May, July Peak Months For Grilling Fires Grilling season is right around the corner and grill gurus everywhere are preparing for many family parties and barbecues. The National Fire Protection Association (NFPA) encourages grillers to pay attention to safety during the spring and summer months when home fires involving grilling incidents occur most often. In 2011 – 2015, fire departments responded to an average of 9,600 home fires involving grills, hibachis or barbecues each year. That number included 4,100

structure fires and 5,500 outside or unclassified fires, according to NFPA. These fires caused an average of 10 civilian deaths, 160 civilian injuries, and $133 million in direct property damage per year. July is the peak month for grilling fires followed by May, June and August. According to the Hearth, Patio & Barbecue Association, 73 percent of consumers grill on the Fourth of July, 60 percent do so on Memorial Day, 58 percent grill on Labor Day, and 45 percent grill on Father’s Day. According to the Consumer Product Safety Commission’s National Electronic Surveillance

System, grills caused an average 4,500 non-thermal contact burns in patients seen at emergency departments in 2012 – 2016. Children under five suffered 1,600 or 35 percent of these burns. This type of injury typically occurred when someone bumped into, touched or fell on the grill, grill part or hot coals. https://www.youtube.com/ watch?v=65RCHLNIKa8 Caption: NFPA provides grilling fire safety tips to consumers NFPA reminds everyone that all types of grills pose a risk for fires and burn injuries. Place the grill well away from siding and deck railings and out from under eaves and overhanging branches,

per manufacturer’s instructions. According to NFPA’s most recent fact sheet, 11 percent of home grill structure fires began when an outside wall caught fire and in roughly one of every five fires, the grill had not been cleaned. “As grilling season approaches, it is important that grillers review basic safety tips to ensure they are grilling properly and safely,” said Lorraine Carli, vice president of Outreach and Advocacy for NFPA. “Failing to properly clean the grill or having the grill too close to something that could burn are the leading causes of fires. MCC Awarded Grant To Help At-risk Immigrant/Refugee Youth Middlesex Community College has been awarded a oneyear, $10,000 grant from the John H. & H. Naomi Tomfohrde Foundation to help immigrant/refugee youth improve their English skills and academics through the college’s English Language Institute (ELI) and Out of School Youth Development Center (OSYDC). “This grant allows Middlesex to serve one of our most vulnerable populations: refugee and immigrant youth who are at-risk of not completing high school,” said MCC President James Mabry. “With assistance from the Tomfohrde Foundation, we will be able to help these young people improve their English, complete high school, and move

on to college or join the workforce.” The grant-funded project will recruit 60 Lowell-area students – ages 16 to 24 – to enroll in MCC’s ELI and OSYDC, explained Maria Cunha, OSYDC Program Director. Predominantly refugees from Syria, Iraq and the Democratic Republic of the Congo, the targeted youth are either failing or not completing high school due to lack of English or other academic skills. These students will receive a combination of special support services, including one-on-one assessment, tutoring, testing, and enrollment in academic and language remediation courses, continued Cunha. The goal is to prepare them to sit for the high school equivalency (GED) exam or placement exams for college enrollment. “Most of these young people are referred to OSYDC through Lowell High School or the

to both your physical health and your mental health, which can help achieve overall wellness…” Good mental health is essential to overall health and personal well-being. It also contributes to the ability to lead a healthy, balance and productive life. Emotional problems can impair a person’s thinking, feelings, and behavior and, overtime, can become increasingly serious and disabling. Unfortunately, many people do not seek treatment for mental health issues for a number of reasons. They may not be completely aware of the extent of their problem, they may be hesitant to make contact with a mental health professional because they fear they will be stigmatized, or they may not know how to access services. Yet, overall the quality of life is greatly improved when a person with a mental health concern or problem seeks help and receives appropriate treatment from a qualified professional. Numerous suicides and suicide attempts have been attributed to undiagnosed and/or under treated mental illness. For this reason, The Jason Foundation supports the efforts of Mental Health America and Mental Health Awareness Month. The Jason Foundation, Inc. (JFI) is a nationally recognized leader in youth suicide prevention and awareness and provides programs to all 50 states at no cost through their National Network of Affiliate Offices. The programs are designed to help the public recognize when a young person is struggling with thoughts of suicide and where they can go for help. To find

Getting Off the Takeout Treadmill (ARA) - Many people reach for takeout menus when they’re hungry for ethnic flavors, but that’s not always the best move. Like other kinds of fast food, some of those dishes have come under fire for packing too much fat, cholesterol, sugar and sodium. Avoid the ‘too much’ trap by making easy, healthful ethnic dishes at home. For example, a speedy stirfry made with U.S. Farm-Raised Catfish is a perfect choice. Catfish has a mild, sweet taste and remains moist even when seared at high heat. Tossed with

a colorful mix of quick-cooking sliced veggies and flavored with traditional Asian seasonings, the taste and health profile of this stir fry couldn’t be better. Vegetables contain vitamins and minerals, while catfish is low in calories, has heart-healthy omega 3 fatty acids and has no detectable levels of methyl mercury. Tacos, another ethnic favorite, are equally easy to make at home. Replacing the usual ground beef with grilled catfish is a move in the right direction, nutritionally speaking, and the mild flavor of the fish takes beautifully to a homemade spice blend. Because the rub is so versatile, you’ll want to mix up a batch to keep on hand. Shopping for these ethnic dishes is easy on the cook. Along with other everyday ingredients, the recipes call for catfish, which is reasonably priced and available year round in supermarkets. To make sure it comes from a safe and pure environment, always ask for U.S. Farm-Raised Catfish. To discover other great ethnic dishes you can make at home, visit www.catfishinstitute.com. Here are some tasty recipes you may want to try: Catfish and Veggie Stir Fry Ingredients: 3 tablespoons soy sauce 2 tablespoons lemon juice 3 U.S. Farm-Raised Catfish fillets (about 1 pound), cut in

saturday, may 19, 2018

thin strips 4 teaspoons vegetable oil, divided 1 cup snow peas, halved diagonally 1 cup thinly sliced red bell pepper 1 cup sliced celery 1 cup sliced mushrooms 1 tablespoons cornstarch 1/4 teaspoon ground black pepper Directions: In a shallow dish combine soy sauce and lemon juice. Add catfish fillet strips and toss to coat; marinate for up to 20 minutes. In a large skillet or wok over medium-high heat, heat 2 teaspoons of the oil. Add snow peas, bell pepper, celery and mushrooms; stir fry until crisptender, about 2 minutes. Using a slotted spoon, remove to a bowl. Add remaining 2 teaspoons of oil to the skillet. Drain catfish strips, reserving the marinade; stir fry until fish just cooks through, about 4 minutes; remove to the bowl with the vegetables. In a small bowl, combine the cornstarch and reserved marinade with 3/4 cup water; stir until smooth. Add to the skillet; cook and stir until thickened, about 1 minute; return the vegetables and fish to the skillet and cook 1 minute longer. Season with black pepper. Serve over cooked rice or noodles, if desired. YIELD: 4 servings (5 cups) Spice-rubbed Catfish Tacos Ingredients:

pg. 17

Olive oil non-stick cooking spray 4 U.S. Farm-Raised Catfish fillets (about 5 ounces each) 1/2 to 1 teaspoon Spicy Rub (recipe follows) 4 taco size flour tortillas or taco shells, warmed 1-1/2 cups bite-sized salad greens Prepared ranch dressing Directions: With nonstick cooking spray, lightly coat each catfish fillet on both sides. Sprinkle, then rub the Spicy Rub evenly on the fillets. Place fillets in a hot greased skillet or on a pan under a preheated hot broiler; cook, turning once, until cooked through, about 4 minutes per side. Cut fillets into 1-inch cubes. Fill taco shells or flour tortillas with salad greens and fish cubes. Drizzle with ranch dressing. YIELD: 4 servings Spicy Rub: In a small bowl, combine 1/4 cup each chili powder, ground cumin, and ground coriander; 2 tablespoons each ground black pepper and packed brown sugar; 1 tablespoon each salt and red pepper flakes. Transfer to container with a tight-fitting lid; store for up to three months in a dark cupboard, away from heat. Courtesy of ARA Content
