La tracciabilità delle produzioni agroalimentari The traceability of agri-food productions
Traceability is a fundamental element of the food safety policies of the European Union, which, some 20 years ago, introduced careful legislation to guarantee wholesome food with Regulation (EC) No 178/2002.
Traceability has two mirror-like processes, the first describes the path that each component of a food or feedstuff takes from field to fork, the second is a backward reconstruction of this journey, which is possible thanks to the information recorded by the various operators during the production, processing, transport and distribution stages. This article describes the event entitled “The traceability of food products: a way to enhance Made-in-Italy products”, held on Tuesday 18 April in Rome and organised by Assosementi.
