C’est avec beaucoup d’enthousiasme que je vous présente le premier numéro d’Alpine Collection Magazine, projet cher à nos équipes qui partagent l’amour de la montagne et la quête d’excellence. Avec ce nouveau magazine, nous avons à cœur de dévoiler notre savoir-faire et nos valeurs qui contribuent aujourd’hui à notre réussite. Depuis sa création en 1997, Alpine Collection est en constante évolution avec une croissance globale dont nous sommes fiers. Nous poursuivons notre développement sur les plus beaux domaines skiables des Alpes, à savoir l’Espace Killy, les 3 Vallées et les Portes du Soleil avec à l’horizon, la livraison de cinq programmes dans les stations les plus prestigieuses. Des chalets et appartements dont près de 100 % des propriétaires confient la gestion locative à notre label Alpine Residences. Un succès basé sur la confiance, la personnalisation et la proximité.

Alpine Collection c’est aussi la création de restaurants pour apporter toujours davantage de services à nos résidents. Avec quatre établissements dont deux inaugurés cet hiver, Alpine Restaurants annonce d’ores et déjà l’ouverture de deux nouvelles tables l’année prochaine et prévoit d’en compter une dizaine en 2022 ! De la construction à la décoration, de la restauration à la détente, bien vivre en montagne avec Alpine Collection, c’est tout un art, à découvrir dans nos pages… •

It is with the utmost enthusiasm that I am introducing the very first edition of Alpine Collection, a project dear to the hearts of our teams, who share a love of the mountains and a search for excellence.

With this new magazine, we wanted to reveal our expertise and the values that have contributed to our success. Since its creation in 1997, Alpine Collection has been constantly developing and we are proud of its overall growth. We are continuing our expansion in the finest ski areas in the Alps – the Espace Killy, the 3 Vallées, and the Portes du Soleil – with the delivery of five programmes in the most prestigious resorts set for the near future. Almost every single owner of our chalets and apartments entrusts our Alpine Residences label with their management. This success is founded on trust, bespoke service, and a local presence.

Alpine Collection is also focusing on the launch of restaurants to continue providing our residents with even more services. With four establishments, including two inaugurated this winter, our Alpine Restaurants label is delighted to announce the opening of two new restaurants next year with a total of ten in 2022! Rencontre avec un entrepreneur engagé et visionnaire, prêt à relever tous les défis pour répondre aux attentes de ses clients.

Sa passion pour la montagne l’anime depuis son plus jeune âge.

De sa Hollande natale, enfant, Patrick Remme se rend régulièrement en France pour pratiquer le ski sur les plus belles pistes des Alpes.

Inconditionnel de la région, il fréquente différentes stations et commence, il y a 22 ans, à étudier les possibilités d’investir dans l’immobilier. Architecte de formation, il entreprend de vastes projets de rénovation aux Pays-Bas, notamment à Amsterdam pour des programmes immobiliers haut de gamme au bord des canaux.

Son amour de la montagne le mène quelques temps plus tard à Méribel à la recherche d’un bien ancien à réhabiliter. « Très vite je me suis rendu compte que je ne trouverai pas de biens correspondant à mes attentes. C’est alors que j’ai fait la connaissance d’un des architectes à l’origine de la création de la station de Courchevel La Tania. Nous nous sommes lancés dans le projet d’achat de parcelles et de construction de chalets privatifs. » Un projet qui marque le début d’une longue aventure. Nous sommes dans les années 2000 et Patrick Remme constate une réelle demande immobilière dans les Alpes françaises avec peu de promoteurs à l’époque pour y répondre. « J’ai commencé par la rénovation d’un hôtel aux Gets puis j’ai entrepris la construction de programmes de plus en plus importants en me concentrant sur trois secteurs privilégiés : le domaine des 3 Vallées avec Méribel et Courchevel, Les Portes du Soleil avec Les Gets et Morzine et l’Espace Killy avec Tignes et Val d’Isère. »

We met up with this committed, visionary businessman who is prepared to rise to any challenge to meet his client’s expectations.

His passion for the mountains has driven him since he was a boy.

Born in Holland, Patrick Remme regularly travelled to France to ski on the finest slopes of the French Alps. He fell in love with the region and its different resorts, and began looking into property investment 22 years ago. Drawing on his background as an architect, he launched a number of vast renovation projects in Netherlands, including premium residential developments on the banks of the canals in Amsterdam. His love of the alpine world later led him to Méribel in search of an old property to revamp.

“I quickly realised I wouldn’t find anything that suited me. That was when I met one of the architects who helped design the resort of Courchevel La Tania. I decided to buy plots of land and began building private chalets.”

This project was the first in a long-term adventure. During the 2000s, Patrick Remme realised there was a major property demand in the French Alps, but few developers to meet it. “I began by renovating a hotel in Les Gets, then took on increasingly largescale construction programmes focused on three high-potential sectors: the 3 Vallées with Méribel and Courchevel, Les Portes du Soleil with Les Gets and Morzine, and the Espace Killy with Tignes and Val d’Isère.”

Personnalisation et services haut de gamme

Installé sur Annecy, le label Alpine Lodges, constructeur et promoteur, propose ainsi des appartements et chalets à la vente, le plus souvent dans le cadre d’un investissement locatif. Rapidement, Patrick Remme, rejoint en 2012 par Morgan Bientz, directeur général, songe à créer un service de gestion et d’exploitation des résidences afin de répondre aux nombreuses demandes des propriétaires. Alpine Residences est lancée avec une équipe dédiée qui comprend aujourd’hui une quarantaine de personnes. « Une gestion locative réservée uniquement aux biens que nous vendons » précise Patrick Remme, qui se félicite de la réussite de cette entité reconnue et très présente dans les plus belles stations des Alpes. Pour aller encore plus loin dans son offre de prestations et la satisfaction optimale de ses clients, il ajoute bientôt une nouvelle corde à son arc avec Alpine Interiors. « L’architecte d’intérieur Margriet Kahle, entourée d’une équipe de cinq collaborateurs, proposent aux propriétaires de les accompagner dans leur projet d’aménagement et de décoration intérieure. Du choix des revêtements aux luminaires, Alpine Interiors s’occupe de tout. Un vrai confort pour nos clients qui résident souvent à l’étranger. Nous livrons un produit clé en main, pensé avec soin jusqu’au moindre détail. »

Du sur-mesure qui constitue la valeur ajoutée du groupe et le distingue sur le marché : « Chaque appartement ou chalet est personnalisable à souhait. Sur plan, les clients peuvent choisir les surfaces, la disposition des pièces, leur cuisine, leur sol, leur papier peint jusqu’aux poignées de porte. Loin des standards, nous proposons des biens uniques. » Privilégiant des emplacements premium, au pied des pistes et à proximité de toutes les commodités, Alpine Lodges demeure également très attaché à l’architecture des résidences qui marient style contemporain et matériaux nobles tout en restant en harmonie avec son environnement. « Il ne s’agit pas de dénaturer le paysage, bien au contraire. Based in Annecy, the Alpine Lodges property construction and development label offers apartments and chalets for sale, generally for rental investment plans. Clients can choose the dimensions, the layout of the rooms, the type of kitchen, floor and wall finishings and even the door handles. We deal in exclusively unique properties,” says Patrick Remme. Focusing on premium locations at the foot of the slopes and close to all commodities, Alpine Lodges is also very attached to the architectural style of its residences, which blend contemporary aesthetic and fine materials while remaining in harmony with their surroundings. “We are not spoiling the landscape. Quite the opposite, in fact! Stéphane Curtenaz was an associate architect on the Kinabalu project and the Annapurna residence in Les Gets. In keeping with the past or current architectural presence, he designs a “beautiful, chic, long-lasting” projects in harmony with their surroundings.

“We’re not here to revolutionise the setting, and spectacular style is not adapted to the construction. This is not about surprising people, but rather integrating the project with a certain discretion.”

Wood, stone and soul While Alpine Lodges offers real modernity in the architecture and comfort of its residences, it remains aware of the expectations of its tourist clientele, who are sensitive to the typical mountain atmosphere. “This is why we strive to preserve an authentic spirit by working with wood and stone. The contemporary touches are subtle, such as larger windows, steel railings on the balconies, slightly more colourful cladding, and sawn instead of dressed stone.

This modernity is also present in the heating systems, the insulation and the lighting.”

Designing an Alpine Lodges residence also means creating smooth functionality, taking into account the fluidity of movement, the comings and goings of skiers, and welcoming new arrivals.

“Our objective is to offer residents optimum comfort while saving them time, including taking care of their luggage and managing their movements until they reach the ski room. We’ve thought of everything!” Alpine Lodges pays close attention to how residents live, noting their habits and their needs to create programmes with a recognisable trademark. Each residence features typically-coloured façades, wood, vast bay windows, interplaying transparent features and a certain ease of use. “Our clients come to us because they are expecting something. This is why we want to remain faithful to what sets us apart. At Alpine Lodges, we will never adopt the “shepherd’s hut” style of traditional Austrian chalets!” While the mountain climate required meeting certain architectural criteria (dual-layered roof in slate, foundation stones, and brushed, heattreated, saturated wood), the interiors can feature contemporary design with beautiful spaces, open-plan kitchens, walk-in closets, ample storage space and rooms with en-suite bathrooms. These warm apartments are insulated with triple glazing and underfloor heating with a wood-pellet boiler. The reinforced concrete structure guarantees excellent acoustics and unbeatable solidity, enabling the installation of hot tub on the terraces.

Une fois le chantier clos et couvert, les travaux à l’intérieur des programmes est autorisé.

Mathilde Rossi showed us in to her office in Chavanod, Haute Savoie, packed with a jumble of illustrations, mood boards, catalogues, fabric samples and more… Welcome to the inner sanctum of Alpine Interiors!

Mathilde et ses équipes travaillent sur leurs derniers projets, soucieuses d’apporter des réponses personnalisées à chacun de leurs clients. « Avant toute chose, nous organisons un premier rendez-vous pour comprendre leurs attentes, leurs goûts en matière de couleurs et de style. Nous sommes très à l’écoute de leurs désirs et parfois de leurs freins. A partir de là, nous pouvons déjà faire une première sélection des finitions, des revêtements de sols et des murs ainsi que ceux de la cuisine et nous accompagnons nos clients visiter différents appartements finalisés afin de confirmer leurs choix. Ces éléments vont déterminer rapidement le style qui leur correspond le mieux, plutôt rustique pour certains, très contemporain pour d’autres, typé montagne, classique, chic, sophistiqué ou plutôt épuré… Ensuite à nous de nous adapter ! » Pour déceler leurs goûts et leurs couleurs, Mathilde n’hésite pas à consacrer du temps pour échanger et entrer dans l’intimité des propriétaires. « Nous établissons une relation de confiance qui nous permet de travailler main dans la main du début du projet jusqu’à la disposition des bougies ou des fleurs dans les vases ! »

Mathilde and her team are busy with their latest projects, working hard to come up with suggestions tailored to each individual client.

“The first thing we do is organise an initial meeting to find out what they expect from us, and what their colour and style tastes are.

We listen carefully to what they want, and sometimes what they don’t want. This enables us to make a preliminary selection of finishes and wall and floor coverings and the same in the kitchen, and we show our clients around finished apartments decorated in different styles to help them make up their minds. This process quickly reveals which style best suits them, with some clients preferring more of a rustic look and others going for up-to-theminute contemporary. The style can be mountain, classic, chic, sophisticated or plain and simple... Our job then is to come up with something that fits the bill!” To get to the bottom of her clients’ tastes and colour preferences, Mathilde is prepared to spend a lot of time chatting with them and getting to know them properly.

Pour faciliter le choix des clients et gagner ainsi un temps précieux, Alpine Interiors sélectionne une gamme de finitions, de mobilier, de tissus et d’accessoires de décoration d’une soixantaine de fournisseurs qu’elle rassemble dans un catalogue édité chaque année. « Nous avons des fournisseurs fidèles avec lesquels nous aimons particulièrement travailler, mais nous sommes toujours à la recherche de nouveautés. Le salon Maison & Objet est notre rendez-vous favori pour dénicher des marques et nous inspirer.

C’est pourquoi notre catalogue est remis à jour généralement en début d’année. »

To make it easier for their clients to decide, saving precious time, Alpine Interiors select a range of finishes, furniture, fabrics and decor accessories from around 60 suppliers, putting them all in a catalogue published once a year. “We have regular suppliers we particularly like working with, but we’re always looking for new ideas. The Maison & Objet trade fair is our favourite place to go to seek out new brands and find inspiration. That’s why we usually update our catalogue at the beginning of the year.”

Dans cette « bible » de la décoration, les propriétaires peuvent choisir parmi une vingtaine de modèles de parquets et de carrelages pour ceux qui veulent en plus d’autres finitions murales. « Un client peut tout à fait venir avec ses références s’il souhaite un modèle précis. C’est toute notre valeur ajoutée ! De même pour les papier peints. Nous avons l’habitude de travailler avec les collections Arte et Casamance mais si le client impose son éditeur, aucun souci ! »

Property owners pore over this interior design ‘bible’, choosing from around twenty parquet and floor and wall tile options, the only restriction being the standard dimensions. “We’re also fine with clients coming to us with their own product references if they have something specific in mind. That’s all part of our added value.

The same applies to wallpaper. We usually work with the Arte and Casamance collections, but if the client wants to use their own favourite supplier, that’s ok by us!”

Pour le mobilier, là aussi carte blanche même si la sélection d’Alpine Interiors a déjà tout pour plaire ! Une large gamme de canapés signés Sits proposée dans 150 couleurs et des modèles de PH collection allient style, confort et longévité. « La plupart des appartements sont destinés à être loués alors nous sélectionnons des canapés très résistants dont les tissus sont suivis tout en privilégiant le confort d’une assisse moelleuse bien profonde pour se détendre après une bonne journée de ski ! » précise Mathilde Rossi qui souligne son affection pour la marque Ethnicraft reconnue pour la simplicité, la fonctionnalité, la qualité et la pureté de son design. « Utilisant comme matériau principal le bois massif (chêne, teck et noyer), elle propose un mobilier chic et cossu en parfaite adéquation avec l’esprit Alpine Interiors. » Pour ceux qui ne seraient pas séduit par la touche scandinave d’Ethnicraft, les tables en chêne PMP Furniture plus rustiques se marient avec les chaises en tissus déclinables en plusieurs coloris. Le bois demeure très présent dans les appartements, notamment sur un mur du séjour et sur les corniches qui ceinturent les plafonds. « Reste la finition que le client peut choisir en vieux bois ou en sapin lazuré proposé en 9 teintes. » De même, côté chambre où la tête de lit est revêtue de lambris en bois avec une tablette intégrée. Aux murs, une peinture blanche apporte une volontaire neutralité.

Clients also have carte blanche when it comes to furniture, although the Alpine Interiors selection offers something for every taste.

The extensive collection of Sits sofas, available in 150 colours, and the models from PH Collection combine style, comfort and longevity.

“Most apartments are for rental, so we select very hardwearing sofas in consistently available fabrics while recommending the comforts of a lovely soft, cosy seat you can relax in after a hard day’s skiing!”, says Mathilde Rossi, mentioning her own preference for the Ethnicraft brand, well known for its simplicity, functionality, high quality and purity of design. “Ethnicraft mainly use solid wood (oak, teak and walnut) to make smart, luxurious furniture that ties in perfectly with the Alpine Interiors philosophy.” For those who are not so keen on Ethnicraft’s Scandinavian feel, PMP Furniture’s more rustic oak tables go wonderfully well with their fabric chairs in a range of different colours. Wood features predominantly in these apartments, for example on one wall of the lounge and for ceiling cornices.

“Then there’s the finish, which the client can have in thermobrushed reclaimed wood or stained fir in a choice of nine colours.” The same applies in the bedroom, where the client can have a wood-panelled bedhead with integrated bedside table.

« Compte tenu de la présence de nombreux éléments décoratifs en bois, nous évitons les murs de couleurs mais répondons aux desideratas de nos clients, bien-sûr ! Nous avons eu le cas avec une cliente qui souhaitait faire contraster sa cuisine blanche avec un mur bleu vif et le rendu était parfait ! »

The walls are deliberately neutral, painted white. “Because there are so many decorative elements in wood, we avoid coloured walls; but the customer always has the final say of course! This was the case of one client who wanted to contrast her white kitchen with a bright blue wall, and the effect was stunning!”

En cuisine, en effet, les choix s’imposent aussi parmi une centaine de finitions ! Si Alpine Interiors est force de proposition, chaque client est en mesure de créer son espace sur-mesure du choix du plan de travail aux façades en passant par l’électroménager. En partenariat avec Ricou Cuisines et Bains à Chambéry, Mathilde Rossi vous accompagne dans l’aménagement de cet espace à vivre jusque dans les moindres détails. Idem pour la salle de bains pour laquelle Alpine Interiors préconise du carrelage au sol et au mur et un modèle de mobilier en chêne. « Nous travaillons avec trois marques de meubles de salles de bain, Ethnicraft, Line Art au design épuré et authentique et Keuko pour un style plus contemporain. Là aussi, le client peut faire son propre choix. »

In the kitchen, clients also have to choose from a selection of around a hundred finishes! Alpine Interiors will make suggestions, but every client is able to create their own bespoke kitchen space, from work surfaces to cupboard doors to appliances. In partnership with Ricou Cuisines et Bains in Chambéry, Mathilde Rossi guides you through the process of creating your kitchen, right down to the smallest detail. The same applies to the bathroom, where Alpine Interiors recommends floor and wall tiles and an oak bathroom cabinet. “We work with three bathroom furniture brands: Ethnicraft, Line Art with its authentic, uncluttered design, and Keuko, which offers a more contemporary style. Here too, the client can bring in their own brand if they like.”

Reste à ajouter les éléments de décoration qui font toute la différence et apportent confort et caractère aux intérieurs : les tapis au sol signés Idao, les rideaux Casamance ou Christian Fischbacher, les peaux, coussins et plaids Sabatier… Mathilde Rossi attache une grande importance aux luminaires qu’elle choisit sur Made in Design ou auprès de la société Prolum. « Je prévois toujours une suspension au dessus de la table à manger, d’éventuelles appliques, un lampadaire ou une lampe de table dans le salon en évitant de suivre de trop près les tendances et les modèles vus et revus. Je travaille beaucoup avec BCW, Faro ou Led C4. Du modèle le plus simple à la suspension pensée comme une oeuvre d’art.»

The rest comes down to the decorative elements that make all the difference and bring comfort and character to the interior: Idao carpets, Casamance or Christian Fischbacher curtains, and Sabatier animal skins, cushions and blankets, and more. Mathilde Rossi also attaches great importance to the lighting, which she selects from Made in Design or the Prolum range. “I always like to feature a pendant light above the dining table, wall lights where appropriate and a standard lamp or table lamp in the lounge, but I avoid following trends too closely and using the same models you see everywhere. I work a lot with BCW, Faro and Led C4, from the simplest model to a pendant light designed to be a work of art.”

A l’extérieur, Alpine Interiors a également pensé à tout pour le confort des résidents avec un mobilier résistant aux intempéries et aux changements de température. « Jusqu’à maintenant nous privilégions le mobilier en métal Emu mais une nouvelle marque, Gommaire, découverte sur le salon Maison & Objet devrait bientôt arriver avec des modèles très innovants. »

Outside, Alpine Interiors has also thought of everything for the residents’ comfort, with furniture that stands up to the bad weather and changes in temperature. “Up to now we’ve mostly been using metal furniture from Emu, but a new brand, Gommaire, which we came across at the Maison & Objet trade fair, is set to come in soon, and they have some very innovative models.”

Enfin, une fois le projet arrivé à son terme, l’équipe apporte une petite touche finale en disposant photophores, bougies, vases et accessoires décoratifs qui personnalisent les lieux. « Il est bien rare que ces petites attentions ne correspondent pas aux goûts de nos clients car nous finissons par très bien les connaître ! »

Lastly, when the project is at an end, the team add little finishing touches, arranging candle jars, candles, vases and decorative accessories to personalise the rooms. “It’s very rare that our little additions aren’t to the clients’ taste, because we end up getting to know them very well!”

The idea of setting up an in-house rentals management service quickly took shape,” says Alpine Collection General Director Morgan Bientz. “At the time, there were lots of holiday residences managed by well established operating companies aimed mainly at investors. But Alpine Residences was set up to help property owners wanting to rent out their apartments while still being able to enjoy them as and when they saw fit. That’s why we decided to draw up a flexible lease agreement giving them the freedom to rent or not to rent and decide when they want to be in residence.”

Des ski-shops partenaires proposent également la location et la vente de matériel ainsi que d’accessoires au sein de ski-rooms au sein même des résidences. « Pour notre résidence Annapurna aux Gets nous n’avions pas trouvé de prestataire extérieur pour ouvrir un ski-room privé et réservé à la résidence, Patrick et moi-même avons donc décidé de lancer notre propre concept baptisé Annaski » souligne Morgan Bientz.

The village is flanked by two mountainsides, Chavannes and Mont Chéry, which every summer attract nature buffs and lovers of the Great Outdoors, thrill-seeking sporty types and ramblers looking to recharge their batteries in the fresh mountain air. In totally unspoilt countryside with views of Mont Blanc, exploring the trails around Les Gets on foot or a mountain bike is popular with a clientele who also appreciate the peace and quiet and family-friendly atmosphere in the resort.

Les Gets Bikepark is one of the resort’s main attractions, with an international reputation. Open to both experts and beginners, it is the perfect playground for practising every discipline: downhill, cross country, freestyle and freeride. The resort has built facilities specifically to teach junior mountain bikers the necessary skills: a pump track, green downhill runs, kids’ zone, mini-jump park, beginners’ lessons at MTB school and so on...

To help you get to altitude, three ski lifts operate over the summer season, giving you access to demanding high-level walks for those looking for a challenge. If you’re a keen hiker, head for Pointe d’Angolon via the Arête de Chamossière, a route recommended by our Les Gets rentals manager Malvina Tholozan. “It’s a long circuit around the resort of Les Gets with a climb up to Pointe d’Angolon where you get an amazing

panoramic view, taking in several massifs: the Fiz, the Aravis, the Mont Blanc Massif in the background and the Dents du Midi.

You can also make out Morzine and one end of Lake Geneva.”

For less adventurous walkers, Mont Chéry, the famous high point of Les Gets, treats you to a stunning panorama of the Mont Blanc Massif and the peaks of the Chablais. And at Chavannes there are some pretty walks to mountain restaurants and the shore of Lac des Ecoles at 1240 m, part of the must-see Chablais Geopark, officially classified a Haute Savoie Protected Nature Area. “At Les Gets there are lots of walks for all abilities. It’s a real paradise for walkers and the families that come to stay with us in our residences. Alpine Collection takes to the kitchen It all started with a blank piece of paper just two years ago... Alpine Restaurants is not the kind of venture you would expect from a group previously unconnected with the restaurant trade. And yet... This new challenge is now a reality, Patrick Remme and his team having already come up with four eateries with very different identities but one shared aim: to offer an assortment of exciting culinary experiences.

The brains behind the project is the indefatigable Patrick Remme and Morgan Bientz, keen to provide as many facilities and services as possible for guests staying at the Alpine Lodges residences. So the name of the new enterprise was a no-brainer: Alpine Restaurants!

Alpine Restaurants, c’est avant tout une histoire d’Hommes audacieux et prêts à relever tous les défis ! Ils se sont fait mutuellement confiance pour imaginer ensemble des concepts de restauration en adéquation avec les attentes des résidents.

Alpine Restaurants is first and foremost the story of three enterprising individuals up for a challenge! They chose to put their faith in each other, working together to come up with different dining concepts to meet their residents’ expectations.

Directeur des restaurants, le Palace de Menthon et le M de Mègève***** durant plusieurs années, Emmanuel Lachenal fait la connaissance de Patrick Remme et Morgan Bientz qui lui font part de leur projet de développement d’une partie restauration au sein des résidences du groupe Alpine Collection. Convaincu par ce nouveau projet à construire, il s’engage à leurs côtés avec enthousiasme et accepte le poste de directeur d’exploitation des établissements. « J’étais totalement séduit par l’idée d’intégrer le projet à sa genèse. Il y avait tout à faire. Nous démarrions de zéro, c’était très exaltant ! » ajoute Emmanuel Lachenal, rapidement rejoint par le chef Antony Trezy avec lequel il formait un précieux binôme dans les cuisines du M de Megève*****. « J’avais besoin d’un professionnel de confiance avec lequel je sois complémentaire.

Cette personne ne pouvait être qu’Antony. Cette aventure ne pouvait pas se faire sans lui, du moins pas l’un sans l’autre ! »

Emmanuel Lachenal, the long-standing director of the restaurants at Le Palace de Menthon and M de Megève*****, met Patrick Remme and Morgan Bientz, who shared their plans to develop a restaurant business to run at the Alpine Collection group’s holiday residences. Won over by this new project-in-waiting, he enthusiastically joined forces with the two others, accepting the position of operations director of the new restaurants. “I absolutely loved the idea of becoming part of this project, right from the word go. There was everything to do. We were starting from scratch, and that was really thrilling!” says Emmanuel Lachenal, who was soon joined by head chef Antony Trezy, with whom he had paired up to run the kitchens at M de Megève*****. “I needed a professional I could trust, someone I could work well with. That person could only ever be Antony. This venture would not have been possible without him, not unless we were both involved!”

Bistrot Le C, le premier né Fin 2017, ils inaugurent avec succès le premier restaurant signé Alpine Restaurants : Bistrot Le C au sein de la résidence Le C à Courchevel Moriond. Chic et contemporain tout en étant convivial, ce nouveau concept de bistrot « alpin » a rapidement séduit une clientèle exigeante qui apprécie sa cuisine généreuse et goûteuse, son service irréprochable disent aussi ceux qui connaissent les lieux. « Nous privilégions avant tout la qualité du produit et la justesse de la cuisson pour mettre en valeur les saveurs. » Une vision partagée par le chef Antony Trezy qui revendique la simplicité d’une cuisine qui met à l’honneur les produits de saison, frais et locaux qu’il sublime avec sa touche de créativité. « J’aime beaucoup la cuisine basque alors je me permets quelques infidélités à la gastronomie savoyarde ! De même, je me laisse influencer par mes voyages et ajoute quelques notes asiatiques à ma carte. » Vous ne serez donc pas étonné de trouver du Tataki de Thon ou encore du cochon confit 7h à l’Armagnac accompagné du boudin noir du Pays Basque aux côtés des plats plus traditionnels de montagne.

Reste l’incontournable œuf parfait cuit à basse température avec sa mousse de polenta truffée et son jambon de Savoie qui fait le bonheur des habitués ! Au Bistrot Le C, il y en a pour tous les goûts, Antony Trezy veille aussi à satisfaire les végétariens, les vegan et les intolérants au gluten en élaborant des plats à la fois créatifs et savoureux comme le céleri à la truffe agrémenté de comté râpé et de noisettes. Dans un décor mariant luminaires contemporains et vieux bois chaleureux qui nous rappelle que nous sommes en montagne, Bistrot Le C est ouvert tout au long de la saison hivernale, uniquement le soir.

Bistrot Le C, the first off the mark At the end of 2017 came the successful opening of the first Alpine Restaurants eatery: Bistrot Le C, at the Résidence Le C in Courchevel Moriond. Chic and contemporary yet relaxed and friendly, this new ‘Alpine bistro’ concept soon attracted a discerning clientele who appreciate the generous, flavoursome cuisine it serves up, along with impeccable service, say those in the know. “We focus first and foremost on quality produce and sparing cooking times to highlight the flavours.” A view shared by head chef Antony Trezy, an advocate of simple cuisine featuring fresh, local, seasonal produce which his creativity raises to new heights. “I’m a fan of Basque cuisine, so I allow myself to drift away a little from traditional Savoyard gastronomy!

Similarly, I am influenced by my experiences abroad, adding Asian notes to my menu.” No surprise, then, to find – alongside more traditional mountain dishes – tataki of tuna or seven-hour slowcooked pork in Armagnac served with Basque black pudding.

And not forgetting his must-try simmered egg parfait with truffled polenta mousse and Savoie cured ham, a favourite with regulars!

At Bistrot Le C there is something for every taste, with Antony Trezy keen to cater for vegetarians, vegans and gluten-intolerant diners by devising dishes as delicious as they are creative, such as his truffled celeriac sprinkled with grated comté and hazelnuts. With a decor that combines contemporary lighting with warm reclaimed timber to remind us that we are in the mountains, Bistrot Le C is open for dinner only, throughout the winter season.

Vina Annapurna, comme son nom l’indique…

Quelques mois après son inauguration, c’est au centre de la station des Gets, dans la résidence Annapurna, qu’Alpine Restaurants ouvre le Vina Annapurna qui, comme son nom le laisse présager, est le paradis des gourmets et des amateurs de bons vins. « A l’origine nous voulions créer un bar à vins /tapas, mais finalement il y avait une réelle demande pour un restaurant traditionnel. Nous avons donc proposé une cuisine généreuse tout en gardant l’idée d’une carte des vins très variée et très attractive ! », souligne Antony Trezy. Mets et vins s’associent à merveille au Vina Annapurna dans une ambiance familiale et très conviviale. « Le restaurant est ouvert midi et soir toute l’année. Ici nos clients sont des habitués, nous les connaissons bien. L’atmosphère au Vina Annapurna est particulièrement chaleureuse et décontractée, à l’image de la station finalement », ajoute Emmanuel Lachenal. Tandis que certains patientent autour d’un verre de vin dans les confortables canapés, à table les plus gourmands savourent un burger revisité selon la recette maison, une viande braisée ou une truite de l’Ain pochée à l’huile d’olive. Le midi, on vient volontiers déguster sur la terrasse la fameuse salade caesar d’Antony Trezy aussi belle que goûteuse, et le soir venu, partager une planche de charcuterie tout en écoutant une chanteuse de jazz qui anime le restaurant une à deux fois par mois. Quant à la carte des vins, elle devrait satisfaire toutes les papilles avec une belle gamme de petites appellations mais aussi des vins argentins, italiens, espagnols… à des prix très variés. « Nos bouteilles en cave vont de 18 à 150 €, nous avons volontairement une gamme assez large pour satisfaire la clientèle de la station », précise Emmanuel Lachenal. On connaissait le ski au pied ; avec Alpine Restaurants il faudra désormais compter avec la gastronomie au pied de son appartement ! Et cela tout au long de l’année avec une carte en constante évolution suivant les produits de saison. Un plaisir à s’offrir sans modération !

The aptly named Vina Annapurna Just months after opening Bistrot Le C, at the Annapurna residence in the centre of the ski resort of Les Gets, Alpine Restaurants opened Vina Annapurna, which – as its name suggests – is a paradise for lovers of gourmet food and fine wines. “Our original idea was to open a wine and tapas bar, but we later realised there was a real demand for a traditional restaurant. So we decided to serve full dishes while retaining the idea of having a very varied and very attractive wine list,” says Antony Trezy. At Vina Annapurna, food and wine make wonderful bedfellows in a relaxed, family-friendly atmosphere. “The restaurant is open at lunchtime and in the evening all year round. Here, our customers are regulars and we have got to know them well. The atmosphere at Vina Annapurna is particularly relaxed and friendly, like the resort really,” adds Emmanuel Lachenal.

While some sit back in the comfy sofas with a glass of wine, waiting for their table, other diners are tucking into a burger revisited (the house recipe), a delicious dish of braised beef, or perhaps Ain trout poached in olive oil. Lunchtime diners flock here to sit on the terrace, ordering Antony Trezy’s celebrated Caesar salad (as beautiful as it is tasty), and in the evening they come to share a charcuterie platter while listening to the jazz singer who performs at the restaurant once or twice a month. And the wine list offers something for all palates, with an extensive range of modest appellations alongside wines from Argentina, Italy, Spain, etc., at widely varying prices. “Our cellar bottles range from 18 to 150 euros. We have deliberately gone for quite a broad range to appeal to the resort clientele,” says Emmanuel Lachenal. Skiing on your doorstep is old hat. With Alpine Restaurants, you now have gastronomy on your doorstep! And all year round too, with a menu that is constantly changing to incorporate fresh, seasonal produce. So what are you waiting for?

Chou-fleur rôti

Détailler le chou-fleur en gardant 4 grosses sommités, puis émincer le reste pour la purée. Cuire les sommités dans un mélange d’eau et de lait (50/50) salé quelques minutes jusqu’à l’obtention d’une cuisson al dente. Les égoutter sur du papier absorbant et refroidir.

Une fois refroidi, colorer légèrement les sommités dans une poêle anti adhésive à l’huile d’olive avec un peu de curry en poudre, puis finir la cuisson au four (180°) afin d’avoir une coloration uniforme.

Réserver au chaud pour le dressage.

Purée de chou-fleur

Suer à l’huile d’olive sur feu doux le chou-fleur émincé à couvert et en mélangeant fréquemment en veillant à ce qu’il n’y ait pas de coloration. Lorsque le chou-fleur est presque cuit ajouter la crème liquide à mi-hauteur et cuire à nouveau pendant 5 minutes. Egoutter, puis mixer au blender en ajoutant la crème de cuisson petit à petit jusqu’à l’obtention d’une purée lisse. Rectifier l’assaisonnement, sans ajout de poivre.

Réserver au chaud pour le dressage.

Vinaigrette citron curry

Dans un bol, presser le jus d’un demicitron, ajouter une cuillère à café de curry et une pincée de sel. Monter à l’huile d’olive (4 cuillères à soupe ou 6 cl).

Dressage

Dans une assiette, déposer une cuillère et demi de purée de chou, étaler avec le dos de la cuillère pour faire un cercle. Arroser généreusement les sommités rôties avec la vinaigrette citron, puis déposer au centre de la purée. Râper généreusement le parmesan par dessus à la microplane ou avec une râpe très fine. Ajouter une pincée de coriandre émincée et servir aussitôt.

Roasting the cauliflower

Cut up the cauliflower, keeping aside 4 large florets, and chop up the rest finely to make the puree. Boil the florets in a salted 50/50 mixture of water and milk for a few minutes until they are al dente.

Drain them on a piece of kitchen roll and leave them to cool. Once cool, colour the florets lightly and evenly in a non-stick pan containing olive oil and a little curry powder, and finish by roasting them in the oven (180°). Keep them warm for serving.

Pureeing the cauliflower

On a low heat, sweat the finely chopped cauliflower in olive oil in a covered pan, stirring frequently to ensure the cauliflower does not change colour. When the cauliflower is nearly cooked, add single cream to the halfway mark and cook for another 5 minutes. Drain and then blend the cauliflower in a food processor, adding the cream from the pan little by little to form a smooth puree. Season to taste, without adding pepper. Keep warm for serving.

Lemon curry vinaigrette

Juice half a lemon and put the juice in a bowl with a teaspoon of curry powder and a pinch of salt. Mix with olive oil (4 tablespoons or 6 cl).

To serve

Place one and a half spoonfuls of cauliflower puree in a dish and use the back of the spoon to spread it into a circle.Pour the lemon vinaigrette generously over the roasted cauliflower florets and then arrange them in the middle of the puree. Add a generous serving of parmesan, grated over the top with a Microplane or very fine grater. Add a pinch of finely chopped coriander and serve immediately.

Préparation du poisson

Pour raffermir le poisson, le mettre à dégorger en le saupoudrant généreusement de sel fin. Réserver au frais pendant 15 minutes puis rincer à l’eau claire en prenant soin de bien le dessaler.

Tailler ensuite des pavés de 150g.

Garniture

Avant de cuire vos artichauts, détacher les premières feuilles et casser la tige pour ôter les fibres épaisses.

Remplisser une cocotte ou une grande casserole d’eau salée et citronnée. Placez-y les artichauts. Porter à ébullition et faire cuire pendant 30 à 35 minutes puis vérifier la cuisson. Égoutter sur du papier absorbant. Lorsque les artichauts sont tièdes, ouvrez délicatement les premières feuilles afin de retirer les feuilles du centre et le foin simultanément à l’aide d’une cuillère. Nettoyer les coquillages et les rincer rapidement à l’eau froide.

Mettre les moules de bouchot dans une casserole, ajouter une noisette de beurre et l’échalote coupée en petits morceaux.

Ajouter le vin blanc et un généreux tour de moulin à poivre. Cuire à feu vif recouvert

d’un couvercle. Dés que les moules sont ouvertes, retirez la casserole du feu.

Egoutter, puis décortiquer les coquillages.

Conserver un peu de jus de cuisson pour la sauce au beurre. Procéder de la même façon pour les palourdes. Ouvrir les couteaux à cru et ne conserver que la partie comestible. Puis tailler en tronçons de 2 cm de longueur. Réaliser le beurre aux algues en chauffant dans une casserole 4 cuillères à soupe de jus de cuisson des moules avec autant de crème liquide. Porter à ébullition, puis incorporer le beurre aux algues ainsi que le beurre doux en petits morceaux en mélangeant continuellement.

Dressage

Pocher le poisson dans le beurre aux algues en l’arrosant fréquemment.

Réchauffer les artichauts. Réchauffer les coquillages dans un peu de beurre aux algues sans faire bouillir. Dresser le poisson au centre de l’artichaut puis les coquillages et parsemer de salicornes, servir la sauce à part.

Preparing the fish

Pour raffermir le poisson, le To firm up the fish, sprinkle it generously with table salt to make it sweat. Place it in the refrigerator for 15 minutes and then rinse with clean water, making sure you wash off all the salt. Cut it into pavés of 150 g.

Accompaniment

Before cooking the artichokes, pull off the outer petals and break the stem to remove the thick fibres. Fill a casserole dish or large saucepan with water and add salt and lemon. Add the artichokes.

Bring them to the boil and boil for 30 to 35 minutes, then check to see it they are cooked. Drain them on a piece of kitchen roll. When the artichokes are lukewarm, carefully open the outer petals to enable you to remove the inner petals and choke together using a spoon. Clean the shellfish and rinse them briefly in cold water.

Put the cultivated mussels in a saucepan and add a knob of butter and the finely chopped shallot. Add the white wine and a generous sprinkling of freshly ground pepper. Cover with a lid and boil on a high heat. As soon as the mussels have

opened, take the saucepan off the heat.

Drain and shell the mussels. Keep a little of the water for the butter sauce.

Do the same with the clams. Open the raw razor shells and keep only the edible parts, cutting them into 2cm lengths. Make the seaweed butter sauce by heating in a saucepan 4 tablespoons of the mussel water and the same amount of single cream. Bring to the boil and add the diced seaweed butter and unsalted butter, stirring continuously.

To serve

Poach the fish in the seaweed butter sauce, basting it frequently. Reheat the artichokes. Reheat the shellfish in a little seaweed butter, without letting them boil.

Place the fish in the middle of the artichoke, followed by the shellfish, and sprinkle with samphire. Serve the sauce separately.

Craquelin

Réaliser des disques de craquelin en mélangeant les ingrédients correspondants puis étaler très finement entre 2 feuilles de papier sulfurisé. Réserver au frais. Réaliser la pâte à choux en mélangeant les ingrédients correspondants.

Une fois cette étape effectuée, coucher à la poche à douille sur du papier sulfurisé des choux de 7 cm de diamètre et, sur une autre feuille de papier sulfurisé, des choux de 3 cm de diamètre. Sortir le craquelin du réfrigérateur et découper des cercles de même diamètre (ou plus petit) que les choux. Déposer un disque de craquelin sur chaque chou avant d’enfourner a 170°.

Cuire jusqu’à ce que la pâte soit bien dorée et que les choux sonnent creux.

Mousse praliné

1. Crème anglaise Verser le lait et la crème dans une casserole. Coupez la gousse de vanille en 2 afin d’en extraire les graines. Déposer la gousse et les graines dans le lait.

Laisser infuser pendant 10 min.

Dans un cul de poule, blanchir les jaunes et le sucre. Verser une petite louche de lait 90

bouillant dessus et bien l’incorporer.

Transvaser le mélange dans la casserole contenant le lait, la crème et la vanille puis remuer. Sans cesser de remuer, guetter le moment où la crème s’épaissit. Ne pas laisser bouillir. Retirer du feu et fouetter activement puis la passer au chinois étamine.

2. Mousse pralinée Mélanger la crème anglaise chaude (1) avec la gélatine et le praliné noisette, laisser refroidir et incorporer la crème montée. Réserver au frais dans une poche à douille cannelée.

Crémeux praliné

Tremper la gélatine dans de l’eau froide.

Chauffer le lait puis incorporer la gélatine préalablement égouttée. Verser sur le praliné noisette, émulsionner au robot.

Stabiliser cette émulsion en ajoutant progressivement la crème froide, mixer dès que possible pour parfaire l’émulsion.

Réserver au frais dans une poche a douille.Garnir les choux avec la mousse pralinée, puis ajouter le crémeux praliné au centre. * PM SIGNIFIE À L’APPRÉCIATION DE LA PERSONNE

Craquelin

Make the craquelin discs by mixing together the above ingredients and spreading the mixture very thinly between two sheets of greaseproof paper. Put them aside in the refrigerator. Make the choux pastry by mixing together the above ingredients.

When the pastry is ready, use a pastry bag to pipe out 7cm-diameter choux rounds onto one sheet of greaseproof paper and 3cmdiameter choux rounds onto a second sheet of greaseproof paper. Take the craquelin out of the refrigerator and cut out discs of the same diameter as the choux rounds (or slightly smaller). Place a craquelin disc on top of each choux round and bake in the oven at 170°. Bake them until the pastry is a deep golden colour and the choux rounds sound hollow.

Mousse praliné

1. Crème anglaise Pour the milk and cream into a saucepan. Split the vanilla pod into two and scrape out the seeds. Add the pod and the seeds to the milk. Leave them to soak for 10 minutes. In a round-bottomed mixing bowl, mix the egg yolks and sugar to create a light-coloured mixture. Pour a small ladleful of

boiling milk on top and work it in thoroughly.

Transfer the mixture into the saucepan containing the milk, cream and vanilla and stir. Stir continuously, looking out for the point at which the cream thickens. Do not allow the mixture to boil. Take it off the heat, whisk briskly and then pass it through a conical strainer.

2. Mousse pralinée Mix the hot crème anglaise made in step 1 above with the gelatin and hazelnut praline, leave it cool and then fold in the whipped cream. Put to one side in the refrigerator in a pastry bag with a fluted tip.

Crémeux praliné

Soak the gelatin in cold water. Heat the milk and then mix in the drained gelatin. Pour it onto the hazelnut praline and emulsify in a food processor. Stabilise the emulsion by gradually adding the cold cream, mixing it in quickly to create a perfect emulsion. Put to one side in the refrigerator in a pastry bag. Top the choux rounds with the praline mousse and add the praline cream in the middle.

Après Bistrot Le C et Vina Annapurna, Patrick Remme et Morgan Bientz poursuivent la savoureuse aventure d’Alpine Restaurants dans la prestigieuse station de Courchevel. Cet hiver, ils créent l’événement au sommet avec l’ouverture, non pas de un mais de deux établissements, au sein même de la résidence Manali Lodge. Deux nouveaux concepts pour deux fois plus de plaisir !

Antony Trezy œuvre, cette fois encore, en cuisine, s’investit dans la création des cartes mais aussi le recrutement et la formation des équipes. Lui, qui avait fait ses armes dans de prestigieuses maisons, notamment auprès de Marc Veyrat, se réjouit de participer à l’élaboration de ces deux nouveaux projets au cœur de Courchevel Moriond. « Nous bénéficions d’une situation privilégiée en front de neige avec une des plus belles terrasses de la station. Le midi, le Bistrot Manali devient « the place to be » pour profiter du soleil et déjeuner dans un cadre idyllique, tandis que le soir le Gaïa avec son service en salle est le restaurant où se retrouver dans un cadre chic et intimiste. »

After Bistrot Le C and Vina Annapurna, Patrick Remme and Morgan Bientz are continuing Alpine Restaurants’ foodie adventure in the prestigious ski resort of Courchevel. This winter they are reaching new heights by opening not one but two establishments – in the same residence: Manali Lodge. Two new concepts for double the pleasure! Antony Trezy will again be in the kitchen, involved in creating the menus and also in recruiting and training his staff.

Antony learned his trade in prestigious restaurants, working with Marc Veyrat among others, and he is delighted to be part of these two exciting new eateries in the heart of Courchevel Moriond.

“We have a fantastic location on the snow front, with one of the most beautiful terraces in the resort. At lunchtime, Bistrot Manali is set to become the place to be, with diners soaking up the sun while lunching in idyllic surroundings. But in the evenings the Gaïa, with its intimate, chic interior, will be where it’s at.”

Pour s’arrêter entre deux descentes, faire une pause gourmande ou farnienter l’après-midi, le Bistrot Manali, ouvert de 9H à 17H en saison d’hiver, est l’adresse idéale. Sa pré-ouverture l’année dernière le confirme avec déjà bon nombre de clients devenus des inconditionnels ! « Bistrot Manali est une brasserie de luxe qui propose un vaste choix de plats pour un déjeuner rapide, de l’incontournable carpaccio de bœuf à la traditionnelle fondue savoyarde. Mais nous ajoutons toujours une touche de raffinement ou de créativité comme en témoigne notre suprême de volaille au curry et à la citronnelle ou notre burger… aux gambas ! » Quant aux plus gourmands ils ne résisteront pas au chariot de desserts, délicieuses tentations présentées sous leurs yeux ! L’aprèsmidi, le chocolat chaud ou la pâtisserie maison se dégustent confortablement installés dans les canapés Chesterfield, le rayon de soleil en prime ! But we always add a touch of sophistication and creativity – try our lemon-balm chicken curry or the king prawn burger! And you’ll find it hard to resist the dessert trolley, packed with eye-catching and mouthwatering delights! In the afternoon you can sit back and relax on one of our Chesterfield sofas, tucking in to a hot chocolate or home-made pâtisserie and catching the last rays of sun!” A DJ and dancers are also a regular feature, livening up the terrace and creating a relaxed, feel-good atmosphere. GAÏA, SO CHIC! Autre lieu, autre ambiance et pourtant c’est toujours au sein de la résidence Manali Lodge qu’Alpine Restaurants veut régaler avec son (autre) nouveau restaurant, Gaïa. Son ouverture cet hiver suscitera à coup sûr la curiosité et l’envie des vacanciers avides de nouvelles expériences culinaires. C’est au sous-sol de la résidence Manali Lodge que le chef Antony Trezy et ses équipes donnent cette fois rendez-vous pour des soirées qui s’annoncent riches en sensations ! « C’est un lieu atypique dont l’entrée se veut volontairement discrète, un peu comme dans un club. Nous avons souhaité créer une atmosphère intimiste, un décor cosy et feutré avec des teintes sombres pour ce restaurant ouvert uniquement le soir. » Dans l’assiette, la cuisine d’Antony Trezy revisite les classiques avec brio comme le bar en croûte de sel au fenouil et tomates confites, le soufflé au Beaufort ou le carré d’agneau servis dans les règles de l’art. « Nous apportons une grande importance au service en salle avec des préparations réalisées devant le client. Pour le carpaccio de bœuf par exemple, nous râpons le parmesan et coupons la truffe en salle au moment de servir. » Pour le dessert, difficile de rester insensible à l’esthétisme du Mont-Blanc maison présenté en verrine à moins que l’on ne se laisse tenter par l’indétrônable omelette norvégienne flambée en salle. Du côté de la carte des vins, le Gaïa saura combler les palais les plus avertis comme les amateurs de petits vins de niche. « Nous avons sélectionné de très belles références comme le Château Petrus mais souhaitons également faire découvrir les appellations de la région, les vins de Savoie et aussi des crus du Rhône ou du Languedoc, ainsi que des vins étrangers… » note Antony Trezy.

Pour animer des soirées qui s’annoncent déjà prometteuses, DJ, chanteuse et danseuses viendront tous les soirs se produire au Gaïa. De délicieux moments festifs en perspective… Qui a dit que l’hiver ne pouvait pas être chaud !

GAÏA, A CHIC NIGHT OUT For a completely different ambiance, even though it’s in the same Manali Lodge residence, Alpine Restaurants are out to spoil you with their (other) new restaurant: Gaïa. Opened this winter, it’s set to attract a clientele of holidaymakers keen to experience new culinary sensations. In the basement of the Manali Lodge residence, head chef Antony Trezy and his staff are on hand to ensure you have an incredible evening dining experience! “It’s not like other restaurants. We’ve made the entrance deliberately discreet, like walking into a club. In this restaurant, open in the evenings only, we’ve tried to create an intimate atmosphere with a cosy, plush decor featuring dark colours.” In the kitchen, Antony Trezy revisits the classics with a twist. Try the salt-crusted bass with fennel and confit tomatoes, the Beaufort soufflé or the rack of lamb, all served up in the tradition of fine French cuisine.

“We attach great importance to table service, often preparing the dish in front of the customer. For the beef carpaccio for example, we grate the parmesan and cut the truffle at the table as we serve it.” For dessert, you can’t fail to be impressed by the stunning house Mont-blanc presented in a verrine, unless you are more tempted by the pièce de résistance: the baked Alaska flambéed at the table. When it comes to the wine list, Gaïa has picked out a selection that will please even the most discerning palates, along with diners who like to try the little niche wines.

“We have included some big-name wines like Château Petrus, but we also want to introduce our customers to the local appellations, the wines of Savoie and some of the Rhône and Languedoc crus too, as well as wines from other countries,” says Antony Trezy.

To liven up an already very promising evening, a DJ, singer and dancers perform every night at Gaïa, making it a great night out.

Who said winter couldn’t be hot?
