A SHORTER SEASON BUT A PROMISING YEAR

Malgré une saison écourtée par la crise sanitaire, Patrick Remme revient sur l’année passée avec une sérénité, qui fait du bien !

Une fois n’est pas coutume, le discours se veut positif et rassurant et le contexte ne semble nullement entraver les projets d’un homme, résolument tourné vers l’avenir !

Although the season was cut short by the public health crisis, Patrick Remme is pleasantly relaxed when looking back over the last year. In contrast to other perspectives, his vision is positive and reassuring, and the context seems to have had no effect on this steadfastly future-focused figure!

L’année 2020 avait, il est vrai, brillamment démarré avec l’ouverture attendue du Manali Lodge, l’hôtel emblématique d’Alpine Collection idéalement situé en front de neige à Courchevel Moriond. « C’était un vrai défi, compte tenu des délais à respecter et ce projet était important pour nous car il représente un nouveau pôle de notre métier, celui de l’hôtellerie avec services : un restaurant, un spa, une piscine... Le Manali Lodge est une vitrine de ce savoir-faire et nous sommes ravis car les retours sont très positifs. » Un lancement très prometteur et un taux de remplissage pour l’hiver 2020 qui s’annonçait également excellent pour la résidence Annapurna aux Gets. « L’état des réservations était exceptionnel » ajoute Morgan Bientz, Directeur Général d’Alpine Collection. « Malheureusement, la saison bien engagée a été écourtée, interrompue par les mesures mises en place dès le mois de mars. La saison estivale, a, quant à elle, été remarquable, notamment en août avec une forte progression des locations aux Gets et à Courchevel en présence d’une nouvelle clientèle. Nos restaurants Bistrot Manali et Vina Annapurna ont également obtenu des résultats exceptionnels, au delà de nos espérances ! » Patrick Remme se félicite de ce bilan, certes contrasté mais positif, qui lui permet de poursuivre le développement d’Alpine Collection, avec, notamment l’inauguration en fin d’année 2021 de deux nouvelles résidences à Val d’Isère, le lancement de la commercialisation du Falcon Lodge à Méribel ainsi qu’une extension de l’équipe importante. « Nous avons d’autres projets d’implantation et de développement dans de nouveaux secteurs, dont Megève. » conclut Morgan Bientz.

It has to be said that 2020 got off to an incredible start with the longawaited opening of the Manali Lodge, the iconic Alpine Collection hotel in a perfect location at the foot of the slopes in Courchevel Moriond. “It was a real challenge, given all the deadlines to meet.

This project was very important to us, as it represents a new step in our business – hotels with services including restaurants, a spa, and a swimming pool. The Manali Lodge is a showcase for this expertise, and we are delighted by the positive feedback we have received so far.” The launch was highly promising, and the occupation rate for the Annapurna residence in Les Gets for last winter was also excellent. “Reservation numbers were particularly high,” says Morgan Bientz, General Manager of Alpine Collection.

“Unfortunately, this fantastic season was cut short by the measures introduced in March. The summer was remarkable, especially in August, with a spike in rentals in Les Gets and Courchevel driven by a new clientele. Our restaurants, Bistrot Manali and Vina Annapurna, also performed well, even better than we expected!” Patrick Remme is proud of the different but positive results so far, which have enabled him to continue developing Alpine Collection. Late 2021 will see the inauguration of two new residences in Val d’Isère, the launch of the Falcon Lodge in Méribel, as well as an important team extension.“We also have other projects to establish and develop the Group in new areas, including Megève,” says Morgan Bientz.

Réputées pour la qualité de leur domaine et de l’ensemble de leurs infrastructures, Courchevel et Méribel accueilleront les Championnats du Monde de Ski Alpin 2023. Derrière cet évènement qui réunira l’élite du ski mondial, c’est toute une station mobilisée qui se prépare ! « Nous sommes d’ores et déjà dans les starting-block » confie le Directeur de l’ESF de Courchevel 1650 Moriond, Lionel Cenerelli, dont le fils Enzo pourrait être sur la ligne de départ de la descente hommes. « L’ensemble des moniteurs du Club des Sports seront mobilisés lors des épreuves pour préparer les pistes, les lisser entre les passages des concurrents, effectuer les contrôles, participer à la remise des dossards… Pour tout cela nous disposons déjà d’une bonne expérience car la station organise chaque année de nombreuses épreuves. » C’est notamment sur le secteur de Courchevel Le Praz que seront organisées les épreuves Hommes avec une nouvelle piste noire qui entrera dans la légende en accueillant les meilleurs skieurs mondiaux. Baptisée l’Eclipse, cette piste technique et complète a été dessinée pour les Championnats par Bruno Tuaire, Directeur du Club des Sports et Hannes Trinkl, le Directeur de la FIS. Longue de 3 200 mètres, l’Eclipse part du sommet de la Loze (2 234 m) pour arriver au Praz (1 300 m) avec un dénivelé de 970 m. Mais inutile d’attendre 2023 pour découvrir cette piste très engagée.

Dès le mois de décembre, les skieurs pourront la tester avant qu’elle ne soit sous les feux des projecteurs !

Tous derrière Enzo Cenerelli !

A Courchevel, Enzo Cenerelli, c’est l’enfant du pays… « Celui qui savait skier avant d’apprendre à parler » se souvient son père Lionel. « A 6 ans il intégrait le Club des Sports et dix ans plus tard il était champion de France minime en slalom ! » Formé sur les pistes de Courchevel, à vingt ans le skieur alpin aime encore venir régulièrement l’hiver dévaler les pentes des 3 Vallées, lorsqu’il n’est pas en Amérique du Sud ou en Suède pour s’entraîner. Enzo Cenerelli se prépare tant physiquement que psychologiquement pour être qualifié en Coupe d’Europe et ensuite avoir une place en Coupe du monde de ski alpin, avec les Championnats du Monde 2023 en ligne de mire ! Le jeune skieur espère vivement être sélectionné pour participer aux épreuves qui se dérouleront sur ses terres natales, sur un terrain qu’il connaît par cœur. « J’ai trois ans pour m’entraîner avec différentes étapes à franchir, c’est un long cheminement » reconnaît-il. Si sa famille l’accompagne pour relever le défi c’est aussi toute une station en plus du groupe Alpine Collection qui l’encouragent et le soutiennent. « Ce serait le Graal ! Nous serions tellement fiers et exaltés de voir notre champion concourir sur les pistes qui l’ont vu grandir et progresser. » Rendez vous dans trois ans…

Renowned for the quality of their ski area and their infrastructure, Courchevel and Méribel will be hosting the 2023 World Alpine Ski Championships. In the run-up to this event, which will see the world’s skiing elite descend on the resorts, everyone in the region is rushing to get ready!

“We are now well and truly in the starting blocks,” says the director of the ESF in Courchevel 1650 Moriond, Lionel Cenerelli, whose son Enzo could be on the starting line for the Men’s downhill.

“All Sports Club instructors will be on hand during the trials to prepare the pistes, grooming them before and after each run, carrying out checks, and handing out bibs. We already have a good experience in organising this sort of event, as every year the resort hosts a number of sporting trials.”

The Men’s trials will be held in the Courchevel Le Praz sector on a new black piste that will become part of local legend by welcoming the world’s best skiers.

Christened the Eclipse, this technical, comprehensive piste was designed for the Championships by Bruno Tuaire, director of the Sports Club, and Hannes Trinkl, director of the FIS. In Courchevel, Enzo Cenerelli is a real local boy… “He knew how to ski before he could talk,” says his father, Lionel. “At the age of 6, he was already part of the Sports Club, and ten years later he was the French junior slalom champion!” Trained on the pistes of Courchevel, the 20-year-old downhill skier still loves to spend time racing down the slopes of the 3 Vallées when he isn’t in South America or Sweden for training. Enzo Cenerelli is preparing himself both physically and psychologically to qualify for the FIS Alpine European Cup and then win a place in the Alpine Skiing World Cup before taking on the 2023 World Championships!

The young skier really hopes to be selected to take part in the trials that will be held in his native region on slopes that he knows by heart.

“I have three years to train myself, with different stages to complete before that. There’s a long road ahead,” he says. While his family is helping him rise to the challenge, the whole resort and the Alpine Collection group is also there to support and encourage him. “It would be the ultimate achievement! We would be so proud and excited to see our champion competing on the pistes where he grew up and honed his craft.” Check back in three years!

Situé en front de neige juste à côté du départ des cours de l’ESF, le lieu a été pensé pour répondre aux attentes des plus petits, à leur confort mais aussi à leur imaginaire.

La décoration inspirée de la montagne se veut rassurante, ludique, illustrée de personnages et d’animaux dont le fameux Piou Piou, le poussin mascotte des petits skieurs. Différents lieux de vie agencés comme des petits chalets à l’intérieur du club invitent à lire, jouer, se reposer… Tout est prévu pour accueillir les enfants le matin, les préparer dans le ski-room avec des casiers, des chauffechaussures mis à leur disposition. Et à l’heure du déjeuner et du goûter, les futurs champions se retrouvent dans des espaces chaleureux pour une pause bien méritée !

Il est 7 heures, Courchevel s’éveille… Alors que tout le monde dort encore paisiblement, la lumière qui s’invite dans la chambre laisse présager une belle journée ensoleillée, de quoi m’extirper du lit sans la moindre hésitation ! Dehors, la vue sur le front de neige me donne raison. Le spectacle est magique ! Et quel silence… Les remontées n’ont pas encore repris du service et les skieurs sont toujours emmitouflés sous la couette. Le spectacle des pistes, fraichement damées, encore vierges de toutes traces est un privilège que je garde encore précieusement pour moi, avant que mes très chers petits débarquent avec perte et fracas !

Réveillée par l’odeur des croissants et du chocolat chaud apportés par le personnel du room-service, la famille est au complet pour partager un copieux petit-déjeuner qui devrait nous faire dévaler les pistes avec de l’énergie à revendre !

The clock strikes 7, Courchevel begins to wake up… While most people are still fast asleep, the light shining into the room heralds a beautiful, sunny day – more than enough to get everyone out of bed! Outside, the view over the foot of the pistes proves me right; what a magical spectacle! And what exquisite silence… The ski lifts still lie idle, and most skiers are still wrapped up warm under the covers. The vision of the freshly groomed, untouched pistes is a privilege I keep for myself, before my darling little ones crash and tumble out of their rooms! Awoken by the smell of croissants and hot chocolate delivered by the room service staff, the family comes together to share a generous breakfast that should give us the energy to fly down the slopes!

9 heures Si l’on aurait volontiers prolongé la pause café dans notre petit cocon, la vue des pistes immaculées nous rappelle qu’il est temps de chausser les skis. Ni une ni deux, les enfants sont déjà sur le pont, le top départ est donné direction le ski-room de l’hôtel…

Bon prince et tout sourire, le skiman ne semble attendre que nous !

Chaussures chauffées et skis disposés directement sur le front de neige, nous voilà prêts à démarrer la journée. Deux, trois poussées et c’est parti ! Tandis que les plus grands rejoignent leur groupe ESF à quelques mètres de là, le petit dernier semble bien déterminé à descendre tout seul jusqu’à son Club Piou Piou dont le bâtiment flambant neuf jouxte l’hôtel. Nous n’avons plus qu’à nous diriger vers la remontée mécanique et à nous le domaine des 3 Vallées en amoureux !

Après avoir enchainé les plus belles pistes de Méribel, nous voilà de retour au sommet de la Saulire pour une descente mémorable, celle du « Grand Couloir », piste noire mythique de Courchevel.

La matinée touche à sa fin et il est temps de se remettre de ses émotions et de reposer des muscles en surchauffe ! L’arrivée au Bistrot Manali sur le front de neige de Courchevel Moriond n’en est que plus jubilatoire. Mon ventre crie famine et la carte prometteuse suscite déjà une certaine émulation ! Accueillis par Guillaume Robert, directeur du restaurant, nous prenons place sur la magnifique terrasse exposée plein sud. Captivée par la vue sur le sommet de la Saulire et Courchevel 1850, j’en oublierai presque que j’étais, il y a 5 minutes, au bord de l’hypoglycémie ! Mais bien vite la simple évocation du burger aux gambas et le retour des enfants, affables quant à leurs prouesses matinales me rappellent à l’ordre. Si la pièce de bœuf du boucher me fait de l’œil, je pense aux prochains kilomètres de pistes à parcourir et déguste mon dos de cabillaud à l’huile d’olive sans renoncer à contempler le panorama qui me captive. Les petits terminent leurs desserts maison du jour et nous voilà déjà plongés dans le plan des pistes pour étudier le programme de l’après-midi. Les joues agréablement chauffées par le soleil, je me résous à repartir en regrettant quand même de ne pas avoir succombé à la tatin de pommes maison !

While it is tempting to spend the morning with a coffee in our cosy cocoon, the view of the immaculate pistes reminds us it is high time we put on our skis. The children get ready in record time and we head off to the hotel ski room. With his friendly smile and charming manner, the ski room manager seems to be waiting just for us! With our boots heated and skis laid out in the snow, we are ready to start the day. Ready, set, go! While the older children join their ESF classes a few metres way, the youngest is determined to ski down on his own to the Piou Piou Club, whose brand-new building is right next to the hotel. All we have to do is make our way to the ski lift and enjoy the 3 Vallées ski area just the two of us!

After skiing down the finest pistes in Méribel, we are back to the top of the Saulire for an unforgettable downhill run – the Grand Couloir – a legendary black piste in Courchevel. The morning draws to a close and it is time to relax and give our muscles a break! Everyone is more than delighted to arrive at the Bistrot Manali at the foot of the pistes in Courchevel Moriond. My stomach is rumbling loudly and my eyes are already wide as I peruse the menu! Welcomed by Guillaume Robert, the restaurant director, we take a seat on the magnificent, fully south-facing terrace.

Captivated by the view of the Saulire peak and Courchevel 1850, I forget that I was starving just 5 minutes ago! The mere thought of a burger with king prawns, and the arrival of the children, delighted with their morning performances, bring me back to reality. While the butcher’s cut of beef is tempting, I think of the upcoming miles of pistes to cover and enjoy a cod loin with olive oil while continuing to admire the stunning panorama. The little ones finish their home-made desserts and we pore over the piste map to plan the afternoon. With our faces warmed by the sun, I decide to put my skis on – slightly regretful that I didn’t succumb to the homemade apple pie!

Off to the Moriond Racing luging piste to take on turns worthy of an F1 Grand Prix.

C’est décidé cette fois-ci, je ne passe pas à côté des douceurs sucrées qui accompagneront à merveille mon thé vert Sencha !

De retour au Bistrot Manali, l’heure du goûter a sonné. On reprend quelques forces, on se réchauffe dans les profonds canapés en cuir ou sur la terrasse pour profiter des derniers rayons du soleil qui se couche sur la Saulire. Mais bien vite, quelque chose me dit que la journée n’est pas finie et que de nouvelles expériences nous attendent. Il est vrai qu’il est bien difficile à Courchevel de rester sans rien faire, tant les activités sont variées et nombreuses.

Après concertation, direction la piste de luge Moriond Racing pour négocier des virages dignes des grands prix de F1, traverser des tunnels, zigzaguer avec le double serpent, lâcher les freins dans les lignes droites… 3 kms de pur délire ! Après fous rires et course poursuite, nos bolides nous déposent au pied du Manali, un peu euphoriques, avouons-le !

18 heures Le taux d’adrénaline redescendu, une seule chose s’impose à moi comme une évidence : m’offrir une parenthèse de détente au Spa du Manali Lodge. Sans avoir à ressortir de l’hôtel (le luxe suprême !) je fais quelques brasses dans la piscine intérieure, idéal pour détendre mes muscles, quelque peu endoloris ! Et comme mon homme est un être bienveillant (je l’oublie trop souvent !), il a pensé à tout pour me combler… Un massage relaxant aux pierres chaudes nous est réservé, l’assurance de chasser stress et fatigue.

Fredéric Steiger, chef de cuisine au Manali Lodge C’est un habitué des lieux, qui a fait de Courchevel son port d’attache pour cultiver sa passion. Fredéric Steiger était à l’œuvre derrière le piano de cuisine de l’hôtel du Manali avant même qu’elle ne devienne le Manali Lodge. Chef de cuisine des lieux, le jeune vosgien, montagnard de naissance et de cœur, retrouve ici un peu de ses racines, le calme de la nature et le goût des bons produits qu’il sublime avec rigueur et technicité. Lorsqu’il n’est pas à la pêche ou sur un chemin de randonnée à la recherche des plantes sauvages qu’il intègrera bientôt dans ses recettes, ce maestro d’une cuisine gourmande, juste et précise va à l’essentiel.

Il élabore sa nouvelle interprétation du Ceviche leche de tigre, ajuste la sauce de la pièce de la boucherie du Praz, ou du Tataki de thon avec une petite touche venue d’Asie qu’il aime associer avec modération. Après avoir fait ses armes au Four Seasons de Megève ou encore à l’Hôtel du Palais de Biarritz, Fredéric Steiger signe au Manali Lodge, avec Antony Trezy, une carte à quatre mains qui ne triche pas. Droit au but, celui de nous transmettre le goût des bonnes choses. Tout simplement.

This time, I will not miss out on the sweet treats that go so perfectly with my Sencha green tea. We are back at the Bistrot Manali and it is time for a snack. We recharge our batteries, warm up on the comfortable leather sofas or on the terrace and soak up the last rays of sunlight over the Saulire. But soon, something tells me that the day is not over, and new experiences await us. There are so many different activities, it is hard to do nothing in Courchevel. After a discussion with the family, we head to the Moriond Racing luge piste to take on dizzying turns worthy of an F1 Grand Prix, shooting through tunnels, zigzagging across the double switchbacks, and letting go of the brakes on the straight sections. More than a mile of pure thrills! After big laughs and exciting chases, our luges drop us off outside the Manali, filled with excitement, it has to be said!

6 p.m.

After the adrenaline has worn off, I have my mind set on one thing: indulging in a relaxing break at the Manali Lodge Spa. Without having to leave the hotel (what a luxury!), I have a quick swim in the indoor pool, which is perfect for soothing my aching muscles. And as my husband is a sweetheart (I often forget how much!), he has thought of everything to make me happy – a relaxing hot stone massage for both of us awaits, ensuring the last of our stress and fatigue melts away.

Fredéric Steiger, chef at the Manali Lodge Fredéric Steiger is a regular in the region who has made Courchevel his home to cultivate his passion. He was working in the kitchens of the Manali hotel before it was the Manali Lodge.

The resident chef originally from the Vosges department is a man of the mountains, and has reconnected with his roots here, with the calm of nature and the taste for fine produce that he crafts with rigor and technical prowess. When he isn’t fishing or hiking to find wild plants that he uses in his recipes, this maestro of delicious, precise cuisine looks for essential culinary experiences.

He develops his new interpretation of the Ceviche leche de tigre, adjusts the sauce to accompany a premium cut from the Le Praz butcher, and enhances the tuna Tataki with a pinch of Asian inspiration. After honing his craft at the Four Seasons in Megève and the Hotel du Palais in Biarritz, Fredéric Steiger worked with Antrony Trezy at the Manali Lodge to create a truly authentic menu.

De retour dans notre appartement comme des bienheureux, nous donnons rendez-vous à nos amis résidents un peu plus loin dans la station pour partager un apéritif et un dîner bien mérités. Retour au Bistrot Manali qui dévoile son humeur du soir : cocooning et feutrée qui invite d’emblée à partager petites confidences et grande complicité autour du feu de cheminée. Tandis que les flocons de neige tombent sur la piste immaculée et désertée, la soirée semble d’ores et déjà bien engagée, la vue du Tataki de thon, du burger Beaufort et de la Sole à la grenobloise dans nos assiettes confirment notre sentiment : nous ne sommes pas prêts de repartir ! La cuisine des chefs Trezy et Steiger aura raison de notre fatigue ! Tous les sens sont en éveil taquinés par le subtil tanin du vin de niche et le traditionnel baba au rhum revisité.

After happily getting back to our apartment, we arrange to meet our friends in the resort for a well-deserved drink and dinner.

We make our way back to the Bistrot Manali to discover the cosy, understated evening ambiance, creating the perfect setting for sharing stories and secrets by the open fire. While the snowflakes on the immaculate, empty pistes, the evening is off to a great start. And thing just get better with the tuna Tataki, the Beaufort cheeseburger, and the Sole Grenobloise. We certainly aren’t ready to leave yet! The cuisine by Antony Trezy could keep us up for hours! Our senses are all awake thanks to the subtle tannins in the niche wine and the revisited traditional rum baba dessert.

The hours slip by… It is already midnight and something tells me tomorrow will be another glorious day. I’m dreaming of it already…

It’s time to go home!

Ils sont également plus disponibles et cela nous permet de respecter les délais. » AlpineLodges a ainsi renoncé à importer du vieux-bois de Pologne, pour désormais se fournir auprès d’un fabricant Savoyard. « Une solution plus écologique mais surtout plus durable. » Dans les bureaux, l’équipe est d’ores et déjà sur le pont, mobilisée dans la recherche d’un fabricant de peintures local… A suivre !

One of the objectives shared by Fabrice Lavorel and his teams is to work with companies in the region. “Local manufacturers and artisans are more capable of adapting to the typical architecture in the region as they are more familiar with it. They are also more available, and that means that we can meet our deadlines.” In the pursuit of this goal, Alpine Lodges has stopped importing old wood from Poland, and is now supplied by a Savoyard manufacturer. “This solution is more eco-friendly, but also more sustainable.” Back in the offices, the team is now working on a new mission: finding a local paint manufacturer. Je leur présente les échantillons de revêtements, de peintures, les catalogues de mobilier pour la salle de bain…, puis je leur propose de visiter des appartements achevés afin d’ajuster leurs choix et se rendre dans le show-room de notre fabricant de cuisine à Chambéry lorsque cela est possible. ».

In Les Gets, the restaurant La Boka has imposed its glam-chic style to rapturous applause. Different spaces and ambiances combine to offer the experience of Italy the whole night through.

Il y a un cachet inimitable où se bouscule toute la poésie de l’Italie. Pour structurer les 390 m² du restaurant, Linda Rabouine, Architecte d’intérieur, Mathilde Rossi et Cécile Bertrand, Décoratrices d’intérieur chez Alpine Interiors, ont imaginé un cheminement scénarisé. « Nous avons théâtralisé les espaces puis séquencé les atmosphères par des arches métalliques traversantes. Partout nous avons ajouté de la rondeur et de l’exagération à l’italienne. La Bokka prend la curiosité par la main, c’est un vrai mariage de styles. » Douce folie, le script de La Bokka s’écrit dès le lobby où l’impressionnante cave à vins harponne le regard. Le premier espace à boire et à manger prend des allures de Trattoria lounge. Fauteuils en rotin, banquette velours et végétaux à gogo, étagères à bibelots et bocaux de citrons, le style est celui d’un cabinet de curiosité à l’italienne.

A côté, un petit boudoir british presque confidentiel fait la transition jusqu’à la salle de restaurant.

An inimitable charm conjures up the full poetry of Italy. In order to structure the 390m2 of the restaurant, interior architect Linda Rabouine and interior designers Mathilde Rossi and Cécile Bertrand at Alpine Interiors imagined a beautifully staged pathway.

“We staged the spaces then sequenced the atmospheres using crossing metallic archways. We added round curves and Italian exaggeration everywhere. La Bokka takes curiosity by the hand in a true blend of styles.” With heady whimsy, the story of La Bokka begins in the lobby, where the impressive wine cellar immediately draws the eye. The first space, where guests can eat and drink, is akin to a trattoria with a lounge aesthetic. With rattan armchairs, velvet benches and an abundance of plants, shelves of ornaments and jars of lemons, the style harks back to an Italian cabinet of curiosities. Next door, a small British-boudoir, almost hidden away, offers a transition into the restaurant’s main room.

Ici, le bar attire l’œil comme un aimant. Ilot central habillé de carreaux blancs et surmonté d’une armature autour d’un imposant pilier en cuivre scintillant, c’est définitivement le cœur de La Bokka.

Les tabourets hauts vintage invitent à refaire le monde autour d’un Spritz et d’arancini. Devant, des tables hautes suggèrent de commencer les agapes dans une ambiance décontractée, un œil sur le show du pizzaïolo, quelques tapas dans les assiettes. Pour manger les yeux dans les yeux, il faut prendre place dans les fauteuils motif pied-de-poule tout autour de la piste de danse.

The vintage bar stools are an invitation to put the world to rights over a Spritz and a plate of arancini. In front, the high tables are perfect for starting the feast in a relaxed atmosphere while watching the pizzaiolo and enjoying a tapas selection. Those who prefer to eat face to face can get comfortable in the houndstoothmotif armchairs arranged around the dance floor. And don’t forget to admire the sublime feathered lighting and their subtle Baroque look. A few ultra-cosy armchairs and low tables are perfect for rounding off the evening with one last Bellini, while the main table is ideal for family reunions. Antipasti, arancini et tutti quanti Antre de la gastronomie transalpine, La Bokka est allé chercher ses ingrédients à la source. « La Cheffe, originaire du Sud de la Botte, travaille uniquement avec des produits italiens. Nous avons déniché ce qui se fait de mieux en fromages et charcuteries. La Burrata est à tomber, et je ne parle même pas de la Stracciatella. » confirme Antony Trezy, Chef Exécutif des restaurants Alpine Restaurants.

Bien faite, bien pensée, diablement gourmande, la cuisine de La Bokka pioche dans les produits les racines du goût.

Autour des traditions italiennes, le chef Antony Trezy a imaginé une carte qui donne bien de l’embarras au moment du choix ! Selon le moment de la soirée, l’ambiance et les espaces, il y a à manger pour tous. Arancini, charcuterie et focaccia maison à partager autour d’un verre dans les fauteuils des petits salons, antipasti et tutti quanti pour se mettre en appétit, pizza autour du bar et plats généreux les yeux dans les yeux dans la grande salle.

Les inconditionnels de la pasta ne pourront résister aux Paccheri, ces grosses pâtes napolitaines en forme de tube, à la Pasta alla Vongole et ses notes iodées ou encore aux Spaghettis Cacio e Pepe, comprenez poivre et fromage. « Les pâtes sont fraîches.

Il y a eu un gros travail sur les sauces pour trouver celles qui les enroberont le mieux selon leurs formes. » commente Antony Trezy.

Chez La Bokka, on ne transige pas avec les traditions, ni avec le plaisir. C’est comme ça que les classiques s’affirment : des assiettes de bonheur et du goût plein les fourchettes. Le voir à l’œuvre derrière son four ouvre déjà l’appétit. D’un geste rapide et maîtrisé, le pizzaïolo détend son pâton pour y déposer une garniture généreuse. Maturée autant qu’il faut pour qu’elle développe de vrais arômes boulangers, cette pâte-là n’est pas de celle qu’on laisse sur le bord de l’assiette. Dessus, c’est toute l’Italie qui défile en ordre de bataille : la sauce tomate d’abord, rouge soleil, une Stracciatella coulante à souhait, de la charcuterie fondante aussi fine qu’une feuille de papier à cigarette. A déguster au bar du bout des doigts, à partager avant de commencer ou même à emporter chez soi, la pizza a trouvé son temple.

Seeing him at work behind his oven is already enough to make your mouth water. Using rapid, controlled movements, the pizzaiolo stretches his dough and covers it with generous toppings. Sur les hauteurs des Gets, au Mont Caly face au Mont Blanc, marcheurs et amis des bêtes peuvent découvrir une activité originale et sportive : la cani-rando, soit la randonnée pédestre aidée par un chien en montagne. Équipé d’une ceinture matelassée reliée à une longe élastique, le marcheur est soulagé dans l’effort grâce au chien qui le tracte. Il le suit en le guidant par la voix et des gestes précis. En bonne compagnie vous voilà harnaché pour arpenter les sentiers avec, en prime, le Mont Blanc en toile de fond.

Les enfants (de plus de 10 ans) apprécient tout particulièrement cette activité qui développe un rapport affectif entre l’animal et l’homme et leur donne l’occasion de pratiquer la randonnée de manière plus ludique. Une bonne façon de ne plus entendre l’éternelle question « quand est-ce que l’on arrive ? » ! Pour les adultes c’est aussi un bon moyen de découvrir de nouveaux itinéraires et d’avaler les kilomètres. Car la dimension sportive n’est pas laissée de côté.

En montée, les chiens apportent une aide non négligeable.

High above Les Gets on Mont Caly facing Mont Blanc, walkers and animal lovers can discover an original sporting activity – dog hiking!

Equipped with a padded belt attached to a long elastic band, walkers can put in less effort thanks to the dog pulling them along. Simply follow your furry companion and guide them with vocal commands and precise gestures. In great company, you can strap yourself in and explore the alpine paths with Mont Blanc in the foreground.

Children (over 10 years only) will really enjoy this activity, which helps to develop an affective connection between human and animal, as well as offering the chance to try a different and fun way of hiking. A great way to stop the kids asking the eternal question: “Are we there yet?” For adults, it is also a good way to discover new routes and get more miles under your belt. After all, this is still a sporting activity, but the dogs offer a certain boost in the uphill sections.

Grâce à un matériel adapté, l’activité est accessible à tous. Des stages et des séances de perfectionnement sont également organisés sur cet espace réservé.

Aux Gets, dans la résidence Annapurna, le Vina Annapurna bouscule l’offre culinaire de la station. Coup de fraîcheur et vent de modernité, la cuisine imaginée par Antony Trezy, Chef Exécutif des restaurants Alpine Restaurants, mise en musique par le Chef Vincent Vallin, charme les papilles d’une créativité qui fait du bien.

Si la télécabine à l’entrée de la résidence ancre l’identité montagne, l’intérieur du Vina Annapurna joue sur un esprit résolument chic et chaleureux. Canapé velours dans un camaïeu de bleu nuit, coussins, fauteuils et tables basses habillent l’espace où il fait bon se retrouver autour d’un verre de vin. Florian Amant, Responsable de Salle, ne saurait que trop recommander la cuvée Princens du domaine Saint-Germain en Savoie, un vin rouge de cépage Persan aux tanins fondus et aux notes de fruits confits. Un must avec une belle assiette de charcuterie à partager pour patienter avant le dîner. La carte regorge de petites pépites, grandes appellations et trésors de vignerons, et il y en a pour tous les goûts. L’entrée en matière, déjà savoureuse, se prolonge côté déco par la douceur du bois, des éclairages feutrés et des jolies assises aux dossiers de cuir.

Assiettes de fraîcheur et tonalités asiatiques Si le vin lui a donné son nom et continue de se savourer du fond des canapés, la gastronomie mène ici clairement la danse. Le ton est d’ailleurs donné avec une cuisine grande ouverte sur la salle, un indice révélateur pour les gourmets et épicurieux de tout ordre. Ici, c’est dans les assiettes que ça se passe ! Emotions et démonstrations à toutes saveurs, le Vina Annapurna est une scène pour qui veut surprendre ses papilles avec une jolie partition. « Nous proposons une cuisine française de belle qualité, fraîche et généreuse, parfois soulignée de quelques notes asiatiques, ainsi que des propositions végétariennes et vegan. La carte change très régulièrement. » explique Antony Trezy.

Herbes aromatiques, le goût de la nature A la carte justement, du frais et rien d’autre, en approvisionnement local pour les viandes, les légumes et les poissons. Sous les couteaux du Chef Vincent Vallin, la nature passe à la casserole au rythme des saisons et se plait à inviter les herbes du jardin. « Je suis un grand amateur d’herbes aromatiques. Nous avons d’ailleurs aménagé un petit jardin devant le restaurant avec du basilic thaï, différentes sortes de menthes, de la sauge, du thym, du serpolet. » ajoute le Chef. Résultat, les assiettes s’empourprent de jolies couleurs comme avec le Filet de Truite, bouillon à la mélisse et légumes de saison.

L’originalité tient à une herbe, un bouillon, un assaisonnement, une association qui surprend et séduit. Le Chef ose et on aime ça ! Si elle s’inspire çà et là de l’Asie, la carte s’ancre plutôt dans un esprit fusion, empruntant aux deux cultures le meilleur de chacune à l’image de l’indétrônable Thon mi-cuit à la plancha, épices thaï, purée carotte-gingembre et chou pak choï.

En terrasse le midi pour une salade Caesar bien croquante, un burger généreux en Beaufort, à l’intérieur le soir autour d’un Risotto de crozets ou d’une Polenta au siphon, tous les prétextes sont bons pour se faire plaisir sans concession.

« Le Vina Annapurna est un rendez-vous pour la convivialité.

L’ambiance est chaleureuse, un peu comme un cocon, on s’y sent bien. C’est le lieu de soirées entre amis, des dîners en amoureux, des déjeuners sans se presser si l’agenda le permet. Il y a une vraie sincérité. » explique le Responsable de Salle. Et les soirées Jazz du jeudi lui donnent raison. Voix suave et atmosphère cosy sont le parfait combo d’un moment hors du temps. Il suffit d’ailleurs bien souvent d’une seule note à la chanteuse Tania pour envoûter son public, sensuelle, ronde, une note en velours. Le Vina Annapurna est ouvert toute l’année, sept jours sur sept, midi et soir en hiver, du mercredi au dimanche en intersaison.

Herbs, the taste of nature The menu exclusively features fresh ingredients and locally sources meats, vegetables and fish. Driven by Chef Vincent Vallin, nature is expressed in the kitchen in keeping with the seasons, topped with a selection of garden-grown herbs. “I am a big fan of herbs. We have even created a small garden in front of the restaurant with Thai basil, a variety of mints, sage, thyme and wild thyme,” says the chef. The result is beautifully colourful dishes including the filet of trout, lemon balm broth and seasonal vegetables. The originality of this creation is down to a herb, a broth, seasoning, and surprising, enchanting combinations. The chef is daring, and his gambles pay off! While the menu draws inspiration from across Asia, it is rooted in a fusion between the two cultures, extracting the best of both worlds as proved by the incomparable griddled mi-cuit tuna with Thai spices, a carrot and ginger purée and pak choi.Whether enjoying a crunchy Caesar salad or a burger with lashings of Beaufort cheese on the terrace in the afternoon, or a Crozet pasta risotto or a polenta mousse indoors in the evening, there are so many reasons to indulge to your heart’s desire.

The vast kitchen opened out onto the dining area sets the scene, offering a quality guarantee for foodies and gourmets alike. But the real show is found in each dish!

While the chairlift at the entrance to the residence establishes an alpine identity, the interior at Vina Annapurna plays with a staunchly chic and welcoming atmosphere. Velvet sofas in shades of midnight blue, cushions, armchairs and coffee tables adores the space – the perfect setting for a glass of wine. Florian Amant, Restaurant Manager, is quick to recommend the Princens vintage from the Domaine Saint-Germain in Savoy, a red wine made with Persan grapes offering melted tannins and notes of preserved fruits. A must-have accompaniment to a mouthwatering charcuterie platter while waiting for dinner. The menu is overflowing with little gems, leading wineries, and hidden secrets.

There really is something for everyone. This already delicious introduction continues in the interior design, upheld by the soft wood panelling, sleek lighting, and eye-catching leather-backed chairs. “Vina Annapurna is where warm welcomes come to life.

There is a friendly, cocooning atmosphere; you feel good here. This is the setting for evenings with friends, romantic dinners, and relaxed lunches. There is a real sincerity,” says the Restaurant Director.

The Thursday Jazz nights certainly prove him right. Suave vocals and a osy ambience are the perfect combination for timeless moments. All it takes is a single, sensual, velvety note from singer Tania to bring the public under her spell. The Vina Annapurna is open throughout the year, seven days a week, for lunch and dinner in the winter, and from Wednesday to Sunday in the interseason period.

Courchevel Moriond, 1 650 mètres d’altitude et autant de hauteur dans les assiettes du Bistrot Le C. A la table de la résidence Le C, le goût s’élève pour toucher les papilles en plein cœur. De Bistrot, l’établissement a le nom et l’identité, un vrai lieu de vie où les assiettes débordent de saveurs et l’atmosphère de chaleur. Chic et contemporaine, sa décoration est un sas vers la convivialité : vieux bois, du cuir ici et là, un joli comptoir et un alambic en cuivre rutilant, des niches abritant quelques crus vignerons à donner des arguments à la gourmandise. « Le Bistrot Le C est atypique à Courchevel. A l’écart des grands axes, il dégage une atmosphère intimiste qui plait. Nous l’avons voulu chaleureux et gourmand avec une cuisine bistronomique élégante et un service irréprochable. » explique Julien Moulinet, Directeur d’exploitation des restaurants.

En salle, les serveurs mènent le bal d’un professionnalisme bienveillant, dans les assiettes c’est le produit qui fait le show.

Bistronomie, cuisine de produits Le produit est la star de la soirée. A la carte du Bistrot Le C il s’affiche en toutes lettres : le Poireau, le Foie Gras, le Cabillaud, le Citron ou encore le Chocolat. Les intitulés disent tout. « On sait ce que l’on mange, le produit est au centre de l’assiette, sublimé mais jamais dénaturé. » confirme le Chef Exécutif Antony Trezy.

Elle est là l’âme du bistrot, une cuisine française gourmande et créative, simplement élégante, une cuisine de saisons et de régions. « J’ai des atomes crochus avec la gastronomie basque, on en retrouve des influences comme avec le boudin au piment d’Espelette. Pour le reste, la tradition française est à l’honneur. » Lièvre à la Royale, Escargots de Bourgogne, Lentilles du Puy, la carte se balade d’une région à l’autre, la richesse est dans la diversité et l’originalité dans une revisite qui fait mouche. Avec les escargots un jus à l’Arquebuse, avec les lentilles un bouillon au lait de coco et citronnelle, avec le tourteau de la granny smith et du vinaigre de framboise. Le classicisme est dans le produit, la créativité partout ailleurs. Parmi les incontournables que les clients plébiscitent il y a le Céleri, son écrasé à la Truffe noire, émulsion de champignon et vieux comté, une des propositions végétariennes qui donnent faim. « Il y en a pour tous et pour tous les goûts, c’est aussi ça l’esprit convivial d’un bistrot. » conclut Julien Moulinet. Ouvert tout l’hiver de 19h à 23h30, le Bistrot Le C n’a pas fini de régaler gourmands et gourmets.

Bienvenue à Julien Moulinet Héritage familial et alignement favorable de planètes, le destin de Julien Moulinet était tout tracé. Inspiré par un papa cuisinier, Julien débute naturellement sa carrière dans la restauration avec un talent particulier pour le bar et le service. Entre SaintTropez et Courchevel, ses expériences l’amènent à toujours plus de responsabilités. Paris sera un tremplin. Directeur de restaurant à l’Allénothèque du chef Yannick Alléno, il développe une expertise essentielle et une rigueur presque chirurgicale en management. Lorsqu’il rejoint Alpine Restaurants comme Directeur d’exploitation des restaurants en janvier 2020, Julien amène dans ses bagages professionnalisme et vision exaltée d’une gastronomie qui sait se réinventer, fédératrice et gourmande.

Dans ces montagnes qu’il connait par cœur, il fait du service la clé de voûte d’une expérience pas comme les autres. Sourires, petites attentions et grands moments, son sens de l’accueil est un atout cœur. Aucune place pour le hasard, mais un travail obstiné à la mesure de la confiance qu’on lui témoigne. Welcome, Julien Moulinet!

Backed by a family heritage and a positive aligning of the planets, the Julien Moulinet’s destiny was mapped out for him. Inspired by his father, a chef, Julien naturally started his career in a restaurant, displaying a particular talent for bar work and table service.

In Saint-Tropez and Courchevel, his experiences continuously pushed him to take on more responsibilities. Paris then offered his big break. As restaurant director at the Allénothèque by Chef Yannick Alléno, he developed an essential expertise and an almost surgical rigor in the art of management. When he joined Alpine Restaurants as Restaurant Operations Director in January 2020, Julien brought with him professionalism and an exciting vision of gastronomy with all its potential to reinvent, unite and delight.

While working in the familiar mountain setting, he has made service the cornerstone of a truly unique experience. With smiles, little extras and big moments, his sense of hospitality is a huge hit. Nothing is left to chance, and he works tirelessly to uphold the trust others place in him. Julien sees restaurants as his calling, and this new season is yet another chance to champion the group’s values. The warmest of welcomes from everyone in the Alpine Collection team!

Bistronomy, the art of ingredients Ingredients are the stars of any evening, and the menu at the Bistrot Le C displays them in all their glory: Leek, Foie Gras, Cod, Lemon and even Chocolate. The titles of each dish say it all. “You know what you are eating, the main ingredient is at the centre of the plate, enhanced but never distorted,” says Executive Chef Antony Trezy.

This is where the bistro gets its soul, through deliciously creative and elegantly simple French cuisine inspired by seasons and regions. “I have a lot of affinity with Basque gastronomy, and you can see influences in my cooking such as the blood sausage with Espelette pepper. The rest celebrates French culinary tradition.”

With Hare à la Royale, Burgundy Snails and Puy Lentils, the menu flits from one region to another, boasting a wealth of diversity and originality in a wildly successfully culinary revamp. The snails are served with an Arquebuse liqueur jus, the lentils with a coconut and lemon grass stock, and the crab with granny smith apple and raspberry vinegar. The classicism is in the main ingredients, while creativity works its magic everywhere else. The most popular dishes include the Celery with black truffle mashed potatoes and an aged comté and mushroom emulsion – one of the mouth-watering vegetarian options. “There’s something for everyone, which is part of the friendly bistro spirit,” says Julien Moulinet. Open all winter from 7p.m. to 11.30p.m., the Bistrot Le C is set to delight foodies and gourmets for years to come!

Located away from the main avenues, it exudes an intimate atmosphere that keeps people coming back.

We wanted to make it welcoming and indulgent with elegant, bistronomic cuisine and flawless service,” says Julien Moulinet, Restaurant Operations Director. In the dining area, the waiters glide back and forth with smiling professionalism, but when it comes to the food, the ingredients run the show.

Épluchez les gousses d’ail, les mettre dans une casserole, recouvrez d’eau et faites cuire jusqu’à ébullition (démarrage à froid). Videz l’eau et recommencez l’opération quatre fois.

Mixer au blender le persil avec les échalotes, l’ail blanchi 5 fois, le balsamique blanc, la pâte Wasabi et un peu d’eau, jusqu’à obtention d’une consistance lisse. Puis monter avec l’huile de pépins de raisin.

Mélanger avec un peu de mayonnaise, jusqu’à obtenir une consistance de coulis.

Débarrasser en pipette.

Réaliser la vinaigrette soja

Réunir les ingrédients (1) puis émulsionner avec les huiles (2) pour obtenir une vinaigrette.

Réaliser la marinade

Mélanger tous les ingrédients.

Préparer le Thon rouge

Mariner le Thon rouge pendant 24 heures dans la marinade.

Au terme de ce temps, faites chauffer une poêle avec de l’huile d’olive. Une fois que l’huile est bien chaude, colorer en allerretour le Thon sur chaque face à la poêle.

Une fois cette opération effectuée, tailler le Thon en lamelles fines.

Pour le dressage

Disposer les lamelles de Thon, arroser généreusement de vinaigrette soja, ajouter des lamelles de radis, les pickles de légumes, quelques herbes, des pétales de gingembre confit et des graines de sésame selon votre gout.

Ajouter le coulis Wasabi et servir aussitôt.

Make the wasabi coulis

Blanche the parley leaves in salted boiling water for 1 minute then cool in ice water.

Peel the garlic clove and put it in a saucepan. Cover with cold water and bring to the boil. When boiled, empty out the water and repeat 4 times.

Blend the parsley and the shallot, the blanched garlic, the white balsamic, the wasabi paste and a drop of water until you have a smooth mixture. Beat with the grapeseed oil.

Combine with a little mayonnaise until you achieve a coulis consistency.

Place in a pipette for later.

Make the soy vinaigrette

Combine the ingredients (1) then emulsify with the oils (2) to create a vinaigrette.

Make the marinade

Combine all the ingredients.

Prepare the red tuna

Marinate the red tuna for 24 hours in the marinade.

After marinating, heat some olive oil in a frying pan. When the oil is hot, brown the tuna slices on both sides.

When all sides are browned, cut the tuna into thin slices.

Presentation

Place the tuna slices on the plate, drizzle a generous amount of soy vinaigrette over the top, add the slices of radish, pickled vegetables, a few herbs, the petals of preserved ginger, and sesame seeds to taste.

Add the wasabi coulis and serve.

Préparer les Haricots Tarbais

La veille au soir, recouvrer les Haricots Tarbais d’environ deux fois et demi leur volume d’eau.

Le lendemain, égoutter et rincer les Haricots Tarbais. Porter un grand volume d’eau à ébullition puis plongezles-y dedans. Ajouter une feuille de laurier, quelques branches de thym et cuire 1 heure à frémissement. Égoutter et réserver.

Cuisson des souris d’agneau

Préchauffer le four à 180°C. Éplucher, couper l’oignon et la carotte en gros morceaux.

Dans une cocotte, marquer les souris en cuisson avec une goutte d’huile d’olive.

Lorsque les souris sont colorées, ajouter la carotte et l’oignon, puis mouiller avec le jus brun à mi-hauteur. Ajouter 1 feuille de laurier et 1 branche de thym, puis braisezles au four pendant 1h30 avec un couvercle.

Sortir les souris d’agneau de la cocotte, passer le jus dans une passoire puis faitesle réduire. Rectifier l’assaisonnement et réserver.

Prepare the Tarbais beans

Glacer les souris au four pendant 30 minutes dans la cocotte à découvert, en arrosant très régulièrement avec le jus réduit. Il est important d’arroser très régulièrement les souris pendant la cuisson pour obtenir une viande brillante et caramélisée.

The night before, cover the Tarbais beans with 2.5 times their volume in water.

The next day, strain and rinse the Tarbais beans. Bring a large volume of water to the boil and pour them in. Add a bay lead and a few sprigs of thyme, and simmer for 1 hour. Strain and set aside.

Éplucher et ciseler l’oignon, détailler le poivron en dés. Faites chauffer dans une cocotte 3 cuillères à soupe d’huile d’olive. Faites-y revenir à feu doux l’oignon et le poivron, puis ajouter le chorizo taillé en dés et débarrassé de sa peau, la gousse d’ail pelée, dégermée et coupée en petits dés. Faites cuire deux minutes avant d’ajouter les Haricots Tarbais.

Cooking the lamb shanks

Dresser les Haricots Tarbais dans une assiette creuse. Puis ajouter la souris au centre, arroser généreusement de jus de cuisson.

Preheat the oven to 180°C. Peel and cut the onion and the carrot into large chunks.

In a casserole dish, sear the shanks with a drop of olive oil. When the shanks are browned, add the carrot and onion then add the brown stock up to halfway. Add 1 bay leaf and 1 sprig of thyme, then braise in the oven with a lid on for 90 minutes.

Remove the shanks from the dish, pour the cooking jus through a strainer and reduce it. Adjust the seasoning and set aside.

Presentation

Glaze the shanks in the oven for 30 minutes by putting them in the casserole dish without a lid and regularly pouring over reduced jus. It is important to pour the jus over very often during cooking to obtain a shiny, caramelized cut of meat.

Peel and finely chop the onion and dice the pepper. Heat 3 tbsp. of olive oil in a casserole dish. Sweat the onions and the pepper on low heat, then remove the skin from the chorizo, dice it, and add to the dish. Peel the clove of garlic, remove the inner shoot, dice finely and add to the dish. Cook for 2 minutes before adding the Tarbais beans.

Spoon the Tarbais beans into a soup plate.

Add the shanks in the centre and generously pour over the cooking jus.

Decorate with a few herbs and serve immediately.

Réaliser et cuire la pâte

À l’aide d’un batteur muni de la feuille, mélanger le beurre avec le sucre glace, la poudre d’amande, le sel de Guérande et la vanille en poudre. Émulsionner en ajoutant les œufs, puis verser la farine.

Réserver au réfrigérateur pendant 4h.

Abaisser la pâte à 3mm d’épaisseur à l’aide d’un rouleau à pâtisserie, puis foncer 8 cercles légèrement beurrés de 3 cm de hauteur et de 8 cm de diamètre.

Faites cuire les fonds de tarte à blanc à 160°C (th. 5-6) pendant 20 minutes.

Réaliser le crumble

Dans un batteur muni de la feuille, sabler le beurre, le sucre et la farine.

Puis ajouter les amandes effilées.

Monter la crème d’amandes

Dans un batteur muni de la feuille, monter le beurre avec le sucre semoule et la poudre d’amande. Incorporer les œufs progressivement, puis le rhum.

Débarrasser dans une poche à douille et garnissez les fonds de tarte cuit à blanc préalablement.

Pour le montage

Augmenter le four à 170°C (th. 6). Éplucher les poires et conserver le haut pour le mettre au centre de chaque tartelette. Couper le reste en quartiers et disposez-les tout autour en les enfonçant légèrement dans la crème d’amande.

Ajouter le crumble sur la crème d’amande et entre les poires, puis enfourner. Laissez cuire environ 25 minutes. Laisser refroidir, puis servir accompagné d’une boule de glace à la Vanille ou au Yaourt.

Make and cook the pastry

Using an electric beater with a paddle attachment, mix the butter with the icing sugar, ground almonds, Guérande salt and vanilla powder. Emulsify by adding the eggs before pouring in the flour. When combined, put in the fridge for 4 hours.

Roll the pastry until it is 3mm thick using a rolling pin, then make 8 circles with an 8cm diameter and a crust pinched 3cm high. Cook the tart bases at 160°C for 20 minutes.

Assembly

Increase the oven temperature to 170°C. Peel the pears and keep the tops to put in the centre of each tart. Cut the rest into quarters and place them in the tart bases, pushing them gently into the almond cream.

Add the crumble on top of the almond cream and between the pears, then put in the oven. Cook for around 25 minutes.

Allow to cool, then serve with a scoop of vanilla ice cream or yoghurt.

Plus de 60 participants se sont affrontés en stableford tout au long d’une magnifique journée ensoleillée pour terminer avec la remise des prix et le dîner au Bistrot Manali.

More than 60 players went head to head with stableford scoring for a beautiful sunny day of competition, rounded off with an awards ceremony and dinner at the Bistrot Manali.

Les meilleurs joueurs se sont vus remettre des nuitées, des repas et bien d’autres lots, offerts par le groupe Alpine Collection, organisateur de l’évènement.

The best players received nights in the group’s hotels, restaurant meals, and a range of other prizes handed out by the Alpine Collection group, which organized the event.

We had dinner at vina Annapurna. What did we like most... the wine list. Plus the ‘normal’ dishes like a Caesar salad, that they made so wonderful! With care, with taste. Really had a wonderful dinner and evening. Chapeau !

Si vous recherchez une bonne table avec de bons vins dans un joli cadre tendance et soigné, avec un service irréprochable…, allez passer la soirée chez Vina Annapurna ! Tout est parfait, l’assiette, le service et le lieu, merci pour cette délicieuse soirée passée dans votre restaurant. Ce jeune chef mérite tous nos compliments !

Voilà certainement un des meilleurs restaurants de Courchevel.

Nous sommes venus dîner entre amis et nous n’avons pas été déçus. Nous avons été très bien accueillis avec le sourire dans une salle joliment décorée. La cuisine concoctée par le chef est magnifique de l’entrée au dessert. Vous pouvez y aller en confiance. Merci à l’équipe du bistrot le C pour cet excellent moment.

Pas toujours aisé de trouver une bonne table en station. Et bien voici, c’est chose faite ! Le personnel est très professionnel, attentif, aimable et avenant. Peu de plats proposés sur la carte, ce qui est souvent un gage de qualité et au Vina Annapurna, c’est le cas.

Nous y sommes retournés 2 soirs de suite tant les plats nous ont plu. Nous ne pouvons que recommander ce restaurant qui offre un rapport qualité-prix magnifique.

Une belle découverte !

Habitués des Gets, nous avons poussé pour la première fois la porte de cet établissement en août pour dîner et ce fut une vraie belle découverte ! Mi cuit de thon superbe et desserts très aboutis.

Nous avons testé de nouveau à midi la formule à 18 euros et très bien aussi. Vraiment, un cuisinier talentueux et une équipe en salle également très agréable. On recommande et on reviendra lors de notre prochain séjour.

Très bon accueil, excellente cuisine, nous nous sommes rÊgalÊs, et nous reviendrons !! Le temps n’Êtait pas favorable pour profiter de la terrasse, mais nous n’avons pas ÊtÊ dÊçu par l’intÊrieur chaleureux, une table et des fauteuils confortables. Especially the deserts are incredible, like the lemon pie.....! We were in Courchevel last week and the Manali is also open this summer ! We had a great lunch in the sun on the terrace.

PÉCHÉ MIGNON DES DESIGNERS On l’aime, un peu, beaucoup, chaleureusement ! Le tissu, qu’il soit sobre ou coloré habille nos intérieurs, nos fenêtres, nos canapés…

A la montagne, fibres naturelles, laine épaisse et douce fourrure s’invitent sans modération !

Effets de matière, palettes de couleurs, univers graphiques…, avec les tissus les décorateurs laissent libre cours à leur imagination nourrie par des éditeurs toujours plus inspirés. Mathilde Rossi, Responsable Décoration d’intérieur chez Alpine Interiors, ne cache pas son affection pour les collections de l’éditeur français Casamance avec lesquelles elle imagine les intérieurs de ses clients.

Interplaying materials, varied colour palettes, and bold creativity…

With fabrics, decorators let their imaginations run wild, drawing on increasingly inspired designers and manufacturers. Mathilde Rossi, Head of Interior Design at Alpine Interiors, is a staunch supporter of the collections by French company Casamance, which she uses in her clients’ homes.

« Nous sélectionnons en général des tons neutres pour les pièces importantes comme le canapé ou les rideaux mais apportons des touches de couleurs avec des coussins ou des plaids. Les jacquards et les velours de la collection « les nuits parisiennes », les motifs graphiques de « Visconti » se marient merveilleusement bien avec la collection « Tendance » qui propose des tissus unis incontournables et intemporels. ». Côté matières, place aux fibres naturelles dont le lin apprécié pour sa grande résistance à l’usure et son style élégant, faussement décontracté ! La laine, naturelle et chaleureuse trouve légitimement sa place dans un décor de bois et de pierre, alliée réconfortante dans laquelle on vient volontiers se blottir. Feutrée, tricotée, tuftée, bouclée…, elle est la bienvenue dans chaque pièce de la maison et on l’adopte à l’unanimité ! Une matière qu’affectionne tout particulièrement Mathilde et qu’elle retrouve dans la collection de textiles pour la maison “Refined Layers” lancée par la marque Ethnicraft il y a un an. Celle-ci se compose de coussins et de plaids principalement en lin, coton et laine dont les couleurs se conjuguent aux rayures tissées dans la matière. Un coup de cœur partagé chez Alpine Interiors !

“We generally select neutral tones for central pieces such as sofas and curtains, but add splashes of colour for cushions and rugs. The Jacquard weaves and velvets from the Les Nuits Parisiennes collection and the bold motifs in the Visconti collection pair particularly well with the Tendance collection and its timeless block-colour fabrics.” As for the materials used, natural fibres are a popular choice. They include flax, which is appreciated for its high resistance to wear-and-tear and its casual-chic, elegant style. Natural, warm wool is also a worthy contender in interiors featuring wood and stone, offering a comforting medium and a cosy haven. Whether felted, knitted, tufted or curled, it is a welcome addition to every room in the house and loved by all!

Mathilde has a real penchant for this material, and sources hers from the Refined Layers home fabrics collection launched by the Ethnicraft brand a year ago. The series boasts cushions and rugs in flax, cotton and wool whose colours blend together in the striped motifs. One of our favourites at Alpine Interiors!
