Try meditation. Sit comfortably with your eyes closed. Focus on your breathing and visualise yourself happy and fulfilled. It may help to picture a time you felt this way in the past. With every inbreath imagine being filled with the happy, positive feelings. With every out-breath imagine negative feelings disappearing.

Lamb Meatball and Pea Pilaf INGREDIENTS
400g lean lamb mince 2tsp cumin
FOR THE CUCUMBER YOGURT
1/2 cucumber 3 garlic cloves (crushed) (grated) 300g basmati rice 150ml of Vegetable or lamb stock natural yogurt A few mint leaves (torn)
300g frozen peas 2 lemons (juice of 1)
In a bowl mix the mince with half the garlic and 1tsp of the cumin, add salt and pepper then shape into small balls (about 16). Heat a bit of oil in a large frying pan then fry the balls until golden and cooked through (about 8 mins). Remove them from the pan. Put the rice, 1tsp of cumin and the remaining garlic into the pan. Fry for about 30 secs, stirring, then pour in enough stock to cover. Cover with a lid and simmer for 10 mins. Return the meatballs to the pan, add the peas and warm through for a few mins until the peas are tender.
YUM!
Mix the cucumber with the chopped mint leaves and the yogurt. To finish the pilaf, stir in the lemon zest and juice with some seasoning.

Serve with a dollop of cooling cucumber yogurt.

Take comfort in onion soup, topped with crunchy bread and bubbling cheese Serves 2 Preparation Time ~ 55mins Ingredients 12oz / 350g onions Butter for frying 1 1/2 tsp Demerara sugar 2 tsp dark soy sauce 1 pint stock (chicken stock is lovely) 2 thick slices lightly toasted bread 2oz / 50g cheddar or Gruyere cheese Preparation Peel and thinly slice the onions. Heat the butter in a medium-sized saucepan. Add the onions and sugar and fry gently over a low heat for 10-20 minutes, stirring frequently. The sugar will caramelise to a nice golden brown coating on the onions. Be careful not to let it stick and burn though, especially towards the end. Add the stock and soy sauce, and season to taste with salt and black pepper.

Put a lid on the pan and simmer for approximately 30 minutes until the onions are soft and starting to disintegrate. Grate or thinly slice the cheese. Divide the soup between two heatproof bowls. Float a slice of toasted bread on top of each bowl of soup, and top with the sliced or grated cheese. Grill for 2-3 minutes until the cheese is melted and bubbling (which is why you have to use heatproof soup bowls!)
Serve with more fresh warm bread.
