Hello Make the most of summer…

Holiday season is here and I can’t wait to get away. But is it just me who can’t bear packing? Despite my carefully crafted ‘essentials’ list, I always seem to find myself cramming piles of clothes into my case at the last minute. I mean, how many pairs of shorts is too many for two weeks? Asking for a friend, of course… If you are lucky enough to be jetting off this year, enjoying a staycation, or a weekend away, our tips on p104 will have you packing like a pro. One of my favourite things to do before going away is choosing my new holiday reads – put me in the sunshine with a good book and I’m happy. Our pick of the best summer page-turners is on p113. If I could, I’d pack them all into my suitcase. But my ultimate favourite thing is to cool down on a hot summer’s day with an ice cream – and with the no-churn, easy recipes we’ve got on p84 you’re bound to impress friends and family. Move along ice-cream van – I’ll have a cherryade sorbet in a cone please… Enjoy the summer!

When I was growing up, we didn’t go abroad until I was much older. We would spend summers in the UK, camping, or at Butlins or Pontins. It was so much fun, following the Redcoats and singing along with the shows. My dad would bring magic tricks with him and perform around the resort – he was always famous by the end of the holiday. I was so embarrassed at the time, although he still takes out magic tricks with him, so not much has changed… It’ll also be mine and Joe’s first wedding anniversary in July. That feels weird saying that, as we’ve been together forever. It’s a challenge to find time for date nights when you have five kids and two dogs, but we’ll figure it out. Maybe I’ll get him to cook up something on the BBQ. Whatever we end up doing, the most important thing will be spending quality time together – I hope you get to do the same. ummer is officially here! I love this time of year: it’s all about spending time with family and making new memories. There’s something about the warmth of the sun, and breathing in fresh air, that feels like medicine for the soul. Our big holiday to Abu Dhabi was in April, so we’ll be enjoying this summer at home. We’re lucky to have had our pool renovated, which the kids (and my husband Joe!) love. Even our dog Teddy loves to swim but isn’t much of a fan of his little life jacket, bless.

Thai-style red curry prawn stir-fry

• 1 tbsp Asda Groundnut Oil • 50g Asda Crisp & Nutty Sugarsnap Peas, large ones halved • 50g Asda Extra Special Asparagus Tips • 50g frozen edamame beans • 3 spring onions, sliced, including greens • 160g Asda Extra Special Raw & Peeled Jumbo King Prawns • 2 tbsp Asda Red Thai Curry Paste • 40g coconut cream block, dissolved in 200ml boiling water • ½ tsp fish sauce • 225g Asda Mild & Delicate Rice Noodles, cooked • 15g coriander, roughly chopped • juice ½ lime plus wedges to serve • red chilli, sliced 1 Heat the groundnut oil in a large frying pan or wok over a high heat. Stir-fry the sugarsnaps, asparagus, edamame and spring onions for 2–3 mins until starting to soften. 2 Stir in the prawns and curry paste. Cook for a further minute until the prawns are just starting to colour. 3 Pour in the coconut cream and fish sauce, and bubble until well combined. Add the noodles using tongs to combine and coat in the sauce. Once warmed through, stir in the coriander and squeeze in the lime juice. 4 Divide between bowls. Serve with a little extra coriander, lime wedges and slices of red chilli. Each 363g portion contains Energy 1,686kJ 403kcal 20%

Aubergine and red pepper crustless quiche We love this egg dish for a summer supper. Go pastry-free for a lighter bite. Serves 4 | Ready in 45 mins your Faff factor | GF | Y of5-a-day

Winner dinner

Cheese adds a lot of flavour to the eggs, so don’t over-season. Any colour pepper can be used too, and other veggies.

• 1 tbsp olive oil • 1 red pepper, seeds removed, cut into 2cm squares • 1 aubergine, trimmed and cubed • 1 red onion, roughly chopped • 8 medium eggs, beaten • 30g basil leaves, roughly chopped • 70g Parmesan, finely grated • 4 tbsp reduced fat crème fraîche • 30g pine nuts • 1 clove garlic crushed • 40g rocket, plus extra to serve 1 Preheat your oven to 180°C/160°C fan/ gas 6. Heat half the olive oil in a large frying pan over a medium-high heat and fry the pepper, aubergine and onion, stirring for 10–15 mins until soft and starting to colour. 2 Meanwhile, line the bottom and sides of a 20cm round cake tin or pie dish with a piece of damp baking paper. In a large bowl, mix together the eggs, half the basil, 40g of the Parmesan, and the crème fraîche. Season generously. Stir in the cooked vegetables then pour the mix into the prepared tin. Bake for 30 mins until just set, but still has a slight wobble. Allow to cool slightly before removing from the tin. 3 While the quiche is cooking, make the pesto. Put the reserved basil, Parmesan, pine nuts, garlic and rocket in a pestle and mortar, and bash together until you have a coarse paste. Drizzle in the reserved oil and 2 tbsp of warm water, until well combined. 4 Serve wedges of the quiche warm or at room temperature, topped with a little extra rocket and a dollop of the pesto. Each 299g portion contains Energy 1,551kJ 371kcal 19%

Mince matters

Switch up the mince if you like by using half pork and half beef. You could also make more patties as they freeze well.

1 Preheat the oven to 200°C/180°C fan/ gas 6. For the burgers, mix together ¾ of the onion, the mince, mustard, 2 tsp BBQ seasoning, and season generously. Divide into 20 even-sized balls and arrange on a lined baking tray, leaving some space around each. Cover with another sheet of baking paper, and squash each one with the back of your hand to create your mini smash patties. Chill in the fridge. 2 Place the bun cubes on a baking tray and drizzle over ½ tbsp rapeseed oil. Toss together until evenly coated, arrange in a single layer and bake in the oven for 5–8 mins until golden and crisp. Set aside. 3 For the sauce, combine all the ingredients, the remaining BBQ seasoning and 2 tbsp warm water together in a small bowl. Stir until you have a smooth, spoonable dressing. 4 Heat the reserved rapeseed oil

in a large non-stick frying pan over a medium-heat and cook the patties for 2–3 mins, placing a square of cheese single on the top of each patty for the last 1 min of cooking. You will have a couple of extra pieces of cheese, so just overlap these. 5 Arrange the shredded lettuce and cherry tomatoes on a serving dish, scatter over the burger bun croutons and arrange the mini squashed burgers on top. Drizzle over the dressing, scatter over the reserved onion along with the gherkin slices, and a few sprigs of dill. Serve immediately.

• 2 tbsp olive oil • 1 large onion, very finely chopped • 2 cloves garlic, crushed • 250g chestnut mushrooms, roughly chopped • 60g porridge oats • 400g tin Asda Green Lentils in Water, drained • 1 tsp mixed dried Italian herbs • 80g vegan Parmesan, finely grated • 2 tbsp nutritional yeast flakes • 3 tbsp tomato purée • 400g chopped tinned tomatoes • 2 tbsp Asda Classic Tomato Ketchup • 300g dried spaghetti • basil leaves, to serve

1 Heat half the oil in a large frying pan over a medium-high heat, and cook half the onion for 5 mins until soft. Add half the garlic and stir in the mushrooms. Increase the heat and cook for another 5 mins until the mushrooms are soft and any excess liquid has evaporated. Set aside to cool. 2 Preheat the oven to 200°C/180°C fan/ gas 6 and line a baking tray. Place the cooled mushroom mix, oats, lentils, half the herbs, Parmesan, nutritional yeast and 1 tbsp of tomato purée into a food processor and season generously. Pulse together until you have a coarse mix. Using wet hands, shape into 12 evenly sized balls, then bake for 20 mins on the prepared tray, turning over halfway. 3 Heat the remaining olive oil in the mushroom pan over a medium heat and fry the reserved onion for 5 mins

until soft, but not coloured. Add the remaining garlic and cook for 1 min. Stir in the remaining tomato purée, chopped tomatoes, ketchup and reserved Italian herbs, bring to the boil, cover and simmer for 10 mins. 4 Cook the pasta according to pack instructions, reserving 100ml of the pasta water. Transfer the pasta to the sauce and pour in the pasta water. Add the veggie balls to the pan and carefully toss everything together to coat. Divide between pasta bowls. Use separate hands for the wet and dry ingredients. 4 Spritz your air fryer basket with oil and heat to 180°C. Carefully place the coated banana into the basket and cook for 8–10 mins until golden, turning once halfway. 5 Make a dip by melting the chocolate in bursts of 30 secs in the microwave until smooth. 1 To make the sauce paste put all the ingredients into a blender and whizz to a thick purée. 2 Meanwhile, heat the oil in a large pan over a medium high heat and brown the onion and chicken all over for 3–4 mins. Once browned, remove from the pan with a slotted spoon. 3 Stir in the curry powder, coriander and cumin and cook for 30 secs, until fragrant. Stir in the sauce paste and coconut milk and scrape up any bits that have stuck to the bottom. Return the chicken and onions to the pan. Bring to the boil, turn down to a simmer, cover and cook for 20 mins, stirring occasionally to stop it sticking to the bottom. 4 Add the sliced banana, cover again and cook for another 10 mins. Season to taste and add the lime juice. Cook the rice according to pack instructions and serve in bowls, topped with the curry, lime zest, wedges and coriander leaves. ow in its 10th year of trading, south London’s iconic craft brewery, Fourpure, has gone from strength to strength since being founded by two brothers, Daniel and Tom Lowe, back in 2013. From operating out of one unit and packing crates by hand, the team has since scaled up production, but craftsmanship, precision and quality remain at the forefront. ‘It’s all about using the very best quality ingredients and getting the most out of them and our equipment,’ explains Fourpure’s technical brewer Andrew Walton, who is responsible for creating Fourpure’s craft beer. For Andrew, a love of craft beer was cemented in 2003 when he attended university in the UK. ‘The beer in the UK was very different to what was available at home in Canada. It was so flavourful and unique. It got me thinking a little differently about beer, and I started home brewing shortly after that.’ Swapping home brew kits for more formal training, Andrew trained to become a brewer at the prestigious Siebel Institute Of Technology in Chicago before moving to the UK to join the Fourpure team in 2016. After a stint at Goose Island brewpub in Shoreditch, he returned to Fourpure, where his UK brewing career began. ‘I fell in love with the first craft beer I tried – it was back at home in Australia,’ Nicole Kingma, Fourpure’s head of off-trade – who works closely with Andrew and also the Asda team – tells us. ‘Quality is central to our offering. Fourpure actually stands for the four pure ingredients that go into beer: water, hops, yeast and malt.’ Today, Fourpure is responsible for producing three delicious beers exclusively for Asda. 30 | ASDA MAGAZINE | JULY/AUGUST 2023

‘We started working with Asda back in 2017,’ explains Nicole. ‘The relationship has since expanded, and we now produce the Asda West Coast IPA, the Asda Hazy Pale and the Asda Velvet Stout exclusively for them.’

Beautiful brews

‘They’re a really nice range of beers,’ says Andrew. ‘The stout is malt-driven and a traditional Englishstyle beer with a Fourpure spin on it. It has lots of complex caramel, toffee, coffee and chocolate notes. The two IPAs are very hop-forward. The West Coast IPA is a traditional style IPA with citrus, floral and tropical and stone fruit flavours, while the Hazy Pale is like a tropical fruit salad with lots of mango and pineapple notes. use oats in the Hazy Pale, which gives it a rich mouthfeel,’ Andrew explains. So how are these tasty brews created? ‘We essentially feed the yeast, the yeast creates the beer and we take all the credit for it!’ explains Andrew, modestly. But anyone who has attempted home brewing will know it’s slightly more complicated than that: beer brewing is a delicate interplay of art and science – something that Andrew, who divides his time between developing new recipes alongside overseeing the smooth production of the beer, knows all about. ‘I like to stay on top of academic research as well as popular ingredients and new techniques. I love to experiment, whether it’s taking an existing recipe and playing around with it by altering the hops or trying something new,’ he says. ‘Coming up with new products and making existing ones taste better is my passion – you can make a great beer, but there’s always something you can tweak to get a little more flavour out of it.’

Craft and create

Andrew also oversees the beer production process meticulously. ‘I get to craft and experiment with the beers but also see them being scaled up and created in our big brew house. At times, we might be creating up to 10 different beers a week.’ At the heart of Fourpure’s operations is their big brew house, a 50-hectolitre GEA Craft-Star. ‘It’s a wonderful piece of equipment,’ says Andrew. You’ll also find over a dozen 160-hectolitre fermenters as well as ‘all sorts of nifty gizmos’, including one that crushes hops in order to amplify the unique flavours in their beer. Creating Asda’s exclusive beers is a process of many steps. At the heart of it is 100% British malt, which Andrew says is ‘some of the best malt in the world’. The malt arrives as kernels, which are crushed to extract the fermentable products – essentially the sugar that reacts with the yeast – before a variety of hops are added at varying stages, depending on the type of beer being created, to add bitterness and accentuate flavour. During the brewing process, the point at which the hops are added plays a central part in defining the unique profile of the beer. ‘The Asda Hazy Pale doesn’t have a hop addition at the start of the boil – the hops are added in the whirlpool, which is the second stage after boiling,’ explains Andrew. ‘The liquid isn’t actively boiling in the whirlpool, so fewer bitter notes are extracted from the hops, and more aromatic flavours can be released.’ The liquid is then cooled down before brewer’s yeast is added for the fermentation stage. ‘People are always amazed by how long the beer brewing process takes,’ says Nicole. ‘It’s not overnight – it can take 30 to 40 days to create a can of beer from start to finish. It’s definitely a labour of love. Being able to build and create new products alongside the brewers and the rest of the team is one of my favourite things. There’s nothing like creating something from scratch and seeing the finished, packaged product. It makes me so happy!’

Serves 6 | Ready in 1 hr 30 mins, plus resting time your Faff factor | EF | X of5-a-day • 1 can Asda West Coast IPA • 1.7kg Asda Succulent Large Chicken • ½ lime, juice only • 1–2 tbsp Asda Chipotle Paste • 1 tbsp runny honey • 1 large onion, cut into thick wedges • ½ fresh pineapple, cored and cut into wedges (about 200g) • 200ml chicken stock, made from 1 stock cube • green salad, to serve 32 | ASDA MAGAZINE | JULY/AUGUST 2023

1 Arrange oven racks as low as they can go or take out entirely. Preheat the oven to 200°C/180°C fan/gas 6. 2 Clean the unopened can of beer. Open and pour about one third into a large roasting tin. 3 Stand the can in the centre of the roasting tin and sit the chicken upright over the can, so that the legs are pointing downwards. It should fit snugly. 4 In a small bowl stir together the lime juice, chipotle paste and honey and season well. Rub all over the chicken. 5 Add the wedges of onion and pieces of pineapple to the tin around the

chicken and pour in the chicken stock. 6 Carefully put the tin into the oven and cook for 1 hr 10 mins–1 hr 20 mins or until the juices run clear when prodded and no visible pinkness remains. Baste with pan juices after 45 mins, turning the pineapple if beginning to burn. 7 Take out of the oven and loosely tent with foil. Rest for 15 mins. 8 After the chicken has rested, remove it from the can of beer. You can lay it down in the roasting tin and pull the can out with a kitchen towel – it will be hot. 9 Carve the chicken and arrange on a serving platter. Add the pineapple from the roasting tin and drizzle over some of the beer pan juices before serving. To cook on the barbecue: Try cooking this on the barbecue if there is enough height in the lid to accommodate the standing chicken. Wait for the coals to cool slightly or set gas barbecue to medium heat and cook for 1 hr 15 mins–1 hr 45 mins, basting every 30 mins with the reserved beer instead of pouring it into the roasting tin. Grill the pineapple and onions as well. Each 294g portion contains

grill over a medium heat for 3–4 mins until charred and starting to soften. Turn them over and brush with more maple syrup, then cook for 2 mins more. Turn again, brush with the syrup and cook for another 2–3 mins. 3 Mix the crème fraîche with the lime juice, zest and half the mint. 4 Serve the peaches topped with a dollop of the crème fraîche mix. Scatter the remaining mint and chopped pecans on top. Drizzle with any remaining maple mixture and finish with sprinkling of cinnamon if using.

To cook indoors: Cook the peaches in a large non-stick pan or on a pre-heated griddle pan, over a medium heat for 4–5 mins until lightly charred and starting to soften. Turn the peaches over and brush with more of the maple mixture as the bottoms cook, repeating after 2 mins. Cook for a further 3–4 mins.

Spicy strawberry gin

A grown-up mix that balances sweetness with a peppery kick. Serves 6 Ready in 20 mins Faff factor V

• 25g caster sugar • 1 tsp pink peppercorns, ground • 350g strawberries, trimmed • 500ml pink tonic • 200ml Asda London Dry Gin 1 Mix the sugar and ground peppercorns together in a bowl that is wider than the top of your serving glasses. 2 In another, similar-sized bowl, add cold water that is about 5mm deep. Dip the rim of each glass first in the

water then in the peppercorn mix, before putting to one side until ready to use. 3 Set 6 strawberries aside for garnish and then place the remaining ones in a blender along with 200ml of the tonic and blend until smooth. 4 Pour through a sieve into a jug/ pitcher, pressing down until all the liquid is through but the seeds remain. Discard the seeds. 5 Add the gin and stir well before pouring into a jug filled with ice and topping up with the tonic. Dip the strawberries into the remaining peppercorn mix, then serve on the side.

Corsican-inspired chicken stew

Destination: Corsica Meet Sally, her husband Joe, and their family Sally says: ‘We go camping in Calvi, Corsica, every year. It’s a special place for all of us as we have made so many memories there over the years – I’ve been going there to the same spot since I was two years old. The weather is beautiful, as are the surroundings, whether it’s relaxing on the beach, swimming in the sea or climbing in the mountains. ‘Our favourite restaurant is Restaurant La Voute in Sant’Antonino. The views are incredible and it’s the best place to watch the sunset. The plates of charcuterie and goats’ cheese salads are delicious. Slowcooked meat dishes are always a winner, too. ‘Inspired by the fresh local produce and cuisine, this is one of our favourite dishes to cook on holiday. Because we camp, we usually make hearty one-pot dishes on our camping stove that are easy to make but still really tasty and filling. ‘Our holidays are always full of fun and laughter, so we love to have people round when we are home to recreate that holiday feeling. If the weather allows it, we try to eat in the garden with a glass or two of rosé, which makes us feel like we are back on holiday.’

• 1 tbsp olive oil • 300g chicken thighs (skinless and boneless) • 2 onions, diced • 1 red pepper, sliced • 2 cloves garlic, crushed • 450g chicken stock • 4 sundried tomatoes, drained and chopped (35g) • 3 (25g) sweet piquanté peppers in brine (Peppadew), drained and sliced • ¼ tsp dried mixed herbs • 1½ tsp cornflour To serve • 10g each fresh thyme and basil leaves 1 Put a cast iron casserole pot or saucepan over a medium heat and add 1 tbsp olive oil and the chicken thighs. Brown the chicken on all sides. This should take around 6–7 mins. Transfer to a plate or bowl and set aside. 2 Add the onions and pepper and cook in the same pan for another 6–7 mins until softened and starting to colour. Add the garlic and cook for a further minute. Cut the chicken thighs in half and return to the pan. Pour over the chicken stock, stir in the sundried tomatoes and sliced piquanté peppers and mixed herbs. 3 Bring to boil then reduce the heat to simmer. Put the lid on and cook gently for 40 mins, stirring occasionally. 4 Thicken by putting the cornflour in a small container and mix with 2–3 tsp cold water to make a paste. Pour this into the stew and quickly stir in. Increase the heat and cook for another 3–4 mins or until thickened. 5 Serve with fresh thyme and basil, mixed, and scattered over the top, and with rice on the side, if you like.

Destination: Croatia Meet Alena and partner Harry Alena says: ‘We went on holiday to Krk, the most northern island of Croatia. There was a whole gang of us – my parents, my sister and her family, my aunt and uncle, my cousin and her husband and daughter. We spent most of our time by the beach, on a boat or in the pool. You can also mountain bike, hike, swim and enjoy the local cuisine. ‘We had this dish at a little restaurant in a harbour close to our house. It was a special night, as the grandparents offered to babysit to give us younger couples the chance to get some dinner and drinks on our own. My sister, my cousin and I were very close growing up, so it was lovely to be able to enjoy this holiday together. ‘Whenever we go to Croatia, getting a fish platter is a must. The fresh seafood is delicious and the slight spiciness of ajvar adds something tangy yet fresh to a meal that does not have many side dishes. ‘When trying to create a Croatian seaside ambiance at home, sitting outside around a big table with lots of friends laughing, eating and drinking should set the scene. On our trip we often enjoyed wine with our meals – Croatia has some lovely red wines. And slivovitz – a plum brandy that’s very popular in the Balkan area – after dinner helps everything settle.’ 60 | ASDA MAGAZINE | JULY/AUGUST 2023

For the ajvar • 2 red peppers • 1 aubergine • 1 tbsp vegetable oil • 1 tsp olive oil • ¼ tsp chilli flakes • 3 cloves garlic, finely sliced • 1 tsp white wine vinegar For the platter Use all or just some of these fish, or substitute for whichever fish or seafood you like. • 500g Asda Flavoursome Half Salmon Side • 1 tbsp olive oil, plus extra for greasing • 300g Asda Crisp Lightly Dusted Basa Fillets • 300g Asda Extra Special Raw & Whole Jumbo King Prawns, defrosted • 180g Asda Tender Sea Bream Fillets • 245g sardines • 3 cloves garlic, crushed • 1 lemon, zest and juice • 10g flat leaf parsley, finely chopped To serve • 1 lemon, cut into wedges 1 Start by making the ajvar. Char the skins of the peppers and the aubergines over the hob flame for 10 mins, or on a barbecue. Cook until the skins are well charred then put in a colander set over a bowl. Let them cool and start to drain. 2 Once cold enough to handle, peel the charred skin away, remove the stems and deseed before finely chopping the flesh. Tip into a pan and add the vegetable oil. Cook, covered but stirring occasionally over a medium-low heat for 1 hr. The veg will break down and the smoky aroma intensifies. After an hour add the olive oil, chilli, garlic and vinegar and cook for a further 5 mins. Season to taste. Take off the heat and leave to cool. You can make this a day

ahead and leave in the fridge. 3 Preheat the oven to 200°C/180°C fan/ gas 6. Put the salmon into a lightly oiled foil parcel, place on a baking tray and bake for 35 mins. Add the dusted basa fillets to the oven on a separate tray for the final 18 mins of cooking. Next, remove the heads from the prawns. Cook the prawns and sea bream and sardines according to pack instructions. 4 Once all the fish are cooked, transfer to a large platter. Put the olive oil in a frying pan – you can use the one already used for fish – and add the garlic. Sizzle for 1 min then pour over the fish platter. 5 Scatter with the lemon zest, pour over the lemon juice and then sprinkle with chopped parsley. Serve with lemon wedges and the avjar on the side. Serving suggestions: Serve with bread, boiled or steamed potatoes as this is a beautifully rich dish.

Pizza with tomato sauce, courgettes and prosciutto

Destination: Italy Meet Rebecca and her friend Gasson Rebecca says: ‘I absolutely love Italy. My first visit was in 2014. I was living in Sydney at the time and, on a trip back home to the UK, I went to stay with my friend Gasson who had just moved to northern Italy, right up in the mountains. ‘When we’re together, one of our favourite things to do is to go out to eat. On the trip we came across a little trattoria in her neighbourhood in Lovere. We found red and white checked tablecloths, breadsticks on tap and the most delicious pizza you can eat for less than a tenner. They were epic – our two pizzas took up the whole table, and were thin, loaded with the best local produce and made with love. ‘I have tried to recreate my pizza at home, and this is the closest I’ve got, which I’m pretty impressed with to be honest! You could leave the prosciutto off if you want to keep it simple or if you’re veggie, but I love the salty flavour that, to me, is synonymous with my trips to Italy. ‘Gasson and I have explored so many more trattorias together since 2014, but that one in the mountains will always have a special place in our hearts.’

For the pizza dough • 250g ‘00’ flour or strong bread flour, plus extra for dusting • 7g sachet easy bake yeast • 175ml warm water • ½ tbsp fine cornmeal For the pizza sauce • 400g tin Asda Italian Peeled Plum Tomatoes • 5g basil leaves, plus extra to serve • ½ tsp extra virgin olive oil For the topping • 1 courgette • ½ tsp olive oil • ½ x 125g ball Asda Extra Special Mozzarella di Bufala Campana • 3 slices prosciutto (40g) 1 First, make the dough. Put the flour in a large mixing bowl and add a pinch of salt. Tip the yeast sachet into 175ml warm water and leave for a few minutes to become frothy. Then pour into the flour. Mix well with your hands then knead for 5 mins until the stickiness is reduced. Cover and let prove for 2.5 hrs, it should triple in size. 2 Meanwhile make the tomato sauce. Tip the plum tomatoes into a bowl. Squish the tomatoes to a coarse pulp with your hands. You want to break the tomatoes up but not create a purée. Stir in the basil, olive oil and seasoning. Set aside in the fridge until needed. 3 Cut the courgette into long ribbons, approx. 5mm thick. Brush with the oil and griddle over a high heat for 3–5 mins, turning halfway or until deep char lines appear. Set aside on a plate until needed. 4 Once the dough has risen, preheat the oven to 240°C/220°C fan/gas 9.

Tip the dough out onto a floured work surface. Shape into 2 balls. Roll or press out to the size of your largest frying pan. Put the frying pan on the hob over a medium-high heat and sprinkle the pan and the tops of the pizza bases with cornmeal. When the pan is hot and the cornmeal starts to smell a little toasted, lay the pizza base on top. Cook on one side for 3–4 mins or until the dough is puffing up, toasted on the base and the top is looking dry. Transfer to a board or plate. Repeat with the other base. 5 When both the bases are cooked spread each one with ¼ of the tomato sauce. Save the rest of the sauce for another recipe. Dot the top with chunks of mozzarella and bake in the preheated oven, directly onto the bars for about 10 mins or until the cheese is melted and the base is golden and bubbled up in more places. 6 To finish add the courgette ribbons and prosciutto. Garnish with more basil and a drizzle of olive oil. Serve with a tomato salad and a drizzle of olive oil if liked. Destination: Whitstable Meet Sam and his partner Siobhan Sam says: ‘During a brief summer lull in Covid lockdown restrictions we took a train to Whitstable. We stayed in a little cabin next to a field of cows, wandered around the dinky streets and swam in the lovely cold sea. We had dinner in the Crab and Winkle, a small restaurant above the fish market. As we went in, a teenage girl took our temperature with what looked like a yellow laser blaster and pronounced us safe to dine. ‘I wanted to order half a dozen Whitstable Bay oysters, but feared Siobhan would be horrified by the sight of me greedily devouring them (she’s not an oyster fan) so I decided moules frites would be an acceptable mollusc-based compromise. They were served in a big pan, swimming in a herby dry white wine broth with a bowl for discarding shells and thin, skin-on crispy fries on the side. Heaven. This is the perfect, slightly messy, conversation food. ‘Cooking mussels, or any shellfish, at home can be intimidating, so I fully endorse any form of pre-packaged ‘cheating’ but you must have a nice dry white wine or a decent cold beer. Ideally you should be thoroughly tired out from paddling. Candles in wine bottles on the table and abundant napkins are a must as well.’ 64 | ASDA MAGAZINE | JULY/AUGUST 2023

1 Start by making the chips. Soak the chipped potatoes in a bowl of cold water for 10 mins. 2 Heat oven to 220°C/200°C fan/gas 7. Line a large baking sheet. Drain the fries then pat dry with kitchen paper. Add 1 tbsp sunflower oil, the paprika and seasoning. Mix well to coat then tip out in a single layer onto your prepared tray. Bake for 20–25 mins, turning halfway through, until golden and crisp. 3 When the fries are almost ready put a large saucepan on the hob over medium heat and add 2 tsp olive oil and the shallots and carrot. Cook for 5 mins or until softened. Add the white wine and simmer until reduced by a third. 4 Meanwhile cook both sachets of mussels in the microwave according to pack instructions. Tip the cooked mussels and their cooking liquid into the white wine sauce and stir to coat then straight away tip into your serving dish. 5 Scatter with the herbs and serve immediately with the skinny fries. Destination: Spain Meet Lauren and Lee Lauren says: ‘We went to Seville in November 2022 to celebrate our 10th wedding anniversary. We had never been before and it was a beautiful city. We walked everywhere and loved the Moorish architecture, tiles and cobbled streets. It seemed so relaxed, but there was plenty going on and the bars and restaurants had a great atmosphere. ‘We researched dishes we should try and this was one of them. We saw it on a menu at this busy, old-fashioned, standing-room-only tapas bar near the cathedral. The thinly sliced, light and crisp aubergine drizzled with loads of sticky honey sounds unusual but the savoury/sweet combo tasted amazing and it was a perfect beer snack. It’s just about good ingredients tasting delicious – we really loved that. ‘At home, I’d enjoy this in the garden, fairy lights everywhere and plenty of Spanish cheese and meat platters too. And glasses of tinto de verano – red wine and lemonade with plenty of ice. So refreshing and simple.’

Aubergine and honey tapas

Crisp slivers of veg with a sweet, sticky drizzle – a match made in heaven. Serves 4–6 | Ready in 40 mins, plus 45 mins soaking time Faff factor | V EF • 1 aubergine, halved and finely sliced into 5mm slices • 250ml milk • 75g plain flour • 250ml olive oil • ½ tsp flaky salt • 1 tbsp honey • 2 sprigs rosemary To serve • crusty bread 1 Put the aubergine slices in a shallow dish and pour over the milk. Leave for 45 mins then drain. Pat away some of the excess liquid with kitchen towel. 2 Tip the flour onto a plate, season and dip in the aubergine slices to coat on both sides, one by one, putting them on a clean plate as you go. Once all the

slices are coated heat the oil in a large, high-sided saute pan. When the oil reaches 160°C start frying the aubergine. Do this in small batches, cooking them for 3–5 mins or until crisp and starting to turn golden. Use tongs or a slotted spoon to place the fried aubergine on a tray lined with kitchen paper to absorb any excess oil. 3 When all of the aubergine is cooked, divide between 2 plates and season. Drizzle over honey and garnish with rosemary sprigs, crisped up in the aubergine pan. 4 Serve with crusty bread on the side. Cook’s tip: Using olive oil does add to the flavour of this but you don’t have to use the most expensive extra virgin oil. Serving suggestion: Enjoy with cured meats and cheeses. Spicy panzanella bread salad

Strawberry and Prosecco layer cake

We’ve added a splash of something special to this showstopping bake… Serves 12 | Ready in 50 mins, plus macerating/chilling time Faff factor | V G For the Prosecco strawberries • 600g strawberries, halved • 100ml Prosecco • 30g caster sugar For the cake • 300g unsalted butter, softened • 300g caster sugar • 6 eggs • 300g self-raising flour • 2 tbsp semi-skimmed milk For the frosting • 200g low fat cream cheese • ½ lemon, zested • 4 tbsp icing sugar • 500g thick Greek yoghurt

1 Heat the oven to 180°C/160°C fan/ gas 4. Line and grease 3 x 20cm loosebottomed round sandwich cake tins. 2 For the strawberries, put all halves in a bowl with the Prosecco and sugar and leave to macerate at room temperature for around 2 hrs. 3 In a freestanding mixer beat together the softened butter and caster sugar on a medium-high speed for 7–10 mins or until light and fluffy. Add the eggs one at a time, beating after each addition. Add the flour and milk and beat briefly until just incorporated. 4 Divide the batter between the 3 tins and bake in the centre of the oven for 25 mins. Once cooked leave to cool for 10 mins in the tin then turn out and leave to cool completely on a wire rack.

5 Meanwhile, make the frosting. With a wooden spoon beat together the cream cheese, lemon zest and icing sugar. Very gently fold through the yoghurt, then chill for at least 3 hrs. 6 Drain the macerated strawberries, reserving the liquid, then blitz one third with 2 tbsp of the reserved Prosecco to a purée. Divide the frosting and remaining strawberries between the sponge layers, finishing with a topping of frosting, then strawberries and a drizzle of purée. Blitz the jam with the raspberries until smooth. Take 2 tbsp of the mixture and sieve it into a small bowl. Set aside for the icing later. 3 In a bowl, whisk the sugar and melted butter for a few mins. Tip in the yoghurt and lemon zest. Whisk again until combined. Whisk in the eggs, one at a time. Pink lemonade candy fudge

These retro lemon and raspberry bites are almost too good to eat – almost! Makes 36 | Ready in 30 mins, plus cooling Faff factor | V GF EF • 397g tin Asda Condensed Milk • 150ml semi-skimmed milk • 450g caster sugar • 115g unsalted butter, plus extra for greasing • 1 lemon, zest only • 1 tsp lemon extract • 1 tbsp seedless raspberry jam • few drops pink food gel • 3 tbsp Asda Pink & White Mega Mix sprinkles or sprinkles of your choice

1 Grease and line a 20cm square baking tin with butter and baking paper. 2 Add the condensed milk, semiskimmed milk, sugar and butter to a large, heavy-based pan. Bring to the boil, then reduce to a simmer and cook for 15–20 mins, stirring continually, until the mix reaches 115°C on a sugar thermometer, or forms a soft ball when dropped into a glass of cold water. 3 Remove from the heat and very carefully pour half the mixture into a large, heatproof bowl. Set aside both the mixture in the pan and in the bowl to cool for 5 mins. 4 Add the lemon zest and extract to 1 batch and beat for 5 mins until the mixture is very thick. Set aside. 5 Add the raspberry jam and enough food gel to create a vibrant pink colour

to the second batch and beat for 5 mins until thick. 6 Carefully pour the fudges into the prepared tin, alternating the flavours, until you have a marbled effect. Top with the sprinkles. Cool fully to set. 7 Cut the set fudge into 36 squares and store in an airtight container for up to 1 month. Sweet and sticky, these nostalgic bites are dotted with jammy goodness. Serves 16 | Ready in 1 hr 5 mins, plus cooling Faff factor | V • 465g pack The Bakery at Asda Jam Roly Poly • 150g unsalted butter, plus extra for greasing • 150g white chocolate, cut into chunks • 250g soft light brown sugar • 3 medium eggs, lightly beaten • 2 tsp vanilla extract • 170g plain flour • ½ tsp baking powder • 100g Asda Frozen Raspberries 1 Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 20x24x5cm baking tin. 2 Cook the jam roly poly for 30 mins in the preheated oven. Leave to cool and cut into approx. 1cm thick slices.

3 While the roly poly is cooling, melt the butter and 100g white chocolate in a heatproof bowl set over a pan of simmering water. Once melted, remove from the heat and whisk in the sugar, eggs, vanilla, flour and baking powder. 4 Pour into the prepared tin, top with slices of roly poly and poke in the raspberries and remaining white chocolate. 5 Bake for 30–35 mins until lightly golden, set on top, but still gooey in the middle. Nush, this is going to be easy. I can tell you many recipes that will be simple and tasty and a real pleasure for you to cook and eat. A pea risotto is beautiful, or salmon in a herb crust, and aubergine is fantastic, baked with spices. All are perfect for one person. But today, I go with one of my favourite fish – sea bass. It’s so delicate and you will have an unbelievable meal very quickly. Here I cook it with lemon and capers for a little sharpness and saltiness. You want to pan fry your sea bass fillet, so first you need to dry it on kitchen paper – this will make sure the skin gets nice and crispy. Then, coat both sides with flour seasoned with ½ tsp salt and ½ tsp pepper. Gently tap the fish – we don’t want too much flour. Pour 1 tbsp olive oil into a frying pan, over a medium heat, and add a knob of butter. Once the butter has melted, put the fish into the pan skin-side down, pressing it down with a spatula so it doesn’t curl up. Fry for 3 mins. Turn the fillet over carefully using your spatula and fry for 1 min more until cooked through. Be gentle with the fish, you don’t want it to break up or to overcook it. Remove the fillet and keep warm on a plate covered with foil. Now the sauce. Add the juice of 2 lemons, 1 tbsp capers and 3 tbsp white wine to the same pan. With a wooden spoon, scrape up all the brown bits from the bottom of the pan and stir into the sauce – they taste amazing. Bring to the boil and stir for 1 min. Add 1 tbsp chopped fresh parsley, a little more butter and stir for 1 min more to make it nice and creamy. The flavours are insane! Now, serve your crispy fillet with the sauce drizzled over. Add new potatoes, maybe roast asparagus or some broccoli. This fish, it’s cooked to perfection – I hope you love it, Nush. Ciao!

Coffee and cream, laced and layered with chocolate – heaven in a bowl. Serves 4–6 (1 litre/12 small scoops) Ready in 20 mins, plus freezing time Faff factor V

• 1 tbsp ground coffee, heaped • 50g dark chocolate, chopped into small chunks, plus extra for serving • ½ x 397g tin condensed milk • 300ml pot double cream • 1 tbsp coffee liqueur, plus extra to serve (optional) 1 Place the coffee in a small cafetière (or jug) and stir in 80ml of just-boiled water. Let brew for 5 mins and then strain through the filter (or a very fine sieve). Set aside to cool. 2 Melt the chocolate in a heatproof bowl set over a pan of barely simmering water, or in 20-sec bursts in the microwave. Whisk with electric beaters on medium speed until thickened and stiff peaks form (about 3–4 mins); take care not to overwhip. Beat in the coffee liqueur, if using. 4 Drizzle a little chocolate haphazardly over the base of a deep freezer-proof container – about 1 litre in volume; you can use a 2lb (900ml) loaf tin. Evenly spread about ¼ of the ice cream on top. Repeat this layering up the chocolate and ice cream, finishing with a final layer of chocolate. Freeze according to instructions on p90. 5 Serve in scoops in martini glasses or bowls. With a peeler, create shavings from the extra chocolate and add to the ice cream, along with a splash liqueur. Set aside to cool. 2 Add the condensed milk, cream, malted milk and cocoa powders to

This nod to a favourite dessert is a sweet yet tart ice that celebrates British summer’s most prized berry. 1 Put the strawberries into a saucepan along with the honey and lemon juice. Simmer for 5–7 mins, until you have a thick, jammy compote. Strain through a sieve and reserve about ½ the syrup; keep chilled. 2 Mix the soft strawberries back into the remaining syrup and roughly crush with the back of a spoon, leaving some fruit whole. Set aside to cool. 3 Add the condensed milk, cream and buttermilk to a large bowl. Whisk with electric beaters on medium speed until thickened and stiff peaks

Pistachio and caramelised croissant gelato-style ice Enjoy the chewier richness of Italian ice cream with buttery caramelised croissants. A magical combo of textures and flavours with holiday vibes.

• 150g pack Asda Pistachios, shelled • 1 Asda Extra Special All Butter Croissant (about 55g), cut 1cm pieces • 160g icing sugar • 1 tsp extra-strong green food colour gel • 200g pack Asda Light 50% Less Fat Original Soft Cheese • 300ml pot double cream 1 Preheat the oven to 200°C/180°C fan/ gas 6. Spread the pistachios on a lined baking tray and bake for 3–4 mins, until lightly toasted. Place in between sheets of kitchen paper and rub gently to remove any excess skin. 2 Place 100g of the still-warm nuts in the small bowl of a food processor and whizz, scraping down the sides occasionally, until you have a smooth, pourable paste. 3 Meanwhile, mix the croissant pieces in a small bowl with 15g icing sugar and spread over a lined baking tray. How to store your ice creams

• Cover the surface with a small sheet of wax paper or baking paper and then secure the lid of your container or wrap tightly in clingfilm. • Freeze for at least 4 hrs, or preferably overnight, until frozen solid. T

hink about “strength training” – what image does it conjure up? A red-faced gym-goer with chalk on their hands, grunting their way through their workout, perhaps. However, the reality is you probably used your strength today in some way. ‘Strength is a crucial factor in every part of our daily movement, from bending down to pick up the laundry or carrying the food shopping to being able to stand on one leg,’ says Alice Liveing, a personal trainer and bestselling author (@givemestrengthapp). A former professional dancer, Alice transformed her training after her dance teacher told her she needed to become stronger. ‘She told me I was really lacking strength and, in particular, core strength. I was heartbroken but it lit a fire in my belly. Rather than sit and dwell on it, it was my incentive to get to the gym. From my first session, I just took to it.’

Building muscle

But what do we really mean when we refer to strength training? ‘It is any exercise that makes demands on your muscles, stimulating them to become stronger. It doesn’t have to involve lifting weights; using your body weight is also very effective,’ explains Alice. ‘Strength training often feels slower and less sweaty than a cardio workout but is very good for you, nonetheless. A strength session doesn’t always leave you drenched and shattered (although it can) and is a fantastic way to exercise,’ she adds. So instead of endlessly running laps around the park, hammering the stairmaster or taking cardio-packed classes every week, think about adding some strength-based variety such as lifting weights or doing a class that involves bodyweight exercises like press-ups, lunges and squats, two or three times a week. ‘As these sorts of exercises become easier you can increase the weight or the number of reps you do as you build up your strength,’ Alice suggests. 2

Building your muscle power is no longer reserved for athletes and bodybuilders – people, young and old, can all take part, and almost every aspect of your life will benefit.

Why we should learn to lift like a pro

For those of us without stern dance teachers, the health benefits of developing your ability to push, pull and lift should be more than enough of an incentive to explore resistance exercise; recent data published in the British Journal of Sports Medicine1 found that just 30 minutes to an hour of weekly strength training can extend your life, lowering the risk of early death from cancer, diabetes and cardiovascular disease by up to 17%. Building strength also improves bone density. A study published in the Journal of Bone and Mineral Research2 found that half an hour of highintensity resistance training improved bone density in postmenopausal women with low bone mass, without any negative side effects.

Walking lunges Long, low strides, with your front knee bent. A great exercise to do in the garden in good weather.

Push ups* Keeping the body straight, lower your chest to the floor and back up again. Drop to your knees and push up from there if this is too much.

Overhead press Raise your arms into the air above the head and then bring them down again. You could consider using a heavy ball or similar as a weight to help.

Tricep dips Get into the position as above, then raise yourself up and gently lower yourself to get those triceps working.

Dead bugs Build your core strength – lie on your back and reach the opposite arm to the opposite knee. Control is key with all these moves, so keep engaged.

Get into the zone

Despite the obvious advantages, many of us choose to avoid strength training. For example – a study published in the International Journal of Exercise Science3 found college-age women were less likely to approach the weight-training area of a gym and were more inclined to try cardio-style workouts instead.

‘Strength training has such tangible moments of progression’ Alice has convinced many of her personal training clients to overcome their fears. ‘I’ve been a trainer for 10 years and I still have women come to me and say they’re worried they will become too bulky, too muscular, even though we’ve come so far when it comes to strength training.’ Many of these fears are based on a misconception about how easy it is to add muscle. ‘You don’t lift a set of dumbbells and become musclebound overnight,

it’s just not possible. Our fear of being bulky stops us from enjoying all the massively beneficial things that strength training can do for people,’ says Alice. ‘I reassure all my clients that they’re not going to suddenly wake up with bulging biceps!’ she adds, laughing.

Strong body, strong mind

It’s impossible to do justice to the benefits of weight training without mentioning the psychological boost you will get that comes from knowing you are getting stronger. Alice, who can lift 110kg (and weighs 58kg), perfectly encapsulates the energising power of developing your strength. ‘It makes me feel so empowered. Walking into the gym and being able to do a pull-up – people look up and think “Wow, she’s quite strong”.’ She says it’s the clear, measurable achievements that make strength training so addictive. ‘You can go into the gym on week one and squat 30kg, and by week 12 you’re squatting 50kg – they’re such tangible moments of progression. When I’ve been going through a particularly stressful time, the sense of accomplishment I get helps me get through stress and anxiety,’ Alice shares. ommunity Champion Ryan Rooney shares a cuppa with Stacey Keay, manager of G20 Works Youth Club. This Glasgow-based project is on a mission to show support for those at a significant crossroads, helping young people transition to a positive destination by providing activities and school programmes for under-16s. It’s part of the G20 Youth Project, which provides a programme of mentored work strands and a wider support for those aged 16+, their families and the wider community. It feels like we’ve known each other for ages – much longer than since I received that first Facebook message from you in October last year. Ryan: Yes, it was a meeting of minds straight away. The thing is, it’s not so long since I was attending youth projects myself, so I’ve seen first-hand how support from an organisation like G20 can change the path of someone’s life. S: Well, this is your community too. You relate to our trauma-informed approach, which means understanding that challenging behaviour stems from many factors in young people’s lives. Families around here are doing their best, but there’s a lot of deprivation, violence, crime, unemployment, drug use and mental health issues and so on – many young people are struggling. I immediately felt that you had a good understanding of that. R: Yes, I grew up here and know the difficulties people are facing. And I already know some of the kids – and if not them, their older brother or sister. That’s how it is around here. S: What’s the difference between the G20 Youth Festival and other youth organisations you’ve encountered? R: I immediately noticed that G20 is inclusive and welcoming. It doesn’t matter if it’s your first day, or your 100th day, you’ll be treated in just the same friendly, welcoming way. And there’s a real buzz – there’s always good banter in this place. S That’s lovely to hear – we’ve got a really great team. Do you remember your first session? The fruit workshop?

R: Yes, I’d allocated some of my monthly budget to bring in fresh fruit – to get kids to try healthy new things, and turned it into a kind of workshop. S: That’s the great thing about you, Ryan. You don’t just turn up, drop off a donation and leave. You stay around and get involved. And you fitted right in straight away. R: Well, giving away free stuff tends to make you popular… S: True! But no, even after that first session the young people were asking when ‘the Asda guy’ was coming back.

S: The food contributions have been such a help. Until recently, we had an allotment and supplemented food with our own fresh produce. But funding cuts mean we’re not able to continue with that right now. Having an extra pair of hands has been really valuable, so you’ve been a godsend, really.

S: Since then, you’ve helped out at quite a few Thursday evening sessions. I guess you must like it here…

R: I hope so. We’re able to provide all the food for the 45 or so young people who turn up – I have to stretch my budget, but we always make sure there’s enough food for everyone. And I’m happy to help in any way I can. Now summer’s here, I’m looking forward to helping out with all your outdoor activities – that’ll be fun.

R: Yeah, I really do. I’ve got involved with lots of different stuff, mostly

S: Yes, we’ll definitely be putting your football skills to the test…

R: Well, I’d never want to be ‘Hi… Bye!’ – that’s not my style at all. Building a rapport is what I’m most focused on.

What’s on my plate…

Personal trainer and best-selling author Alice Liveing talks life goals, beer gardens and her 10/10 roast spuds WORDS REBECCA DENNE

I’ve had all sorts going on; I got engaged in December, so I’m fully into wedding-planning mode. I’m also writing my fourth book, which has been a massive undertaking but I’m really enjoying it so far. We’re currently editing it, so it’s a big project. I also turned 30 this year so threw a huge party, which was a lot of fun. It’s been a good year so far!

What does your ‘normal’ day look like for you?

I’m quite an early bird, so I get up about 6am. I like to train in the morning and that’s usually resistancebased training. I’ll shower and have breakfast – I’m obsessed with Marmite rice cakes with pesto scrambled eggs at the moment. I’ll start work at 8.30ish; I manage the back-end of the app, so I’ll focus on that and emails, meetings, catching up with my team and interviews. Later on I’ll go out for a walk, do some admin and my list for the next day and then make dinner, something like harissa chicken, pitta and salad.

Are you a good cook?

I have written three cookbooks so I’d like to think I’m relatively good at it. I’m just a food enthusiast and I love cooking – I find it very meditative. I enjoy the process of making a nice meal. My mum’s an amazing cook; we’re Jewish and she makes 134 | ASDA MAGAZINE | JULY/AUGUST 2023

everything from scratch, so I’ve learned a lot from her.

And your signature dish?

If we’re entertaining, my partner and I love to do a beef Wellington – that’s always great for guests. I pride myself on my roast potatoes – I think they’re 10 out of 10 for crispiness.

How do you unwind in the evening?

We’re currently watching Succession but we’re a bit behind, we’re only on season two. I’m also reading A Little Life – I’m about halfway through it.

So, what’s summer got in store for you?

I’m at that age where everyone’s getting married, so we’ve got lots of weddings. We’re celebrating three years of my business and the app [@givemestrengthapp] being live and I’m going to be getting my head down to finish the book. My partner and I are really looking forward to enjoying London in the sunshine, too. It’s such a treat to be in a city that has so much to offer – it’s nice to get stuck into the pub gardens and rooftop bars.

Will you be getting the barbecue out?

We live in London where we have a postage stamp for a balcony, so we go to my parent’s – they have a lovely garden but I’m not the one on the BBQ!

So, what’s next for you?

Fundraising to expand the app. Give Me Strength is a fitness and wellbeing app with gym programmes and home workouts for all abilities. It’s also got nutrition support, so it’s a pretty well-rounded app. Our goal is to use AI and fitness trackers to personalise everything. I’m going to be continuing the Give Me Strength podcast, too – we’ve got some amazing guests with some amazing stories coming up. Apart from that, just try to stay healthy and happy for the rest of the year and of course plan the wedding.

5 quick-fire questions If you were a pudding… Eton Mess – it’s just delicious. Scrambled, fried or poached? Poached. They were my uni staple. What’s always in your basket? Dark chocolate – I ration it! Favourite cooking hack? Crush roast potatoes as they cook to get them extra crispy. After a long day, I fancy… Frozen yoghurt topped with crushed Oreos.
