Bangers & smash bake

Give classic sausage and mash a glow-up with our smashed squash combo – it looks and tastes fab.

• 500g Asda Extra Special British Baby Potatoes

• 400g pack Cook by Asda Butternut Squash Chunks (frozen)

• 4 tsp vegetable or sunflower oil

• ½ medium-sized onion, thinly sliced

• 8 Asda Flavourful Reduced Fat Pork Sausages

• 100g Just Essentials by Asda Green Beans, trimmed

• 200g Asda Frozen for Freshness Garden Peas

• 4 heaped tsp Asda Onion Gravy Granules

1 Heat the oven to 220°C/200°C fan/ gas 7. Put the potatoes in a microwaveproof bowl with 2 tbsp water. Cover with a plate, and microwave for 8 mins on a high setting until the potatoes are tender (a sharp knife pokes easily into the middle of the largest one).

2 Meanwhile, toss the frozen butternut squash with ½ the vegetable oil in a roasting tin. Roast for 5 mins.

3 Add the potatoes to the tin with the squash, lightly pressing each potato with a masher until the skins burst. Add the sliced onion and sausages, season, toss, and then

spread everything to evenly fill the tin. Use the masher again to ‘smush’ everything together a bit. Drizzle over the remaining oil and roast in the oven for 35 mins until golden.

4 With a few mins to go, bring a medium saucepan half-full of water to the boil, add the beans and peas and boil for 3 mins until tender. Boil the kettle (or use the veg water) and make up the gravy, following the pack instructions, with 280ml boiling water.

5 Serve the sausage bake, cut into wedges with the green veg and gravy.

Autumn mac ’n’ cheese

Use our easy sauce and this moreish meal will be on the table quicker than you can say, ‘tea’s ready’. HANDS

Serves 4

• 300g Cook by Asda Butternut Squash Chunks (frozen)

• 1 low salt vegetable stock cube

• 250g Asda Macaroni

• 400g cheesy pasta bake sauce

• 100g Pilgrims Choice Grated Extra Mature Cheddar

• 3 slices The Bakery at Asda Soft White Medium Sliced Bread

• 1 tsp olive oil, plus an extra drizzle (optional)

• 140g Just Essentials by Asda Green Beans, trimmed

1 Bring a large saucepan of water to the boil for the macaroni. Put the squash and stock into another medium-sized saucepan with 600ml water, bring to the boil too, then quickly add a lid and cook for 5 mins.

2 Cook the pasta in boiling water for 5–6 mins, so it has a firm bite to it. Drain. Preheat the oven to 220°C/200°C fan/gas 7.

3 Use a stick blender to whizz the cooked squash and cooking stock until smooth (or simply mash to a chunkier

finish). Whisk in the pasta bake sauce with ½ the grated cheese. Season the sauce with salt and pepper.

4 Combine the cheesy squash sauce with the cooked pasta in a baking dish.

5 Slice the crusts away from the bread, then tear the rest into small pieces and toss with the oil and remaining cheese. Scatter over the pasta, with a drizzle more oil on top.

6 Bake the mac ’n’ cheese for 12–15 mins until the topping is golden. When ready, put the beans in a boiling pan of water, and boil for 2 mins. Drain and serve with the rested mac.

Add a combination of cheeses to your sauce if you have odds and ends in your fridge.

‘I’m a big fan of sneaking any extra veg into the pan. This one’s got squash in the sauce for extra flavour – shhh, don’t tell the kids.’

Pea soup with ham & cheese melts

This hearty, eat-your-greens soup is served with wickedly good cheeseon-toast triangles. Get dunking!

Serves 4 | d

• ½ medium-sized onion, sliced

• 100g Asda Extra Special British Baby Potatoes, quartered

• 2 tsp olive oil (or butter), plus extra for drizzling (optional)

• 1 vegetable or chicken stock cube

• 600g Asda Frozen for Freshness Garden Peas

• 5 slices The Bakery at Asda Soft

White Medium Sliced Bread

• 6 slices Asda Cooked Ham, diced into 1cm chunks

• 75g Asda Cheesy Pasta Bake sauce

• 50g Pilgrims Choice Grated Extra Mature Cheddar

1 Add the onion and potatoes to a large saucepan with the oil and fry over a medium heat for 5 mins, stirring, until the onion has softened.

2 Crumble in the stock cube, then tip in 500g of the peas and 800ml water. Tear in 1 slice of bread and bring the water to a simmer. Once simmering, cover with the lid, and cook for 8 mins.

3 Meanwhile, lightly toast the 4 remaining slices of bread. Add the ham to a bowl with the cheesy sauce and grated cheddar and mix well.

Spread a quarter of the mixture over each toast slice. Drizzle with a little olive oil, if you like.

4 Check the soup – the potatoes should be soft. Use a stick blender (or alternative) to whizz the soup completely smooth, then tip in the remaining 100g peas and keep warm (they will defrost in the hot soup).

5 Air fry the topped toast for 5 mins at 180°C until golden and bubbling or flash briefly under a hot grill. Ladle the soup between bowls and serve with the cheesy ham melts.

Crunchy potatotopped cottage pie

Comfort food doesn’t get much better than this golden-topped pie. It’s a bangin’ family favourite. Tuck in!

• 500g Asda Flavourful Reduced Fat

Beef Steak Mince

• 2 medium carrots, peeled and sliced

• 4 tsp (heaped) Asda Onion Gravy Granules

• 4 tbsp Asda 50% Less Sugar & Salt Tomato Ketchup

• 400g Asda Extra Special British Baby Potatoes

• 125g Asda Frozen for Freshness Garden Peas

• 198g tin Asda Naturally Sweet Sweetcorn in Water, drained

• 30g Pilgrims Choice Grated Extra Mature Cheddar

1 Put the oil in a large frying pan with the beef mince. Fry, breaking up the

meat with a wooden spoon into small pieces, for 5–6 mins until browned. Add the carrots for the final min.

2 Stir in the gravy granules and ketchup. Add 600ml water and, once simmering, cook for 8–10 mins until thickened but still nicely saucy.

3 Meanwhile, put the baby potatoes into a microwave-proof bowl with 2 tbsp water. Cover with an upturned plate and microwave for 6 mins on high. Preheat the oven to 220°C/200°C fan/gas 7.

4 Thickly slice the microwaved potatoes – use a cloth to hold them

if they are hot. Stir the frozen peas and the sweetcorn into the beef mince and then transfer everything to a baking dish. Arrange the potato slices over the top of the veg and meat, then brush very lightly with a little more oil. Season and scatter over the grated cheese.

5 Bake the pie for 15 mins until the top is golden and crisping, and the sauce is bubbling up the sides.

Sweet & sour chicken fried rice

This takeaway classic gets a speedy makeover that even the kids will love – thanks to the sticky pineapple.

• 3 tsp sunflower or vegetable oil

• 300g Asda Tender Chicken Breast Portions, cut into small bite-sized chunks

• 113g Dole Pineapple in Juice Fruit Snack

• 2 tbsp Asda 50% Less Sugar & Salt Tomato Ketchup

• 2 x 250g Asda Sweet & Sour Micro Rice

• 320g Asda Sweet & Crunchy Mixed Pepper Stir-Fry

• 75g Asda Frozen for Freshness Garden Peas

1 Put 2 tsp oil in a deep frying pan, or wok, over a high heat. Add the chicken pieces and stir-fry for 3–5 mins until golden brown all over.

2 Add the pineapple snack pot, including all the juice, and the ketchup to the frying pan and stir-fry for 1–2 mins more until the chicken is cooked through and stickily glazed. Scrape the contents onto a plate using a spatula to clean out the pan.

3 Heat the rice in the microwave following the pack instructions.

4 Add the remaining 1 tsp oil to the pan with the mixed peppers pack and peas and stir-fry for 2 mins until the veg is just tender. Add the hot rice, return the sticky chicken pieces and mix everything together thoroughly for another min. Serve immediately.

Fajita breakfast beans

If you fancy the taste of brekkie for dinner, you’ll love this Mexicaninspired twist on the humble bean.

• 1 tbsp vegetable oil

• 1 onion, sliced

• 1 orange or yellow pepper, sliced

• ½ x 30g pack Asda Sizzlin’ Fajita Seasoning

• 410g tin Asda Baked Beans in a Rich Tomato Sauce

• 400g tin Asda Chopped Tomatoes in Tomato Juice

• 4 eggs

• 40g Just Essentials by Asda Greek Style Salad Cheese

• 10g fresh coriander, leaves picked

• 8 The Bakery at Asda White Mini Wraps

1 Add the vegetable oil to a large frying pan over a medium heat. Add the onion and cook for 4–5 mins until slightly soft, followed by the pepper and cook for another 5 mins. Sprinkle the fajita seasoning over the veg.

2 Stir the beans and chopped tomatoes through the pepper mixture and cook for 5–7 mins until bubbling and starting to thicken.

3 Make 4 wells in the sauce and crack an egg into each. Season then pop on a lid to cook the eggs to your liking, for about 10 mins until the yolk and white have cooked.

4 Remove from the heat. Crumble over the salad cheese, add coriander leaves and serve with wraps for dipping or filling.

• 2 tsp Cook by Asda BBQ Seasoning

• 410g tin Asda Baked Beans in a Rich Tomato Sauce

• 2 tbsp Asda Classic BBQ Sauce

• ½ red onion, chopped

• 3 tbsp plain flour, plus 8 tsp

• 2 tbsp vegetable oil

• 8 The Bakery at Asda White Sliced Rolls, toasted if you like

To serve

• 8 Asda Flavoursome Smoked Streaky Bacon Rashers

• 1 little gem lettuce, leaves removed

• 3 Just Essentials by Asda Salad Tomatoes, sliced

1 Microwave potatoes according to the pack instructions, then drain, discarding any liquid. Add to a large mixing bowl with the BBQ seasoning, salt and pepper. Crush most of the potatoes, keeping a few small chunks. Cool to room temperature.

2 Open the beans and scoop out as much of the tomato sauce as you can - plus enough beans to total 150g (approx). Stir BBQ sauce through these saucy beans and set aside.

3 Mix the rest of the beans and the onion into the potatoes, followed by the flour until the mixture comes together, it will look quite sticky.

4 Roughly divide the mixture into

8 portions in the bowl. Add 1 tsp of flour to a plate and roll 1 portion of the bean burger mixture in it, shaping it into a patty. Repeat to make 8 patties (these can be chilled for up to 24 hours before frying, sandwiched in baking paper).

5 Fry the bacon rashers in batches in a frying pan, over a medium-high heat for 2–3 mins, turning occasionally until golden.

6 Meanwhile, heat ½ the oil in a large frying pan over a medium heat. Fry 4 burgers at a time for 2 mins on each side until golden.

7 Add burgers to the bun bases with lettuce, tomato and bacon slices. Spoon on BBQ beans and top with a bun lid. Serve with the bean dip .

1 Toast the sliced bread in a toaster and preheat the grill.

Take ½ a pack of frozen salt and chilli shredded chicken and cook in a preheated air fryer or oven according to the pack instructions, until crisp and golden. Meanwhile, shred 1 little gem lettuce into 1–2cm ribbons. Squeeze roughly a ½ pack of hoisin and garlic stir-fry sauce into a bowl and add the cooked chicken, tossing well to coat. Warm 2 white and wheat wraps in a microwave on full power for 10–15 secs, then divide the lettuce followed by the hoisin chicken between them. Fold or roll up to eat, dunking in extra hoisin sauce if you like.

Brush 2 salmon fillets with 1 tbsp balti curry paste. Place in the air fryer and cook for 8–10 mins at 180°C until cooked through. 1 Add the oil to a large, deep saucepan, followed by the onion, carrot and pepper. Fry for 10 mins until soft, stirring regularly. Add the paprika, sweet potatoes and lentils and cook for a further 5 mins. Fill your kettle and boil the water.

2 Mix the stock cube with 700ml of boiling water in

a heatproof jug and pour into the pan, along with the tin of plum tomatoes. Stir well then reduce the heat and simmer for 20–25 mins until the veg and lentils are tender.

3 Turn off the heat, use a hand blender to blitz the soup until silky smooth. Stir in the cream.

4 Serve the soup with your favourite bread dunkers; we like toasted muffins or wholemeal pitta strips.

4 For the apple monsters, cut a wedge out of each quarter to resemble a mouth. Dip one end of a grape slice (we used the end slices) into the white chocolate and stick in the apple ‘mouth’. Add eyes, sticking with more chocolate as glue.

5 For the banana ghosts, cut the bananas in half and cut out 2 small triangles from the sliced ends. Add 2 eyes on to each ghost using more chocolate to stick in place.

6 For the kiwi monsters, stick eyes to the top of each slice, just above the core. Next, stick single eyes onto each whole grape.

7 Assemble the ghouls around the spiders on a platter and serve with any remaining melted chocolate.

4 When the meatballs are cooked, stir in the tomato sauce and heat through for 1 min.

5 Add 3 meatballs to the bottom halves of each roll. Spoon over sauce and drape over 2 fangs so the long-pointed ends hang over the meatballs. Add the top buns, stick in the olive eyeballs and serve.

When freezer space is tight, but you want to get ahead, try this tasty slow-cooker-and-freezer combo.

• 1.9–2.2kg pork shoulder (or leg) joint

• 2 tbsp Cook by Asda Paprika

• 1½ tbsp fine salt

• 3 tbsp brown sugar

• 4 tbsp cider (or wine) vinegar

• 2 tbsp barbecue or brown sauce

• 2 tbsp ketchup

1 Using a sharp knife, carefully cut the skin from the pork and discard. If your slow cooker pot is on the smaller side, cut the pork into 6cm chunks to make fitting it in easier.

2 In a small bowl, mix the paprika with the salt and sugar. Sprinkle over the pork in the slow cooker and briefly rub in. Cover and cook on high for 5–6 hrs, or low for 8–10 hrs, until the meat is very tender and easily pulls apart.

3 Stir in the vinegar, brown and red sauces, breaking apart the meat into smaller chunks. Cook on high without the lid for 1–2 hrs more to reduce the liquid and intensify the flavour.

4 When ready, shred the meat in the slow cooker pot and season to taste. Serve straight away

5 ways with pulled pork

1. Tex-Mex rice bowls

2. Pulled pork mac ’n’ cheese

• 1 medium red onion

• 1 lime, juiced

• 1 tbsp vegetable oil

• 4 garlic cloves, crushed or finely chopped

• 250g pack Asda Flavourful Lean Beef Steak Mince

• 550g pack Asda Classico Enchilada Kit

• 250g passata

• 400g tin Asda Mexican Style Bean Mix in Water, drained and rinsed

• 390g tin Asda Green Lentils in Water, drained and rinsed

• 100g by Asda Grated Chilli Cheese Blend

• salad leaves, to serve (optional)

• soured cream, to serve (optional)

1 Finely slice ¼ of the red onion and place in a small bowl. Season with salt and mix with 1 tbsp just-boiled water and the juice of ½ a lime; set aside. Finely chop the rest of the red onion.

2 Heat the oil in a large frying pan over a medium-high heat. Fry the onion and garlic for 3–5 mins until softening. Add the beef mince and cook for another 4–6 mins, breaking it up with a wooden spoon as it cooks. Stir in the spice and sauce sachets from the enchilada kit; along with the passata, Mexican-style beans, green lentils and 500ml water.

3 Season and once bubbling, reduce the heat to a brisk simmer for about 10–15 mins, stirring often until reduced by about a half. Add the remaining lime juice.

4 Heat the oven to 180°C/160°C fan/gas 4. Add a few spoonfuls of the beef sauce to cover the base of a deep baking dish (big enough to snugly fit 8 filled and rolled-up tortillas). Add 2–3 tbsp of sauce to the bottom ¹⁄3 of one of the tortillas, roll up from that end to encase and place seam-side down at one end of the baking dish. Repeat with the remaining 7 tortillas. Spoon the rest of the meat sauce over the top of the filled tortillas.

5 Scatter the ready-grated chilli cheese over the top and bake in the

oven for 20–25 mins until golden brown and bubbling at the edges. Serve immediately, topped with the pickled red onions, plus dollops of soured cream and a handful of salad leaves, if using.

3 Season the casserole to taste, then serve with mash and greens, reserving 2–3 portions (400–600g) for a lasagne dinner on another night.

• 3–4 medium over-ripe bananas (250–300g), mashed

• ½ tsp bicarbonate of soda

• ½ lemon, juiced

• 225g plain flour

• 1 tsp baking powder

• 1 tsp ground cinnamon

• 4 scoops Asda Really Creamy Vanilla Ice Cream, to serve (optional)

• Carnation Caramel, heated to serve (optional)

1 Preheat the oven to 180°C/160°C fan/gas 4. Grease a 2lb/900g loaf tin with butter and line the base and ends with a long strip of baking paper.

2 Whisk the sugar, eggs and treacle into the melted butter in a large mixing bowl. Mix the banana with the bicarbonate of soda and lemon juice in another bowl, and then stir into the sugary mixture. Add the plain flour, baking powder and cinnamon, with a pinch of salt, and whisk in.

3 Transfer the batter into the cake tin. Bake for 50 mins–1 hr, or until a skewer inserted into the centre comes out clean (cover with foil after 40 mins

if it browns too quickly). Leave in the tin for 10 mins before cooling completely on a wire rack.

4 Cut the cake into 9 slices and enjoy 4 for pudding, topped with warm caramel sauce and scoops of vanilla ice cream, if you like.

5 Halve the remaining 5 slices to make 10 cake bars and store in an airtight container for up to 5 days (or freeze for up to 3 months).

Fruit bowl brown betty

Using stale bread for crunch and past-its-best fruit in this American crumble is a really sweet way to save.

• 6–7 older apples, pears, plums or a mix (slightly shrivelled is fine)

• 110g sugar (any kind)

• 60g salted butter, plus 1 tbsp

• 2 tbsp cornflour

• ½ lemon, zested and juiced

• 400g past-their-best berries and grapes, see Cook’s tip (or use frozen)

• 175g stale bread, torn into pieces

• 1½ tsp ground cinnamon

• custard, cream or ice cream, to serve (optional)

1 Peel and core apples or pears and stone any plums you’re using. Roughly chop into small chunks and put in

a large microwave-proof bowl with 50g of the sugar, 1 tbsp butter, the cornflour and 2 tbsp lemon juice.

2 Cover with an upturned plate and microwave on high for 7 mins, stirring halfway. Stir in all the soft berries. Melt 60g butter in the microwave.

3 Whizz the bread to small pieces in a food processor (or finely chop by hand). Mix crumbs with the remaining sugar, the lemon zest, melted butter and the cinnamon. Preheat the oven to 180°C/160°C fan/gas 4.

4 Add ½ the fruit to a medium-large baking dish, then scatter over a ¹⁄3 of

the crumbs. Spoon over the rest of the fruit and cover with the remaining crumbs; sprinkling over a little more sugar, if you like. Bake for 30–35 mins until the topping is brown and crisp, and fruit bubbling. Let it sit for 5 mins before serving with custard, cream or ice cream.

Cheesecake ‘chicken’ nuggets with ‘BBQ’ sauce

• 275g Asda Honey Nut Crunch

• 200g Asda Original Creamy Soft Cheese

• 20g icing sugar, sifted For the dipping sauce

• 2 tbsp Asda Seedless Raspberry Jam

• 2 tbsp Askey’s Treat! Chocolate Dessert Sauce

1 Place the cereal in a food processor and blitz to breadcrumb consistency, or place in a sealed sandwich bag and crush with a rolling pin. Pour 2⁄3 evenly onto a lipped, lined baking tray that will fit flat in your freezer and set aside.

2 In a mixing bowl combine the soft cheese and icing sugar, then add the mixture to a disposable piping bag. Snip off the tip to leave

a hole about 1cm wide, then pipe the mixture into nugget shapes on the crushed flakes leaving space between each one. Completely cover with the remaining cereal and freeze for 2 hrs.

3 When ready to serve, microwave the jam for 15 seconds on a medium heat, stir and combine with the chocolate sauce. Remove the nuggets from the freezer brushing off any excess cornflakes (keep leftovers in a sealed jar to sprinkle over porridge or yogurt) and serve with the dip. Eat within 30 mins of removing from the freezer to avoid them becoming too soft to handle. For longer freezing, transfer frozen nuggets to a freezer bag for up to 7 days.

Prepare to be deceived! There ’s no chicken in these easy-to-make sweet treats, and the ‘BBQ ’ sauce is totally addictive. This ’ll certainly have the trick or treaters fooled.

Baked blackberry & banana breakfast oats

Start your day with banana berry bliss in this faff-free brekkie loaded with crunch-tastic seeds.

• 1 tbsp coconut oil, melted (or use sunflower oil)

• 125g frozen or fresh blackberries

1 Preheat the oven to 190°C/170°C fan/gas 5 and line a 20x25cm ovenproof tin with baking paper.

2 Mix oats, baking powder, cinnamon, pinch of salt and seeds in a bowl.

3 In another bowl, mash the peeled banana until nearly smooth. Add the gluten-free/non-dairy milk, maple syrup, almond butter and melted coconut oil then mix together well.

4 Add the banana mixture to the oats and mix to thoroughly combine. Add the blackberries and scoop the mixture into the lined tin. Roughly spread level and bake for about 40 mins until golden.

5 Leave to cool and then slice. Serve with yogurt, extra fruit and a drizzle more maple syrup.

Salami, pepper & olive pizza

It’s pizza all round with this incredible gluten- and dairy-free dough, which bakes into a fantastically fluffy crust.

Serves 4 (makes 2 pizzas)

For the base

• 400g Asda Free From Gluten Plain Flour, plus extra for rolling out

• 7g sachet Bake by Asda Easy Bake Yeast

• 1½ tsp FREEE by Doves Farm Gluten Free Xanthan Gum

• 1 tsp Dr. Oetker Gluten Free Baking Powder

• 1 tsp caster sugar

• 2 tbsp olive oil, plus extra for brushing

• 1 tsp wine or cider vinegar

For the toppings

• 100g OMV! Deliciously Vegan by Asda Grilled Red Pepper Pesto

• 75g Asda Free From Grated Mozzarella Alternative

• ½ x 90g pack Exceptional by Asda Dry Cured Milano Salami, slices halved

• about 160g cherry tomatoes, halved

• 50g Asda Marinated Garlic & Herb Olives, halved

• 20g wild rocket

1 About 3 hrs before you want to eat, start to make the pizza base dough. Combine the flour, yeast, xanthan gum, baking powder, sugar and ½ tsp salt in a large mixing bowl.

2 Add 250ml warm water, the olive oil and vinegar then, using a wooden spoon or rubber spatula, beat well for 2 mins to thoroughly combine. The mixture will not look like regular pizza dough at this stage but more like mashed potato. Cover the bowl with clingfilm or a clean tea towel and leave to prove at room temperature for about 1 hr until doubled in size.

3 Cover 2 large baking sheets with baking paper and lightly dust with flour. Halve the dough and, using lightly-floured hands, shape each piece into a ball. Place one ball on each lined baking sheet and use your hands to flatten the dough into a roughly 25cm round base. Loosely cover both pizza bases with clingfilm and leave for 40–60 mins until puffy.

4 Heat the oven to 220°C–230°C/ 200°C–210° fan/gas 7–8. Spread ½ of the pesto onto the middle of each pizza leaving a 1–2cm border, brush the border lightly with extra oil. Scatter the pizzas with 2⁄3 of the grated mozzarella, then arrange the salami, tomatoes and olives on top. Sprinkle with the remaining cheese.

5 Bake the pizzas for about 20 mins until the bases are golden and crisp and the toppings bubbling. Scatter with rocket as you serve.

‘I was surprised at just how thick and fluffy the pizza base turned out – it was delicious – and what a great choice of toppings. Pizza’s not something I usually go for but I’d definitely make this again.’

Freeze rolled-out bases on a lined sheet, then wrap. To cook, thaw, wait 30 mins then bake.

Chocolate selfsaucing pudding

Spoons at the ready! A rich pud with a silky sauce – everyone can enjoy this indulgent crowd-pleaser.

• 175g light brown soft sugar

• 150g Asda Free From Gluten Plain Flour

• 50g ground almonds

• 40g cocoa

• 2 tsp baking powder

• ½ tsp FREEE by Doves Farm Gluten Free Xanthan Gum

• 150ml gluten free, non-dairy milk

• 100ml sunflower or vegetable oil

• 1 tsp cider vinegar

• 1 dairy free cream or yogurt alternative, to serve (optional)

For the sauce

• 75g light brown soft sugar

• 20g cocoa

1 Preheat the oven to 180°C/160°C fan/gas 4. To make the pudding, sift the sugar, flour, ground almonds, cocoa, baking powder, xanthan gum and a pinch of salt into a large mixing bowl and mix to combine.

2 Heat the non-dairy milk until hot but not boiling, either in a heatproof jug in the microwave or in a small saucepan over a medium heat. Remove from the heat and add the oil and vinegar. Pour into the dry ingredients and mix using a whisk and then a rubber spatula until smooth and thoroughly combined. Scoop the mixture into a 20x25cm ovenproof dish and spread level. Boil a full kettle of water.

3 For the sauce, combine the sugar and cocoa and scatter over the top of the pudding. Spoon 125ml just-boiled water over the top to cover.

4 Place the dish in a large roasting tin and pour boiling water into the tin around the dish to come halfway up the sides of the dish. Place in the oven and bake for 45 mins until the pudding has risen and is puffy.

5 Remove from the tin and leave to rest for about 4 mins before serving.

Malbec Unc ORKED…

It’s the UK’s most popular vin rouge^, so Asda’s resident expert Clive Donaldson explains why malbec is such a favourite

Full bodied, smooth and fruity, malbec is a classic partner to red-meat dishes – juicy steaks or big-bite burgers – but can also be just sipped on its own with friends. It’s robust, versatile and extremely drinkable.

Today, the wine is best known for its versions from Mendoza in Argentina, but originally it was grown in Cahors, in France’s southwest. From there it travelled, downstream to Bordeaux, then on to Chile and Argentina with Michel Pouget in 1853, who was asked to boost the quality of the local wine production. This new home was in the dry, sunny climate around Mendoza, nestled up against the Andes mountains.

The wines are deeply coloured with flavours of plum, blueberries, prunes and chocolate. Smoother than cabernet sauvignons, they have more body than merlot and entry-level wines display juicy, dark fruit flavours that are very easy to drink on their own. Versions from Cahors are more savoury and firm, ideal with aged steak, while Argentinian wines are fullbodied, fruity and rich, with the top wines often aged in French oak barrels making them smoother with hints of vanilla and spice. The Uco Valley, a cooler region of Mendoza, produces the best-quality wines, adding a touch of elegance and finesse to these big, intense reds.

Perfect jacket potatoes

Achieve spud-tacular results – soft, fluffy insides and crisped-up skin –no matter which appliance you use.

Makes 4 |

• 4 large loose white baking potatoes, about 330g–350g each

• 1 tsp vegetable oil

Air fryer Rub the potatoes with the oil and season with salt. Air fry for 45–50 mins at 180°C until crispy on the outside and soft on the inside.

Microwave & oven combo

Preheat the oven to 220°C/200°C fan/gas 7. Prick the potatoes with a fork and place on a plate. Microwave on high (800W) for 7 mins, flip them over and repeat for another 7 mins. Turn them over again and cook for 3 mins on each side, or until a skewer slides easily into the centre of a potato and the skin looks wrinkled. When the spuds are cool enough to handle, rub the skins with the oil and season with salt. Bake the potatoes in the oven for 15 mins to crisp up the skin.

Oven Preheat the oven to 220°C /200°C fan/gas 7. Rub the potatoes with the oil and season with salt. Bake for 20 mins, then turn the oven down to 190°C/170°C fan/gas 5 and bake the spuds for 1 hr more until the skins go gorgeously golden and the insides are cooked through.

• 650g pack Asda Tender Diced

Chicken Breast

• 3 tbsp natural yogurt

• 200g jar tikka masala curry paste

• 4 large loose white baking potatoes, about 330g–350g each

• 1 tsp vegetable oil, plus 1 tbsp

• 500g Asda Passata

To serve

• 3 tbsp Asda Raita (optional)

• 3 tbsp mango chutney

• 8 Asda Mini Poppadoms

• a few coriander leaves (optional)

1 In a bowl, add the diced chicken and stir in 1 tbsp yogurt and 3 tbsp curry paste, then season with salt. Leave to marinate while you cook the potatoes according to p74.

2 When the potatoes are almost cooked, heat 1 tbsp oil in a large frying pan over a high heat and fry the chicken for 3–4 mins, until browned.

3 Add the remaining curry paste and

fry, stirring for 2 mins. Stir in the passata, 2 tbsp yogurt and 100ml water. Simmer for 10 mins until cooked through.

4 Cut a cross on top of each potato, squeeze the sides to open and fluff up with a fork. Top with the curry, followed by raita (if using, or extra yogurt) and mango chutney. Finish with a scattering of crushed poppadoms and coriander leaves.

COOK’S TIP

Swap in king prawns or make a veggie version with cauliflower and chickpeas.

• 300ml semi-skimmed milk

• 5 tbsp Asda Parsley Sauce Mix

1 To cook the jackets, see p74. About 15 mins before the potatoes are ready, cook the fish fingers according to pack instructions. Tip the peas and sweetcorn into a small pan of boiling water and cook for 2 mins. Drain,

return to the pan and stir in the butter.

2 For the sauce, heat the milk in a small pan until steaming hot, then add the parsley sauce mix and grated cheese, stirring until thickened.

3 Cut a cross on top of each potato, squeeze the sides to open and fluff up with a fork. Top each with cheesy parsley sauce, the buttered vegetables and the fish fingers.

Prep chunks of sweet potatoes (unpeeled for extra flavour), mixed peppers, courgette and red onion wedges. Toss with cherry tomatoes, a little olive oil and seasoning and roast until tender, then use as your tasty-veg base throughout the week.

2 Fruity chicken

couscous Mix the roasted veg with couscous, ready-roasted chicken pieces, dried cranberries and a splash of orange juice.

Recipes to the rescue

I’ve made so many recipes from your Spring 2025 edition. I vowed never to become boring or predictable when it came to cooking, as I grew up with the same meals every week. I usually spend a lot of time researching recipes and finding ingredients, but Asda saved the day with this issue, as I started 12-hour shifts this month and I didn’t have much time. We made the Parma ham, chicken and creamy potato traybake, saucy tomato pasta with salami, cheat’s chicken parmigiana and one of my favourites, Turkish egg and tapenade flatbread [pictured]. From the checkout aisles to the school gates, Asda customers and colleagues have long been champions of BBC Children in Need. Whether it’s through sponsored challenges, non-uniform days, or countless bake sales, chances are you’ve played a part in supporting this incredible cause, too. This year, we’re celebrating a whopping 25 years of our partnership with the charity, helping to make a positive difference for UK children and young people affected by various issues and challenges.

More than just one day

But our support for BBC Children in Need goes far beyond the annual appeal day (14 November). Our dedicated Asda Community Champions work tirelessly in stores throughout the year, collecting donations and selling exclusive merchandise to distributing free Pudsey Club resources. This dedication has made a real

difference: since 2000, Asda’s contributions have improved the lives of over 350,000 children and young people, with over £38 million raised to date.

These donations go directly to the Fuelling Potential programme, our collaboration with BBC Children in Need, to combat food insecurity, boost wellbeing and make life lighter for children, young people and their families. Launched in 2023, Fuelling Potential aims to tackle hunger by providing nutritious meals, and it also offers respite and fun activities at funded holiday sessions.

‘We are enormously grateful for [Asda’s] continued support and commitment to making a difference to young lives,’ praises BBC Children in Need’s Chief Executive, Simon Antrobus. ‘We hope to continue to work with the brilliant team at Asda, as well as their community

We’re on a mission to make checking your boobs, pecs or chest as normal as your Asda shop. As we celebrate raising £100m for Tickled Pink, we’re highlighting how your generous donations directly fund life-saving research, life-changing support, and vital education about the importance of breast cancer awareness.

Sam: I just love it when the whole store turns pink for Breast Cancer Awareness Month in October, from the entrance down to the aisles.

Rachel: October is the most important time for fundraising. Tickled Pink has raised £100m since 1996 all thanks to the generous support of our Asda customers, colleagues and suppliers.

S: This money is so important. Most people have been impacted by breast cancer in some way, including myself.

R: Yes, around 55,000 women and 400 men are diagnosed with breast cancer every year in the UK – and we know it’s on the rise. We’ve still got a big job ahead, made easier with your amazing support, Sam.

S: My highlight of the year is Perth Racecourse Ladies’ Day. I volunteer and this year handed out 400 pairs of flip-flops, kindly donated by George, for when people need a break from their high heels. We raised an amazing £8,373 this year.

R: And there were 7,000 people at that event! This is just a snapshot of the amazing fundraising that happens all over the UK. Breast Cancer Now and CoppaFeel! could not do this alone; we rely on our fabulous volunteers to help spread awareness of breast checking.

and CoppaFeel!. I knew dimpling was one of the signs and I was diagnosed with breast cancer in 2023 and began my treatment. Now my work with Tickled Pink has become a lot more personal to me.

R: It was so kind of you to volunteer as part of our photoshoot to promote Breast Cancer Now’s Wear It Pink Day (24 October alongside others who’ve experienced breast cancer.

Perth Racecourse Ladies Day raised £8,373 for our Tickled Pink partners.

S: It was great fun! We modelled some of the Tickled Pink T-shirts and pyjamas that are available to buy in store and online this October.

R: People like you sharing stories of their experience with breast cancer are so vital to the campaign; customers can see who they’re helping through Wear it Pink.

S: Everyone knows me in the local area. When I’m talking to shoppers, I explain how Tickled Pink helps fund better treatments, support and education. I try to lobby, too.

R: Knowledge is power. We’re seeing better survival rates than ever before. Through Tickled Pink, Asda has funded millions of pounds of research and helped unlock 500 scientific discoveries for breast cancer.

S: Tickled Pink is just as important now as it was 29 years ago. Breast cancer hasn’t gone away; people like me are still diagnosed every day.

R: I’m so proud of what we’ve done together. To mark the £100m raised this year, we’ll be sharing stories of

people who’ve used services funded by Asda. You’ll also see more pink products on the shelves than ever.

S: Alongside in-store fundraising, I’m hosting an all-ladies afternoon tea. Everyone gets a bag of goodies as well as leaflets with all the signs to look out for. If we combine it with something fun, people will go home, start checking and tell others.

R: We know from data that Asda customers check their chests more than the general public. I want 100% of people checking regularly. We’ve also worked with Asda and the NHS to put mobile screening vans in store car parks

S: Tickled Pink keeps that conversation going, reminds people

that support is there and lets them know that they’re not alone. That message doesn’t get old. It just gets stronger every year.

What’s on my plate…

Much-loved actress, Celia Imrie, a star on big screen and small, and a best-selling author, on how she loves surprises, and secrets…

Tell us about your latest acting and writing projects – how do you fit it all in?! I tend to fit writing in between filming projects. The Thursday Murder Club is out now and Celebrity Traitors airs in the autumn, so I’ve been quite busy. I concentrate entirely on filming and then, when I’ve got a break, I focus on writing. When I’m on the move ideas come to me, especially while I’m travelling on a train. The story behind Meet Me At Rainbow Corner was so intriguing…

Can you tell us more?

I find history fascinating and decided to give my latest books that historic stem. This one is set during the Second World War, and has a real club at its heart, the fabulous Rainbow Corner in Piccadilly Circus. None of us really knows what happened in the war but my friend Fidelis’ mother had a trunk full of wartime letters, which gave us a bit of a clue. I love the idea of these handsome GIs having a whale of a time and these two girls falling in love with them.

Where do you get inspiration for your books from?

Everywhere! People I’ve met along the way will be in there, but they probably won’t recognise themselves. A lot of my friends are in the theatre, so I like

to meet and research people from other walks of life, other professions, such as doctors and scientists.

You were awarded a CBE in 2023 for services to drama, that must have been a very proud moment. It was wonderful and I’m so grateful. I hope there will be lots more proud moments in the future, and surprises around the corner. It’s thrilling.

In The Thursday Murder Club, you play the very entertaining Joyce. Do you have anything in common with your character?

I’m not a good cook, but I do love to make cakes, which is what Joyce does all the time. My favourite bake is chocolate with an espresso icing (made at 5am in the morning!).

Someone brings you up a tray of refreshments to keep you going while you’re writing. What’s on it?

I love Twiglets, and oranges, so they’d be on there. A rhubarb yogurt. And Maltesers, or anything chocolatey. Maybe some Marmite and toast. Nothing too heavy, so I can keep alert.

Where’s your happy place?

Nice in France is my paradise. I like being on the balcony at sunrise, and seeing the moon on the sea at night.

Tell us a secret…

I never do tell! But I’m very, very good at keeping other people’s secrets.
