding their razors and taking on a new look for the 30 days of Movember. Even babies and Azure’s ladies enjoyed the fun angle of spreading the serious message. Men’s Health - Did you know? Around 2,300 men in the UK were diagnosed with testicular cancer in 2010. Smoking causes around 87% of lung cancer deaths in men in the UK compared to 83% in women.

A quarter of deaths of men under 34 can be attributed to alcohol In the UK, on average, men die at a significantly younger age than women – the average life expectancy for men in the UK at birth and at age 65 is lower for men than women however there is no biological reason for this. The reasons for the poor state of men’s health in the UK and around the world are numerous and complex, with two reasons highlighted - Men not being open to discuss their health and how they’re feeling, along with reluctance to take action when men don’t feel physically or mentally well. Movember wishes to change this way of thinking by putting a fun twist on this serious issue. Using the moustache as a light-hearted base for the campaign, Movember wants to bring about change and give men the opportunity and confidence to learn and talk about their health more openly and take action.

Member Exclusive “I must now seek in the children an echo of what Ernest (his brother) and I were in the old time of what we felt and thought and their delight in the Christmas tree is not less than ours used to be.” This is what Albert Prince Consort wrote to Her Majesty Queen Victoria in 1847, on introducing the Christmas tree to his children in England. This tradition spread throughout the British Empire and was also adopted in our small island of Malta. British presence in Malta was influential in the introduction of turkey for Christmas lunch, plum pudding and pantomimes at the Manoel Theatre and Father Christmas. When Malta formed part of the Kingdom of the two Sicilies, a nativity crib was set up at the Dominican monastery in Rabat, followed by another at the Benedictine nuns in Mdina. Slowly, slowly this Christian tradition spread all over the island, as can be seen by the large numbers of crib exhibitions in every village and town, during the festive season.

From small grottos to large mechanised ones, displaying baby Jesus in a manger in front of our lady and St Joseph, the cow and the donkey in the background and shepherds with their flocks adoring the infant. These numerous exhibits around the island are open for the general public to enjoy. The figurines in earth clay are called ‘Pasturi’ from the Italian word ‘Pastore’ meaning shepherd. Nativity processions by altar boys are held on the eve of Christmas, with one child chosen to deliver a symbolic sermon, during midnight mass. Sharing the joy of Christmas with all our guests is fantastic, wishing you all a bright New Year and if it can be also prosperous even better. This sense of sharing is what I wish from you all when you visit us at Golden Sands, a willingness to share your experiences, thoughts and cultural interests with us. The Wednesday evening drinks party in the members lounge is the right platform for such exchanges in order for us to develop a Cultural Club in our resort. We shall look forward to 2014, positive it will be a great year for us all. May you and your loved ones have a bright and merry festive season.

INTERVIEW WITH MEMBER MIKE GORDON By Grazielle Camilleri

Working with Azure at the Radisson Blu Resort & Spa, Malta Golden Sands gives me the opportunity to meet with many of our local and international members. I just love meeting people and putting faces to names! Recently, I had the pleasure to be introduced to Mr Mike Gordon, who like myself shares the common interests photography and travel. He takes photographs mainly in and around the Malvern Hills, where he lives in the UK and when on holiday. He also ventures out more widely to capture more diverse images. For example, he has taken photographs at the Medieval Festival at Tewksbury, the Cotswold Steam Railway, the Welland Steam Rally, the Prescott Motorsport Hill Climb and of course several photos in beautiful Malta. “Malta has the most amazing places to take excellent photographs and has become a perfect place to indulge my hobby. This has meant occasionally going out early in the morning and late in the evening to get some interesting shots!” Mike tells me during the interview. Mike took up photography as a hobby in 2008. He bought his first digital SLR camera and started taking landscape photographs. He wanted to learn more and more about the technical aspects of photography and learn to take professional standard photographs, using the right equipment and applying proper techniques. He then progressed to taking photographs across a wide range of subjects including motor racing, wild life and portraits, learning new techniques and trying to perfect his images. “My particular passion is getting out into the countryside or going to events to capture images that are really interesting. I have recently set up my own website, www.mikegordon. co.uk so people can see my catalogue of images.”- Mike Gordon I was very interested to know how Mr & Mrs Gordon came into contact with Malta and how they became Azure members so asked a few questions with great curiosity as usual! The contact with Malta and Azure started when Mr and Mrs Gordon received a sales phone call in late 2009 offering them a one week holiday at the Radisson Blu Golden Sands Resort for a promotional preview offer of just £150. They had been to Malta before and remembered how magical a place Malta is, so they decided to come on the offer which

seemed very good value. I went on to ask the Gordon’s more questions out of interest to learn their member story and he was keen to answer in detail:

Q: When did you become members? How did that happen?

During our first stay in 2010, we attended a promotional presentation with a representative called Ryan, who took us through the various offers that were available, and we opted for associate membership with a studio flat. We absolutely loved the Golden Sands resort and the island of Malta and went back again in 2011, where we upgraded to a one-bed apartment with a sea-view. We had another amazing holiday that year and using our accommodation voucher for an additional one-bed apartment we took our son and daughter out with us to Golden Sands in 2012, where we were able to share our Malta experiences with them. We returned once again this year, on our own, and were given the opportunity to upgrade to the penthouse stardust suite, one of the ultraluxurious Heavenly Collection suites. We were even able to stay in it for the final 4 days of our holiday - we can’t wait to go back to it again next year!

Q: Why do you like the resort and our products? My wife and I love the quality of the resort, its location at Golden Sands Bay, away from the hustle and bustle of St Paul’s and St Julian’s, as well as the facilities it has to offer. The timeshare options presented to us were thoroughly explained by very pleasant sales staff, with no pressure selling from Ryan or Sasha. We liked the ethical code of the finance and commercial teams and the overall professionalism of the resort team. The hotel staff are also extremely friendly and helpful with requests answered quickly.

When we were offered a deal this year by Sasha, with an excellent purchase price on the penthouse, we jumped at the offer, as it was the right thing for us to do.

Q: Why do you love Malta and the Maltese people?

Malta is such a fantastic country, rich in culture and history, with extremely friendly English speaking people and a perfect climate. There is so much to see, do (and photograph!) and only 3 hours flight time from the UK - what is there not to like! We plan to take a holiday in Malta every year going forward and we are even considering retiring in Malta or Gozo at some point in the future. It was so nice to meet with the Gordons! Why do Mr. & Mrs. Ray love their membership at Golden Sands? by Grazielle Camilleri

On a holiday trip to the Mediterranean island of Malta in 2007 Mr. & Mrs. Ray, who were staying at a different hotel, whilst out on a day trip to the Golden Bay area, were invited to be shown around the Radisson Blu Resort & Spa, Golden Sands. Whilst sitting in Pebbles Bar, having a drink overlooking the beautiful sandy beach, they were informed of the benefits of becoming vacation club members. That year they did not think it was right for them. They declined the offer. Without any hard sell at all, they were thanked for their time and they left to continue the rest of their holiday. Mr. Ray explains what happened in the years to follow: “In 2009, we received an e-mail from Azure inviting us on a promotional holiday for £99 for the week for the 2 of us. All we had to commit to in return was to have the presentation about the resort. This seemed too good to be true and not to be missed. We had no intention of becoming members and we knew from our personal experience that we could say no. How wrong were we! We had a wonderful week. From the moment we arrived at Luqa airport with a taxi waiting for us to our last evening in Essence Restaurant, sipping cocktails listening to the waves on the beach. Our room was so comfortable, spacious and a joy to wake up every morning to the superb view. We were becoming more seduced by the resort as each day passed. Our presentation meeting was again relaxed and an offer put to us. We looked at each other, knowing our circumstances had changed from a couple of years ago, and thought

“LET’S GO FOR IT!” Since then Mr. and Mrs. Ray have had a week’s holiday at a 5 star resort to look forward to every year for the next 32 years and they would not be paying any more than the average hotel price. They have also had the added benefit of utilising the exchange system and the last minute ‘Getaways’ through Interval International. A couple of memorable holidays that they enjoyed were a week’s stay in Cyprus in 2010 through Interval for just £150, and their family holiday for 6 adults at Golden Sands, celebrating their 25th Wedding Anniversary in 2011. “In 2011, we decided to upgrade to one of the ultraluxurious Heavenly Collection suites and bring the family along with us to Malta. Had we gone anywhere else, a 5 star resort for 6 adults in 3 separate apartments would cost a fair amount. It therefore made sense for us to put that money towards upgrading our unit. We would then have that luxury for all our stays and not just our anniversary. One Heavenly unit also represented 2 weeks in our current 1 bed apartment, so we would also have more options in the future. Needless to say, our 25th wedding anniversary was fantastic! We had one beautiful week to remember. Our Starlight Suite in the Heavenly Collection on the 9th floor was superb!” From their first introduction in 2007, throughout their membership, Mr & Mrs. Ray can now look forward to come out to Malta each year with their family, escaping the UK weather and travel to several other destinations around the globe through the exchange programme. THE LIFE OF A MALTESE FISHERMAN By Grazielle Camilleri

The life of a fisherman is certainly no walk in the park. Early mornings, hard work, long hours, and bad weather are enough reasons to keep most people away. However, if you speak to Maltese fishermen about fishing for a living, they will tell you a different story. I wanted to learn about their life and how they catch particular fish, so I thought of spending some time with a friendly group of fulltime fishermen from St Julian’s in Malta. It was such a lovely experience! I went to meet them in Spinola Bay, one of my personal favourite bays on the island at 9am on a Sunday morning. This natural sheltered bay is not only a popular place, having several restaurants and bars in the evenings, but is also home to quite a few traditional Maltese fishing boats, the colourful Luzzu’s. These gondola type boats are used by fishermen to capture seasonal fish including the ‘lampuka’, a Mediterranean fish mostly caught between August and December. A luzzu will usually have a mythical eye known as Osiris Eye painted on both sides of the prow, believed to protect the fishermen and their families from evil. I found Jonny and Charlie on one of their boats, cleaning a huge fishing net from the catch that morning. When most of us are asleep in our cosy beds, lazing about, watching TV or simply eating breakfast, fishermen would have already been out at sea for a few hours working in the open sea catching fish for us. Did you ever think about that? They spend hours out at sea hoping that they have a good day. With a smile on their faces and a twinkle in their eyes, they greet me and are eager to share with me their personal satisfaction of that day’s work. They were excited because they had a good catch of fish. Charlie and Jonny are full-time fishermen who come with more than 35 years of experience between them. They certainly know the fish, they have favourite techniques of how best to catch them and they are well-equipped to bring them in and to keep them fresh until they deliver to buyers. They

showed me their living areas, all different types of nets, tools, lines and hooks in different sizes that they use, along with a collection of shrimps, and dried bread used to catch octopus (qarnita). They explained to me that the catch, in Malta, is mainly of a typical Mediterranean artisanal type and therefore not generally species selective but multi-species, with fishermen having to switch from one type of gear to another, several times throughout the year.

Osiris Eye

It is clever how they do it. They have a specific type of thick net for it with floats attached. They gather palm tree leaves and weave them into kannizzati. They cast the net, which sinks down to the bottom of the sea. On the surface, they throw out the palm tree leaves into the water. The lampuki then seek refuge from the sun’s rays by hiding under the leaves. When the fishermen see that there is a good number of fish, they pull up the net by means of a hydraulic winch, thus confining the fish in the landing bag. The time taken for such an operation is less than 10 minutes when professionals do it. This procedure is then repeated several times throughout the day. I left the fishermen that morning feeling all appreciative of their hard work. I thought that by sharing my experience with you, it will raise some awareness about this diminishing profession and the next time you are served fish at a restaurant or at home you will smile and appreciate what a lot of hard work was done for it to have ended up on your plate! What has changed over the years?

“In the past, there were lots more fish, we would use heavier, linen nets. We could go out to fish even five days a week and catch lots of fish! These days, it’s become more difficult to obtain that volume because there are less fish to catch, so now we only go out two or three times.” - Charlie, Maltese fisherman The Swordfish (pixxispad) in the past years was an overexploited species and therefore in an attempt to rectify this abuse, a close season has been instituted by law in March, October and November. This law prohibits fisheries from catching juvenile fish and therefore retains the sustainability of this species. In recent years, a percentage limit of Blue Fin tuna volumes have also been applied to safeguard the extinction of this type of fish. In the past, fishermen used to earn a good buck from this business but nowadays, it is more out of love and passion for fishing, that they still do it.

How do the fishermen catch Lampuki? The thing I was curious to learn most about is the technique they use to catch the dolphin fish (lampuki), the Maltese traditional fish.

employment to around 1,400 people in the primary and secondary sectors including aquaculture.

3. According to the data available as at 2006

there were 905 males and 38 females officially registered as fishers. These comprise both part-time as well as full-time fishers.

4. Just over 4% are female which highlights the

need to undertake initiatives to attract female fishers to the industry.

5. Marsaxlokk is a small, pretty village in the south

coast of Malta and is known to be one of Malta’s main ‘fishing village’.

THINGS TO DO IN MALTA IN WINTER By Grazielle Camilleri

Unlike the majority of European countries, the Maltese Islands in winter are a rather warm affair, with temperatures ranging from around 12 to 13 degrees and peaking in the mid 20’s. The weather in Malta is not only the reason to take a holiday break here in winter. There is so much to do and to see! Whatever it is you choose to do, we all wish you a fantastic time on Malta. This island may be small in size, but I can assure you there are so many things to do, that one week is never enough. That is why apart from falling in love with the Maltese people and their friendliness, visitors from all over the globe would not trade coming to Malta with anywhere else! – And that’s a fact! Here are a few things I can recommend you do, to shake off the winter blues and learn more about the island at the same time:

1 HAGAR QIM TEMPLES Visit Hagar Qim, Malta’s prehistoric freestanding Megalithic temples situated in Qrendi. The new protective tent along with the new visitor’s centre built in the vicinity, offer a new dimension to this experience with an audio-visual introduction and exhibition space displaying numerous related artefacts and interactive exhibits.

8 NATIONAL AQUARIUM Take a trip out to the newly opened National Aquarium in Qawra. This is certainly a fun day out for kids and adults alike. The new aquarium is Malta’s latest national pride and joy, hosting a myriad of beautiful fish species including sharks, puffer-fish, sting rays and so much more. The complex includes two excellent restaurants which serve casual dining. There is also a souvenir shop for those who wish to take home lovely memories of Malta and this colourful aquarium experience.

9 NIGHTLIFE Dance the night away at one of the nightclubs in Paceville. With several new bars and clubs opening their doors year in year out, it is no surprise that the islands are attracting more visitors looking for an escape from winter blues. The Maltese certainly leave no stone unturned where evening entertainment for people of all ages is concerned. In recent years organised themed parties and exclusive shows, including salsa bars offering free dance lessons are the order of the day, so this winter a night out dancing is a must!

NEW IN MALTA

THE MALTA NATIONAL AQUARIUM By Kirsti Newton

Located on Qawra’s coastline, spanning an area of approximately 20,000 square metres, the long awaited Malta National Aquarium is now open, offering an amazing walk-through experience for those interested in what lays beneath the waters, in Malta and across the world. The uniquely designed starfish-shaped dome is home to over 130 different species of fish and water inhabiting creatures. The aquarium has 26 tanks, the largest measures 12 metres and has a water-viewing tunnel, enabling you to pass through and see the sharks swimming above your head. Having been designed with a Maltese history theme, running throughout, you not only learn interesting facts about local fish from the knowledgeable and extremely helpful staff but you can follow the colourful history of the Maltese islands, through its design and replicas of historical artefacts. Look out for the Octopus – Colourful clownfish – boxfish – leopard eel – stingray – turtles and beautiful Seahorses.

You absolutely cannot leave without seeing the boxfish and cow tail fish – yes it has horns and a tail – bizarre! And the deadly but oh so cute looking Puffer fish and quirky looking Foxface rabbit fish, very obviously named, once you see it! The environment is already feeling like home to its inhabitants with not one but two baby Nursehound sharks (Scyliorhinus stellaris) being born from eggs retrieved from dead sharks that have recently hatched. This project, in collaboration with Shark lab Malta is a joint effort to breed sharks. The eggs are displayed and cared for at the Aquarium. The baby sharks will now be monitored and fed until they are strong enough and hopefully released into the wild. A coffee, delicious ice cream or full menu including fish, salads, burgers and pasta greets you in La Nave Bistro upon exiting the aquarium– If the souvenir shop doesn’t lure you first. Floor to ceiling glass allows you to sit below the fish- inspired hanging lights and gaze out over Malta’s spectacular coastline and uninterrupted views of St. Paul’s island. An outside café and underwater themed children’s playground in the piazza is open to all passers by and the dancing water fountains will entertain the little ones, along with weekend animation (weather permitting) for the little ones. MALTESE CHRISTMAS CUSTOMS By Grazielle Camilleri

Christmas is celebrated by millions of people around the globe. It is the time of year for family gatherings, prayer, Christmas carols, and Christmas trees and also time for shopping and exchanging gifts. Despite all these things happening, there still exists today, a few Christmas traditions passed on from generation to generation, customs that are unique to the islands of Malta and Gozo. almost in every Maltese home and each family gives it their personal touch.

3. The Vetches (Gulbiena) 1. Sermon of the Child Christmas still retains a strong religious element for the Maltese. The participation in churches increases around Christmas with a special attendance on Christmas Day. Churches are full for sermon services with the Midnight Mass still retaining its popularity. One of the oldest traditions would be ‘The Sermon of the Child’ (Il-Priedka tat-Tifel). A boy or a girl usually aged between 7 and 10 years old is chosen to replace the celebrating priest in delivering the sermon of the Midnight Mass. This special performance is highly anticipated from all persons present that day. For a few months leading to Christmas Day, the parents, brothers and sisters would have helped the child practise the speech to perfection encouraging them to give it their all. It is a highly prized event for every child who is chosen. This lovely tradition is believed to have started in 1883 in the little village of Luqa where a boy called George Sapiano was the first altar boy to deliver the sermon. After the Midnight Mass, it is also a custom for the local parish priest to offer cooked coffee and date cakes (mqaret) to the members of the community.

2. Children’s Procession In almost every town and village, following the Midnight Mass, a children’s procession is organised by the religious society. What happens during this event is that a statue of baby Jesus is carried shoulder high while children walk behind it through the village streets, carrying lamps and lights along the way singing old traditional songs such as ‘Ninni la Tibkix izjed’ (sleep and cry no more). This heart-warming custom goes way back to 1921 when the Saint Dun George Preca had set up the first procession in the Hamrun village in 1921.

Vetches (gulbiena) are specifically grown in Malta and Gozo in November and December to be used as a Christmas decoration in houses and churches around the islands. It is traditional to sow wheat, grain or even canary seeds, placed on cotton buds in flat pans for about five weeks before Christmas. These are left in dark corners in the house until the seeds produce white and stringy shoots. The Maltese are quite creative with these vetches. I have seen them used in window sills, in the crib next to the statue of baby Jesus or placed along the front facade of the crib.

Depending on the size and structure of the presentation they are usually built with rustic stones known as ‘gagazza’ , very abundant in the Maltese countryside. In recent years, crib enthusiasts have turned to another medium, the paper mache. This makes cribs more solid and lightweight. Wood and paints are also used. Cribs are then decorated with clay statues (Pasturi) representing The Holy Family, The Magi, the shepherds with their flocks of sheep, the baker, the bag pipe player, folk singers, angels, fishermen, drum players and obviously the simple man who is full of wonder and awe (L-Ghageb tal-Presepju) which all the Maltese joke about. The cribs are embellished with all sorts of interesting decorations including the unmistakable growth of vetch (gulbiena) grown in flat pans some five weeks before Christmas.

5. Traditional Maltese Christmas Lunch and Dessert Maltese families and restaurants have a wide range of foods at Christmas and the amounts of food served in one day are enough to feed the family for an entire week! By tradition, the Maltese house-wife keeps the fattest rooster, (hasi) especially for Christmas Lunch. This is roasted at the local bakery in a casserole with fresh potatoes and vegetables. The traditional dessert that is served at Christmas is the Treacle Ring, (Qaghqa tal-Ghasel), and the most traditional ‘coupe de grace’ is the serving of the hot Chestnut and Chocolate beverage, (l-Imbuljuta tal-Qastan). This is made using cocoa, chestnuts, cloves and citrus zest.

4. The Nativity Crib (Il-Presepju) Another one of the sweetest and oldest Maltese traditions is the Nativity Crib (Il-Presepju). The first-ever recorded crib was found in Rabat and was housed by the Dominican Friars in 1607. The idea of crib building originated in Italy where St Francis of Assisi re-enacted the Birth of Christ. From here it spread all over Europe and eventually the World, each country adapting the crib to its own traditions, trades and style of costumes. Although this is not a purely Maltese tradition (because it is also practised by other countries), through the years the Maltese crib has developed its distinctive features. Cribs are found

TIPS FOR HEALTHY EATING IN MALTA IN WINTER

QARABAGHLI MIMLI FIL-FORN – STUFFED MARROWS ‘THE MALTESE WAY’

MALTESE RECIPE

Malta’s seasons produce some glorious fruit and vegetables. With wintertime now upon us, I thought I’d highlight some of the well known as well as the more unusual tasty treats grown in this island’s fertile fields. If visiting Malta for a winter holiday, hearty stews and soups top the menu along with fresh fish and succulent meat dishes. Rustic restaurants in the local towns and villages offer homemade recipes that have been passed down through the generations. Visit the Farmers market at Ta’ Qali for reasonably priced vegetables on a Tuesday and Saturday morning. None of your pre-packaged cellophane wrapped veg here. Fresh from the fields, with soil shaken off, don’t be surprised to see a snail or two- it’s that fresh! Eat Healthy – Maltese fruit and vegetables in season during winter:

CENTINARJA (CHAYOTE IN ENGLISH) A Green, pepper looking, zucchini type of vegetable; the Centinarja (pronounced Chent –in-ara) belongs to the same family as the melon, cucumber and squash, originating from Mexico. Health benefit: High in fibre and rich in amino acids, eating centinarja assists in lowering the blood pressure and is abundant in Vitamin C.

POMEGRANATE Derived from the Latin words ‘Pommum’ meaning apple and ‘orantus’ meaning seeded, the royal pomegranate has grown throughout the Mediterranean region for thousands of years and is as rich in symbolism as it is in antioxidants. Due to its many rich seeds (arilas) the healthy fruit symbolises fertility, prosperity and abundance. Health Benefits: Hailed as a super food, the ruby jewels are high in Vitamin C, potassium and again are a great source of fibre and are said to have more antioxidant power than cranberry juice and green tea. Also fantastic for lowering cholesterol, blood pressure, reducing inflammation and stimulating the immune system. How to prepare pomegranate: Want to deseed a pomegranate in 10 seconds? Easy, score your knife all the way round your pomegranate and gently prise apart over a bowl. Take a wooden spoon and firmly hit the pomegranate halves until all the seeds drop into the bowl. Quick, mess-free and easy! Sprinkle over salads or put in a plastic bag and roll out the juice with a rolling pin, cut away a small corner of the bag and squeeze into a glass!

How to prepare Centinarja: Chop in half and peel the hard skin, removing the seed in the centre. May be eaten raw in salads, with a pear, cucumber texture, boiled as a potato, or stir fried in a little olive oil, salt and garlic – simply delicious!

PUMPKIN Although not an unusual vegetable, the pumpkin can be seen abundantly for most of the year in Malta, not just at Halloween. Lined up on farmer’s walls, with varying shades of orange, ripening in the sun, these reasonably priced vegetables are at the base of many a hearty Maltese dish and feature heavily in winter dishes including soups, stews, risottos and pies. Health Benefits: Rich in Vitamin A and carotenoids, that give them their bright orange colour, both of which are good for your eyes. A good source of fibre and potassium and the allessential Vitamin C. How do prepare pumpkin: Either cut into wedges and roast in the oven or peel and chop into cubes and fry with olive oil, garlic and onions and mash or blend in to a soup with a little stock. I like to add curry spices, lentils and a little coconut milk for a healthy vegetarian curry.

Ingredients: 6 large marrows 4 large onions 2 cloves of minced garlic 500g mince beef and pork or lamb mince 2 Maltese sausages out of skin and mashed Salt and pepper 3 tsp. Parmesan cheese or cheddar 2 eggs Olive oil 1 large can of tomato polpa 2 spoons of chopped parsley 10 chopped potatoes

Method: 1. Choose the rounded marrows. Slice the top off and scoop out the inside and mash it with a fork or potato masher, squeezing out the excess juice and set aside to use later. 2. Brown one diced onion and add the garlic, minced beef and pork and sausage meat.

3. Add the tomato polpa and ground pepper and marrow flesh that you removed from the marrows.

Kale is finally being grown locally in Malta which is great news seeing as it is packed full of lovely goodness. A cabbage like vegetable with large loose curly leaves, this leafy green vegetable has been added to the list of super foods, along with blueberries and spinach.

4. Simmer.

Health Benefits: High in iron, in fact more than in beef, per calorie, Kale is high in fibre, calcium and Vitamin K which helps protect against cancers and is also a great antiinflammatory food and aids in the lowering of cholesterol

6. You can at this point add a sprinkle of semolina over the top or crumbled local goats cheese Ġbejna if you wish.

How to prepare kale: A simple stir-fry or steaming of the kale leaves accompanies any dish. How about Kale chips? Rip the leaves from the hard stem and toss in a little olive oil and sea salt and bake in the oven for 10 minutes until crispy. A quick, easy to make, healthy snack in minutes! All of the above ways of preparing the fresh fruit and vegetables can be done using your in-room kitchen facilities during your stay at Golden Sands in Malta. Here’s a dish one to look out for on the menu, when out and about in Malta and to try when you get home, bringing a little Maltese cuisine to your kitchen

5. Turn off the heat and allow to cool slightly then add the eggs beating quickly, cheese and seasoning.

7. Put the mixture in the marrows, not packing down too tightly or they will dry out. 8. Slice the potatoes and add to a large dish, cover with sliced onions and a little olive oil and salt and pepper and place the marrows on top, finishing with a sprinkle of Parmesan cheese on top. 9. Bake in a preheated oven at a temperature of 200 C for approximately an hour or until potatoes are tender and marrows browned on top.

During this time, Chelsea players John Boyle, Ian Hutchinson and David Webb visited Malta as guests of the club; then unfortunately, the club faded away after a few years, as Chelsea were going through an indifferent phase. A second attempt at organising a Chelsea Supporters Club in 1984 succeeded until 1989.” And Now? “The present Chelsea Supporters Club – Malta was founded in 1997 and is recognised by Chelsea Football Club. Obviously the success that Chelsea have enjoyed since 1997 has helped the club to keep increasing its membership which now boasts over two hundred fully paid members and a data base of over two hundred other Chelsea supporters.”

Located in an enviable position between open countryside and the Golden Sands of Malta’s premier Golden Bay beach, it is easy to see why guests, including celebrities select this five star resort as their home for a week or two, when visiting this idyllic Mediterranean island. Mr.Barry, along with the help of the Malta Football Association, arranged for Petr to meet disabled supporters, Jessica Farrugia, Bradley Zerafa and Liam Saliba, who were ecstatic to meet their idol. Petr spent time talking to them and answering their questions and they left with wonderful memories, signed autographs and photographs with the famous goalkeeper.

CHELSEA SUPPORTERS CLUB MALTA Mr.Barry, who also played against the Czech Republic during his football career, arranged a reception with the Chelsea Supporters Club in Malta, in collaboration with the Radisson resort at Golden Sands, in honour of Petr Cech. On a sunny Sunday, a stream of blue shirts filtered through the hotel down to the meeting point of Essence bar, where a large number of loyal Chelsea supporters assembled, eager to catch a glimpse of their team’s beloved goalkeeper. Petr didn’t

The Club organises an annual tour to London to watch Chelsea play and on most occasions those present get an opportunity to meet some of the Chelsea players and managers whom have included Claudio Ranieri and Jose Mourinho. OLIVE PICKING DAY AT THE RESORT By Grazielle Camilleri

At the Azure resort in Malta, the Radisson Blu Resort & Spa Golden Sands, staff and hotel guests look forward to what has now become an annual activity – The Olive Picking Day. This interactive event is part of the Rezidor Hotel Group Responsible Business Programme.

This year it was held on Tuesday 15th October and was led with enthusiasm by Henri Diacono our Guest Relations Coordinator and Jesmond Vella, Food & Beverage Manager of the hotel. Setting off with forks and sheets and protective sun cream, a group of vigorous residents at the hotel joined Azure staff members, full of zest and curiosity to participate in the activity organised to collect the olives, which were ripe enough for picking. These olive trees are found all around the resort. Some on ladders plucking the sun-warmed fruits one by one, putting them into a cloth bag hung on a branch, then handing them down to be poured into one of the wicker baskets. The rest, picking from lower branches or spreading old tablecloths and dustsheets around the trees, to catch the

CHARITY MARATHON A GREAT SUCCESS By Grazielle Camilleri

It is quite tough to run 5 Kilometres, let alone 51 kilometres! Mr Winston J Zahra, Island Hotels Group CEO recently ran and completed the Nivea running challenge in 5hrs and 54 minutes in aid of the local charity The Ladybird Foundation. In order to prepare for this challenge, Mr Zahra together with 3 other friends trained hard for 4 months, running together in their spare time to build the stamina for this difficult sportive challenge. The training involved running over 1,200 km during the hot summer months. Four other challenging concurrent events took place to raise funds for the same cause. These included swimming, walking, cycling and kayaking. Mr Zahra senior, the Chairman of IHGH also showed his full support by participating and finishing the walking marathon covering a distance of 45km in just under 10 hours.

“Training for the events was obviously tough work and took a lot of time and effort, however it is nothing next to the suffering experienced by the various children being helped by the foundation. It is just a very small way to give something back. We would like to take this opportunity to thank everyone for their ongoing moral support and kind generosity. Thanks to this support we not only managed to complete the events but collectively, across the five teams, managed to collect a sum in excess of € 125,000 which will go a long way to providing much needed holidays for very sick children and their families.” - Winston J. These were sent off for processing into olive oil and the good news is that all the guests who kindly participated in the event will receive a bottle of that delicious olive oil to enjoy!
