That big footie tournament is upon us… Oh, I didn’t notice – did you?! Whether you’re an avid supporter or a bit more side-line, we have plenty of grub that’s sure to Sarah Thom Asda Editor score (sorry, couldn’t resist). From dips that everyone can dig into (p24) to burgers inspired by some of our favourite teams (p11), we think we’ve really excelled ourselves in the flavour stakes this month. If you have time to make only one recipe from the issue, it has to be the pepper-crusted burger with crispy tempura onion rings. It’s next-level delicious! For a fuss-free fix after a day of screaming at the TV, we also have five-ingredient meals (p47) and delicious no-cook weeknight winners (p31), which will ensure you spend less time in the kitchen and more time enjoying the sunshine – fingers crossed. Amid all the sporting excitement, don’t forget Dad. Having ‘put up’ with me for the majority of his life – his words, not mine – my dad definitely deserves to be treated on Father’s Day. BES T OF THE SEASON ‘Ripe strawberries go hand-in-hand with long, sunny days in June. For me, they are summer fruit royalty, evoking memories of picnics, puddings and pick-your-own. If there’s a more delicious dessert than sweet, fragrant strawberries dipped in cream, I’m yet to discover it! When I’m feeling more adventurous, I like to griddle them with marshmallows on skewers or make a light cucumber, strawberry and poppy seed salad. For a quick-win lunch, try topping toast with basil-flavoured cream cheese, thinly sliced strawberries and a drizzle of balsamic glaze. If your strawberries are a little hard, just roast them for 15 minutes with a slug of maple syrup and olive oil. It may seem like a sin in the sultry days of summer, but this warm, jammy treat is perfect with vanilla ice cream or pancakes and whipped cream.’

A juicy pork patty inspired by smoky, spicy Spanish tapas treats MAKES 4 READY IN 1 HR 15 MINS PRICE PER SERVING £1.47

FOR THE BURGERS l 500g Butcher’s Selection Lean Pork Mince (Typically Less Than 5% Fat) l ½ shallot, chopped l 1 clove garlic, crushed l ½tsp chilli flakes l 4tsp smoked paprika l 1tbsp fennel seeds, toasted and crushed l 2tbsp reduced-fat mayo l 4 ciabatta rolls l 1 Little Gem lettuce l 40g Manchego, sliced l ½ red onion, sliced 12 | ASDA.COM/GROCERIES

FOR THE PATATAS BRAVAS l 2 medium baking potatoes, cut into 2-3cm chunks l 1½tbsp rapeseed oil l ½ shallot, chopped l 1 clove garlic, crushed l ½tsp chilli flakes l 1tsp smoked paprika l 150g passata l 1tsp white wine vinegar 1 Preheat the oven to 220C/200C Fan/Gas 7. 2 For the patatas bravas, toss the potatoes in 1tbsp

of the oil to coat; arrange on a nonstick baking tray. Roast for 1 hr until golden. 3 Meanwhile, heat the other ½tbsp oil in a pan and cook the shallot until soft. Add the garlic, ½tsp chilli flakes and 1tsp paprika. Cook over a low heat for 1 min. Add the passata and vinegar. Simmer uncovered, for 15-20 mins until it is thick. Set aside; keep warm. 4 For the burgers, mix the pork with the shallot, garlic and chilli flakes, 3tsp of the

paprika and the fennel seeds. Shape into 4 patties. Heat a nonstick pan over a medium heat; fry the burgers for 5-6 mins each side until cooked through. 5 Mix the mayo with the remaining paprika. Split and toast the ciabatta rolls, spread with the mayo, then add lettuce, a burger, the Manchego, onion slices and the tops of the rolls. 6 Pour the tomato sauce over the potatoes, and serve with the burgers. FOR THE BURGERS l 500g salmon fillets, skinned and chopped l 1 medium egg, beaten l 2 spring onions, sliced l 80g fresh breadcrumbs l 1tbsp reduced-salt soy sauce l 2tbsp sushi ginger, chopped l 2tsp wasabi paste l 1tsp rapeseed oil, plus extra for deep frying l 50g cornflour l 20g plain flour l 60ml sparkling water l 1 medium onion, cut into

1cm-thick slices and separated into rings l 2tbsp reduced-fat mayo l 4 seeded burger buns l 85g bag watercress FOR THE PICKLED VEG l Âź cucumber, thinly sliced l 2 radishes, thinly sliced l 1 carrot, peeled and grated l 1tbsp white wine vinegar l 1tsp sugar 1 First, for the pickled veg, toss together the ingredients in a nonmetallic bowl. Set aside for 20 mins to pickle. 2 Then to make the burgers, pulse the salmon, egg, spring onions, breadcrumbs, soy sauce, ginger and 1tsp of the wasabi in a processor until coarse. Shape into 4 patties. 3 Heat the oil in a large nonstick frying pan over a medium heat. Cook the patties for 3-4 mins on each side until firm and starting to colour. Remove from the heat and keep warm. 4 Heat the oil in a deep-fat fryer to 170C. Put both flours and the water in a bowl, then whisk to a thin batter. Dip the onion rings to coat, then carefully lower into the hot oil. Deep-fry for 2-3 mins until crisp. Remove with a slotted spoon and drain on kitchen roll. 5 Mix the mayo with the remaining wasabi. Split the buns. Spread the mayo on each base, add watercress, a burger, some of the pickled veg and the onion rings. Finish with the tops of the buns and serve with extra pickled veg. Energy

Tender chicken and sweet peppers with a kick of Portuguese heat MAKES 4 READY IN 40 MINS PRICE PER SERVING £1.46

FOR THE BURGERS l 2 Butcher’s Selection Chicken Breasts l 6tbsp Asda Piri Piri Medium Sauce l 1 red onion, chopped l ½ each red and orange pepper, deseeded and cut into wedges l 1tbsp rapeseed oil l 4 soft white rolls l 2tbsp reduced-fat mayonnaise l ½ iceberg lettuce, shredded l Lime wedges, to serve

FOR THE SPICY RICE l 1tbsp rapeseed oil l 1 mild green chilli, sliced l 1 clove garlic, crushed l ½ each red and orange pepper, deseeded and finely diced l 4 spring onions, sliced l 2tbsp tomato purée l 1tsp smoked paprika l 250g basmati rice, cooked according to pack instructions l Juice ½ lemon l 2tbsp chopped parsley 1 Halve the chicken breasts horizontally to get 4 fillets.

Sandwich each between 2 sheets of clingfilm and bash with a rolling pin until double the size. Put in a dish, pour over the piri piri sauce and marinate in the fridge for at least 30 mins. 2 For the rice, heat the oil in a pan on a medium setting. Fry the chilli and garlic for 1 min. Add the diced peppers and spring onions; fry for 4-5 mins until soft. Add the tomato purée, paprika and 1tbsp water, mix, then add the rice. Stir-fry for 3 mins. Stir in the lemon juice and

parsley; transfer to a dish and keep warm. 3 Preheat a griddle pan over a medium heat. Mix the onion with the pepper wedges and the 1tbsp oil, add to the pan and fry for 3-4 mins. Remove; keep warm. Fry the chicken in the pan for 5 mins each side, or until cooked through. 4 Split and toast the rolls. Spread each base with the mayo, add the lettuce, chicken, onion and pepper mix, then the tops of the rolls. Serve with the spicy rice and lime wedges. Energy

Pepper-crusted burger with onion rings

l 400g Butcher’s Selection Lean Beef Mince (Typically Less Than 5% Fat) l 2tsp Worcestershire sauce l 4tsp English mustard l 4tbsp black peppercorns, crushed l 2tbsp white wine vinegar l 1tsp caster sugar l 1 red onion, thinly sliced 16 | ASDA.COM/GROCERIES

l 1½tbsp rapeseed oil, plus oil for deep frying l 50g cornflour l 20g plain flour l 75ml sparkling water l 1 medium white onion, cut into thin slices and separated into rings l 4 brioche buns, halved l 4 eggs l 3tbsp light mayonnaise l 40g Asda Mild Bistro Salad l 2 vine tomatoes, sliced

1 Put the beef mince, Worcestershire sauce and half the mustard in a large bowl and mix with your hands. Divide into 4 and shape into patties. 2 Put the crushed peppercorns on a plate and coat each burger in them, pushing down so the pepper sticks. Put on a tray, cover in clingfilm and chill for at least 30 mins.

3 Meanwhile, put the vinegar and sugar in a pan and warm over a medium heat until the sugar dissolves completely. Remove from the heat and add the red onion. Leave to pickle for 15 mins, stirring regularly. Drain and pat the onion dry. 4 To make the onion rings, heat the oil in a deep-fat fryer or deep pan to 170C. Put the flours and sparkling water in a bowl and whisk to form a thin batter. Coat the white onion rings in the batter, carefully lower into the hot oil and fry for 2-3 mins until crisp. Use a slotted spoon to remove onto a plate lined with kitchen roll. 5 Meanwhile, heat a BBQ or griddle pan to medium. Brush each side of the burgers with rapeseed oil and cook for 3-4 mins on each side until cooked through. Remove to a plate, cover with foil and leave to rest for 5 mins. 6 Put the buns, cut-side down, on the BBQ or griddle and toast for about 1 min, until golden. 7 Heat the remaining oil in a large, nonstick frying pan over a high heat and fry the eggs for 3 mins until the whites have set but the yolks are still runny. 8 Mix the mayonnaise with the remaining mustard and spread onto the base of each brioche bun. Top with the salad, tomatoes, a burger, pickled onions, a fried egg, onion rings and the bun lids. Energy

Pick the leaves from a few sprigs tarragon. Chop and set aside. Put the stalks (or ¼tsp dried tarragon, if you can’t find fresh) in a pan with 4 black peppercorns, 1 shallot, chopped, and 1 bay leaf.

Add 4tsp white wine vinegar and 50ml water and bring to the boil. Simmer for 4-6 mins, until reduced by half. Strain and set aside to cool.

Add ½ reduced-salt beef stock cube, made up to 200ml with boiling water. Simmer for 5 mins, or until thickened.

Increase the heat to medium, add 1tbsp balsamic vinegar and cook for 1 min, or until almost evaporated.

Put a glass bowl over a pan of just-simmering water. Add 3 egg yolks and 1tsp water and beat gently. Add the cooled vinegar and whisk for 2 mins or until light and frothy.

MEET THE HAPPY PEAR

‘If you want to try veganism, cake is a great place to start’ Twins David and Stephen Flynn are on a mission to make it easier to go vegan – and yes, sweet treats are included. Here, they show you how…

lant-powered twins David and Stephen Flynn say that, when it comes to leading a vegan lifestyle, you can have your cake and eat it! Irish born and bred, the brothers are the duo behind food brand The Happy Pear, and for the past 16 years, they have both followed a vegan diet. ‘We grew up eating meat,’ says Stephen. ‘All the usual stuff – burgers, pizzas, barbecues. To us, food was just fuel.’ That all changed when the twins, aged 39 – who now have five children between them – went travelling in 2004. ‘We got really into food and health when we were away,’ says David. ‘While we were on opposite sides of the globe, we both decided to go vegan within a week of each other!’ ‘When we came home, lots of people in our little town in Ireland looked at us like, “What happened to the lads?”’ says Stephen. ‘They looked at us with pity!’ It was then they decided to launch The Happy Pear and spread the word. ‘Embracing vegan living helped us to feel healthier and happier in ourselves,’ says David. ‘I guess we wanted to inspire others to do the same.’ Stephen adds: ‘We love healthy food, but we love cake, too. If you eat kale every day of the week you might be healthy, but you’d be a bit one-dimensional, emotionally speaking! Cake definitely has its place and, if you want to try veganism, it’s a great place to start.’

FOR THE PASTRY l 150g plain flour, plus extra for dusting l 75g cold coconut oil FOR THE FRANGIPANE l 1½tbsp ground flax seeds l 130g cold coconut oil l 155g ground almonds l 140ml maple syrup l 1¼tsp baking powder FOR THE JAM LAYER l 250g fresh raspberries l 100ml maple syrup l 2tbsp chia seeds l 50g flaked almonds TO SERVE l 200g Alpro Plain Soya Yogurt Alternative 1 Preheat the oven to 180C/160C Fan/Gas 4. Line the base of a 23cm round springform cake tin with baking paper. 2 For the pastry, put the flour in a mixing bowl. Chop the coconut oil and add

Wrap in clingfilm and chill in the fridge for 5 mins. 4 Dust your hands with flour. Shape the dough into a disc, then press it into the base of the cake tin to form a ½cm-thick layer. Don’t take it up the sides. 5 Blind-bake in the oven for 10 mins (no need for baking paper or baking beans), then remove and allow to cool on a rack. Leave the oven on. 6 For the frangipane, mix the flax seeds and 4tbsp water in a bowl, then set aside until it has a beaten egg-like consistency. Melt the oil in a small pan and transfer to a bowl. Add the ground almonds, syrup, baking powder and flax

Cook on a medium heat until the fruit breaks down. Add the syrup and chia seeds; simmer for 6-8 mins, stirring, to reduce and thicken. Remove from the heat, transfer to a bowl. Allow to cool. 8 Spread the jam over the pastry base. Gently spoon the frangipane on top, making sure to cover it all. Sprinkle over the almonds. 9 Pop the tart back in the oven for 30 mins. Leave to cool for 15 mins, then slice and devour with a dollop of vegan yogurt! Energy

FOR THE COOKIES l 100g unsalted almonds l 100g raw cashews l 125g pitted dates l 1tsp vanilla extract l 3tbsp raw cacao powder l 1tbsp maple syrup FOR THE FILLING l 100g raw cashews or cashew nut butter l 2tbsp coconut oil l 3tbsp agave syrup or other clear liquid sweetener l 1tsp vanilla extract 1 If you are using raw cashews for the filling, ideally soak them overnight. If you don’t have time, simply soak them for 5 mins in boiling water. Drain well before using. Alternatively, you can use cashew nut butter, which will also result in a creamy texture. 2 For the cookies, blend the almonds and cashew nuts in a processor for 3 mins, until you get a mixture the texture of breadcrumbs. Add the dates, vanilla extract, cacao powder and maple syrup, and blend well.

3 Spread a large piece of baking paper on the work surface and pour the mixture onto it. Using a rolling pin or clean jar, roll out the mixture to 1cm thick. A top tip to make it easier to roll is to fold one half of the baking paper over the top of the cookie dough and roll over it – this will prevent the mixture sticking to the rolling pin. 4 Using a plain round

cookie cutter about 5cm in diameter, cut out 28 cookies. Use all of the mixture, re-rolling if necessary. Set aside. 5 To make the filling, put the soaked and drained cashew nuts or cashew nut butter into a blender with the coconut oil, agave syrup and vanilla extract, then blend for 3-5 mins, until you get a super-smooth, creamy texture.

6 To finish your cookies, simply put a generous teaspoon of the filling on top of one of the cookie rounds, then top with another cookie to create a sandwich. These can be stored in an airtight container in the fridge for up to 2 weeks. Energy 825kJ 197kcal

l 50g dried apricots l 50g dried mango l 100g pumpkin seeds l 70g chia seeds l 50g desiccated coconut l 100g walnuts l 100g pitted dates l 50g goji berries l 1tsp vanilla extract l 70g coconut oil or cocoa butter l 200g vegan dark chocolate

1 Chop the dried apricots and mango into smaller pieces to make it easier on your food processor. Pulse them in the processor with the pumpkin and chia seeds, coconut, walnuts, dates, goji berries and vanilla extract until the nuts and seeds are well chopped and broken up but there is still some texture to them. Transfer the blended

mixture to a large bowl. 2 Melt the coconut oil or cocoa butter in a glass bowl over a pan of simmering water – don’t allow the base of the bowl to touch the water. Pour it over the nut and seed mixture and mix together well. 3 Line a traybake tin (about 30cm x 20cm) with baking paper. Spread the mixture out into an even layer about 3cm thick. Use the back of a spoon to level the top. 4 Melt the chocolate (see

step 2 for full instructions). Spread over the top of the nut and seed mixture. 5 Chill the mixture in the fridge for 20 mins until set. Score 3 evenly spaced lines horizontally and another 3 vertically to create a 4 x 4 grid. Cut this into 16 pieces. The flapjacks can be stored in an airtight tin for up to a week. Energy

Sports lover Elvis Jolley, 60, is a security guard from Surrey. His stepson Sam is 24 ‘I’ve always brought Sam up like he is one of my own. I got to know him when he was young – around 11 – and since then, I’ve watched him grow from a boy into a man. It’s crazy how quickly the time has gone. We now work together as security guards at Gatwick Airport, which is great. Everyone is constantly telling us that we are so similar because we have the same mannerisms. We are both completely sports-mad, even if we do argue a lot over whether the ball is offside or not! FACTOR THIS ‘Do you know your UVAs from your UVBs and SPFs? All that jargon can be a bit confusing, so here’s a quick breakdown… UVA: The more prevalent of the two types of sun ray, this can penetrate windows. It causes damage and premature ageing of the skin. UVB: This ray has a shorter wavelength than UVA and causes burning. SPF: The Sun Protection Factor shows how well a cream protects against UVB rays. SPF15 is fine for olive or darker skin, and SPF30 for most white skin. Increase to SPF50 for very fair skin.’ A star rating shows the lotion’s UVA protection level; the more stars the better. ou know that exercise is good for you – but with so much conflicting advice out there, how do you know you’re giving your body the fuel it needs? We asked Dr Hazel Wallace – author of The Food Medic For Life: Easy Recipes to Help You Live Well Every Day and a qualified personal trainer – for her top tips for keeping your body in peak condition. It’s time to fuel up your fitness…

Easy does it

Fuelling up

‘Take new exercise plans step by step. Look at your diary and see what you can fit into your lifestyle in a way that’s achievable and not overwhelming. It might be getting up 30 minutes earlier three days a week, or scheduling in gym sessions. Building a habit is the most important thing – you want to be fit for life, not just for six weeks!’

‘Carbohydrates and protein are equally important if you’re exercising. Carbs provide energy, while protein helps to build and maintain muscle mass. If you’re marathon training, then carbohydrates are going to be more important in your diet than for most people, while if you’re lifting weights and keen to gain some muscle, you’ll need to focus on a higher protein intake. However, for most casual gymgoers, meals around workouts should contain that balanced combination of protein, carbs, healthy fats and fruit and veg.’

Set a time ‘There isn’t an ideal time of day for fitness. It depends on you and your lifestyle. I prefer to exercise first thing because I know my day is likely to become busy, which often means I end up sidelining any sort of fitness regime. However, you might really enjoy training in the evening to unwind after a long day.’

Balancing act ‘There are no set rules for what foods are best to fuel your body. That’s because we don’t eat nutrients, we eat food – and most foods contain a bit of everything. For example, oats are seen as a carbohydrate but they also contain protein and fat. To get a balance of nutrients in each meal, aim for a palm-sized portion of protein, a fistful of complex carbs (which take longer to digest) and two handfuls of veg, plus healthier fats such as a drizzle of olive oil or half an avocado.’

Get a boost ‘While they’re an important source of energy for your body, not all carbohydrates will provide a sustainable amount. For example, sugar gives a surge in energy for a short period, while porridge oats provide a more long-term supply of energy due to their high fibre load. If you want to stabilise your blood sugar levels and prevent dips in the day, choose good-quality complex carbohydrates at each meal – oats, quinoa, wholegrain bread, wholegrain pasta, beans, pulses and potatoes.’

Fuelling your body correctly is about providing the right balance of nutrients and enough energy throughout the day

Plant power ‘If you’re following a plant-based diet, particularly a vegan one, it’s important to make sure you’re getting all the nutrients your body needs. Certain nutrients are a bit trickier to obtain from a vegetarian or vegan diet, including iron, zinc and calcium – but lentils, tofu, chickpeas and cashews contain zinc and iron, while almonds provide calcium*. However, plant-based diets tend to be richer in fibre, folic acid, magnesium and vitamins C and E, and contain less saturated fat than meat-based diets.’

Take shortcuts

‘Processed and packaged foods tend to be less nutritious than whole foods in their raw forms but it’s almost impossible (and totally impractical) to cut them all out. In some cases, though, the processed or packaged version is just as good as its raw alternative – so use your own

judgement. Some of my favourite time-saving foods include frozen fruit and vegetables, microwavable packets of grains and pulses (such as lentils), cartons and tins of beans and chickpeas, carrot batons and other chopped veg, houmous and nut butters.’

Double up

‘Eating healthily and staying fit can be enjoyable and easy to incorporate into a busy life. An effective way to do this is to add some colour to your plate; the more colourful your plate, the greater the nutrient profile… and the health benefits. I love layering salads in jars with crunchy red peppers, ribbons of carrots and edamame beans.’

‘Cook once and eat twice by doubling up on your portions when you prep food. Serve up half and allow the other half to cool before popping it in a plastic food container and refrigerating it. Have it for lunch the next day, or save it for dinner. Simple! This is an easy way to prepare meals, and avoids long cooking sessions – and the cleaning aftermath – every evening.’

What’s your daily diet like? I have a fast metabolism, so I’m constantly hungry; it’s always three meals and a bit of a graze as well. Talk us through those meals… If I’m filming, I’ll have porridge, maple syrup and some raisins to start the day. For lunch, I’ll grab a tuna sandwich. Then when the kids are in bed, dinner with my wife is our chance to catch up. Becky is very much the day-to-day cook; we’ll often have a vegetable stir-fry and rice. We’re verging on vegetarian during the week. It’s an ethical choice. What kind of a cook are you? When I was a teenager, my mum taught me how to roast a chicken, peel potatoes and cook carrots; standard survival stuff. I can now cook a sausage without killing myself! I’ll do the Sunday roast and I cooked at Christmas, too. Biggest culinary disaster? When I was at university, I had all my fellow students over for a turkey roast. I misread the instructions and cooked

I once served a roast turkey next to raw. That was not a great moment

it for 25 minutes then served it next to raw. That was not a great moment. First dish you ever cooked? Macaroni cheese. I was eight and it was for my cub scouts cookery badge. I can still cook it from memory. What dish reminds you of home? My mum’s lemon layer pudding, made from lots of sugar, a bit of flour and

lemons, is a taste of my childhood. When I was 10, I had pleurisy, which is an infection of the lining of the lung, and I barely ate for two whole weeks. I lost a lot of weight and from then on, I was always very slim. My mother constantly made delicious, tempting puddings to try to fatten me up! Which chef do you most admire? I really like Marcus Wareing – I’ve had some great meals at his restaurants. And Jamie Oliver – he’s a very motivated guy and I’ve always felt a bit of a kinship with him. Do any foods affect your voice? People say to avoid dairy, but I’ve never found that to be a problem. If I’m singing, I will avoid heavy, acidic food the night before because acid reflux can burn the vocal cords. Do you have any food rituals? I fuel up as much as I can before a gig because of the energy requirements of performing. As a student, I sang with a choral society and would lodge with a family for the holidays – they’d serve a tiny quiche between five people. I’m now never more than five metres away from a bag of nuts. Gareth is touring the UK with a live show in May and June
